The second wine in the range, the NV Champagne Esprit de Craie Extra Brut has a characteristic perfume that has a bit more refinement on the nose, with white flowers, lime candy, ripe green apple, and melon. The palate is ripe with juicy fruit yet feels more pure than the Grand Cru. I think this has more charm and is a great aperitif. Drink now or over the next 10-12 years.

Revisited from the October 2017 disgorgement, Varnier-Fannière's NV Extra Brut Esprit de Craie continues to show well, delivering an inviting bouquet of nougat, preserved lemon and rock salt. Medium to full-bodied, it's pure and delicate, with ripe but racy acids, elegantly chalky structure and a nicely defined fisnih.
