The Macallan is one of Scotland's most popular whisky distilleries and its rare aged bottlings have become some of the world’s most collected and expensive whiskies on the planet. Founded back in 1824 it has been a stalwart of Highland whisky ever since. More recently it has been at the forefront of the Scotch whisky revival and its 1926 release hit the headlines all over the world by becoming the most expensive whisky bottle sold at auction for an astronomical $1.9 million dollars. The Macallan's history 
The Macallan distillery was founded in 1824 by farmer Alexander Reid and became one of the few licensed distilleries following the Excise Act of 1923. In 1868, James Stuart took over the distillery and rebuilt it. Stuart ran the site until 1892, when Roderick Kemp, a distilling giant who previously owned the Talisker distillery, took over and led the distillery to success.  Kemp’s ancestors managed the distillery for over a century, until 1994 when the Highland Distillers Group took ownership. Finally, in 1999 the Edrington Group took control and Macallan led the company to unprecedented growth. Most recently, in January 2020, Suntory, a long-time partner of Edrington, acquired a 10% share in the group.  Through well-placed advertising, marketing, and brand-building, The Macallan has managed to draw in young professionals to the brand, a sector that previously had little interest in whisky. From the turn of the millennium, the Macallan brand has gone from strength to strength, positioned today not only as a premium spirit but a luxury brand. The early 2000s saw the team at Edrington build the brand’s fanbase by launching a single-cask program, the Exceptional 1. This increased rarity and exclusivity beyond widely available age statements and would go on to be one of the most successful ranges under the brand.  The Macallan's collectability On their journey to becoming the most collected single malt Scotch whisky in the world, the brand released many different ranges, each with different receptions. To this day, the Macallan collaboration with Lalique on the Six Pillars set and the Macallan 72 Year Old are two of the main drivers of their global success and they gained notoriety in different Asian markets. To show the steep growth of the Macallan’s collectability we need only look at a Christie’s auction which took place in 2007. At that time, the Macallan 1926 sold for $US75,000. In December 2019, the same bottle sold for $US1.9 million, breaking the world
record for the most expensive whisky bottle ever sold.   Of the 40 bottles to be released of the Macallan 1926 – 12 of the bottles were released with a label created by Italian artist Valerio Adami, and 12 were released with a label created by Peter Blake, most famous for his artwork for The Beatles. The Peter Blake labelled Macallan hit the headlines with the sale of a set at Le Clos at Dubai airport for $US1.2 million. The same year saw a bottle of Valerio Adami 1926 sell at auction in Edinburgh for over $US1 million and at the end of 2018, a one-of-a-kind 1926 bottle designed by Irish artist, Michael Dillon, sold for $US1.5 million at Christie’s in London.  The records broken at auction for Macallan can be listed by the dozen these days, what is clear the Macallan’s growth as a collectable is astounding. Such a feat isn’t achieved overnight, and while the brand attracts much criticism from the whisky fanatics, its impact on the industry is real. Many whisky fans believe the quality of the spirit has dropped, as the brand continues to shift away from age-statements to NAS expressions. This wouldn’t
be an issue, but many of these NAS products are seen by many as largely overpriced.
 The brand invests greatly in advertising, PR, and events, in order to make the Macallan product match the luxury brand it’s perceived to be. Just last year, over £140 million went into opening the new Macallan distillery, a state-of-the-art facility that took years of planning and building. The new site again hit the headlines and has attracted thousands of
visitors the world over since the site opened.  While not singlehandedly, the Macallan brand has helped lift the entire Scotch whisky market into the luxury sector and allowed many other Scottish whisky brands to raise their price tags and grow in global markets. Some of the best buys from the Macallan include: Macallan Sherry Oak 18 Year-Old (2019) The Macallan 18 Year Old is a classic and one of the best expressions to taste for a well-rounded, deep understanding of the Macallan and their use of premium sherry casks hand-picked from Jerez. The Macallan has long been known for the rich depth that comes from their skilful creation of sherry-forward whiskies and the rich depth of the 18-year-old is a perfect example and what they can do. While many of the higher-aged expressions from
the Macallan are hard for most to open up, due to their rapidly appreciating value, the 18-year-old is still at a price that allows fans and collectors alike to open and savour without a heavy heart. Tasting notes: Rich dried fruits burst through on the nose, with figs, raisins, and a touch of roasted nuts all from the influence. The palate brings hints of citrus alongside the rich fruit, joined by warm spices, and a touch of oak.  Macallan Edition 4 The Edition series by the Macallan, now on its 5th Edition, has grown increasingly popular over the years, both as a collectable and a range to drink. As each new Edition launches, the previous ones grow more expensive. Today, the Edition 1 sells for over 10 times its original value upon release in 2015. Out of all, the Macallan Edition 4 is one of the most balanced
in the series, and includes liquid aged in seven different types of sherry casks. An affordable and very enjoyable dram.  