From humble beginnings in Beaujolais in the 1980s, the natural wine movement has become a global force. But what influence has it had just north in Burgundy’s long-established, terroir-focused appellations? Simon J Woolf explores the blurred line between classical and natural winegrowing

The Clos des Goisses vineyard – originally known as Les Goisses – has been planted with vines since the 16th century and was well-known in the region long before it was ever made into a single vineyard wine. The name is taken from the local dialect “Gois” which means very steep. The vineyard is the steepest, directly south-facing in the whole of Champagne (between 30- 45% gradient), and the hottest site in the region. The plot was indirectly purchased by Charles Philipponnat's
grand-uncle Pierre Philipponnat who purchased it from his cousins, the Bouché family, after they were made bankrupt in 1935.  Pierre was well aware of the quality of the vineyard as it had already enjoyed some fame as “Les Goisses” around 1900, but had since been almost abandoned during the Phylloxera crisis, WWI and through the Great Depression period. Once purchased, Pierre Philipponnat immediately set to bottling “Les Goisses” in 1935. Its reputation really took off around the mid-'50s and it was around this time that its name was altered to Clos des Goisses. In the vineyard This 5.5-hectare narrow site is perfectly positioned to push the natural ripeness of the grapes to a level unmatched anywhere else in Champagne. In a region where there is an over-reliance on chapitalisation (the adding of sugar prior to fermentation to boost body and alcohol) as well as high dosage (the addition of sugar post-disgorgement to increase the perception of sweetness), there is little necessity of either in a vineyard site where good ripeness levels are reached every year. The vineyard also benefits from a pure Belemnite chalk soil that accumulates heat, further promoting optimum ripeness levels.  Clos de Goisses is very much dominated by Pinot Noir – a sun-loving varietal that brings weight, density, richness and red and black fruit flavours to the palate. Clos des Goisses is typically a blend of 65% Pinot Noir and 5% Chardonnay grown on the site, although this does vary from one release to the next. The 2006 vintage saw the first release of Les Cintres. This represented Philipponnat’s top single plot of Pinot Noir situated within the Clos des Goisses vineyard. These are some of the finest and oldest parcels (70+ years old) in the vineyard. For Charles Philipponnat, the intention was to show off the best parcels of Pinot Noir in a Burgundian fashion: one varietal, one place, one vintage.  Despite its prestige, Clos des Goisses is not a Grand Cru vineyard and for Charles Philipponnat, the Grand Cru/Premier Cru designation in Champagne is more an outcome of history rather than quality. He believes the classification system is not very precise because it concerns whole villages. He goes on to say: “It actually relates to the grape buyers' preferences before WWI. Whilst it roughly corresponds to the better areas, with chalky subsoils, it is not always very accurate. Mareuil sur Ay is rated 99% not 100% because the large buyers would rather have the grapes brought to their press houses in Ay than go fetch them in Mareuil, back before WWI." Mareuil vineyard owners have filed a request for Mareuil to be recognised a Grand Cru,
but no one wants to shake the lees too much in Champagne. An old local saying goes: “Ay le nom, Mareuil le bon”, meaning “Ay has the name, Mareuil the goodness”. Pierre Philipponnat used to have it printed on his labels and stationery. In the winery Champagne is a highly processed wine and whilst the terroir remains important, precision in the winemaking is essential. For Charles Philipponnat, it’s a sum of details, always keeping in mind quality, age-ability, and truthfulness to the House’s style.  Healthy and ripe fruit, careful pressing, using only the purer first press juices, and proper ageing on the lees are the most important steps. And at all times, avoiding green bitterness, as well as (at least at Philipponnat) the loss of fruit through oxidation. Outside of the vintage expressions of the single vineyard sites, Philipponnat is a strong advocate for the Solera ageing process and use of high proportions of reserve wines. Around one-third of reserve wines is typical in their NV wines adding complexity to the wine. Charles Philipponnat goes on to say that the solera system allows for older elements to develop complexity while keeping the blend fresh and protected from early oxidation. Clos des Goisse “L.V” 1995 The L.V. release of Clos des Goisses is the rarest bottling to come from the vineyard in which only a few hundred bottles are ever released. These are Champagnes that are aged for 25 years unmoved in the Philipponnat cellar and disgorged just six months prior to release. The
wines are only sold directly through “ambassadors” of Philipponnat of which Fine+Rare is proud to be one, with a few magnums reserved for auction sales. The L.V. is an intrinsically exceptional Champagne, a perfect reflection of the unique characteristics of an unparalleled, pure chalk hillside, and Philipponnat’s expertise in crafting wines.  Mineral and intense, it stands out for its great freshness and remarkable fullness. According to Charles Philipponnat, the Clos des Goisses L.V. collection "adds the complexity of Champagne aged in the best conditions to the wine’s characteristic freshness. The wines are protected from any oxidation by prolonged contact with the lees before their disgorgement. Oak barrels have been used in winemaking for thousands of years. While initially their purpose was simply as a holding vessel, today it is much more than this. As we have learnt about wine production at a molecular level, we have discovered the unique interaction between oak and wine – adding flavour, textural complexity and increased ageing potential. These intrinsic qualities have seen oak at the forefront of fine wine’s greatest success stories – but also some of its greatest failures. The use of oak to improve a wine requires great skill and finding that balance has shaped the modern history of fine wine.  What is rather beautiful about winemaking, particularly in fine wine circles, is that despite the input from developments in science and technology, production remains an artisan craft, relying both on tradition and technology. The barrel-maker is a perfect example of this partnership and no one understands this better than François Frères. This lauded Burgundy cooper’s ties to the world’s greatest wines make it one of a very small number that have lived through the development and fashions within fine wine.  Today, business has never been better for François Frères; they produce 30,000 barrels a year and export to every major wine region in the world. The secret to the François Frères barrels historically, Gigandet believes, is their consistency, while the all-important signature toasting is paramount. To keep up with the ever-growing world of fine wine, François Frères produces tailor-made barrels that fit the varying climates and varying styles of each winemaker, meeting the standards set by today’s precision-led winemaking. Despite the growth of the business in recent years, François Frères still remains intrinsically linked to its homeland in Burgundy and the specific microclimate of Saint-Romain that is so important for the seasoning of their oak – another key factor behind the company’s success. “The microclimate of Saint-Romain, in a windy and pollution-free environment is ideal for the seasoning and drying of the oak. This oxidation of phenolic compounds under the influence of fungi, releases enzymes that hydrolyse the phenolic compounds, reducing the wood’s astringency, producing oak of the finest quality for wine production,” Gigandet tells me. The art of the cooper is much more than just sawing and toasting – it’s about sourcing, traceability, control of drying time and heating, hygiene, temperature control, sorting and more. With increased knowledge, the quality of the barrels, like that of the wines, has greatly improved. Even just a few years ago, Gigandet admits that in colder Burgundy vintages, sometimes their barrels jarred with the wine – they “brought too much tension and could sometimes seem too austere”. But now they have a better understanding of the qualities their barrels can bring to Burgundy: “François Frères barrels remain attractive to winemakers because they are great at retaining freshness and minerality.” Perhaps most importantly, François Frères wants its barrels to amplify a wine’s intrinsic qualities. “It wants to accentuate the beautiful tannic structure of a wine, contribute to its flavour but without excess of sweetness from the toasting, as well as amplifying the wine's tension and minerality, helping retain its freshness and its fruit,” Gigandet says. As technology has developed, so has François Frères. It is what Gigandet aptly calls “the evolution of taste” – “the cask has evolved considerably over the last few decades along with the quality of the wines. Today, the barrel is much more specific, manufacturing almost tailor-made barrels for each customer’s needs.” The business was founded by Joseph François in the early 1900s, never imagining that being a cooper would become a full-time job. Back then, Gigandet reminds us, “It took several trades to live.” But the next generation, Robert and Henri François, saw the demand for oak