Made from 50% Pinot Noir and 25% each Chardonnay and Meunier, the NV Champagne Cordon Bleu Extra Brut pours a medium straw color and is delicately savory on the nose, with notes of toasted bread and baked apples. Medium-bodied, it offers a fluffy, pillowy mousse and a silky texture, and it’s elegant and accessible. Drink now or over the coming 4-6 years. Disgorged March 2023; 4 grams per liter dosage.

Like the corresponding Brut, De Venoge's NV Cordon Bleu Extra-Brut is a blend of 50% Pinot Noir, 25% Chardonnay and 25% Pinot Meunier from around 20 different villages. This bottling is based on the 2010 vintage, and it was disgorged after five years—in March 2016—with a dosage of 3.5 grams per liter. The wine has an intense citrus color and opens with a stunningly dense, fresh and complex bouquet with ripe white fruits, lovely brioche, Turkish honey, almond and wet limestone flavors. It is pure, fresh and intense on the palate, highly elegant and finessed but also quite rich and pretty complex in the finish where some After Eight notes are also added and intermingled with lemon flavors. This is an excellent effort in the Cordon Bleu range, and I'd love to have it with oysters and seafood. Tasted November 2017.