Tasting notes: The nose opens with walnuts and dates, a touch of orange peel and some orchard fruits. The palate is rich and smooth with honey, milk chocolate, and a hint of winter spice. The Macallan has become the most collectable Scotch whisky in the world. It consistently surpasses its own records at auctions and is known the world over as a luxury brand – even by those who know have little-to-no interest in whisky. The Macallan has come an awfully long way in its 200-year history. From its humble beginnings as two stills in a wooden outbuilding, the Speyside distillery has continually grown in size and prestige. Today, the Scottish whisky-maker calls a stunning £140 million state-of-the-art distillery home and continues to release remarkable long-aged whiskies from its vast stocks. This steady supply of exceptional single malts and rare bottlings, including its fabled #263 cask filled in 1926, has secured its reputation as a collectors’ must-have. But just how has The Macallan become such a tour de force and what should you know if you’re looking to add a bottle to your whisky collection? The history of The Macallan Based in Craigellachie in the Highlands, The Macallan distillery was founded in 1824 by farmer Alexander Reid and became one of the few licensed distilleries following the Excise Act of 1923. In 1868, James Stuart took over the distillery and rebuilt it. Stuart ran the site until 1892, when Roderick Kemp, a distilling giant who previously owned the Talisker distillery, took over and led the distillery to success. Kemp’s ancestors managed The Macallan for over a century, greatly expanding the distillery – increasing the number of stills from six to 21 between 1965 and 1975. In 1986, Suntory bought out a quarter of the stocks, with Highland Distillers buying out the rest in 1994. The distillery changed hands again in 1999, when Edrington took control. The Macallan has been largely responsible for the company’s unprecedented growth. Macallan’s reputation was built on the use of Sherry casks. Indeed, until 2004 it used exclusively Sherry casks, but then introduced the Fine Oak series, which was aged in ex-Bourbon and Sherry casks. The Macallan cask programme Today, The Macallan invests more per cask than any other distillery in sourcing, crafting, seasoning and caring for its casks – all under the watchful eye of Master of Wood, Stuart MacPherson. The entire process of creating a Macallan Sherry-seasoned oak cask takes approximately six years. Today, European and American oak are both used. Once felled at the optimum age (100 years for European and 70 years for American oak), the trees are left to air-dry for at least one year before they are cut into staves and transported to Jerez de la Frontera, Spain, where they are air-dried for a further 12 months, then coopered, toasted and Sherry-seasoned. All The Macallan whiskies are natural in colour – with nothing added and the only colour imparted by the long maturation in barrel. The curiously small stills  The Macallan boasts some of the smallest stills in Speyside. At just shy of 13 feet in height, the small and squat shape of the stills enables maximum copper contact and little-to-no reflux, resulting in the characteristically rich, fruity and oily new-make Macallan spirit. The 24 stills are also run incredibly slowly – at a trickle – and Macallan only takes 16% of the final spirit from the stills to fill its casks. When the new £140 million distillery was built in 2018, The Macallan commissioned the famous coppersmith company Forsyths to faithfully replicate the existing stills, down to the last dent. The 24 stills are designed to be exact replicas and the distillery maintains the new spirit will be unchanged. Kirsteen Campbell became the first female Master Whisky Maker in The Macallan’s near 200-year history in 2019. Campbell is squarely responsible for maintaining The Macallan’s distillery character and deciding which whiskies to pull from the archives. She was instrumental in the record-breaking Red Collection – a six-whisky set of superlative single malts, including two of the oldest released by the distillery. Campbell and her team are always looking at future-proofing the distillery, and run various barley trials. Currently, The Macallan uses Concerto barley and its own exclusive strain called Momentum that is grown on the estate and in other parts of Scotland and the north of England. The new £140 million distillery  Inspired by the great wineries across the globe, the Edrington team set out to build a distillery unlike any other in 2011. The project, led by Rogers Stirk Harbour + Partners – the architects responsible for Heathrow Terminal 5 and the Leadenhall Tower, or Cheesegrater, as it has become known – took seven years from idea to launch. It involved up to 400 people specialising in more than 20 different trades and cost £140 million. The result is an architectural marvel and has increased The Macallan’s distilling capacity from 11 million to 15 million litres a year. Easter Elchies House, located on the 485-acre Speyside estate, is still the spiritual home of the brand. At present, the old Macallan distillery, complete with its original 21 stills, has been mothballed but rumours swirl that it might resume production in the not-too-distant future. The Macallan and 007  The Speyside single malt has featured in two James Bond films. It first appeared – very heavily – in the 2012 Skyfall when M and Bond are both seen drinking Macallan. There is also the memorable scene between Javier Bardem’s Silva and Daniel Craig’s Bond when The Macallan 50 Year Old (the 1962 Fine & Rare) gets an extended amount of airtime, balanced in a shot glass on Sévérine’s head. A bottle signed by Bardem and Craig was later sold at auction, raising £9,635 for charity. The Macallan 18 Year Old makes a more understated appearance in the 2015 Spectre, on a table in James Bond’s apartment. The Macallan range The Macallan produces an extensive permanent range of whiskies, which include Sherry Oak (ranging from 12 to 40 years old), Triple Cask Matured (a trinity of whiskies aged 12, 15 and 18 years in European and American Sherry-seasoned casks), Rare Cask (single malts from the distillery’s library of Sherry-seasoned casks), the Masters Decanter Series (including M, M Black, Reflexion and No 6) and the Fine & Rare Collection. Limited releases (Edition, Anecdotes of Ages, Tales of The Macallan) The Macallan is arguably best known for its limited releases. These are one-off bottlings, often collaborations with artists and experts in their fields, and whiskies that are inspired by various stages in the distillery’s 200-year-history. Some of the most interesting limited releases include the 13-bottle Anecdotes of Ages collection. Each bottle of 1967 single malt features imagery of The Macallan Estate, created by British pop artist Sir Peter Blake and photographed by Mary McCartney. Only 322 bottles are available worldwide. The Archival Series is also worth highlighting. First released in 2015, with Folio 1, the series includes 24 individual bottlings that commemorate the distillery’s iconic advertising campaigns from the 1970s to 1990s. Today, a single Folio bottle can fetch upwards of £1,500. The Macallan has unveiled two highly anticipated limited releases over the past two years: the sixth and final Edition, and the first Tales of The Macallan. Prices for the complete Edition series (1-6), and individual Edition bottlings, have been steadily rising. The forecasted price for one of the 350 Lalique-designed Macallan Volume I decanters is £60,000. The Macallan also releases more experimental