Notes of citrus oil and crisp yellow orchard fruit mingle with nuances of saffron, anise, dried white flowers and warm bread in a complex bouquet, introducing Lassaigne's 2012 Brut Nature Blanc de Blancs Clos Sainte-Sophie, a full-bodied, layered and concentrated wine that's deep and muscular, with racy acids and a finish that's simultaneously intensely saline and searingly chalky. The 2010 was raised in the same Burgundy, Cognac and the Jura that produced the inaugural 2010 rendition.
