We can't ignore what is going on in Europe and the rest of the world right now. After four weeks in lockdown, how are you and your team coping? Can you still work in the vineyards? 
The rhythm of life in the countryside has always been slower compared to the cities, so we are quite used to living a bit far from the modern rush, even if we are worried and we read and follow the news. Mother Nature keeps rolling and we follow the cycle of vineyards with precautions and care of our people: we just finished the pruning and today we had a snow storm that nicely covered our vineyards before Spring arrives. 
Do you have any advice for those of us just starting quarantine? Well, after 15 days of quarantine we have seen that the most important thing is to feed our souls with good food and good wine! We Italians are spending time slow cooking old “grandma” recipes and baking cakes and of course drinking fantastic wines. What are the latest updates at the Aurora winery? All the refurbishments of the historical building are in standby because of the lockdown but the winery is active. We are currently blending our 2018 Testamatta and Colore, released in September 2020.  Italian fine wine has been going through the most amazing renaissance, certainly helped by some fantastic vintages. In your opinion, what have been the key reasons behind the rise in quality? Italy is a beautiful country that has one the highest number of indigenous
varieties in the world which gives us an amazing rainbow of different beautiful wine expressions. If you blend this with the “passion” for what Italians are very well known for, the result will be an amazing and fascinating wine scene that’s seducing more and more wine lovers. On top of this we have been blessed with three top vintages in the last four, 2015 and 2016 are probably within the best I have ever made, the purity of the grapes results in a perfect balance between elegance and structure. And then the magical 2018, I still remember the beauty of the vineyards and my decision to let the vines grows without any human interaction.  The result today is wine with incredible perfumes and freshness, rich of finesse and fruit that definitely position this vintage amongst the greatest I've made. Fermenting the wines in barrel is a key element to Testamatta and Colore. What does this method bring to the wine? The first reason why I came across this vinification method is because of my vineyards: I’m
totally in love with old vines and today I have the biggest collection of rare and beautiful vineyards in Tuscany. Working with such old vineyards means you have to think out of the box, each single vine is followed individually and the harvest proceed plant to plant, parcel to parcel filling one barrel after the other. The result is amazing, from one vineyard of Sangiovese we can obtain multiple expression of Sangiovese, one for each barrel and each one with different nuances and shades. So when at the end of the aging we start blending
these barrels, the magic happens, you can imagine the complexity and the layers of the wines! 
What vintages are you enjoying to drink right now?  2016 vintage has been austere and full of richness since the vinification, now after almost 4 years from the harvest it is my favourite wine glass to enjoy what Sangiovese, Canaiolo and
Colorino can do in Tuscany. Every time I open a bottle I’m impressed! What other wines are you enjoying in your confinement?  During our steady lockdown we can’t move and shop, so I’m forced to dig into my private cellar and open some very old bottles of Colore and Testamatta. I also found a couple of old cases of 20 year old Champagne which found its way to our table but also enjoy our

Making Champagne is different. More than any other wine, it’s a long-term game. The region’s cellar masters don’t see the fruits of their labour for years, even decades, depending on the wine; their work closer to that of a master distiller rather than most winemakers.  “It humbles you – you are not the superstar. The superstar is definitely the Champagne,” Elise Losfelt – who took over as Cellar Master at Champagne Charles Heidsieck earlier this year – tells me. She has just done her first blends for the prestigious House, with wines selected by her predecessor, Cyril Brun – and those blends won’t be tasted by the rest of the world for as long as eight years, when it comes to the vintage wine.   With three young children (aged three, four and six), Losfelt’s home life is very much about the here and now, but the world of Champagne gives her the chance to slow down; “Putting myself in a timeline – not just in today,” she explains. Losfelt has big shoes to fill, following in the footsteps of Brun, who arrived at Charles Heidsieck in 2015 and helped steer the House into a new, more prosperous era, including the re-introduction of the property’s Champagne Charlie cuvée. He has since caused a stir in the world of sparkling wine by being the first Champenois ex-pat to move to Italy, taking on a new role at Ferrari (one of the top names in Trento DOC).  