With airing, it opens to reveal pepper, lavender, Provencal herbs, licorice, blackberry, and cherry aromas. Full-bodied and moderately tannic, it requires 2-3 years of cellaring. Anticipated maturity: 2003-2018. The 1999 Chateauneuf du Pape Cuvee Chantemerle Vieilles Vignes is dense, tannic, and long-lived (15-20 years of aging potential). A dark plum/ruby color is accompanied by a reticent bouquet, but huge, dense, full-bodied, chewy flavors with elements of soy, roasted herbs, meat, and glorious levels of concentrated black cherry and berry fruit.
