“Good maturity, a nice freshness and lots of energy” Olivier Lamy, Domaine Hubert Lamy “Microscopic grapes each with very little juice but perfect balance” Guillaume Boillot, Domaine Henri Boillot These comments from some of the leading white winemakers in the Côte d’Or sum up our findings nicely. 2019 is a fantastic vintage for whites in the Côte de Beaune. The wines are both generous and exuberant, while retaining fantastic acidity and freshness. Despite the volume on the palate and, in some cases, warming alcohol (ranging from 13.5% to 14.5%), the Chardonnays predominantly retain a classic Burgundy flavour profile. It is not all pineapple and passion fruit, but lots of ripe apple, white peach and that acidity running through the palate keeps these lavish Chardonnays feeling fresh. So where does 2019 sit compared to other recent vintages of Chardonnay in the Côte de Beaune?  Many believe it is not a vintage that can easily be compared. The combination of maturity and freshness for many is something not experienced before. The 2019 growing season, like 2018, was warm and dry. In fact many vignerons saw huge similarities in terms of temperature and rainfall (or lack of) between 2019 and the previous summer, with both considerably higher in sunshine hours and lower in rainfall than average. However, there were distinct differences that has made 2019 clearly a cut above its 2018 compatriots. Most obviously and particularly for the white wines of the Côte d’Or is an increase in both concentration and acidity, caused by drastically low yields and small berries (a result of a difficult flowering period during the spring). The generosity of the vintage is therefore unlike the more austere, citric vintages of 2011, and it does not have the linearity and focus of 2014. It is undoubtedly a warm vintage for the Côte de Beaune but it is clear that vignerons are getting a better handle on how to deal with the heat. Many were keen to make the point that these days they pick on acid levels rather than alcohol, and maybe that has helped them get the picking date right. Also notable in parts of the Côte de Beaune malic acid levels were very low in 2019 (typical for sunny vintages) and this where relevant certainly played a part in the wine’s composition. Low malic acid actually helps emphasise the freshness in the final wine, since the malic acid is converted to lactic acid during malolactic fermentation during élevage. The more lactic acid, the more the wines feel softer and creamier. The malolactic fermentation therefore had much less of an effect in the 2019 whites, the result being an accentuation of freshness that beautifully contrasts the generosity and richness of fruit. Despite being a warm year, it certainly hasn’t fallen into the trap of 2015, a similarly warm vintage where the aromas were distinctly tropical and the wines a little flabby – a result of picking too late. A term we heard used a lot when visiting the wineries was that 2019 was a “floral” year. There is undoubtedly an expressiveness of aromas for a grape that often can be a little shy on the nose. For Fiona Ragg at Mischief & Mayhem, despite the similarities to 2018, “It had nothing like the sunshine hours. And didn’t suffer from heat spikes either.” Etienne de Montille noted that while it was warm during the day, the nights were distinctly cooler than in 2018, helping the vines regenerate, preserve acidity and prolong ripening, allowing more complex aromatics to develop.  The dry weather kept disease at bay and a harvest around the second week of September under ideal conditions saw grapes brought in in perfect health. Was it these factors that helped retain such delicate florality to these “gourmand” wines? Many of the producers we spoke to believe that 2019 offers a certain degree of precision and delicacy which, at the height of a warm July, they were not expecting. The freshness in the wines is a welcome surprise for many. This is matched by a lovely pristine fruit clarity not dissimilar to 2017, but with much more concentration – and much more freshness than 2018.  An interesting comment from Jadot’s Frédéric Barnier when struggling to compare the vintages is that in the past, vintages as rich and concentrated as 2019 relied on a certain level of botrytis in the vineyards. But in 2019 there was no botrytis, this was just natural concentration caused by the small size of berries combined with the low yields. 
Qualitatively, there seems to be tremendous consistency across the appellations, but also across producers. If anything, what seemed most evident to me was producers who perhaps were a little disappointing in 2018 produced much better wines in 2019, and the top producers seemed to really excel. In this respect, the vintage stands head and shoulders above vintages such as 2016 and 2013, where selection was essential. Yes, there are some flamboyant examples and they are hugely enjoyable for it, even if they do push the classic concept of white Burgundy to the limit. The majority of the wines we tasted, however, remain much closer in flavour profile to the classic Côte de Beaune flavours of yellow apple and white peach, with a strong mineral salinity shining through on the limestone soils, and richer body and creaminess of the heavier clay soils. The wines behave as they should, reflecting their respective terroirs despite the added concentration and verve. The top wines eschew a beautiful fruit clarity and are delightfully expressive, with a lifted florality, avoiding the overt tropical notes which can bury what we know and love about white Burgundy in a warm vintage. The clarity of fruit, exuberant florality, concentration and freshness combined makes 2019 a very happy vintage. The lack of volume however remains the sting in the tail, with some producers down up to 50% on normal production levels due to a bout of frost (on the low-lying vineyards), poor flowering throughout the region and hydric stress affecting
the young Chardonnay vines. These episodes, however, have not diminished quality and, in some important ways, have helped define a unique and exciting vintage for Chardonnay in the Côte de Beaune.  Explore Burgundy

