Since the ban on chemical prevention came into practice across Europe in the early 2000s, vine disease has grown to epidemic proportions, including in some of the world's most prized vineyards. Marco Simonit's methodology of using non-invasive, gentle pruning techniques and shunning any chemical additives has brought him many endorsements from wineries around the world. He has advised at over 100 wineries and currently has a team of 25 international consultants working for him, including at top estates such as Domaine Leroy, Ch. d’Yquem and Champagne House Louis Roederer.  In an interview conducted just weeks before the Coronavirus lockdown began, Simonit outlines the philosophy behind the L’Età Più Bella (With Age Comes Beauty) range of wines. L’Età Più Bella (With Age Comes Beauty) is a collection of wines produced entirely from old vines from Marco Simonit’s home region of Friuli – arguably Italy’s top region for white wine. Simonit states “the idea of the project is to identify the distinct character one gets from wines made exclusively from old vines. It also provides a true terroir blueprint of that vine. More than that and what is the key impetus behind the project was to produce something that would come to be a physical embodiment of the Simonit&Sirch philosophy.”  This project has been a dream for Simonit for the past 20 years. “By having a bottle of wine on the table I hope it will create conversation about the world we live in, the environmental issues that surround food and wine production and the efforts made to make such production sustainable,” he says. The importance of protecting old vines is multifaceted. Simonit states, “First and foremost it promotes sustainable viticulture without an over-reliance on water and chemicals. Old vines with deeper roots are effectively dry-grown – with the deep roots feeding from water locked into the soils. Young vines (depending on the climate) rely on irrigation in their early years and continual replanting of young vines leads to a huge increase in water requirements.” “Fundamentally the project is to provide sustainable viticulture under the threats of global warming,” he says. Being organic/biodynamic, according to Simonit, is not enough in light of current threats to the environment. "Vines have to be stronger and self-sufficient if they are to survive the increasing climatic pressures. The current volume of fertilisers and water is not sustainable in the long-term future," he adds. Old vines are also more sustainable in terms of water requirements and self-sufficient when it comes to nutrients not needing to rely on chemical fertilisers to keep the plants operational. Simonit explains: “A healthy vine (free of pathogens) has much more live wood on the vine which means much healthier capillaries and is therefore much more resistant to the stress and strains of the growing season – whether that be pathogenic fungal disease, hydric stress or other diseases typically found in a vineyard.” Educating the vigneron and the wine lover For Simonit, this project is a plea for wine lovers to understand the fragility of future production in many fine wine regions of the world. “In the world, there are old vineyards at risk of being uprooted, or not valued," he says. "In this case, it is their uniqueness that makes the difference and I want the L’Età Più Bella range of wines to become a means of talking about the importance of vines reaching advanced age (an approach completely at odds with many producers in Italy currently). "I want to make people understand through a product how important these ancient vineyards are, and how through tasting the wines one can go deep into the territory, the vineyard, and the single plant and its conditions of health.”  Vine-by-vine assessment “There is no mass approach when dealing with vines like these,"Simonit explains. "All plants are different, just like men and animals. The extraordinary work is to understand plant-by-plant how many bunches, how many leaves to leave, whether to trim and in what way.  "Soils are analysed, which is fundamental for maintaining the radical system. It takes a lot of energy, willpower and time because the individual plants are treated within the vineyard, and then you have to be severe. The grapes entice you, but you have to respect the plants as individuals.” Vine pruners as a skilled workforce More than that, Simonit wants the project to be an opportunity to bring focus on the regions where the wines originate, as well as the growers who produce the grapes. “It is important for me to have consistent relations with growers who share the old-vine philosophy and values and have detailed knowledge and approaches to their vines.  "But the project also brings the philosophy to the growers. By producing the wine, the growers themselves become further involved, recognising the benefits of the preservation of the old vines and how these wines would further promote their region.” An additional benefit that has stemmed from the old-vine project and the adoption of Marco Simonit’s gentle pruning techniques is that it has reawakened the craft skills of traditional vine pruning that have been lost due to the introduction of chemical and machine farming during the latter half of the 20th century.  