Some 25% of the vins clairs that compose Ployez-Jacquemart's NV Extra-Brut Passion were barrel fermented, and it's a richer, more vinous non-vintage blend that's aged—for four or five years—sur pointes rather than sur lattes to prevent excess. Offering up an inviting bouquet of lemon, orange oil, crisp yellow orchard fruit, toasted nuts and honeycomb, it's medium to full-bodied, deep and intense, with a racy spine of acidity, fine concentration at the core, and a penetrating, sapid finish.

Alas I could discern no clue as to which vintage this cuvée is based on but it was a nicely balanced whole. Bone dry but not painfully so with good mid-palate fruit. I'd guess there was a decent age on this. (JR)

Here's what the producer's website says about this bottling, which I assume is up to date: Extra Brut Passion is made up of Premier and Grand Crus grapes picked in the 2004 harvest (55% Pinot Noir, 5% Pinot Meunier and 40% Chardonnay). In order to add greater structure a third of the wine is matured in oak barrels and does not undergo malolactic fermentation. To create further complexity we add 25% of older wines. This Champagne spent at least four years maturing in our cellars.' Explosively intense aroma on pouring. Very brisk acidity and rather unknit and very slightly astringent on the palate. But it is certainly refreshing enough and the finish is convincing. (JR)

Quite a yeasty nose from this Ludes producer. Complete and firm with no excess dosage but quite enough punch and fruit to withstand this brutal approach. Bracing stuff. Admirably distinctive. (JR)
