Inspired by a Russian, first made by a Hungarian, who was succeeded by a Frenchman and then a German, the winemaking lineage at Masseto has been decidedly international – until now, that is. Since January 2024, the leading Super Tuscan and Ornellaia’s sibling estate has had its first native at the helm: Marco Balsimelli – born in Arezzo, not far from Siena, took the reins from longtime Production Director Axel Heinz.  Balsimelli comes with his own illustrious pedigree, having long been based in Bordeaux, working at Gruaud Larose and, since 2010, alongside the famous Eric Boissenot as a consultant winemaker to many of the region’s leading estates, but the chance to work at Ornellaia and Masseto – iconic names from his Tuscan homeland – was an opportunity he couldn’t turn down.  It was André Tchelistcheff (the Russian-born Napa winemaker) who first suggested to Lodovico Antinori that a particular hill on the Ornellaia estate would be perfect for Merlot. Tchelistcheff was consulting for Antinori, and recognised the potential of the parcel of blue clay – the same soil that is synonymous with Pétrus. Back then, in the 1980s, Merlot was barely planted in Tuscany and remained an unknown quantity in the region, with only Castello di Ama – based further inland in Chianti Classico – having some vines (today used for its flagship L’Apparita). Nevertheless, the Ornellaia team took a chance and planted most of the seven-hectare swathe of clay in 1984 (additional planting took place in 1995).  The first vintage of Merlot from the site was made in 1987: Masseto was born. The name comes from “masso”, Italian for rock, after the large boulder-like clumps of clay that dot the vineyard’s surface. It didn’t take long for the wine to earn international acclaim, with Wine Spectator giving the 2001 vintage 100 points, and its place was cemented in vinous history.  Although Tchelistcheff consulted until 1989, replaced by Michel Rolland from 1991, Hungarian Tibor Gál was the property’s first winemaker. Gál was succeeded by Thomas Duroux (now of Ch. Palmer), who in 2005 passed the baton to Axel Heinz, the German-born winemaker who preceded Balsimelli. The property has changed hands over the years too, with the Mondavi family taking a share in 1999 before buying it outright from Lodovico Antinori, and selling it onto the Frescobaldi family, who took full ownership of Ornellaia and Masseto from 2005.  Much might have changed, but the terroir hasn’t. “It’s a very special site,” Balsimelli tells me. The all-important clay dominates the topsoil, which is only about a metre deep. When it rains, the clay swells, making it near impossible for the vines’ roots to develop. High sodium levels in the soils only accentuate the problem. “For the roots, it’s a battle every day,” he says. It’s that struggle, he feels, that you can taste in the concentrated, high-acid fruit from the site.  The climate is key too, lying just 10 kilometres from the Tyrrhenian Sea. Fresh marine breezes mean the temperature is around 5°C lower than that in central Tuscany, with a drop of circa 15°C from day to night. Combine this with the light reflected off the sea, and you get a long growing season, preserving aromatics and acidity, yet encouraging phenolic ripeness – wines that combine perfume and power. Surrounded by forest, there is a reason that Masseto is run as an entirely separate project to Ornellaia, with its own unique identity – even if it has always shared a winemaker (and, until 2019, a winery) with its sibling estate.  For Balsimelli, the project has provided a fresh challenge. The shift away from a consultant role – no longer offering advice before moving on to the next project, but sitting with each and every decision – adds a new weight of responsibility. “I spend a lot of time thinking about the technical questions and the consequences,” he tells me. Since most of his work with Boissenot had been based on Bordeaux’s Left Bank, focused on Cabernet-driven blends from larger estates, working with a small property, focused on just one variety and various sub-plots is a different sort of jigsaw puzzle. The approach, for him, is much more Burgundian – all about expressing the purity of the site and its blue clay. “You have to be perfect with only one type of soil and one grape variety,” he explains.  The quest for perfection was started long ago at Masseto and today the vines average between 20 and 30 years in age. They’ve also been moving from cordon-trained to bush vines – first trialled in 2008 and something which they have found helps temper the effects of global warming (coping better in dry conditions and shading the fruit from the heat of the sun). Farmed organically since 2012, there has also been a significant focus on encouraging biodiversity across the site, including using cover crops to reduce soil compaction, increase organic matter and retain humidity in the soils.  Balsimelli’s first vintage was 2024, which won’t be released until 2027. But he’s clearly excited by the site, as well as how he can tweak and improve a wine that is already lauded by critics and consumers. “When you taste old vintages of Masseto, you can feel the legacy, taste the terroir,” he says – and that’s exactly what he wants to do moving forward, channelling the Boissenot philosophy: understanding a piece of land and finding the best solution to express it in the glass. For him, that solution will be all about accentuating the wine’s elegance.  He notes how there was – across the world of wine – a trend towards low yield and high levels of maturity in the early 2000s, but his preferred vintages are those that saw more balance. The 2006, for example, is his favourite at the moment – a year with more rainfall, more vigour, and – he feels – more energy as a result. It’s a vintage that he believes is “the key for the future”.  The site is one that can ripen quickly, and he plans to focus on freshness, maybe picking a little earlier, reducing extraction and lowering temperatures for maceration. The 2022 is the vintage set to be released this September – a wine that Balsimelli notes shows just how good the site is – performing even in tricky conditions such as 2022’s hot growing season. Alphonse Gros was the first in his family to settle in Vosne-Romanée, in 1830, and purchased the monopole Clos des Réas, still worked by the family today. His son Louis-Gustave took over the business and bought more vineyards. He married and – by the mid-19th century – the wines were bottled under their combined name, as Domaine Gros-Guenaud. In 1882, he purchased two hectares of Richebourg – vineyard land that remains under the Gros family today. Louis-Gustave’s son, Jules Gros, inherited the business from his father and, similarly to his father, labelled the wines under his and his wife’s name, as Domaine Gros-Renaudot. In 1920, he purchased two parcels of Clos Vougeot, later adding Les Grands Echezeaux and three hectares of Echézeaux, in the lieu-dit Les Loächausses.  