Marco Simonit’s pruning school and one-to-one consultancy with vignerons and their workers all over the world have introduced new skills to individuals that have been underappreciated as part of a low-paid, unskilled workforce, often working in poor conditions and with minimal social support as is the case with many seasonal workers. “Training up pruners has become part of a social responsibility," explains Simonit, “not only improving the health of the vines but also creating a skilled workforce that through vine protection and a reduction in chemical use has been a financial benefit to both wineries and their workforce”. Marco states “the social impact of training vineyard workers has been recognised by government initiatives in Europe who have worked with us to help increase the skillset and employability of immigrants in parts of Italy with the end result having a beneficial effect on their individual lives and the communities involved.” “Where better than to start” he states, "than in my home region of Friuli in Northern Italy". A region whose reputation continues to grow and is now widely recognised as the country’s finest for top white wine which competes with some of the finest in the world. They make pretty good red wines there too. Born and raised in Friuli, Simonit couldn’t think of a better place where he could bring the philosophy to life: “Friuli needs a project that speaks about Friuli.” 30 years is an old vine (for Sauvignon Blanc) A common issue in vineyards around the world today is vines dying at just 20 years of age, requiring them to be pulled out and replanted. The vine is not even operational in terms of production for at least three years of growth. The longer the life of the vine can be extended, means a huge reduction in both economic as well as environmental pressures. At 15-20 years old, the vine will have good adaptation to its soil, consistency in its production and will be much more self-sufficient. "The Sauvignon comes from a 30-year-old vineyard, but 30 years may seem young in an 'old vines' context but 30 years for Sauvignon is a lot. For example, Sancerre vines have a maximum lifespan of 25 years. And it is very rare to find it older than this, it is one of the most sensitive varieties to diseases.  Speaking of the pandemic, since we are on the subject, there were the pandemics of Sauvignon and Cabernet Sauvignon: they are the most sensitive varieties to diseases, there were international experts who have tried to investigate this theme. In France for example the producers that lost their plants to disease, planted younger plants, and they made wine from old and young plants together, but the wine was no longer the same. Because the difference is made by the wine that is obtained only from the original plants, without the 'interference' of the new plants. "Sauvignon gets sick from pruning wounds, fungi enter that destroy the plants and kills them. It is very difficult to find single original Sauvignon plants. That is why the Simonit&Sirch method performs pruning cuts that do not ruin the path of the lifeblood of the plant. "Ultimately we want to tell these things through wines. With a point of view that no one has ever taken into consideration, because we invest in people and because we respect the plants over time. "It is no longer enough to say that you are 'bio' to guarantee a good job, you need to do a lot more to be sustainable. And our job is to tell everybody this.” True terroir relies on old vines An additional and worthy benefit at the premium end of production lies in an old vine's ability to produce grapes with a true blueprint of its terroir. Simonit agrees with Lalou Bize-Leroy’s philosophy that a true terroir of a particular site requires a vine that is at least 15 years old, since a well-established vine produces a wine that is more about the soil than the individual characteristics of the sun. Old vines with deeper roots are also much less affected by vintage variation. These are wines made from their roots rather than wines made from the sun. For Simonit, the importance of the project lies in “the increase of education, sensibilities and sustainability. The importance of my pruning technique is understanding that, left alone, vines will survive very well. The problem lies in when the vine is domesticated and such domestication, if done badly, can weaken the vine, increase the pathological stress to the plant, leading to an early death.”  Browse more Editorial 

Marco Simonit has been at the forefront of modern viticulture techniques aimed at protecting old vines from disease and decay for the past decade. Gavin Smith speaks to him about his pioneering philosophy

Pioneering viticulturalist Marco Simonit on the philosophy behind his L’Età Più Bella wines. 

Marco Simonit on why old vines matter

It was the vision of Jacques Perrin in particular – who farmed the property organically from 1950 onwards – that cemented Châteauneuf-du-Pape’s Château de Beaucastel reputation. Today his sons – Jean-Pierre and François – are at the helm, with fifth-generation Marc, Pierre, Thomas, Cécile (Jean-Pierre’s children) and Charles, Mathieu and César (sons of François) also all work full-time at the estate. All seven of the children worked in wineries around the world before returning to the family estate.  A visionary estate The estate was one of the first in Southern Rhône to become organic (in 1950) and then biodynamic (in 1974), making the vineyard better prepared than most for the climate change effects over the last 30 years.  “Beaucastel is the largest Châteauneuf-du-Pape estate in one contiguous plot and it stands at the most northern limit of the appellation. It is a vineyard which is therefore very exposed to the Mistral winds, which has a huge cooling-down effect,” Emmanuel explains, protecting the vineyard from extreme temperatures.  The vineyard is based on a limestone bench covered by a rather atypical mix of clay and sand, topped with diluvium “galets roulés” (pudding stones). It is an incredible terroir that, Emmanuel explains, “allows us to combine power and finesse even in the driest vintages. It has always been considered a benchmark terroir in the area and was in fact a cru before the Châteauneuf appellation was created.”  