For more than two decades, Donum has been quietly crafting single-site, single-clone and sometimes single-barrel wines. With a new estate vineyard to their name, Rachael Ryan – Senior Buyer at our US arm, Vinfolio – sat down with winemaker Dan Fishman to find out more about the ambitious estate  Like most of the New World, California eschews a hierarchy of vineyards. Yet in the absence of Grands Crus and First Growths, some vineyards are just acknowledged as being a notch above the rest. Ask any winemaker for a wish list of vineyards, and a handful of familiar names is repeated. One of these is the Savoy Vineyard.  Nestled at the north end of the Anderson Valley, Savoy was first planted in 1991 and quickly became a source of Pinot Noir for some of the most respected wineries in Northern California, including Littorai, Williams Selyem, Radio-Coteau and Peay, with many more on the waiting list. Last year, however, it was acquired by Donum, a winery based in Carneros with a reputation for producing small lot Chardonnay and Pinot Noir, sold exclusively to private collectors and therefore rarely seen on the market.  Since it was created in 2001, Donum had slowly expanded its reach beyond Carneros, with vineyards in the Russian River and Anderson Valleys, as well as the Sonoma Coast. With the acquisition of Savoy, however, their already envious collection of vineyards took a very notable – and sizable – jump. The gain of this prestigious vineyard marks a shift for Donum, who will now produce wine from estate fruit only: 130 acres at their estate in Carneros, 16 acres at the Winside Vineyard in the Russian River Valley, 20 acres at the newly planted Bodega Vineyard on the Sonoma Coast, and the 42 planted acres at Savoy Vineyard in the Anderson Valley.   Already well-known for their world-class art collection (with over 50 works by the likes of Keith Haring, Yayoi Kusama and Ai Weiwei), what many visitors may not realise is that Donum now has a solid foothold in each of the premium Pinot Noir and Chardonnay winegrowing regions in Northern California.   In some ways, the vineyards owned by Donum are innately similar, perhaps most closely linked the marine layer. This dense fog rolls in from the Pacific Ocean most afternoons during the growing season and is a key characteristic of each of these vineyard sites. The mechanics of this cooling marine layer are somewhat straightforward. As temperatures climb in inland California, the hot air rises, creating a vacuum into which the denser, colder air sitting over the Pacific Ocean rushes. On a typical summer day, coastal areas are fully clouded over by late afternoon, and the fog continues to creep further inland, searching for gaps and valleys in the coastal ranges to extend its reach. This cold, moist air both lowers sunlight hours and keeps temperatures low. In other words, this coastal phenomenon is an extremely useful aide in the production of lively wines that retain a fresh edge.  Aside from cooling fog influence, however, the vineyards Donum farms are topographically quite different. The estate property in Carneros, with its gently rolling hills and proximity to the bay, straddles the southern portion of both Sonoma and Napa counties (though Donum’s property is firmly situated on the Sonoma side), with consistent winds blowing from the southeast over the San Pablo Bay giving the region a wide diurnal shift and the resulting wines a sense of energetic tension. The Anderson Valley, on the other hand, is a narrow swathe cut through dense, old redwood forest, and it's difficult not to mentally connect the rugged hills that line the valley on both sides with a similar evergreen, earthy core in the wines. The Russian River Valley is a warmer microclimate, further removed from the cooling influence of the ocean or bay, with loamy soils producing a more concentrated style of wine with opulent fresh fruit.  But for Dan Fishman (Vice President of Winemaking and Vineyards) perhaps the most unifying characteristic across each site is a hyper-focus on farming, which he believes is the best – and perhaps the only – way to showcase these unique terroirs. When he joined Donum in 2007 as a cellar intern, the farming was conventional, with routine application of herbicides and synthetic fertiliser. In recent years, however, he has spearheaded a pivot towards organic farming.   Notable features of this approach include an on-site composting program, where manure from local dairy farms is added to pomace from the winery and canes from pruning. Other eco-friendly initiatives include an integrated pest management system, extensive cover cropping (Fishman estimates Donum currently uses 20 different cover crop blends comprised of over 40 different plants), as well as animals brought into the rows for winter grazing. All these systems have improved the soil structure, “bringing more back to the soil than we’re taking from it”, he explains.  A peek into the rows at the Carneros estate reveals this shift in viticultural philosophy, with verdant cover crops and bees hovering. Tucked between the sculptures that dot the property are vines that are farmed meticulously. While the art is spectacular and very difficult to ignore, the attention to detail in the vineyards is perhaps even more impressive. Donum is now one of the first wineries in Sonoma County to achieve Regenerative Organic Certified (ROC) status for all its estate vineyards, and they’ve also been certified organic from the California Certified Organic Farming Association (CCOF) since the summer of 2022. The ROC status, however, is one that Fishman is particularly proud of, as it encompasses not just soil health and land management, but also animal welfare and the working conditions of the employees.    When asked if he has seen a difference in the behaviour of the vines, and in the quality of the fruit, since undertaking a rigorous approach to organic viticulture, Fishman’s answer is an emphatic yes. He points to the 2023 growing season as a prime example. In a year marked by record-breaking rainfall that extended into early spring, the threat of mildew was abnormally high. “Our conventional neighbors were spraying like crazy and still had mildew,” Fishman says, “but we were obviously using organic methods and applying them less frequently, and we had way less mildew. I think the vines’ natural resiliency was coming out.”   In line with a larger overall trend in Northern California, Fishman says he also has been trying to fine-tune the weight and concentration of the Chardonnay and Pinot Noir produced at each vineyard. If Burgundy’s biggest challenge historically has been to achieve even ripeness vintage to vintage, California’s problem cultivating Pinot Noir and Chardonnay been quite the opposite: how to tame abundant sunshine and control vigour resulting from warm days and fertile soils. While the fog assists with this task, one unexpected benefit of the winery’s intensive focus on farming, Fishman explains, is that the vines are more in balance. “It’s on the subtle side,” he says, “but our wine chemistry is looking better too – higher acidity and more flavour at lower sugars.” Opulence has given way to restraint and nuance.   The resulting range of wines at Donum is an impressive display of small-lot vinification, broken down not just by appellation or vineyard, but also often by individual blocks. In 2021, the winery produced six distinct Chardonnays and 17 Pinot Noirs in total from Carneros, the Russian River Valley and the Anderson Valley. With the development of their newest vineyard on the Sonoma Coast, Donum’s already complex patchwork quilt of wines is about to get even bigger.   With a gentle hand in both the vineyard and winery, Fishman hopes to highlight the most minute of variations in each wine, allowing the innate characteristics of each site to shine through. “We have a really intense focus on vineyard flavour first,” he explains.    “We’re not trying to force a house style, just let the vineyard or block do the talking,” Fishman continues, “We’re trying to make the best Pinot Noir and Chardonnay in California, wherever that comes from.” With access to such an extensive assortment of prime locations, now including the illustrious Savoy Vineyard as a feather in its proverbial cap, to say that the future at Donum is exciting is an understatement indeed. While many may think of California Pinot Noir and Chardonnay as one group of wines, a monolith with little variation in style, Fishman and his team at Donum hope to change that mindset, one vineyard at a time.  The Donum wines have historically been available only to those on their mailing list, but we are now working directly with the estate: browse all current Donum listings.