casks rise, at that time mainly used to transport wines. They took the operation full-time, creating the François Frères brand in 1942. In those days, as Gigandet points out, “The tradition of maturing wines in barrels was reserved only for the very top red and white wines of Burgundy and the great Bordeaux châeaux.” Even within these regions, barrels were a luxury, re-used year after year given their expense, therefore keeping the demand for new barrels low. By the 1960s the brothers were met by the development of stainless steel and plastic containers. The barrel quickly lost it supremacy as the preferred vessel for transportation and demand plummeted. It was only the top producers that helped keep the cooperage going. By the 1970s François Frères was producing barrels for one of the world’s most famous estates, Domaine de la Romanée-Conti – a partnership that would be instrumental in the continuation of the business through a difficult period. The next generation – Robert's son, Jean – was confronted by the economic downturn of the early 1970s and turned to export to save the family business. Fortuitously at this time, oenologists in the United States started to highlight how ageing wines in new oak barrels brought complementary flavours and complexity to the wines. In the 1980s, the French market caught onto the idea and both export and domestic markets grew. The oak barrel was entering an era where it would become the star of the show – and a must for all top producers. François Frères’s reputation for working with the best saw it perfectly placed to capitalise on this new-found love for the barrel. But according to Gigandet, it wasn’t just the fashion of using new oak in the 1980s and ’90s that saw such a huge increase in demand. This trend emerged just as wine exports exploded. What he calls “the democratisation of wine” saw the world of wine suddenly open up to the middle classes – and this increase in sales saw an ever-increasing need to maintain quality and improve consistency. Such demand prompted and funded a better scientific and technological understanding of wine production. More importantly for François Frères, it fuelled the need for a better understanding of what barrel-ageing does to wine – and why. It was already clear that contact with new oak changed wine profoundly. Most obviously the aromas and flavours of the wine develop, becoming more complex. These aromas and flavours are formed during the toasting of the barrels. “It is this toasting of the barrel that remains the signature of the cooper,” explains Gigandet. But the oak didn’t just impact the flavour, they came to understand that, being porous, oak allowed the wine to undergo “controlled oxygenation”. The exchange of air through the oak staves, in particular for red wines, helps stabilise the colour and polymerise the tannins. This polymerisation not only softens the wine, but brings a textural complexity, a millefeuille layering of mouth-feel brought about by the linking of long tannin chains, encouraged by the micro-oxygenation process that the wine goes through when aged in oak barrel. “François Frères barrels are ageing tools, which contribute to the textural improvement of wines, when used wisely,” Gigandet explains. As the wine world’s love of oak grew, François Frères’ main export customers went from little-known names to pioneers in their respective regions – with Robert Mondavi in the US, Angelo Gaja in Italy, Nicolas Catena in Argentina and Australia’s Rosemount winery. Each of these producers further cemented the cooper’s reputation, representing the very pinnacle of oak barrel production. Of course, like all fashions, the oak craze of the ’90s saw some extreme uses – 200% new oak ageing or an over-reliance on oak to provide flavour to wines that lacked the natural concentration to carry it. This saw many producers and consumers react strongly against its presence in wine at all. Even Gigandet admits that there are wines with “excess woodiness” to their detriment. Today, the barrel also has to compete with new trends in wine maturation – concrete eggs and clay amphorae, for instance. But while these new vessels have captured the imagination of the world’s top winemakers, it is not necessarily at the expense of the barrel. “The barrel has an important oenological role in the development of wines from certain grape varieties,” states Gigandet – notably Cabernet Sauvignon, Merlot, Syrah and Pinot Noir. But he also outlines how different ageing vessels combined can also benefit a wine’s potential for complexity. This is certainly the case amongst some leading producers in Bordeaux and Burgundy that are using both oak barrels and alternative ageing vessels. Coopers like François Frères have weathered the changing relationship wine has had with the barrel; with shifting views of critics and drinkers over the last century. Fortunately for fine wine lovers, there’s little sign of oak fading into the background. Oak remains a vital ingredient in many of the world’s greatest wines, adding to its flavour, textural complexity and – of course – ageing potential. Today oak has never been so deftly handled, bringing so much to a wine, while retaining the grapes’ natural expression. The art of the cooper lives on. Read more Editorial

Since the ban on chemical prevention came into practice across Europe in the early 2000s, vine disease has grown to epidemic proportions, including in some of the world's most prized vineyards. Marco Simonit's methodology of using non-invasive, gentle pruning techniques and shunning any chemical additives has brought him many endorsements from wineries around the world. He has advised at over 100 wineries and currently has a team of 25 international consultants working for him, including at top estates such as Domaine Leroy, Ch. d’Yquem and Champagne House Louis Roederer.  In an interview conducted just weeks before the Coronavirus lockdown began, Simonit outlines the philosophy behind the L’Età Più Bella (With Age Comes Beauty) range of wines. L’Età Più Bella (With Age Comes Beauty) is a collection of wines produced entirely from old vines from Marco Simonit’s home region of Friuli – arguably Italy’s top region for white wine. Simonit states “the idea of the project is to identify the distinct character one gets from wines made exclusively from old vines. It also provides a true terroir blueprint of that vine. More than that and what is the key impetus behind the project was to produce something that would come to be a physical embodiment of the Simonit&Sirch philosophy.”  This project has been a dream for Simonit for the past 20 years. “By having a bottle of wine on the table I hope it will create conversation about the world we live in, the environmental issues that surround food and wine production and the efforts made to make such production sustainable,” he says. The importance of protecting old vines is multifaceted. Simonit states, “First and foremost it promotes sustainable viticulture without an over-reliance on water and chemicals. Old vines with deeper roots are effectively dry-grown – with the deep roots feeding from water locked into the soils. Young vines (depending on the climate) rely on irrigation in their early years and continual replanting of young vines leads to a huge increase in water requirements.” “Fundamentally the project is to provide sustainable viticulture under the threats of global warming,” he says. Being organic/biodynamic, according to Simonit, is not enough in light of current threats to the environment. "Vines have to be stronger and self-sufficient if they are to survive the increasing climatic pressures. The current volume of fertilisers and water is not sustainable in the long-term future," he adds. Old vines are also more sustainable in terms of water requirements and self-sufficient when it comes to nutrients not needing to rely on chemical fertilisers to keep the plants operational. Simonit explains: “A healthy vine (free of pathogens) has much more live wood on the vine which means much healthier capillaries and is therefore much more resistant to the stress and strains of the growing season – whether that be pathogenic fungal disease, hydric stress or other diseases typically found in a vineyard.” Educating the vigneron and the wine lover For Simonit, this project is a plea for wine lovers to understand the fragility of future production in many fine wine regions of the world. “In the world, there are old vineyards at risk of being uprooted, or not valued," he says. "In this case, it is their uniqueness that makes the difference and I want the L’Età Più Bella range of wines to become a means of talking about the importance of vines reaching advanced age (an approach completely at odds with many producers in Italy currently). "I want to make people understand through a product how important these ancient vineyards are, and how through tasting the wines one can go deep into the territory, the vineyard, and the single plant and its conditions of health.”  Vine-by-vine assessment “There is no mass approach when dealing with vines like these,"Simonit explains. "All plants are different, just like men and animals. The extraordinary work is to understand plant-by-plant how many bunches, how many leaves to leave, whether to trim and in what way.  "Soils are analysed, which is fundamental for maintaining the radical system. It takes a lot of energy, willpower and time because the individual plants are treated within the vineyard, and then you have to be severe. The grapes entice you, but you have to respect the plants as individuals.” Vine pruners as a skilled workforce More than that, Simonit wants the project to be an opportunity to bring focus on the regions where the wines originate, as well as the growers who produce the grapes. “It is important for me to have consistent relations with growers who share the old-vine philosophy and values and have detailed knowledge and approaches to their vines.  "But the project also brings the philosophy to the growers. By producing the wine, the growers themselves become further involved, recognising the benefits of the preservation of the old vines and how these wines would further promote their region.” An additional benefit that has stemmed from the old-vine project and the adoption of Marco Simonit’s gentle pruning techniques is that it has reawakened the craft skills of traditional vine pruning that have been lost due to the introduction of chemical and machine farming during the latter half of the 20th century.  Marco Simonit’s pruning school and one-to-one consultancy with vignerons and their workers all over the world have introduced new skills to individuals that have been underappreciated as part of a low-paid, unskilled workforce, often working in poor conditions and with minimal social support as is the case with many seasonal workers. “Training up pruners has become part of a social responsibility," explains Simonit, “not only improving the health of the vines but also creating a skilled workforce that through vine protection and a reduction in chemical use has been a financial benefit to both wineries and their workforce”. Marco states “the social impact of training vineyard workers has been recognised by government initiatives in Europe who have worked with us to help increase the skillset and employability of immigrants in parts of Italy with the end result having a beneficial effect on their individual lives and the communities involved.” “Where better than to start” he states, "than in my home region of Friuli in Northern Italy". A region whose reputation continues to grow and is now widely recognised as the country’s finest for top white wine which competes with some of the finest in the world. They make pretty good red wines there too. Born and raised in Friuli, Simonit couldn’t think of a better place where he could bring the philosophy to life: “Friuli needs a project that speaks about Friuli.” 30 years is an old vine (for Sauvignon Blanc) A common issue in vineyards around the world today is vines dying at just 20 years of age, requiring them to be pulled out and replanted. The vine is not even operational in terms of production for at least three years of growth. The longer the life of the vine can be extended, means a huge reduction in both economic as well as environmental pressures. At 15-20 years old, the vine will have good adaptation to its soil, consistency in its production and will be much more self-sufficient. "The Sauvignon comes from a 30-year-old vineyard, but 30 years may seem young in an 'old vines' context but 30 years for Sauvignon is a lot. For example, Sancerre vines have a maximum lifespan of 25 years. And it is very rare to find it older than this, it is one of the most sensitive varieties to diseases.  Speaking of the pandemic, since we are on the subject, there were the pandemics of Sauvignon and Cabernet Sauvignon: they are the most sensitive varieties to diseases, there were international experts who have tried to investigate this theme. In France for example the producers that lost their plants to disease, planted younger plants, and they made wine from old and young plants together, but the wine was no longer the same. Because the difference is made by the wine that is obtained only from the original plants, without the 'interference' of the new plants. "Sauvignon gets sick from pruning wounds, fungi enter that destroy the plants and kills them. It is very difficult to find single original Sauvignon plants. That is why the Simonit&Sirch method performs pruning cuts that do not ruin the path of the lifeblood of the plant. "Ultimately we want to tell these things through wines. With a point of view that no one has ever taken into consideration, because we invest in people and because we respect the plants over time. "It is no longer enough to say that you are 'bio' to guarantee a good job, you need to do a lot more to be sustainable. And our job is to tell everybody this.” True terroir relies on old vines An additional and worthy benefit at the premium end of production lies in an old vine's ability to produce grapes with a true blueprint of its terroir. Simonit agrees with Lalou Bize-Leroy’s philosophy that a true terroir of a particular site requires a vine that is at least 15 years old, since a well-established vine produces a wine that is more about the soil than the individual characteristics of the sun. Old vines with deeper roots are also much less affected by vintage variation. These are wines made from their roots rather than wines made from the sun. For Simonit, the importance of the project lies in “the increase of education, sensibilities and sustainability. The importance of my pruning technique is understanding that, left alone, vines will survive very well. The problem lies in when the vine is domesticated and such domestication, if done badly, can weaken the vine, increase the pathological stress to the plant, leading to an early death.”  Browse more Editorial 

Marco Simonit has been at the forefront of modern viticulture techniques aimed at protecting old vines from disease and decay for the past decade. Gavin Smith speaks to him about his pioneering philosophy

Marco Simonit on why old vines matter

Quiet, even subdued, cautious, the Neal Martin on my screen is quite different to the garrulous character I’d imagined from his writing. On the page (or more often these days, the screen), Martin pokes fun at the wine industry, his articles often opening with satirical fiction that doesn’t hold back.  His reports and tasting notes are littered with music references (think Primal Scream and The Smiths rather than Wagner and Bach), and mentions that are sometimes pointedly popular – his first Bordeaux en primeur report for the Wine Advocate (taking over from Robert Parker) opened with a line from Harry Potter and the Deathly Hallows. On our call, however, each word feels deliberate and considered, confident, but with a definite wariness that doesn’t quite fade.  Aged 50, the Vinous writer’s trajectory to wine stardom is unusual. Born in Essex, Martin grew up in a household that didn’t drink wine, so nor did he. In fact, he had no interest in it and blagged his way into the industry. In 1996, having lived in Japan, he applied for a role sourcing wines for a subsidiary of Japan Airlines: the only hitch that he didn’t know anything about wine at the time.  “I lied my way through the interview. I went to an off-licence the night before. Memorised some of the labels. I just reeled off a couple of names… [they] thought I was into wine and gave me the job,” he tells me, still rather bemused by their decision. Coincidentally Martin returned to the same shop last year, where unbeknown to him, his tale lives on as local offy legend – the famous wine taster that got his start right there in Leigh-on-Sea (with the owners even deeming him worthy of several selfies).  Unashamedly a terrible employee, he spent much of his time in his role for Japan Airlines starting his wine writing career (although it also sounds like there was a fair amount of lunching too). “I was kind of bored one lunchtime, bought a book on computer coding. I found I could make a webpage, and just kind of built the original wine-journal.com when I should have been working,” he says. From the novelty of creating a site, he started writing his own tasting notes. At that time the great wine writers were Michael Broadbent, Steven Spurrier and Hugh Johnson – English gentlemen, in short; charming, wonderful, but – for many – unrelatable, very “high culture”, as Martin puts it. He set out to be “more down-to-earth, funny, irreverent”.   “At the time, there was nobody else really doing that. There was this huge audience that liked to drink Bordeaux – but also liked Radiohead.” It struck a chord – and soon his self-built site was getting over 500,000 hits per month. No wonder therefore that in 2006 Robert Parker – then still at the height of his fame – approached the music-minded Englishman to join the Wine Advocate team.   Of course, Parker was renowned for not just the power of his palate and revolutionary points system, but for his personal tastes. Many argue that his preference for intensely ripe, high-octane, new-oak-aged styles shifted the entire world of wine – pushing producers to craft wines that would earn his favour. “Especially more to the end of his career, he had a certain palate… but people always forget that he reviewed German wines and Alsace and so on. So it becomes a little bit of a cliché,” Martin says of his once mentor.  The world of flavour is undeniably subjective, yet Parker was – by some – damned for just that, daring to express his personal preference. Total impartiality when it comes to the matter of taste seems impossible. After I ask whether or not he feels there’s room for bias in wine writing, Martin is clear: “I think a critic should stand up for what they believe in. Anyone can say the First Growths are great, DRC is great. I’d rather read someone who has a definite view on something, whether they like natural wines, or orange wines. Stand up for what you believe in. Then it’s up to the reader to decide.”  