The biodynamically farmed old vines have also helped offset the ever-increasing drought pressures in the region. “We are extremely fortunate to have older vines,” Emmanuel says. “The galet roulés covering our vineyards also help prevent water evaporation. So all in all we’ve managed to make great wines even in warmest and driest vintages.” That hasn’t stopped the domaine, however, from continuing to adapt their methods to better cope with the ever-present threat of climate change. “We are learning more and more every year and continue to implement changes we deem necessary.” Alcohol levels in the region have undoubtedly risen, an effect that the estate looks to counter. 
When Jacques Perrin was in charge, he created a very specific vinification technique which he later patented. He would heat up the must to 80˚C, to start fermentation quickly while allowing Jacques to use less Sulphur, helping fix the colour of the wine, particularly with the Mourvèdre grape which has a tendency to lose colour with age. But this method also reduced the greener flavours in the wine, that came from less ripe grapes. 
Today’s climate, however, does not face the same issues, with consistently riper fruit. As a result François and César have phased out this technique, instead opting to whole-berry fermentation, and even whole-cluster ferments for varieties like Syrah, to naturally reduce alcohol levels. These days they also pick earlier, opting for more freshness whereas in the past it was always the goal to maximise ripeness, something that no longer is an issue for the region.  “The estate is always looking at ways to counter the issues of climate change,” Emmanuel continues. “For example, some of the younger Syrah vines are today producing very powerful wines so we are either co-ferment with some Grenache, reincorporating some of the stems in the vat or carry out whole-cluster fermenting,” helping to find better balance in
the wines. In the vineyard too, the team is constantly looking for ways to improve. “We recently tried spraying clay on leaves to limit photosynthesis,” Emmanuel says. The initial experiments have proved positive, but it is still too early to see the long-term effects on the wine
and requires further testing. 
But this experimental approach is everywhere in the property. They continuously make alternate blends that they age in the Beaucastel cellar and over time compare with their main cuvées to see how well the final blend develops versus a different potential version of
the same wine: Emmanuel states the cellars are full of these experiments. 
The domaine has also been assessing how the Beaucastel wines age with different fining techniques. “We do a lot of comparative tastings and assessing of older experimentations. For example, we recently did a horizontal of Château de Beaucastel 1996, where each bottle was fined differently, and identified which fining technique works best for ageing the wine – this is crucial in the development of our knowledge and helps us to make sure decisions taken in the moment are the best ones for the future.” 
Hommage à Jacques Perrin What is distinctive about Château de Beaucastel and the Hommage cuvée in particular is the high proportion of Mourvèdre in the blend. The Hommage is typically made up of 60% Mourvèdre. Emmanuel explains, “Hommage is from our Courrieux lieu-dit parcel, where Mourvèdre was first replanted (post-phylloxera) in 1910. As Mourvèdre is such a late-ripening
varietal, Château de Beaucastel needs an outstanding Indian summer to hope for an Hommage vintage. The decision thereafter is taken during the blending tastings. 
“When tasting the foudre of Courrieux back in 1989, François and Jean-Pierre were overwhelmed by the outstanding quality and knew that it had to be bottled on its own. Jacques Perrin’s intuition for the best blend from the estate revolved around a dominant proportion of Mourvèdre. As a tribute to their visionary father, they followed his instinct and
dedicated this unique cuvée to him.”  Production remains tiny despite the huge demand for the wine. In recent vintages, production has been around 6,000 bottles per year. The only difference in the vinification process of Hommage versus their other cuvées is an extra six months’ ageing in 4,000-litre foudres. All the winemaking is fairly hands-off, vinifying all the varieties separately apart from the Muscardin, Vaccarèse and Terret Noir which – due to the tiny quantities – are co-fermented. The reductive varieties – Syrah and Mourvèdre – are fermented in open-top wood fermenters and the remaining oxidative varieties are fermented in concrete tanks prior to the all-important blending sessions with the family.  The 2018 vintage has already been fantastically reviewed, awarded a potential perfect 100 points from the Wine Advocate, with reviewer Joe Czerwinski describing it as “full-bodied
but incredibly silky, combining great purity, richness and length into a seamless, elegant package that should give immense pleasure for decades to come.” The success of the 2018 vintage, according to Emmanuel, was “down to the perfect ripening conditions in mid-October, allowing them to bring the grapes of this late-ripening variety in at perfect maturity – 2018 was fantastic for Mourvèdre.” 
