The 2020 Chablis Vau de Vey 1er Cru comes from a southwest-facing vineyard, just under a hectare in size, the steepness making the soil almost impossible to work. This more discrete nose demands coaxing from the glass, yielding hints of sea spray and oyster shell infusing the orange rind aromas. The well-balanced palate is harmonious and very saline, with a beautiful line of acidity, perhaps one of de Moors' most precise wines on the finish. I just adore this. You will too.

The 2020 Chablis Vau de Vey 1er Cru, from mainly marn soils, raised in four demi-muids for 15 months after which is transferred into vat, was showing a little more reduction on the nose than de Moor's other cuvées. The palate is very well balanced with a steely line of acidity that lends this Vau de Vey superb linearity; it is quite persistent with a saline finish. This will need cellaring if you want to see it in full flight.
