The 2013 Les Chamois du Paradis, a vineyard planted with Chardonnay in 1949 where the soils are rich in clay and limestone, is usually one of the lightest whites with some 12.5% alcohol (the Chardonnays range between 12% and 12.5%); like most of the white wines, it is kept in topped up barrels for two years before bottling. There is more depth and complexity tasted next to the Florine, with notes of waxy apples and more complete ripeness, still vibrant and with great acidity; it is long and quite compact with a very tasty finish. A great showing today.