Similarly to Brun (who came from Veuve Clicquot), Losfelt arrives from one of the Moët Hennessy properties, Moët & Chandon. Also like Brun, wine runs in her blood – she’s the seventh generation to make wine, with her mother at the helm of the family estate, Ch. de l’Engarran in the Languedoc.   Losfelt spent over a decade at Moët & Chandon, a business which became “a place that feels like family”; but when the phone rang and it was a job offer from Charles Heidsieck… “I had to grab it,” she tells me. Not only has she always loved the Charles Heidsieck Champagnes, but it was over a glass of 1995 Blanc des Millénaires that she and her husband first connected, back in 2014.  For the majority of her time at Moët & Chandon she was the Head of Vinfication, preparing the wines for the cellar master, responsible for much of the winemaking – almost everything but the final blend. It was the scientific side of winemaking that had attracted her originally, but the lure of this unexplored artistic side of the job, combined with her emotional tie to the wines, made the opportunity impossible to resist. It was, as she told me, time to leave her “first family” to take on a new challenge.   For her, Charles Heidsieck stands apart from others for its endless complexity. “It’s a Champagne that doesn’t offer you just one facet, doesn’t offer you just one aroma, or just one characteristic of aromas… it’s everything together,” she explains. While the brief for something like Moët Impérial is to craft a consistent and fresh, vibrant wine, her brief at Charles Heidsieck is for “profoundness”. Even at the non-vintage level, she is looking for wine that would meet many Houses’ vintage standards; the aim is to consistently exceed quality expectations.  Talking about trends in the region today, I enquired whether there were any plans for Charles Heidsieck to follow in the footsteps of Louis Roederer, Krug or Jacquesson – creating numbered non-vintage releases, highlighting the base vintage and variation between years, rather than the consistency historically seen as desirable. There are no plans for imminent changes, but the House has – since the 1990s, under Chef de Cave Daniel Thibaut – had the “mis en cave” date, the year in which the bottle was laid down in the cellar for secondary fermentation to get underway. As for adding tirage or disgorgement dates: “This is a question for me in five years,” Losfelt says, with an unrushed shrug.  For this new Chef de Cave, it is only the beginning – with much to learn, test and try before any changes are made. Losfelt’s job is a little like the now-famous Patek Philippe advert, she tells me; she’s just keeping the seat warm for the next generation, inheriting the work of her predecessors and creating the tools for those that will follow her. As she tells me, “Every step of the way, one choice makes a difference.”  As we await the first releases bearing her fingerprint, there’s no doubt she’ll be working tirelessly to preserve and further Charles Heidsieck’s legacy. “Until it’s tasted, and it's good, I will not rest,” she says, a clear sense of responsibility for the weight on her shoulders. Looking out across the Côte d’Or, the astute might notice a few more gaps amongst the rows of vines than normal. Dig a little deeper, listening to nervous murmurs in cellars around the region, and you’ll hear that there’s trouble below the surface – with a once-favoured rootstock the culprit.  We like to imagine the life of a Burgundian vigneron as one of the happiest in the world; a bucolic existence in the vineyards, or else surrounded by casks, vats and bottles of their gorgeous bottles. We rather enjoy the product ourselves – despite the occasional irritations of a corked or otherwise flawed bottle resulting in a failed experience. Still, the only loss is of that specific bottle. Sometimes there can be clouds in a vigneron’s life, storm clouds. A hailstorm might destroy the crop in one sector of a vineyard: that cuvée disappears off the map for a whole year, the vigneron’s work for the season destroyed in a single half hour. Or, though we have not seen this for many years, an entire vintage may be compromised by torrential rain throughout the harvest. It is hard to imagine what it can be like to lose a whole year’s crop in one go, but how much worse must it be when there is an existential threat to the life of the vine itself. Two recent threats have been the disease esca, known as the black goo in some parts of the world, and flavescence dorée. Both can bring rapid mortality to individual vines, but can be treated. Now there is a new and insidious problem to contend with: one of the key rootstocks widely used in Burgundy seems to be giving up