Soldera is one of Italy’s most iconic and best-loved wines. In top vintages, it is the absolute benchmark for Sangiovese par excellence and there are few wines in the world that can achieve the same level of ethereal beauty. The estate has always been a family affair and, following the passing of founder and guiding light Gianfranco Soldera in February last year, the remaining family members have continued his work, adhering to his strict philosophy and methods in the vineyard and winery. We caught up with Gianfranco’s daughter Monica Soldera who, alongside her husband Paolo, has worked with her father at the estate since 2003. The Soldera philosophy The Soldera story starts with the winery, Case Basse. “Its foundation is built on the history and heritage of the family", Monica says, "[it is] focused on a love of nature, passion for food and wine, and pleasure of knowledge. Nowadays Case Basse follows this path thanks to the help and personality of my mum, my brother Mauro and his wife Valeria, me and my husband Paolo.” Elegance, perfume and balance have been at the heart of Soldera from the outset. This has been achieved through a combination of factors synonymous with fine wine production: extremely low yields, strict grape selection at harvest, and the all-important terroir which is so well suited to growing Sangiovese (including not only the soil but all the natural influences specific to the estate such as climate, exposure and elevation). In addition to this, Soldera has always operated under a philosophy that the family refers to as “fine-tuning”. This fine-tuning approach has seen the estate go into minute detail in both the vineyard and winery to improve the quality of the wines. For example, the de-stemming of the grapes is done in a special machine that safeguards the integrity of the berries and enables their selection according to size. Berries are then checked manually, one by one, before being transferred directly into 100-quintal (10,000kg) oak fermenters for natural fermentation. Movement and racking of the wine is not practiced unless absolutely necessary and the wines are aged in large old Slovenian oak casks for around four years before the wines are bottled directly from the cask, completely unfiltered. Extensive research is also carried out at the property, as Monica explains. "There are two souls at Soldera: the first is very traditional in its work in the vineyard and in its winemaking processes but the other soul is academic".  Soldera has become a beacon of research in the region, commissioning in-depth studies on the soils, clones and climate within the property.  Monica says that climate change over the past 10 years has been very noticeable and therefore it has never been more important to understand nature, adding: “Nature gives you a lot of signals but you need to understand what those signals are telling you.”  Without research and a deeper understanding of their environment, many farmers might use aggressive methods to combat problems in the vineyard which cause more damage. “If you are scared, you act aggressively. If you are attentive to nature, it gives you confidence and you can work to protect it”. The research continues today with grants awarded to researchers who use the Case Basse vineyard to carry out their studies. This year they celebrated the 10th anniversary of The International Soldera Case Basse Award for Young Researchers, which is awarded by a commission of six agricultural professors and experts.  Candelaria Castello Lloret received the top prize in 2019 for her research entitled Metabolomics Characterisation of Spontaneous Vine Growth in Case Basse Estate, Montalcino. This type of research has enabled Soldera to continually refine their agricultural work as well as provide data for agricultural practices more generally. The 2019 harvest The 2019 harvest was the first at the estate without founder Gianfranco and therefore a very poignant one for the family.“It was full of emotion and responsibility," Monica says. "However, we are really happy with the results and the first evaluation of the wine leads us to believe that Soldera 2019 will be one of the best-ever produced at Case Basse."  "We took care of the vineyards, we selected the grapes and we carried out the vinification according to the principles and the practices that we learned from my dad throughout the years," Monica explains. "Even though nature can be variable and we must adapt to it. The 2019 growing season has been characterised by a different meteorological trend compared to other recent years. A cold winter with few precipitations followed by a fresh and rainy spring and a hot dry summer led to high-quality grapes very rich in fully ripe tannins, a guarantee for a long-lasting wine". "Meanwhile, 2016, 2017 and 2018 are maturing properly in the cellar and we are monitoring and tasting them regularly with the support of Professor Vincenzini and his team," she adds. "All of them offer us joy and great emotions that we will share with our customers in the coming years.“ The 2015 vintage  On the 2015 vintage, which is due to be released in the next few weeks, Monica said: "It has been a regular year in climate with no particular difficulties in vineyard and vinification. My father said 'an easy vintage' which means no challenges in production but joyful in wine. Nature was generous in 2015 and after having 2014 so difficult in weather this has been a gift.  "The 2014 Sangiovese Soldera is thrilling, but the production has been very limited so we are only able to share it in lower quantities with our customers. Coming back to 2015, we think that drinking wine is a personal and specific experience, nobody is allowed to tell you what you feel in your nose and mouth. At the end, what is worth is if you finish the bottle (not alone!) because you enjoy it. So I do not want to write about perceptions in tasting as a rule. Personally, I would say: a rainbow of emotions." The 2015 was exceptional in Brunello di Montalcino more generally. Significantly warmer and drier than the two previous vintages of 2013 and 2014. Production levels were around average for the estate at just over 16,500 bottles, up from just under 10,000 in the more difficult 2014 vintage. Everyone remembers their first bottle of Soldera, such is its impact on the senses. Speak to anyone lucky enough to have tasted it and watch their eyes glaze over as they are immediately transported back to the moment, the friends they shared it with and no doubt the food it accompanied. It is one of those rare wines that has a way of imprinting itself on the memory. Such is the magic