The 2009 Côtes du Jura is the traditional blend of 80% Chardonnay and 20% Savagnin aged for one year in topped up barrels, and the rest of the time aged under a veil of yeasts. This has already been bottled for a couple of years, and has developed more aromatic complexity and stronger aromas of curry, green nuts and mushrooms. The palate is quite sharp, like the yeast had eaten the glycerin, and leaves a mineral, chalky and saline finish. I tasted a 1986 and it was superb. Apparently they have changed nothing, and if this 2009 ages in the same way, my rating (and drinking window) will surely be too conservative.
