A bright straw/yellow hue, the 2012 Champagne Dizy- Corne Bautray is beautiful on opening, with a floral perfume as well as detailed notes of lemon custard, fresh brioche, sweet citrus, salted pineapple, and red apples. Made entirely from Chardonnay from vines planted in 1960, it gains in intensity throughout the palate, with incredible mineral drive and lasting persistence to its driving notes of Meyer lemon. It has a profound structure, with broad-shouldered feel, and yet it has both focus and sapidity, while the mousse brings out that little touch of spice on the palate. This is not a typical Blanc de Blancs, but it sure has a lot to offer, including the potential for real longevity. Drink this over the coming 20 years.

The 2012 Extra-Brut Dizy Corne Bautray bristles with energy and tension. Long aging on the lees and bottling with no dosage result in an unusually stark, reticent 2012. There’s a ton of vibrancy, but all of that is bundled together, wrapped around a core of steely fruit that should start to emerge in another few years’ time. This potent, vinous Champagne just needs time to come together fully. I find the no dosage style a bit too severe in this bottling, although a few hours of aeration helps quite a bit. Disgorged: March, 2021.
