What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

Taking root: the rise of biodynamic winemaking in Bordeaux

Bordeaux is changing. The Left Bank, in particular, has long been a region of labels – of grandiose estates, polished winemakers and the bottles they produce – the vineyards a backdrop to their impressive châteaux and new state-of-the-art wineries. Of course, vineyards have mattered, as much as they’re the source of their grapes, but they’ve rarely been the focus for conversations with trade or consumers. But now, perhaps influenced by the meteoric rise of Burgundy – and an approach to wine echoed around the world, terroir is stepping into the spotlight. Behind the scenes, the Bordelais may always have been looking underfoot, but now they are talking about it too.  Nowhere is this more true than at Ch. Montrose – a property that announced a significant change when releasing its 2023 vintage. The property has always made some of Bordeaux’s finest wines, but over the past 15 years (under the Bouygues’ ownership) quality at this Saint-Estèphe estate has reached new heights. Long known for its austere age-worthiness, there’s now a modern polish that softens its stern style – without sacrificing its classicism and longevity. Each vintage seems to reveal a new level of precision and finesse. From 2023, Montrose announced that its Grand Vin would only come from Terrace 4 (T4). If that doesn’t mean much to you, I’m not surprised.  The Médoc and Graves’s six gravel terraces were uncovered by Pierre Becheler in a series of studies in the 1980s and ’90s. Each terrace dates from a different period and has its own distinct soils, with Terrace 1 (T1) the oldest and Terrace 6 (T6) the youngest – and argued to be a defining factor in the Left Bank’s terroir. T3 and T4 are widely regarded as the best for wine-growing, and Becheler found that, at the time of their classification in 1855, over 80% of the Classed Growths sat on these two distinct geological strata.  In the last decade, these gravel mounds have become a key part of Bordeaux’s story, explaining the estates’ terroir. Despite widespread understanding that the terraces are integral to the quality of wine, there still isn’t a comprehensive map of the Left Bank’s terroir – showing which vineyards sit on which soils (the best are those created by Jane Anson and Kees van Leeuwen for Anson’s book Inside Bordeaux). Most studies have been undertaken by individual estates, as at Montrose – who engaged Becheler himself to uncover the specifics of their site.  It's remarkable that, without knowing anything about the region’s subsoils, Montrose was so fortuitously placed – although it has of course survived thanks to its prestigious site. The property’s first vines were planted – all on the fabled T4 – in 1815, by Etienne Théodore Dumoulin, who had purchased the land from Nicolas Alexandre de Ségur (of Calon Ségur). The land had been covered in heather, its pink blossom covering the gentle slope come autumn, and sailors passing along the Gironde estuary used to call it the pink hill – or “mont rose”, giving the property its name.  It was only 40 years after the first vines went in the ground that the estate earned its place as a Second Growth in the 1855 Classification. By 1861, when Dumoulin passed away, the estate comprised 95 hectares – but its borders have shifted over the years. It was later purchased by an Alsace factory owner, Mathieu Dolfus, who invested heavily in the property. He was a visionary – offering free healthcare, profit sharing and accommodation on the estate for his workers. He even used a wind turbine to flood the vineyards, staving off the impact of phylloxera as long as he could.  Montrose was managed by the Charmolüe family between 1896 and 2006, with Jean-Louis – who ran the estate from 1960 – key in building its modern reputation. It was under him, in the 1970s, that vines were planted on lower-lying land close to the estuary, which sits on T5. These humid, sandy parcels are now used for La Dame de Montrose, the château’s second wine.  It was in 2006 that brothers Olivier and Martin Bouygues (of the eponymous telecoms company) acquired the property. In 2010 they bought an additional 22 hectares from Phélan Ségur, land which had historically been part of Montrose. These vineyards, wooded on either side, sit on the sandier T3, but importantly also brought the total vineyard area back to 95 hectares – as under Dumoulin – and all sitting in one block (something which is relatively rare in Bordeaux).  The Bouygues brothers hired Vincent Decup as the estate’s Technical Director in 2014. Decup instantly set about getting to grips with the estate and its soils. When he arrived, they had a map detailing 16 different soil types across the vineyards – but he soon commissioned further studies, uncovering an additional 10 soil types. This gave them, Decup tells me, “the possibility to explore and separate” parcels, diving into the detail of the site with a Burgundian, rather than Bordelais, vision. From 2017, the team started delineating the parcels – vinifying plots in 93 separate tanks (over twice the 40 that had been used just three years prior), adapting the winemaking to each. Looking at the Cabernet Sauvignon on T3 and T4, he explains how they gained a “new level of precision and comprehension of Cabernet on each terrace”.  “The Cabernet Sauvignon of Montrose naturally gets lots of power,” Decup tells me. “We have to be careful with the extraction.” Especially for fruit from T3, he explains, it can easily become overly austere. T4 has always represented the majority of the blend for the Grand Vin at Montrose – and in Decup’s mind it is not just the property’s historic DNA, but what gives the wine its identity. He tells me how there is something magical about the way Cabernet ripens on these parcels, developing technical (sugar), aromatic and phenolic ripeness all at once. It produces wine that is “powerful, voluminous, demonstrative – a lion in a cage”.  