Discovering Donum’s single-site wines

First place: Donum

If you haven’t already heard about Baettig, we urge you to read some of our previous coverage of this rising-star producer. Conceived by Francisco Baettig (the winemaker behind Errázuriz, Seña and Chadwick) and Carlos de Carlos (previously Commercial Director at Errázuriz, he now works for Paul Hobbs) over dinner in London in 2010, Baettig is one of Chile’s most exciting projects – crafting site-driven wines from Malleco and the Maule.  The duo spent years seeking out the right site – realising that to find vineyards that met their standards, they’d have to plant them themselves. In 2013 they put their first vines in the ground, planting Burgundy clones of Chardonnay and Pinot Noir in Traiguén, in the Malleco province. Both Francisco and Carlos had family ties to the region – making it seem like fate.  The site, however, wasn’t chosen purely for their emotional connection to the area, but with an eye on sustainability and quality. This is one of Chile’s southernmost wine regions, with red clay, clay loam and volcanic soils, cool conditions, 25% less sunshine than the Central Valley and – most importantly – plentiful rainfall, allowing them to dry-farm the vines and produce restrained, Burgundy-inspired Pinot Noir and Chardonnay with moderate alcohol levels, bright acidity and vibrant fruit. Francisco is clear that the quality of their vine material has been key to their success – as it is only relatively recently that Chile had access to high-quality, clean Burgundy clones.  While Baettig started with Chardonnay and Pinot Noir, the producer has since added Cabernet Sauvignon from old vines in the Maule to the range, unsurprising given Francisco made his name making Chile’s icon wines.  Fourteen years after they first imagined their joint project, we welcomed Francisco to London to look back at the Baettig journey so far – tasting through a vertical and exploring how the project has developed and evolved.  About the Baettig range  There are currently two tiers to the Baettig range, with the idea that a top tier, single-vineyard offering that will be their “Grand Cru” of sorts, is likely to be added in the future. The current range comprises:  Vino de Viñedo: these wines are a vineyard selection designed for earlier drinking, effectively a “village” equivalent. The Chardonnay and Pinot Noir at this level go by the name of Los Parientes (“the relatives”, a reference to the closeness of the different parcels), while the Cabernet Sauvignon is called Los Compadres (“close friends” – a tribute to the growers with whom they’re working). Los Compadres is sourced from various dry-farmed, cool plots in the more coastal areas of the Maule, with the vines all over 30 years in age and some up to 150 years old, creating lively, juicy and intense expressions of Cabernet Sauvignon. The first vintage of the Los Parientes Pinot Noir and Chardonnay was 2019, while the first vintage of the Los Compadres was 2021. These may be the entry point to the Baettig range, and they are made to drink on release, but they also – like good village Burgundy – have capacity to evolve and will only benefit from an extra year or two in bottle.  Selección de Parcelas: their “Premier Cru” equivalent range, made in smaller volumes from specific parcels and built for longer ageing. These wines see a higher proportion of new oak and longer ageing prior to release. The Chardonnay and Pinot Noir are labelled under the Los Primos name (“the cousins”), while the Cabernet Sauvignon is named Los Padrinos (“the godparents”). The Pinot Noir comes from their El Primo, Chuir, and La Cuñada parcels, chosen for their elegance, structure and ageing potential; while the Chardonnay comes from the Triángulo and Llaima parcels, creating mineral, vertical wines that are all about tension. The first Los Primos Chardonnay and Pinot Noir were made in 2016, with the first wide release from 2017, and Los Padrinos was first made in 2022. Volumes of these wines are tiny, with just 300 to 350 cases made of each of the Selección de Parcelas.  About the winemaking The emphasis with Baettig is firmly on expressing site – and as such the winemaking is very “light touch”, allowing the sense of place to shine through in the wines. The style has evolved, with the use of oak reduced a little from the earliest vintages, generally shifting toward less time in barrel, larger casks and smaller portions of new wood. The fruit is all hand-picked and fermented with indigenous yeasts. The cooler sites, combined with the way Baettig farms and when they harvest, produces fruit with naturally low pH, allowing them to use minimal amounts of sulphur (although with sufficient doses to allow the wines to age and be shipped around the world).  For the Chardonnay, it is all whole-cluster pressed and cold-settled, prior to native ferment in old French barriques. Malolactic fermentation on the Chardonnay is left to happen or not, according to the vintage conditions (with often around a third going through). The élevage for all the wines varies according to the vintage, but the Los Parientes Chardonnay normally spends eight to 10 months in cask, with up to 15% new oak, while the Los Primos spends between 10-15 months in barrel with up to 35% new oak. The new oak for the Chardonnay is all larger 300- and 400-litre casks. A portion of the Pinot Noir is whole-bunch fermented (typically 10-20%), with the rest de-stemmed – with fermentation all in used oak. The Los Parientes stays in barrel for around eight to 10 months, with up to 15% new oak; for the Los Primos, it is 15-16 months, with up to 40% new wood – with the new oak all 300-litre barrels.  For the Cabernet Sauvignon, the fruit is all de-stemmed. Fermentation temperatures are low at around 24-28˚C, with maceration for a maximum 20 days, given the natural concentration and structure of the fruit. The Los Compadres is aged for 10 months in French oak (20% new), while the Los Padrinos spends 15 months in 65% new oak (including around a third in larger 300-litre barrels).  Tasting through the range, there is a clear stamp of style – a flinty restraint, with the emphasis on crunchy fruit and minerality, vibrant acidity, moderate alcohols. While some of the earlier vintages might have offered more overt oak in their youth, this has integrated with time in bottle – and the wines offer at most a subtle spicy complexity. They are beautifully judged, pure expressions of Traiguén.   About the vintages 2022: Generally speaking, 2022 was an outstanding vintage. In Malleco, the year was cooler than average. Winter was relatively dry, with little rain in spring and cool conditions including frost in September and October, leading to particularly low yields. Weather warmed up in February before cooling again in March and April, which also saw quite a lot of rain. This resulted in a late harvest of a small crop of fruit, with great intensity, concentration and excellent tension – with high acidity levels retained thanks to the cooler conditions. In the Maule, the season was moderately warm, producing a more generous yield than further south but similarly high quality. The weather here was warmer in December and temperatures close to average from January through to March. Moderate rainfall in March and April refreshed the season and eased the final stage of ripening, with the fruit offering good acidity, colour and aromatic intensity. The 2022s offer an up-front richness of fruit, with good backbone of acidity – in some ways a combination of 2020 and 2021.  2021: The 2021 vintage was a cooler year – producing wines where the emphasis was on elegance, finesse and tension, perfect for the Baettig style. The winter in Malleco was rainy, with 650mm of water over June and July, laying the groundwork for a good budbreak. Spring was dry and reasonably warm, although a late frost in September reduced yields. Summer was cool, with some rain over December and January (90 mm in total across the two months), allowing the fruit to ripen slowly ahead of a late harvest, developing great aromatic complexity and preserving the acidity levels. These should age particularly well.  2020: This was a warmer year versus 2021, producing richer-styled wines. There was plenty of rain in June and July, however this dried up in August, with little rain for the rest of the growing season. Temperatures rose and the hot, dry conditions allowed the grapes to ripen easily, although an early harvest was key to preserve freshness and tension to complement their natural intensity and generosity. Offering a little more flesh, particularly at this more youthful stage, versus the 2021s, the 2020s are juicy and open, yet with everything in balance. The one we’d pick for drinking now, although there is certainly no rush here.  2016: A rainy winter led on to a cool and rainy spring, with later-than-normal flowering and fruit set and a small crop. Summer was dry and largely warm, and the fruit was harvested early, producing wines that combine refreshing acidity and good density of fruit. The 2016 Los Primos Pinot Noir and Chardonnay were never released, the tiny volumes of Baettig’s first crop, so it was a real treat to taste these special bottles, offering a glimpse of the wines’ ageing potential – with both drinking beautifully.  The vertical: tasting Baettig Chardonnay 2022 Vino de Viñedo Los Parientes Chardonnay: This was really showing well, even though it has only just been released. It’s tight, full of energy, with a punch of minerality, bright taut citrus and crisp green apple. It’s lean and sleek, but with a fleshy, juiciness that makes it hard to resist now. A wine that’s singing. Aged for eight months in 15% new oak. Production: 7,254 bottles  2021 Vino de Viñedo Los Parientes Chardonnay: There’s a lick of lime curd on the nose here, with tightly wound greengage emerging with air. It’s pure and linear, driven with its intense, stony purity, but there’s a pleasing fatness to the fruit behind, with a mouth-wateringly juicy finish and long, saline tang to the finish. Aged for 10 months in only used oak. Production: 16,909 bottles  2020 Vino de Viñedo Los Parientes Chardonnay: The warmth of the 2020 vintage, combined with the cool climate of Traiguén and Baettig’s trademark flinty, lean style, has created a gorgeous Los Parientes in 2020. Now with a few years in bottle, it’s drinking beautifully. The wine remains taut – dominated by vibrant citrus that drives through its core, and the bright acidity brings incredible tension. Yet, there’s also a softness to the wine, with a suppleness to the palate and its ample riper stone fruit that flawlessly complements the mouthwatering zest of the long finish. Punches well above its weight. Aged for 10 months in 10% new oak. Production: 15,240 bottles  2021 Selección de Parcelas Los Primos Chardonnay: The 2021 Los Primos is incredibly impressive – and the step up from Los Parientes clear. There’s a creamy, lactic note on the nose, working alongside lemon curd, honeysuckle and bright citrus and green fruit. There’s a lushness to the fruit, with gorgeous length and energy, outstanding tension and an everlasting finish, with stony, saline minerality that lingers long after the wine is gone. You can drink this now, but it will be even better if you can give it a couple of years in bottle. Aged for 15 months in 35% new oak. Production: 3,480 bottles  2020 Selección de Parcelas Los Primos Chardonnay: Much more open now than the 2021, the 2020 Los Primos is rich and concentrated, with riper white peach fruit and honeyed complexity. There’s a softness to the wine, reminiscent of the suppleness of the 2020 Los Parientes, but additional depth here. It’s round and enticing, still with a backbone of taut acidity, and a long finish with just a touch of oak spice. Hard to resist now, drink this over the next five years. Aged for 15 months in 38% new oak. Production: 4,069 bottles  2016 Selección de Parcelas Los Primos Chardonnay: The first vintage of Selección de Parcelas, with the very first fruit from the Baettig vines, and never released. The 2016 is showing some beautiful development, with honey, sweeter plump peach and nutty complexity. Cooked apple and dried mango sit alongside a zing of limey citrus, with a line of bright acidity that runs through the palate and brings lovely energy. Gorgeous. Aged for 16 months in only used oak. Production: 2,160 bottles  Pinot Noir  2022 Vino de Viñedo Los Parientes Pinot Noir: There is 10% whole-bunch in this vintage, and combined with the youth of the wine, it is shining on the nose – with overt pepper spice, floral perfume and stemmy complexity that makes it aromatically enticing. The palate is pure and bright, with juicy but concentrated mulberry and black cherry, with a saline edge and fresh, chalky purity. Incredibly moreish. Aged for eight months in 14% new oak. Production: 13,205 bottles 2021 Vino de Viñedo Los Parientes Pinot Noir: For this cooler vintage, Francisco opted to reduce the portion of whole-bunch fermentation a little. The wine is bright, crunchy and pure, with a lovely restraint from the extended growing season. Floral tones (rose, violet) sit alongside crunchy red fruit, leading to a palate of effortless purity and length. Vibrant, mouth-wateringly fresh with an earthy, saline finish and very fine tannins. Aged for 10 months in 10% new oak. Production: 13,400 bottles  2020 Vino de Viñedo Los Parientes Pinot Noir: This is in a lovely spot right now – sharing the supple texture of its Chardonnay sibling. It is beautifully elegant, with tealeaf aromatics, gentle spice and crunchy berry fruit. Structurally, it is fine-boned – the fine, chalky tannins adding a graceful outline to the mouth-watering fruit. Gloriously fresh, the finish is saline with the slightest hint of smoke. Dangerously drinkable and incredible value. Aged for 10 months in 10% new oak. Production: 15,180 bottles  2021 Selección de Parcelas Los Primos Pinot Noir: This is such a baby at the moment – and clearly needs time to reveal its full potential. It’s much more savoury than the 2020. There’s some gunflint reduction, but beneath that smoky intensity and an earthiness, alongside the subtle florals, bright redcurrant and raspberry. There’s more grip to the tannin, a tightness to the fruit, but the structure and length offer great promise. A wine of tension. Made with 20% whole-bunch fermentation, aged for 16 months in 34% new oak. Production: 3,409 bottles 2020 Selección de Parcelas Los Primos Pinot Noir: It’s immediately evident that this is Baettig’s Premier Cru – with notably more concentration and complexity. The warmer 2020 vintage produced a vibrant and intense wine, with vivid, juicy red cherry and raspberry fruit, complemented by more delicate floral notes. Alongside the impressive weight of fruit, there’s a pomegranate freshness and mineral line, with the slightest hint of smoke and spice, and a framework of superfine, supple tannins. Made with 20% whole-bunch fermentation, aged for 15 months in 38% new oak. Production: 4,102 bottles 2016 Selección de Parcelas Los Primos Pinot Noir: This was, for me, the star of the tasting. The nose was effortlessly complex, shifting between soft florals, spice, violets and crunchy red fruit, with a dried-earth note too. There was a glorious suppleness here, silken and flowing across the palate, with a fine, chalky texture to the tannin, juicy cherry and a subtle, savoury finish. Beautiful. Everything was destemmed in this vintage and the wine aged exclusively in used oak. Production: 1,440 bottles  Cabernet Sauvignon  2022 Vino de Viñedo Los Compadres Cabernet Sauvignon: This is a glorious expression of bright, modern Cabernet – pure and pristine with crunchy red and black fruit, vivid pencil shavings and an herbaceous green-pepper edge. There’s such intensity to the palate, with its tart red berry fruit, mouth-wateringly fresh and juicy. The abundant fruit is framed by graphite tannins, leading on to a spicy finish. Aged in 20% new French oak for 10 months. Production: 17,000 bottles  2022 Selección de Parcelas Los Padrinos Cabernet Sauvignon: The first vintage of Los Padrinos is only offering more since we first tasted it in February. It’s strikingly different to Los Compadres – a much darker, spicier and smokier expression. The two wines share their tension, with firm acidity that forms the backbone of this wine and drives the long finish, as well as gloriously crunchy and fresh fruit. The nose is savoury and brooding at first, but sweeter plum and cassis fruit lurks behind, while there’s a tart, bright bite to the palate. It still feels compact at this youthful stage, the power and gum-drying tannins needing time to unfurl. Aged for 15 months in 65% new French oak. Corton-Charlemagne: the Grand Cru of the future?  

