Jaime Araujo’s surname is a familiar one to Napa collectors. Her parents Daphne and Bart purchased the famed Eisele Vineyard in Calistoga in 1990 and established their eponymous winery on the site shortly after. Jaime was enrolled in university at the time and wouldn’t join her parents in Napa for many years, instead spending over two decades studying and working in Europe, including a stint at Moët Hennessey. She arrived in Napa in 2012 to work alongside her parents as a business consultant, but the job was short-lived, when the winery and Eisele Vineyard was sold to Artémis Domaines (the parent company of Ch. Latour) in 2013.   While her parents went on to establish Accendo Cellars, with Jaime and her brother as partners, the itch to build a business of her own only grew stronger. “I always wanted to run a business as a force for good,” she recalls. She got her chance during the first vintage at Accendo in 2013, when she turned a Cabernet Sauvignon lot that didn’t quite fit in with any of the Accendo cuveés into her first 300 cases of Trois Noix wine. (The name – French for “three nuts” – is a cheeky reference to her two children, as well as her brother’s daughter, all quite young at the time.)   Despite her family’s legacy, and perhaps the temptation to enter the market at the top end, as many newcomers do, Jaime was intent to create wines that were approachable and embodied sustainability ideals. This included a pricing strategy that skewed heavily towards affordable options, ranging from $30-50 per bottle and the most expensive Cabernet Sauvignon topping out at $150. “I’m not in this to make billions,” she laughs. “It’s so important that Napa is accessible to as many people as possible. You have to be welcoming and make wines that appeal to everyone.”    Even before Jaime was developing her brand, Steve Matthiasson had been quietly establishing a reputation as one of Napa’s most respected organic winegrowing experts. After studying horticulture as a graduate student at the University of California Davis, he launched his wine career in 1995 as a viticultural consultant, going on to settle in Napa with his wife Jill Klein Matthiasson in 2002 and building an impressive client roster. Since 2007, Steve has worked closely with the Araujo family, first for Eisele vineyard – where he continues to consult – as well as at Accendo. Other current and past clients include Dalla Valle, Spottswoode and Chappellet.   The process of becoming a winemaker in addition to viticulturalist, however, has been a slow and steady process. Matthiasson says he learned about wine almost by osmosis over the years, sitting in on client tastings and by keen observation. In 2003, Steve and Jill produced just 120 cases under their name, but by 2017, they reached a major milestone with the purchase of a small winemaking facility and neighbouring vineyard in the Oak Knoll AVA – a massive accomplishment for two outsiders with little initial capital. Last year, their production reached 12,000 cases, stretched across 25 unique cuveés. Today, Steve farms most of the vineyards he makes wine from, including a small vineyard at his home, where he has planted rows of northern Italian varieties, including Refosco, Ribolla Gialla and Schioppettino.   Inside the compact Matthiasson winery, cosy by Napa standards, foudres line the walls and nearly every inch is occupied with equipment, case goods and barrels. In the corner, a stack of large glass jars filled with liquids of varying colours sits – the aromatics steeping in alcohol for vermouth, Steve explains, which he and his wife make along with olive oil and jam, as accompaniments to the unique lineup of wines Matthiasson produces, ranging from single-vineyard Cabernets to more esoteric fruit and wine co-ferments. While many collectors still may not have heard of Matthiasson, Steve says he is proud to be sought after by sommeliers and others in the wine trade: “We like to say we’re the musicians’ musician.”   Both Jaime and Steve believe strongly that their businesses must be both environmentally and socially responsible. “It’s so important to stand up for what you believe in,” Jaime emphasises. Today, Trois Noix boasts a range of sustainability initiatives, including B Corp status, a high-level sustainability certification which only two other wineries in Napa currently possess. Though not specific to wine or agriculture, B Corp certification is awarded after a rigorous assessment to prove a dedication to positive community impact alongside profit.   In the same vein, all of the vineyards Steve farms for Matthiasson are organic, which is the certification that is the most meaningful to him – and represents a full circle of sorts from his early days studying agriculture, when winemaking was not yet on the horizon. “Organic farming has become not just accepted but embraced since I’ve been here,” Steve says, saying that it’s becoming the norm rather than the exception, especially so for the most well-known cult Napa wineries. “And it’s not just for PR,” he adds, saying many don’t broadcast their farming practices. “They truly believe it makes better wine.” Steve believes the standard of farming has improved dramatically since he arrived in Napa and so has the quality of the resulting fruit. “As the years have gone by, our ability to do the right thing has increased,” he says.  The resulting wines that both Trois Noix and Matthiasson produce are crafted in a fresh style, with an emphasis on primary fruit and terroir-specific cuvées, as opposed to dominant oak or heavy extraction that have been the trend for fine wine in Napa. Araujo says she is trying to craft wines that are reminiscent of Napa 50 years ago, by using a light hand. “We started getting bigger and bolder in Napa, and that’s fine, but we can do this, too, and do it well.” Araujo describes her goal each vintage as crafting wines in a “sweet spot”, built to enjoy immediately but also with the structure and acidity to age for several years at a minimum.    At Matthiasson, pick dates are watched closely, and occur on the early side for Napa, so that alcohols remain low and acidity is naturally brisk. Other than a small amount of sulphur, no other additions are made. “We utilise traditional winemaking methods,” Steve says – quick to note, though, with a laugh, that there is a difference between “natural and natty”, explaining that his goal is to make fresh, clean wines from the healthiest fruit possible. Unlike other Napa wineries that employ optical sorters and tables lined with harvest workers examining every berry, Mathiasson does not sort the fruit prior to fermentation, trusting instead in the farming and meticulous picking over multiple passes.   “We’ve always been an agricultural community, and no one wanted to talk about that for a long time,” Jaime tells me. She believes the future of Napa will be a focus on not just high quality but also history, community and a reputation for doing the right thing. These will not be talking points for her brand only, however, as last year she was elected Board Chair of the Napa Valley Vintners. A nonprofit trade association founded in 1944, NVV acts as a voice for the wine business in Napa Valley, promoting, supporting and advocating for its over 500 members. “I’m a bridge between old and new because of my family and my experience,” Jaime says, explaining that she hopes to bring a fresh perspective on the future of Napa, one that emphasises a range of styles and price points, but most of all, is able to welcome a wider range of people than ever before, by showing the varied people and places of the region. Matthiasson voices a similar ethos. “The wine business has so much artifice, but we want to let people in.”  Matthiasson and Trois Noix collaborated on a special lot for Premiere Napa Valley last year – a lot that we purchased and will soon be releasing. If you ever catch the train into Saint-Emilion, you’ll notice that it runs through the heart of the region’s vines. Just behind the station, on the outskirts of the village, lies Ch. Haut-Simard – an unassuming property that just happens to be owned by the Vauthiers – the same family that is behind Ch. Ausone, one of the region’s most famous estates. Over 15 years after the Vauthier family took over the estate, it’s emerging from the shadows – proving just how good a site it is.  Ch. Simard and Haut-Simard – both owned by the Vauthier family today – were once part of the same property, which dates back to the 16th century, named by the Simard family in 1865. When the railway line between Libourne and Bergerac was built in 1870, it ran straight through the vineyards and divided the estate in two. The railway slices across the foot of the slopes of Saint-Emilion, neatly dividing two different terroirs. North of the railway line lies Haut-Simard with more clay and limestone, while the larger Simard lies to the south on sandier soils.   In 1917, the four hectares of the original Haut-Simard were purchased by Leonard and Charlotte Gratadoux. They built a new house and cellar in 1929 – which is still in use today. Claude “Coco” Mazière – Edouard Vauthier’s great-uncle – bought the winery and 10 hectares of vineyard in 1954, the original Haut-Simard and a slice of Simard. Gradually he acquired the rest of the Simard estate and expanded Haut-Simard, with the two estates growing to 50 hectares in total – and, although the two wines were long made separately, from the 1990s Mazière put all the fruit into Ch. Simard.  Great-uncle Coco managed the estates through to his death in 2008. “He passed away almost in his office,” Edouard tells me – emphasising how Mazière worked almost obsessively to the end of his days. When he died, Alain Vauthier – Edouard’s father, who was already responsible for Ch. Ausone, Ch. Moulin Saint-Georges and Ch. de Fonbel – inherited the Simard estate.  “Look at the maps of the soil and look at where Ch. Haut-Simard is, it’s sand, a little bit of clay and a little bit of limestone – it’s a terroir totally suitable for Cabernet Franc,” Edouard explains. “When you dig a little bit, you realise the water table is 10-15 metres below. It’s very deep and very good soil that can produce a great wine.” Indeed, look at the property’s neighbours and you’ll find some illustrious names: Canon-la-Gaffelière, La Gaffelière, Pavie and Larcis-Ducasse are all a stone’s throw away. Haut-Simard may be a mere seven or eight metres above sea-level, but it’s enough to separate it from the flood plain where much of Simard sits.  Realising the potential, Alain decided to separate Simard and Haut-Simard once more (re-introduced from the 2008 vintage) and set about an extensive replanting program for the 10 hectares of Haut-Simard, putting in swathes of high-density (12,600 vines per hectare) Cabernet Franc in 2008, 2009 and 2010. Where the Haut-Simard vines once had around 80-85% Merlot, now 70% of the vineyard is dedicated to Cabernet Franc – focusing on quality rather than quantity.  Little has changed in the winery since it was built in 1929, and the team still uses the original concrete tanks. The fruit is all picked by hand, with density sorting now routinely used, spending around 20 days on skins, with délestage (rack and return) favoured over punch-downs/pump-overs to allow for gentle extraction. Once pressed off, the wine spends around 14 months maturing in around 20-30% one-year-old barrels and the rest in concrete.  As so much of the vineyard was ripped out, volumes were tiny in the Vauthiers’ first few vintages. Fruit from the young vines started being introduced from 2014 and the blend has continued to shift, with the 2022 the first to contain 70% Cabernet Franc. “It changed totally the game,” Edouard says – explaining how they’re finally seeing the fruits of their labours. Even now, only 2,500 cases are produced each year.  For Edouard, the Merlot on sandier parcels brings notes of strawberry, while on limestone it adds liquorice, complementing the Cabernet Franc’s dark fruit and green bell pepper. That dark fruit has built with each vintage as the new plantings come into the blend and vines mature, lending additional texture and structure. The average age in the vineyard is just 15-16 years now, only set to offer more as it matures. This might be a modest wine, but it’s one that has more than enough capacity to age. “I’m sure it will last 15 years with no problem,” says Edouard.   Tasting through a handful of vintages, it’s amazing to see the evolution of the Haut-Simard style -from the more solid 2016 through to the linear, bright, elegant 2022. It’s a wine that has impressed us en primeur for the last couple of years too – punching far above its weight.   Tasting Ch. Haut-Simard  2016 Ch. Haut-Simard: Plummy, sweet and round, this is full-bodied and concentrated, with real density to the fruit on the palate. It’s fresh, with a saline finish, yet there’s a solidity to this, not having the precision, brightness and aromatics of more recent vintages. Blend: 65% Merlot, 35% Cabernet Franc  2018 Ch. Haut-Simard: The nose of the 2018 Haut-Simard is instantly more expressive than the 2016 – combining red fruit and an herbaceous note with a toasty sweetness. It’s more linear on the palate. The intense core of fruit is rich and tightly packed, framed by grainy tannins at this relatively youthful stage. The finish is long and savoury, with a hint of blackcurrant leaf. Blend: 70% Merlot, 30% Cabernet Franc  2019 Ch. Haut-Simard: Floral, lifted and aromatic – the 2019 Haut-Simard is a world away from the previous vintage. Dainty berry fruit – blackcurrants and redcurrants – lead to an elegant, fine-boned palate. It’s precise and juicy, lithe and balanced with fine, chalky tannins. Blend: 60% Cabernet Franc, 40% Merlot  2022 Ch. Haut-Simard: The 2022 is the unashamed star of our mini-vertical of Haut-Simard, and the vintage Edouard Vauthier points to as a fulcrum point for the estate. The nose is sweet and bright, packed with seamless red berry fruit, along with hints of florals and pencil shavings. It is the palate that is so striking, however, driven and long, linear with graphite-etched tannins and mouthwatering acidity. Vibrant, pinpoint and very, very good – especially for the price. Blend: 70% Cabernet Franc, 30% Merlot  2024 Ch. Haut-Simard: The nose is perfumed, with intense cherries and lifted florals. There’s a lush intensity to the palate, with a mineral line that sup ports the fruit and complements the bright acidity. There’s lovely concentration here with fine tannins that provide a fine-boned framework. 