Every now and then, the word ‘singularity’ is used to describe a particular wine that stands apart, for whatever reason, from other wines of its type. But just what is singularity, and how can wine express it? Wine writer Tamlyn Currin investigates.

Overall, the 2024 crop was Bordeaux’s smallest since 1991 – with the region producing 332 million litres of wine. This is in part due to declining vineyard area, with the yield averaging 35hl/ha – slightly higher than that of the 2021, 2017 or 2013 vintages. Diving further into this, however, reveals a significant difference between the Left and Right Banks – with 34.4hl/ha in Saint-Emilion, Pomerol and Fronsac, versus 30.8hl/ha on average in the Médoc and Graves. It's a year where it is hard to generalise, even within each commune, for neighbouring estates produced drastically different results in the vintage. As David Suire of Ch. Laroque explained, there were such varying approaches to the year’s challenges, something that is echoed in the wines produced. RIGHT BANK This year, once again, the Right Bank offered more consistency than the Left. Although it was still heterogenous, the smaller size of estates lent itself to success – making it easier to treat and harvest in the narrow windows of dry weather. Wherever you were, however, it was a challenging year: as Christian Moueix said, “You cannot replace the sun.” Beyond the more overcast weather, hail hit Fronsac, Canon-Fronsac and Lalande-de-Pomerol in June, with some estates losing their entire crop, although Pomerol and Saint-Emilion largely escaped.  Pomerol For Noëmie Durantou (Ch. l’Eglise-Clinet), 2024 was a tough opponent – but one she knew they could win against, and looking back at it, what a game it was: as her wines certainly indicate. For her, there were several key elements to the growing season: the cloud cover that reduced diurnal variation (she recalls warm, sleepless nights), the late véraison, foggy mornings that increased botrytis pressure in the run-up to harvest, and the year’s humidity level – 80% in Pomerol, versus a more normal 50-60%. The hail that struck Lalande-de-Pomerol in June strayed a little into Pomerol, but most estates escaped any serious impact – with just a touch felt at Lafleur at Feytit-Clinet, for example. Treating the vines posed an additional challenge for the team at Clinet, who have to take into account the timetable of the neighbouring school, working around the presence of children and/or parents, on top of inclement conditions. Harvest began in Pomerol slightly earlier than in neighbouring Saint-Emilion, kicking off from as early as 16th September, but most starting to bring their Merlot in from 20th of the month, and the Cabernet finished by 4th October (although some producers had everything in the winery by the end of September). Yields varied significantly – from the second-smallest harvest since 1991 at Belle-Brise to the second-largest crop in the last 25 years at Lafleur.  Jeremy Chasseuil (Feytit-Clinet) emphasised how, for him, leaving the wine on lees for two months was key – helping to build texture, releasing polysaccharides that lend weight to the wine’s mid-palate. While 2024 did not produce the most opulent styles of Pomerol, the best retain a plush texture and exoticism to the aromatics that complements the naturally high acidity of the year. Although quality isn’t entirely consistent here, there are many highlights. Our favourites in Pomerol: Belle-Brise, Eglise-Clinet, Guillot Clauzel, La Conseillante, Lafleur, Le Pin, Vieux Château Certan Saint-Emilion There was a notable difference between Pomerol and Saint-Emilion – with Saint-Emilion seeing significantly more rain in April to June, with 278mm versus 199mm in Pomerol. Despite that, the region’s limestone plateau came into its own – allowing the water to drain away from the vines, despite hitting record levels (at Ausone, the level in their well was the highest-ever). August, however, was significantly drier on the Right Bank – with around half the normal rainfall.  Harvest started a little later here. Although some started as early as 17th September (Cheval Blanc, Canon, for example), most waited until 27th, and with several estates holding off until early October. Despite the year’s challenges (“It was a war,” said Cheval Blanc’s Pierre-Olivier Clouet), the yield across the appellation worked out as fairly average – although varied between estates. At Angélus, it was Hubert de Boüard de Laforest’s 40th vintage, and the bottle bears a cut-through of a tree-trunk with 40 rings as a tribute. At Ch. Beauséjour, it was the first vintage to be made in Joséphine Duffau-Lagarrosse’s new winery, something for which she was particularly appreciative, allowing her to divide the vineyard into smaller parcels and work with greater precision. Saint-Emilion is so large that there is inevitably a broad range of wines this year. Although there are some that can be overly tart, austere or astringent, there are some very impressive, textured, layered wines that retain tension yet also offer plentiful fruit and weight. Cheval Blanc, for example, is a very serious wine that will need time – a real contrast to many of the 2024s that are set to be approachable early. It’s worth highlighting Ch. Laroque, an estate that we have been watching for a while, and where David Suire continues to make wines that offer extraordinary value. Our favourites in Saint-Emilion: Ausone, Cheval Blanc, Clos de Sarpe, Figeac, L’If, Laroque, Tertre Roteboeuf LEFT BANK Yields on the Left Bank were – other than for the whites – generally lower than on the Right. It varies significantly between estates, however, with yields varying from the smallest-ever to normal. While there are years when lesser sites in the Médoc and Haut-Médoc excel, 2024 largely wasn’t – this was a vintage where the quality of terroir, as well as the means to make stringent selection were key. We found quality here was even more heterogenous than across the Gironde, however there are still some brilliant wines to be found.  Saint-Estèphe Quality in Saint-Estèphe is mixed in 2024. The commune’s cooler, northern position was not necessarily an advantage this year, nor were the more clay-rich soils – which have been such an advantage in recent warm and dry vintages. Estates with vines on free-draining gravels fared best, however there are many variables to the quality equation this year. While not every estate thrived, there are some serious highs here, with Montrose vying for wine of the vintage – offering a level of density and complexity that really stood out in our tastings. It’s the second rendition of their Grand Vin to come exclusively from Terrace Four (T4), a decision that is clearly being rewarded, and we also got our first taste of the not-yet-released wine made from T3, called “Terrasse 3” – a wine that will be worth looking out for. The team at Montrose emphasised how the appellation saw less rain between 1st August and 8th September compared to those further south, receiving just 50mm in this critical period (versus 80mm for Margaux and 120mm for Pessac-Léognan), something they felt was key to their success. Calon-Ségur was one of several estates that chose to abandon organics this year, using conventional sprays between budburst and flowering, before reverting to their normal regimen, allowing them to achieve the same yield as 2023 at 45hl/ha (versus 29hl/ha at Cos d’Estournel, who continued on their path to organic certification). Technical Director Vincent Millet – who is at the helm of Calon’s entire portfolio of estates, including Ch. le Prieuré in Saint-Emilion and Vray Croix de Gay in Pomerol – noted how the later-ripening Cabernet Sauvignon was particularly tricky this year, making the Left Bank more challenging than the Right in the vintage. Our favourites in Saint-Estèphe: Montrose Pauillac Pauillac had the lowest yield of any of the Left Bank communes this year, with the average across the appellation 29.5hl/ha (versus a 20-year average of 45.7hl/ha). Between estates, figures varied wildly – from the miniscule 11hl/ha made at Ch. Latour (a level more typical in Sauternes) to 33hl/ha at Ch. Lafite Rothschild, for example, looking at two estates working organically. June was drier here than elsewhere, meaning the vines started to suffer from hydric stress earlier – with some properties even saying they saw the vines’ development stall in August, with the first rains at the end of the month a welcome reprieve. Harvest here stretched through the first 10 days of October, with botrytis significantly impacting yields. Pichon Baron estimated they lost around 10hl/ha to rot – just one of the sacrifices that made 2024 such a costly vintage to produce. The resulting wines tend to have higher portions of Cabernet Sauvignon, and vary in both style and quality. Generally, these are lighter-styled Pauillacs, not having the firmness or power that this appellation can often offer. Although some don’t have sufficient concentration or structure, the best have trademark Pauillac graphite, complemented by more delicate florals, crunchy fruit, a saline quality and fine tannins. The vintage also marks 100 years of Batailley under the Borie-Castéja family, earning a commemorative label for this benchmark Claret, as well as a special Marie-Jeanne format. Our favourites in Pauillac: Batailley, Lafite Rothschild, Pichon Comtesse, Pontet-Canet Saint-Julien At Chx Léoville and Langoa Barton, Damien Barton Sartorius compared 2024 to running a marathon – tiring, but satisfying, and leaving you ready to sign up for another. The average yield for the appellation was a little bit higher than that of Pauillac, with 32.5hl/ha – still almost 25% down on the 30-year average. As with further north, however, the average is only an average: Beychevelle cropped at 43hl/ha, while selection took the yield down to 23.6hl/ha at Ducru-Beaucaillou (with the team throwing away almost 10hl/ha), and figures varied significantly between estates. At Beychevelle, Philippe Blanc explained how after just 4mm rain between 1st and 28th August, the rain recommenced and never stopped. Their Merlot was more impacted by mildew and therefore the blend is higher in Cabernet Sauvignon (55%) – something echoed elsewhere. The poor flowering and resulting coulure meant looser bunches, explained Barton Sartorius, something which he felt really helped them avoid significant botrytis pressure at the end of the season.  