at work in seemingly every bottle of this special Tuscan red that it’s not just the first bottle, but every bottle that you remember. This year marks the 50th anniversary of the founding of this enigmatic estate set in the hills of Montalcino. In its comparatively short existence, the wine has built a considerable reputation, yet after founder Gianfranco Soldera passed away in 2019, the property finds itself at an interesting crossroads. Right up until his death, Gianfranco Soldera had very much been the face of the estate. His personality and strong opinions made him a memorable character – and a man not beyond controversy. He was a leading voice against the Brunello consortium’s handling of the Brunello-gate scandal in 2008 and fiercely believed that Brunello should be 100% Sangiovese. In 2012, his winery was the victim of sabotage, in which large volumes of wine (from vintages between 2007 and 2012) were lost – simply poured down the drain. After the attack, the Brunello consortium offered to help club together and replace the wine, but Soldera rejected the offer and soon left the consortium (although the exact reasons behind his resignation or expulsion are unclear). After this incident, Soldera simply labelled his wine as Toscana IGT (today IGP), to make a point that his wine was and will always be 100% Sangiovese. Despite his polarising nature, ultimately Soldera let his wines do the talking. He was incredibly ambitious from the start, setting out to produce a wine that would compete with the world’s finest – a feat he achieved remarkably quickly, considering he started the vineyard from scratch – replanting the vineyards in their entirety when he arrived at the estate in 1972.  While Gianfranco was the face of Soldera, he did not work alone. The estate has always been a family affair. Both Gianfranco’s son Mauro and daughter Monica, along with her husband Paolo Franco, have worked at the estate for many years. It is Monica’s husband who has since taken charge of the winemaking at Soldera, after working alongside Gianfranco for 16 years.  As we sit down to taste through seven vintages of Soldera that span 21 years, Monica introduces her husband, on what is his first visit to the UK as Soldera’s winemaker. She makes the point that before joining the family business, Franco was in fact a skilled silversmith – requiring a keen sensibility of the hands, eyes and mind. Skills, she believes, are ideal for working at Soldera, and perfectly attuned to her father’s perfectionist mentality. Gianfranco was by all accounts not an easy man to work with. “It’s a difficult job,” Monica laughs. “We are not him, but we try our best.”  Monica also explains that, despite her father’s headstrong approach, he was always open to advice and frequently invited university students to the estate, experimenting with vines on the property, exploring ways to bring out the best in the grapes and vines. Monica believes that science is the key to making wine more naturally. “The more we study, the more natural our processes become,” she says. Working with students has allowed them to fine-tune what they do, keeping the vines healthy in the shifting climate. The 2017 vintage – the penultimate wine made under Gianfranco’s watch – is due to be released later this year. It was a very difficult vintage in Tuscany, with a ferocious heatwave in the summer of 2017. There were concerns that it might be similar to 2003, when their vines were badly affected by the high temperatures. But to their surprise, the vines showed no signs of water stress, the leaves remained green and rich in colour. Soldera felt this was down to the vines’ deep roots and higher trellising, something they introduced after 2003.  Despite the lack of water in 2017, the team was still able to work with a bigger canopy – meaning more leaves to shade the grapes. The intensity of the summer saw them harvest the grapes a whole month earlier than is typical, starting on 26th August. “To lose one month is extraordinary,” says Monica. Production was also down to 11,000 bottles, versus a normal 15,000. Technically they are allowed to produce as many as 50,000, giving an idea of how much they are prepared to sacrifice to maintain their high standards. Tasting the 2017, there is only a hint of the heat that severely marked the vintage for many of Soldera’s neighbours. The wine still has the trademark perfumed aromatics of old rose and the sinewy tannins that flex beautifully on the palate. It is easily one of the most elegant wines produced in Montalcino in 2017. The 2017, however, was always going to struggle to live up to its predecessor, the 2016– a vintage that is amongst the very best in the region. Monica noted just how easy 2016 was in terms of the growing season; everything was just right, right up until harvest. The sheer amplitude of aromas is really quite extraordinary, with strawberry fruit, old rose perfume, fiery earthy, irony, ferric tones and a wild floral note. The energy on the palate is wonderful and thick, tender, with almost elastic-like tannins that make the mouth water. The wine has such vibrancy and a really long finish. The 2015 as a vintage sits somewhere between 2016 and 2017 in style. While it was very warm, the vines were less affected and produced wines of great concentration. The wine does not have the aromatic amplitude of the 2016 and is nuttier in its aromas rather than perfumed, but seemingly the signature of Soldera – those tender tannins, like silk, bring so much energy and emotion to the wine. The 2014 is perhaps a surprise highlight of the flight. It was a difficult vintage, with lots of rain. For Monica, it proved very tough and required lots of sorting and fruit selection. In the end they got just 400kg of fruit from one hectare, making just 8,400 bottles. The dried rose, perfumed scent is matched by earthier, ferric tones. I get tomato leaf – which is often considered negative in tasting notes – but here it adds a wild, lifted, herbal tone that brings more complexity to the wine, complementing the sweeter rose notes and savoury, dried-stone aromas. The breadth on the palate is where the magic really is. It stretches right across the palate and brings such effortless depth too. The tannins are still tight but just starting to ease up, and there is so much freshness too. It really is in a wonderful place. A 10-year gap and the 2004 is the wine of the flight. Despite the bottle age, the scented Pinot Noir-esque perfume is still there in abundance, matched again by an earthy ferric richness. The tannins have eased up as you would expect, developing more mid-palate richness, making the wine incredibly juicy. The tannins are still elastic and bring a huge lift to the palate. It is a mesmerising wine. It was a great vintage in Tuscany, albeit with moderate temperatures for Montalcino, and it has matured beautifully. Some argue that Soldera excels in more moderate vintages – something that shines through in the 2004 and 2014.  