Bottled in July 2010 and disgorged in May 2016, Dosnon's NV Alliae Brut Nature is a blend of Côte des Bar Pinot Noir and Chardonnay in equal parts. Fermented and aged in oak, the wine opens with a smoky, slightly oxidative and chalky bouquet that reminds me of smoked scamorza or provolone and also Jura wines. There are dried mushroom flavors here as well. Full-bodied, intense and fresh on the palate, this is a very elegant, pure, delicate and, most of all, rich and complex cuvée with a long, structured finish with some iodine flavors. Impressive in its style, finesse and elegance, this should be an excellent wine with food. Tasted July 2018.