Louis Gros, Jules’s son, took over in due course, and bottled wines under Domaine Louis Gros and later Domaine Louis Gros & Fils. He passed away in 1951, leaving four children: Jean, François, Gustave and Colette, who continued running the family estate until 1963, when they divvied up the property.  Gustave and Colette joined their shares together to create Domaine Gros Frère & Soeur.  Jean and François worked together, making wine under the name Gros Père & Fils, but divided their holdings in the early 1970s. Jean established his own estate, Domaine Jean Gros.  François continued to produce wine under the Gros Père & Fils label (négoce bottlings), but also under Domaine François Gros. In 1978, he stopped bottling wine due to health problems, and for a decade all the wine was sold to a négociant, with both the domaine or négoce ceasing production. Despite previously studying the arts, his daughter Anne Gros shifted too winemaking and revived the family domaine in 1988, under the name Domaine Anne & François Gros, changing this to Domaine Anne Gros in 1995.  Jean had three children: Bernard, Michel and Anne-Françoise. Bernard Gros took over Domaine Gros Frère & Soeur, while Michel Gros starting making wine under his own name at Domaine Michel Gros. Anne-Françoise established Domaine A.-F. Gros (she later married François Parent of Pommard, who brought family vines with him to the operation). The next generation is now taking over, and even setting up their own estates – with Anne Gros’s son Paul Tollot-Gros having made his first handful of vintages under his own name.    The Gros estates today  Domaine Gros Frère & Soeur: Bernard Gros has now handed the running of this domaine over to his son, Vincent Gros.  Domaine Michel Gros: Michel Gros is still at the helm of this estate, although his son Pierre is now working alongside his father.  Domaine A.-F. Gros: This estate, with a large winery in Beaune as well as a property in Pommard, is now run by brother-and-sister Caroline and Mathias Parent, with Caroline in charge of the commercial side of the business and Mathias running the vineyards and winery.  Domaine Anne Gros: Anne Gros is still in charge at the estate, but her children – Julie, Paul and Marine – are all involved. Paul has now also set up his own label (see below). Valpolicella from maestro Romano dal Forno   February sees the annual release from Valpolicella’s pioneering Dal Forno estate. The sad news is there will be no new Amarone release this year. The 2014 vintage was difficult across Italy and Dal Forno was hit badly by hailstorms in June which only reduced the yield further. The grapes were deemed too fragile to undertake the long two-year drying process necessary for Dal Forno’s Amarone. The silver lining is that the top fruit went into their Valpolicella Superiore, which is already a canny buy in any year. The production of the Valpolicella is 30% down on normal years so it will be in short supply. To make up for the lack of a new Amarone release, the winery will be releasing a rare set of Amarone magnums from the 2011 vintage – one of the finest in the winery’s history. Look out for them later this month.  The king of kings: Château Latour’s first 2016 release  Pauillac de Latour is the ever-popular “third” wine from the First Growth Bordeaux estate Château Latour. The wine captures the purity and precision that defines Latour, but with a softer, more approachable structure, allowing fans of the estate to enjoy an earlier-drinking offering at an enticing price for the pedigree. The 2016 vintage, now in bottle, is widely acclaimed as one of the greatest modern vintages of Bordeaux, which only makes the release more exciting. Latour 2016 was without question one of the top wines of the vintage, awarded 100 points across the board from the world’s leading critics. This sibling, made by the same team, offers an affordable and approachable insight into this extraordinary estate and vintage.  The latest from Madame Lalou Bize-Leroy   The annual release from Leroy will be out this month. Exact release dates are never disclosed but we are expecting to see them any day now. The Maison wines will be released first, followed by the domaine wines from d’Auvenay later in the month. While we can’t confirm exactly what will be available, we can disclose that the selection this year has some exceptional vintages from some of the region’s top villages. What to look out for this February

For more than two decades, Donum has been quietly crafting single-site, single-clone and sometimes single-barrel wines. With a new estate vineyard to their name, Rachael Ryan – Senior Buyer at our US arm, Vinfolio – sat down with winemaker Dan Fishman to find out more about the ambitious estate  Like most of the New World, California eschews a hierarchy of vineyards. Yet in the absence of Grands Crus and First Growths, some vineyards are just acknowledged as being a notch above the rest. Ask any winemaker for a wish list of vineyards, and a handful of familiar names is repeated. One of these is the Savoy Vineyard.  Nestled at the north end of the Anderson Valley, Savoy was first planted in 1991 and quickly became a source of Pinot Noir for some of the most respected wineries in Northern California, including Littorai, Williams Selyem, Radio-Coteau and Peay, with many more on the waiting list. Last year, however, it was acquired by Donum, a winery based in Carneros with a reputation for producing small lot Chardonnay and Pinot Noir, sold exclusively to private collectors and therefore rarely seen on the market.  Since it was created in 2001, Donum had slowly expanded its reach beyond Carneros, with vineyards in the Russian River and Anderson Valleys, as well as the Sonoma Coast. With the acquisition of Savoy, however, their already envious collection of vineyards took a very notable – and sizable – jump. The gain of this prestigious vineyard marks a shift for Donum, who will now produce wine from estate fruit only: 130 acres at their estate in Carneros, 16 acres at the Winside Vineyard in the Russian River Valley, 20 acres at the newly planted Bodega Vineyard on the Sonoma Coast, and the 42 planted acres at Savoy Vineyard in the Anderson Valley.   Already well-known for their world-class art collection (with over 50 works by the likes of Keith Haring, Yayoi Kusama and Ai Weiwei), what many visitors may not realise is that Donum now has a solid foothold in each of the premium Pinot Noir and Chardonnay winegrowing regions in Northern California.   