The first vintage produced under the guidance of the late Frédéric Panaïotis, the 2007 Dom Ruinart Blanc de Blancs, disgorged in November 2017 with a dosage of five grams per liter, continues to show beautifully. It unfurls from the glass with aromas of chestnut, spring blossoms, burnt buttered toast and grapefruit, mingling with subtle flinty nuances. On the palate, it is medium- to full-bodied, tensile and precise, with an elegant muscularity and its mouthwatering acidity propelling it toward a long, saline and delicately toasty finish. Panaïotis once likened the 2007 to the 1988 vintage, anticipating it would need time to unveil its full potential—a foresight since vindicated, as the wine today remains vibrant and structurally complete, yet without tipping into austerity.

The 2007 Dom Ruinart (magnum) is in a gorgeous spot right now where it is just starting to open. If anything, the magnum lags the 750ml bottle at this stage in terms of its development, which is of course to be expected. I admire the textural resonance here.

The 2007 Dom Ruinart is a stunning, stunning wine. It is also incredibly tight today. Bright acids and beams of minerality infuse the 2007 with remarkable energy and pure cut that carries through to the impossibly long finish. Lemon confit, marzipan, dried flowers, white pepper and a touch of reduction all develop with a bit of time in the glass. The 2007 Dom Ruinart is the first vintage made entirely by Chef de Caves Frédéric Panaïotis. In his debut vintage, Panaïotis took Dom Ruinart, which has traditionally relied on a relatively high percentage of Chardonnay from the Montagne de Reims and tilted the balance to 75% Côtes des Blancs and 25% Montagne de Reims fruit, while also lowering the dosage significantly. As for the wine, it is breathtaking. That's the good news. Readers will have to be patient, though, as the 2007 needs time to be at its very best. Disgorged: November, 2017.

The 2007 Dom Ruinart is the first vintage made entirely by Chef de Caves Frédéric Panaïotis, which shows just how long the production cycle is in Champagne. A striking, tightly-coiled wine, the 2007 Dom Ruinart will leave readers weak at the knees. In this vintage, Panaïotis took Dom Ruinart, which has traditionally relied on a relatively high percentage of Chardonnay from the Montagne de Reims and tilted the balance to 75% Côtes des Blancs and 25% Montagne de Reims fruit. As a result, the 2007 is much more chiseled and steely than is the norm. The citrus, slate, crushed rock, white pepper, mint and floral notes really sizzle in this powerful, dramatically rich Champagne, with bright saline notes that add freshness and vivacity to the striking finish. The 2007 is a stunning Champagne by any measure. Although it is very early, the 2007 has the potential to go down as one of the great Dom Ruinarts. It is every bit that special. Dosage is under 5 grams per liter, a pretty striking change from the 2006, which was closer to 10. Readers who can grab the 2007 won’t want to miss it.