In 2022, the same year that Charlotte Bouygues took over as President and Pierre Graffeuille became CEO, the team started focusing more on T4, and from 2023 the Grand Vin comes exclusively from this prized terrace. Coming from the Delon estates, Graffeuille knew the potential of these soils, shared by Léoville Las Cases. The 2022 vintage was pivotal – earning four potential 100-point scores, with four firm 100-point scores in bottle – and the 2023 followed in its footsteps, with three potential perfect scores to its name.  The gravel terraces rise and fall through the region. T4 surfaces in Saint-Estèphe, running under Meyney and Montrose, disappearing until the southern edge of Pauillac, reappearing around Latour, then running through much of Saint-Julien (including the three Léovilles – Las Cases, Barton and Poyferré – and Ducru-Beaucaillou), rising again throughout Margaux and then again under Haut-Brion and La Mission Haut-Brion, with small pockets further south.  The defining factor of T4 is an iron pan beneath its sandy gravels. The sandy gravel topsoil allows young vines to develop roots easily, before they hit the compact iron layer – forcing the vines to spread horizontally rather than vertically. That compact layer is cool and retains water, feeding the vines in hot years. Decup explains how in July the topsoil might be hot, but if you dig down you can feel the chill of the iron layer – something that is perfect for Cabernet Sauvignon. At Montrose, T4 sits between 12 and 16 metres’ altitude, while elsewhere it reaches a maximum 22 metres. T4 tends to run close to the Gironde, which provides a moderating influence – especially so at Montrose, where the estuary is 4.5km wide (notably protecting the estate from frosts, such as in the brutal 1991 season – a year when Montrose produced the wine of the vintage).  As with T4, T3 runs beneath many Classed Growths – notably Cos d’Estournel, Mouton and Lafite. With sandier gravel topsoil, the key difference is that T3 doesn’t have the iron pan of T4 – the topsoil instead sitting directly on clay-limestone subsoil. Slightly higher in altitude (15-18 metres at Montrose, but generally 20-26 across the Médoc), the soils are very deep and the vines’ roots drive straight down, up to three metres or so at Montrose, Decup tells me. With less clay in the topsoil, the soils are particularly free-draining, and the vines reach down in search of water. “In terms of expression, it is not the same at all,” says Decup. He explains that while it also produces bold Cabernet Sauvignon, it’s got particular energy and length, an austerity – but “positive austerity”. Vines on T3 particularly thrive in hot, dry years, he tells me.  Montrose has an impressive 45 hectares of vines on T4, 12 on T3, a swathe on what the team describes as an “intermediate soil” – somewhere between the two terraces, and a small portion on T5. So what now of the property’s vines on T3? While the château isn’t openly confirming it, a separate bottling of T3 is set to be released – likely hitting the market in 2026, if rumours are to be believed. The rest of the fruit goes into La Dame de Montrose, and a small portion into a third wine, Tertio de Montrose (previously known as Saint-Estèphe de Montrose), which is exclusively for those working at the estate. All in all, the Grand Vin now represents circa 36% of production at Montrose – down from closer to 45%.   “T3 and T4 are, in our opinion, the terraces that produce the best viticultural results,” says Pierre Becheler, when it comes to the Médoc and Haut-Médoc. Interestingly he explains that in the Graves it’s very different, and T2, which is almost non-existent in the Médoc, produces some stunning results. He can’t fully explain why one terrace works better for wine than another, but one reason the terraces are so important is their influence on water availability. With varying proportions of clay and sizes of gravel, it’s a key element in viticulture and, eventually, wine quality. Although he has spent much of his career diving into these gravel beds, however, he’s very clear that the terraces are one very important piece of the puzzle – but will never provide the entire picture. Some terraces are the best in certain appellations, he says, “but we don’t really know why or how”.  The complexities of Bordeaux’s terroir are manifold – and some argue that the bedrock, from richer clays to hard limestones, are more influential than the gravel terraces that lie over them. On top of this, slope exposition, proximity to the Gironde, and many other elements influencing microclimate, not to mention the human influence, all contribute to the concept of “terroir”. It’s exciting to see site pushed to the fore, especially alongside an increased focus on sustainability in the vineyard. The Left Bank The gravel soils of the Left Bank are beautifully free-draining – something that has long been key to the fine wines despite the wet, maritime climate of the Médoc. In 2022, however, producers were desperate to retain what little water fell from the skies – and the berries harvested were tiny, with thick skins and containing surprisingly little juice.  The size of the grapes, combined with localised hail in Saint-Estèphe, resulted in generally low yields in 2022 – often lower than 2021, although it does vary by estate. Any addresses working organically and biodynamically last year had catastrophic yields, and this year therefore seemed generous (and joyous) for them, with its dry conditions meaning minimal disease pressure. What little fruit was harvested, however, was ripe and concentrated – producing rich and structured wines, with the best also having amazing freshness.   Saint-Estèphe This northern commune tends to thrive in hot vintages, with the heavier, clay-rich soils retaining more water and cooler temperatures, limiting the vines’ stress – and it was just so in 2022, a vintage in which it seems to be one of the more consistent appellations. Unfortunately the northern reaches of the region were struck by a corridor of hail on 20th June – it was very localised, but some estates lost significant volumes (with reports of up to 80%). At Ch. Beau-Site, the combined effects of this hail and April frost led to a loss of around half their crop, while Phélan-Ségur lost 30%.   