The 2007 Blanc de Blancs La Bolorée is another wine that is ready to drink now, but for different reasons than the 2006. Baked apple, flowers and tropical overtones all develop nicely. Ultimately, the 2007 is a wine of contrasts. It shows the natural complexity of a Champagne with bottle age yet is also marked by a slight vegetal note that gives the wine an unexpected touch of freshness. All things considered, the 2007 has held up well. It is nowhere near as impressive as it was in its youth, but it is also not oxidized nor mushroomy. Naturally, the structure of the very best years is missing. “I have had two really tough vintages at Roses de Jeanne: 2001 and 2007. In 2007, it was cold, rainy and we had some hail. It is my least favorite Bolorée,” Bouchard adds.