No matter how many times you visit, a trip to Maison Leroy never loses its allure. Driving through the quiet streets of Auxey-Duresses, following the soft, chalky blue signs for Leroy that point the way, is always incongruous with the fame of this address. As we’ve written before, you won’t find the grandeur you’d expect from such an illustrious producer – Lalou Bize-Leroy, and her entire team, embodies a rare charm and down-to-earth character that you don’t expect.  I was there to taste the new collection – an occasion which is always remarkable, winding your way through an array of vintages and cuvées of both colours. Bize-Leroy only releases her négociant wines when she feels they are ready to drink, meaning the collection often includes both recent vintages and older wines stretching back 40 or even 50 years. No matter the age, each one has been selected by “Madame” herself, the matriarch with one of Burgundy’s best noses.  This year’s collection is notable for its youth – in all the right ways. Recent collections have included venerable bottles drawn from the property’s extensive cellars – offering a rare chance to taste flawlessly aged fine Burgundy, direct from the producer. This year’s line-up – of course – includes special vintages that will set cellar-hunters’ hearts aflutter, stunning Chardonnay from 1985 and ’79, as well as two reds from 1972, Vosne-Romanée Premier Cru Les Petits Monts and Echezeaux Grand Cru, which Gilles Desprez (Bize-Leroy’s right-hand man) highlighted as some of his personal stand-outs, showing amazing refinement and delicacy, despite their age.  Beyond these historied bottlings, however, you’ll find a selection of wines from the best recent vintages. For the reds, 2018 offers a rich and generous profile, approachable now yet with the depth of fruit to age; 2017 is a vintage of the moment, fully of juicy charm and bright acidity that is irresistible; while there are elegant 2015s and a concentrated 2016.  As for the whites, the 2018s are soft, round and welcoming Chardonnays that nevertheless have everything needed to age, while the thrilling, taut 2014s are just edging into their long drinking window. A similar year, 2010, with high acidity and beautiful balance shines in the line-up – and the vintage is among my favourites for whites.   Desprez notes what a pleasure it is to show these wines, offering a slightly different side to Burgundy for them. Of course, it’s perhaps reflective of current tastes – with a larger range of whites full of vibrant fruit and flinty minerality. For a man fortunate enough to taste more than his fair share of aged Burgundy, these wines are refreshing. While each release is ready for you to pull the cork on, these more youthful releases can also be aged (an excellent excuse to purchase more than one case, if you can, in our view). The line-up this year is really exciting, offering a real range of wines to appeal to all sorts of fine Burgundy drinkers.   We won’t pretend that wines of this level come cheap, but a visit to taste at Maison Leroy reinforces exactly why their name commands such demand. These wines provide a masterclass in fine Burgundy – each one so reflective of its terroir and vintage, archetypal expressions of Burgundian Chardonnay and Pinot Noir. Take the 1979 Puligny-Montrachet Premier Cru Pucelles in this year’s collection, one of the handful of carefully chosen mature wines that feature. Tasting it in the morning, the nose was gorgeously expressive – pristine and mesmerising, yet took a full hour to open up on the palate. Tasting it later in the day, it was still gorgeous – exactly what aged Chardonnay should be – showing how good white Burgundy can be, and a bottle that I won’t be forgetting any time soon.  Highlights from the 2024 Maison Leroy collection 2017 Bourgogne Rouge, Maison Leroy: Offering all the freshness and juiciness that one can find in 2017 red Burgundies at present, this Bourgogne Rouge offers everything you’d want from regional Pinot Noir. It’s very expressive and youthful on the nose, driven by red berries and sour cherries. The palate is lively and offers immediate pleasure, with a nice, savoury, peppery finish that makes it dangerously enjoyable now. Lovely now, this should drink nicely for the next five to seven years. 1999 Bourgogne Rouge, Maison Leroy: It’s been a few years since we last had a chance to taste Maison Leroy’s 1999 Bourgogne Rouge, and it was very interesting to compare this cuvée with the Hommage à l’An 2000 that was re-released last year. By comparison, the 1999 feels like it is still in its teen-years, with a powerful and concentrated profile compared to its millennial cousin. On the nose, it takes a few minutes to open up, but it is understated, elegant Pinot showing some evolution, with wild berries paired with dried petals. On the palate, it is at first interestingly youthful, led by dark fruit. The tannins are powerful, and the concentration impressive. This is drinking beautifully now and should enter its prime drinking window in two to three years. A fantastic showing for a regional appellation! 2018 Chorey-lès-Beaune, Maison Leroy: The 2018 Chorey-lès-Beaune is very perfumed, exuberant with florals and redcurrants. Always livelier and more fruit-forward than Monthélie (especially in warmer vintages), this often-overlooked terroir offers a beautiful level of complexity. On the palate, crunchy red berry fruit and juicy tannins lead on to a beautiful saltiness towards the finish. Its acidity and freshness beautifully balance the richness of the vintage. This is lovely to drink now and should evolve nicely for the next five to seven years. 2016 Santenay, Maison Leroy: Deep purple in colour, the 2016 Santenay is beautifully restrained when compared to its 2017 and 2018 siblings in this line-up. The discreet nose is lovely, driven by red fruit. The tannins are silky, coating the mouth pleasingly. There’s almost a creaminess to the mid-palate. Concentrated and with superb density, this is drinking well now but will benefit from another few years’ cellaring to show its full potential, it should then evolve beautifully for another eight to 10 years given its concentration. 2015 Côte de Nuits Villages, Maison Leroy: Made with fruit from around Nuits-Saint-Georges and Corgoloin, this offers a more austere nose – but it’s a very elegant and subtle Pinot. On the palate, it’s beautifully concentrated, with polished tannins. It starts with rich dark fruit, and there’s lovely acidity on the mid-palate that leads to a long, savoury finish. This is beautifully approachable now and will age nicely for another seven to 10 years. 2015 Gevrey-Chambertin, Maison Leroy: Tasted just after its Côte de Nuits Villages cousin, the 2015 Gevrey-Chambertin offers a beautifully layered nose, aromatic yet serious. Its palate mirrors the profound nose, dense and concentrated with layer after layer of complexity – much more than one would expect for a village wine. Dark fruit evolves into more earthy and spicy notes, finishing on an almost floral finish. This is so subtle and delicate, a brilliant showing for a wine that can be drunk now but would be even more impressive after three to five extra years in the cellar. 2018 Bourgogne Blanc, Maison Leroy: This is aromatic and very expressive on the nose. The palate offers creamy lactic notes, and it’s got a beautiful texture and depth. It shows the ripness of the warm vintage, yet this is complemented by a backbone of minerality – balancing the rich weight of orchard fruit. Profound and lovely for a mere Bourgogne Blanc. 1998 Bourgogne Blanc, Maison Leroy: On the nose this is driven by citrus fruit. There is the slightest hint of pleasing oxidative tones, with richer fruit, yet not overly so – with the wine in pristine condition. It shows beautiful evolution on the palate, with honeysuckle notes and more exotic fruit – yet acidity that avoids risking any overly ripe or jammy character. A very delicate wine, this food to complement its evolved complexity. Drink in the next three years. 2019 Saint-Aubin, Maison Leroy: This is so fresh on the nose – full of white flowers and juicy white peach, it’s mineral, lovely and expressive. On the palate, however, there’s unexpected density and texture. This is super concentrated and youthful, yet also very enjoyable now – and one of those wines that will keep showing different facets with air, and long after you’ve swallowed a mouthful. This will need time to show its full potential, but is already glorious. 2019 Auxey-Duresses, Maison Leroy: This was our favourite in the line-up of 2019 and 2018s this year. Auxey-Duresses is a village that is often overlooked but that Madame Lalou Bize-Leroy masters. The nose is multilayered, showing riper notes than the Saint-Aubin, but more acidity too, and with a mouthcoating texture that almost feels weightier than the Meursault. This is very 2019, in the sense that it combines great richness and freshness. This is lovely and long, with a finish marked by creamy, lactic notes. Drink it now and over the next five to seven years. 2018 Meursault, Maison Leroy: This offers a dense nose packed with layers of complexity, yet it’s also very subtle and discreet. This will need a bit of time to fully show its character, as the layers peel back in bottle. With aeration, the wine unfurls with richer, riper stone-fruit notes. On the palate, there are hints of creamy, brioche-like notes, along with real density of fruit on the mid-palate – a rich and weighty wine. There’s a lovely long finish. If you can, give it another five to seven years in the cellar, as the wine is so tightly packed and concentrated that you may miss out (although it’s hard to resist now!). 2014 Chassagne-Montrachet, Premier Cru, Les Chenevottes, Maison Leroy: This is very expressive and fragrant on the nose. Still fresh and intense on both the nose and palate, this lively wine speaks of this brilliant white Burgundy vintage – and is only just entering its drinking window. It offers such a complete set of aromas from the rich, ripe notes of fresh fruit to more herbal, citrus notes, all driven by brilliant acidity and a hint of bitterness. Lovely – and one of our favourite whites in the collection this year. 2010 Chassagne-Montrachet, Premier Cru, Morgeot, Maison Leroy: This Morgeot has such a lovely nose, offering a mix of sweet apple and honey-flavoured candies. It is concentrated and powerful on the nose, mature yet still has a lot to say. On the palate, the acidity is striking from the moment the wine touches your tongue. It opens with fresh, mineral, crystalline notes, but this is immediately followed by a wave of ripe yellow fruit, and then some sweet spice which lifts the wine on towards its persistent finish. This is beautiful now and should stay in this zone for another five to seven years. 1979 Puligny-Montrachet, Premier Cru, Les Pucelles, Maison Leroy: With a beautiful golden colour, this is so impressive on the nose, with so much going on: honey, beeswax, frangipane, creamy and lactic notes, candied orange peel, crystallised fruit, it just keeps delivering on the nose. The palate seems a bit muted by comparison, when tasted just after opening – but after an hour or so you’ll find the same level of density and richness here too. All those aromas mingle together and melt into each other, yet there is a sense of harmony, with beautiful acidity throughout. The wine feels like there are so many layers and strands to it, but it is also so complete. Towards the finish, there is a certain salinity that drives the length of the wine, alongside those honeysuckle notes. A real delight that is approaching its prime though still has a lot to say! A masterclass in fine Burgundy: Maison Leroy