12.7% and 3.74pH. JAMES SUCKLING James Suckling was the first out with his report, published on 19th April, before most people have made it out to taste the new vintage. He’s not shying away from calling this a truly great vintage, saying “it sets a new benchmark for Bordeaux”. It’s the 40th vintage he has tasted en primeur, and he feels it proves the region’s ability to face the challenges of climate change, with its uniquely hot and dry conditions. He notes that while the reds are the undoubted star, it is also a great vintage for Sauternes – with botrytis development in mid-October that produced exceptional wines.  While the growing season urges parallels with 2003, the wines are totally different. The 2022s “can be flamboyant, fruity and tannic, yet they have a freshness and form that give them energy and vitality”, he writes. While he found a few wines that were over the top, he generally felt there was consistent quality across the spectrum, from more modest estates to the grandest châteaux, with the wines “exceptional”. He gives nine potential 100-point scores, versus only one last year (for Lafaurie-Peyraguey in Sauternes – an address he also praises this year).  Suckling’s highlights: Cheval Blanc, Lafaurie-Peyraguey, Lafite-Rothschild, Le Pin, Léoville Las Cases, Pontet-Canet, Trotanoy, Pavillon Blanc du Ch. Margaux, Angélus, Canon Read James Suckling’s full report  WILLIAM KELLEY – WINE ADVOCATE  Publishing his report on the Friday of Primeurs week, William Kelley defines 2022 as “an amplifier” – highlighting differences between sites and how producers work both in the vineyard and winery. “Bordeaux has produced some monumental wines in 2022, but unlike many of the great vintages of the 20th century, the year was not a rising tide that raised all boats,” he says. The best wines offer “remarkable concentration, energy and harmony” but there are some that are “jammy, astringent and rustic”. He highlights that those with higher organic matter in their soils and who managed their canopies well were rewarded. He argues that vines adapted to the long, dry season, and the experience of recent warm vintages ensured that 2022 was not another 2003 – despite its extreme, hot, dry conditions. He warns that the frequently high pHs are a risk for the final hurdle – with an increased chance of volatile acidity and Brettanomyces, suggesting that although few samples showed these faults during the en primeur tastings, “it is certain that some producers will trip before the finish line this year”. Nevertheless, he is clearly impressed by the best wines – with eight potential 100-point scores in the mix. In a first, the work was divided between Kelley and Yohan Castaing, a relatively new member to the Wine Advocate team – so there are notes from both. The highlights noted below are 12 specifically recommended. Kelley’s highlights: Berliquet, Bourgneuf, Branaire-Ducru, Clos Manou, Dame de Montrose, De Retout, Domaine de l’A, Grand Village, Haut Marbuzet, Langoa Barton, Larrivet Haut-Brion, Mangot Read Kelley’s full report, notes and scores on the Wine Advocate GEORGIE HINDLE – DECANTER  Despite the year’s extreme conditions, Decanter’s Bordeaux correspondent Georgie Hindle writes that “a surprisingly large number of vineyards and their growers prevailed against the odds to create a wealth of exceptional wines in 2022”. She feels there are “both serious highs and lows”, but “some estates produced their best-ever bottles” – with “supple textures, excellent definition, long finishes and a sheer brightness and energy that has produced some of the most compelling wines I’ve ever tasted at this early stage”. She also emphasises how, despite being similarly hot, the year is not another 2003. For Hindle, the Margaux appellation was a highlight, as were the wines from the Haut-Médoc, as well as the top end of Saint-Emilion. She has pulled out a list of “coup de coeur" wines – those that were heart-stoppingly good, and it is those that feature as her highlights below. Hindle’s highlights: Beauséjour Duffau Lagarrosse, Canon, Cheval Blanc, Clos Fourtet, Figeac, Larcis-Ducasse, Laroque, Troplong Mondot, Les Carmes Haut-Brion, Smith Haut Lafitte, Brane-Cantenac, Giscours, Branaire-Ducru, Gruaud-Larose, Léoville-Las Cases, Pichon Comtesse, Montrose, Phélan Ségur, La Conseillante, La Fleur-Pétrus, Vieux Château Certan, Clos du Clocher, Pétrus Read Hindle’s full report, notes and scores on Decanter ANTONIO GALLONI – VINOUS  The first of the two Vinous reports comes from Antonio Galloni, who declares the best wines of the vintage to be “magnificent, viscerally thrilling wines” – “some of the most memorable young wines [he has] ever tasted” – although does temper this enthusiasm by saying that some selection is warranted. Running through the growing season, he highlights how “patience and technology” were critical – with larger numbers of smaller vats, allowing producers to harvest only what was perfectly ripe. The greatest surprise, of course, is the wines – not rich and opulent as for 2009 or 2018, but wines that “combine flavour intensity, energy and finesse in a way that I can only describe as magical”. He repeats the refrain that the wines bode well for Bordeaux’s fate in the face of climate change, and is clearly enchanted by the best wines. He flags that some of the wines are “a bit fragile” and that “élevage will make or break them”, not feeling it’s totally consistent below the top tier. He does, however, pull out a handful of over-performers, which we’ve listed as his highlights below. For him, the advancements in viticulture and winemaking are what define 2022 – wines of “notable depth and freshness without excess weight”, but exactly why they turned out the way they did remains something of a mystery. Galloni’s highlights: Alter Ego de Palmer, Beau-Séjour Bécot, Brane-Cantenac, Clos Puy Arnaud, Clos Saint-Julien, Figeac, Les Forts de Latour, Giscours, La Conseillante, La