Disgorged in the winter of 2021, the 2017 Champagne Abyss was stored at 60 meters deep, requiring divers to be careful with the movement of the caves. The nose is profound and layered with notes of custard, saline, and lemon bars, and it’s intense and long on the palate, with deep flavors. Pure, crystalline, and distilled with a lot of tension and life, it’s packed with electric energy and is a superb wine for the vintage. Drink over the coming 20 years.

Coming from three terroirs with chalky soils, the 2017 Champagne Millésime Abyss Brut Zero is always equal parts Pinot Noir, Meunier, and Chardonnay, and following disgorgement, this wine was rested in the ocean off the coast of Brittany for 10 months at 60 meters below the surface. It opens to beautiful aromas of saline layers and fresh croissant, as well as notes of honeydew melon and fresh flowers. Medium-bodied, it has a delicate mousse, a balanced feel, and a chalky finish, with long persistence and a profound texture. Drink 2024-2044. 2 grams per liter of dosage.

The 2017 Brut Zéro Abyss is made from equal parts of Pinot Noir, Pinot Meunier and Chardonnay was disgorged in October, 2021 without dosage and submerged in the cold Atlantic at 60 meters of depth to age for ten months in the sea. Gentle, fresh lemon blends with raw, bubbling yeast dough on the nose. The palate has the rounded generosity of 2017, a fine mousse and finishes in savory, Pinot-led freshness with just a touch of salty maple-syrup savor. Zero dosage.