The grapes of the Southern Rhône 
Château de Beaucastel proudly uses all 13 permitted varieties of the Châteauneuf-du-Pape appellation. Some even say 18 varieties, since varieties like Grenache, Terret, Clairette and Piquepoul all have a black, pink and grey clone of the variety mixed within the vineyards. “Each variety brings its own attributes that differ depending on the vintage, but also depending on the amount you use or the blend you make,” says Emmanuel. “For example, when you open a young Beaucastel, it’s very Grenache-driven, even when there is a similar percentage of Mourvèdre. It’s only few years later that Mourvèdre will finally come to the
fore, revealing game, leather and savoury characteristics. “Individually, Mourvèdre brings power and structure, but when you open an older Beaucastel it delivers freshness and silkiness. Grenache Noir brings kirsch, plum and cassis fruitiness. Syrah adds color, tannin and spices, and when blended with Mourvèdre and Grenache it
brings truffle notes.  Counoise can be considered the Pinot Noir of Châteauneuf-du-Pape and has a distinctive white pepper note. Cinsault adds freshness, Muscardin and Vaccarèse are very floral and add freshness, Terret Noir is light even in colour and adds acidity. The white varieties of Roussanne and Grenache Blanc bring elegance and freshness. Clairette is very aromatic and brings unctuosity. Bourboulenc adds tension with notes of almond and vanilla, Piquepoul richness and Picardan adds a lot of bouquet.   “For us it is very important to have all the varieties to make an elegant and balanced wine. However, above all, it is the knowledge and the art of blending, passed on from generation to generation of the Perrin family, that is the key to understanding the real expression of Château de Beaucastel terroir.” With experimentation at the heart of the Perrin philosophy, the infinite potential of blends when using so many grapes in the wine keeps the extended Perrin family busy monitoring their blending decisions as the wines develop with age. Olivier Humbrecht was in London earlier this year giving a masterclass on single-vineyard Pinot Gris from Alsace. His motivation and his love for dry Pinot Gris evolves around the varietal being the greatest transmitter of terroir, much more so than its more famous sibling Riesling whose natural aromatics can conceal its terroir blueprint. Of course that was just the starting point of the masterclass and it quickly evolved into a much more in-depth conversation on the virtues of singular plots and the underpinning concepts of fine wine. We caught up with him to get further insight into his pioneering approach in viticulture which is being adopted by some of the finest wine producers in the world. The changing fortunes of Pinot Gris Humbrecht is a strong believer in the potential of Pinot Gris, a varietal that has ebbed and flowed in popularity through the last century. It is a varietal that due to its rather neutral primary attributes means it is perhaps more than any other grape, at the throes of its maker.  Styles vary greatly from the high-yielding neutral, phenolic, early picked and refreshing Pinot Grigio synonymous with northern Italy. At its worst, the variety produces a wine of almost no character and no sense of place. At its best, the dry, vibrant Pinot Grigio from Alto Adige can be fantastically intense, mineral and refreshing, whilst remaining fairly neutral on the palate. Pinot Grigio Romato styles in Friuli (a skin contact rose style) offer more flavor definition and
richness whilst at the same time being distinctly phenolic with vibrant acidity and a bitter bite keeping the wine refreshing and uniquely Italian in character.  The Pinot Gris of Alsace is typically later picked and completely different to the Italian style in its flavor profile, taking on a distinct honeysuckle, musk, smoky, toasty quality. Even within Alsace, this varietal has many faces. In the 1960s Olivier reminds us that Pinot Gris from Alsace was the most popular and most expensive wine in the region, but also the rarest and typically very sweet, as it is prone to noble rot resulting in intensely rich, opulent wines. In 1990 just 2% of the vineyards in Alsace were planted with Pinot Gris, today it is up to 15%. But Pinot Gris is not an easy grape to get right and whilst the early picked, neutral style of Northern Italy can crop at high levels with little issue, to make Pinot Gris with more aromatic character is much more difficult to get right and therefore becomes a much less reliable crop and accounts for the small amounts grown in Alsace. It is a varietal very prone to rot due to its thin skin. In ideal conditions, this makes it ideal for noble rot but in less than perfect conditions grey rot is more common making the grapes not suitable for fine wine. The rot will often result in aborted fermentation.  The varietal is also very quick to ripen. If not picked in a very small picking window, the alcohols could shoot up too high making a healthy fermentation very difficult and, more often than not, leading to high levels of residual sugar in the wine, whether you want it or not. Olivier outlines that just taking a weekend off during harvest could amount to a potential 1.5% abv increase when returning to the vines on Monday morning. In under a week, the potential alcohol could have gone up by 3% abv.  