The 2011 Extra Brut Oeil de Perdrix is 75% Pinot Noir and 25% Chardonnay, done with a light pressing (but no maceration) on the Pinot, which gives the wine its color. Hints of cranberry, white pepper, lime and mint emerge with some coaxing, but like so many wines in this vintage Oeil de Perdrix offers only modest depth and complexity. Dosage is 2 grams per liter. Disgorged: March 2015.

The slightly orange-colored 2011 Oeil de Perdrix Millésime Grand Cru Extra Brut offers an intense, but somewhat greenish flavor on the nose. This has great finesse and lightness, but also intensity and character on the palate; it is a little bit austere in its very firm character, but it still has great length and complexity. This is a highly interesting "Rosé" that's still very young, but promising. Champagne freaks should have a look. Pair it with food. Great tension and complexity.