In some ways, the vineyards owned by Donum are innately similar, perhaps most closely linked the marine layer. This dense fog rolls in from the Pacific Ocean most afternoons during the growing season and is a key characteristic of each of these vineyard sites. The mechanics of this cooling marine layer are somewhat straightforward. As temperatures climb in inland California, the hot air rises, creating a vacuum into which the denser, colder air sitting over the Pacific Ocean rushes. On a typical summer day, coastal areas are fully clouded over by late afternoon, and the fog continues to creep further inland, searching for gaps and valleys in the coastal ranges to extend its reach. This cold, moist air both lowers sunlight hours and keeps temperatures low. In other words, this coastal phenomenon is an extremely useful aide in the production of lively wines that retain a fresh edge.  Aside from cooling fog influence, however, the vineyards Donum farms are topographically quite different. The estate property in Carneros, with its gently rolling hills and proximity to the bay, straddles the southern portion of both Sonoma and Napa counties (though Donum’s property is firmly situated on the Sonoma side), with consistent winds blowing from the southeast over the San Pablo Bay giving the region a wide diurnal shift and the resulting wines a sense of energetic tension. The Anderson Valley, on the other hand, is a narrow swathe cut through dense, old redwood forest, and it's difficult not to mentally connect the rugged hills that line the valley on both sides with a similar evergreen, earthy core in the wines. The Russian River Valley is a warmer microclimate, further removed from the cooling influence of the ocean or bay, with loamy soils producing a more concentrated style of wine with opulent fresh fruit.  But for Dan Fishman (Vice President of Winemaking and Vineyards) perhaps the most unifying characteristic across each site is a hyper-focus on farming, which he believes is the best – and perhaps the only – way to showcase these unique terroirs. When he joined Donum in 2007 as a cellar intern, the farming was conventional, with routine application of herbicides and synthetic fertiliser. In recent years, however, he has spearheaded a pivot towards organic farming.   Notable features of this approach include an on-site composting program, where manure from local dairy farms is added to pomace from the winery and canes from pruning. Other eco-friendly initiatives include an integrated pest management system, extensive cover cropping (Fishman estimates Donum currently uses 20 different cover crop blends comprised of over 40 different plants), as well as animals brought into the rows for winter grazing. All these systems have improved the soil structure, “bringing more back to the soil than we’re taking from it”, he explains.  A peek into the rows at the Carneros estate reveals this shift in viticultural philosophy, with verdant cover crops and bees hovering. Tucked between the sculptures that dot the property are vines that are farmed meticulously. While the art is spectacular and very difficult to ignore, the attention to detail in the vineyards is perhaps even more impressive. Donum is now one of the first wineries in Sonoma County to achieve Regenerative Organic Certified (ROC) status for all its estate vineyards, and they’ve also been certified organic from the California Certified Organic Farming Association (CCOF) since the summer of 2022. The ROC status, however, is one that Fishman is particularly proud of, as it encompasses not just soil health and land management, but also animal welfare and the working conditions of the employees.    When asked if he has seen a difference in the behaviour of the vines, and in the quality of the fruit, since undertaking a rigorous approach to organic viticulture, Fishman’s answer is an emphatic yes. He points to the 2023 growing season as a prime example. In a year marked by record-breaking rainfall that extended into early spring, the threat of mildew was abnormally high. “Our conventional neighbors were spraying like crazy and still had mildew,” Fishman says, “but we were obviously using organic methods and applying them less frequently, and we had way less mildew. I think the vines’ natural resiliency was coming out.”   In line with a larger overall trend in Northern California, Fishman says he also has been trying to fine-tune the weight and concentration of the Chardonnay and Pinot Noir produced at each vineyard. If Burgundy’s biggest challenge historically has been to achieve even ripeness vintage to vintage, California’s problem cultivating Pinot Noir and Chardonnay been quite the opposite: how to tame abundant sunshine and control vigour resulting from warm days and fertile soils. While the fog assists with this task, one unexpected benefit of the winery’s intensive focus on farming, Fishman explains, is that the vines are more in balance. “It’s on the subtle side,” he says, “but our wine chemistry is looking better too – higher acidity and more flavour at lower sugars.” Opulence has given way to restraint and nuance.   The resulting range of wines at Donum is an impressive display of small-lot vinification, broken down not just by appellation or vineyard, but also often by individual blocks. In 2021, the winery produced six distinct Chardonnays and 17 Pinot Noirs in total from Carneros, the Russian River Valley and the Anderson Valley. With the development of their newest vineyard on the Sonoma Coast, Donum’s already complex patchwork quilt of wines is about to get even bigger.   With a gentle hand in both the vineyard and winery, Fishman hopes to highlight the most minute of variations in each wine, allowing the innate characteristics of each site to shine through. “We have a really intense focus on vineyard flavour first,” he explains.    “We’re not trying to force a house style, just let the vineyard or block do the talking,” Fishman continues, “We’re trying to make the best Pinot Noir and Chardonnay in California, wherever that comes from.” With access to such an extensive assortment of prime locations, now including the illustrious Savoy Vineyard as a feather in its proverbial cap, to say that the future at Donum is exciting is an understatement indeed. While many may think of California Pinot Noir and Chardonnay as one group of wines, a monolith with little variation in style, Fishman and his team at Donum hope to change that mindset, one vineyard at a time.  The Donum wines have historically been available only to those on their mailing list, but we are now working directly with the estate: browse all current Donum listings.