The 1999 is another great vintage in Brunello and the next wine in the line-up. Distinct tertiary notes are now showing on the wine, with blue cheese, roasted walnut, dried cherry, sage and light herbal tones mingling together. There is still so much vibrancy to the wine. The tannins are not quite as silky as the younger vintages, but the acid is still so striking. It definitely feels like a wine of its age and, despite the minimal approach at Soldera, the framework suggests extraction levels were higher back then, in keeping with the trends of the time. It is a lovely wine, but not as ethereal as others. Finally, the 1996: at 26 years of age still holds on to those wonderful, scented aromatics as exuberant as ever. Again, matched with more tertiary notes, blue cheese along with dried cherry fruit, lots of dry extract, the tannins as structured and sinewy as ever, but still very fresh. It’s an unforgettable flight of some of Montalcino’s top vintages, but it’s Soldera’s ethereality that emerges – with that heady mesmerising scent and tender tannins consistent across the wines. Soldera might thrive in cooler vintages, but the quality of this wine rarely drops below outstanding. Even without Gianfranco at the helm, it’s clear that – under the watchful eye of Monica Soldera, Paolo Franco, and the rest of the Soldera family, not to mention their research team – the estate has a very exciting future ahead. I’m sitting opposite Rino Fontana, an Italian wine collector that Antonio Galloni named his Wine Personality of the Year in 2023. Fontana looks unassuming – like any other septuagenarian that you might find, cigarette in hand, knocking back an espresso in a sunny piazza. Sunglasses hang on a string around his neck, and occasionally he rifles through scraps of paper that seem to operate as a calendar and/or journal. I’m not sure what I was expecting, but it was perhaps someone a little more, well, suave. Fontana has been collecting wine since the 1980s and is renowned for his cellar, a treasure trove of remarkable vintages from Piedmont’s top producers. Indeed, Galloni has dubbed him “Il Professore” for his extensive knowledge of Italian wine – despite never having worked in the industry. As Fontana scrolls through pictures on his phone, recalling recent dinners, he rolls off names and vintages that would leave any wine-lover speechless. He grew up in the Oltrepò Pavese, where his father was a stonemason, but would buy grapes and make a little wine for the family. Fontana was sent to school in Valenza, a town known for its gold industry – and he started working in a gold factory in his late teens. Aged 24, he and his best friend opened their own jewellery workshop. It was the owner of a local restaurant in nearby Mortara who introduced Fontana to the real pleasures of wine, and a bottle of Conterno’s Monfortino that made him fall head over heels for Nebbiolo – the 1958 vintage, in fact. Since that first taste, he’s opened over 150 bottles (yes, really) of the 1958 Monfortino. It was that wine that prompted Fontana to start visiting producers – an adventure in self-education. At the time, people weren’t buying wine, and Italy’s winemakers were far from fashionable. He became friends with the likes of Giuseppe Rinaldi, Bruno Giacosa and Gianfranco Soldera, rapidly securing significant allocations of their wines when few others were showing interest. Producers, in turn, suggested he had a gift – unique in his ability to understand wines in barrel and foretell their future. Today, he covers around 80,000km a year visiting producers – but the vast majority of that mileage is in Piedmont, for Fontana drinks – and collects – little other than Nebbiolo. This one grape represents around 95% of his consumption, he says, with Barolo and/or Barbaresco on the menu every day. He always has the latest releases on hand in the fridge – even some basic Langhe Nebbiolo, but at least twice a week he’ll uncork something special from the 1960s or ’80s with wine-loving friends or producers. While Nebbiolo is one of many grapes to be declared “the king of wines”, for Fontana it really does reign supreme. When I ask why, marvelling at how he could drink so much of just one variety, he shrugs: “Nebbiolo is Nebbiolo.” When I push him, he says he loves its ageability, structure and elegance – something he feels you can’t find in Pinot Noir. He recalls a recent dinner with Galloni at Il Centro in Priocca, sharing a bottle of Domaine de la Romanée-Conti’s 2004 La Tâche alongside a 1947 Borgogno Barolo and 1989 Vigna Rionda from Giacosa. Both the Barolos, he says, grew over the dinner – while the La Tâche faded slowly. For him, Burgundy (even the world’s most sought-after bottles) is no match for Nebbiolo. That’s a controversial opinion – but Fontana is not a man short of views. He dismisses the wines of Cappellano and Accomasso, while he has firm beliefs on how Nebbiolo should be made, favouring traditional winemaking with old oak – not wanting to feel the wood in the wine. He argues that too many young producers are going to Burgundy and trying to echo that style in their wines, losing their Piedmontese identity. The resulting wines are, he feels, too technical, too clean. “Great wine can’t be perfect,” he says – suggesting that those imperfections are partly what makes wine feel alive. While the most established and famous producers dominate his collection, he also likes the wines from newer names such as Trediberri, Crissante and Cascina Baricchi. Beyond Nebbiolo, he’ll dabble in certain labels of Sangiovese – Soldera, for example will pass muster, as well as SanCarlo (a producer he feels rivals the former). Montevertine’s Le Pergole Torte would previously have been a prime choice, but now he’d choose Le Boncie’s Le Trame instead. He likes Valentini and Emidio Pepe, and used to buy Gravner but feels the style changed in 2004 so stopped. He sold his jewellery business in 2000 – dedicating his time entirely to wine – visiting producers, building his collection and selling to select parties (of which FINE+RARE is lucky enough to be one). Fontana has around 9,000 bottles in his collection today. He shows us a video of his cellar – intriguingly with many of the wines stored upright. Anything post 1990 is kept on its side, but