As the tasting progressed and Kagami warmed up, he kept going for more and more bottles, sometimes older vintages, like the 2014 Sonorité du Vent Chardonnay, which at the time, got two years of élevage and was bottled at the end of 2016. 2014 was a cold year, but the wine shows more development (this is the Chardonnay from a slightly warmer terroir) and a more Mediterranean profile, with notes of pollen and dry flowers. It has contained ripeness and around 12.5% alcohol, and the palate is livelier than expected, sharper, with lots of salinity, narrow and faintly nutty in the style of an older Burgundy (some of us thought of Robert Ampeau separately by coincidence!).