Discovering Donum’s single-site wines

First place: Donum

“I was broken-hearted,” says Tim Mondavi, his eyes glistening at the memory of how his family was forced out of their business, Robert Mondavi Winery, 20 years ago. Wine runs through the Mondavi family’s veins. Cesare Mondavi – Tim’s grandfather – made his first vintage in 1919, and the family purchased Charles Krug Winery in 1943, before Robert broke away to establish Robert Mondavi Winery in 1966. Luckily, when Constellation took over the business, the Mondavis left with “a bag of money” – something, Tim says smiling, that is better than being heartbroken and broke. He went in search of “a new love”, and so he built Continuum. The concept was simple: to “shoot for the stars”, Tim tells me, and craft a wine that would rival Bordeaux’s First Growths – as well as continue his family’s legacy in Napa. Having seen how their family business had grown, shifted and ultimately fallen into corporate hands, he and his sister Marcia wanted to keep things simple. The first few vintages were made with fruit sourced from Robert Mondavi, largely To Kalon – vineyards that Mondavi had worked for 30 years and knew inside-out. But he knew that site was everything, and thinking of Burgundy’s best wines, he looked to the hills – keen to find his own slice of “Grand Cru” terroir. So he “kicked a lot of dirt” – and in 2008, he found something.  Up-slope from Dalla Valle, above the fog line and neighbouring Colgin, a marine biologist called Leighton Taylor had planted vines on Pritchard Hill in the 1990s. He was a wine-lover and saw the roots he put down in these rocky, volcanic soils as his retirement plan. His children didn’t share his passion, and he decided to sell: enter the Mondavis. Tim Mondavi instantly realised the potential of the site and bought the 173-acre property. Southwest-facing, with sparse top-soil and the intense sunlight that this altitude offers, he named it Sage Mountain Vineyard, after the abundant wild sage found across the property. The area had been conventionally farmed and needed work, and Mondavi brought two of his old team onto the project. Together they worked to realise the potential of these rocky 70 acres of vines, regrafting, replanting and refining the farming – drawing on organic and biodynamic practices. Gradually, they started using fruit from the site for Continuum, and from the 2012 vintage the project was exclusively estate-grown, all coming from Sage Mountain Vineyard. In 2013, they completed work on a winery on-site – meaning everything was done in-house by their own team – a first for the family. For Tim, it was a big moment. The vintage happened to coincide with his 40th harvest, as well as the 100th anniversary of his father Robert’s birth – and the label bears a dove in tribute to him, flying over the vines.  Robert was not just the patriarch of the family but of the entire valley. He passed away in 2008, just a month after Tim had shown him Sage Mountain Vineyard. He was a force of nature, who not only built the family empire but put Napa on the map, fighting relentlessly for the region on the world stage. It’s hard to imagine that he was an easy man to have as a father. “There was no such thing as too much,” says Tim. “But there was no such thing as enough.”  Robert was, Tim tells me, “go, go, go” – and it’s clear Tim wants something different for his family. With Continuum, he wanted a project that could provide a balanced life – smaller than the smallest project at Robert Mondavi. Tim’s children haven’t run away from their fate or the family business. They’ve all worked at Continuum at one point or another: sons Carlo and Dante have gone on to establish Raen, their own Sonoma Coast Pinot Noir project in 2013, while Chiara has joined her father and is firmly in situ as winemaker at Continuum.  The Mondavis might be Napa royalty, but they’re also farmers – and they’re more aware of the challenges that climate change brings than anyone else. “Mother Nature has so many ways to remind us we haven’t been taking good care of her,” Tim says ruefully. The wildfires of 2017 brought that closer to home than they’d have liked. The Continuum team was two-thirds of the way through the harvest when Tim saw the glow on the horizon from his house. He instantly called to cancel the harvest, and ensure everyone stayed far away from the winery and vineyards – but his vineyard manager ignored him and drove straight up the estate, to check that none of the crew were already on-site ahead of their early pick. Luckily the team was all fine – but those fires filled Tim with fear.  They didn’t make a 2020 vintage, so the latest release – the 2021 – is the first for two years. They’ve been gradually increasing the proportion of Cabernet Franc in the blend, and the 2021 has the highest percentage to date (representing over a third of the blend). It is, Tim says, “our finest effort” – something he attributes not just to the year’s conditions, but over a decade spent getting to know each of Sage Mountain Vineyard’s 44 blocks. “To be truly great, you have to understand the site,” he says. The wine is elegant and pure, with a saline, earthy minerality that is an imprint of the property – something that runs through every vintage. Tim’s been making wine for 50 years now, but knows that he’s in a generational business. Continuum might be his new love, but he didn’t build it for himself – it’s for his children. “Our aspirations are large enough to contain the pursuit of excellence,” he says. Ambition’s never run short in the Mondavi bloodline – but, as Continuum proves, it’s backed up by not just good instincts but the drive, grit and hard graft to make those dreams a reality. The latest release of Continuum is available now