Gaffelière, Lafon-Rochet, Larcis-Ducasse, Léoville Las Cases, Le Pin Beausoleil, Les Carmes Haut-Brion, Malartic Lagravière, Moulin Saint-Georges, Puyblanquet, Quinault l’Enclos Read Galloni’s full report, notes and scores on Vinous JEB DUNNUCK  Jen Dunnuck is clear that the best 2022s are set to be “legendary”, with “brilliant wines from throughout the region”, but highlights that “there are dramatically different styles in the vintage” – emphasising that this is different to quality, which is “incredibly high”. The vintage is united by its “theme of ripeness and power”, yet yields, winemaking and terroir have all resulted in the aforementioned diversity. He finds the wines of the northern Médoc to be “powerful, concentrated, majestic wines showing remarkable purity and vibrance” and is fast to defend both the pH and alcohol levels, with the former sitting at or below the level of the 2020s and the alcohols “well within the normal ranges of 2009, 2010, 2015, 2018, 2019 and 2020, and very few 2022s show excessive alcohol”. He points to wines from the Right Bank’s limestone and deeper clay soils as “highlights of the vintage” – having retained “an incredible sense of freshness and purity while showing the inherent ripeness and power of the vintage”, although he finds Pomerol “slightly more erratic”. In his view, the satellite appellations have produced a “number of terrific wines” – with Castillon producing many “that rival the best from Saint-Emilion”. He compares the year to a blend of 2020 and 2018, or a mix of 2005 and 2010, with a little 2009 here and there. They are, he feels, “ripe, concentrated, sumptuous wines that have a real ‘wow’ factor”. Dunnuck’s highlights: Montrose, Mouton Rothschild, Haut-Bailly, La Conseillante, Larcis-Ducasse, Les Carmes Haut-Brion, Cos d’Estournel, Léoville Las Cases, Vieux Château Certan, Pétrus, Pichon Comtesse, Léoville Poyferré Read Dunnuck’s full report, notes and scores JANE ANSON – INSIDE BORDEAUX  Anson offered early coverage of the growing conditions and yields – ahead of tasting the wines – but her final reports don’t delve much into the detail of the year on its own, instead focusing on tasting notes and the methodology of her scoring. She is one of few critics to mainly offer firm scores rather than bands (apart from when there’s a chance of 100 points, which she doesn’t like to offer to unfinished wines), something she argues is most useful for those deciding on whether or not to buy. As her scores highlight (with five potential 100-pointers on the Right Bank, and two on the Left, but none for dry or sweet whites), she feels it’s a stronger year for reds than whites. She highlights the high levels of tannin and colour, as well as alcohols – noting that because of the latter she has erred on the side of caution with her drinking windows. She found the second wines stronger in the northern Médoc generally, and notes how producers used very different approaches to the vintage. On the Right Bank, she emphasises the advantage of being on Saint-Emilion’s limestone plateau, and that Pomerol offers “muscular swaggering style” this year. She pulls out a selection of wines as value buys, which we’ve listed as her highlights below. Anson’s highlights: Laroque, Saintayme, Peymouton, Bel-Air, Haut-Simard, Feytit-Clinet, Le Rey les Rocheuses, Laurence, Petit Bocq, Roquetaillade la Grange, Cantelys, Ferrande, Angludet, Mejean, De Pez, Fonbadet, Haut-Bages Libéral, Domaine les Sadons, Finegrave, La Fleur Lauga, Larrivaux, Bel Air Gloria, Cap Leon Veyrin, G d’Estournel, G de Guiraud, Charmes-Godard, Clos Floridène, L’Exuberance Blanc Read Anson’s full report, notes and scores LISA PERROTTI-BROWN MW – THE WINE INDEPENDENT  With some major releases arriving earlier than anticipated, Lisa Perrotti-Brown MW initially published a “teaser” article on the year, with notes and scores for wines that had been released or were set to be in the coming days, including more detail on Cheval Blanc, Angélus, the Barton stable and Beychevelle. In her notes on early releases, Perrotti-Brown writes that 2022 was “a faith-affirming vintage for Bordeaux growers” – proving that the region could handle climate change. She highlights the surprising consistency from the year, as well as “a luminosity… that defies what we thought we knew about Bordeaux varieties”. With “its myriad of earthy, nuanced, soft-spoken, shimmery expressions”, it’s “a vintage that Bordeaux fans and serious collectors will want to seek out”. In her full report, released a week later, Perrotti-Brown declares 2022 “a classic, great Bordeaux vintage”. Echoing our findings, she notes that there are no rules in this vintage – picking dates varied significantly, and yet drastically different approaches resulted in excellent wines. She believes that a minority of wines (less than 10% of what she tasted) were acidified which is not in itself problematic, but where it has been done poorly, it shows. She also argues that the record-high percentages of press wine leads to a ruggedness to the tannin structure of some wines. Despite these two quibbles, she was “surprised by how consistent [she] found the wines from top to bottom”, in terms of quality – but she feels, like Galloni, that the heterogeneity of the vintage comes through in the style of the wines. Overall, however, she finds the wines fuller-bodied, high in tannin and quite high in alcohol, but with no dried-fruit character, instead showing impressive bright, red fruit and florals – even if the acidity is relatively low. Stand-out appellations are tricky, but she points to Saint-Emilion’s limestone plateau and areas off it, as well as parts of Castillon, Fronsac and Entre-Deux-Mers with similar bedrock. She writes: “There are many beautiful wines from the Right Bank and Pessac-Leognan, but the top wines of the Médoc are astonishingly great in 2022. He argues that the anticipated vintage is subject to some fairly typical hyperbole. Although he emphasises that the vines seemed “in verdant rude health” prior to harvest, he’s not convinced that the heat and drought had no impact – as some producers, he suggest, argue. He references the increased use of press wine on the Left Bank, something he attributes to the influence of superstar consultant Eric Boissenot. As to the wines themselves, he seems reluctant to offer glowing praise, but writes that, “The crème de la crème is blessed with kaleidoscopic aromatics, intense fruit, finely-sculpted tannins, structure, elegance and length. Above all, contrary to what the growing season implied, they are suffused with freshness.” These are wines that “dazzle”. He feels however that – and contrary to others – that “terroir is not the be-all and end-all” but instead “a guiding hand” which results in “a partial flattening of the hierarchical pyramid”. Although he sings the praises of the best wines in 2022, he