In fact, he goes as far to say, it’s potentially the lack of difference in views that has led to wine criticism becoming “a bit beige” in recent years – because now it’s a career, something upon which people depend for their livelihood. “It’s more of a risk if you say this famous name didn’t produce a great wine,” Martin notes. The danger of losing access to wines that are far beyond most critics’ budgets is a threat to the independence of wine writing, but also a massive obstacle to new voices in the industry. It’s an especial challenge given many of the wines Martin reviews – in particular older vintages – might only be pulled out at private dinners, hosted in producers’ homes. The very nature of wine – limited in production and fleeting in its consumption – leads to a reliance on the hospitality of its makers. Martin argues that for that exact reason the most independent “critics” are arguably those he describes as the “grands amateurs” – those who can afford to buy the world’s finest wines, and therefore say what they want.   Martin, however, feels there’s a line to be found where he can maintain distance yet be friendly – and, importantly, speak freely. He highlights Laurent Ponsot’s 2015s – which he gave relatively scathing scores – but, having known Laurent for many years, Martin was happy to tell the vigneron outright that he thought they were picked too late.  As for Martin, he had a lucky start with access to unbelievable wines in what he deems a “golden era” for fine wine in the 1990s, when top Burgundy and First Growths remained affordable for the many – and were poured freely by the trade. “I’ve never taken that for granted. Some of the wines I drink… they’re what my friends earn in three or four months. I never drink a wine and I’m blasé about it. But I’ve been around long enough to say what I think.”   Preserving his voice has always been of key importance to Martin – not willing to compromise on keeping his distinctively tongue-in-cheek tone, but also offer something more than just a tasting note. “When I joined Parker, it was an easy decision – he was a kind of god. But at the same time I wanted to make sure I could still write in the way I wrote,” he tells me. “Anyone can taste the wines and add a number, but for me it’s more interesting to create something that’s interesting, gives you insight… that’s the challenge: to write something people don’t expect,” Martin says. Does he feel he’s achieving that? His answer: “When my primeur report comes out, read the first three paragraphs and let me know.” [We spoke at the end of April, just before the report was published.]  For Martin, his love of music is integral to his work. Indeed, it seems that way – the record player and stacks of vinyl visible behind him on our Zoom call, his Instagram feed almost equally split between sleeve covers and labels – and he feels that it makes him a better writer. He looks back to Hugh Johnson (an avid gardener) or Michael Broadbent (pianist and art enthusiast) for precedent. “Wine can be a boring subject – but it’s when you put it with other things that it becomes more interesting,” he says.  Case in point is his recent article on Grand Mayne, he tells me: “It’s more about time, and parenthood, and… kind of sad in a way. To me, that’s the kind of counterbalance to the dryness about wine. It smells of strawberries and it’s 92 points. There’s the other side to the story – that’s the harder part to write, but for me it’s more satisfying.”  Indeed, he even self-published his book Pomerol (in 2012) to avoid the unwelcome interference of editors. In 2017, Martin made the leap to Vinous – joining fellow Wine Advocate alumnus Antonio Galloni’s new venture, and while he’s kept his voice, he’s also had to learn how to be edited “which was… quite a challenge for me at first,” he admits. “But actually now it’s something I really needed. I think they make better articles, it makes me think a bit more about writing.”  There have been a lot of bottles over the years (Vinous alone holds over 21,000 of his tasting notes), but it was a bottle of 1982 Montrose that started everything. “It wasn’t the best wine I’ve ever had by a long way… It’s a disappointing 1982,” he says. “Enjoy with modest expectations” reads his note from 2017 (88 points – upgraded to 91 points at his most recent tasting in 2018). Disappointing it may be, but it’s the bottle that made him sit up and take wine seriously, realising why people obsessed over it – although he’s clear that, for him, wine isn’t everything.  “Wine is my job – if it didn’t pay I couldn’t do it. I love wine, but I don’t think I’m obsessed with it. I don’t drink wine every day, and it doesn’t bother me if I don’t. If you think wine is everything, you’re missing something,” he says, frankly. I wonder how much this perspective has been shaped by Martin’s quadruple bypass surgery two years ago – a skirmish with the other side that has forced a visibly drastic lifestyle change, and about which he has been vocal.  In Martin’s own words, it’s a “bizarre set of circumstances” that set him on his wine-lined path, yet here he is, his pen and palate working in combination to make him one of the world’s most influential wine writers. While the golden era that allowed him to enter the industry might be over, he feels that – despite now being “very, very expensive” – in some ways wine is more accessible than ever.  “I meet so many more people from so many walks of life. I love it when you sit around the table and everyone’s from different countries. But as soon as you put a wine in front of them – everyone’s on the same level.” While one can’t argue that Martin champions the “everyman” reviewing the world’s finest wines, it’s remarkable in many ways that he hasn’t erred from his original purpose. Though the Essex-born critic doesn’t seem comfortable under the spotlight, on the page he’s at ease – free to fight against the pomposity of wine, with an irreverence and knowing self-ridicule that has put him front and centre in the industry – whether he likes it or not.  Read more Editorial

There are few people that get to taste Bordeaux as often or as thoroughly as the Wine Advocate Editor-in-Chief Lisa Perrotti-Brown MW. Based in Napa, her knowledge of how the Bordeaux varieties are managed – both in Bordeaux’s moderate climate and the hotter region of Napa – has become a huge asset in understanding and assessing Bordeaux in a warming climate. With such exposure to vintages past and present, being mentored by the world’s most influential critic Robert Parker, there’s no one better to consider what defines Bordeaux today.  Perrotti-Brown has a clear idea of how and why Bordeaux has changed so much in the last 20 years, while at the same time emphasising that there’s no “hard stop” to an era. An individual château’s period of change can be different to its neighbours. “It seems like every château has had its challenging period,” she says, “whether it be a dogmatic winemaker, recurring faults in the winery or even financial difficulties.” Each era of Bordeaux is not simply defined by set vintages, however – with the benefit of hindsight – she believes you can see clear, defining moments over the last two decades where the style of Bordeaux has changed. Like much of the wine world in the 1980s and ’90s, Bordeaux châteaux were still understanding the effects of faults in their wines – whether it be volatile acidity, dissolved oxygen or Brettanomyces. With increased emphasis on ripeness and new oak, these issues only increased. “Brett and other faults love new oak and higher alcohol, it was almost a perfect storm,” she explains. But as this became more of an issue in the region, it led to more research, bringing about a much better technical understanding of why these things were happening. It was this scientific awakening that Perrotti-Brown believes was the catalyst for the modern era. “Momentum for change has sped up in the last 20 years and there have been lots of triggers,” she says. “There is a better understanding of what ripeness is, precision viticulture and winemaking, the development of technology and of course there is climate change.” But outside this and perhaps the most important “trigger” behind this change, she believes, is money. “To run a château has become very expensive: 30 or 40 years ago many of these châteaux were simply operating as agriculturalists, now it is a multi-million-dollar business.” Big money has no doubt brought about big investment and Perrotti-Brown believes in many ways it has “levelled the playing field”. A lack of investment in the winery and vineyard is now a rare excuse for poor performance. “It has raised the standard throughout the region. Investment and greater precision has created a lot of diversity – more than we have ever seen before.” In terms of taste, the most positive developments in Bordeaux for Perrotti-Brown come from the vigneron’s better understanding of ripeness, both in terms of tannin ripeness and fruit concentration. “Hindsight is a beautiful thing,” she quips, “but we have seen dark periods on both sides of the spectrum in Bordeaux.” There were real issues with lack of ripeness through much of the 1970s and ’80s. High production levels saw diluted grapes harvested and simply chaptalized (sugar added) to bring up the alcohol, then at fermentation, the must was overworked to extract enough colour and tannins. Since top Bordeaux was known for