on the job. The 161/49C rootstock has been the favourite for a generation here. The C stands for Couderc, specifically Georges Couderc who bred this rootstock as far back as 1888, shortly after it had become apparent that only vines grafted on to American non-vitis vinifera rootstocks could resist the phylloxera beetle. It is a Berlandieri x Riparia cross, designed to be relatively resistant to active limestone (very important in Burgundy), and is not over-productive: indeed, it has been such an obvious choice for producers looking for quality over quantity that it has been exceptionally widely planted in Burgundy of late. But 161/49C is giving up on its job. The failures were first seen in the south and south-west of France, and are now widespread in Burgundy. The damage was mostly done with more recent plantings: which may have given rise to the theory of the rootstock having intrinsically degenerated. However, another explanation has emerged, that the younger vines do not have deep enough root systems to be able to search out underground water, whereas the old vines with established root systems appear to be able to carry on serenely. The story is still unfolding and I doubt that we have all the answers yet. I learn from Pl@ntGrape that 161/49C is theoretically relatively resistant to drought, a view which may very well be changing. Whereas discussions with vignerons a few years ago were based around the assumption that this rootstock which had been so good was suddenly failing, as if it had run out of energy entirely or else the mother plant had contracted some sort of disease, the view most commonly heard is that this rootstock cannot manage the new hotter, drier conditions. In almost every cellar, a question about 161/49C yields a glum response. Yes, we are suffering. At first vignerons pulled out damaged vines and replaced them individually, but when each following year the losses multiplied further, the bullet of ripping out the whole plot has to be bitten – demoralising, expensive and with repercussions for years to come. You need to leave the plot fallow for at least two years (wise old heads say five to seven years) before replanting. The first mini-crop arrives three years later and the vine does not really reach maturity for 20 years. Antoine Jobard is pulling out a plot of Meursault Genevrières that he only planted in 2017. Cyrielle Rousseau adds an additional nuance: a plot of Clos de la Roche recently replanted with three separate clones, all on 161/49C rootstock is suffering much worse in relation to one of the three clones compared to the others. A further headache is that it is not clear what to plant instead. Among its close siblings – other Berlandieri x Riparia crosses – are 420A, 5BB and Teleki 5C which are all now being widely trialled in place of 161/49C: but the worry persists that these too may develop the same issues. Others are looking at 41B – quite widely used in Chablis – which dislikes drought but does not die of it according to Roger Saumaize (Pouilly-Fuissé), or 3309 which is tricky where there is a high active limestone content. François Lumpp in Givry has switched to 363 Montpellier though he noted pithily (and I have cleaned it up a bit!), “When you buy stuff that’s rubbish, you find out too late: whether it’s the cork, the barrel or the cuttings from the nursery.” Solutions will be found: a rootstock that can cope with drought, doesn’t mind a bit of limestone, is later rather than earlier ripening, and allows the vine to deliver fine quality grapes. Auditions are being held now! One thing is sure – smart producers are going to hedge their bets by settling on a mix of different options, to avoid having all their grapes in one basket. The root of the matter

Few people have been lucky enough to be as immersed in Burgundy’s finest wines as Martin Donatsch. His father bought a pallet of top Burgundy, including those of Domaine de la Romanée Conti (DRC) and Armand Rousseau, every year from the early 1970s onwards. Martin’s birth in 1978 – a fantastic vintage in Burgundy – only encouraged his father to buy more, and Martin, now in his early 40s, has been enjoying wines from the family collection ever since. Just last week, he uncorked a 1978 DRC Echézeaux. This immersion has provided him with an extraordinary understanding of Chardonnay and Pinot Noir – something that has doubtless helped him become one of the world’s great emerging winemaking talents. Donatsch is one of a small number of producers growing Pinot Noir, Chardonnay and the native Completer grape in Bündner Herrschaft in Switzerland. This tiny Swiss valley, for the time being, remains largely unknown – but, as Donatsch certainly believes, it may just be one of the world’s last great regions for fine wine production.The altitude (500 to 700 metres above sea-level) sees the vines flower a week later than is typical in Burgundy, yet