Picking dates here varied – with Montrose (that has produced one of the stars of the year) starting on 2nd September, Calon Ségur on 6th and Cos d’Estournel on 7th – the earliest harvest for the latter since 1989. Even without any hail damage, Cos only managed to crop 33hl/ha, compared to a normal 40hl/ha. It’s also the first release of Cos Labory under Michel Reybier – reuniting the land that was originally owned by Louis Gaspard d’Estournel – and many more changes are set to come here. As they just acquired the estate, they were only responsible for the blending and élevage – but it’s already showing a touch of the classic Cos polish.   At Montrose, they felt there was a need to “civilise” the tannins, with gentle extraction. At Calon Ségur, Vincent Millet chose a longer, cooler fermentation at 24˚C ; for him, it’s the low yields that give the vintage such power, while the freshness remains a mystery. The wines that we tasted showed none of the rusticity that was once the trademark of Saint-Estèphe, with the best combining a depth of dark fruit and charming freshness.  Our highlights: Montrose – and especially La Dame de Montrose, Calon Ségur, Phélan-Ségur Pauillac “None,” Mathieu Bessonet – Technical Director at Pontet-Canet – said firmly when I asked if he could compare 2022 to another year. Pauillac escaped the hail and almost no one reported any significant damage from the frost, however yields were still low here. As Jean-Sébastien Philippe at Ch. Lafite-Rothschild highlighted, although the tonnage of grapes wasn’t too bad, it was the volume of liquid that they released which was notable – with the berries so small and the skin-to-juice ratio so high that yields were reduced by up to a third at most estates.  Some of Lafite’s younger vines started to struggle in the heat towards the end of August and were picked early, but the fruit wasn’t deemed good enough to be used. Neighbouring First Growth Mouton Rothschild picked in earnest from 1st September, finishing on 26th September – with almost no producers still picking by October’s arrival.  At Ch. Latour, the team recorded the lowest annual rainfall in their history – with just 615mm between October 2021 and September 2022. But there were significant storms in June, indeed the lightning in a thunderstorm on 2nd June destroyed Pontet-Canet’s office, with another following on 24th. Almost everyone we spoke to in Pauillac emphasised the higher percentage of press wine used. As vignerons tended to employ gentler extraction, the press wine was more delicate and more could be used to bring depth to the wines.   Technical Director at Ch. Pichon Baron Pierre Montégut compared the purity of Cabernet Sauvignon this year to 2019, with the richness reminding him of 2020. Bessonet feels that 2022 Pontet-Canet is more Pauillac than Pontet-Canet, but in general it seems that the extreme vintage amplified each estate’s character – as Charles Fournier at Mouton Rothschild highlighted. Taking the First Growths, Mouton is flamboyant, Lafite restrained and precise (with everything in this prestigious stable showing particularly well), Latour more stern and serious. Pauillac has produced some stunning wines at the top end this year, but there’s definitely a little more variation that needs to be considered.  This year’s Ch. Batailley – another classic expression of this stalwart estate – bears a commemorative label to the late Her Majesty Queen Elizabeth II, who served 1947 Ch. Batailley (a year with similar climatic conditions) at her Silver wedding anniversary in 1972.   Our highlights: Lafite-Rothschild, but also Carruades de Lafite-Rothschild, Pichon Comtesse, Batailley, Grand-Puy-Lacoste  Saint-Julien  “You’ve got to be really humble when a plant teaches you that much,” said Claire Ridley at Ch. Léoville Poyferré – referencing the vines’ resilience in the face of 2022’s extreme conditions. Despite the year’s challenges, Saint-Julien seems to have thrived, with some really impressive wines, with the Barton stable a particular standout. Damien Barton-Sartorius noted that some producers were afraid to wait for phenolic ripeness because of the rising sugar levels in the warm September conditions, but sufficiently ripe skins were key to success.   At Léoville Las Cases, the team feel the year’s climatic conditions hark back over 150 years, to 1870 – although we can’t personally vouch for the comparison, they’ve crafted a muscular, firm wine that will need serious time to reveal its full potential. (Indeed, five potential 100-point scores attest to the quality here.) Ducru-Beaucaillou highlighted the influence of oceanic mists in August, while Ridley pointed to the June storms for essential drought relief.  Harvest dates were similar to Pauillac, often starting in the second week of September and running to the end of the month. The acidity levels vary on paper from 3.6 to 3.85, yet the wines have good freshness and alcohols are generally on the more modest side for the year, with most sitting closer to 14, rather than 15. For Barton-Sartorius, the year sits happily alongside 2016 and 2019 – and possibly 1945. The appellation’s best wines are classically built, with both finesse and flesh, as well as the requisite structure for the cellar.  Our highlights: the entire Barton stable – including a stunning Mauvesin Barton (although sadly Langoa and Léoville sold out on release), Beychevelle, Léoville Las Cases, Lagrange  Margaux “They had to find a way to survive,” Aurélien Valance at Ch. Margaux said of the vines. For him 2022 was a year that gives him hope: “2022 was very extreme – but the wines are not. For the future, it’s very promising.” They have a plot of old-vine Petit Verdot that is always used in the Grand Vin, but the wine was already so dense that it didn’t need it. The fruit from this prime site has instead been used for Pavillon Rouge, contributing to a particularly serious, firm and swarthy rendition of this second wine. Valance explained how they used the vintage as an opportunity to trial two alternatives for managing the heat: removing leaves in early June to allow the grapes to adjust to the hot sun early in the season while they had thick skins, and using kaolin – a type of clay that can be used as a sort of “sunscreen”. While they had higher yields on both these trial plots, they have bottled them separately to see how these practices impact quality over time. Their ongoing work re-orienting their vines (from north-south to east-west) will also help long term, but will take half a century or more.   