What is Ornellaia?  Tenuta dell' Ornellaia is one of Italy’s most respected wineries, based in the Tuscan foothills of Bolgheri. Its top wine – simply titled Ornellaia – is a Bordeaux blend of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot, first produced in 1985.  Is Ornellaia a Super Tuscan? Yes. Bordeaux varieties grown in Tuscany qualify it as a Super Tuscan. It is in fact situated next door to the pioneering Tenuta San Guido property – the first estate to start producing a Bordeaux blend in Italy, with its famous Sassicaia. Ornellaia was founded by Lodovico Antinori – who was actually the nephew of Sassicaia’s Mario Incisa della Rocchetta.   Is Ornellaia owned by the Antinori family?  Not anymore. In 2002, Lodovico Antinori initially sold the property to US winemaker Robert Mondavi, who then sold a 50% share to Frescobaldi – another historic Italian wine-producing family. Following the sale of the Robert Mondavi corporation to Constellation Brands in 2005, Frescobaldi took full ownership of the property. They also own two other iconic Tuscan properties: Ornellaia’s neighbouring property Masseto (arguably Italy’s most famous Merlot, which up until 2019 was also produced at Ornellaia) and the Brunello di Montalcino estate Tenuta Luce.   Does Ornellaia have anything to do with Solaia?  In short, no. Solaia is another Super Tuscan owned by the Antinori family – Ornellaia’s founder Lodovico Antinori’s brother Piero – so you would be forgiven for getting them confused. Solaia is a Cabernet Sauvignon and Sangiovese blend grown on the Tuscan hills within the Chianti Classico region and is situated next to the Tignanello vineyard, another Super Tuscan also owned by Antinori.  What’s so special about Bolgheri?  Bolgheri’s close proximity to the ocean means less cloud and a higher level of reflected light from the sea, magnifying the solar intensity. Secondly these coastal flatlands, in between the mountainous islands of Corsica and the Tuscan hills, are effectively a corridor of wind which creates a high diurnal shift in temperature. This fluctuation between hot days and cool nights locks in the grapes’ acidity, while giving the fruit great concentration and ripeness – enabling the later-ripening Bordeaux grapes Cabernet Sauvignon and Merlot to thrive.   What makes Ornellaia so unique? Neighbouring both Sassicaia and Masseto, Ornellaia is well situated in the foothills of Bolgheri. Being one of the early settlers in the region, they are one of the few producers who own vineyards in the foothills. The surrounding woodlands are protected and therefore more recent arrivals could only plant vines on the valley floor. Here there is a complex mosaic of soils ranging from marine, alluvial and volcanic soils. Intraplot management means every plot is individually assessed, picked and matured in oak for 12 months before the final blending takes place. Within one vineyard alone the four varieties, eight different rootstocks and multiple geological fault-lines provide a complex palette of expressions to choose from.   Who makes Ornellaia? As of 2024, Marco Balsimelli is the Production Director at both Ornellaia and Masseto. He took over from Axel Heinz, who had been at the helm since 2005, taking over from Thomas Duroux (now the winemaker at Ch. Palmer). The estate now produces seven wines in total, one grappa and an olive oil. Le Serre Nuove is Ornellaia's closest sibling (another red Bordeaux blend, very much seen as the second wine to Ornellaia) typically mad with fruit from younger vines.  How is Ornellaia made? Each parcel is vinified separately. While previously the wine would only be blended after 12 months' maturation, Balsimelli has moved to blending it earlier in the process to create greater cohesion in the wine. Fermentation and maceration takes place in stainless steel at maximum 25˚C, staying on skins for around 20-25 days before being moved to barrel. The wine is aged around 18 months in 70% new oak and then a further year in bottle prior to release. What are the great Ornellaia vintages? Speaking with Ornellaia’s Matteo Zanardello, his favourite vintages for drinking now are the 1998 – so elegant, fresh, bright and one of the best vintages in Ornellaia’s history, even if
underplayed by the critics. The 2001 is, he feels, beautiful now, while the 2006 is starting to open up. A notably fresh vintage with great ageing potential, Galloni described the 2006 as “a breathtaking wine of the highest level” (98 points) – and Matteo compares it to the 2018. Monica Larner rated the 2010 97+, describing it as “a truly outstanding wine that leaves a lasting memory for those who are lucky enough to enjoy it”. The 2011 was slightly overlooked, initially considered to be a little austere, however today it shows all the great traits of Ornellaia and is another great vintage in Matteo’s view. Antonio Galloni's (Vinous) top-rated vintage is the 2021, earning 98 points, a wine that "captures all the magic of this sensational vintage on the Tuscan Coast". The 2021 is also the highest-rated according to James Suckling and Lisa Perrotti-Brown MW, for whom it ties the 2019 – "a beautiful, luxurious, and vivacious wine". Kerin O'Keefe's top-rated vintage is the 2010, which marked the estate's 25th anniversary and "could not have been a more spectacular vintage". What is the most recent vintage? The new vintage of Ornellaia is released each spring, three years after the vintage, so the 2022 was released earlier this year. Its sibling estate Masseto is released in September as part of the September releases via La Place. Domaine des Comtes Lafon’s Montrachet is remarkable. The estate’s rare, famous flagship wine comes from a tiny plot – just 31.82 ares, less than a third of a hectare–at the southernmost point of the world’s most famous white wine vineyard, with Blanchot Dessus across the road, and right next door to plots belonging to Domaine de la Romanée-Conti. In fact, the plot is so tiny that in the low-yielding 2016 vintage, the property joined forces with DRC, Leflaive, Domaine Guy Amiot & Fils, Domaine Lamy-Pillot and Domaine Fleurot, pooling together their grapes to produce two barrels of Montrachet from their combined 1.25 hectares.   The Lafon family has owned their plot since 1918, however the vines were farmed by the Morey family for a long time. Indeed it was only in 1991 that Dominique Lafon officially reclaimed it. The vines here are very old, with the vast majority planted in 1953, and a small section planted in 1972.  These old vines bask in the sunshine, facing south, their roots on deep limestone soils that preserve minerality and freshness. The wine produced is remarkable. Tasting through a vertical back to 2001 at our recent dinner, the style really shone through: it is one of the richest and most powerful Montrachets, possessing both great concentration, yet also an amazing freshness that carries it through a long drinking window.  Being fortunate enough to drink through 15 vintages really highlighted the wines’ capacity to age. The top 2017, 2014 and 2010 vintages were a masterclass in Chardonnay perfected, but it was the supposedly “lesser” years such as 2006 or 2011 that showed the sheer class of both the site and the winemaking.  While Dominique Lafon has long been the face of the estate, we were joined by his daughter Léa Lafon who – alongside her cousin Pierre – is leading the estate into a new era. The new generation is looking to the future and continuing her father Dominique’s relentless drive for continual improvement and innovation, while protecting her father’s legacy. Her mission remains the same: to produce the greatest possible expression of a year, adapting as needed to that single window in time.  