Score 88/100 · Drink 1998-2003, Pierre Rovani, Feb 1998
The Chablis Vaillons reveals an attractive lemon drop and liquid mineral-infused nose and a bone dry, crisp, beautifully ripe, medium-bodied, and lively personality packed with chalk, lime and grapefruit flavors. Drink it between now and 2003. Importer: Eric Solomon's European Cellars, New York, NY; tel (212) 924-4949.

Orange zest, pear and a suggestion of dried apricot on the slightly leesy nose. Rich and rather glyceral in the mouth; a fairly round, textured style of Chablis despite its steely spine, but the acidity seems a bit disjointed today. Give this a couple years of bottle aging.