its long ageing potential, this was necessary to create the structure to age – “Otherwise you were going to end up with a diluted, watery mess,” explains Perrotti-Brown. This extended maceration saw the extraction of very hard tannins – “the wrong sort of tannins that come at a later stage of extraction”. “It is better extraction techniques, only extracting quality tannins, that is a major reason behind the most recent improvements,” Perrotti-Brown explains. She points to the legendary 1982 vintage. “A lot of people at the time were saying the tannins of the ’82s were too soft, too juicy, too fruity and it just wasn’t true.” The vintage was warm, particularly for that era. “At harvest the vignerons were picking grapes with a natural ripeness to the tannins, which meant during extraction the tannins and colour came easily.” They didn’t have to overwork the grapes to extract the tannins, producing wines that were great in their youth and have since aged incredibly well. It was the quality, not quantity, of tannins that stood the 1982s in such good stead, a lesson that wasn’t necessarily learnt instantly. Overworking the musts and a lack of concentration continued to be commonplace throughout much of the ’80s and ’90s. Many wines were hugely extracted and required plenty of patience. “You compare that with now,” she says. “I was discussing the 2020 vintage with Ch. Margaux’s Philippe Bascaules – and he barely needed to touch the grapes during extraction.” At better ripeness levels (as seen in 2020), the colour and tannins extract themselves. In the mid-90s to early 2000s, however, there was “a chase for ripeness”, in Perrotti-Brown’s words. “It was the beginning of the garagiste era – with reductions in yield, later picking and an emphasis on power. You had super low yields, producing behemoth, impenetrable wines in their youth, 200% new oak etc – people were really pushing the boundaries.” It is a style that is seen by many as actively encouraged by Perrotti-Brown’s mentor Robert Parker, who at this point was arguably the most influential man in Bordeaux. The incredibly hot 2003 vintage marked a watershed moment for Bordeaux. “Bordeaux winemakers had never seen anything like it. Grapes were turning to raisins on the vine,” Perrotti-Brown says. Despite the year’s conditions which exposed the push toward ripeness, the emphasis on power continued up until the 2010 vintage. Despite the focus on ripeness and extraction, there were some exceptional vintages – but Perrotti-Brown questions how well these wines have since aged. This is, in her view, a key shift in the region. She compares tasting the 2005s en primeur, with tasting the vintages of today. While 2005 was clearly a fantastic vintage, tasting these wines so young was really difficult, with aggressive tannins. Many winemakers were, Perrotti-Brown says, “making wines by formula”. A high-quality vintage gave vignerons a free ride to push the extraction even more. The criticism often made of 2005 is that it has taken such a long time to come around. Similar issues are raised with the same vintage in Burgundy. The year was at the height of the trend for maximum ripeness and extraction, for both Bordeaux and Burgundy, and the resulting wines shut down for a long period. Perrotti-Brown accepts that people have different expectations on when to drink Bordeaux, but she loves to drink wine in its mid-life, when there is both primary fruit and tertiary development. The problem with the 2005s, she says, is that that window never really opened: the wines remained closed, only beginning to open up now, when there is little primary fruit left. “Many of the ’05s are, wow, exceptional now, but you miss that sweet fruit and it’s what I like about the modern vintages,” she says. Looking back, “Winemakers could have dealt with 2005 much more wisely.” The 2009 vintage provides an interesting contrast. Like the ’82s, the natural ripeness of the tannins meant the wines didn’t shut down in the same way the 2005s did. Of course, higher levels of alcohol also helped increase the potential tannin extraction. Alcohol is a solvent. Increased ripeness, which in turn leads to higher alcohol levels, can therefore lead to too much phenolic extraction. While this was a risk for many wines in the early 2000s, fortunately today’s winemakers know much more about how to handle riper fruit. The 2010 vintage might have been the last year of big, bold, extracted wines, it was nature rather than the Bordelais that dictated the change, Perrotti-Brown notes. The ’11, ’12, ’13 and ’14 vintages meant winemakers had to deal with cooler, more difficult vintages. It was not possible to produce bold wines in these vintages and retain balance. This was almost a period of introspection for Bordeaux and, for Perrotti-Brown, it led to a distinctive development where “the ethos of precision” took charge from the 2015 vintage. While there are of course exceptions, from 2015 Perrotti-Brown feels you started to see more plot-by-plot management of the vineyard, with picking times becoming much more accurate – picking plots and fermenting them separately, “rather than throwing everything together”. Extraction also became much more precise, focusing on only the quality tannins – a marked change from the previous era. This new ethos brought, in Perrotti-Brown’s view, a lot of “soul-searching” in the vineyard, with people like Alfred Tesseron spearheading a movement toward more sustainable practices. But overall, Perrotti-Brown notes, “There is so much creativity too and many people are doing different things. It has created a lot of diversity.” Amongst the creative changes happening in the winery and vineyard, developments in the wine’s élevage always seems to be a big talking point in Bordeaux. Oak is an integral part of the Bordeaux “recipe”, but – after an over-reliance in the 2000s – its use was becoming increasingly scrutinised. “Oak doesn’t ever go,” she says. “It settles down, integrates and evolves with the fruit, but it can push itself forward.” “Oak is absolutely necessary for giving shape and spice to the fruit, as well as tannic interest to the wine,” says Perrotti-Brown: for her, it’s about oak being used “smartly”. “Most people have pulled back on the new oak from the 2015 vintage onwards, but, like the tannins, it is not about more or less oak, but about using it more wisely. There is a much better understanding of oak today and much better quality of oak being used. What it lends to the tannin structure is a nice back up to the skin tannins and a spiciness in the background.” The new era – from 2015 onwards – is certainly contributing to Bordeaux being “on a good run”, in Perrotti-Brown’s words. But while there is great consistency today, she’s under no impression there won’t be problems ahead. “Warm, dry vintages have become the norm, but how warm and how dry before this becomes an issue? Bordeaux was lucky in 2020 that they got a bit of rain in August,” she says. While a lot has changed over the last 20 years in Bordeaux, there are no guarantees for the future. No matter the technology, Bordeaux’s fate lies in the hands of the shifting climate – and terroir, or more specifically the clay or limestone soils equipped to deal with hot, dry conditions, has never been so important. For now at least, though, Bordeaux is basking in its era of precision, with 2020 the third great vintage in a row. Let’s hope Mother Nature holds the region in her favour a little longer. In a report published in 2014 by the UN’s Food and Agriculture Organisation, under current rates of degradation, all the world’s topsoil could disappear within 60 years. With 95% of all food produced relying on these living soils, this pronouncement was a stark and terrifying warning of what lies ahead. Industrial farming and deforestation are the leading causes behind the degradation of soil. Grape growing and large parts of the wine industry remain very much part of that problem. France’s vineyards, as an example, are the country’s biggest consumers of chemical fungicides, insecticides and herbicides. These products can devastate the life in the soil and completely disrupt the biodiversity of a region. Although viticulture represents just 3% of France’s agricultural land, the sector spreads 20% of the country’s fungicides. Many vignerons have tried to reduce chemical inputs, either using them as a last resort or not at all. Some believe non-chemical additions of copper and sulphur typically used to treat fungal diseases (the biggest threat to yields) are more damaging to the environment than systemic chemical interventions. It is a complex picture. But there are vignerons committed to non-chemical approaches – growers who believe they can offer alternative methods that are both sustainable for the future and remain commercially viable. While there are various approaches, they all share the belief that protecting the health of the soil is fundamental to their vineyard’s long-term future, as well producing a farming system that is not only sustainable but regenerative, in that it sequesters more carbon dioxide in the soil than it takes out. Exactly how this is practised remains a contentious debate. Many of these growers are certified organic, many are not – certification itself is another controversial issue. Biodynamic farming is organic farming with a more holistic approach, trying to recreate a natural balancing ecosystem that allows nature to restore and rejuvenate itself, in rhythm with the lunar cycle. Others have gone even further and have