older wines stand proud in his cellar – something which he argues is better once they reach a certain age, with the cork and humidity of the cellar more important in their preservation. It’s a remarkable collection, with incredible verticals of many wines. His access seems unparalleled – receiving larger allocations than many importers, given his historical ties. He is the only individual, for example, to receive an allocation of Rinaldi’s Brunate Cru – a wine that is otherwise kept exclusively for the family. Some of his most prized bottles are Giacosa’s 1964 Santo Stefano and magnums of 1970 Monfortino (“amazing” – he says), while he has a soft spot for the youthful 2015 Soldera. Now aged 73, Fontana seems just as enchanted by wine as when he first tasted that 1958 Monfortino. I ask him if there’s a wine he is still desperate to taste, a unicorn that he’s still hunting: the answer is no. He’s been able to try every vintage from the producers he loves. Rino Fontana: a collector like no other

The Clos des Goisses vineyard – originally known as Les Goisses – has been planted with vines since the 16th century and was well-known in the region long before it was ever made into a single vineyard wine. The name is taken from the local dialect “Gois” which means very steep. The vineyard is the steepest, directly south-facing in the whole of Champagne (between 30- 45% gradient), and the hottest site in the region. The plot was indirectly purchased by Charles Philipponnat's
grand-uncle Pierre Philipponnat who purchased it from his cousins, the Bouché family, after they were made bankrupt in 1935.  Pierre was well aware of the quality of the vineyard as it had already enjoyed some fame as “Les Goisses” around 1900, but had since been almost abandoned during the Phylloxera crisis, WWI and through the Great Depression period. Once purchased, Pierre Philipponnat immediately set to bottling “Les Goisses” in 1935. Its reputation really took off around the mid-'50s and it was around this time that its name was altered to Clos des Goisses. In the vineyard This 5.5-hectare narrow site is perfectly positioned to push the natural ripeness of the grapes to a level unmatched anywhere else in Champagne. In a region where there is an over-reliance on chapitalisation (the adding of sugar prior to fermentation to boost body and alcohol) as well as high dosage (the addition of sugar post-disgorgement to increase the perception of sweetness), there is little necessity of either in a vineyard site where good ripeness levels are reached every year. The vineyard also benefits from a pure Belemnite chalk soil that accumulates heat, further promoting optimum ripeness levels.  Clos de Goisses is very much dominated by Pinot Noir – a sun-loving varietal that brings weight, density, richness and red and black fruit flavours to the palate. Clos des Goisses is typically a blend of 65% Pinot Noir and 5% Chardonnay grown on the site, although this does vary from one release to the next. The 2006 vintage saw the first release of Les Cintres. This represented Philipponnat’s top single plot of Pinot Noir situated within the Clos des Goisses vineyard. These are some of the finest and oldest parcels (70+ years old) in the vineyard. For Charles Philipponnat, the intention was to show off the best parcels of Pinot Noir in a Burgundian fashion: one varietal, one place, one vintage.  Despite its prestige, Clos des Goisses is not a Grand Cru vineyard and for Charles Philipponnat, the Grand Cru/Premier Cru designation in Champagne is more an outcome of history rather than quality. He believes the classification system is not very precise because it concerns whole villages. He goes on to say: “It actually relates to the grape buyers' preferences before WWI. Whilst it roughly corresponds to the better areas, with chalky subsoils, it is not always very accurate. Mareuil sur Ay is rated 99% not 100% because the large buyers would rather have the grapes brought to their press houses in Ay than go fetch them in Mareuil, back before WWI." Mareuil vineyard owners have filed a request for Mareuil to be recognised a Grand Cru,
but no one wants to shake the lees too much in Champagne. An old local saying goes: “Ay le nom, Mareuil le bon”, meaning “Ay has the name, Mareuil the goodness”. Pierre Philipponnat used to have it printed on his labels and stationery. In the winery Champagne is a highly processed wine and whilst the terroir remains important, precision in the winemaking is essential. For Charles Philipponnat, it’s a sum of details, always keeping in mind quality, age-ability, and truthfulness to the House’s style.  Healthy and ripe fruit, careful pressing, using only the purer first press juices, and proper ageing on the lees are the most important steps. And at all times, avoiding green bitterness, as well as (at least at Philipponnat) the loss of fruit through oxidation. Outside of the vintage expressions of the single vineyard sites, Philipponnat is a strong advocate for the Solera ageing process and use of high proportions of reserve wines. Around one-third of reserve wines is typical in their NV wines adding complexity to the wine. Charles Philipponnat goes on to say that the solera system allows for older elements to develop complexity while keeping the blend fresh and protected from early oxidation. Clos des Goisse “L.V” 1995 The L.V. release of Clos des Goisses is the rarest bottling to come from the vineyard in which only a few hundred bottles are ever released. These are Champagnes that are aged for 25 years unmoved in the Philipponnat cellar and disgorged just six months prior to release. The
wines are only sold directly through “ambassadors” of Philipponnat of which Fine+Rare is proud to be one, with a few magnums reserved for auction sales. The L.V. is an intrinsically exceptional Champagne, a perfect reflection of the unique characteristics of an unparalleled, pure chalk hillside, and Philipponnat’s expertise in crafting wines.  Mineral and intense, it stands out for its great freshness and remarkable fullness. According to Charles Philipponnat, the Clos des Goisses L.V. collection "adds the complexity of Champagne aged in the best conditions to the wine’s characteristic freshness. The wines are protected from any oxidation by prolonged contact with the lees before their disgorgement. Gaja’s wines from Barbaresco are undoubtedly some of the finest wines in the world, but their single vineyard wines from their Brunello di Montalcino estate – Pieve Santa Restituta –whilst a lot less well known, deserve equal attention, particularly with the release of their 2015s due out next week. 