After a mild winter with no frost or hail, rain set in from March through June. Mildew and coulure appeared early and never fully left. Some growers doubled their treatments as storms repeatedly washed away protection. By the end of the season, rainfall measured around 1,200 millimetres, almost forty percent higher than normal.

 The toll on yields was severe. Many domaines lost between a quarter and forty percent of their whites and, in some cases, as much as seventy percent of their reds. From July onward the sun returned, bringing a steadier rhythm and healthy fruit for what remained. Most harvested between the second and third week of September, with careful sorting both in the vineyard and in the cellar.

 What has emerged is a cooler, finer, more traditional expression of Burgundy. The wines carry modest alcohol, clear acidity and a sense of restraint that will appeal to those who love the region’s classical line and balance. Charles van Canneyt put it best: “It’s not because we had bad weather that we made bad wine.”

 Our early tastings underline that point. At Paul Pernot the whites show vibrant freshness and deep acidity, with Puligny-Montrachet Les Folatières standing out for its tension and grace. At Alvina Pernot the 2024s carry the freshness of 2017 and the accessibility of 2021, but with greater depth and poise. Louis Jadot, facing heavy losses and a demanding season, spoke of “fighting to keep Burgundy affordable” yet produced precise, harmonious wines — including St Aubin En Remilly, one of our favourite plots and a FINE+RARE exclusive which we are proud to secure each year, bottled only in magnum. At Hudelot-Noëllat and Fourrier, volumes are heartbreakingly small but the wines are clear, fragrant and unmistakably from their place.

 Across the market, demand continues to evolve. In the United States the auction scene remains strong as collectors seek drinking vintages in a post-tariff environment. The United Kingdom continues to lead on diversity and value, supported by one of the most sophisticated import and agency networks anywhere. Central Europe, particularly Italy and Switzerland, is expanding steadily as collectors look beyond the classics while still favouring white Burgundy, red Bordeaux and Champagne. Hong Kong remains the fastest-growing market for white wine, with sustained enthusiasm for fine Chardonnay and mature Champagne.
 
How Burgundy En Primeur will birth itself in this context is both uncertain and certainly unlike Bordeaux En Primeur. The growing dominance of white Burgundy, and the combination of rarity, quality, desirability and still real value in parts, mark an emergence that feels above appellation and above trend. Burgundy continues to evolve on its own terms, shaped more by individual growers and their decisions than by collective rhythm. How far that rhythm will carry depends on relevance in a market where even Michelin now questions its own portfolio brand, Robert Parker, and where independent voices such as Jamie Goode, driven by limitless curiosity and free of editorial constraint, continue to test every assumption.

 With Burgundy 2024, scarcity will define the campaign, but so too will authenticity. The wines are shaped by adversity yet carry grace and purity. This is a year that reminds us why Burgundy remains the most human of fine wine regions. Next week we will share our first producer profiles and early tasting notes from across Burgundy. Last week we were in Burgundy for a pre-campaign look at the vintage, meeting some of the most significant and representative voices across the region. The conversations were candid. The mood, reflective. Every grower spoke of a year that tested both patience and resilience.

Our early look at Burgundy’s 2024 vintage reveals a year of challenges and quiet beauty — shaped by resilience, balance and authenticity.

