The whites tend to spend one winter in topped up foudres and a second one in barriques that are not refilled. The current 2014 L'Etoile is the basic white produced exclusively with Chardonnay and is from a cooler year, which seemed to have a lighter effect of the veil of yeasts, built around freshness and minerality rather than volume. It has settled down already and has good complexity. Long and fresh. I'm sure this is going to be long lived in bottle. 20,000 bottles produced.
