The 2023 Chablis Vau de Vey 1er Cru, aged 50% in used oak, has a light, fresh apple blossom- and pear-scented nose with hints of pressed white flowers. The palate is well balanced with slightly honeyed citrus fruit and modest weight, though it needs more mineralité to come through on the finish. But there is a pleasant dab of ginger on the aftertaste. Tasted blind at the BIVB offices in Chablis.

Certified organic. Fermented in barrel using their proprietary yeast made from their own vineyard. Full natural malo. The wine spends winter on full lees (30% in barrel, 70% in stainless steel) and then the two portions are blended in spring and the wine spends a few more months on fine lees in stainless steel with a bit of bâtonnage. Bottled July 2023. Sylvan nose with a touch of apricot. Ripe fruit but restrained. The balance here is excellent. Concentration with grace. Fills all the corners with fluent peach and apricot fruit, just the most gentle hint of stone fruit. Very gentle, but pulsing with life and fluid and all about the fruit. (TC)