At Marquis d’Alesme and Labegorce, the early April frost reduced yields, especially for the Merlot – meaning they cropped just 22hl/ha. Harvest started in the first two weeks of September, finishing by the end of the month, the earliest on record for estates like Rauzan-Ségla. Yields generally seemed lower in Margaux – dipping to around half the normal volume at several estates, often less than in 2021. At Brane-Cantenac, Henri Lurton pointed to the deep roots of the 60-year-old Cabernet planted by his late father as key to their success this year, with a thicker canopy and cool nights all contributing to the wines’ surprising freshness. While most estates opted for a lighter touch with extraction, Palmer was a notable exception – choosing instead to lean into the year’s bold structure, something that has paid off (with another five potential 100-point scores here to prove it).  As Lurton said, “It wasn’t an easy vintage to make – but in the end it’s a great one.” Indeed, he feels it’s the best wine he’s ever made. That’s certainly the case at some estates, although the appellation was definitely more variable in quality. The best wines, however, fulfil Margaux’s sensual stereotype – combining perfume with the concentration of the year, and voluptuous tannins.  Our highlights: Rauzan-Ségla, Ségla, Marquis d’Alesme, Brane-Cantenac, Pavillon Rouge du Ch. Margaux  Pessac-Léognan  For Daniel Cathiard at Ch. Smith Haut Lafitte, the vintage was “more about dryness than warmth” – indeed, having recently started working in Napa Valley (with the family’s Cathiard Vineyard), he dared to say that the conditions were “a little Californian”.  Picking in this southern commune seems most uniform, with almost everyone starting in the first week of September. Guillaume Pouthier – who has created one of the wines of the vintage at Les Carmes Haut-Brion – managed to reduce the alcohol with his use of whole-bunch and native yeast, reducing it to a modest 13.5%. Although the tannin levels are very high (with an IPT of almost 100), the wine is amazingly accessible now – with a purity and delicacy that made it tempting to steal the sample for dinner. As he said, “What is very important to me is an empty bottle.”  The style of the wines here varies, from the ultra-elegance of Carmes to a bold, ripe offering from Haut-Bailly – but, from our tastings at least, there’s good uniformity in quality, with powerful wines that are set to age well.     Our highlights: La Mission Haut-Brion, Les Carmes Haut-Brion, Domaine de Chevalier  The dry whites Having read about the conditions of the year, you’d be forgiven thinking that the whites might be a write-off – but they’re far from it. It certainly required skill in the vineyard and winery to maintain freshness in the warm, dry year, with some that are on the more tropical side, but there are also some gorgeously taut, vibrant whites that are well worth paying attention to. The best of these are pithy, with impressive tension and an energy that reverberates through the wine. Yields at several addresses were particularly low for the whites, with frost having more of an impact on the Sauvignon Blanc, as well as the hot wind concentrating fruit further.   Although not being released en primeur, 2022 will be the first commercial vintage of a new white wine from Ch. Margaux, a junior sibling to Pavillon Blanc – one that we’re particularly excited to taste. Domaine de Chevalier Blanc is, as Adrien Bernard said, "very special this year” – and we wholeheartedly agree. While the reds often steal the limelight at Lafleur, we were particularly impressed by Champs Libres – another pure Sauvignon Blanc that sings this year.  As Olivier Bernard’s (Adrien’s father’s) 40th vintage, both the Grands Vins bear a special label, with a 1941 illustration by Xu Bei Hong of a galloping horse, one that captures the energy of the year at this address. At Ch. Haut-Brion, the team was particularly impressed by the quality of the Semillon – and it ended up representing a significantly higher portion (51.4%) of the blend, and the result is impressive.   Our highlights: Pavillon Blanc du Ch. Margaux, Domaine de Chevalier Blanc, Lune d’Or, Fieuzal Blanc, Clos Floridène, Les Champs Libres, Cos d’Estournel Blanc  The sweet whites of Sauternes and Barsac Because it was so dry, botrytis took time to develop in 2022, and it was only after the rain in early October that the noble rot took hold. A hot, dry wind over the following week resulted in rapid concentration, Pierre Montégut explained at Suduiraut, which is one reason for the purity of fruit in the wines. With this sudden concentration, the fruit needed to be picked more quickly than normal – indeed Montégut didn’t have enough pickers to bring it in as quickly as he’d have liked. The resulting wines are particularly rich and hedonistic, with notably high sugar levels at some addresses – Lafaurie-Peyraguey has a whopping 260g/l residual sugar (with 130-140g/l the number for a typical year). Yields are tiny in both Sauternes and Barsac – averaging 4hl/ha and 1.5hl/ha, respectively. Montégut explained that he would be using more new oak to help balance the richness of the fruit, which effortlessly absorbs the wood (the sample of Suduiraut we tasted was 100% new oak, but it will likely end up around 70% versus the normal 50%). He compares it to 1959, a vintage that had particularly high sugar levels for the era.   Our highlights: Suduiraut, Guiraud, Coutet The Right Bank There are some stunning wines from the Right Bank this year, with the wines generally more consistent (especially in Saint-Emilion), and the yields (again, mainly in Saint-Emilion) more generous versus the Left Bank.   