Before it closed, Waterford released this combination of three biodynamic single farm origin whiskeys aged just over 5 years. This has an alliaceous nose of lemongrass, ginger root, chive, lime zest, fruit teas, Granny Smith apples, jalapeño peppers, and pickle juice. It’s an easy drinking, signature Waterford pour with pear, white grape, lemon peel, and light cream poured over fruit salad, rounding out with grapefruit juice in a creamy, mouth-coating finish. Biodynamic barley is “like muck and magic” according to one of Waterford's farmers, but a compelling nose of ripe pear, blossom honey, butterscotch, floral notes, orange peel, and dry spices is the reward for their efforts. Assisted by a cask mix that includes port, amarone, and Chateau Lafite Rothschild, this drinks exceptionally well without water and supplies flavors of sweet citrus, orchard fruit, clove, pepper, and Whoppers.