The smaller size of Saint-Julien means it is a little more consistent than Pauillac, however, it’s not entirely uniform. The fruit tends to be a little sweeter, while still on the red rather than black spectrum, the wines offering bright acidity and the best fine tannins and good balance, with the oak seamlessly integrated.  Our favourites in Saint-Julien: Ducru-Beaucaillou, Léoville Barton Margaux Although no appellation is consistent in 2024, Margaux produced some particularly impressive wines. Rainfall may have been higher here than further north, but the slightly warmer microclimate and shallow soils perhaps allowed the grapes to ripen earlier and more fully. There are still some light and tart wines, however the likes of Palmer, Margaux and Rauzan-Ségla produced wines that are among the best of the vintage. Ch. Margaux pointed to their early flowering as a significant advantage in the vintage – “a blessing”, in Aurélien Valance’s words. The 2024 vintage was meant to be the final year of organic conversion at Ch. Rauzan-Ségla, and as the mildew pressure hit, the team had a serious conversation about whether or not to persevere. With the owners’ endorsement, they decided that long-term it was the right decision to continue – knowing it would mean a sacrifice in yield (with a final crop of 30hl/ha), but it would also be their first organically certified wine. The Palmer team – long biodynamic – had to spray as many as 10 times by hand, unable to get their tractors into the vines. However you explain it, the results here speak for themselves – with wines that combine pretty, heady florals with sweet and supple fruit, as well as fine but persistent, powdered tannins: some serious wines that would deserve consideration in any vintage. This was also the one appellation where second wines – such as Alter Ego de Palmer and Pavillon Rouge – showed real quality. Our favourites in Margaux: Brane-Cantenac, Giscours, Palmer, Margaux, Rauzan-Ségla Graves + Pessac-Léognan Yields for the reds in Pessac-Léognan were – unusually for the year – average. The whites are discussed separately below, but the reds from Graves and Pessac-Léognan were as varied as elsewhere. There are, however, some charming wines, and some very impressive wines that defy the year’s reputation. This southerly region saw more rain in August, not benefitting perhaps from the hydric stress that was so key elsewhere – but the rain that month wasn’t excessive, just in line with the norm. At Smith Haut Lafitte, September saw more than three times the average rainfall (164mm versus 48mm), making the harvest far from easy. Although Carmes Haut-Brion picked 40hl/ha, they only vinified 24hl/ha – another example of the extreme selection that quality-focused estates put in place this year. Guillaume Pouthier – who always offers a unique perspective on a vintage – is doing something different with his ageing this year, reducing the temperature of the cellar from 16°C to 12°C over the two-year élevage, to preserve the fruit profile in the wine and encourage tartaric precipitation, thereby reducing the acidity level. Time will tell how this works, so it will be fascinating to retaste the wine in bottle. Domaine de Chevalier produced some particularly impressive wines this year, and although they have long worked organically and biodynamically, this year they made the difficult decision to use conventional treatments – something that has been rewarded, with both generous yields (48hl/ha) and very high quality. Our favourites in Graves + Pessac-Léognan: Les Carmes Haut-Brion, Domaine de Chevalier, La Mission Haut-Brion Dry whites Some people are raving about the dry whites in 2024 – and, while there are absolutely some brilliant whites, quality is far from uniform. The first Sauvignon Blanc grapes were harvested in Sauternes on 20th August, although most producers we spoke to picked from the very end of August/early September, with the last Semillon brought in on 23rd September. Yields were average to generous, with mildew much less of a problem – 30 hl/ha at Margaux, 32hl/ha at Smith Haut Lafitte, 38hl/ha for Haut-Brion and La Mission Haut-Brion, 48hl/ha at Domaine de Chevalier, for example, while on the Right Bank the Lafleur stable brought in around 40hl/ha and the Nicolas Thienpont team cropped 43hl/ha and 47hl/ha respectively at Alcée and Charmes-Godard. The cooler conditions preserved a backbone of acidity in the wines, with accordingly low pHs – analytically speaking, the wines have the highest acidity since 2014. The aromatics are precise, dominated by green rather than stone-fruit, and certainly not at the more tropical end of the spectrum. If anything, some of the wines can feel a little green or lean. As Smith Haut Lafitte’s Technical Director Fabien Teitgen explained, the challenge was to get ripeness that would cloak the acid of the vintage, the flesh to complement its skeleton. Owner Florence Cathiard feels the result is “one of [their] best whites”. Similarly at Ch. Margaux, they did a little more bâtonnage to give weight to Pavillon Blanc – and it’s one of the stars of the year. In some, you can feel the growing season’s excess of water – the generous yields resulting in wines that don’t have sufficient concentration. Sauvignon Blanc seemed to fare better than Semillon, which was more susceptible to rot and was more challenging to get phenolically ripe – and many of our favourites were pure Sauvignon, or heavily driven by the variety. Comparisons were varied – although 2021 was common for its acid backbone and cooler conditions. At Lafleur, Omri Ram is convinced that 2024 Les Champs Libres is one of their best, sitting comfortably alongside the 2023 and 2021. At Ch. Margaux, Aurélien Valance looked to a surprising vintage – the warm 2018 season, but in which the wine has a similar saline imprint to that found in 2024. Our favourites: Charmes-Godard, De Fieuzal Blanc, Domaine de Chevalier Blanc, Haut-Brion Blanc, Les Champs Libres and Grand Village Blanc, Pavillon Blanc du Ch. Margaux Sauternes + Barsac It’s easy to assume that because rain and rot threatened the crop in 2024, it was perfect for the sweet wines of Sauternes and Barsac: but very specific conditions are required for noble rot to set in, and if they aren’t met, you get grey rot – with both caused by the same fungus, botrytis cinerea. The first pass in Sauternes tended to take place at the end of September, with alternating wet and dry conditions encouraging the development of noble rot from the start of October. But teams had to battle grey and sour rot too – and a high degree of selection was key. At La Tour Blanche, they made just 3hl/ha for their Grand Vin, a tiny yield that matches that of 2021. The grapes that made it into the tank offered high acidity levels, precise aromatics, but not the luscious concentration of the very best vintages. Based on our tastings, the resulting wines are good to very good, if not quite exceptional, but may have particular appeal to consumers who prefer a lighter style of sweet wine – with brighter acidity and slightly lower residual sugar levels. They are vibrant and pure, with plenty of concentration, if not as hedonistic as more lauded years – and will be approachable at an earlier stage in life. Bordeaux 2024: the vintage by commune

It was the vision of Jacques Perrin in particular – who farmed the property organically from 1950 onwards – that cemented Châteauneuf-du-Pape’s Château de Beaucastel reputation. Today his sons – Jean-Pierre and François – are at the helm, with fifth-generation Marc, Pierre, Thomas, Cécile (Jean-Pierre’s children) and Charles, Mathieu and César (sons of François) also all work full-time at the estate. All seven of the children worked in wineries around the world before returning to the family estate.  A visionary estate The estate was one of the first in Southern Rhône to become organic (in 1950) and then biodynamic (in 1974), making the vineyard better prepared than most for the climate change effects over the last 30 years.  “Beaucastel is the largest Châteauneuf-du-Pape estate in one contiguous plot and it stands at the most northern limit of the appellation. It is a vineyard which is therefore very exposed to the Mistral winds, which has a huge cooling-down effect,” Emmanuel explains, protecting the vineyard from extreme temperatures.  The vineyard is based on a limestone bench covered by a rather atypical mix of clay and sand, topped with diluvium “galets roulés” (pudding stones). It is an incredible terroir that, Emmanuel explains, “allows us to combine power and finesse even in the driest vintages. It has always been considered a benchmark terroir in the area and was in fact a cru before the Châteauneuf appellation was created.”  