Picking the wines too early also has its problems. All the flavor and aromas in the varietal develop at the final stages of ripening, picking early will produce wines with little complexity and character. This tricky little grape is no doubt the reason why so little was planted in the region despite the popularity of the top Pinot Gris sweet wines. The recent increase in plantings in Alsace however has not been brilliantly successful. For Olivier too much Pinot Gris has been planted in inadequate sites and using higher yielding commercial clones. For Olivier, top Pinot Gris from Alsace must come from the traditional petit grains clone that is naturally low-yielding. Olivier likes each vine to produce just 2 clusters producing just 25-30 hectolitres per hectare. These cropping levels are necessary to produce fine wine examples from the grape. Olivier’s interest in Pinot Gris is down to its relatively neutral character making it a great transmitter of terroir, more so than Riesling whose natural aromatic presence can conceal terroir characters. Fairly neutral flavour characters also mean it remains very much a winemaker’s wine, as the vigneron can determine the style of the wine with lees work, oak maturation, and the retention of malolactic fermentation, providing the grapes come in clean, free of rot. Olivier believes élevage on full lees makes a very important difference to the flavor of the wine. The lees nourish the wine through ageing, producing a much more complex
flavour profile. It brings a smokiness and toasty character to the wine as well as a more reductive “mineral” character. Global warming It is rare to hear a vigneron say that global warming has improved the quality of their
wines, but Olivier honestly states that, for the moment, global warming has benefited his wines. What it has done is bring flowering forward, possibly up to three weeks earlier which shunts all the growing season forward, this means the all-important veraison period (sugar concentration in the grapes) is beginning to happen three weeks earlier.  Rather than waiting for grapes to ripen in September as the days are getting shorter and the weather much less reliable, veraison is now happening at the height of the summer enabling the wines to reach optimum ripeness quicker preventing the onset of rot – which in poorer weather becomes a lot more common.  Biodynamic since 1998, Olivier has seen a really positive effect in the vineyard. The grapes are able to ripen faster, reaching physiological ripeness quicker, which enables Olivier to make dry Pinot Gris packed with flavor. This, he believes, is because chemical applications shock the vines, causing them to shut down for a number of days following the application. If you continue to spray chemical applications throughout the growing season, each time this happens the vine shuts down and you lose valuable days of ripening.  Under biodynamic principles, the vines don’t go through these shock / shutting-down
phases. This allows Olivier to pick earlier and he is the first to harvest the Pinot Gris compared to his neighbours. This he believes is largely due to his grapes ripening faster, due to his viticultural techniques.  It means he can get his wines to reach aromatic complexity whilst still being able to bring them in early enough free of rot and therefore enabling a fermentation to dryness. The reason for Olivier's interest in producing dry styles of Pinot Gris is so he can show off the terroir characteristics of each of his sites without being concealed by sweetness. Tasting the different vineyards shows just how different each of the sites is and only further promotes Pinot Gris as the ultimate transmitter of terroir. A pioneer of modern-day viticulture Speaking with top viticulturalists all over the world, you realise a huge amount of their knowledge stems from Olivier Humbrecht, whose understanding of managing vine growth originated from a university lecture he attended in the 1980s, given not by a viticulturist, but a plant physiologist.  From this lecture, Olivier understood that modern-day hedging techniques in the vineyard were really detrimental to fruit production. Olivier explains the domesticated vine goes through two very different stages in its growth period. Stage one is the phase of cellular multiplication i.e. the growth of the vine – flowering, budding, leaf production etc. Stage two is the nourishment phase in which the vine stops growing and instead starts to nourish the pips in the grapes, to promote future cellular growth when the seeds are dispersed.  The problem with modern hedging techniques is that it disturbs stage one when the vine is
on the verge of moving to stage two, therefore encouraging the vine to carry out stage one and two at the same time, meaning the grape isn’t getting full nourishment at the period of veraison as some of the vine’s energy is going into vine growth. The key for Olivier is to get stage two to follow on from stage one rather than the vines trying to do both at the same time. Preventing canopy growth, however, requires a lot more manual work. Olivier states it