caveats this by saying some wines are “sweet ‘n’ sour”. This he attributes to “human error” and picking dates in particular, with the phenolic and sugar ripeness not always matching up. He feels that it was a season that demanded producers’ “A game”. He found Left and Right Bank are fairly equal in the year, but Saint-Julien was a particular standout. He finds the wines “unabashedly floral”, perfumed and black- rather than red-fruited. He highlights the powdered texture of the tannins in the vintage, as well as the unexpected freshness in the best wines. Most importantly, he emphasises that these are wines for long-term ageing. The Vauthier family is among Saint-Emilion’s most influential. The custodians of Ch. Ausone, they have been knocking about this medieval village since the 17th century, with the young team running Ausone today the 11th generation to make wine there. But the Vauthiers’ presence in Saint-Emilion spreads far beyond Ch. Ausone. They have also been in charge of neighbouring estate Ch. Moulin Saint-Georges since 1921, Ch. de Fonbel since 1971 and more recently Ch. Simard and Ch. Haut-Simard (since 2008). Their latest acquisition (again in Saint-Emilion) is the famed four-hectare site of Ch. la Clotte – another jewel in an impressive line-up of estates. Edouard Vauthier, the latest to join the business full-time (in 2019), likes to classify their properties using (heaven forbid) the Burgundy hierarchy. “If Ch. Ausone is the Grand Cru,” he says, “then La Clotte and Moulin Saint-Georges, still on the limestone plateau, are the Premier Cru equivalent. Ch. de Fonbel and the Simard estates are not on limestone but on sandier, clay soils, and therefore represent the village wines.” Tasting through the wines of all six estates, there is an undeniable similarity in style running through them. They all have such a refined tannic texture and purity of fruit, even in the least expensive bottlings of Ch. Simard and Fonbel. Edouard believes this is very much down to the family’s personal taste when it comes to ripeness levels, and their methods of extraction and maceration at fermentation. But it is not only this. When Alain Vauthier (Edouard’s father) took over the estates in 1999, he had huge ambitions for his “village” wines, Fonbel and Simard. “My father wanted to apply the same meticulous attention to detail in all his wines, whatever the family accountant might think,” he chuckles. Given the price of Simard on release is less than £10 a bottle, it might not make much financial sense to give it the same attention as Ausone, but they do – making these wines outstanding value. At this price, the wines are ideal for restaurants, with much of the stock held back specifically for them.  The Vauthier family’s eye for detail, even in these inexpensive wines, has also been to Ausone’s benefit. Simard, Fonbel and even Moulin Saint-Georges have all been a hotbed of experiments over the last two decades and have really helped, Edouard believes, enhance the quality at Ausone.   As trends changed in the region, Ausone, admits Edouard, adapted their extraction methods, notably from 2006 onwards. They also reduced the toasting of the barrels from 2011, which they felt was hiding some of the fruit, and you can taste the change in the oak regime comparing the wines over this period. Ausone is aged in 100% new oak, even today, but the change in toasting, he feels – and I agree, has greatly improved the wine. Tasting the older vintages today, while the oak is more present, the wines have not lost their unique identity – the sinewy yet refined tannins and amazing freshness are still very present, and the wines have matured beautifully. Despite Ausone’s premiership at this time, Edouard’s father Alain loved to experiment. Edouard jokes that his father was a little too obsessed with machinery. From about 2008 onwards he was buying up all sorts of state-of-the-art equipment, predominantly to try and raise the quality of their other estates. Being able to constantly compare these wines against Ausone was a healthy barometer. While many of these investments didn’t pay off, his father’s open-mindedness led to a magnificent discovery which was to have a huge influence on the Vauthier recipe and Saint-Emilion more widely today. He was the first vigneron in the world to trial the density sorting bath.  “It’s a very simple machine, perhaps that’s why we like it,” Edouard laughs. “If the machinery becomes complicated, we don’t understand anything.” The original design was used in pea production and was then modified to work for grapes. As the berries arrive at the winery, they are submerged, for less than a second, in a bath made up of a water and sugar solution. “It is a simple calculation,” says Edouard. “The density level can be adjusted so that any grape not sufficiently dense (and therefore concentrated) is disposed of. It brings 100% reliability to the sorting.” For the family, when they switched to using the machine, there was a clear distinction when it came to fruit purity in the wine.  But Edouard believes the density sorting machine is not only for sorting the grapes. Because the berries are submersed in water prior to fermentation, it cleans the berries. “All the dirt, all the dust, all the small particles are washed off. Going into the fermentation process you have a very clean tank and it results in a very clean fermentation. There are no impurities.”  As with all their experiments, the density bath was first tested at Ch. Simard in 2011. So happy with the initial results, they introduced it to Moulin Saint-Georges in 2012. By 2013 all three cellars and all six wines were equipped with the machine. Every grape of Ch. Ausone since 2013 has undergone density sorting. Tasting the wines from 2013 through to 2020, they have only become more ethereal. The purity of fruit is undeniable. This is not only down to the density bath, but with such a clean fermentation and a knowingness of the concentration levels of the berries, the winemaking team, Edouard explains, didn’t need to overly extract to get concentration or flavour into the wine. “We were ahead of the game,” he says, “and it was fortunate my father was friends with the inventor. We were one of the first using it.” Today Edouard estimates that at least 25% of Saint-Emilion properties use the method. Despite the advancements in technology, the Vauthier family knows that terroir remains the trump card in Saint-Emilion. Despite Alain’s meticulous attention to detail and however perfectly made the wines are, Simard or Fonbel will never give you the complexity you find in the berries of Ausone. It is the one part of the recipe that cannot be changed.  