Three 1995s from Dujac all paired beautifully with our steamed bass (Bar de Ligne). The 1995 Clos Saint Denis was the most delicate and forward of the group. Dried cherries, flowers and spices all suggested the wine was close or perhaps slightly past peak. The 1995 Bonnes Mares was decidedly masculine, with awesome power and richness in its explosive fruit. The sheer depth and power of this long-lived Burgundy were remarkable. The estate’s 1995 Clos de la Roche was initially rather carnal and earthy, but then it turned more delicate and layered in the glass. Stylistically it fell somewhere between the Clos St. Denis and the Bonnes-Mares.

Bursting with expressive super-ripe berry fruits on the nose, the Bonnes Mares is both elegant and powerful (for Domaine Dujac). An oily-textured, medium-bodied wine packed with cherries, blackberries, minerals and a touch of cassis, it is well-delineated and built to last. It should be at its peak between 2004-2012. The fully mature nose exhibits a beautifully complex array of mostly secondary red and black fruit trimmed with a touch of wood and leads to robust, moderately structured, deep and sappy flavors that offer outstanding length and only a bit of the typical '95 astringency. This has just now arrived at its peak though it should hold here for at least another decade and it's possible that there may be a modicum of improvement yet to come. Tasted twice recently.