Unusually, irrigation was permitted in both Saint-Emilion and Pomerol, however few producers have the infrastructure to water vines (beyond doing so manually) – and if they don’t have a water source themselves, it would also add significant costs. As such, few addresses that we visited took advantage of the option – and some argued that the permission to do so arrived too late in the season to be of real use. Although we only dive into the detail of Saint-Emilion and Pomerol on the Right Bank, it’s worth noting that the satellite wines from the Lafleur stable were particularly good this year, with both Les Perrières and Ch. Grand Village really impressing, and Montlandrie was a standout from the Durantous. Although we didn’t taste L’Hêtre, Jacques Thienpont (Le Pin) told us that it was “fabulous” this year – and may well be one to look out for given its pedigree.  Saint-Emilion Saint-Emilion’s pronounced limestone soils were a godsend in 2022 – bringing incredible freshness that balances the generosity of the year beautifully, producing some of the very best wines in the vintage. Of course, the proportion of limestone in soils isn’t universal, and it’s not quite as simple as saying only those on the plateau thrived, but it certainly helped. The general trend towards restraint undoubtedly helps as well, meaning that many producers have contained and tamed the opulence of 2022, rather than exaggerating it.  It was Joséphine Duffau-Lagarrosse’s second vintage at the helm of her family estate, and she’s been working particularly hard on pruning – something she feels is the most important part of any year, looking to balance each vine rather than leave a set number of buds, which also avoids the need for a green harvest. For the Ausone stable, Edouard Vauthier feels it is a Merlot vintage, with the berries “absolutely gorgeous”. The only vines of theirs that struggled in the heat were those at Ch. de Fonbel, where they have gravel soils rather than clay/limestone.  At Ch. Canon, the team even sacrificed certain plots on particularly thin, rocky soils totally – not vinifying the fruit as the vines didn’t have sufficient water reserves to handle the dry conditions. The team at Figeac highlighted how their rootstock (Gravesac) was particularly useful this year. The seeds were already brown in August – showing just how advanced the phenolic development was.   While most estates on the Left Bank and Pomerol sit at 3.6 to 3.9pH, here some wines were as low as 3.3 (bear in mind that whites will often be around 3.2), and most sit under 3.6. There’s a noticeable exception with Cheval Blanc, however the wine has an incredible sense of freshness despite its 3.86pH, and is clearly one of the highlights of the year. As with elsewhere, old vines and deep roots were also a support – and this was particularly true at Clos de Sarpe, Laroque and Angélus. The best wines here offer enticing perfume with aromatic finesse, backed up by concentrated yet crunchy fruit, seamless tannins and mouth-watering acidity, often with a saline finish. They are spellbinding.  Our highlights: Laroque, Carillon d’Angélus, Berliquet, Beauséjour Duffau Lagarrosse, Clos de Sarpe, Cheval Blanc, Bellefont-Belcier  Pomerol Those fortunate to have some of this appellation’s deepest and most prized clay soils produced some stunning wines, but it was definitely trickier on those with more sand and/or gravel. There were proclamations from many producers that this is Merlot’s “comeback” – but Edouard Moueix disagrees, this was just an easy year to farm the variety: “Merlot thrives here, but it is fragile, and you must be more precise – it’s not as tough as Cabernet Sauvignon or Cabernet Franc.”  Diana Berrouet Garcia at Le Pin noted how hot it was early in the season, recalling it was already 30˚C over the Easter weekend, but the rain that arrived after every heatwave allowed the vines to recover before they were challenged once more. Ch. Clinet was one of the few properties to use irrigation when permitted, something that helped avoid the vines shutting down, along with the cool nights and their mature vines (between 35 and 40 years old on average). By contrast, at Evangile – where the team is in the middle of a replanting program and the vines average just 15 years old – Juliette Couderc was worried about them even in June, however the naturally smaller leaves reduced transpiration and allowed them to survive until harvest at the end of August.   Alexandre Thienpont (Vieux Château Certan) chose to leave more bunches than normal on the vines – eight or nine, rather than the normal five or six – eventually harvesting tiny berries that weighed less than 1g. Noëmie Durantou Reilhac (of Ch. l’Eglise-Clinet) explained how important it was to manage the extraction carefully to maintain freshness, extracting early while the musts were cool and taking it off the skins after just two to five days after fermentation was finished (when some producers choose to leave the wine macerating for up to 40 days).   The warm winds in September concentrated the berries, and are the reason that yields are generally lower, often around 20-30% less than in 2021 for those that harvested later in the month. The start of harvest ranges from the very end of August through to 16th September, and almost everyone finished before the 23rd September. Merlot from the vintage is undoubtedly opulent and we found the best wines were often – but not always – those where its exuberant personality was tamed with Cabernet, bringing a firmer, more linear structure.   Our highlights: Belle-Brise, Vieux Château Certan, L’Eglise Clinet, Blason d’Evangile, Bourgneuf, Clinet, La Conseillante, L’If    Read more about Bordeaux 2022

It’s difficult to make broad statements about a year like 2023 in Bordeaux. Following on from our vintage overview, we delve further into the year, breaking it down by commune to offer insight on how each subregion fared in this singular vintage

