The 2015 Chablis Séchet Vieilles Vignes 1er Cru has a pleasant white peach and orange pith bouquet that is very flattering, ergo très Vaillons! The palate is well balanced with a fine bead of acidity and a pleasant saline touch that gets the saliva flowing. In fact, this is actually more 2014 in style than 2015 thanks to its nervosité . Recommended. Tasted blind at the annual Burgfest tasting.

(bottled in April of this year): Bright light yellow. Musky, reduced scents of fresh apricot, smoke and earthy minerality. Tactile, brisk and energetic, showing a touch of saline minerality to its slightly exotic stone fruit flavors. The yield here was higher than in Montée de Tonnerre--about 45 hectoliters per hectare. This concentrated, broad wine finishes with a touch of warmth and less class than the scintillating 2016 version.

The 2015 Chablis 1er Cru Sechet, which sees no wood contact, shows just a touch of reduction on the nose, although it is simpatico with the fruit. There are subtle notes of white chocolate, walnut, a hint of dried quince and dandelion. The palate is well balanced with a fine bead of acidity, touches of clementine and dried apricot leading to an understated but focused, precise finish. Perhaps this is one of Billaud’s more approachable 2015s?