It was a big decision for this Piedmont producer to invest in another region of Italy but Montalcino to Gaja seemed the logical choice. On our visit to the property last summer, Angelo Gaja explained to us the obvious parallels between Barolo/Barbaresco and Montalcino – both regions of prestige for fine wine, both made from indigenous varieties and from single varietals that undergo extensive élevage. These were enough for him to pursue a search for the right plot in Montalcino. 
Now after 20 vintages at the property and blessed with the fantastic climate conditions of 2015 – Gaja have produced arguably some of the finest Brunellos of the vintage.
The Pieve Santa Restituta Estate in the Tavernelle region of Montalcino has an amazing history. Named after its church situated in the middle of the estate, it is one of the four remaining churches still standing in Italy whose foundations date back to 400AD.  Of more contemporary relevance, the vineyards themselves neighbour Soldera’s Case Basse estate so there is no question the terroir here is of exceptional quality. For Gaja, the vineyards are in a particularly privileged position, facing south and south-west with an altitude ranging from 320 to 350 metres and characterised by an extremely windy, dry and bright microclimate. The windy site protects the vineyard from damp, alleviating disease pressure, whilst the altitude slows down the ripening allowing the grapes to gain flavour complexity with a long slow ripening process and retaining freshness. 
They produce just three wines from this estate and perhaps more interestingly no Rosso Di Montalcino or Brunello Di Montalcino Riserva. The three wines are a straight Brunello Di Montalcino (first produced in 2005) and two separate single vineyard cuvees: Rennina and Sugarille.  The Rennina is more accurately from three vineyard sites in the same vicinity with similar terroir, first vintage produced by Gaja in 1994. Rennina is characterised as a more tannic, earthy, structured Brunello with riper, preserved fruit character. The Sugarille, first produced by Gaja in 1995, is a single-vineyard site that is more delicate with heightened floral complexity and more approachable tannins but has great ageing potential. 
They don’t produce a Rosso believing that it would be a second-rate wine, which is not in keeping with the Gaja philosophy. Instead, they sell off any second-rate fruit in bulk. In a poor vintage, they don’t produce their single-vineyard wines at all. In 2014, 2012 and 2009 no Sugarille or Rennina were produced. They also never produce a Riserva because Angelo Gaja’s winemaking philosophy has always been to reduce rather than extend the ageing of the wine in barrel.  Ageing to Riserva levels, Gaja believe, means the wines lose their freshness and clarity. Coupled with warmer temperatures in the vineyard over the last 20 years, the effects of global warming have only further cemented this belief. Angelo's daughter Gaia Gaja also believes the higher temperatures produce riper fruit and more alcohol which, when aged extensively in oak, leads to more of the wood tannins infiltrating the wine.  For Gaja, over-extending the oak ageing of the wine is the reason they don’t produce a Brunello Riserva (typically aged an additional year in barrel). The property is very much focused on their single-vineyard sites of Rennina and Sugarille, each representing their top cuvees. 
The 2015 vintage 
Critics and winemakers alike have put the 2015 vintage on a par with the great 2010, sharing similar levels of opulence and voluptuousness on the palate. The 2015 vintage has produced some incredibly juicy yet vibrant wines. Wines with amazing voluptuousness backed with great acidity, fatness and freshness. This style, like 2010, is a real crowd-pleaser but with trends in the region backing away from over-ripeness and high-level extraction, the 2015s are arguably more elegant, with much more tension and finer tannins than the monolithic 2010s. 
Having extensively tasted the 2015s from Montalcino, the wines have a staggering richness, fleshiness, almost a creaminess that is rare to find in pure Sangiovese. At the same time, the fruit does not feel at all over-ripe, still retaining fresh fruit clarity alongside tannins that are fully resolved, yet providing a piquant bite and structure to the wines. These characteristics come through in spades with the single vineyard wines of Gaja’s Pieve Santa Restituta. 
The wines 
“Sugarille” Brunello di Montalcino
Getting to taste their 2015 single vineyard cuvee alongside the same single vineyard 2013s was a great insight into the two very different personalities of the two wines. I can’t help be drawn to the Sugarille with its seductive complex florality, it’s beautifully delineated fruit and seductive tannins. Whilst the 2013s are more “classic” with a wonderful mouth-watering acidity, elegant body and overriding finesse, the 2015s Sugarille is exceptional, it has added energy, contained power and an abundance of complex aromas (aniseed, dark chocolate, contrasting earthy hedgerow and floral lift). The Sugarille is totally defined by very fine tannin and is incredibly elegant for a Brunello. 
“Rennina” Brunello di Montalcino
Whilst the Sugarille may be more immediate, the Rennina has a brooding quality and power with more spice and structure that is equally impressive if a little more backward and austere. It certainly needs more time to further integrate but the slickness and fired/ scorched earth quality and sinewy textural qualities is equally beguiling. You can’t help but compare it with its Soldera neighbour and wonder if with further time in bottle it will be a worthy comparison. It is certainly brilliantly made, texturally sound and will age beautifully.  