The grey horse stretches its neck out towards me, curling its lip towards my outreached palm, before nuzzling my pocket, in search perhaps of a potential snack. Its head is the size of my torso, its hooves the size of my head, with the entire beautiful beast weighing circa one ton, I’m told. You can sense the power of its immense muscled mass. Nearby, Adelaide Bonnefond, a petite 20-something is calling to the rest of her troupe of friendly giants. Balthazar – the aforementioned grey – is “a real lazybones”, Baudoin can be a bit fast and over-eager, while Olive is a horse of remarkable patience. “Each one has its own character,” Bonnefond says.  We’re in a field a stone’s throw from Ch. Pontet-Canet, where the property’s 10 horses spend their weekends and holidays. This Pauillac Fifth Growth is one of a handful of estates around the region, and indeed the world, that has returned to using horses in the vineyard – in lieu of modern machinery. Unusually, they have brought this operation in house – with their own stables and a five-strong team dedicated to grooming, handling and working the horses, led by Bonnefond.  “I have no idea,” says Mathieu Bessonet – the property’s Technical Director – when I ask how much it adds to their bills. “It’s not important for us… it’s a philosophy.” Herbicides were banned long ago at the estate, and they’ve been farming organically since 2004, certified organic and biodynamic from 2010 (the first Classed Growth to achieve the latter), with horses first introduced in 2008. They’re just one form of livestock you’ll find on the property. When I arrive, a drift of pigs is penned on the front lawn, tasked with munching on the invasive weed, common couch or quackgrass – but there are cattle and donkeys too. Collectively, they consume 60 tons of hay, three tons of barley and 600 kilos of lucerne (organic, of course) – much of which will end up back between the vines.  “A lot of money goes into taking good care of this place – what is in fact our tool for production,” says Bessonet. “The property is over 300 years old, so we’re just passing through. If I spend 20 years here, it’s a long time – but it’s only 3% of the history of Pontet-Canet. We have to take care of this place to be able to pass it on.” And working with horses is just one way in which they aim to do this, reducing soil compaction, allowing water, air and microbes to move through the soil. They can be more precise with their work and – most importantly – break fewer vines. A stunning number of vines are knocked out of place by tractors, something that is considered a natural consequence of modern farming – but not one that this estate is willing to accept.  “Wine, it’s made by the roots of the vines,” says Bessonet. As vines age, their roots creep further down into the soil and Pontet-Canet has some of the oldest vineyards in the Médoc, averaging 55 years in age. And it is the age of their vines, Bessonet feels, that “allows us to express the terroir”, as well as tempering climatic extremes (a growing concern with climate change). While it wasn’t a key reason for the shift back in 2008, using horses also allows them to reduce their carbon footprint – both by using fewer fossil fuels and increasing the carbon-holding capacity of their vineyards, something that is at the forefront of producers’ minds today.  The switch from tractor to horse has changed the way they farm more than can be measured in analytical results, however. “They are not little machines; working the vines with horses, we really become one with the vines,” says Bonnefond. The way you interact with an animal versus a machine is totally different, and she feels that as a result they are much more reactive, more aware of their work and able to stop at any moment. And, as Bessonet notes, even those that have worked at the property for 10 or 15 years can’t help but smile when the horses pass by. As any good manager knows, a happy team will pay endless dividends.  Back in 2008, they started with just two horses, but that number has grown to 10 today. They have a combination of breeds – Percheron and Comtois largely today, although they’ve had Bretons in the past. Percherons are larger, and they’ve been moving more towards Comtois, favouring the slightly smaller and even more gentle breed that hails from the Jura. All are draft horses, historically used in war and agriculture – weighing around double that of the daintier breeds you might see eventing or show-jumping.  Bessonet’s grandmother was, he tells me, almost insulted when he told her they were using horses – seeing it as a step backwards; but, as he and Bonnefond explain, the work is totally different to that of generations past. They might not be powered by electricity, but modern technology and know-how is being used to refine the way they work and the implements they use. Over the years, they’ve developed lots of tools themselves, and worked with a local business to craft others – a slow process that can only be tackled by those with a truly long-term vision.  They buy horses when they’re around three or four years old, so they’ve been broken in and have started their training but can be finished and finessed in-house (“They know the commands, but they’re still young so don’t necessarily listen,” explains Bessonet. “They’re teenagers!”). They’re unsurprisingly picky about the breeders they work with, and ensuring that the training received in their formative years is up to scratch. By the time the process is finished, the moment the plough touches the trunk of a vine, a horse will know to stop instantly, not even needing a human command, avoiding any significant damage. They have a mini faux vineyard with a handful of short rows lined with posts (but no vines) on the estate, a sort of school where they can train younger horses and use at the start of the season, spending half a day so the animals can get back to the pace of work.  