limited releases, like the Harmony Collection and A Night on Earth. The first Harmony Collection, unveiled in 2021, was the Rich Cacao expression, combining two of life’s pleasures: Sherry-matured whisky and chocolate. The same year, the distillery released its first A Night on Earth whisky, honouring Scotland and its legendary Hogmanay festivities. The seasonal release features illustrations from Japanese-French artist Erica Dorn. Cask #263 Without doubt, the most coveted bottles from The Macallan come from one hallowed cask: #263. The Sherry-seasoned cask, filled in 1926, slumbered for six decades until the precious liquid was filled into a mere 40 bottles in 1986. Of these, 12 were filled into bottles designed by pop artist Peter Blake and 12 were bottled in labels designed by Italian artist Valerio Adami; two were auctioned in blank bottles – one of which was later hand-painted by Irish artist Michael Dillion; and 14 were sold as part of The Macallan’s Fine & Rare Collection. Sporadically, and to great furore, these bottles have appeared at auction. One of the Blake bottles sold for £6,375 in 1991, an Adami fetched almost double that five years later, and another went under the hammer for $75,000 in the late 2000s. After this, things went quiet and speculation about the whereabouts of the bottles was rife – until a bottle of Blake and Adami sold for $1.2m in 2018. Unsurprisingly, this set in motion a veritable maelstrom of activity, and nine bottles have since changed hands. The Fine & Rare Collection The Macallan first launched the Fine & Rare Collection back in 2002, with a modest 37 different expressions. In the years that have followed, this collection has swelled to 57 different vintage bottlings from eight decades in the distillery’s history – making it the largest vintage-dated single malt collection in the world. The oldest bottling in the impressively vast Fine & Rare Collection is from the legendary 1926 vintage. The Macallan Red Collection The Macallan Red Collection is widely seen as the pinnacle of the distillery’s portfolio. Three of the six single malts are the oldest whiskies ever released by The Macallan – or any Scotch whisky distillery, for that matter. The entire collection – named after a colour that has a long association with The Macallan – is aged in Sherry-seasoned casks. The three oldest ongoing expressions (40 Year Old, 50 Year Old and 60 Year Old) join the three guest releases, which are the oldest in the distillery’s history (71 Year Old, 74 Year Old and 78 Year Old). Occasionally a lone bottle or an incomplete set of The Macallan Red Collection becomes available, but to find all six bottles is truly rare and exciting. Collaboration with Lalique on the Six Pillars Collection Over the course of one decade, The Macallan partnered with acclaimed French crystal maker Lalique on some truly memorable and collectable whiskies. In 2016, the Six Pillars set drew to a magnificent close with The Macallan in Lalique 65 Years Old . Only 450 individually numbered bottles were released worldwide. The first release in the collection, which began in 2005, was the 50 Year Old, followed by the 55 Year Old (in 2007), 57 Year Old (in 2009), 60 Year Old (in 2011) and 62 Year Old (in 2014). Everything you need to know about The Macallan

Wine journalists are jaded folk – spoilt by too many impressive tastings, lunches and dinners. But when Champagne Louis Roederer invites you to an event celebrating 50 years of Cristal Rosé, few refuse. Cristal Rosé is, as Chef de Cave Jean-Baptiste Lécaillon told us, still “a hidden gem” and the rarest cuvée Roederer produces. It’s not often shown, and even visitors to the estate don’t get to taste the wine.  While Cristal – Champagne’s first prestige cuvée – was created in 1876, its pink sibling was born almost a century later. It was Jean-Claude Rouzaud, current CEO Frédéric Rouzaud’s father, who created the wine, aged 32. He had been managing the company’s vineyards and took over the winemaking in 1974.  “His great vision was to put the vines back in the centre of the creative process,” explains seventh-generation Frédéric Rouzaud. For Roederer, site and farming have long been key to what they do (long operating both as a grower and négociant), but Jean-Claude’s move from vineyard to cellar pushed this further, allowing for – as Lécaillon put it – “a creative and constant dialogue between the vineyard and cellar”.  The same year that he started leading the cellar team, Jean-Claude decided to make a rosé version of Cristal. Almost all rosé Champagne was – and is – made by blending a still red wine in with the base white wines. Jean-Claude, however, wanted to use co-fermentation to keep the wine in the style of Cristal, a decision that Lécaillon says was key, making the wine more ethereal, precise and “Pinot-y”, with a juicier texture.  The wine was built around parcels of Pinot Noir in the Bonottes area of Aÿ, which Lécaillon describes as the “Musigny” of Champagne. In his mind, the Pinot Noir from these plots offers a “special tannic complexity” – tannins that are more saline, integrated and aromatic; the Pinot Noir here is, he says, “effortlessly perfect” and the heart of Cristal Rosé. These three vineyards (Bonotte Pierre Robert, Gargeotte and Côte du Moulin) had been used for Cristal since the 1870s, and more recently became the source for Pinot Noir material for their vine nursery – with 150 different massal selections taken from the plots – long recognised for their quality.  The three original Pinot Noir plots are now being replanted and – while the vines mature – another site in Aÿ, La Villers, a mid-slope parcel at higher altitude, is currently being used in the blend (from the 2018 vintage). It is set to form part of the wine long-term, its cooler position thought to be of particular benefit with climate change. Complementing the 55% Pinot Noir is Chardonnay from two sites – Pierre Vaudon in Avize (bringing more power and richness) and Montmartin in Le Mesnil (lending length, salinity and a chalky minerality).  The first two vintages (1974 and 1975) were more experimental, as Jean-Claude figured the wine and style out, but the third attempt in 1976 produced something special – with sufficient phenolic ripeness to produce a rosé truly worthy of the Cristal name. Even now, 48 years later, that wine is singing – combining savoury rye and brown miso notes with pear tarte tatin and an earthy power. While it had a flurry of three vintages at the start of its life, just 25 vintages of Cristal Rosé have been produced to date. The wine needs a year where not only the quality of fruit is outstanding, but the Pinot Noir and Chardonnay ripen at the same time – allowing for their co-fermentation – something that is relatively rare.  