The 2001 Cervaro della Sala is a well made example of barrel-fermented, central Italian Chardonnay, spicy and ripe on the nose with peach and citric fruit and flavors of a certain size, dimension, and minerality, but the extra measure of volume and density which characterized the 1994, 1998, and 2000 versions of the wine are not here. For reasons which escape me, the house has decided to abandon lees stirring for this wine, a centuries-old practice in Burgundy.