requires 20 men to tie up the vines manually compared to one tractor hedging the vines. One possible solution could be to hedge the vines earlier in the growth phase so as not to disrupt the vine later in the season switching from stage 1 to stage 2 but Olivier explains this is not a good approach. Tartaric acid is key to any white wine, and it is the necessary backbone to any wine.  Tartaric acid is produced by the leaves. Olivier emphasizes that many people wrongly
think leaves only create sugar through photosynthesis, but they are necessary for producing a whole array of essential nutrients, hormones and the all-important production of tartaric acid. The secret lies in extended canopy growth. I said to Olivier this sounds exactly what Lalou
Bize Leroy does in Burgundy and he admits that he visited her years ago and told her his ideas on canopy management and she clearly took his advice. Whilst it is incredibly high maintenance and an expensive operation, two of the world’s leading winemakers Humbrecht and Leroy are advocates of the system and that should be enough for any vigneron to at least consider the technique, despite the additional costs it entails.  The single vineyards Rotenburg The Rotenburg vineyard is a cooler north-facing slope facing the Vogues mountains. Made up of red marl on a limestone bedrock with very shallow brick colour soil (containing high iron content). All this amounts to slower ripening, naturally lower vigour and tiny yields. Olivier typically crops at 25 hectolitres per hectare. Olivier states what is great about this vineyard when made in the dry style, the effect of the limestone really comes through on the palate. Tasting through the 2017, ’16 and ’13 the wines share a wonderful aromatic complexity.
Easily the most floral and perfumed of the three vineyards. There is a wonderful chalky minerality to the wine, almost top quality Chablis but with a softer texture and more perfumed. With age, the aromas and flavours only further develop whilst retaining a wonderful intensity. The wine remains very clean despite its age, showing very little tertiary
development just lovely orange rind and honeysuckle notes. The chalky limestone
minerality brings sharp focus and intensity to the finish. Clos Windsbuhl The first vintage for Zind Humbrecht on this site was the 1988 vintage. Another limestone/
clay site overlooking the church of Sainte Hune (famous for the Trimbach’s Clos Sainte Hune cuvee). Facing south, south-east with a steep slope between 15 – 40% this is a high altitude site at 350 metres. A 6.5 hectares site planted mostly to Pinot Gris. Due to the
altitude and soil the grapes ripens very slowly, often on the precipice of reaching ripeness before the wine gets affected by noble rot.  Tasting through the ’17, ’16 and ’13 what is immediate in the comparison is how the wine
develops with age. At just three years of age, the wine remains compact, at seven years of age it is incredibly complex on the palate. The primary notes have retained their zesty vivacity but the flavours become broad from russet apple, manuka honey and sultanas and a wonderful salinity and stony minerality on the finish. The wine becomes more and more focused on the finish. Clearly, the wine is affected by vintage too. The ’16 is a more difficult vintage making the wine a lot less intense than the ’17 and the ’13 but throughout the lineup, the salinity and stony minerality comes through on the palate – a distinct characteristic
of the limestone soil. Rangen de Thann Unlike Rotenburg and Clos Windsbuhl, Rangen de Thann is made up of volcanic soil, very
dark basalt rock, rich in magnesium and potassium and low in calcium so lower acidity, higher pH. The slope is the steepest in Alsace with a 41-degree slope. The vineyard has an incredibly high vine density at 10,000 vines per hectare. It is in fact one of the warmer regions of Alsace therefore you would expect it to be one of the first to ripen, but the cold wind that flows through the valley slows the ripening making it the last vineyard Oliver harvests. This is typically the lowest-yielding site at Zind Humbrecht at 20 – 30 hectolitres per hectare. The volcanic soil offers a completely different blueprint to the wine. Texturally the wine is much more oily and rich. The flavours are more pumice stone, peppery, matcha tea and then this distinct Brazil nut flavor. There are no tropical notes at all in its youth and very much more savoury in style. With age the ’13 vintage shows more tropical notes, the texture becomes unctuous in its oiliness, it feels like there is sweetness despite being a dry wine. These wines lack the vibrancy from the limestone but offer more richness, texture and darker fruit and savoury flavour profile. Explore more Editorial

