Aromas of green apple, white flowers, oyster shell and beeswax introduce the 2019 Chablis 1er Cru Montmains, a medium to full-bodied, satiny and incisive wine that's quite tightly wound, built around tangy acids and chalky dry extract. This Montmains retains a very classic profile in this ripe vintage.

Bought-in fruit. Cask sample. Ripe and lemony. Lots of fruit here but also high-acid tension. Still identifiably Chablis but more focus on the fruit – ie more open – than on the stony character. Mouth-watering and minerally finish. (JH)

Samuel Billaud started making wine under his own name in 2009, but he is one of the most experienced producers in Chablis, having made wine in the region since 1985.