picking dates are three to four weeks later. This provides a much longer growing season, allowing for complex flavours and aromas to develop in the grapes. Despite the altitude, the grapes reach good levels of ripeness thanks to the warm, dry wind – known locally as a “foehn”, that sweeps through the valley. Unlike Burgundy, autumns here are dry, so there is rarely pressure to pick before rain arrives, allowing for additional hang-time. The altitude keeps the acidity high, offsetting the naturally slightly higher alcohol (typically around 14%), meaning the wines never feel overly alcoholic. While Bündner Herrschaft has been home to Pinot Noir since the 15th century, Donatsch – now in the hands of the fifth generation – has pioneered the quality revolution in the region. Martin’s father Thomas Donatsch was not only the first to – then illegally – plant Chardonnay in 1975, but also the first to introduce French barriques to Switzerland, influenced by his vigneron friend André Noblet, the winemaker at Domaine de la Romanée-Conti from 1945 to 1986. In the early 1970s, Thomas – a young 20-year-old about to take on the family winery – set off to learn from the best. Obsessed with Burgundy from a young age, he knocked on the door unannounced at Domaine de la Romanée-Conti. In a fortuitous set of circumstances, Noblet had just returned from his first ever holiday (in Gran Canaria) and the first extended time away from his beloved wines. He had missed his wine cellar so much during the trip, he couldn’t wait to return. Finding the young Donatsch sitting by the door and desperate to reacquaint himself with his wines, Noblet invited Thomas to spend the afternoon with him tasting the different cuvées from barrel. Martin believes his dad gained Noblet’s trust by initially criticising DRC’s Montrachet 1968. Tasting the wine Donatsch reportedly said, “There is no way this wine could come from the great Montrachet!” A little precocious, perhaps: fortunately Noblet agreed it wasn’t his finest vintage, but the result of experiments in the winery. It was the beginning of a lifelong friendship, with Donatsch returning to the DRC cellars every year. On each visit, Noblet would always pour him a glass of Montrachet 1968 and ask his opinion before tasting any of the other wines. It wasn’t long before Donatsch was buying a pallet of Grand Cru Burgundy every year (at that time a bottle of La Tâche was just over £35 a bottle). Noblet also started to help Donatsch improve his Pinot Noir – first by giving Thomas his first three French barriques. These weren’t just any old barrels though, they had previously held La Tâche and were made by François Frères – who at the time had just two customers, Domaine de la Romanée-Conti and Henri Boillot. Donatsch took the barrels back to Switzerland, and the winery has been using François Frères barriques ever since. I asked Martin why the introduction of French barriques in Switzerland was such a revolution for the region. At the time, he says, the Swiss wine schools were obsessed with cleanliness – teaching the importance of filtering wines, using protective winemaking methods and using stainless steel tanks even for the red wines. The use of barrels was the opposite; it meant no additional filtering and a more oxidative environment. Donatsch believes the introduction of barriques around the world revolutionised fine wine. Angelo Gaja was the first to do it in Italy; Torres the first in Spain; Mondavi in the US; and Keller in Germany. But Thomas Donatsch was doing this 10 years before any of them, thanks to the influence of André Noblet, as well as Jean-Bernard Delmas – the winemaker at Château Haut-Brion, another of Thomas Donatsch’s influential friends.  Speaking with Martin Donatsch, you can’t help but feel he has got all his priorities in order. The small size of his winery means he can control every aspect of production, while benefitting from the variety that a life in wine can offer. Producing just 35,000 bottles a year means that when he is not in the vineyard tending his crop, he is in the winery, or fulfilling orders and redesigning his website (graphic design is another passion of his). Being one of the country’s most prestigious winemakers he sells his wine into the country’s top restaurants and luxury hotels, who can’t get enough of his wine. Donatsch’s annual release of wines sells out in just hours. While this is a great sign of his talents, it is also why many people outside of Switzerland have never heard of, let alone experienced, the world-class Pinot Noir and Chardonnay from the winery. Despite the demand for the Donatsch wines, there are no plans to expand: firstly because the authorities won’t allow it, but second because Martin loves the “human” size of the business and doesn’t want to lose that. Martin is, however, keen for more people outside of Switzerland to taste them. Beyond the tiny volumes that make it as far as export, to source these extraordinary wines you’ll have to (when one can) visit the winery yourself. The high life: Martin Donatsch