In a report published in 2014 by the UN’s Food and Agriculture Organisation, under current rates of degradation, all the world’s topsoil could disappear within 60 years. With 95% of all food produced relying on these living soils, this pronouncement was a stark and terrifying warning of what lies ahead. Industrial farming and deforestation are the leading causes behind the degradation of soil. Grape growing and large parts of the wine industry remain very much part of that problem. France’s vineyards, as an example, are the country’s biggest consumers of chemical fungicides, insecticides and herbicides. These products can devastate the life in the soil and completely disrupt the biodiversity of a region. Although viticulture represents just 3% of France’s agricultural land, the sector spreads 20% of the country’s fungicides. Many vignerons have tried to reduce chemical inputs, either using them as a last resort or not at all. Some believe non-chemical additions of copper and sulphur typically used to treat fungal diseases (the biggest threat to yields) are more damaging to the environment than systemic chemical interventions. It is a complex picture. But there are vignerons committed to non-chemical approaches – growers who believe they can offer alternative methods that are both sustainable for the future and remain commercially viable. While there are various approaches, they all share the belief that protecting the health of the soil is fundamental to their vineyard’s long-term future, as well producing a farming system that is not only sustainable but regenerative, in that it sequesters more carbon dioxide in the soil than it takes out. Exactly how this is practised remains a contentious debate. Many of these growers are certified organic, many are not – certification itself is another controversial issue. Biodynamic farming is organic farming with a more holistic approach, trying to recreate a natural balancing ecosystem that allows nature to restore and rejuvenate itself, in rhythm with the lunar cycle. Others have gone even further and have allowed their vineyards to grow wild, believing that an undisturbed vineyard is the most sustainable and ecologically healthy. Organic and biodynamic farming practices are essentially a return to conventional farming methods carried out prior to the introduction of chemical farming 70 years ago. The more non-interventionist approach goes one step further, attempting to recreate an environment that pre-dates all commercial farming. It is an approach in which crops and other plant life coexist together, allowing the environment to dictate what grows where. Under the teachings of Masanobu Fukuoka, it was coined “natural farming”. Masanobu Fukuoka was a Japanese microbiologist and agricultural scientist who studied plant pathology. After nearly dying during a bout of pneumonia, he experienced what he described as a profound spiritual experience – leading him to begin to doubt modern agricultural science. He gave up his scientific post and returned to his family’s farm on the southern Japanese island of Shikoku. It was here that he developed his own non-intervention farming techniques, which involved no tilling or ploughing, and no fertilisation of the land. This was to protect the vital microorganic life in the soil, that he believed was essential to creating an ecologically balanced environment. The publication of his seminal book, The One-Straw Revolution, in 1975, went on to influence the permaculture movement (no till, no ploughing) in the west, and even more radical concepts. Alsace-based viticulturist Bruno Schloegel (of Domaine Lissner) is one such radical. He has a nine-hectare estate that, over the last 20 years, he has adapted to what he calls the “savage” approach to viticulture. For him, “savage” is a more accurate translation of Fukuoka’s methods. “I asked my Japanese friends to translate Fukuoka’s Japanese term,” says Schloegel, “and it translates as something between being free and alive. But not just the vines, the whole system of animals, insects, fungus. The key is not to disturb, as this will weaken the system.” For Schloegel it is a better translation than “natural” which today, he believes, no longer means anything. Despite adopting Fukuoka’s ideas, Schloegel was in fact practising the same approach before he was even aware of the Japanese farmer’s book. “I never knew about Fukuoka until a few years ago. I was given his book and it was amazing. Almost every page, we were totally linked.” Both former scientists, Schloegel too became frustrated by the scientific data available. “It is more complex than the techniques we have been taught,” he says. “Even when I was a student, I thought this. I am a scientist as he was. I studied in the ’70s. He studied in the ’60s. But our conclusions are the same. The answer is to not disturb.” Prior to Fukuoka, Schloegel was taken by the work of the eminent English scientist Dennis Noble, a pioneer of systems biology whose publication The Music of Life became a huge influence. Noble uses the analogy of life as many orchestras playing different scales, very small and very big. “Molecules, atoms, landscape, living beings as well as the vine – all are playing together and that is what we call life. We can listen to each scale