The 2019 Chablis Vay de Vey 1er Cru is aged in demi-muids for 18 months. It has an expressive bouquet of beeswax, linden, fern and just a hint of baked bread in the background. The palate is well balanced with crisp acidity, sharp and penetrating on the entry with a more saline note taking over in the second half. Quite linear and strict at the moment. I would afford this 24 months just to develop more harmony. Very fine.