Only made with vines that are minimum 20 years old, yields are low for Champagne (at 35-40hl/ha).  The Pinot Noir is destemmed, crushed and left to macerate. Earlier vintages saw this happen over two to four days and at warmer temperatures, but the winemaking has evolved over the years, with a pivotal shift from the 2008 vintage. From 2008. Lécaillon started chilling the Pinot Noir down to -4̊C overnight, prior to de-stemming and crushing the fruit – something which he believes avoids extracting any green character.   The must is then left to cold-soak for between seven and 10 days, with no punch-downs or pump-overs – a true “infusion” (to avoid any microbial spoilage, they cover it with dry ice for the first four days, then use nitrogen). The must isn’t chilled during this time, and the temperature gradually rises to a maximum 8-9̊C. Moving to a cold-soak was inspired by an accident. In the warm 1989 vintage, Lécaillon’s first year at Roederer, they didn’t have a cooling system in the cellar, and the Pinot Noir was left in a reefer – undergoing an inadvertent cold-soak. The resulting wine was so good that it inspired Lécaillon.  Just as the fermentation starts, the must is racked off and blended with the Chardonnay which has been whole-bunch pressed pneumatically (Lécaillon argues the grape’s reductive nature needs a little skin contact to avoid being overly thiol-driven and Sauvignon-esque). Around 20% of the base wine sees oak. After secondary fermentation (under crown cap, something with Lécaillon argues helps preserve precision and terroir versus cork), the wine spends eight years on its lees, developing immense complexity.  “Since 1974, it has been our laboratory of farming, of winemaking,” says Jean-Baptise Lécaillon of the wine. Cristal Rosé was in fact the House’s first cuvée to be farmed biodynamically, and the first biodynamic prestige cuvée in Champagne, from the 2007 vintage. He explains that he is looking for phenolic ripeness, integrated with the salinity of Champagne, seamlessly combining the tannins and acidity; a wine complemented – but not dominated – by bubbles of salt.  The wine is undeniably remarkable. Tasting through a range of vintages from 1976 to the present day, all in magnum (find full tasting notes below), the vibrancy, purity and moreish, saline, minerality of these wines left me speechless. Their ability to age is effortless, with the 1989, for example, still tasting incredibly youthful. Talking about Cristal Rosé’s evolution, Lécaillon explains that he finds the first decade is all about fruit, but then the wines return to their site and soil, becoming wines of place. Conversation strays into weather Champagne today, with global warming, can still make wines that will age as beautifully.  “Champagne is not just about acid; it’s about freshness,” says Lécaillon. He points to the 1976 and 1989 vintages – both incredibly hot years, with the fruit picked at almost 12% potential alcohol and modest acidity levels – and yet the wines are full of freshness. Back then, producers were on holiday throughout August, and the fruit was picked in September (1st for the 1976 and from 5th for the 1989), but with such conditions today they would have harvested in mid-August. It is perhaps, he suggests, a lesson that the region is overreacting to warm conditions – with too many producers chasing acidity, rather than phenolic ripeness. For the skins are, he argues, the key to this sense of freshness, the dry extract that allows the wine to age.   The House has introduced a Cristal Rosé Vinothèque, or late release. To date, there have only been a handful of vintages – the 1995, 1996, 1999 and 2002. The maturation for this wine isn’t set and varies according to the vintage, normally spending longer on its lees, both sur latte (lying down) and sur pointe (upside down), the idea being to build umami complexity in the wine. The sur pointe ageing is unusual, something Lécaillon favours for its more reductive nature, keeping the wine aromatically fresh (the wine is still riddled four times a year in the same position, to agitate the lees and absorb any oxygen). Generally these releases are offered around 15-17 years after the vintage. The dosage is often lower than the original bottling, with the longer lees ageing lending balance without a higher sugar addition. Tasting the 2002 Vinothèque (a wine that feels infantile), Lécaillon says: “Is it better? I don’t know, but it’s another expression.”  I’ve written before about Lécaillon’s tireless approach to wine-growing – constantly looking to learn and evolve, and the week after our dive into Cristal Rosé he was flying to Japan to visit the Fukuoka farm (founded by Masanobu Fukuoka, the author of The One-Straw Revolution and a pioneer of permaculture or “natural” farming). His fight against the “banalisation” of taste continues, as he looks for ever-more ways to enrich the world of Louis Roederer. If the next 50 years of Cristal Rosé is nearly as good as the first, we’ve all got a lot to look forward to.  Five decades of Cristal Rosé: the tasting  2013 Cristal Rosé: A beautiful, late-ripening growing season that provided the last October harvest to date. A wine Chef de Cave Jean-Baptise Lécaillon describes as having “eternal youth” – something that is hard to disagree with after tasting the wine. This is a baby, the nose enticing with delicate floral aromas and bright citrus, not giving too much away. The palate is long and saline, tightly wound, but bursting with bright fruit on the mouthwatering finish, combining lush redcurrant and lemon. Gorgeous. Dosage 7g/l, tasted from magnum.  2012 Cristal Rosé: Lécaillon notes how 2012 was seen as an “easy” vintage on release, riper and richer with a little more Pinot Noir in the blend, but is now entering its second life, with reductive, chalky notes that bring it back to its soils. The wine is beautifully earthy and drastically different to the 2013, with power and intensity. It’s very savoury, a wine that is all about breadth and structure, with wild strawberry and raspberry notes mingling alongside a sea-spray freshness, driving on to a long, mineral finish. Dosage 8g/l, tasted from magnum.  2008 Cristal Rosé: This was the first fully organic vintage for the entire Roederer estate, and marks the start of a new era for Cristal Rosé with its cool “infusion” technique for the Pinot Noir. Paired with the 1995 vintage, the two wines are windows into two completely different worlds of Cristal. With the copper tone of a sunset, it’s a wine of muscle. It’s almost haughty, with length, power and elegance – showing off its flawless structure, with a zesty citrus drive complementing its austerity. The finish is long and saline. It will be incredible to taste this in 20 years’ time. Dosage 8g/l, tasted from magnum.  