Monday to Friday, the horses are at work, stabled next to the winery (with stalls crafted from old barrels). Each horse will work for half a day (sometimes longer if the tools they’re pulling are sufficiently light), before being walked back to the stables to allow for active recovery – evacuating lactic acid in their legs, something that is essential to maintain their health. With the time to groom, harness and unharness, wash down, muck out and feed the horses, each will work around three hours or so a day. Bonnefond’s team will take one horse out in the morning, before going back out with a different one in the afternoon. Alongside their work, the horses are lunged (moved in a circle around a handler, on a long lead rein) – working both on commands and their flexibility. “To change their minds too, seeing something other than the vines” explains Bonnefond.  There are around 10 passes per row a year, four or five to work the soils and around five others – spraying to protect pruning wounds (to prevent grapevine trunk diseases), making holes for planting new vines, spraying horsetail to control mildew pressure, as well as the 500 and 501 preparations (biodynamic sprays). Today, around half of the property’s 81 hectares is worked by horse – and the team is always working to do more, but Bessonet is unsure if 100% is a realistic goal. Copper sulphate – the main spray used in organic and biodynamic viticulture – is spread by tractor, not being something they’d want to expose the horses to (nor put gas masks on them, as was done during the Second World War).   The work is, inevitably, seasonal – and they’re turned out to pasture at weekends and during quiet periods, with lunging to keep them sharp. As soon as véraison takes place (the grapes changing in colour from green to red), “It’s holiday time for the horses,” says Bonnefond, laughing. At that point the grapes become too fragile and could be knocked by the horses, breaking the skins and damaging the fruit.   All being well, the horses work until they’re 18 or 20 years in age, and then Pontet-Canet finds them a home to live out their old age. Retirement can, in fact, be the hardest stage for these work-horses, explains Bonnefond. “They’re used to seeing everyone every day,” she says. One horse, Turbo, kept waiting at the gates, ready to go to work, for well over a month after he’d left the estate, struggling to adapt to his new, restful way of life.  Bonnefond had never worked in agriculture before arriving at Pontet-Canet, having been at an equestrian centre, and her team has similarly varied backgrounds (one used to train trotters and one worked with circus horses, for example). They’ve each got their favourites in Pontet-Canet’s herd, she confesses (hers is a handsome bay who is especially energetic), but they all work with each of the horses, to keep it interesting for the animals, and so that no horse gets too used to any particular handler.  It's certainly not light work – for Bonnefond and her team at least. Days are long and the work is physically demanding, but seeing Bonnefond in the field with the horses, her dainty frame at odds with the gigantic draft horses surrounding her, it’s clear that she loves it. Having a team like this in-house is something few estates can afford, but it’s reflective – as Bessonet says – of the philosophy at Pontet-Canet. Their special band of gravel terrace in the Médoc, shared with the likes of Mouton Rothschild, Lafite Rothschild and Cos d’Estournel – properties that represent the pinnacle of Cabernet Sauvignon around the world, deserves to be protected and preserved in every way possible.  Explore all current listings of Pontet-Canet or read more about Bordeaux

There's more to Bordeaux’s 2023 vintage than the headlines will have you believe. Fresh from 10 days tasting and talking to the region’s leading producers and our commercial teams, Sophie Thorpe reports on the year – and some of the stunning wines produced

It was the vision of Jacques Perrin in particular – who farmed the property organically from 1950 onwards – that cemented Châteauneuf-du-Pape’s Château de Beaucastel reputation. Today his sons – Jean-Pierre and François – are at the helm, with fifth-generation Marc, Pierre, Thomas, Cécile (Jean-Pierre’s children) and Charles, Mathieu and César (sons of François) also all work full-time at the estate. All seven of the children worked in wineries around the world before returning to the family estate.  A visionary estate The estate was one of the first in Southern Rhône to become organic (in 1950) and then biodynamic (in 1974), making the vineyard better prepared than most for the climate change effects over the last 30 years.  “Beaucastel is the largest Châteauneuf-du-Pape estate in one contiguous plot and it stands at the most northern limit of the appellation. It is a vineyard which is therefore very exposed to the Mistral winds, which has a huge cooling-down effect,” Emmanuel explains, protecting the vineyard from extreme temperatures.  The vineyard is based on a limestone bench covered by a rather atypical mix of clay and sand, topped with diluvium “galets roulés” (pudding stones). It is an incredible terroir that, Emmanuel explains, “allows us to combine power and finesse even in the driest vintages. It has always been considered a benchmark terroir in the area and was in fact a cru before the Châteauneuf appellation was created.”  
The biodynamically farmed old vines have also helped offset the ever-increasing drought pressures in the region. “We are extremely fortunate to have older vines,” Emmanuel says. “The galet roulés covering our vineyards also help prevent water evaporation. So all in all we’ve managed to make great wines even in warmest and driest vintages.” That hasn’t stopped the domaine, however, from continuing to adapt their methods to better cope with the ever-present threat of climate change. “We are learning more and more every year and continue to implement changes we deem necessary.” Alcohol levels in the region have undoubtedly risen, an effect that the estate looks to counter. 
When Jacques Perrin was in charge, he created a very specific vinification technique which he later patented. He would heat up the must to 80˚C, to start fermentation quickly while allowing Jacques to use less Sulphur, helping fix the colour of the wine, particularly with the Mourvèdre grape which has a tendency to lose colour with age. But this method also reduced the greener flavours in the wine, that came from less ripe grapes. 