They are some of the best examples from the vintage, both with distinct contrasting personalities. These 2015s are due to be released next week and are not to be missed. The combination of the winemaking prowess of the Gaja family, allied with a superb vintage in Brunello di Montalcino makes for some extraordinary wines. Explore more Editorial

There’s something unlikely about the pairing of Scotland and Andalusia – the fine single malts of Scotland’s craggy landscape being matured in barrels shipped from the warmth of Jerez, where orange trees line the streets. Together, however, the raw spirit and these barrels – drenched in the complex flavours of the Sherry they previously held – create something all the more special.  Today you’ll find spirits aged or finished in any number of casks – previously bearers of Bourbon, wine, Port, Madeira and more. Sherry casks are, however, the traditional choice – but why?  Well, largely thanks to the Scots’ penchant for Sherry. The fortified wines of this southern Spanish region have been savoured north of the border since the 16th century, although it was a trend for Sherry and rum punches in its clubs during the 18th century that really caused a rocket in sales. Doubtless this was tied to Scottish interests in Sherry, with bodegas in the hands of the likes of Arthur Gordon and George Sandeman (also of Port fame) .  At the time Sherry was – like most wines – shipped in cask, then bottled on arrival. These barrels wouldn’t be the ones in which the Sherry had been maturing (ie they weren’t part of the solera), but barrels explicitly made and used for transport, holding Sherry for a matter of months as it was shipped from Spain to its final destination. This kept the Scotch whisky industry well stocked with a steady supply of Sherry casks being delivered right to its doorstep.  And producers found that these barrels – thought to have absorbed as much as 10 litres of Sherry – delivered layers of complexity to the spirit that fills them, adding notes of dried fruit, nuts and sweet spice. Of course the sort of Sherry that filled the barrel impacts the style of the final whisky. Biologically aged styles – Fino and Manzanilla – are rarely used, while the nutty, spice and dried fruit notes of Oloroso are the most common choice. Pedro Ximénez or PX – the lusciously sweet, almost treacle-like style of Sherry – lends the richest notes to a whisky.  Gradually, however, regional bodies around the world started insisting wines were bottled at source to protect their wines from possible adulteration. And so in the 1980s, the death knell almost sounded for Sherry-cask-aged whisky, as it became illegal to transport Sherry in cask. This, paired with Sherry’s fall from fashion and therefore decreased production, made Sherry casks rare beasts.   But – to the relief of whisky-lovers everywhere – the industry found a solution. Today, the production of Sherry casks for the whisky industry has become a second avenue of income for Sherry bodegas. The barrels are filled with Sherry with the sole purpose of flavouring the cask – either at the bodega in Jerez, or in Scotland (having shipped the Sherry over).   Technically, there’s no definition of “Sherry cask” under Scotch whisky regulations. While casks have to be made of oak and hold no more than 700 litres, the rules don’t specify how long a cask would have to hold Sherry for the term to be used on the label. In fact, at present, the casks don’t in fact have to hold “real” Sherry – and as a result much of the fortified wine used to season casks is from beyond the borders of the Sherry triangle.  “True” Sherry casks are in high demand. Today they can fetch as much as 10 times the price of a Bourbon cask. Given their expense and rarity, it’s no surprise that producers use these casks many times over. However, with each use the impact of the Sherry flavour is reduced – meaning that “first-fill” casks are all the more special. Winemaker Jessica Servet has certainly been busy since our last visit to Hegarty Chamans, an enchanting vineyard in the hills of the Minervois. The winery’s success over the last few years and conversion to biodynamics has earned them an enviable reputation – both abroad and locally. Servet has since been elected deputy mayor of the local village and asked to take the lead on environmental sustainability issues in the wider district. Once a team of outsiders – with the estate founded by Englishman Sir John Hegarty and his wife Philippa, they are now increasingly influential in the region. But this wasn’t always the case: Hegarty Chamans has always seen itself as the “black sheep” of the Minervois.  From the outset it had a very clear goal to promote organic principles, which back in 2002 was radical for the region. The estate was also keen to produce wines of a certain style, wines that were elegant and very pure, resisting what Servet describes as “the make-up” of products that can be (and are) widely used in the region to affect the style and flavour profile of the wines. “People want the wines very ripe but with acidity,” Servet explains, “so they simply pick late and add acidity in the winery. This is something we are strongly against. We want to produce a balance in the wine without manipulation.” In the southern French heat, it can be tricky to produce wines that are fully ripe, while also keeping the alcohol in check and retaining freshness. Servet explains the key to their success is not to push the vines too hard. “You look around and some vignerons are willing to push their vines to the extreme to maximise yield, 80 to 90 hl/ha is not unusual for the region. The vines are weak, susceptible to uneven ripening and disease and finding balance in the wine is not easy. We realised we had to drop right down to 25 to 30 hl/ha to find that natural balance.”  She goes on to explain this approach produced a wine style that initially was deemed “not Minervois enough”. Their wines had even been rejected by the appellation at tasting (to carry the appellation’s name, wines have to be presented to a tasting panel).  The irony is that their purist attempts to reflect the vineyard were seen as atypical of the region. This rejection, while unhelpful, did not steer them off course. Thankfully in more recent years their philosophy and the success of the wines both locally and further afield has seen their approach become influential in what is a true representation of Minervois, or