1995 Cristal Rosé: This vintage was one of the last to see the Pinot Noir soaked at 20-24̊C. It is, in Lécaillon’s mind, the “same terroir, but a different story” versus more modern iterations of the wine. The wine glows golden in the glass – the colour of the sun just as it breaks the horizon. It’s incredibly open, the aromatics constantly shifting to reveal new layers. There’s a touch of mushroom or truffle, but with layers of rich, almost tropical, fruit behind – think peach, mango, peach tea and the bite of pomegranate, with caramel sweetness, but still a saline twist to the finish. A wine of weight and depth. Dosage 12g/l, tasted from magnum.  1989 Cristal Rosé: This was a very warm vintage, harvested from 5th September, and the wine technically doesn’t have high acidity – yet is a wine of impressive freshness. Grilled hazelnuts edge a nose of candied orange peel and pomegranate, and a coffee note that emerges with air. There’s a liveliness to the palate here, even over three decades on, with a gorgeous freshness and creaminess to the mousse. The fruit on the palate is lush, with generous mouth-watering peach and a taut, mineral backbone. It’s amazing how young this tastes still. Dosage 12g/l, tasted from magnum.  1976 Cristal Rosé: Despite coming from another warm vintage (with a very hot, dry August – and harvested from 1st September), Jean-Baptiste Lécaillon notes the freshness on the 1976 vintage, and how it seems to have never become too evolved. It’s much more savoury than the 1976, with rye bread and brown miso sitting alongside caramelised pears, tarte tatin and a hint of Oloroso Sherry. The palate is a rush of fine bubbles, fresh and with a citrus bite but a savoury framework behind. A remarkable wine. Dosage 10g/l, tasted from magnum.  2002 Cristal Rosé Vinothèque: This was disgorged in 2019, spending 11 years on lees sur latte, and then another five sur pointe, followed by an additional four years’ post-disgorgement ageing prior to release. This wine is so tightly coiled, a wine not yet revealing everything it has to offer – although you can see the incredible structure. It’s so vibrant, with energy and a lushness as it drives toward a seemingly never-ending finish. It’s gorgeous, layered with mandarin, grapefruit pith, chalky minerality and smoked salt, lingering on the soft, saline tail of the mouthwatering finish. This year marks the 50th birthday of Cristal Rosé, Champagne Louis Roederer’s rarest wine. Sophie Thorpe caught up with CEO Frédéric Rouzaud and Chef de Cave Jean-Baptiste Lécaillon about this very special prestige cuvée and tastes through five decades of the wine

“I can die happy now,” Jon Bonné chuckles to me. The writer spent almost a decade as the wine guy at The San Francisco Chronicle, and is now Managing Editor at Resy, having spent time at Punch, writing for Noble Rot, Decanter and many more in between. His latest book, The New French Wine, was released earlier this year and The New York Times wine critic Eric Asimov dedicated an entire column to singing its praises – something he almost never does.  The hefty, two-part tome has been a long time in the making – almost a decade, in fact. The idea was a frivolous suggestion, casually agreed to over one too many drinks (“unsulphured Gamay in Oakland – as one does”) with his editor in 2014, soon after the publication of his seminal The New California Wine. But what was conceived as part of his quest for “the next thing”, to build on the momentum of his first book, rapidly spiralled.  “It's very hard to see a bigger picture of French wine because it is so overwhelming,” Bonné tells me over Zoom. Initially he’d envisaged a few trips, a project that would take a couple of years – but it “kept growing and growing and growing”.  “There was this much bigger story that I was sort of stumbling into,” the writer says. He gradually realised that there was an “enormous meta transformation” taking place across France – and this is what the book wrestles with. As he writes in the book’s introduction, “I imagined the new French wine would be about the undiscovered country – the cracks between known places.” But as he soon discovered, the new French wine was everywhere – and it took him nine years to piece it all together.   The work is split into two separate books – The Narrative and The Producers, the former the story behind the reference guide that forms the latter. The Narrative is a deep dive into the face of France and its winegrowing today, broken down by region, with break-out essays on topics such as natural wine, farming and the appellation system. It’s a rich tapestry of stories, interjected with the frank and striking photography of Susannah Ireland and occasional illustrated map by Francesco Bongiorni, reminiscent of Art Deco postcards.  For Bonné, the “new France” is about postmodernism, about “wilful rejections of the b******t of the past”. It’s about a (re)focus on site, about producers seizing their destiny and hunting for a more sustainable approach – in the vineyard, winery and beyond – although it’s far from that simple. “To understand French wine and to love it, you simply have to embrace its messy, self-contradictory, and, yes, complicated postmodern reality,” he writes. He points to Muscadet and Beaujolais as two of the most exciting and representative regions of this movement – both having entirely reinvented themselves within a generation. Producers here, he tells me, are “doing the work and focusing on terroir and technique and farming”, while Champagne “has completely transformed its vision of what its wine should be”.  Change is most importantly, however, “an inclusive force” – and looking at who did (and didn’t) make it into The Producers, Bonné’s definitive gazetteer of the nation’s movers and shakers, shines a light on this. It’s not a list of the vignerons he loves, it’s a pain-staking selection of those he deems significant and meaningful in the context of the movement – encompassing both more traditional names and those on the fringes. Take the Bordeaux chapter; you’ll find Pétrus, Lafleur and Pontet-Canet, as well as many less conventional, smaller and often natural-leaning properties such as Clos 19 Bis or Ch. Julia – with “Benchmarks” and the more up-and-coming “Names to Know” highlighted.  It’s fascinating – and fun – to see these two, seemingly opposing strands of France’s wine scene woven together. When I queried the inclusion of these elder statesmen of French wine, he highlighted how, for him, Pontet-Canet perfectly exemplifies the change in France today, with the forward-thinking Tesseron family handing the keys to previous cellar master Jean-Michel Comme to do “radical, radical s**t”.  