A first look at the Burgundy 2024 vintage

Burgundy 2024: first impressions

Chile is already well-known for producing top-quality Chardonnay and, to a lesser extent, Pinot Noir. But the wines tend to translate the intense solar energy synonymous with the region – producing fat, juicy, candied-fruit wines that lack the tension and minerality that the world’s very top examples exude. Baettig, however, is a notable exception – something that was highlighted by a recent vertical of the young estate’s first three vintages. The project came out of Francisco Baettig’s obsession with finding the right place for these finickity grapes in Chile. Following his own experiences growing Pinot Noir and Chardonnay elsewhere, he knew what he had to avoid. He was adamant that he wouldn’t rely on irrigation, which leads to shallow root growth and therefore, in his view, less terroir expression. Secondly, he wanted better clonal material. Baettig went to the very best to source his vines – his Pinot Noir vines come from a top vine nursery in Gevrey-Chambertin. He also needed a cooler climate where he wouldn’t have to rely on thick canopy growth to protect the grapes from the sun – something which Baettig believes can lead to overt green flavours. High-intensity sunshine also leads to thicker-skinned berries, but – for Baettig – thinner-skinned berries produce fresher wines and more ethereal tannins, both elements he seeks in his Pinot Noir. A cooler climate would also mean lower alcohol and fresher fruit profiles. With all these components in mind, it took Francisco Baettig (of Errázuriz, Seña and Chadwick) and his business partner Carlos de Carlos two years to find what they felt was the best place for this project. Fortunately, for Baettig and Carlos, it was familiar territory. The remote Traiguén district of Malleco in Patagonia is close to where both Francisco and Carlos’s families are from. On the 38th parallel south, the region has enough annual rainfall to allow dry-farming, the solar intensity is 25% lower than in central Chile (allowing for lighter canopies and thinner skins), and the volcanic bedrock on top of clay soils is poor enough to produce naturally low-yielding, high-intensity fruit. They planted vines in 2012 and their first experimental vintage was 2016, making a tiny amount of wine for family and friends. After all that time and effort, it was only then that they found out if this place was as good as they hoped. “It was a nervous time,” chuckles Carlos. But the wines quickly brought a sense of relief – it was early days, but they could sense the promise and they could already feel the elusive tension present in the wines. It would be another four years before they launched their first commercial vintage in 2020. The wines were from 2019 – and it proved not the easiest vintage to launch a new wine. Baettig always wanted vintage variation, a region on the margins where the vintage leaves its stamp. But 2019 was a very hot vintage in central Chile and, though Baettig’s wines suffered a lot less in the cooler south, they were still affected. Now with three commercial vintages under their belt, the critics that have managed to taste the wines have been more than impressed. From the outset, their 2019 releases were met with much fanfare. James Suckling described them as “compelling… rare gems that make you contemplate Burgundy”. The 2020 Baettig Vino de Viñedos Los Parientes Pinot Noir was selected among the top 10 Chilean Pinot Noirs by a Decanter tasting panel and Joaquin Hidalgo from Vinous wrote that Baettig’s “ wines leave behind a trail of tension that is the stuff of drinkers’ dreams”. Francisco Baettig is no stranger to such accolades. He is already one of Chile’s most celebrated winemakers. Awarded Chile’s winemaker of the year in 2018 by Tim Atkin thanks to his work at Viña Errázuriz, he was instrumental in establishing the winery both in the fine wine world with Seña and Chadwick, but also amongst everyday drinkers with their consistent quality at lower price points. While Viña Errázuriz has become a hugely successful business with production amounting to over five million bottles every year, Baettig’s Traiguén project is tiny. Entirely self-funded, it is a real labour of love and production today is just 55,000 bottles per year.  These early years have not been without difficulty. Being able to dry-farm was important, but this came at a cost. While the rainfall should be sufficient to dry farm and protect them from potential drought in the early days, Baettig still chose to irrigate half the vineyard and left the rest without water. In the 10 years since they first planted, the unirrigated young vines suffered terribly and only the irrigated part of the vineyard grew strong. Once established these vines can now survive without irrigation. Since then, Baettig has replanted where the vines suffered most and irrigated the young vines before weening them off their water supply once established. It was a costly mistake that saw their production reduced by almost half. The quality of tannins in their Pinot Noir has also not been straightforward. Vine age, Baettig believes, is essential to create the quality tannins he is looking for. At the moment the Pinot Noir vines are too young to provide the texture he is ultimately seeking. He is using whole-bunch fermentation (up to 15%) to add texture, as well as more herbal spice aromas. He is also using new oak (at varying levels) to provide a bit more structure and backbone to the Pinot Noir. As the vines mature and the tannins become more present, he hopes he can taper his use of oak and whole-bunch to find the perfect balance. If the wines are already this good with such young vines, the future here is tantalising. The Chardonnay production has been more straightforward, and the wines are outstanding. The taut mineral expression, salinity and richly fruited body belie their modest price tags. Tasted blind you would never guess they were from Chile – but the early success of these wines is no doubt setting the benchmark for Chardonnay and Pinot Noir in Chile, as well as changing our expectations of the flavour profiles in the region.  Beattig and Carlos remain convinced about the region, and today the results speak for themselves. With so much going for it, you can’t help but feel this remote region will transform in the next few years as more and more vignerons realise its potential. 
 Vertical tasting of Baettig’s wines from 2019 to 2021 
2019 Baettig, Vino de Viñedos, Los Parientes Chardonnay: The 2019 Los Parientes Chardonnay is starting to show the first signs of development with honeyed, citrus aromas and dried fruit tones. The palate remains clean and taut, very fresh with lime fruit flavours and structurally vertical in style. There is a contrasting mix of sweet, honeyed fruit and sharp acidity on the finish. 2020 Baettig, Vino de Viñedos, Los Parientes Chardonnay: Compared to the 2019, the ripe citrus fruit is better integrated with the acidity. A cool vintage for the region produced a wine with lovely contrasting lemon and orchard fruit flavours with more savoury, earthy, lightly smoky, mineral tones. The wine has great tautness, and the vibrancy really lends persistence to the palate. Again, it has a very vertical Chablis-esque style that is beautifully balanced and refreshing. 2021 Baettig, Vino de Viñedos, Los Parientes Chardonnay: The 2021 vintage in Traiguén is looking very special based on these early bottlings of Vino de Viñedos (the more premium Selección de Parcelas will be released next year). The nose is complex, with green herbal tones allied to chalky, briny, mineral notes. The palate retains that distinct vertical, Chablis-esque character, but also has a lovely, rich mid-palate. The tautness brings great energy to the wine. The wine has all you want in an acid-driven Chardonnay – varietal expression, verticality, salinity and a long, refreshing finish. This is exceptional value at under £20. 2019 Baettig, Selección de Parcelas, Los Primos Chardonnay: The Selección de Parcelas are the top bottlings from Baettig. The wine is barrel-fermented and aged for 14-15 months in oak. Compared to Los Parientes, at three years of age, the wine shows less development in bottle. The peppery spice from the oak along with the textural layering on the palate gives the wine a great mouthfeel. It is rich and concentrated, but still has plenty of tension and a refreshing mineral salinity on the finish. 2020 Baettig, Selección de Parcelas, Los Primos Chardonnay: The 2020 Los Primos Chardonnay is much more reductive on the nose than the 2019 tasted alongside. The mineral, struck-match reductive tone eases with air followed by lovely honey and delicate white-flower aromas – bringing beautiful lift to the wine. The textural quality is outstanding, and the oak ageing gives the wine a textural layering that is rich, concentrated and juicy. The orchard fruit and pepper spice from high-quality oak are all beautifully integrated. The refreshing saline notes come through on the finish and leave the palate feeling super fresh. 