perhaps what is more important for Servet, a true representation of the Hegarty Chamans vineyards. It is a very particular site and not dissimilar to the likes of the secluded wineries of Ch. Rayas, further north in Châteauneuf-du-Pape, or even the secluded vineyard of Soldera in Tuscany. What they all have in common, alongside low yields, is a belief that great vineyard sites need biodiversity to produce great wine.  All these vineyards are surrounded by forests that not only protect the vineyard from chemical infiltration from neighbouring sites, but benefit from a rich ecosystem that protects soil health and the vine’s natural resistance to disease, extending its natural life. The ultimate goal is to have a vineyard in perfect self-sustaining health. Servet believes this rich biodiversity is key to the vineyard working with its surrounding environment. Animals are a fundamental part of this: the estate raises a small flock of sheep which eliminates the weeds which grow between the vines and provides natural fertiliser, supplemented by other organic manures.  They also keep bees and prepare their own composts which are energised using specific biodynamic preparations. After spreading on agricultural soils, they encourage microbiological life and the mineral and organic richness which Servet believes is at the source of the strong terroir expression found in the wines. Beyond Hegarty Chamans, Servet is also encouraging others to employ a sustainable approach. In the region, all three of the main wineries are now organic and her latest domestic project is to organise a communal composting system for all residents living in the region.  Hegarty Chamans’ top cuvée, Black Knight, comes from the estate’s finest vineyards and is made only in the best vintages. We were fortunate to taste the 2016 on a number of occasions earlier this year, from barrel and following bottling (which is exclusively in magnum). We were blown away by the quality, the textural richness of the wine, the layering of the tannins and the purity of fruit – which is really special. It certainly has the signature elegance the winery has always promoted above anything else, but there is Minervois power too. Servet knows in the run up to harvest whether there will be a Black Knight cuvée – and in 2016, it proved to be a very easy decision. “We had enough rain in the spring to see us through the summer with very steady weather, no heat spikes and very even ripening, it was the most relaxed season I can remember,” she explains. The cuvée is made typically from the same favoured plots. Syrah, which makes up 80% of the blend, always comes from the Rabbit vineyard. “It's special due to the particular exposition of the vineyard and the effects of a distinct red and white clay in the soil. It produces an unbelievable freshness to the Syrah from this site,” says Servet.  The Carignan (typically around 10% of the blend) always comes from the oldest vines on the entire property, high up on the hill above the winery, 60 to 70 years in age and offering consistency every year. The Grenache, however, is not always from the same site, and is often chosen after vinification.  “I know the flavour profile I am looking for and when I find it, it goes in. The best expression of Grenache is based on picking it at exactly the right time. It gives you incredibly pure strawberry jam flavour with white pepper. When you capture both that sweet and spicy flavour in the wine you know you have got it right,” explains Servet. Using only natural yeast, the grapes go through fermentation and undergo a four-week maceration with gentle extraction, with the wine kept at a low temperature to retain aromatics. Only the free-run juice used for Black Knight – again retaining the elegance in the wine. The wine is then aged in a mix of one, two and three-year-old 300-litre barriques, Stockinger and Séguin Moreau barrels for 22-24 months. It is this long élevage that creates the wonderful layered texture in the wine. “There are lots of tannins in the wine and it needs this time to fully integrate in barrel,” Servet says. As I push further to understand the secret behind this cuvée, Servet admits there is always a sense of mystery in winemaking. A lot of the time her work is done on instinct and how she feels. Servet explains that if she is in a bad mood, she doesn't go near the wines. "There is energy here and I trust in that. I feel it in the vineyards and I feel it in the winery.” There is certainly a bit of magic that goes on in winemaking and the vineyards of Hegarty Chamans are certainly special – as you can feel in the wine. The 2016 Black Knight is the finest cuvée we have tasted from the property, and it is fast becoming one of the most exciting wines from the south of France. Making a mark in the Minervois

Brunello di Montalcino is so well-established in today’s world of wine that it is hard to believe how relatively young its international reputation is. This pure expression of Sangiovese, from the vineyards around the hilltop town of Montalcino in Tuscany, was first produced in the 1860s, named by Ferruccio Biondi-Santi (of Biondi-Santi). The name Brunello di Montalcino comes from the supposedly superior clone of Sangiovese identified by Ferruccio’s father, Clemente Santi – known as Sangiovese Grosso or Brunello. Prior to 1968 (when Montalcino was first awarded DOC status), however, there were just 11 producers operating in the region, working around 60 hectares of vines. It was these pioneering wine-growers who went on to set up the Brunello Consorzio (consortium), determined to promote and protect the region’s vinous heritage. By 1980, when Montalcino was granted DOCG status, that number had grown to 53. Today there are over 250 producers, with more than 2,000 hectares under vine, and Brunello di Montalcino is one of Italy’s most famous appellations. As the vineyards have expanded, so has the range of styles, showcasing the varied terroir and distinct characteristics of single vineyards or Crus. Made exclusively with Sangiovese, Brunello di Montalcino is released a minimum five years after the vintage, spending at least two of those in oak. Riserva wines are aged an additional year prior to release. Producers generally also make a Rosso di Montalcino, with an additional 500 hectares classified for Rosso di Montalcino production. These wines can be released after just one year, with any vessel permitted – producing a softer, earlier-drinking style of Sangiovese. The famous Brunello clone long thought to define the wines is a myth, and various clones are planted in the region today. Subzones or crus? Despite the climatic differences in Montalcino, the concept of subzones within the region is still in its infancy and not without controversy. Some producers are reluctant to endorse a terroir-specific identity to Montalcino because many have vineyards throughout the region. They use this to their advantage, identifying how certain sites perform better than others in different vintages, allowing them to play around with their blends when designating what becomes their Brunello and what is relegated to their earlier-released Rosso di Montalcino. Another reason for their reluctance is that there is plenty of variation even within these subzones – with microclimates varying dramatically, most notably in altitude. It is the altitude of the site that, for