Bonné deliberately chooses to champion those who have revved the engine of broader revolution – and those who reflect that revolution’s values. When it comes to Domaine de la Romanée-Conti, for example, he describes how they “upheld the moral pillars of Burgundy and winemaking” and “use their power for good”; whereas one top Pauillac estate he vehemently tells me is “perpetuating the worst practices of the Bordeaux trade”. For him, “wine is a consumable” and, as 21st-century consumers, “people have a right to explore the values of producers”.   While Bonné certainly likes natural wine – and many of the movement’s figureheads feature in the book, he is far from an evangelist. When he first started thinking about the book, natural wine was different; “It hadn’t quite catalysed into this very specific cultural beast,” he says, a cultural beast born in Hackney, Bushwick or Paris’s 11th. He talks about the movement’s “sense of tragic fashion” and how, with its clique-y nature, it has “baked in its own expiration date”. There were, he tells me, producers that didn’t make the cut – those who act as a “cautionary tale” for natural wine. “There are wines that can be delicate to being transported. And then there are wines that are just f***ed up at the source,” he says frankly.   His outlook is broadly positive for France, the nation’s ongoing revolution and its vignerons, but the book also acts as a call to arms of sorts, for: “The enforcers of the old ways will be forced to adapt, or they will perish,” he writes.  It’s not a perfect book. With a work of this size (over 860 pages and 600,000 words), it is almost inevitably slightly out of date by the time it is printed – especially with the pace of change today. Lafleur’s entry, for example, talks of Acte but not Les Perrières. I’d also have loved to have captions for each of Susannah Ireland’s images, knowing where – and of whom – they were taken. But these are quibbles.   I can’t pretend to be unbiased. Bonné is one of my favourite wine writers. There’s a lightness to his phrasing, with dry humour and a palate that I tend to identify with – although I’d argue he’s become a little more funk-friendly over the years. His writing is intelligent without being arduous. Perhaps it’s because, like Andrew Jefford, he was and is a journalist first. What really fills his writing is a sense of joy, of almost gluttony – it’s still filled with the excitement that so many wine writers seem to lose, as they tire of bottle after bottle of exceptional wine. He’s still easily absorbed by the stories that make each one different. For me, he doesn’t fit neatly into the critic box, even though it’s a term he uses to describe himself repeatedly in our conversation. “The notion of a critic has devolved to a place where you are simply handing out numbers,” he explains, but to him his work is about “criticism at a deeper level”. It’s about “being able to dive into the culture and come away with the insights and interpretation, and explain why certain wines really do matter”.  And it is this that makes The New French Wine stand apart. It isn’t just a wine book; wine is the lens through which Bonné observes a broader cultural shift. Whether you agree with everything he says or not, it’s a joy to read, hold and look at. It’s a book that will prompt conversation, prompt you to uncork bottles, prompt you to consider quite how complicated – and endlessly fascinating – France’s wine scene is. What is Cristal – and who makes it? 
The Grande Marque Champagne Louis Roederer produces Cristal. Founded in 1833, Roederer is the largest independent, family-owned Champagne house today. Cristal is their prestige cuvée – the very best wine they produce, only made in the finest years. Always a vintage wine, it's a blend of Pinot Noir and Chardonnay. The current Chef de Cave (and Executive Vice-President) at the house is Jean-Baptiste Lécaillon, who is responsible for the entire Louis Roederer range. When was Cristal first made? The wine is considered the first and original “prestige cuvée”. It was first made for Tsar Alexander II in 1876, after he asked Louis Roederer to reserve the house’s best wine for him and his court. At the time, Roederer was one of the few house’s to own its own vineyards (a legacy that continues today). A gold capsule and label was used to indicate that the wine was the best in the range, as was common at the time. Reportedly, the Tsar lived in fear of assassination – and as such requested that the wine be bottled in clear glass, so that he could see if it had been poisoned, and with a flat bottom so that bombs couldn’t be contained in the punt (the traditional indent in the base of Champagne bottles). The glass used was lead-crystal – giving the wine its name, “Cristal”. When the Russian Revolution took place in 1917 and the Tsars were no more, Roederer continued to make the wine – releasing it commercially for the first time in 1945. Although the wine would originally have been sweet, the dry style of Champagne gradually became more popular (made initially for the English market) and Cristal evolved with the fashion. Today it is one of the most sought-after Champagnes in the world, alongside other prestige cuvées such as Taittinger’s Comtes de Champagne, Dom Pérignon, Krug, Pol Roger’s Sir Winston Churchill, Veuve Clicquot’s La Grande Dame and Bollinger’s Grande Année. How is Cristal made? Until 1999, Cristal was blended solely on taste. Different parcels from Roederer’s estate vineyards were tasted blind and the best-possible wine created. From 1999 onwards, however, Jean-Baptiste Lécaillon took over and started using the same 45 plots, all mid-slope with chalky soils across seven different Grands Crus. These plots have all been farmed biodynamically since 2012. Only fruit from vines more than 20 years old is used for the prestige cuvée, with any younger-vine fruit declassified to the Collection bottlings (the estate’s vintage, Blanc de Blancs and rosé wines all come from specific vineyards). Typically, it’s a blend of around 40% Chardonnay and 60% Pinot Noir. The base wines are mainly fermented in stainless steel, with a proportion in oak. The wine undergoes secondary fermentation and is aged on lees for a minimum six years, then aged for at least eight months after disgorgement prior to release. With climate change and general trends in Champagne, the dosage has been reduced – from 12-13 to around 8g/l today. The final blend is still blind-tasted by the family to ensure the wine is up to scratch. Around 300,000 to 400,000 bottles of Cristal are made a year. 