“Meet my girlfriends,” calls Telmo Rodríguez down the phone, laughing as he flips his camera to show two enormous shaggy-haired mutts. The skies are crisp and blue on the other side of the screen, the sun beating down on Remelluri, his family estate in Rioja Alavesa. The camera swings across the horizon as he introduces me to one of his team before rushing indoors to sit down for our call. There’s an almost frenetic energy to Rodríguez – and that energy is what in many ways defines the maverick winemaker, who has been one of the transformational forces in Spanish wine.  His parents purchased La Granja Nuestra Señora de Remelluri – a farm that has been home to vines since at least the 14th century – in 1967. Growing up on this special property, young Rodríguez went off to study winemaking in Bordeaux, then trained at properties including Cos d’Estournel, Domaine de Trévallon, Chave and more. He returned home inspired and excited to use his new-found knowledge on the family property in the early 1990s. But his father didn’t welcome Telmo’s ambition: the market didn’t want great or even good Rioja, he told his son – the market wanted cheap Rioja. Although he wasn’t allowed to make changes to the red, Rodríguez was given free rein to create the property’s first white wine. And that wine rocketed him to fame. White Rioja has always been niche (today just 9% of the vineyard area is planted to white grapes), but in the 1990s its future was looking uncertain – with the traditional, oxidised style of wines such as López de Heredia’s Tondonia Blanco fallen from grace, and many producers had given up on making these wines (as with CVNE’s Monopole Clásico, which has since been revived). Rodríguez wanted to create a wine of place, rather than a wine of style, and used complex field blends planted at higher altitudes to do so. Fermented and aged in a combination of tank and oak, Remelluri Blanco was unlike any other wine in the region. Robert Parker wrote of the 1996 vintage that it was “the finest white wine [he had] ever tasted from Spain”. The multi-variety blend doesn’t include the region’s trademark white, Viura, and is technically illegal – a fact that perhaps has only increased its appeal.  But Rodríguez was frustrated by his father, by the limitations put on him and his wines. Restless and with a rift in the family forming, he flew the coop to focus on his own project. In Bordeaux he had become friends with a fellow Spaniard, Pablo Eguzkiza, who had been working at Pétrus, and together they had already started making wine – beginning with an old-vine Garnacha from Navarra in 1994. With that wine, Compañía de Vinos Telmo Rodríguez was born.  Their vision was to make real Spanish wine – the wines that had been made before, as they saw it, France started to sway the industry. When the deadly louse phylloxera had swept through France in the late 19th century, killing its vineyards, the nation looked south, across the Pyrenees to Spain. Producers travelled there to make wine and feed demand, and Rioja in particular saw an influx of business and money – but this uplift also came with French influence. In Rodríguez’s view, this was the ruining of the trade – Rioja, which had once been a wine of site, became a wine of oak. And soon, across Spain, the variety that once defined its many regions was being over-written with international varieties. Spain became known for cheap wine – and producers were racing to the bottom.  “The worst are the British,” says Rodríguez. “They say they know Rioja and they know Sherry, but, in a certain way, the British market killed Sherry and killed Rioja because they are very happy to have a cheap Reserva for a few pounds.” The dominance of what he describes as “industrial brands”, the larger houses that buy in fruit from across the region, aged in American oak for “traditional” styles, and French for “modern”, is abhorrent to him.  “I’m sorry, you don’t know anything about Rioja. Tell me one village. Tell me one taste. Tell me one landscape. Tell me one mountain. Nobody knew anything,” he says. He explains how Labastida – a village neighbouring Remelluri – was once the Vosne-Romanée of Rioja, home to 330 different wine producers in 1680. But over the years, that history has been blended away.  Together, Rodríguez and Eguzkiza set out to uncover and reveal the Spain of yesteryear, working with old vines, native varieties and traditional methods to champion what they saw as the true Spanish wines. From their beginnings in Navarra, they looked to Arribes del Duero, to Rueda, to Málaga, to Aragon and back to Rioja, then Ribera, Toro and Sierra de Gredos.   “Now we are showing what is real,” Rodríguez tells me, with a sense of satisfaction. In Rioja, for example, they created Bodegas Lanzaga in 1998, looking to focus on the terroir around the town of Lanziego. The Consejo (regulatory body), however, didn’t allow them to use the name of a village on the label until 2017. For almost two decades they protested this rule, featuring the name on the label, but redacted (inspired in part by the art of Jenny Holzer). Today, there is a clear, and growing, movement of producers looking to focus on single-site expressions of Rioja’s best vineyards, shifting away from cross-regional blends and the dominance of oak. This echoes what is happening elsewhere in Spain, as producers focus on indigenous grapes and identifying what makes each of its varied regions unique. It’s a revolution – one that Rodríguez has been at the forefront of. It's easy to think of this rockstar duo as flying winemakers – having so many projects scattered around the country, only touching down briefly to sign off on blends before they’re off to their next event. While inevitably their schedule is intense, their focus is firmly in the vineyard and on reflecting each individual place and site – rather than crafting a range that speaks of their influence. “It’s a very honest approach to a place,” Rodríguez says. The references throughout our conversation only emphasise this: Burgundy, the ultimate “terroir” wine, is where he finds his inspiration; while the Super Tuscans are repeatedly scorned for their internationality.  Matallana is quite possibly Telmo Rodríguez’s most ambitious project to date. He and Eguzkiza first made wine in Ribera del Duero in 1998, and have slowly built up 21.5 hectares of vines around the region.  “My dream was to do a very good Vega Sicilia. I wanted to do the Vega Sicilia that I used to drink in the past,” explains Rodríguez, talking about bottles from the 1940s, ’50s or ’60s. Back then, he says, it wasn’t an estate wine but fruit was sourced from around the region. For him, Vega Sicilia is now too “Bordeaux-style”. He argues that while in Rioja the soils are quite consistent, Ribera del Duero is incredibly varied. They have chosen to work with a range of vineyards across five villages – Sotillo de la Ribera, Roa, Fuentecén, Fuentemolinos and Pardilla – ranging from quartz-rich or pebbly soils reminiscent of Châteauneuf-du-Pape to chalky albariza and clay-heavy sites. This diversity is what helps bring complexity to the wine, with each one producing a different expression of Tinto Fino.   The work involved in each of the Compañía de Vinos Telmo Rodríguez projects is painstaking, tracking down special parcels, reviving soils and replanting or grafting where necessary, working organically and biodynamically, to achieve the quality they’re looking for. For Bodegas Lanzaga, for example, it was over a decade before they produced the first vintage of their top wine, Las Beatas, from a 1.9-hectare plot of the same name (first made in 2011).  For Matallana, they wanted to track down the region’s very best, historic vineyards in each of the five villages. But it’s not been easy. All too often they’d been abandoned, some needed re-planting entirely, or otherwise re-grafting with massal selections, and serious work to bring the soils back to life. They wanted to work with unirrigated bush-vines and field blends – vineyards farmed as they might have been in the 19th century. And then there’s the complex ownership: to buy just six of their 21.5 hectares took seven years, purchasing tiny plots from 40 different families.  Although they’ve been making wine here since the 1999 vintage, it wasn’t ready until relatively recently – and Rodríguez considers the 2014 the first “real” vintage of the project. Before that point they had made three wines, a selection of fruit from the oldest vines that went into the “Grand Vin” Matallana, a second wine M2 and the unoaked Gazur from younger plots. “They were prototypes, we were learning,” explains Rodríguez. From 2014, there is only one wine, with a change in the label to reflect the shift.  As with the older vintages from Bodegas Lanzaga, the label shows a list of redacted vineyard names – which are still not permitted to feature on the labels in Ribera del Duero. “All those vineyards are the guarantee of the purity of our wines,” says Rodríguez. In fact, the label is embossed, so beneath the censored text, you can feel the names of these terroirs. He’s moved to reduce the oak, using some foudres and tinajas (amphorae), while also acknowledging that the wine needs movement and oxygen to polymerise the tannins. The result, however, is a more delicate wine. At the end of the day, he says, “We don’t care about the winery… our wine is the landscape, is the soils.” The difference between the “new” and “old” Matallana is striking. The 2020 is pure, vibrant – a mineral wine with crystalline fruit that speaks of place.  “I don’t want to be pretentious, but we want to create another iconic wine from Ribera del Duero,” says Rodríguez. There’s no shortage of ambition here – and they’re looking to increase production to around 40,000 bottles a year (up from around 25,000 currently). “It took us 25 years… but we knew we were doing something rare, different.” The latest move has been to partner with Jean-Guillaume Prats (currently of Ch. Léoville Las Cases, previously of Ch. Lafite Rothschild and Cos d’Estournel), and start distributing the wine via La Place de Bordeaux, to bring the wine to an even bigger audience.  Rodríguez is now 61 – but there’s no sign of him slowing down. “People say that I’m too old to plant vineyards,” he says, clearly finding such a thought absurd. He’s just planting three hectares he tells me – vineyards that will be amazing, he feels, maybe in 15 years’ time. On the day we talk, he had five local youths coming to meet his team, the children of local viticulturalists in Labastida; they’d be making wines together with the best 2,000 kilos from each of their family’s plots – a project that has been going four years. Sauternes might be the most distinctive wine on the planet. Its combination of power, unctuosity and aromatic complexity is unparalleled. These extraordinary wines consistently compete with the finest wines made anywhere in the world. But unlike most wines of the world, Sauternes’s journey from vine to bottle is a tumultuous affair. Typically, over half the crop is sacrificed in order to reach the heady levels of complexity the region is famous for. The journey from berry to bottle is one of the most fascinating molecular transformations and one of wine’s greatest miracles. Bérénice Lurton of Ch. Climens describes the process “as a sacrifice, death and resurrection all in one. It is like the rising of the phoenix,” she says. “Within the process of the grapes’ destruction is the ability for transcendence and transmutation into something else, something beautiful.” Every Sauternes vintage is a rollercoaster ride of unknowns – one that would leave most vignerons at the end of their tether. “All the rules you know about wine production: forget about them,” Lorenzo Pasquini – who recently arrived at Ch. d’Yquem – says. The grape’s reaction to its terroir, to humidity, to the process of noble rot: it’s all a gamble and, often, a gamble you lose. No one understands this game of chance better than Bérénice Lurton. The crop at Ch. Climens has been decimated in the last few years. She hasn’t made a sweet wine of any volume for five vintages in a row. Frost has become the biggest threat of late, completely wiping out the most recent 2021 crop as well as 2017. The severity of the damage to the vines in 2017 encroached on 2018 too, where coulure (poor fruit-set) and mildew also dwindled production to zero. In 2019 it was the attack of the drosophila fly that destroyed almost the entire crop, and in 2020 it was hail’s turn to wipe out production. No one in Sauternes is left untouched by the risks involved. Once – and if – your crop survives, there are several key elements to a successful vintage in Sauternes. Pasquini thinks it is best to think of Sauternes as having two ripening phases per season. The first is like any other wine region: the maturation of the grapes. The varied terroir here plays its role. The gravel and clay soils at Yquem, for instance, are vital in reducing the vigour of the vines, naturally producing small bunches of concentrated fruit. Pasquini remembers being taken into the vineyard to try the grapes when he first arrived at Yquem. “It was just incredible how tasty they were,” he says. This concentration is an essential part to the finest Sauternes. At Ch. Doisy-Daëne and Climens, it is Barsac’s limestone soil, which brings added florality, salinity, freshness and aromatic complexity to the final wine. This first phase of ripening will determine the style of vintage (rather than the final quality). Lurton describes how 1997, 2002, ’04 and ’07 were all dull summers in Bordeaux; while not great for the region’s reds, they were incredible vintages for Sauternes. The cooler temperatures produced a brighter, more acidic style with great tension. The development of botrytis following this was a great counterbalance, adding richness, intensity and aromatic complexity. “But it doesn’t have to be a cool vintage in Sauternes to be a great one,” says Lurton. Dry, sunny years like 2005, ’09 and ’15 produced a richer style of wine – with botrytis only adding to the opulence and richness of the year. Once the grapes have reached maturity, and only then, do vignerons pray for botrytis to arrive. “The botrytis plays two roles,” says Ch. Doisy-Daëne’s Jean-Jacques Dubourdieu. “Most famously it is known to digest the skin of the berry and this allows for the water evaporation from the berry, and therefore concentrates the sugar in the grape.” But Dubourdieu believes