Saint-Emilion is a variable appellation, but its uniqueness lies in the presence of limestone. It is this that gives the wines low pH and naturally high acidity resulting in a natural freshness and energy in the wine. The grapes of Simard and Fonbel are grown on more fertile soils, which means the yields are naturally higher and therefore less complex. It also means more work needs to be done to manage mildew and disease.  “It’s harder to make wine here,” says Edouard. “Ausone, we are lucky, it is in the perfect place. Although every inch is manicured, it doesn’t take that much work to maintain the quality.” Back in 2008, the Vauthiers did extensive research on the availability of water across their Saint-Emilion properties. It turns out Ausone, even in the driest years, can still access enough moisture through the entire year, necessary for the vines to avoid water stress, thanks to its limestone soils. It is a special site.   The biggest surprise for Edouard when understanding his family’s vineyards was the natural difference in the quality of berries from site to site. “It is something that cannot be explained,” he says, “other than terroir. If you taste the grapes from each of our properties, all at the same period, at the same level of ripeness. Moulin Saint-Georges and La Clotte will have maybe three to four times more flavours and aromas than Simard and Fonbel and at Ausone it is 10 times more. I can’t tell you why, but it is true.” It is fascinating to think that despite all the improvements, Edouard believes it’s difficult to produce an unremarkable wine at Ausone. No doubt it is the reason it has been a prime viticultural site for over 2,000 years. Even back in the day, using basic traditional methods, the results still proved to be incredible. “When you taste old Ausone,” says Edouard, “it is light, aérien, everything is super smooth, delicate and balanced. While we can play with extraction and oak, in the bottle, we always have an Ausone typicity in the end.” His family’s job, he believes, is simply make sure nothing goes wrong.  Despite Edouard’s humble assertions, there is no doubt that the wines today are spectacular, the younger vintages only becoming more ethereal, and more refined. We recently hosted an event with Ch. Ausone in London, tasting nine vintages of the wine, as well as a flight from the Vauthier family’s other estates. We caught up with Edouard Vauthier to discuss what makes the property unique – and where the magic lies in this idiosyncratic Bordeaux appellation

Ch. Ausone: the Vauthier vision

Bordeaux has several different classification systems. While the Right Bank has only Saint-Emilion’s system (one that is a source of controversy), the Left Bank has a more complex web of rankings.   
The 1855 classification is the gold standard. The most famous and influential of them all, it lists the Left Bank’s very top estates. But beyond this crème de la crème, there are several other systems ranking properties – namely the Graves classification, the Crus Bourgeois and Crus Artisans.  
The Graves classification  
Almost 100 years after the famous 1855 classification, producers in the Graves decided to create their own equivalent. Other than Ch. Haut-Brion, the region’s properties had not been included in the 1855 classification. A draft of the classification was drawn up in 1953, then the official list ratified in 1958, with some changes in 1959.  
The Graves classification is much simpler than the 1855 classification. There is only one tier, with estates declared “Grand Cru Classé de Graves” for white wine, red wine, or both. Sixteen estates in total were defined as the region’s best. Couhins, Couhins-Lurton and Laville Haut-Brion were classified for only their white wines, while Fieuzal, Haut-Bailly, Haut-Brion, La Mission Haut-Brion, Pape-Clément, Smith Haut Lafitte and La Tour Haut-Brion were classified only for their reds.  
Interestingly,. Ch. Haut-Brion is only classified for red, however this is not because its white was not deemed worthy, but because it did not apply for classification, given production of the illustrious wine is so small. It remains one of the region’s highest-rated and most expensive whites. 
Although there have been no changes since 1959, some of the wines are no longer made under the same name. Both part of the Clarence Dillon family, Ch. Laville Haut-Brion is now bottled as Ch. la Mission Haut-Brion Blanc, while fruit from La Tour Haut-Brion is now used for the second wine of La Mission, La Chapelle de la Mission Haut-Brion (read more about the genealogy of the Haut-Brion estates here).  
The Pessac-Léognan appellation was only introduced in 1987, so some of the wines are bottled under this today.  1959 Graves classification  Ch. Bouscaut (red and white)  Ch. Smith Haut Lafitte (red only)  Ch. la Tour-Haut-Brion (red only)  The Crus Bourgeois  The term “Cru Bourgeois” has long been used casually, but it was introduced as a formal classification in 1932. There have been many changes to the classification over the years. There were 444 properties in the original group, many of whom used the term on their labels even though the classification was never officially ratified. In 2003, after three years of debate, the classification was updated and split into three tiers (with Cru Bourgeois Supérieur and Exceptionnel added), only to be annulled in 2007, with the term then banned from labels. In 2010, the Cru Bourgeois classification was re-introduced and assigned to wines rather than estates, with their status re-assessed each year, but this too was soon replaced.  
In 2020, a new version of the classification was unveiled, going back to the three tiers of Cru Bourgeois, Cru Bourgeois Supérieur and Cru Bourgeois Exceptionnel. The top rank of “Exceptionnel” includes just 14 estates, with 56 Crus Bourgeois Supérieurs and 179 Crus Bourgeois (adding up to a total 249 properties). The classification is only being assessed every five years, with the next iteration set to be announced in 2025.   
The classification is decided based on the quality and consistency of the wine (assessed via rigorous blind tasting), traceability and authentication, with sustainability encouraged and rewarded. While these wines are not as highly regarded or sought after as those in the 1855 classification, the wines generally offer good value, and all come from the Médoc, Haut-Médoc, Listrac, Moulis, Margaux, Saint-Julien, Pauillac and Saint-Estèphe. The Crus Artisans  
The Left Bank also has the Cru Artisan classification, designed to highlight smaller operations where the manager/owner is involved in every stage of production. The term has been used for over 150 years, however its official meaning was introduced in 1989. The classification was launched in its current guise in 2006, open to estates in the Médoc, Haut-Médoc, Listrac, Moulis, Margaux, Saint-Julien, Pauillac and Saint-Estèphe. Generally family-owned, properties must grow their own grapes, then make and sell the wines.  