allowed their vineyards to grow wild, believing that an undisturbed vineyard is the most sustainable and ecologically healthy. Organic and biodynamic farming practices are essentially a return to conventional farming methods carried out prior to the introduction of chemical farming 70 years ago. The more non-interventionist approach goes one step further, attempting to recreate an environment that pre-dates all commercial farming. It is an approach in which crops and other plant life coexist together, allowing the environment to dictate what grows where. Under the teachings of Masanobu Fukuoka, it was coined “natural farming”. Masanobu Fukuoka was a Japanese microbiologist and agricultural scientist who studied plant pathology. After nearly dying during a bout of pneumonia, he experienced what he described as a profound spiritual experience – leading him to begin to doubt modern agricultural science. He gave up his scientific post and returned to his family’s farm on the southern Japanese island of Shikoku. It was here that he developed his own non-intervention farming techniques, which involved no tilling or ploughing, and no fertilisation of the land. This was to protect the vital microorganic life in the soil, that he believed was essential to creating an ecologically balanced environment. The publication of his seminal book, The One-Straw Revolution, in 1975, went on to influence the permaculture movement (no till, no ploughing) in the west, and even more radical concepts. Alsace-based viticulturist Bruno Schloegel (of Domaine Lissner) is one such radical. He has a nine-hectare estate that, over the last 20 years, he has adapted to what he calls the “savage” approach to viticulture. For him, “savage” is a more accurate translation of Fukuoka’s methods. “I asked my Japanese friends to translate Fukuoka’s Japanese term,” says Schloegel, “and it translates as something between being free and alive. But not just the vines, the whole system of animals, insects, fungus. The key is not to disturb, as this will weaken the system.” For Schloegel it is a better translation than “natural” which today, he believes, no longer means anything. Despite adopting Fukuoka’s ideas, Schloegel was in fact practising the same approach before he was even aware of the Japanese farmer’s book. “I never knew about Fukuoka until a few years ago. I was given his book and it was amazing. Almost every page, we were totally linked.” Both former scientists, Schloegel too became frustrated by the scientific data available. “It is more complex than the techniques we have been taught,” he says. “Even when I was a student, I thought this. I am a scientist as he was. I studied in the ’70s. He studied in the ’60s. But our conclusions are the same. The answer is to not disturb.” Prior to Fukuoka, Schloegel was taken by the work of the eminent English scientist Dennis Noble, a pioneer of systems biology whose publication The Music of Life became a huge influence. Noble uses the analogy of life as many orchestras playing different scales, very small and very big. “Molecules, atoms, landscape, living beings as well as the vine – all are playing together and that is what we call life. We can listen to each scale of this living system, and you will find almost the same music, because it is totally coherent. Each scale is in harmony. It was very inspiring to me,” Schloegel explains. Like Fukuoka, Schloegel has a strong respect for spirituality as well as science and talks about how the human brain deciphers experiences differently. He uses music as an example, describing how listening to music creates an emotional reaction which the scientific part of your brain can’t explain. “Knowing you only have a small knowledge of this complexity, this complexity of nature, makes you humble. But spiritually you get pleasure from living with this complexity and not trying to control it. It’s just like a wave you are surfing on. This is the pleasure side.” As well as adopting a no-plough, no-till approach, unlike biodynamic farming, Schloegel does not sow seeds for cover crops, nor use any organic fertiliser, preparations or other inputs. He believes his vines’ roots not only root deeper, but are more resistant to disease and suffer less from stress. He also saves on the costs of such additions. So what does he do? He prunes the vines each year – very late in March/April just prior to the new buds forming – and he mows between the rows just prior to harvest. He does also use copper and sulphur, when necessary, to tackle disease but believes he can phase this out. Beyond that, the vineyard is left to its own devices. It is hard to keep up with Schloegel sometimes – his concepts are unconventional, but this holistic approach is highly considered. It is completely at odds with the commercial farming approaches and understandably has caused controversy. But he, along with a growing number of viticulturists around the world, is totally committed to the concept that permaculture is essential to the future long-term health of arable land. He believes he can not only produce an economically viable crop (up to 40hl/ha), but he can produce wines with greater complexity and terroir expression. He believes it takes between seven to 12 years of not disturbing the vineyards for them to find their balance. “At this point you are on the crest of the wave – it is very calm,” he says. But this is a long process and requires a lot of faith to commit to. Even Schloegel admits it gets worse before it gets better, as the vineyard adapts. “When you stop the herbicides, the mowing and the ploughing, you get the bad weeds. But these weeds prepare the soil for the next generation of plants,” he says. Poppies, lilies, thistles, wild orchids then start to appear and then fruit and vegetables and a huge variety of plant life and wild flowers begin to grow. His vineyards today have a huge variety of plant and wildlife species coexisting, with cherry, apricot, fig, almond trees and wild vegetables, flowers, fruits, and aromatic herbs all growing between the vines. What then happens seems incredible. Schloegel explains, once in equilibrium you see distinct plants continue to grow in the same place each year, depending on the terroir of that part of the vineyard. There is one part of his vineyard where 30 metres of wild strawberries appear every year, growing alongside the vines. In other parts there are leeks, other parts a particular herb. Schloegel outlines that even within a single vineyard, very little is exactly the same. The composition, altitude, slope, geological make-up are all different and, when left to adapt, one vineyard grows multitudes of plant species at different levels of concentration in different parts of the vineyard, depending on what adapts best to that particular spot. This is what Schloegel believes is real terroir in action: “A terroir is a full, complex living system – and a wine of this terroir is a response. In this totally free, rich, complex place. I know it is possible for natural systems to rebuild from themselves. But it cannot be fostered.” Fukuoka’s farm on the island of Shikoku in southern Japan was a rice and citrus fruit farm and, while he managed to produce commercial yields of both rice and fruits, the transference of his techniques to the vineyard is not quite as straightforward. The concepts are radical and while a few like Schloegel are convinced it’s possible – with his own yields varying from 10-40hl/ha, others remain sceptical. Schloegel’s Alsatian neighbour Olivier Humbrecht MW (of Domaine Zind-Humbrecht) does not believe a non-interventionist approach is a good idea – nor that it is necessary for making wine a sustainable crop for the future. While Humbrecht accepts there may be many good ideas in terms of regenerative methods that heighten biodiversity and increase the health of the soils, he is sceptical of its long-term future. Humbrecht’s fundamental criticism is that Schloegel’s approach is not as undisturbed as he claims.“A vine is a cultivated plant,” says Humbrecht. “You are cultivating something, disrupting something natural and making it not natural. It is not natural to plant vines one metre apart on a slope, in poor rocky soil, in a place where it doesn’t rain much. It’s not natural to force it to produce grapes every year. So you have to compensate this with something.” For him, permanent cover leads to soil compaction – with the shallow roots of these plants and the topsoil damaged when working in the vineyard – which has graver long-term effects than tilling or ploughing. These stresses on the vine, Humbrecht explains, are exactly why we have flavour in our wines. Each of these stresses, whether it be the nutrient stress from poor soils, the water stress from growing on a slope or well-drained soils, or nutrient stress from high density planting – these are all deliberate decisions made by vignerons who, over the last 2,000 years, have discovered the best places to cultivate and stress the plant in order to produce delicious fruit. This fruit is the vine’s attempt to escape, through tempting wildlife to eat it and disperse their seeds somewhere less inhospitable. “France would be a forest if untouched and I’m not sure you would not find one wild vine where we have the top vineyards today,” he says. Humbrecht remembers discovering the vines on his own Grand Cru vineyard Rangen de Thann. These vines had been abandoned since World War One. When he arrived 60 years later, most of them had disappeared. The vines that did survive and adapted were