What does Cristal taste like? Cristal is an incredible Champagne – and one of the most age-worthy. With vibrant acidity and refined minerality, it is a linear and precise style of Champagne that rewards time in bottle. Complex, expressive and aromatic, critics have awarded the wine multiple 100-point scores over the years – notably the 2002 and 2008 vintages. To further emphasise its ageability, in 2017 Louis Roederer released the first of a new series of Vinothèque bottlings – aged both longer on lees and then for a further 10 years on cork. The first Vinothèque wines were from the 1995 vintage, but wines from 1996, 1997, 1999 and 2000 have since also been released. These are available in extremely limited volumes, but offer a taste of the wines with maturity. They tend to have a slightly lower dosage than the earlier-released wines. Is Cristal rosé? Yes and no. The original prestige cuvée is a white wine, however a rosé sibling was introduced with the 1974 vintage, created by Jean-Claude Rouzaud. The wine celebrates old-vine Pinot Noir from Grand Cru vineyards in Aÿ, historically from three sites (Bonotte Pierre Robert, Gargeotte and Côte du Moulin), but now also from La Villers. Pinot Noir typically represents 55% of the blend, complemented with Chardonnay from Pierre Vaudon in Avize and Montmartin in Le Mesnil. Cristal Rosé is made using the saignée method – pressing the grapes to extract colour, with the Pinot and Chardonnay then co-fermented (rather than blending). From the 2008 vintage, the Pinot Noir sees a cold-soak "infusion" with no punching over/pumping down, for up to 10 days. Around 20% of the base wine is aged in oak. The wine goes through secondary fermentation in bottle and is aged on lees for around eight years prior to release. Why is Cristal wrapped in plastic? The trademark gold cellophane wrapper is to protect the wine from UV light. As the wine is bottled in clear glass, UV light can cause “light strike” – a fault that causes cabbage or rotten-egg aromas in the wine. As such, the plastic should be kept on the wine until it is served. Cristal’s street cred and controversy Cristal was once the choice of hip-hop’s most famous names. “Cristal forever/Play the crib when it’s mink weather,” raps the Notorious B.I.G. on Jay-Z’s Brooklyn’s Finest. Raekwon, 50 Cent, Big L and many more were all fans. Tupac even created a cocktail with Cristal called “Thug Passion”, a combination of Cristal and Alizé Gold Passion liqueur. In 2006, however, Frédéric Rouzaud – seventh-generation of the Roederer family and CEO – was asked in an interview about the wine’s association with a “bling” lifestyle. In response he said, “What can we do? We can’t forbid people from buying it. I’m sure Dom Pérignon or Krug would be delighted to have their business.” Jay-Z responded: “It has come to my attention that the managing director of Cristal, Frédéric Rouzaud, views the ‘hip-hop’ culture as ‘unwelcome attention’. I view his comments as racist and will no longer support any of his products through any of my various brands, including the 40/40 Club, nor in my personal life.” Others followed, and soon Cristal was replaced by other wines and spirits. The 2021 vintage in Bordeaux is not another 2018, 2019 or 2020. Indeed, this is a year that is seemingly without precedent. It was a year first and foremost of the wine-grower. Forget the idea that the best wines are made with minimal intervention, naturally conjured from fine terroir and effortlessly evolving in the cellar: that’s an illusion at the best of times. To succeed in 2021, producers had to put in serious graft. They needed to be out amongst the vines day in, day out. And then they needed to follow that through in the winery. Several had already written off the year after hearing about the frost and mildew that plagued the growing season (about which you can read much more in our detailed report). In our view, that’s a mistake. It’s not the vintage of the century, and anyone would be foolish to pretend it is – but there are some brilliant wines, especially for those who are partial to more elegant styles, lower alcohol levels and freshness. It’s important to caveat that when we discuss a vintage en primeur, we are talking about the very crème de la crème of Bordeaux – the finest estates who have not only the region’s best-sited vineyards, but the necessary resources – the manpower, money and equipment – to be able to succeed. Our 10 days in the region revealed the full complexities of the year, one where it is nigh-on impossible to generalise. As Omri Ram at Ch. Lafleur told us, “There are hundreds and thousands of 2021s.” The key was being able to analyse what was happening in the vineyards – and then be able to act on it. Quickly. For Ram, with 24 people working 21 hectares, that was fortunately possible. At Ch. Lafite Rothschild, Technical Director Eric Kohler told us that the cost of production in 2021 was an almost incredible 45% higher than normal. Christian Moueix estimates his team spent 30% more hours in the vineyard than normal. At Ch. Ducru-Beaucaillou, they hired an additional 35 people to manage mildew amongst the vines in June and July (surplus to the normal 40), while at both Ch. Rauzan-Ségla and Les Carmes Haut-Brion they had enormous teams for the harvest – 150 each, harvesting and sorting at Rauzan-Ségla, and doing three or four passes through each plot at Carmes. At Smith Haut-Lafitte, they bought five additional tractors to ensure they could spray the entire property in one day. “All the challenges we could dream of happened,” said Jean-Basile Roland of Ch. Rauzan-Ségla. Because of these challenges, it’s a vintage that producers are justifiably proud of – for it was a hard-won battle, and Covid-19 was still a consideration. Yields across the region varied significantly. In total, the region produced 14% less than in 2020, but some estates reported a full crop. At others, they had the lowest yields since 1991 – largely due to mildew, although frost was a factor as well. Inevitably, estates working organically and biodynamically had more of a battle when it came to mildew so were more significantly impacted. Both elements had less of an impact than might be expected, however, as producers have learnt – and invested – after the severe frosts of 2017 and mildew of 2018. As already highlighted, this was a year of the grower; where the human hand was everything. There were key decisions to be made at every stage of the season and these influenced the style of wine produced. Again, from what we tasted there wasn’t a right or wrong decision to be made – but it’s important to emphasise the various elements that have defined the wines this year. First up was picking. In general, harvest dates were much later than we’ve seen in recent years – producers having to wait for ripeness to arrive in the year’s cooler conditions. Merlot started coming in at the end of September, and most finished picking their Cabernet by 18th October. The key decision was around the first weekend in October, when heavy rain was forecast, yet most Cabernet wasn’t yet ripe. Some rushed to pick their fruit, while others took the risk and waited. Those who held their nerve were rewarded; the storms were replaced by sunny days for key ripening. While recent years have seen producers waiting for phenolic ripeness, with sugar levels soaring in warm conditions, 2021 saw something different. At some estates, phenolic maturity arrived first, with the sugar never quite following; at others the phenolic, flavour and sugar