There were 44 Cru Artisan estates in 2006, but the latest classification (unveiled in 2018) included only 36 – with many addresses sold/absorbed by other producers, some retiring, as well as a handful of new names added. The classification is based on a visit to the estate and blind tasting of its wines. On average, Crus Artisans have just 10 hectares of vines. Wine journalists are jaded folk – spoilt by too many impressive tastings, lunches and dinners. But when Champagne Louis Roederer invites you to an event celebrating 50 years of Cristal Rosé, few refuse. Cristal Rosé is, as Chef de Cave Jean-Baptiste Lécaillon told us, still “a hidden gem” and the rarest cuvée Roederer produces. It’s not often shown, and even visitors to the estate don’t get to taste the wine.  While Cristal – Champagne’s first prestige cuvée – was created in 1876, its pink sibling was born almost a century later. It was Jean-Claude Rouzaud, current CEO Frédéric Rouzaud’s father, who created the wine, aged 32. He had been managing the company’s vineyards and took over the winemaking in 1974.  “His great vision was to put the vines back in the centre of the creative process,” explains seventh-generation Frédéric Rouzaud. For Roederer, site and farming have long been key to what they do (long operating both as a grower and négociant), but Jean-Claude’s move from vineyard to cellar pushed this further, allowing for – as Lécaillon put it – “a creative and constant dialogue between the vineyard and cellar”.  The same year that he started leading the cellar team, Jean-Claude decided to make a rosé version of Cristal. Almost all rosé Champagne was – and is – made by blending a still red wine in with the base white wines. Jean-Claude, however, wanted to use co-fermentation to keep the wine in the style of Cristal, a decision that Lécaillon says was key, making the wine more ethereal, precise and “Pinot-y”, with a juicier texture.  The wine was built around parcels of Pinot Noir in the Bonottes area of Aÿ, which Lécaillon describes as the “Musigny” of Champagne. In his mind, the Pinot Noir from these plots offers a “special tannic complexity” – tannins that are more saline, integrated and aromatic; the Pinot Noir here is, he says, “effortlessly perfect” and the heart of Cristal Rosé. These three vineyards (Bonotte Pierre Robert, Gargeotte and Côte du Moulin) had been used for Cristal since the 1870s, and more recently became the source for Pinot Noir material for their vine nursery – with 150 different massal selections taken from the plots – long recognised for their quality.  The three original Pinot Noir plots are now being replanted and – while the vines mature – another site in Aÿ, La Villers, a mid-slope parcel at higher altitude, is currently being used in the blend (from the 2018 vintage). It is set to form part of the wine long-term, its cooler position thought to be of particular benefit with climate change. Complementing the 55% Pinot Noir is Chardonnay from two sites – Pierre Vaudon in Avize (bringing more power and richness) and Montmartin in Le Mesnil (lending length, salinity and a chalky minerality).  The first two vintages (1974 and 1975) were more experimental, as Jean-Claude figured the wine and style out, but the third attempt in 1976 produced something special – with sufficient phenolic ripeness to produce a rosé truly worthy of the Cristal name. Even now, 48 years later, that wine is singing – combining savoury rye and brown miso notes with pear tarte tatin and an earthy power. While it had a flurry of three vintages at the start of its life, just 25 vintages of Cristal Rosé have been produced to date. The wine needs a year where not only the quality of fruit is outstanding, but the Pinot Noir and Chardonnay ripen at the same time – allowing for their co-fermentation – something that is relatively rare.  Only made with vines that are minimum 20 years old, yields are low for Champagne (at 35-40hl/ha).  The Pinot Noir is destemmed, crushed and left to macerate. Earlier vintages saw this happen over two to four days and at warmer temperatures, but the winemaking has evolved over the years, with a pivotal shift from the 2008 vintage. From 2008. Lécaillon started chilling the Pinot Noir down to -4̊C overnight, prior to de-stemming and crushing the fruit – something which he believes avoids extracting any green character.   The must is then left to cold-soak for between seven and 10 days, with no punch-downs or pump-overs – a true “infusion” (to avoid any microbial spoilage, they cover it with dry ice for the first four days, then use nitrogen). The must isn’t chilled during this time, and the temperature gradually rises to a maximum 8-9̊C. Moving to a cold-soak was inspired by an accident. In the warm 1989 vintage, Lécaillon’s first year at Roederer, they didn’t have a cooling system in the cellar, and the Pinot Noir was left in a reefer – undergoing an inadvertent cold-soak. The resulting wine was so good that it inspired Lécaillon.  Just as the fermentation starts, the must is racked off and blended with the Chardonnay which has been whole-bunch pressed pneumatically (Lécaillon argues the grape’s reductive nature needs a little skin contact to avoid being overly thiol-driven and Sauvignon-esque). Around 20% of the base wine sees oak. After secondary fermentation (under crown cap, something with Lécaillon argues helps preserve precision and terroir versus cork), the wine spends eight years on its lees, developing immense complexity.  “Since 1974, it has been our laboratory of farming, of winemaking,” says Jean-Baptise Lécaillon of the wine. Cristal Rosé was in fact the House’s first cuvée to be farmed biodynamically, and the first biodynamic prestige cuvée in Champagne, from the 2007 vintage. He explains that he is looking for phenolic ripeness, integrated with the salinity of Champagne, seamlessly combining the tannins and acidity; a wine complemented – but not dominated – by bubbles of salt.  The wine is undeniably remarkable. Tasting through a range of vintages from 1976 to the present day, all in magnum (find full tasting notes below), the vibrancy, purity and moreish, saline, minerality of these wines left me speechless. Their ability to age is effortless, with the 1989, for example, still tasting incredibly youthful. Talking about Cristal Rosé’s evolution, Lécaillon explains that he finds the first decade is all about fruit, but then the wines return to their site and soil, becoming wines of place. Conversation strays into weather Champagne today, with global warming, can still make wines that will age as beautifully.  “Champagne is not just about acid; it’s about freshness,” says Lécaillon. He points to the 1976 and 1989 vintages – both incredibly hot years, with the fruit picked at almost 12% potential alcohol and modest acidity levels – and yet the wines are full of freshness. Back then, producers were on holiday throughout August, and the fruit was picked in September (1st for the 1976 and from 5th for the 1989), but with such conditions today they would have harvested in mid-August. It is perhaps, he suggests, a lesson that the region is overreacting to warm conditions – with too many producers chasing acidity, rather than phenolic ripeness. For the skins are, he argues, the key to this sense of freshness, the dry extract that allows the wine to age.   The House has introduced a Cristal Rosé Vinothèque, or late release. To date, there have only been a handful of vintages – the 1995, 1996, 1999 and 2002. The maturation for this wine isn’t set and varies according to the vintage, normally spending longer on its lees, both sur latte (lying down) and sur pointe (upside down), the idea being to build umami complexity in the wine. The sur pointe ageing is unusual, something Lécaillon favours for its more reductive nature, keeping the wine aromatically fresh (the wine is still riddled four times a year in the same position, to agitate the lees and absorb any oxygen). Generally these releases are offered around 15-17 years after the vintage. The dosage is often lower than the original bottling, with the longer lees ageing lending balance without a higher sugar addition. Tasting the 2002 Vinothèque (a wine that feels infantile), Lécaillon says: “Is it better? I don’t know, but it’s another expression.”  I’ve written before about Lécaillon’s tireless approach to wine-growing – constantly looking to learn and evolve, and the week after our dive into Cristal Rosé he was flying to Japan to visit the Fukuoka farm (founded by Masanobu Fukuoka, the author of The One-Straw Revolution and a pioneer of permaculture or “natural” farming). His fight against the “banalisation” of taste continues, as he looks for ever-more ways to enrich the world of Louis Roederer. If the next 50 years of Cristal Rosé is nearly as good as the first, we’ve all got a lot to look forward to.  Five decades of Cristal Rosé: the tasting  2013 Cristal Rosé: A beautiful, late-ripening growing season that provided the last October harvest to date. A wine Chef de Cave Jean-Baptise Lécaillon describes as having “eternal youth” – something that is hard to disagree with after tasting the wine. This is a baby, the nose enticing with delicate floral aromas and bright citrus, not giving too much away. The palate is long and saline, tightly wound, but bursting with bright fruit on the mouthwatering finish, combining lush redcurrant and lemon. Gorgeous. Dosage 7g/l, tasted from magnum.  2012 Cristal Rosé: Lécaillon notes how 2012 was seen as an “easy” vintage on release, riper and richer with a little more Pinot Noir in the blend, but is now entering its second life, with reductive, chalky notes that bring it back to its soils. The wine is beautifully earthy and drastically different to the 2013, with power and intensity. It’s very savoury, a wine that is all about breadth and structure, with wild strawberry and raspberry notes mingling alongside a sea-spray freshness, driving on to a long, mineral finish. Dosage 8g/l, tasted from magnum.  2008 Cristal Rosé: This was the first fully organic vintage for the entire Roederer estate, and marks the start of a new era for Cristal Rosé with its cool “infusion” technique for the Pinot Noir. Paired with the 1995 vintage, the two wines are windows into two completely different worlds of Cristal. With the copper tone of a sunset, it’s a wine of muscle. It’s almost haughty, with length, power and elegance – showing off its flawless structure, with a zesty citrus drive complementing its austerity. The finish is long and saline. It will be incredible to taste this in 20 years’ time. Dosage 8g/l, tasted from magnum.  1995 Cristal Rosé: This vintage was one of the last to see the Pinot Noir soaked at 20-24̊C. It is, in Lécaillon’s mind, the “same terroir, but a different story” versus more modern iterations of the wine. The wine glows golden in the glass – the colour of the sun just as it breaks the horizon. It’s incredibly open, the aromatics constantly shifting to reveal new layers. There’s a touch of mushroom or truffle, but with layers of rich, almost tropical, fruit behind – think peach, mango, peach tea and the bite of pomegranate, with caramel sweetness, but still a saline twist to the finish. A wine of weight and depth. Dosage 12g/l, tasted from magnum.  1989 Cristal Rosé: This was a very warm vintage, harvested from 5th September, and the wine technically doesn’t have high acidity – yet is a wine of impressive freshness. Grilled hazelnuts edge a nose of candied orange peel and pomegranate, and a coffee note that emerges with air. There’s a liveliness to the palate here, even over three decades on, with a gorgeous freshness and creaminess to the mousse. The fruit on the palate is lush, with generous mouth-watering peach and a taut, mineral backbone. It’s amazing how young this tastes still. Dosage 12g/l, tasted from magnum.  1976 Cristal Rosé: Despite coming from another warm vintage (with a very hot, dry August – and harvested from 1st September), Jean-Baptiste Lécaillon notes the freshness on the 1976 vintage, and how it seems to have never become too evolved. It’s much more savoury than the 1976, with rye bread and brown miso sitting alongside caramelised pears, tarte tatin and a hint of Oloroso Sherry. The palate is a rush of fine bubbles, fresh and with a citrus bite but a savoury framework behind. A remarkable wine. Dosage 10g/l, tasted from magnum.  2002 Cristal Rosé Vinothèque: This was disgorged in 2019, spending 11 years on lees sur latte, and then another five sur pointe, followed by an additional four years’ post-disgorgement ageing prior to release. This wine is so tightly coiled, a wine not yet revealing everything it has to offer – although you can see the incredible structure. It’s so vibrant, with energy and a lushness as it drives toward a seemingly never-ending finish. It’s gorgeous, layered with mandarin, grapefruit pith, chalky minerality and smoked salt, lingering on the soft, saline tail of the mouthwatering finish.
