The 2015 Chablis 1Er Cru Les Fourneaux comes from vines between 15 and 35 years old, about half of those grapes are destined for the Vieilles Vignes bottling. Matured entirely in stainless steel, it has a lively Granny Smith and smoke-scented bouquet that feels focused and vibrant. The palate is well balanced with a fine bead of acidity, with citrus in the mouth and a pinch of white pepper and fennel towards the finish. I appreciate the joie de vivre of this Fourneaux, and it comes recommended.