The biodynamically farmed old vines have also helped offset the ever-increasing drought pressures in the region. “We are extremely fortunate to have older vines,” Emmanuel says. “The galet roulés covering our vineyards also help prevent water evaporation. So all in all we’ve managed to make great wines even in warmest and driest vintages.” That hasn’t stopped the domaine, however, from continuing to adapt their methods to better cope with the ever-present threat of climate change. “We are learning more and more every year and continue to implement changes we deem necessary.” Alcohol levels in the region have undoubtedly risen, an effect that the estate looks to counter. 
When Jacques Perrin was in charge, he created a very specific vinification technique which he later patented. He would heat up the must to 80˚C, to start fermentation quickly while allowing Jacques to use less Sulphur, helping fix the colour of the wine, particularly with the Mourvèdre grape which has a tendency to lose colour with age. But this method also reduced the greener flavours in the wine, that came from less ripe grapes. 
Today’s climate, however, does not face the same issues, with consistently riper fruit. As a result François and César have phased out this technique, instead opting to whole-berry fermentation, and even whole-cluster ferments for varieties like Syrah, to naturally reduce alcohol levels. These days they also pick earlier, opting for more freshness whereas in the past it was always the goal to maximise ripeness, something that no longer is an issue for the region.  “The estate is always looking at ways to counter the issues of climate change,” Emmanuel continues. “For example, some of the younger Syrah vines are today producing very powerful wines so we are either co-ferment with some Grenache, reincorporating some of the stems in the vat or carry out whole-cluster fermenting,” helping to find better balance in
the wines. In the vineyard too, the team is constantly looking for ways to improve. “We recently tried spraying clay on leaves to limit photosynthesis,” Emmanuel says. The initial experiments have proved positive, but it is still too early to see the long-term effects on the wine
and requires further testing. 
But this experimental approach is everywhere in the property. They continuously make alternate blends that they age in the Beaucastel cellar and over time compare with their main cuvées to see how well the final blend develops versus a different potential version of
the same wine: Emmanuel states the cellars are full of these experiments. 
The domaine has also been assessing how the Beaucastel wines age with different fining techniques. “We do a lot of comparative tastings and assessing of older experimentations. For example, we recently did a horizontal of Château de Beaucastel 1996, where each bottle was fined differently, and identified which fining technique works best for ageing the wine – this is crucial in the development of our knowledge and helps us to make sure decisions taken in the moment are the best ones for the future.” 
Hommage à Jacques Perrin What is distinctive about Château de Beaucastel and the Hommage cuvée in particular is the high proportion of Mourvèdre in the blend. The Hommage is typically made up of 60% Mourvèdre. Emmanuel explains, “Hommage is from our Courrieux lieu-dit parcel, where Mourvèdre was first replanted (post-phylloxera) in 1910. As Mourvèdre is such a late-ripening
varietal, Château de Beaucastel needs an outstanding Indian summer to hope for an Hommage vintage. The decision thereafter is taken during the blending tastings. 
“When tasting the foudre of Courrieux back in 1989, François and Jean-Pierre were overwhelmed by the outstanding quality and knew that it had to be bottled on its own. Jacques Perrin’s intuition for the best blend from the estate revolved around a dominant proportion of Mourvèdre. As a tribute to their visionary father, they followed his instinct and
dedicated this unique cuvée to him.”  Production remains tiny despite the huge demand for the wine. In recent vintages, production has been around 6,000 bottles per year. The only difference in the vinification process of Hommage versus their other cuvées is an extra six months’ ageing in 4,000-litre foudres. All the winemaking is fairly hands-off, vinifying all the varieties separately apart from the Muscardin, Vaccarèse and Terret Noir which – due to the tiny quantities – are co-fermented. The reductive varieties – Syrah and Mourvèdre – are fermented in open-top wood fermenters and the remaining oxidative varieties are fermented in concrete tanks prior to the all-important blending sessions with the family.  The 2018 vintage has already been fantastically reviewed, awarded a potential perfect 100 points from the Wine Advocate, with reviewer Joe Czerwinski describing it as “full-bodied
but incredibly silky, combining great purity, richness and length into a seamless, elegant package that should give immense pleasure for decades to come.” The success of the 2018 vintage, according to Emmanuel, was “down to the perfect ripening conditions in mid-October, allowing them to bring the grapes of this late-ripening variety in at perfect maturity – 2018 was fantastic for Mourvèdre.” 
