The 2007 Chateauneuf du Pape offers up aromas of dark cherries, violets, spices and pepper. Denser than the 2011, it’s medium to full-bodied, satiny and harmonious, with silky tannins and a tense, delicate mid-palate. Bright acids and chalky dry extracts contribute to a long, ethereal finish, making it a beautifully structured and elegant Châteauneuf-du-Pape that could age for an additional 10 to 15 years.