many Brunello producers, is the central factor in determining the style and in many cases the quality of the wine. If this is the case, high-altitude vineyards could have more in common with each other than neighbouring vineyards lower down the slope that sit within the same subzone. For this reason, single vineyards or Crus could be a more accurate way to divide and break down Montalcino’s terroir. Subzones may not tell the whole story, but it is easy to understand why producers with vineyards located in a specific subzone with a distinct identity are keen to highlight this area – a village, so to speak, rather than single vineyard or Cru. The north-south divide The Montalcino vineyards are positioned in a circle around the eponymous hilltop town. At the simplest level, the sub-zones to the north of the town are cooler than those to the south. Producers in the northern regions of Montosoli and Canalicchio tend to pick their grapes later than those in the south. In the 2016 vintage, for instance, lower sites in the south were picked three to four weeks earlier than those in the north. However, altitude and prevailing winds also play an important role in the microclimate of a site. The vineyards in the hottest region of Montalcino in Castelnuovo dell’Abate are also some of the closest vineyards to Mount Amiata, which – at 1,740 metres’ altitude – is large enough to create its own weather patterns. This is hugely beneficial, creating a larger diurnal shift in temperature. While each of the sub-zones (particularly Montosoli) has a distinct flavour profile, the important factors of altitude, picking dates and winemaking techniques all play a role in influencing the region’s rich and varied tapestry of wine styles. The North Montosoli Directly to the north of Montalcino sits the Montosoli hill, perhaps the most distinct terroir in the region and certainly the sub-region that most strongly champions the sub-zoning of the appellation. Montosoli is distinct not just because of the cooler climate but also because of its soil, a distinct calcareous galestro. Wines from Montosoli have a finesse to the tannins as well as heightened aromatic capacity. The galestro rock brings a sapidity and mineral salinity to the wines. Despite the notable elegance, the wines also match the power and intensity of some of the other great sites within Montalcino. Altesino was the first producer in the region to produce a separate exclusive Montosoli cuvée in 1978. Baricci (one of the founding fathers of Brunello), however, has only ever had vineyards in Montosoli and has long been aware of the qualities of the subregion, claiming that it has been legendary for wine production for hundreds of years. Key producers: Altesino, Baricci, Caparzo, Livio Sassetti, Canalicchio di Sopra, Valdicava Other wineries based in the north of Montalcino, outside Montosoli, make some of the region’s best single-vineyard Crus, including Il Marroneto’s Madonna delle Grazie and Castiglion del Bosco’s Campo del Drago. Torrenieri To the far northeast lies Torrenieri; here the compact clay soils create more tannic, burly examples of Montalcino. Key producers: Sasso di Sole, Citille di Sopra Central + The South Tavernelle Tavernelle is home to some of the most famous producers in Italy. Soldera’s Case Basse vineyard is situated here, alongside neighbouring Pieve Santa Restituta, the Brunello estate owned by the Gaja family. For Gaja, Tavernelle is in a particularly privileged position, facing south and southwest with an altitude ranging from 320 to 350 metres, characterised by an extremely windy, dry, and bright microclimate. The wind protects the vineyard from damp, alleviating disease pressure, while the altitude slows ripening, allowing the grapes to gain flavour complexity but retain freshness. Poggio Antico is also based in Tavernelle and has some of the highest vineyards in the whole of Montalcino, with an average elevation of 480 metres. At this height, the soils are rockier and more calcareous, providing good drainage for the vines while the vineyards are exposed to sea breezes coming from the Tyrrhenian Sea, extending the ripening period and creating more flavour complexity in the grapes. Key producers: Soldera, Pieve Santa Restituta, Poggio Antico Sant’Angelo in Colle To the southeast of Tavernelle, these south-facing vineyards feel the full effect of the localised weather patterns caused by Mount Amiata. Here lies an historic part of the Montalcino appellation with many of the original founders of the consorzio based here, including Lisini, Il Poggione, Talenti, Argiano and Col d’Orcia. This region is known for producing the most muscular and powerful styles of Brunello. Key producers: Lisini, Giodo, Talenti, Il Poggione, Argiano, Col d’Orcia
 Castelnuovo dell’Abate Castelnuovo dell’Abate – the warmest subzone in the appellation – expanded considerably in the 1980s and 1990s. Here the wines – such as those of Poggio di Sotto and Mastrojanni – are known for their balance between elegance and power. Alongside its two vineyards in Central Montalcino, Le Ragnaie also has a vineyard in the region. The slopes are south-facing, however their warmth is moderated by the cooling winds of Mount Amiata, which are particularly noticeable at night. This diurnal shift slows ripening, retains acidity and allows for more complex aromatic and flavour components to develop in the grapes. The mountain also acts as a protector, helpfully diverting storms from the region and protecting it from hail. The varied altitudes within the subzone can produce contrasting styles of Brunello: Poggio di Sotto, for instance, will harvest its vineyards on lower slopes four to five weeks before their higher vineyards. Key producers: Poggio di Sotto, Le Ripi, Mastrojanni, Le Ragnaie Central Montalcino + Le Croce The central vineyards, located directly to the southeast of the town of Montalcino, are home to some of the most traditional styles of Brunello, known for their ageing potential. Both Fuligni and Salvioni have southeast-facing vineyards that sit between 380 and 450 metres above sea-level on soils of chalk, schist and stony marl – and Salvioni in particular argues that this altitude is key to producing the best Brunello. Further south in the Croce subzone, Cerbaiona has become a cult name in Montalcino, offering a unique expression of the appellation largely due to its distinct patch of terroir. The vineyards of Cerbaiona are located on limestone shale and sandy soils, which – combined with a gentle touch in the winery – produces a particularly elegant style of Brunello. Of course, Le Croce is also home to Biondi-Santi – the estate that started it all. The original Il Greppo property is situated at 480 metres above sea-level and, despite the high altitude, the estate likes to pick early, opting for a distinctly fresher, structured Brunello that is austere in youth but built to age for decades.