The grapes of the Southern Rhône 
Château de Beaucastel proudly uses all 13 permitted varieties of the Châteauneuf-du-Pape appellation. Some even say 18 varieties, since varieties like Grenache, Terret, Clairette and Piquepoul all have a black, pink and grey clone of the variety mixed within the vineyards. “Each variety brings its own attributes that differ depending on the vintage, but also depending on the amount you use or the blend you make,” says Emmanuel. “For example, when you open a young Beaucastel, it’s very Grenache-driven, even when there is a similar percentage of Mourvèdre. It’s only few years later that Mourvèdre will finally come to the
fore, revealing game, leather and savoury characteristics. “Individually, Mourvèdre brings power and structure, but when you open an older Beaucastel it delivers freshness and silkiness. Grenache Noir brings kirsch, plum and cassis fruitiness. Syrah adds color, tannin and spices, and when blended with Mourvèdre and Grenache it
brings truffle notes.  Counoise can be considered the Pinot Noir of Châteauneuf-du-Pape and has a distinctive white pepper note. Cinsault adds freshness, Muscardin and Vaccarèse are very floral and add freshness, Terret Noir is light even in colour and adds acidity. The white varieties of Roussanne and Grenache Blanc bring elegance and freshness. Clairette is very aromatic and brings unctuosity. Bourboulenc adds tension with notes of almond and vanilla, Piquepoul richness and Picardan adds a lot of bouquet.   “For us it is very important to have all the varieties to make an elegant and balanced wine. However, above all, it is the knowledge and the art of blending, passed on from generation to generation of the Perrin family, that is the key to understanding the real expression of Château de Beaucastel terroir.” With experimentation at the heart of the Perrin philosophy, the infinite potential of blends when using so many grapes in the wine keeps the extended Perrin family busy monitoring their blending decisions as the wines develop with age. With the 2018 Hommage, it looks like

The vines are organically-farmed on a 15-hectare estate planted on white marl in the hamlet of Quintaine, just north of Clessé. Jean Thevenet and his son Gautier take their time producing their wines and retain traditional methods passed down from generation to generation. Ever since taking over the family estate in 1972 Jean has never been one to follow trends – keeping yields low (between 35-45 hectoliters per hectare) and picking purely on taste rather than relying on any data analytics from the lab. They have never been afraid to pick later than their peers due to their wines' amazing ability to retain acidity and freshness thanks to their unique marl blanche soils.  Even in a warmer vintage like 2015, Gautier says “you don’t feel the heat, the marl soil always providing a bitterness that offsets the fruit. If anything in 2015 the heat of the vintage has only brought a really incredible structure to the wine.” On tasting, its true – the wine is incredibly rich and fresh and finishes with a wonderful mineral salinity. For now, Gautier has not felt the bad effects of climate change, currently the warmer vintages are just bringing more complexity, structure and richness to the wines. For the 2015s, Gautier picked the grapes on the 17th September, which he states is not that much later than others in the region and perhaps just a week earlier than normal. Over the years he has learnt to trust in his terroir and even with such low yields (three times lower than the limits of the appellation) he needs to give the grapes time to reach optimum ripeness. The art of élevage Using no tricks to speed up the process, the wine ferments at a snail's pace under wild yeasts, producing a unique viscous-like texture and thanks to its distinct marl blanche soils a vibrant minerality and laser-like acidity. Grapes are left to hang on the vines until they are ultraripe. The grapes are then gently squeezed in a Coquard press until every ounce of flavour and all the intensely honeyed aromatics have been harvested. The wines undergo ultra-long fermentation and aged on the fine lees, and held back in the cellars at the domaine's expense, only being released when they are deemed ready to drink. These wines have amazing ageing ability too. Just recently William Kelley (Wine Advocate) talked about how the 1989 Viré-Clessé is drinking at its peak now at 30 years of age. Henri Jayer once said that a winemaker needs a chair. Less intervention, more reflection. This is somewhat mirrored in Jean Thevenet’s motto: “Terroir is to wine what a composer is to music. The winemaker being only the conductor.” In the cellars of Domaine de la Bongran intervention is minimal, with fermentations sometimes taking up to two years. Appellation controversy Despite Domaine de la Bongran being the most respected and appraised wine in the region, at the outset of the newly declared Viré-Clessé appellation in 1999, the wines of Domaine de la Bongran failed to qualify. The excuse from the IANO (administrative body) was that the levels of residual sugar were not considered “suitable” expressions of the region. Under these  new appellation rules the wines had to have a residual sugar level lower than 2g/litre, forcing Domaine de la Bongran to declassify down to Macon Villages. Following the extreme temperatures in 2003 all producers in the region produced wines with residual sugar over 2g/litre and therefore collaboratively put pressure on the IANO to increase the allowance up to 4g/litre allowing Bongran’s Viré-Clessé to qualify under the more premium Vire Clesse Appellation. For a body whose aim is to protect quality, specifically against over-cropping, the initial decision to omit the wines of Domaine de la Bongran seemed extraordinary, although it's fair to say the reputation of the winery precedes the appellation and if anything their inclusion has only elevated the status of the appellation. The wines The Viré-Clessé, also known as Cuvée Tradition, is the principal wine made at the estate, offering rich complexity, freshness and power with finesse. The wine is easily a match for the best of Puligny or Chassagne-Montrachet, they are examples of the heights that can be achieved with traditional winemaking methods. The Cuvée Levrouté (or Levroutee) is their off-dry wine typically around 18g/litre of residual sugar, only made in exceptional years, from part botrytised Chardonnay grapes, adding honey and truffle to the flavour profile. Cuvée Botrytis is a stunning rich sweet wine, coming from principally fully botrytised grapes. The conditions necessary to make this wine is are exceptionally rare, the last vintage being 2006. What the critics are saying: "..one of Burgundy’s greatest winemakers… served blind, tasters tend to think they are Grand Cru white Burgundies from Puligny- or Chassagne-Montrachet." It was a small yellow aphid that disregarded national borders, wiping out the livelihood of every grape grower in its way and there was no known cure nor effective prevention in its first devastating years. Even when a cure was discovered, growers were reluctant – and often financially unable – to use it.  As a result, phylloxera vastatrix  – vastratix meaning ravager – continued to nibble on the roots of vines across western Europe, sucking the lifeblood from the vines and leaving wounds for any passing infection. By 1900, 2.5 million hectares of France's vineyard had been uprooted, causing production to slump, encouraging dodgy dealers to make fake wine, and leading to mass protests.  The story of phylloxera in Europe started as a well-intentioned gift. In 1862, an American grape grower sent some cuttings of native vines to his friend in the Rhône Valley who planted them, unaware of the damage it would inflict on his compatriots. Within a year, local growers were lamenting their sick vines. Phylloxera had wanderlust, sparing no French region; nor did it respect the country's finest terroirs or illustrious châteaux.  However, a concerted national response to the potential ruin of the country's national beverage was not forthcoming. The French government was too busy putting on International Exhibitions in Paris (1867), opening the Suez Canal (1869) and waging war on Prussia (1870-71). In 1870, the government acknowledged there might be an issue, offering a 20,000 Franc reward for a cure. Remedies were offered including burying living toads in the vineyard, adding volcanic ash from Pompeii to the soil or inviting a marching band to play to the vines. Unsurprisingly, the vines continued to die. In 1880, a solution was finally accepted: graft European varieties to the roots of American vines. However, grafting noble French varieties - vitis vinifera - to the roots of these lowly American varieties seemed like sacrilege to many growers. It was thought they would affect the nobility of their precious wines. There was also the issue of cost: uprooting your vineyard, replanting and then having to wait between three and five years for a crop did not feed a family and the concept of state aid was still a long way off.  