Tasting notes
Pale yellow. Pure aromas of lemon, spices and stone. Supple, round and silky, with very ripe but bright flavors of apple, pear and citrus fruits. Impressively fat, rich and seamless premier cru with excellent length. This was bottled the day before I tasted it but was not yet showing any evidence of shock.

(vinified in new barrels) Riper, more exotic aromas of yellow plum and lichee, plus a hint of new oak. Sweeter than the foregoing samples, with a hint of spicy oak, but not at all dominated by the wood in the middle palate. And yet this is fatter and less typically Chablis -like, even if the wine's flavors are a bit youthfully austere. Finishes with a grilled note and a slightly dry edge. The Raveneaus normally vinify one wine each year in new oak; in 2002 it was the Vaillons.
