Colere – from the Latin “to cultivate” – has been 10 years in the making. The team has broken away from tradition to create a varietal-specific American single malt – a true product of the Pacific Northwest. Edition 1 is made with a six-row winter barley, Alba. The intention throughout the process is to preserve its natural character, including maturing the spirit only in older barrels.

The nose is mellow and slightly smoky, confectionary powder, lemon peel, ripe melon, and layered sweetness. On the palate it’s sweet, almost syrupy, but balanced by heat and lots of spice. The finish is mid-length with light candle wax, light smoke, flavorful grain, vanilla, and melon fruitiness. A Sauternes-like sweetness that sometimes teeters toward being too much, but is checked beautifully by its spice, complexity, and balance.
The nose is fruity with notes of candied pears, clementine, and watermelon, then nutty with aromas of marzipan, nougat, and pistachio. Water brings out Cocoa Krispies and fruit cocktail. A lush palate delivers more sweet and syrupy fruit accentuated by white pepper and peanut butter crackers. That sweetness continues through to the finish which evokes black and white cookies. 700 ml (3,000 bottles)

Westland is an American single malt distillery founded by Matt Hofmann and Emerson Lamb in 2010. Their aim is to produce the most authentic Pacific Northwest single malt without age specificity.