It was exciting to taste with Léa, who was incredibly open about the challenges the estate faced in the past. She explained how the domaine, over the last 20 years, has made important adaptations both in the vineyard and winery that has led, she believes, to big improvements in the wines today. One significant shift has been the reduced use of bâtonnage, producing a more precise, brighter, fresher style of wine. Her desire to continually improve shone through during our dinner and conversation, and it’s clear that the future of this estate is incredibly exciting.  Vertical of Lafon's Montrachet 2017: The first vintage of the evening did not disappoint. In fact it silenced the table, truly setting the tone for the evening ahead. A remarkably powerful rich nose unfurled with ripe lemon, honey, blossom and buttery roasted nuts. It was delicate and refined, yet with deep concentration and levels of dry extract that coat the mouth. Multi-dimensional, multi-layered with extraordinary potential, this is a remarkable effort and was one of the great wines of the night. 2015: This has a ripe nose, but took a little coaxing to showcase the bright, well-defined, rich, ripe fruit. It was dense, bright and full (indicative of the vintage?), but with huge depth and potential. The salinity wasn’t quite as evident as on other vintages from the same era, with this showing a more waxy, honeyed ripeness. Very satisfying and long, with a buttery finish.  2014: As expected, the 2014 leaps from the glass, almost making itself known before any swirling has begun. It was very ripe with pungent limes, lemons and a slight hint of herbs. Smokey and mineral, there’s a touch of struck-match and slate. Once again, the harmony of all the components – weight, concentration, dry extract, acidity – is remarkable. The classic Montrachet power and weightlessness is very evident, clearly a wine for the long-term but how special to try it in an early phase of its evolution. Saline and complex. Classy and rich, simply outstanding.  2013: Considerable reduction evident here, slightly outweighing the fruit and perfume. Lots of slate and struck-match dominated at first, but with air it was rich and bright, with well-defined flavours of honey, ripe lemon, hints of smoke, minerals and an almost chalky finish.  2012: This had a bright, energetic nose of ripe lemon and lime, with a hint of apricot. Everything is aligned and seems to be in perfect proportion – deeply concentrated, but light and fresh – very harmonious and complete.  2011: This was another vintage from this remarkable line-up of triumphs that outperforms the vintage, showing an unbelievable balance of bright, dense, concentrated fruit balanced by high acidity. On the palate, it feels like this could last forever. Lime and minerality hides in the background, with a slightly waxy and tropical finish. Long and memorable.  2010: Standing up to the reputation of the vintage, the ’10 delivers in abundance. It is ripe, but with underlying slatey, chalky, smokiness; tense, but with huge concentration and a core of rich stone-fruit character. Layered and textured, it’s captivating. The wine is complex with hints of honey and nuts emerging with gentle coaxing. The oak is perfectly resolved and integrated. Hugely impressive, standout.  2009: Corked sadly! Though evidence was there behind the TCA of a brilliant wine. 2008: Wow – this was sensational, with a captivating nose of ripe lemon, lime, honeysuckle and even a hint of guava and limey, oyster water. Intense, focused and concentrated, there’s layer after layer of viscous, dry extract balanced perfectly by massive acidity, with citric bite. Very mineral and multi-dimensional, it’s complete and faultless. Hard to say how this outstanding 2008 could be improved in any way at all. Stunning.  2007: More reserved than the very pronounced 2008, this offered fleshy pears, stone-fruit, lemon rind, with slightly less concentration than some of its counterparts, but remained perfumed and charming.  2006: The consensus was the 2006 was one of the stars of the evening – show-stoppingly good, emphasised by what is a fairly ordinary vintage in the Côte de Beaune. It was ripe, almost tropical, but with the characteristic saline, mineral, high-acid backbone found in the top vintages of this extraordinary wine. It was floral, ginger and orange-zest scented, while the palate is sumptuous, multi-layered and penetrates the whole way through. Weightless and powerful, it build to a nutty, saline finish. Extraordinary, it’s surely a contender for wine of the vintage.  2005: This was apparently a tricky vantage at Lafon, with some bottle variation Léa noted, but it was another outstanding ex-domaine bottle on the night. It offered a quieter nose than the sublime 2006, with hints of honeysuckle, candied apple, hazelnuts and ginger. It has a rich core of concentrated, dense, buttery, ripe nuttiness, which follows through to an elevated, slightly floral finish. 2004: Another challenging vintage for Lafon, with some bottle variation possible, the bottle on the night, however, was outstanding. With notes of limey, fresh apples, it has the characteristic marine, saline character, if not as pronounced as other vintages. It has a soft, slightly reticent texture, but an undeniable power, reminding us of the quality on show. Perhaps slightly shorter than previous vintages, but still superb. 2003: Completely not the expected profile for such a warm vintage, this was quite lean and high acid. It’s very pure and seductive, yet still with a saline note, pears, slightly candied apple, cream and a limey finish. Exceptionally long and satisfying. 2002: A very strong showing, this was bright and alive, with a mineral nose showing fresh citrus, with a more rounded and almost silky mouth-feel. With hints of pine nuts, minerals, slate, it was dense and rich but with balancing high acidity that makes for a wonderfully fresh palate and saline finish. Outstanding. 2001: This was perhaps slightly more mature than expected (not a perfect bottle), but was the right side of oxidised, with excellent depth and freshness. Exploring Domaine des Comtes Lafon’s Montrachet