ripeness all seemed to arrive at once. For the former, chaptalisation was necessary. This practice – the addition of sugar prior to fermentation to increase alcohol levels – was once the norm in marginal climates like Bordeaux, Burgundy, Champagne, the Loire and many more. Opinions on the topic are rife, with some winemakers extremely anti; from what we tasted, where well-judged and expertly managed, you can’t tell. There were a handful of wines with warming alcohol that doesn’t feel fully integrated, but where done well, chaptalisation has rounded the wine out – fleshing out the body with half a degree of alcohol or so. It’s also important to emphasise that chaptalisation is something we simply haven’t spoken about previously – at Ch. Margaux, Aurélien Valence highlighted that they even chaptalised a few parcels in 2019 and 2020, while some estates haven’t done so for decades. Some châteaux opted for reverse osmosis as an alternative way to concentrate the wines, generally on lower-tier wines. Given the year’s challenging conditions, producers didn’t face a crop of flawlessly clean fruit. It was a cool and damp year and sorting was essential. Optical sorters are now the norm at many addresses, but this year saw the addition of density baths at several estates (Chx Léoville and Langoa Barton, Angélus and Smith Haut-Lafitte, to name a few, following in the footsteps of the likes of Ausone). Indeed, just at Smith Haut-Lafitte, there were six stages of sorting across the vineyard and winery to ensure that they kept only the finest fruit. One point of discussion at almost every estate was how producers managed extraction. With the year’s wet conditions, berries were generally plump and dilution was a risk. The cooler weather also meant that tannins weren’t necessarily as ripe, although in terms of “IPT” (the Indice de Polyphénols Totaux – the level of tannins, a number that has started appearing on technical sheets and critic reports increasingly in recent vintages) 2021 had the same numbers as 2018, ’19 or ’20.  The difference, however, was that there isn’t the same stuffing to balance it – so it was essential that tannins were handled gently. Cold soaks were used at several addresses to extract colour and flavour, but not tannin; many opted for gentler and shorter maceration periods. Saignée – the act of bleeding off juice to concentrate what remains – was commonplace, and higher portions of press wine feature in several blends. Several producers noted that in particular the seeds or pips weren’t ripe this year, so it was important to avoid extracting tannins from them; it’s one reason for the significant portion (45%) of whole-bunch fermentation for the Grand Vin at Les Carmes Haut-Brion. The blends this year are in some instances atypical. On the Left Bank, the Merlot struggled with coulure (uneven fruit-set), meaning some wines have record-high proportions of Cabernet Sauvignon in the blend (a record 98% at Ducru-Beaucaillou, 96% at Lafite, 90% at Calon-Ségur, for example). Cabernet Franc seemed to thrive on both sides of the Gironde, and represents higher-than-normal percentages on the Right Bank (30% at L’Evangile, 60% at Angélus). You may also find a little more Petit Verdot in blends than normal – used to add both colour and spicy richness to the wines (for example, representing 6% at Pontet-Canet). Given the generally lighter style of the wines, élevage will be key. While of course this is not set yet, many producers have opted for lower levels of new oak and plan to leave the wines in barrel for slightly less time. As Noëmie Durantou Reilhac of Ch. l’Eglise-Clinet highlighted, this is to preserve the wines’ delicate tannins and aromas. At Ch. Rauzan-Ségla, Jean-Basile Roland noted that it was particularly important this year to use hot water and steam to extract the harshest tannins from barrels before they were filled. And so what of the style of the actual wines? Well, as you can tell, it is not easy to generalise. This is not a Left or Right Bank year, in our view, although we found a little more consistency amongst estates on the Right (and especially warmer Pomerol). Despite the fact that Merlot struggled a little on the Left, it doesn’t seem to have been such an issue on the Right Bank – it’s neither a Cabernet or Merlot vintage. Several producers were quick to declare it a “terroir” vintage – and certainly it seems that limestone and clay soils were an advantage – but terroir was not the only element at play. It really is a year that needs to be judged individually, per estate and wine. We noted in particular that some second wines have suffered from the selection required to achieve greatness in the Grand Vin. The best embraced the natural style of the vintage – working with the year’s elegance rather than battling it. There is an old-school charm to the finest wines, yet with a very modern fruit profile. “Modern classic” was a term that came up time and again, although we’re loathe to repeat it. At Vieux Château Certan, where Guillaume Thienpont has undoubtedly made one of the wines of the year, he described the wine as “two-thirds perfume, one-third flavour”, while Pierre-Olivier Clouet at Cheval Blanc – another overperformer this year – considers it “academic” rather than “classic”, built on dual pillars of tannin and acidity.  The best wines have fresh acidity, delicate and often floral aromatics, with crunchy fruit – often more at the red end of the spectrum. Alcohols tend to sit between 12 and 13% (a little higher on the Right Bank) and the tannins are not negligible, often providing a chalky grip, and they are surprisingly approachable now. They won’t be wines to cellar for the serious long-term, but will be one of those vintages to consistently overperform – surprising blind tasters with their charm as they evolve in bottle. Given all this, it’s no surprise that producers struggled to find a comparative vintage. Faced with such tricky conditions just a decade ago, producers wouldn’t have been able to make the wines they did today. The 1990s were consistently used as a reference point in style, but more recently 2001, 2008 or possibly 2014 offer the best comparison in terms of style – if not climatic conditions. The wines are more concentrated than 2017, and as is very clear, drastically different to 2018, ’19 or ’20. The vast majority of what we offer en primeur is red, and that is where the focus of our report lies, but this was an exceptional vintage for whites. Several estates feel they’ve made the best wines in their history – and certainly from our tastings that is true. At Ch. Margaux, Aurélien Valence said they thought 2017 was their best Pavillon Blanc, but 2021 exceeds it. The cool conditions that made the year challenging for reds was perfect for the white grapes, which benefitted from the long, slow growing season – offering aromatic ripeness, yet vibrant acidity. They really are superb. Crops in Sauternes were decimated by frost unfortunately (Ch. Suduiraut has just 500 cases of its Grand Vin to offer the world), but what little we tasted was similarly outstanding. Buy what you can of these increasingly rare and special wines, made at almost illogical expense. Local delivery is free for orders over HK$1,800 (to a single location). For orders below this value, delivery is HK$150 for up to four cases and HK$50 per case thereafter.

Shipping starts from €25 within Italy and €45 to Switzerland and the rest of Europe for up to 48 bottles (75cl). Costs vary by destination. Larger shipments can be quoted on request.
