A fascinating animal-mineral savor, pleasantly akin to sweat, serves for tangy invigoration and mouthwatering salinity. This savor, like the wine’s bright citricity, checks and complements its sweetness on a sustained finish. There is likely to be some genuine excitement as this matures, though I can pretend to little experience with older Wittmann Auslesen.