For the last half-century, The Dalmore have been masters of their craft and created a luxury icon that has transcended spirits. The 12-pointed stag that graces every bottle of the Highland single malt is instantly recognisable and synonymous with quality.  But just how did this Scotch whisky distillery rise through the ranks and create a lasting legacy? How has The Dalmore become a luxury icon? The Dalmore has a long and enviable history dating back to 1839, filled with stories of valour, craftsmanship and larger-than-life characters. The single malt’s rich, chocolate, orange and subtle spice character is largely thanks to the distillery’s enviable partnership with famed Sherry bodega González Byass. This century-old relationship has ensured the distiller has maintained a steady supply of the finest Sherry casks at times when most Scotch producers were forced to mature their spirit in cheaper alternatives.   For more than 50 years, these casks have been presided over by one of the most famous faces (and noses) in Scotch whisky, Master Blender, Richard Paterson OBE. The statesman-like savant has pioneered cask maturation and produced rich, characterful whiskies that have commanded hundreds of thousands of pounds at auction. Among the many records to its name, The Dalmore was the first distiller to break the £100,000 mark for a single bottle in 2010 with its 64-year-old. In the years that have followed, The Dalmore has broken its own records numerous times.  The history of The Dalmore  The Dalmore distillery was founded by entrepreneur Sir Alexander Matheson in 1839. Matheson sold the distillery, located on the shores of the Cromarty Firth north of Inverness, to the three Mackenzie brothers in the late 1800s. The distillery stayed under family ownership for almost 100 years until it was bought by Glasgow-based Whyte & Mackay in 1960.   Whyte & Mackay quickly increased capacity from six stills to eight, and ceased malting barley on site on the 1980s.  Between 1990 and 2014, Whyte & Mackay pin balled between owners until Philippines-based brandy producer Emperador bought it for £430 million. Throughout the many changes in ownership, Master Blender Richard Paterson OBE has remained a constant.  Another constant is the iconic 12-pointed stag that adorns every bottle of Dalmore. This honour was bestowed upon the Mackenzie clan after Chief Coin of Kintail saved King Alexander III from certain death when a Highland stag charged at him.   The Dalmore – Gaelic for “large field” – has largely remained open throughout its history, only closing for a brief period during the First World War, when the Royal Navy took refuge on the grounds. When they moved on, the buildings required considerable work to repair damage from an explosion. Then-owner Mackenzie successfully took the Royal Navy to court to get compensation for the damage.  Before 2002, The Dalmore almost solely contributed to Whyte & Mackay blended malts and was not widely available beyond a 12 Year Old. Whyte & Mackay gradually started to increase the single malt range and within a few short years were shattering record prices at auction.   In 2022, plans were announced to expand the distillery and visitor centre. These included the demolition of a building that once held the distillery’s malting boxes to make way for a new production area. The Dalmore plans to install exact replicas of the existing eight wooden wash backs and four pairs of Loch Lomond stills. Once it is operational, circa 2024, the existing distillery will be closed and renovated. Rumour has it that this site will also be turned into a production facility bringing the Highland distiller’s annual capacity to nine million litres– such is the demand for Dalmore and single malt Scotch whisky more widely.  Richard Paterson OBE  It’s impossible to talk about The Dalmore without talking about their Master Blender of 50-plus years, Richard “the Nose” Paterson OBE. Over five decades, Paterson has built the global reputation of the single malt with his pioneering cask programme, unwavering quality ethos and million-pound nose. Paterson’s high-spirited presentations around the globe are legendary. It’s no exaggeration to say he hassingle-handedly converted hundreds and thousands of single malt disciples during his tenure for the distillery. But Paterson is far more than just a showman, his nose was at one point reportedly insured for £1.6 million – such are his olfactory talents and invaluable master blending skills.    Paterson started his whisky education at the tender age of eight when his father started teaching him how to nose spirits at their family specialist blending, bottling and brokerage company. At just 26 years old, the young Glaswegian landed the top whisky job of Master Blender at Whyte & Mackay – becoming the third generation in his family to hold this enviable title.   In 2020, at the age of 71, Paterson marked his 50th anniversary in the whisky industry. The same year, Paterson embarked on a world tour celebrating his tenure, promoting The Paterson Collection, which later sold for £1 million. Soon after, the Master Blender appointed former Compass Box Whisky Maker Gregg Glass as his successor and announced that he would be stepping back from day-to-day duties at Whyte & Mackay to focus on Dalmore.   The Dalmore distillery character   Arguably, the two biggest influences on The Dalmore’s iconic taste profile are the stills and the time spent in Sherry and wine casks.   For over a century, the Highland distillery has maintained a close relationship with famed Sherry bodega González Byass. This partnership has enabled The Dalmore to mature its new-make whisky in the finest Sherry casks when few others could afford to.    Typically, The Dalmore’s new-make spirit slumbers in ex-Bourbon casks for its initial maturation period before it is transferred into a Sherry or wine cask. Secondary maturation at The Dalmore is often longer than the industry average to ensure as much of the desired characteristics are imparted as possible.  For some of the distiller’s most coveted whiskies, The Dalmore has matured its whisky in butts that have previously held Matusalem Oloroso Sherry from González Byass – this is a type of award-winning Oloroso that has been aged for a minimum of 30 years, sweetened with approximately 25% Pedro Ximénez. The Dalmore continually pushes the envelope when it comes to secondary maturation, finishing its single malts in wine casks multiple times and even experimenting with casks that have previously held tequila, Calvados and Cognac. Dalmore’s coveted King Alexander III bottling was finished in a total of six different cask types: Port, Madeira, Marsala, Cabernet Sauvignon, Bourbon and Matusalem Oloroso Sherry.   The Dalmore’s new-make spirit is perfect for long maturation periods. Every stage of the production process is centred around quality – from the water source to the barley, to the production equipment, Dalmore insists on using the best materials possible.  