As a result, many tried to limp on for as long as possible, injecting carbon bisulphide, an expensive and toxic solvent used to vulcanise rubber, into the soil to stave off the inevitable.  The producers in the south of France were the first to be hit in the 1860s and they replanted with high-yielding hybrids. By the turn of the century, the Languedoc was producing more wine than ever before. However, the region's unscrupulous merchants made up for the initial shortfall at peak phylloxera by bulking out grape juice with sugar and water while others made wines from raisins. These practices continued despite the replanted vineyards returning to full production, causing a huge oversupply and depressing prices.  Urged on by a growing labour movement, hundreds of thousands of people took to the streets in 1907 to call for change. The Champagne Riots of 1911 The Champenois followed suit, rioting in the streets in 1911 and the root of their troubles also lay with phylloxera.  In 1892, the Marne was invaded by its first phylloxera aphid and, by 1910, 40% of the region had been affected. But this was no time for production to fall: Champagne sales were booming and to make up for the shortfall, dodgy merchants (and some of the seemingly reputable houses) brought in wines from the Loire and the south of France by the train-load. The wines were made sparkling in their cellars and the bottles emerged, as if by magic, as Champagne. Supply and demand economics suggested that the growers should have been earning more for their fruit as phylloxera affected supply and sales boomed, but fake Champagne kept prices low. Having borne the cost of replanting their vineyards, this was not how growers imagined they would be rewarded and protests ensued.  While most vineyards in Champagne and beyond are now planted on American rootstocks, there are some vines and vineyard owners that play wine roulette and grow vitis vinifera on their own roots. For example, three plots belonging to Bollinger were planted in 1960 in the traditional pre-phylloxera way. One has succumbed to the vine louse but the remaining two parcels are the source of Vieilles Vignes Françaises, a rare Pinot Noir-based Champagne that provides a taste of a bygone era.  We asked Denis Bunner, Bollinger’s Deputy Cellar Master, about the Aÿ-based Champagne House's rarest wine, Vieilles Vignes Françaises, which is produced on its own roots.  Why did Bollinger begin producing Vieilles Vignes Françaises in 1969?  An English journalist Cyril Ray proposed the initiative to Madame Bollinger following a visit in 1967 and this inspired Madame Bollinger to create a wine from the precious vines to commemorate her 70th birthday, which saw the first bottle produced in 1969. The wine was launched in 1974. Are the vines pre-phylloxera? If so, they must be more than a century old. No, the current plots in Aÿ were planted in the 1960s but it is impossible to give an age to the vines due to the perpetual renewal and the way the root system grow [the system is called provignage, which is like vine fostering when there is an empty space to fill. Take a cane from one vine, train it down into the soil and partially bury it with the end sticking out until it forms a separate vine. This is also done in the Nacional vineyard at Quinta do Noval]. There were three plots that weren't grafted but there are now only two. What happened? third plot succumb to phylloxera?  The third plot in Croix Rouge de Bouzy was attacked by phylloxera at the end of the 1990s – the vineyard didn't have protective walls around it. The last vintage was 2004 as we had to uproot it when it fell prey to the infestation. How many acres do the two remaining plots cover?  The Clos Saint-Jacques (Aÿ) covers just over half an acre while the Clos des Chaudes-Terres, which lies within the boundaries of Bollinger’s own lands, covers a little over a third of an acre. In total, they represent 0.36 hectares. Is there anything special about the soil of these two plots that means it resists phylloxera?  The soil is not remarkably different from that in the rest of Aÿ and as per the rest of Champagne it features chalk. Is this special cuvee made every year?  No. Only in declared vintages. What is the average production of Vieilles Vignes Françaises?  This varies by vintage, but falls within the range of 2,000 to 3,000 bottles. Following the release of Bollinger’s latest vintage of Vieilles Vignes Françaises, we talk to Denis Bunner, Bollinger’s Deputy Cellar Master about the Aÿ-based Champagne house's rarest wine, as well as delving into the archives to explore the history of the fatal vine louse.

For the aperitif For Domaine Long-Depaquit’s Matthieu Mangenot it is the energy and power of Champagne Brut Nature Les Marnes Blanches from Jeaunaux-Robin, that makes it his choice at Christmas. “I can't say for sure if it is the 100% Chardonnay selection or the very elegant vinification in Burgundy barrel that is this Champagne’s (hidden) tribute to our region but there is absolutely no ‘make up‘ with this Champagne. With no dosage it is a true expression of Chardonnay and terroir. To me, it is the best sparkling to get you ready for Christmas dinner!”  Klaus-Peter Keller (Weingut Keller) and his family love Champagne Bérèche & Fils or Krug, “but we will definitely enjoy some sparkling wines from Germany too!” he adds. Gianlorenzo di Neri from Montalcino’s Casanova di Neri is also choosing something local, with a 2002 Trentodoc – Giulio Ferrari Riserva del Fondatore, as well as a family favourite, Champagne Egly-Ouriet’s Blanc de Noirs. Saskia de Rothschild (Ch. Lafite-Rothschild) breaks the mould and prefers to drink ice-cold Sauternes as an aperitif rather than sparkling wine. She is still toying on whether to go young or old, deciding between a 2017, an 2007 or 1989 from Ch. Rieussec. The whites White Burgundy seems the overwhelmingly popular choice for the Christmas table. Francisco Baettig (Viña Errázuriz, Viñedo Chadwick and Baettig wines) opting for a bottle of Pulingy-Montrachet Les Combettes from Etienne Sauzet. “I love the elegance and balance of this appellation, and the purity of the wines from this producer.” Neri is saving his last bottle of 2005 Bourgogne Blanc by Coche-Dury alongside a 1991 Terlano Rarita, a Pinot Bianco blend released 25 years after it was made, proving the incredible ageing potential of top whites from Alto Adige. Mangenot has also opted for a rarity for the special day – a magnum of 2012 Nuits-Saint-Georges Blanc from Château-Gris (Albert Bichot). Chardonnay accounts for just 2% of the Nuits-Saint-Georges appellation. “The wine has a lot of richness and a beautiful tension due to the altitude of the vineyards,” says Mangenot: he is pairing it with cod fillet and citrus cream. Keller is bucking the trend and unsurprisingly opting for dry Rieslings, specifically from the 1990s, along with an eagerly awaited bottle of 1959 Mosel Piesporter Schubertslay. In 2008, Keller (although based in Rheinhessen) took over 0.7 hectares of this incredibly steep slope in the Mosel and he is using his Christmas dinner to do some research on this Mosel site with some serious bottle age. The reds Keller is not holding back on the reds: he’s got a 1966 Ch. la Mission Haut-Brion and a 1991 Clos de la Roche Grand Cru from Hubert Lignier lined up. Gianlorenzo di Neri is also opting for a Clos de la Roche, although his is a 2006 from Armand Rousseau. At the Neri household they love to compare Grand Cru Burgundy with their Brunellos, “It should be amazing to taste our 2006 Tenuta Nuova alongside.” Beyond Brunello and Burgundy, they will also be enjoying some top Nebbiolo, but it’s not an easy choice. “For Barolo we love so many producers, Elio Grasso’s Runcot – 2008 should be delicious now – or possibly Giacosa’s 2007 Barbaresco Asili Riserva.” For Mangenot, “The middle of winter is a good period to open a bottle of sunshine like Cornas Vin Noir 2012 from Domaine du Tunnel (my wife loves it!) – concentration, density, beautiful complexity, silky tannins… And a bunch of aromas that turns your dinner into a summer journey in a convertible car with your nose in the wind!” Beattig is also opting for