Purity of fruit rings out in a subtle way with flowers, sliced al dente apples and a citrus undertone. Showing hints of stones and fresh herbs on both the nose and palate, it’s full-bodied with so much depth and focus. Tight center palate and a long, intense finish. Needs time to open. Best after 2027.

The 2023 Chevalier-Montrachet La Cabotte Grand Cru gets my nod for king of the cellar chez Bouchard this year, wafting from the glass with aromas of pear, honeycomb, white flowers, buttery pastry and freshly baked bread. Full-bodied, satiny and layered, it's suave and seamless, with a concentrated core of fruit, lively acids and a long, mouthwateringly mordant finish.

As usual, the 2023 Chevalier-Montrachet La Cabotte Grand Cru is more succinct on the nose, with hints of wax resin and green olive infusing the citrus fruit. It gradually unfolds with more walnut and hazelnut scents. The palate has exquisite balance, just the same intensity as the previous vintage but more pixelation, particularly toward the finish. Very long and tender, this is an outstanding La Cabotte.

An attractive lemon colour, more graciously scented than the regular Chevalier. This is much more even right across the palate with a velvet texture on top of the bed of limestone. Here the real class shows through in all departments. Struggles to decide if it is Chevalier or Montrachet. Sensual and strict at the same time.