Today’s climate, however, does not face the same issues, with consistently riper fruit. As a result François and César have phased out this technique, instead opting to whole-berry fermentation, and even whole-cluster ferments for varieties like Syrah, to naturally reduce alcohol levels. These days they also pick earlier, opting for more freshness whereas in the past it was always the goal to maximise ripeness, something that no longer is an issue for the region.  “The estate is always looking at ways to counter the issues of climate change,” Emmanuel continues. “For example, some of the younger Syrah vines are today producing very powerful wines so we are either co-ferment with some Grenache, reincorporating some of the stems in the vat or carry out whole-cluster fermenting,” helping to find better balance in
the wines. In the vineyard too, the team is constantly looking for ways to improve. “We recently tried spraying clay on leaves to limit photosynthesis,” Emmanuel says. The initial experiments have proved positive, but it is still too early to see the long-term effects on the wine
and requires further testing. 
But this experimental approach is everywhere in the property. They continuously make alternate blends that they age in the Beaucastel cellar and over time compare with their main cuvées to see how well the final blend develops versus a different potential version of
the same wine: Emmanuel states the cellars are full of these experiments. 
The domaine has also been assessing how the Beaucastel wines age with different fining techniques. “We do a lot of comparative tastings and assessing of older experimentations. For example, we recently did a horizontal of Château de Beaucastel 1996, where each bottle was fined differently, and identified which fining technique works best for ageing the wine – this is crucial in the development of our knowledge and helps us to make sure decisions taken in the moment are the best ones for the future.” 
Hommage à Jacques Perrin What is distinctive about Château de Beaucastel and the Hommage cuvée in particular is the high proportion of Mourvèdre in the blend. The Hommage is typically made up of 60% Mourvèdre. Emmanuel explains, “Hommage is from our Courrieux lieu-dit parcel, where Mourvèdre was first replanted (post-phylloxera) in 1910. As Mourvèdre is such a late-ripening
varietal, Château de Beaucastel needs an outstanding Indian summer to hope for an Hommage vintage. The decision thereafter is taken during the blending tastings. 
“When tasting the foudre of Courrieux back in 1989, François and Jean-Pierre were overwhelmed by the outstanding quality and knew that it had to be bottled on its own. Jacques Perrin’s intuition for the best blend from the estate revolved around a dominant proportion of Mourvèdre. As a tribute to their visionary father, they followed his instinct and
dedicated this unique cuvée to him.”  Production remains tiny despite the huge demand for the wine. In recent vintages, production has been around 6,000 bottles per year. The only difference in the vinification process of Hommage versus their other cuvées is an extra six months’ ageing in 4,000-litre foudres. All the winemaking is fairly hands-off, vinifying all the varieties separately apart from the Muscardin, Vaccarèse and Terret Noir which – due to the tiny quantities – are co-fermented. The reductive varieties – Syrah and Mourvèdre – are fermented in open-top wood fermenters and the remaining oxidative varieties are fermented in concrete tanks prior to the all-important blending sessions with the family.  The 2018 vintage has already been fantastically reviewed, awarded a potential perfect 100 points from the Wine Advocate, with reviewer Joe Czerwinski describing it as “full-bodied
but incredibly silky, combining great purity, richness and length into a seamless, elegant package that should give immense pleasure for decades to come.” The success of the 2018 vintage, according to Emmanuel, was “down to the perfect ripening conditions in mid-October, allowing them to bring the grapes of this late-ripening variety in at perfect maturity – 2018 was fantastic for Mourvèdre.” 
The grapes of the Southern Rhône 
Château de Beaucastel proudly uses all 13 permitted varieties of the Châteauneuf-du-Pape appellation. Some even say 18 varieties, since varieties like Grenache, Terret, Clairette and Piquepoul all have a black, pink and grey clone of the variety mixed within the vineyards. “Each variety brings its own attributes that differ depending on the vintage, but also depending on the amount you use or the blend you make,” says Emmanuel. “For example, when you open a young Beaucastel, it’s very Grenache-driven, even when there is a similar percentage of Mourvèdre. It’s only few years later that Mourvèdre will finally come to the
fore, revealing game, leather and savoury characteristics. “Individually, Mourvèdre brings power and structure, but when you open an older Beaucastel it delivers freshness and silkiness. Grenache Noir brings kirsch, plum and cassis fruitiness. Syrah adds color, tannin and spices, and when blended with Mourvèdre and Grenache it
brings truffle notes.  Counoise can be considered the Pinot Noir of Châteauneuf-du-Pape and has a distinctive white pepper note. Cinsault adds freshness, Muscardin and Vaccarèse are very floral and add freshness, Terret Noir is light even in colour and adds acidity. The white varieties of Roussanne and Grenache Blanc bring elegance and freshness. Clairette is very aromatic and brings unctuosity. Bourboulenc adds tension with notes of almond and vanilla, Piquepoul richness and Picardan adds a lot of bouquet.   “For us it is very important to have all the varieties to make an elegant and balanced wine. However, above all, it is the knowledge and the art of blending, passed on from generation to generation of the Perrin family, that is the key to understanding the real expression of Château de Beaucastel terroir.” With experimentation at the heart of the Perrin philosophy, the infinite potential of blends when using so many grapes in the wine keeps the extended Perrin family busy monitoring their blending decisions as the wines develop with age.