its second role is just as important, but less well known. “The botrytis causes a chemical reaction in the berry. As a way to fight the botrytis, the berry produces precursor aromatics in the grape. Depending on the maturity of the berry when the botrytis arrives, this directly affects the concentration of aromatic precursors produced.” The magic number for Dubourdieu is a potential alcohol level of 13%. “If the berry is at this level of maturity, it can produce up to 50 times the number of aromatic precursors than less mature grapes.” Once the botrytis sets in, the vignerons then pray (and there is a lot of praying) for another dry period in which the grapes can further concentrate under the effects of botrytis. This is where the wind – a key feature of Sauternes’s microclimate – becomes vital. The wind can quickly concentrate the grapes – but, depending on the varying exposures and terroirs within the region, different styles of botrytis aromatics and flavours develop adding even more complexity to the wine. “Having more botrytis grapes to choose from, creates more flavour complexity in the final blend,” says Pasquini. This is, in many ways, Yquem’s greatest asset – with 113 hectares under vine. In some vintages, quality botrytis might only be successful in one part of the vineyard, but in a great vintage there is opportunity to blend the different botrytis styles from across different microclimates for a more complex expression. This is what brings such variation in style from château to château, and vintage to vintage. Production in the last few years has been on a worrying sliding scale. The sacrifices made seem to be greater with every vintage. For a winegrowing region whose fortunes are so much in the hands of Mother Nature, is Sauternes at risk? Is there a danger that we will lose the unique conditions necessary to make these unique sweet wines? For Dubourdieu, the warming climate has, on the contrary, brought many benefits. Firstly, the grapes much more often reach 13 degrees potential alcohol before botrytis sets in, meaning there are more years in which he can craft “great” wine. His biggest concern, however, is that the climate is pushing the onset of botrytis later and later. “The 2020 is a perfect example of this,” he explains. “The grapes had reached significant maturity by the end of August, but botrytis didn’t arrive until mid-October.” The dry, warm, sunny September held off any onset of botrytis. “The danger of this is if botrytis comes too late, there won’t be enough power from the sun to concentrate the berries through the all-important evaporation process. Also there is the risk of the acidity dropping too.” Beyond mid-October, if no botrytis has formed the whole vintage could potentially be lost. Fortunately this hasn’t yet been the case, but 2020 came close – and it could become more of a threat in the future. “For now, the issue is quantity, not quality,” says Dubourdieu. “The increased levels of mildew in the summer, the hail and the spring frosts – these are our concerns.” Sauternes has had a long line of great vintages, however volumes have been decimated. Whatever the appetite in the market is, there is very little Sauternes available from the most recent vintages. There’s often a question over the appeal of these luscious wines – but Sauternes production is so limited that its audience can only ever be small. Yquem, Climens and Doisy-Daëne all describe themselves as guardians of this unique craft, rather than vignerons feeling commercially pressured to produce a drier style in greater volume. They know that for many wine enthusiasts drinking Sauternes is not a regular occurrence – but they want it to be one of the most memorable wine experiences of their lives when they do. And that’s the magic of these wines. Despite the low volumes, Pasquini, Dubourdieu and even Lurton are optimistic about Sauternes’s future. Quality has never been better and they’re in a long-term game: they look at yields over 20-year, not five-year, cycles. There is a new buzz coming from a rise in tourism in the region, while the spirits industry’s recent interest in Sauternes barrels for cask finishing is yet another alternative income (with old barrels selling for five or six times more than they bought them for), not to mention the publicity – bringing Sauternes to a whole new range of potential consumers. Unfortunately, 2021 is looking like another miniscule vintage for the region and that’s even before botrytis has arrived. But not even this dampens Dubourdieu’s mood: “If you want to control everything, you certainly wouldn’t be a vigneron. As a vigneron you learn to live with uncertainty.” For Lurton, “Living with such uncertainty keeps your feet on the ground.” As the region continues to develop, their experience of uncertainty and necessary sacrifice, Lurton believes, means Sauternes “will never lose its soul”.