2019 Baettig, Vino de Viñedos, Los Parientes Pinot Noir: The 2019 Pinot Noir has just 7% whole-bunch fermentation, but it adds complexity, bringing lovely grilled, herbal, savoury notes to the wine as well as a bit of texture. The savoury tones gel nicely with earthy, wild strawberry and a touch of menthol. The inclusion of whole-bunch here is quite noticeable and dictates the character of the wine. 2020 Baettig, Vino de Viñedos, Los Parientes Pinot Noir: The 2020 is noticeably richer and full-bodied compared to the lighter-styled 2019. The whole-bunch, grilled, herbal, stemmy tones again add complexity but seem better integrated and balanced with the rich blackberry and plum fruit. Despite having a higher percentage of whole-bunch than in 2019, the vintage’s riper fruit and tannins are better able to balance out the additional complexity.  2021 Baettig, Vino de Viñedos, Los Parientes Pinot Noir: The 2021 Los Parientes is easily the best Pinot Noir Baettig has made at the estate so far and a real jump up in quality from 2020 and 2019. The nose has great fruit clarity with rich, ripe black cherry and blackberry fruit aromas. The grilled herbal notes sit beautifully in the background, adding depth and complexity to the aromas. The whole-bunch is also better integrated on the palate, bringing lots of texture, matched by vibrant acidity and saline notes on the finish. It reminds me of a village Morey-Saint-Denis from a ripe vintage in its fruit profile with earthy, blackberry coulis fruit. The wine certainly has a more European/cool-climate edge to it. 2019 Baettig, Selección de Parcelas, Los Primos Pinot Noir: Like the 2019 Selección de Parcelas Chardonnay, the 2019 Pinot Noir has handled the warmer vintage conditions much better, but the warmth of the vintage shines through in the sweet, candy-like blackberry fruit. This is more New World in style – full-bodied, rich, ripe and full of juicy fruit. The herbal tones from a proportion of whole-bunch comes through nicely on the finish, adding savoury complexity. 2020 Baettig, Selección de Parcelas, Los Primos Pinot Noir: The 2020 has a very dark, deep purple colour and some charry, smoky and peppery tones from high-quality oak that is well balanced by fresher, grilled, herbal notes from the portion of whole-bunch fermentation. The sheer number of distinctive styles of wine that emanate from France never fails to amaze. From the full-bodied, sumptuous Cabernets and Merlots of Bordeaux to the ethereal Pinot Noirs of Burgundy; from the mineral whites of the Loire to the aromatic spectrum of Alsace – everywhere you look there is variety. The Jura, situated in the remote central-eastern frontiers of France (bordering Switzerland) is another completely unique and distinctive French winemaking region – one which, perhaps because of its limited size and isolation, is not quite so universally known. But in recent years the region has grown in prominence and is now a real point of interest for collectors today – most notably for the quality of its white wines. Chardonnay and the native late-ripening white grape Savagnin produce wines that rival top Burgundy and, in many cases, offer better value. But it hasn’t been an easy road to recognition for the region. Following the phylloxera outbreak in the late 19th century, the Jura was on the brink of being wiped out altogether. Historically, it was a significant wine-producing region – 10 times bigger than it is today. But, in terms of size, it never recovered. Many of the vineyards were grubbed up, becoming farmland pastures; what remained amounts to just 2,000 hectares (a mere 10% of its original size). The leftfield oxidative style of the region’s wines also meant that as France’s wine exports grew, the Jura remained largely unnoticed. Traditionally, the region’s uniqueness came from the oxidative style of its white wines – the most famous, distinct and extreme of which is vin jaune. This white wine is made from Savagnin that is aged in barrels for over six years. During this time, the wine evaporates, allowing for oxygen ingress and a yeast film to form on top of the wine – protecting it from oxidation and at the same time strongly influencing the flavour. The process and effect is not dissimilar to Fino or Manzanilla Sherry, but the ageing is typically longer and the wine is neither fortified or blended – remaining single vintage. This style is distinct and, at its best, produces wines of outstanding complexity and fantastic ageing potential, but its intense flavours were never going to create mass appeal. Over the last 25 years or so, the younger generation of winemakers in the Jura have started to move away from only producing this oxidative style, influenced by their neighbours in Burgundy – whose vineyards are not dissimilar. The Jura – just 100km directly east of the Côte d’Or – shares similar soils of clay and Jurassic limestone and has the same continental climate, as well as growing both Chardonnay and Pinot Noir. In fact, many of the Jura’s younger vignerons cut their teeth making wine in Burgundy. Returning to their family domaines, they were more interested in producing wines styled on those of the Côte d’Or, focused on expressing site, rather than the region’s traditional style, dominated by oxidative characters and the influence of yeast. Young producers such as Jean-François Ganevat and Stéphane Tissot started to top their barrels, producing less oxidative, “ouillé” cuvées. This switch in style is arguably the most important recent development in the Jura. As these modern styles grew in popularity, the region started to attract a wider audience of fine wine drinkers.  Despite the similarities to Burgundy, the Chardonnay (sometimes blended with Savagnin) produced in the Jura brings its own elevated tautness and mouth-watering salinity and has acid-loving Chardonnay fans drooling. Burgundy producers themselves have even started to buy up land in the Jura; most famously Domaine Marquis d’Angerville set up Domaine du Pélican in 2012. Supposedly Guillaume d’Angerville was served a Chardonnay blind at Paris’s Taillevent restaurant and was convinced it was a top bottling of Burgundy. When he discovered it was from the Jura, he soon started exploring the region and before long had bought vineyards there. Fatter and richer in texture than Chablis, but more laser-like than the Côte d’Or – Jura whites have found a niche. What’s more, the vignerons’ knowledge of producing oxidative wines has given them the freedom to experiment with both reductive and oxidative characters (without going to the extremes of vin jaune), producing truly original wines. It is another distinct trait of the region that brings a lot of freedom to the winemaking and a lot of variety – even from just one producer. The Jura’s rise to prominence is also due to its association with low-intervention or natural wine – most notably the influence of Domaine Pierre Overnoy, based in the Jura hamlet of Pupillin. Overnoy is seen by many as the godfather of the natural wine movement – and his wines are today some of the most fiercely collected. The fanfare around this remarkable producer has been hugely influential on other producers in the region, at the same time raising the reputation of the region to an ever-widening audience. Other in-demand stars of Jura, who to one degree or another are classed as low-intervention producers and who make ouillé wines (though not exclusively) include Jean-François Ganevat and Stéphane Tissot. The difficulty today, at a time when Jura wines have never been more popular, is volume. Of all the regions in Europe, few have been hit as hard by spring frosts than the Jura. Successive vintages back to 2015 have seen production slashed. With rising demand, perhaps it’s time for the Jura appellation to expand once again and seek out sites that are less susceptible to frost. Domaine Pierre Overnoy aside, the top wines of Jura, for now, remain brilliant value – another reason fans of Burgundy are looking further afield. The white wine styles of the Jura Ouillé: Also described as modern or floral. In any other region, this is typically the “normal” style of any dry wine – in that the wine has no overt oxidative character. While traditionally barrels in the Jura might not have been topped up, allowing oxygen to influence the wine, for ouillé wines they are topped up to protect them from this. Sous voile: Also described as traditional or oxidative, these are the more traditional style of white wines from the region. Literally meaning “under the veil”, the wines are biologically aged with a film of yeast – like Manzanilla or Fino Sherry. Following fermentation, the wines are extensively aged in oak barrels that are not fully topped up. This encourages a film of yeast to form on the top of the wines, protecting them from oxidation and introducing yeast-influenced flavours. Depending on the winemaker, wines can be aged for one to 10 or more years using this method. The longer the wines are aged in barrel, the more oxidative flavours dominate the wine. Vin jaune is the most famous wine made in this style (see below). Vin jaune: A specific style of sous voile, with an official classification and made only with Savagnin. The wines have to spend over six years under flor before being bottled. Rich and complex, the most famous vin jaune is Château-Chalon. Vin jaune is also always bottled in a distinctive, squat 62cl clavelin bottle.