producing tiny, small clusters of grapes. Humbrecht believes non-intervention farming would have similar results. “If you don’t prune a vine for 10 years you will end of with tiny clusters, producing maybe 2-4hl/ha – a typical commercial yield in the region is closer to 80hl/ha. Humbrecht’s biggest concern centres around this approach’s commercial viability. And that is important if these methods are to be adopted more globally. If these vineyards’ crops are too small, the vineyard will fail and more likely be bought up by someone else who could return the vineyard to conventional, chemical farming. While there may be disagreements between Humbrecht’s biodynamic approach and Schloegel’s “savage” approach, the permaculture concept has led others to adapt their practices. Michel Chapoutier has been farming biodynamically for the last 30 years but has more recently adopted permaculture. “How I am managing my soil today is completely the opposite to how I managed them biodynamically 20 years ago,” he tells me. Chapoutier now believes the disturbance of the soil is more damaging than the removal of weeds and therefore has stopped ploughing his vineyards. For Humbrecht, light ploughing and resowing cover crops is a better solution. “There is no technique that is 100% good,” he explains. “You have to weigh up the options. What is better? Let the vine die from the competition of the plants growing in May, or disrupting the microorganisms in the soil by ploughing four inches into the soil (between May and June) – you have to choose. It is always a question of balance.” Another producer who has gone beyond organics and placed the development of biodiversity and regenerative practices at the heart of their operation is Gaja. The early success of Piedmont as a fine wine region in Italy saw areas such as Barbaresco and Barolo become dominated by vineyards. Forests were felled and biodiversity dropped. Gaja has since incorporated more trees, adopted permaculture methods in the vineyard and today produce their own organic fertiliser in their historic vineyards. The team has also recently purchased new land in Alta-Langhe where they are not just planting vines, but trees too, incorporating the trees and the vines together. “There is a growing sensibility towards the importance of biodiversity,” says Gaia Gaja, “therefore we are fine with sacrificing space suited for vineyards in favour of trees, we believe in the long run this decision will benefit the health of the vineyards.” Industrial farming is in ecological and financial crisis. More sustainable approaches have to be adopted if we are to survive the next generation, but, so far, those choices come at a cost. For many farmers struggling to make a living, the conventional, chemical farming approach has become the only way to financially survive, taking each year as it comes. These growers can ill afford to think much beyond that, despite the system’s long-term unsustainability. Many feel trapped and find more sustainable approaches economically unviable without better directed government subsidies that promote regenerative farming practices. Wine is hardly an essential food product, but it is the economic engine for entire communities that rely on it for subsistence. In certain wine regions where there is a reliance on water reserves and chemical inputs, it will have to adapt or die. Minimal intervention viticulture is no doubt a radical option, but truly regenerative viticultural approaches will be necessary in a future where food shortages become more widespread. Chapoutier and Zind-Humbrecht, even Schloegel, albeit blessed with great terroir, are paving the way, proving it is possible to produce wine at good volume, at all price points, with a regenerative approach. Making wine under conflict Between 1975 and 1990, Lebanon was a mosaic of wars caused by complex shifting political, geographical, and demographical factors. When 16 years of Civil War were finally over, the foundations for a new republic had been laid, but at a considerable cost. Over 100,000 people were dead, nearly one million had been displaced, and billions of dollars worth of property and infrastructure had been destroyed. Chateau Musar’s vineyards had suffered damage from fighting in the Beka’a Valley, but although the winery in Ghazir had been subject to intermittent shelling, it had escaped significant damage. The fact that Musar only missed one year of winemaking during this period is no mere miracle – but a testament to the family Hochar’s dedication and devotion to their vision in the face of the most horrendous ‘working conditions’ imaginable. For Serge Hochar, protecting the family business his father had established was paramount. “If you ask me on which side I fought during these 15 years,” he once said, “I can only tell you that I was fighting for my wines.” And fight, he did. The effort required to get the Musar grapes from the vineyards to the winery each year during the Civil War was nothing short of Herculean. The pickers, who would often pick under artillery and gunfire as the dug-in militias bombarded each other, emerged as heroes. As did the truck drivers, who risked their lives when running the gauntlet of a journey that in peacetime can be made in two and a half hours, but during the war had sometimes taken several days. The story of Musar’s 1984 vintage in particular highlights the adversity Serge Hochar and family faced during the conflict – and also vindicates the passion at the heart of their decision to keep diligently making wine. In 1984, there was almost no vintage as there were only enough grapes to fill two trucks which proved to be a good thing as there were only two truck drivers brave enough to attempt to get them back to the winery.  Each went a different route. One took five days, the other seven. All the while, the grapes in the trucks were piled up, squashed, heating up in the hot sun each day and starting to ferment. A delivery of warm grapes can result in musty, unappealing wine but – such was
his philosophical outlook – Serge defiantly made wine with them anyway, bottling it and cellaring it to let it “become whatever it decided to be”.  Chateau Musar’s 1984 red should, in theory, have been a terrible wine. But against all odds, given the right conditions and no small amount of time, has become not only a drinkable wine – but a delicious, complex, exciting one, brimming with life and hope. The small amount of the vintage that exists was released to the marketplace in 2014 (exactly 30 years after it was made) and the bottles that occasionally appear on the market are very highly prized. This wine – and all of the vintages made during the Civil War – represent the Musar legacy Serge Hochar left in the capable hands of his sons Gaston and Marc, and his brother Ronald and his son Ralph, along with viticulturalist and winemaker Tarek Sakr. These wines were made during a time when simply driving to check on your crop or to pick up supplies meant dicing with death. “We did our best with what we have, as always. This is the Lebanese way. You give me grapes, and my job is only to help them to be the best wine they can be.” - Serge Hochar Chateau Musar: the Civil War years (1975-1990) 
Miraculously, in the 16 years of Civil War in Lebanon, not a single one of Chateau Musar’s employees was killed – even though many of the Hochar’s friends and neighbours lost their lives in sniper attacks, bombardments or car bombings. The winery escaped serious damage and, in retrospect, seems to have been the safest place in Lebanon. Thousands of bottles stored deep underground in Musar’s cellars carved in the limestone heart of Mount Lebanon slept peacefully during the years of conflict.  The Hochars even converted part of the cellars into a bomb shelter for refugees fleeing Beirut. And they took any opportunities they could to distribute and ship their wines while all the madness of war enveloped them, steadily growing Musar’s reputation around the world. By the end of the Civil War, Chateau Musar was so much more than a maker of exquisite wines. It had established itself as an icon of national endurance and hope. And who wouldn’t drink to that? Read more about life at Chateau Musar during the Civil War years with the timeline below: 1976 30,000 Syrian troops move into Lebanon ostensibly to restore peace, but in reality, this was Syria’s attempt to claim the lands (including the Beka’a Valley) it believes it was owed when Lebanon became independent in 1943. “In 1976 there was total war in Lebanon. We had no electricity. No fuel. No transport. No harvest. No nothing. 1976 was the only year in which we failed to make any wine. For others, the weather is a problem – for us, it is war.” Without the ability to reach the grapes, to pick them and bring them back to the winery, there could be no new wine. Even if there had been, there was nobody to buy it. So Serge saw the opportunity to reach out and find new markets for the wines he had in his cellars. His father-in-law had a travel-agency in London and agreed to start importing his wines in the UK. 1977 From 1977 to 1990 (and during plenty of small dirty wars since) the Hochar family successfully made wine each year – often plucking grapes from the barbed wire zones of the frontline. “During times of war, we have to put all our belief and all our assets in wine!” said Serge. “We have to keep going with the things that are our essence. By now, I was used to war. So I kept on making wine; I was making it for a market I did not yet know existed.”