Northern Rhône Syrah from his favourite producer Pierre Gonon, a Saint-Joseph. “I love the complexity of aromas, the spiciness. The structure of the wine, but at the same time the polished tannins. The mix of freshness, complexity and depth... love it.” At the Rothschild household it will of course be Lafite: “1988 or/and 1996: two absolute favourites of mine these days,” Saskia explains. “The 1988 is pure Lafite, extremely complex and evolving and the ’96, thanks to its perfect balance, is just so easy to drink that you’ll finish the bottle without even noticing it.” Jean-Guillaume Prats (CEO of Domaines Barons de Rothschild Lafite) is staying pretty loyal too, opting for Pomerol’s Ch. l’Evangile 2010. To finish Finally the sweets and fortifieds: there is never a better time to open aged Ports to go with the cheese and desserts of Christmas. For Lafite’s Jean-Guillaume Prats it will be Dow’s 1977 – in his words, “perfection”. Mangenot is also going for Vintage Port: Graham’s Quinta dos Malvedos 2001, “to go with a homemade chocolate mousse, and the rest of the bottle definitely to enjoy slowly by the fire with the family… Fruits, flowers, creamy character, it is a treat for the nose and the palate I wouldn't miss it at any price.” Keller decides on the sweet wines more spontaneously: “One of our favorite combinations is matching 40 and 50-year-old Ausleses with game dishes. It can taste so great. The anticipation is already great.” If fortifieds are not your thing, then take Jean-Sébastien Philippe of Lafite’s recommendation: he’ll be having a glass (or two) of Cognac de Lafite Très Vieille Réserve. What winemakers are drinking this Christmas

“I want to struggle,” says Cristiana Tiberio, earnestly, as we talk in London. This Abruzzo winemaker has rapidly become one of Italy’s most fashionable names. Thanks to her hands-off approach in the winery, she’s a darling of the natural wine scene, but is also earning top scores and rave reviews from the likes of Eric Asimov (The New York Times), Antonio Galloni (Vinous) and Ian d’Agata. But, as I found talking to her, she’s far from complacent.  Cristiana fell in love with wine as a teenager. Her father, Riccardo, was friends with Bruno Giacosa and the legendary Piedmontese producer’s wines were her favourites. She noticed early on that wines made with the same grape from different sites tasted totally unlike each other. “Wine was an infinity world,” she tells me, still with a touch of whimsy – and it was a world that she set her heart on exploring. When the time came, she set off to study chemistry at university – looking to the science behind wine rather than more practical oenology. Before she knew it, however, she’d been diverted, ending up with a PhD in photochemistry, far from “the infinity world” she’d committed to. So she quit. Instead, she travelled the world, working with various top producers, including Jacques Selosse, Nicolas Joly, Egon Müller and leading names in Chablis, before returning to Abruzzo in 2004.  In the meantime, her father Riccardo had found a special parcel of land in the mountains near the town of Cugnoli, with an abandoned plot of Trebbiano Abruzzese – the indigenous grape that had largely disappeared from the region. With its large, juicy berries and thin skins, this variety is more susceptible to fungal disease, can be challenging to ripen and lose its bright acidity if not picked at the perfect moment. Trebbiano Toscano (ubiquitous across much of Italy, and in France under the guise of Ugni Blanc) had replaced many plantings – favoured for its small berries, ability to accrue sugar easily and retain its moderate acidity.  This abandoned vineyard had survived largely because of its unique site – with canyons to the south and west, meaning a wind blows through the vines constantly, clearing the humidity and reducing disease risk. It was also planted in the traditional Abruzzese pergola system, with two vines planted at each post, wider (four-by-three-metre) spacing, providing competition but also forcing the branches to grow longer, meaning a larger canopy, aiding photosynthesis and therefore ripening. Now 95 years old, these ungrafted vines had also endured thanks to their fortuitously sandy soils (a neighbouring plot, on marly clay, had to be replanted on rootstock, and is now around 80 years old).  While the Trebbiano Abruzzese was the lure of this site, much of the property Riccardo purchased was unplanted. Today, Tiberio has 30 hectares of vines, all in one contiguous parcel – with additional woodland, as well as alfafa and wheat fields, all part of the family’s championing of biodiversity. And, as much of the area hadn’t been planted, the property hadn’t suffered from industrial farming – meaning the soils were already healthy, however preserving it is at the forefront of what Tiberio does.  The vineyards are divided between Trebbiano Abruzzese, Pecorino and Montepulciano – a fraction of the various grapes permitted in Abruzzo, but – importantly for Cristiana – the ones that were historically native to their mountainous terrain. They only planted with massal selections – something Cristiana feels is key. She argues that clones sourced from vine nurseries are designed to be planted anywhere, sacrificing anything “native” in the name of disease resistance and/or yield. “For me, historical heritage is everything in the wines,” she explains. On a more practical front, she finds that massal selections cope better in difficult vintage conditions, adapting more easily. As evidence, she points to a plot of ungrafted vines that she planted in February of this year (2024), explaining how despite the extremely dry conditions, the vines survived – entirely unirrigated.  While Cristiana clearly values the traditional pergola training, she has chosen to use guyot training for most of their vines. The old vines – largely used for Fonte Canale and Archivio – are under pergola, however she doesn’t feel it’s right for everything. When it comes to Pecorino, she explains how the variety naturally grows vertically, meaning pergola-training would force the vine into an unnatural shape, impact sap flow, and therefore quality. As for Montepulciano, while they have 2.5 hectares (used for Archivio) under pergola, she feels that the pergola system can push the grape’s rustic character – the thin skins with less phenolic ripeness (due to shading) at risk of producing more easily extractable, less refined tannins. For her, guyot elevates the flavour profile of the grape and helps balance the potentially aggressive tannin, avoiding it being too “loud”.   Cristiana’s brother Antonio is in charge in the vineyards, where they work organically. They briefly trialled biodynamics, however have veered away from using the preparations, along with any fertiliser or seeded cover crops – keen to avoid adding any outside inputs that aren’t “respectful of their terroir”, as Cristiana puts it. The winemaking continues this philosophy, with indigenous yeast, almost no new oak across the range (just 30% for the Archivio bottling), the wines unfined and unfiltered, largely avoiding temperature control where possible, and SO2 only added at bottling.  Although organic, they aren’t certified – something she feels strongly about. She explains how both dedicated, small growers and “big, industrial” producers can bear the same certification, while one’s farming is considered and artisanal, yet the other is borderline conventional. It “certifies our attitude and we stay lazy”, she tells me. “We stop struggling with our mind to find what is better for our terroir,” she says – something that she is anxious to avoid, keen to continue striving, pushing and working to do better, rather than tick a box and move on.  And that work is not merely intellectual. Having just finished harvest in Abruzzo before touching down in London, she was soon flying off to Oregon – squeezing in a second northern-hemisphere vintage at a property there. It’s a chance to learn, and few 50-year-olds seem to be quite as restless as this one. While Tiberio is a family venture, it’s not one that was passed through the generations – something for which Cristiana is grateful; she has been able to choose her site, choose the wines she’s making and define her own philosophy – one that is now resonating loud and clear around the world.  The Tiberio range  The regional wines  Trebbiano d’Abruzzo: Tiberio’s entry-level Trebbiano Abruzzese comes from three hectares of 75-year-old pergola-trained vines, those that were grafted 14 years after their oldest (dedicated to Fonte Canale). Only made with free-run juice, it’s fermented and aged in stainless steel.  