Loch Morie, located 11 miles from the distillery, is The Dalmore’s pure water source that flows from the River Alness to its mouth just below Alness. The river runs close by the distillery and is notable for its typically Highland characteristics.  The Dalmore also sources its high-quality golden barley locally from the rich coastal soils of Ross and Cromarty.   Fermentation times at The Dalmore are slightly longer than the industry average at 50 hours. The current distillery set-up at The Dalmore is one of the most complicated in whisky production. The unique size and shape of the Loch Lomond stills enable the team to replicate the effect of shorter and longer still necks to increase or decrease the level of alcohol vapours that condense and return to the still for re-distillation, commonly referred to as reflux.   The Dalmore’s wash stills are unusual in that they have flat tops, which maximises reflux and copper contact. The Dalmore believes these two factors produce a more desirable malty, fruity and northern Highland spirit style with a robust body that is perfect for extended maturation. The spirit stills are also atypical because of their unique cooling jackets, which are the oldest pieces of equipment on site as they date back to 1874. The oldest stills at The Dalmore were installed at this time and the younger ones joined them in 1966. Currently, The Dalmore has four pairs of stills but this number is rumoured to be increasing in the next few years.   Despite its impressive output of circa 4.2 million litres annually, approximately only 5% of the distillery’s production is bottled as single malt. The vast majority of the whisky produced at the distillery is destined for Whyte & Mackay blends.   Dalmore single malts   The Dalmore’s core range, The Principal Collection, has expanded over the years and now includes a selection of age statement (12-, 15-, 18-, 21-year-old) and non-age statement (Port Wood Reserve, Sherry Cask Select, Cigar Malt Reserve, King Alexander III) whiskies. Dalmore also releases a smattering of highly anticipated and keenly sought-after distillery exclusives.   Some of the most collectable Dalmore bottlings   The Paterson Collection – The Paterson Collection is arguably the pinnacle of the modern era of whisky-making at The Dalmore and showcases esteemed Master Blender Richard Paterson’s lifetime’s work. The collection, launched to mark his 50th anniversary in the industry, comprises 12 remarkable single malts drawn from the Highland distiller’s impressive library, the oldest of which dates back to 1926. Four years after launch, The Dalmore Paterson Collection sold for £1 million.  Dalmore 62 Year Old – For a time, the Dalmore 62 Year Old held the title of the most expensive single malt ever sold.Only one dozen 62-year-old Dalmore single malts were released in 2002. The vatting of four casks filled in 1898, 1876, 1926 and 1939 fetched almost double its pre-sale estimate of £40,000-50,000 in 2017 and has only become more desirable since.   Dalmore 64 Trinitas – The Dalmore 64 Trinitas is one of the most special single malts ever bottled. After the unprecedented demand for the Dalmore 62, the distiller returned to its archive and unearthed something exceptional. The last remaining liquid from the blend which makes up the 62-year-old (from 1868, 1878, 1926 and 1939 vintages) was blended with liquid from the 1940s and left to slumber in a bespoke nine-litre cask seasoned with ultra-aged Dalmore and very old Matusalem Oloroso and a Pedro Ximénez from González Byass. Only three bottles of the Dalmore 64 Trinitas were ever released. Two sold for £100,000 in 2010 and the third sold for £120,000 in 2011.  Dalmore Constellation Collection – The Dalmore Constellation Collection isa highly collectable 21-bottle set of single-cask vintage whiskies spanning 1964 to 1992. Available individually, the younger vintages’ starting prices are £2,000; the entire collection carries an estimate of $275,000. It’s rare for a full set to become available but it has happened to much furore.   Dalmore Quintessence – The Dalmore Quintessence is one of the special single malts released to commemorate Master Blender Richard Paterson’s 50th anniversary in the whisky industry. After an initial maturation period in American oak, Dalmore Quintessence was finished in five different red wine casks (Zinfandel, Pinot Noir, Syrah, Merlot and Cabernet Sauvignon) for five years before being married together – at the time, this was an industry first. The name Quintessence was chosen because it means fifth element.   Dalmore L’Anima – Dalmore is no stranger to collaborating with industry legends. The Dalmore L’Anima is the result of a partnership between Richard Paterson OBE and Michelin-starred chef Massimo Bottura. The rare, 49-year-old single malt is a marriage of three rare casks which previously housed Graham’s vintage Port pipes, 40-year-old González Byass Pedro Ximénez and small-batch Bourbon barrels. The single bottle of L’Anima– which means “soul” in Italian – sold for £108,900 at an online charity auction in early 2019.  Dalmore Decades – The Dalmore Decades are multiple-bottle collections of some of the oldest whiskies ever released by the Highland distillery.   Twenty-five sets of four bottlings from 1979, 1980, 1995 and 2000 form the Dalmore No 4 Collection, which carries a recommended sale price of £100,000.   Only 15 sets exist of the Dalmore No 5 Collection, which includes expressions from 1967, 1979, 1980, 1995 and 2000 – this comes with a recommended price of £200,000.  Dalmore No 6 is currently the most expensive collection in the Dalmore Decades series. The six-bottle set with vintages from 1951, 1967, 1979, 1980, 1995 and 2000 sold for $US1.1 million.   The Luminary Series – The Dalmore Luminary Series is a collaboration between four individuals who are at the top of their respective field: Richard Paterson, world-renowned architect Kengo Kuma, Gregg Glass and Maurizio Mucciola.  The first release in the duo is The Rare, an extremely limited 48-year-old single malt; the second is the more accessible 15-year-old expression, The Collectible.   The Luminary Series, introduced in 2022, is the first time The Dalmore has released two special liquids at stratospherically different price points (circa $100,000 for The Rare and $245 for The Collectible). A mere three decanters of The Rare exist which was created by Paterson and Kuma. The Collectible which was finished in ex-Amarone casks and Kintsugi casks – built from staves of mizunara and Scottish oak from The Dalmore estate – is the brain chid of Paterson and Kuma protégés, Gregg Glass and Maurizio Mucciola.  Browse The Dalmore whiskies and all whisky listings
