The 2017 Brut Millésime Exception is a blend of 60% Pinot Noir and 40% Chardonnay, 40% of base wines were fermented and aged in large foudre. Toasted linseed bread and Golden Delicious apple shine on the nose, adding highlights of Mirabelle. The mousse is both fine with small bubbles but very sprightly. The palate is a lovely and balanced synthesis of lemon freshness, wheat crust and smooth creaminess. The finish holds subtle miso and umami. A wine of refreshment and harmonious substance.