 1978 The UN steps in with peacekeeping troops and Israel is forced to withdraw from Lebanon. Syria steps in instead, targeting the Christian population in the ‘Hundred Days’ War’, the worst offensive for two years. Serge: “There was very heavy shelling in Beirut. The Syrians shelled Achrafiyeh, where our office is [in central Beirut]. At the time, my wife Tania was running the Godiva chocolatier nearby. She took the kids to the winery cellar in Ghazir in shock. There were many dead in Achrafiyeh. My secretary hid in the strong metal filing cabinet. Many people here were psychologically affected.” 
 1979 Revolution in Iran leads to radicalisation of the Shi'ite movement in Lebanon, and the creation of the Amal party, the ‘movement of the dispossessed’.

 1980 Bashir Gemayal unites Lebanon’s Christian military factions, creating the Lebanese Forces political party.  Serge: “This was one of the worst years of the war for us. I used to write a harvest report, but have mislaid it for this year.”  Chateau Musar UK was officially established this year. 1981 Relations between Syria and Israel deteriorate. Serge: “This was a year of terrible hardship. Tania and the kids left for London. They had to. I could not guarantee their safety. They came back, then left again in 1983. I promised that I would join them the moment the war ended. We did see each other every few months when I could get a flight.” 
 1982 Israel invades Lebanon again intending to dislodge the PLO. Some 18,000 people, mostly civilians, lose their lives as the battle-zone moves towards Beirut. Italian, French and US troops assist in the evacuation of the Palestinians. In the Beka’a, 80 hectares of Musar vineyards become the frontline between the Syrians and Israelis, whose tanks faced each other over the vines. Serge calculates that he will not be able to harvest grapes from them again until 1985. But he does. In the confusion that ensues after the invasion, the loyal Bedouin pickers collect what fruit they can, and the Hochar trucks manage to make their way to the winery. Serge: “The 1982 is a pure wine of war.” 1983 Times darken further as suicide bombing reprisals shock Beirut and its suburbs. In the Chouf mountains, the Mountain War begins. That summer, Serge took his family on holiday to the US. During a stop-over in Paris on their return journey, war broke out again so the family decided to settle in France. Winter is severe in the Beka’a, with metres of snow coating the vineyards; summer is barely warmer, and the Hochars’ harvest was late. A break in fighting, instilled by the American fleet anchored off Beirut, came at just the right time for the vineyard manager to pick a few grape bunches and smuggle them into Beirut for Ronald to check. They were good: there had been no rain, no heatwave, and the grapes had reached perfect condition. Ronald put in a call to Serge, who was visiting the US, and the brothers decided to match the bravery of their vineyard manager and order the harvest in. “It was very dangerous,” admits Ronald: “Serge flew to Cyprus, then took a six-hour hovercraft crossing to Beirut; he arrived at the winery in Ghazir moments after two rockets blasted the coast road he’d just been driving on.”  The truck drivers, with their precious loads of hand-cut grapes, carefully negotiated the capillary-like country roads that would lead them to the winery, relying on a network of local gossip to learn which roads the militias were controlling with checkpoints and which route between the Beka’a and Ghazir would be the least bloody. They were successful. As Ronald said, there were two advantages: “Our usual headache, the traffic jams, were gone. And the harvest, just like that of 1982, was excellent!” 
 1984 The Lebanese Forces, having controlled the capital since 1982, are expelled, and the Amal Party takes control of West Beirut. Peacekeeping forces (from the US, Italy and the UK) leave Lebanon. Serge: “We did our best with what we have, as always. This is the Lebanese way. You give me grapes, and my job is only to help them to be the best wine they can be. In 1984 the sun was very hot, and the fighting was hotter. After waiting and waiting for a break in the shelling, and more than a month after the last day of the harvest should have been, we quickly picked whatever grapes were left on the vines. Most were very ripe and sugary. There were enough grapes for only two truckloads, and only two of our drivers were brave enough to attempt the journey to Ghazir.  The first truck managed to find a way through the cedar forests in the northern Beka’a and get eventually to Tripoli, near the northern border with Syria. In five days it was with us. The second truck drove south over mountain tracks to Jezzine, then crossed the battlefronts on the way down to Sidon. From there, the trucks needed to avoid Beirut, so they waited for a boat. There was a terrible storm, which delayed the ferry to Jounieh.  Eventually, the storm was quiet enough and the ferry sailed slowly up the coast. The trucks arrived at the winery after seven days, on October 20th, 45 days after what should have been the end of the harvest – 45! So, in 1984 the grapes that we received were hot, bruised, sticky and very much fermenting. As an act of defiance, and as an act of faith, as a way of showing that the Lebanese spirit can never be broken, we made those grapes into wine. I made the 1984 to declare war against war.” Fittingly, 1984 was the year that Serge Hochar was named as the first ever Decanter magazine ‘Man of the Year’ - for his unswerving commitment to winemaking. 
 1985 The Israelis continue their withdrawal from the south of Lebanon under armed pressure from Hezbollah. They keep an occupied ‘security zone’ along their border. In the War of the Camps, Palestinian refugee camps are targeted by Shi'ite and Amal militia. Serge: “The Israelis continued to withdraw from Sidon, but it was still difficult to get the grapes from the Beka’a to the winery. After this year, things started to settle down, on our terms.” 1986 Serge: “Military action destroyed some of the vineyards on Mount Lebanon. Our white grape Obaideh was, and is, grown on the slopes of the Anti-Lebanon and was still available – but we only ever used this grape for Arak (Lebanon’s aniseed-flavoured aperitif). Prior to 1986, the Chateau white was only produced from Merwah grapes. From 1986 we began to blend Obaideh with Merwah and the combination worked. We were the first to use these two local varieties in a unique new style of wine.” Close to four decades later, Musar is still the only one. 1987 Anger at the continued presence of Israel in Lebanon is augmented by the first Intifada (Palestinian uprising against Israel’s occupation of the West Bank and Gaza).

 1988 Following Amin Gemayel, Lebanon’s new interim president is announced as Michel Aoun. Serge: “Life in Lebanon was not so hectic in 1988. It was a normal year, politically speaking.” 1989 President Aoun declares war on Syria. After seven months of fighting, with 800 dead, the Arab League negotiates a ceasefire. The Taif Agreement is signed, with the ethos ‘no victor and no vanquished’, in an attempt to end the Lebanese Civil War. Meanwhile, life is beginning to return to normal in the Hochar vineyards. In an impressive vintage, Carignan grapes begin to win Serge’s heart.