Pecorino Colline Pescaresi: The vine material for their Pecorino was selected from a few old vines on the site, but comes from a 3.8-hectare plot planted in 2001 and guyot-trained. Only made with free-run juice, it’s fermented and aged in stainless steel. These are some of the oldest Pecorino vines in the region and the wine is unlike the modest Pecorino you may have previously tasted – ageing impressively.  Cerasuolo d’Abruzzo: This rosato is very special. It comes from nine hectares of Montepulciano, planted in 2001 and Guyot-trained. Made with free-run juice (with no maceration whatsoever) and only seeing stainless steel, it’s a perfumed and bright style of rosé that can and should age.  Montepulciano d’Abruzzo: This is the largest production cuvée, coming from 15 hectares of Montepulciano – both older pergola-trained vines (62-year-old) and younger Guyot (planted in 2001). As with the other entry-level wines, it only sees stainless steel, spending 15 days on skins.  Single-vineyard bottlings  Fonte Canale: Arguably Tiberio’s most sought-after wine, Fonte Canale is pure Trebbiano Abruzzese from 736 ungrafted, 95-year-old vines, spread across around two hectares of sandy soils. (They currently aren’t replanting the individual vines when they die, as don’t want to plant grafted stock, but are cautious of fragile young ungrafted vines attracting phylloxera.) It was first made in 2012, with these ungrafted vines needing time to recover from their previous neglect. The combination of site and variety produces wines with modest alcohols (often 12-12.5%) and naturally low pH (the 2018 is a mere 2.7pH!), giving a backbone of taut acidity (as Tiberio says – “not raw, but flavourful acid”). The site’s indigenous yeast produces a cool ferment (reaching maximum 23̊C) and a wine that doesn’t need racking post ferment, with little reduction. The malolactic is naturally blocked by the low pH and the wine only sees stainless steel – “to allow this wine to express its meaning”, Cristiana says. This stunning, vibrant white is a pure expression of a special site – one that ages beautifully, with its old vines almost overpowering vintage. If any further praise were needed for this wine, it has featured on the list at Massimo Bottura’s Osteria Francescana since its first release.  Colle Vota: First bottled separately in 2014, this vineyard is always the last to be picked. Planted in 2000 with massal selections from their old Montepulciano and guyot-trained, Tiberio finds the berries have thicker skins but release less during maceration (around 20 days). She also finds the tannins in the stems different here so is using a small portion of whole-bunch fermentation in the blend. Again with only free-run juice, the wine doesn’t see any oak whatsoever. Coming in a Burgundy-shaped bottle, this is the lighter of Tiberio’s two Montepulciano bottlings, but still with a firm tannic backbone, but with more delicate perfume.  Archivio: Launched in 2017, Archivio comes from the property’s 60-year-old pergola-trained Montepulciano on clay-rich soils, where the wind helps thicken the skins. Tiberio finds that the fruit has thinner skins from the middle of the pergola system, so these bunches are harvested separately. With thinner skins, the ferment has more lees and more reduction, needing oxygenation, so this is the 30% that goes into new oak to give it the necessary air. The bolder and firmer of the two Montepulciano bottlings, it is bottled in a Bordeaux-style bottle to indicate its ageing capacity – a wine that Tiberio confesses can be “monolithic” in youth, but offers great potential.  And coming soon… Quarmarì: A new single-vineyard Pecorino from 2023, this wine takes its name from the family dog, who passed away a few years ago. The wine has – so far – only been tasted by Ian d’Agata, who wrote that it is “a wine so amazingly good and unique that it will shatter all you thought you knew about the grape and what it can deliver”. Given how good even the entry-level Pecorino is, we can’t wait to try this.  The vertical tasting Pecorino  2006 Pecorino Colline Pescaresi: It’s hard to believe this is close to two decades old – the wine vibrant, lively and juicy with lean lemon freshness to the palate. There’s a suppleness to the body, yet it’s taut and mineral, and more honeyed and herbal notes emerging with air.  2009 Pecorino Colline Pescaresi: The 2009 Pecorino is instantly open, giving sage, thyme and honey on the nose, alongside fresh white peach. On the palate, however, it shows its restraint – still fulsome but with a mineral backbone that makes it feel youthful.  2013 Pecorino Colline Pescaresi: Leesy and mineral, this is almost reminiscent of mature Chablis or Blanc de Blancs Champagne – with a honeyed, chamomile edge. The palate is waxy and long, with a herbal lift to the finish.  2015 Pecorino Colline Pescaresi: There remains a creaminess to the nose here – the wine tighter than the 2013, with a limey, lean purity and plenty of energy.  2019 Pecorino Colline Pescaresi: This is strikingly different after the 2015 – much riper and more exotic, with apricot, peach, mango and orange peel. Combined with the wine’s viscosity, there’s something Viognier-like, however there’s still brilliant, mineral energy here, with tight, citrus-edged acidity.  Cerasuolo d’Abruzzo  2022 Cerasuolo d’Abruzzo: It will be amazing to see this wine develop. The nose is restrained – you can feel the potential behind. Gradually wild strawberry and bright raspberry emerge, alongside delicate rose petal florals. It’s tightly wound with immense energy to the flinty palate, a minerality driving through its core into the long, mouthwatering blood-orange finish.  2020 Cerasuolo d’Abruzzo: Deeper-coloured than the 2018, the 2020 has a brighter nose – with raspberry sherbet, strawberry laces and a creamy richness. The acidity again is in the driving seat, the palate chalky and mineral with lemon freshness and a slight phenolic grip that frames the crunchy red fruit.  2018 Cerasuolo d’Abruzzo: A surprisingly deep pink (especially given this is made only with free-run juice), with a copper hue. This was a real highlight of the tasting. The nose combines a flinty minerality with a funky, savoury, almost cheesy note, alongside dried cherry and rose florals. The palate has a line of bright acidity and a mouthwatering lemon finish. Very serious rosé that deserves bottle age.  Fonte Canale  2021 Fonte Canale: From a very dry growing season, this is such a baby. The nose is mineral with notes of pear skin, white florals, lime pith and cordial, with riper apricot emerging. It’s vibrant and full of tight, lemony acid, driving on to the chalky finish. Precise and pointed, there’s crisp apple and herbal freshness, with a saline edge.  2020 Fonte Canale: At first with a touch of gunflint reduction, the smokiness gradually lifts to reveal a tight and lean expression of Trebbiano d’Abruzzese – all citrus and mineral, needing time and air to reveal itself fully.  2019 Fonte Canale: The nose here combines vibrant green apple, greengage and lemon with a sea-spray freshness. It’s still limey and tight on the palate, but with a soft, full weight too – with generous yet tangy, white-pear fruit on the mid-palate, before tightening up on the saline, mineral finish.  2018 Fonte Canale: Dried herbs mingle on the nose with more hedonistic fruit – peach and green mango,, with real weight to the fruit here. There’s still the bite of piercing lemon acidity, surrounded by fleshier peach fruit.  2017 Fonte Canale: This feels much more closed in comparison to the 2018, with pure citrus energy, tangy, pure and limey, but with a slight creaminess mingling with the tart fruit. It’s concentrated and full of promise, but not giving much away now.  2016 Fonte Canale: Waxy and bright, the 2016 is full of energy. Pure flint, Meyer lemon and grapefruit pith, with more delicate white florals all vie for attention, while the palate is all about pure crunchy apple, minerals and its vibrant acidity.   2015 Fonte Canale: The nose here is complex – with notes of honey, chamomile, tarragon, bruised apple and a praline richness. The palate, meanwhile, feels brilliantly youthful, with lime sherbet and chalky minerality driving long into the mouthwatering finish.  2014 Fonte Canale: This was closed at first, with subtle floral tones of apple blossom and honeysuckle dancing on a background of lemon and pear flesh. The palate has that familiar drive of acidity leading into the impressively long, saline finish.  