Macvin: This fortified Vin Doux Naturel is produced only in the Jura. It is made from the must of Savagnin which is then boiled – concentrating the must. It is then fortified with brandy to around 16% alcohol. Strictly this is not a wine since there is no fermentation process. Once fortified it is then aged for six years in oak. Vin de Paille: While not a style unique to Jura, it remains an important style of the region and with quite distinct rules under the appellation. Grapes (usually Chardonnay and Savagnin, and sometimes the red grape Poulsard and Trousseau) are typically picked early to retain acidity and then dried, concentrating the sugars. The wine is then fermented and must reach 14% alcohol. Depending on the grapes’ concentration, the residual sugar of the wine can vary from 60-130g/litre. The wine must be aged for a minimum three years (which includes 18 months in oak). The wines can be made in a fresh or oxidative style depending on the producer’s preference. The wines are always sold in half-bottles. Recommended wine producers in the Jura Domaine Pierre Overnoy: Since he was a boy, Pierre Overnoy was taught how to make wine by his father using traditional methods and without sulphur dioxide. Despite studying modern winemaking in Burgundy during the mid-1970s, he was disappointed by the results. Returning back to the Jura, he adapted his father’s traditional approach to produce wines to his liking – as well as making wines in a fresher non-oxidative style. In 1984, Overnoy stopped using sulphur during fermentation but continued to use a little at bottling. By 1986, he had stopped using SO2 at all. He has been hugely influential in the natural wine movement. In 2001, Pierre Overnoy retired at the age of 63, handing it over to his protégé Emmanuel Houillon, who worked alongside Overnoy from the age of 14. Overnoy’s almost evangelical following, along with miniscule levels of production, have made the wines highly sought-after. The release dates of the wines are not set, only released when Houillon deems them ready to drink, making it sometimes challenging for collectors. Houillon even bottles the same vintage of a wine at different dates – and only began to note bottling dates on the wine labels from 2018. Domaine Jean-François Ganevat: Ganevat is the 14th generation of his family to make wine in the Jura, with the family estate founded in 1650. Before joining the family estate in 1998, he worked with Jean-Marc Morey in Chassagne-Montrachet. Although the estate has just 8.5 hectares under vine, the domaine grows 45 different varieties – many of which are ancient, native varieties to the Jura, including two distinct red varieties Poulsard and Trousseau which are the most planted in the region along with Pinot Noir. His best wines however are his ouillé Savagnin and Chardonnay that can be outstanding. Benedicte & Stéphane Tissot: This is one of the largest and most important estates in the Jura today. Although the domaine name is officially still Domaine André & Mireille Tissot (named after Stéphane’s parents) the bottlings are labelled Benedicte & Stéphane Tissot. The domaine has 50 hectares under vine in both the Arbois appellation (where the winery is based) as well as the Côtes du Jura and Château-Chalon appellations. There is plenty of experimentation going on with the estate producing a wide array of cuvées from the traditional flor-aged Savagnin bottlings of place-designated vin jaunes of Château Chalon, La Vasée and Bruyères to their more modern ouillé single-vineyard Chardonnays. Tissot also produces a rosé made from a rare Chardonnay clone that has a natural pink tinge. Of the top cuvées, their single-vineyard Chardonnays from the Clos de la Tour de Curon, La Mailloche, Les Graviers and Les Bruyères vineyards are the most sought out.
