Pale, bright green-tinged yellow. Captivating, brisk aromas of flowers, pepper and spearmint oil. Firm and bracing, with very intense flavors of underripe pit fruits, gooseberry, minerals and licorice. Builds slowly toward the back and really saturates the palate and olfactories on the long finish. Dense but not hard, even if it's painfully young.