2013 Fonte Canale: Fresh cashew mingles with lemon sherbet on the subtle nose of the 2013, a wine with lift and energy. The palate is lively and long, with the finish offering honey, herbal notes and sweet hay.  2012 Fonte Canale: The first ever vintage of Fonte Canale, it was a real treat to try this special wine. The nose combines rosemary and thyme with candied lemon peel, as well as more honeyed notes. The palate is lithe and vibrant still, with a stony purity and saline finish.   Colle Vota  2020 Colle Vota: This combines juicy dark fruit, sweet spice, baked plum and violet florals. Rich black and red cherry fills the palate, with an edge of dried herbs and the scent of nutmeg. The tannins are savoury and firm, with a chalky freshness and zesty edge to the acidity.  2019 Colle Vota: The 2019 offers floral lift, with brighter cherry and raspberry fruit. Less savoury than the 2020, the palate is tight and mineral, yet with a softness to the mouth-filling fruit, all cut by juicy acidity.  2018 Colle Vota: This is drastically different to the 2019, offering an aromatic profile of baked strawberry and tea leaf – almost lapsang souchong. The chalky minerality stands out here, with high, piercing acidity giving the wine backbone.  2014 Colle Vota: There’s a significant colour change moving from the 2018 to the 2014 Colle Vota, while the nose reinforces this shift with leather and damp undergrowth sitting alongside dried red fruit. The tannins have softened and are supple, while the acidity still refreshes and cuts through the fruit.  Archivio  2020 Archivio: Savoury and rich, this is a powerful, dark, compact Montepulciano d’Abruzzo that needs time. It is intense and structured, full of tight bramble fruit and drying tannins, but with an impressive line of acidity at its core.  2019 Archivio: This is much more open than the 2020, with a sweeter, more red-fruited profile, and more overt sweet spice. Dried herbs and incense complement the bramble fruit. There’s a firm chalky grip to the tannins, tightening up as the structure announces itself on the palate, yet with mouthwatering acid keeping things balanced.  2018 Archivio: The sweet, baked red fruit of the vintage seems to carry through both of the reds in 2018. There’s a softness to the fruit, yet still power behind. It’s full-bodied and firm, yet the most approachable of the trio of 2018, 2019 and 2020, with fresh, juicy acidity.  2017 Archivio: There’s a touch of maturity just starting to show here, with the first hint of sousbois and leathery richness, an almost tarry character, sitting alongside the sweet plum, baked blackberry and smoke. Few people have been lucky enough to be as immersed in Burgundy’s finest wines as Martin Donatsch. His father bought a pallet of top Burgundy, including those of Domaine de la Romanée Conti (DRC) and Armand Rousseau, every year from the early 1970s onwards. Martin’s birth in 1978 – a fantastic vintage in Burgundy – only encouraged his father to buy more, and Martin, now in his early 40s, has been enjoying wines from the family collection ever since. Just last week, he uncorked a 1978 DRC Echézeaux. This immersion has provided him with an extraordinary understanding of Chardonnay and Pinot Noir – something that has doubtless helped him become one of the world’s great emerging winemaking talents. Donatsch is one of a small number of producers growing Pinot Noir, Chardonnay and the native Completer grape in Bündner Herrschaft in Switzerland. This tiny Swiss valley, for the time being, remains largely unknown – but, as Donatsch certainly believes, it may just be one of the world’s last great regions for fine wine production.The altitude (500 to 700 metres above sea-level) sees the vines flower a week later than is typical in Burgundy, yet picking dates are three to four weeks later. This provides a much longer growing season, allowing for complex flavours and aromas to develop in the grapes. Despite the altitude, the grapes reach good levels of ripeness thanks to the warm, dry wind – known locally as a “foehn”, that sweeps through the valley. Unlike Burgundy, autumns here are dry, so there is rarely pressure to pick before rain arrives, allowing for additional hang-time. The altitude keeps the acidity high, offsetting the naturally slightly higher alcohol (typically around 14%), meaning the wines never feel overly alcoholic. While Bündner Herrschaft has been home to Pinot Noir since the 15th century, Donatsch – now in the hands of the fifth generation – has pioneered the quality revolution in the region. Martin’s father Thomas Donatsch was not only the first to – then illegally – plant Chardonnay in 1975, but also the first to introduce French barriques to Switzerland, influenced by his vigneron friend André Noblet, the winemaker at Domaine de la Romanée-Conti from 1945 to 1986. In the early 1970s, Thomas – a young 20-year-old about to take on the family winery – set off to learn from the best. Obsessed with Burgundy from a young age, he knocked on the door unannounced at Domaine de la Romanée-Conti. In a fortuitous set of circumstances, Noblet had just returned from his first ever holiday (in Gran Canaria) and the first extended time away from his beloved wines. He had missed his wine cellar so much during the trip, he couldn’t wait to return. Finding the young Donatsch sitting by the door and desperate to reacquaint himself with his wines, Noblet invited Thomas to spend the afternoon with him tasting the different cuvées from barrel. Martin believes his dad gained Noblet’s trust by initially criticising DRC’s Montrachet 1968. Tasting the wine Donatsch reportedly said, “There is no way this wine could come from the great Montrachet!” A little precocious, perhaps: fortunately Noblet agreed it wasn’t his finest vintage, but the result of experiments in the winery. It was the beginning of a lifelong friendship, with Donatsch returning to the DRC cellars every year. On each visit, Noblet would always pour him a glass of Montrachet 1968 and ask his opinion before tasting any of the other wines. It wasn’t long before Donatsch was buying a pallet of Grand Cru Burgundy every year (at that time a bottle of La Tâche was just over £35 a bottle). Noblet also started to help Donatsch improve his Pinot Noir – first by giving Thomas his first three French barriques. These weren’t just any old barrels though, they had previously held La Tâche and were made by François Frères – who at the time had just two customers, Domaine de la Romanée-Conti and Henri Boillot. Donatsch took the barrels back to Switzerland, and the winery has been using François Frères barriques ever since. I asked Martin why the introduction of French barriques in Switzerland was such a revolution for the region. At the time, he says, the Swiss wine schools were obsessed with cleanliness – teaching the importance of filtering wines, using protective winemaking methods and using stainless steel tanks even for the red wines. The use of barrels was the opposite; it meant no additional filtering and a more oxidative environment. Donatsch believes the introduction of barriques around the world revolutionised fine wine. Angelo Gaja was the first to do it in Italy; Torres the first in Spain; Mondavi in the US; and Keller in Germany. But Thomas Donatsch was doing this 10 years before any of them, thanks to the influence of André Noblet, as well as Jean-Bernard Delmas – the winemaker at Château Haut-Brion, another of Thomas Donatsch’s influential friends.  Speaking with Martin Donatsch, you can’t help but feel he has got all his priorities in order. The small size of his winery means he can control every aspect of production, while benefitting from the variety that a life in wine can offer. Producing just 35,000 bottles a year means that when he is not in the vineyard tending his crop, he is in the winery, or fulfilling orders and redesigning his website (graphic design is another passion of his). Being one of the country’s most prestigious winemakers he sells his wine into the country’s top restaurants and luxury hotels, who can’t get enough of his wine. Donatsch’s annual release of wines sells out in just hours. While this is a great sign of his talents, it is also why many people outside of Switzerland have never heard of, let alone experienced, the world-class Pinot Noir and Chardonnay from the winery. Despite the demand for the Donatsch wines, there are no plans to expand: firstly because the authorities won’t allow it, but second because Martin loves the “human” size of the business and doesn’t want to lose that. Martin is, however, keen for more people outside of Switzerland to taste them. Beyond the tiny volumes that make it as far as export, to source these extraordinary wines you’ll have to (when one can) visit the winery yourself.