of this living system, and you will find almost the same music, because it is totally coherent. Each scale is in harmony. It was very inspiring to me,” Schloegel explains. Like Fukuoka, Schloegel has a strong respect for spirituality as well as science and talks about how the human brain deciphers experiences differently. He uses music as an example, describing how listening to music creates an emotional reaction which the scientific part of your brain can’t explain. “Knowing you only have a small knowledge of this complexity, this complexity of nature, makes you humble. But spiritually you get pleasure from living with this complexity and not trying to control it. It’s just like a wave you are surfing on. This is the pleasure side.” As well as adopting a no-plough, no-till approach, unlike biodynamic farming, Schloegel does not sow seeds for cover crops, nor use any organic fertiliser, preparations or other inputs. He believes his vines’ roots not only root deeper, but are more resistant to disease and suffer less from stress. He also saves on the costs of such additions. So what does he do? He prunes the vines each year – very late in March/April just prior to the new buds forming – and he mows between the rows just prior to harvest. He does also use copper and sulphur, when necessary, to tackle disease but believes he can phase this out. Beyond that, the vineyard is left to its own devices. It is hard to keep up with Schloegel sometimes – his concepts are unconventional, but this holistic approach is highly considered. It is completely at odds with the commercial farming approaches and understandably has caused controversy. But he, along with a growing number of viticulturists around the world, is totally committed to the concept that permaculture is essential to the future long-term health of arable land. He believes he can not only produce an economically viable crop (up to 40hl/ha), but he can produce wines with greater complexity and terroir expression. He believes it takes between seven to 12 years of not disturbing the vineyards for them to find their balance. “At this point you are on the crest of the wave – it is very calm,” he says. But this is a long process and requires a lot of faith to commit to. Even Schloegel admits it gets worse before it gets better, as the vineyard adapts. “When you stop the herbicides, the mowing and the ploughing, you get the bad weeds. But these weeds prepare the soil for the next generation of plants,” he says. Poppies, lilies, thistles, wild orchids then start to appear and then fruit and vegetables and a huge variety of plant life and wild flowers begin to grow. His vineyards today have a huge variety of plant and wildlife species coexisting, with cherry, apricot, fig, almond trees and wild vegetables, flowers, fruits, and aromatic herbs all growing between the vines. What then happens seems incredible. Schloegel explains, once in equilibrium you see distinct plants continue to grow in the same place each year, depending on the terroir of that part of the vineyard. There is one part of his vineyard where 30 metres of wild strawberries appear every year, growing alongside the vines. In other parts there are leeks, other parts a particular herb. Schloegel outlines that even within a single vineyard, very little is exactly the same. The composition, altitude, slope, geological make-up are all different and, when left to adapt, one vineyard grows multitudes of plant species at different levels of concentration in different parts of the vineyard, depending on what adapts best to that particular spot. This is what Schloegel believes is real terroir in action: “A terroir is a full, complex living system – and a wine of this terroir is a response. In this totally free, rich, complex place. I know it is possible for natural systems to rebuild from themselves. But it cannot be fostered.” Fukuoka’s farm on the island of Shikoku in southern Japan was a rice and citrus fruit farm and, while he managed to produce commercial yields of both rice and fruits, the transference of his techniques to the vineyard is not quite as straightforward. The concepts are radical and while a few like Schloegel are convinced it’s possible – with his own yields varying from 10-40hl/ha, others remain sceptical. Schloegel’s Alsatian neighbour Olivier Humbrecht MW (of Domaine Zind-Humbrecht) does not believe a non-interventionist approach is a good idea – nor that it is necessary for making wine a sustainable crop for the future. While Humbrecht accepts there may be many good ideas in terms of regenerative methods that heighten biodiversity and increase the health of the soils, he is sceptical of its long-term future. Humbrecht’s fundamental criticism is that Schloegel’s approach is not as undisturbed as he claims.“A vine is a cultivated plant,” says Humbrecht. “You are cultivating something, disrupting something natural and making it not natural. It is not natural to plant vines one metre apart on a slope, in poor rocky soil, in a place where it doesn’t rain much. It’s not natural to force it to produce grapes every year. So you have to compensate this with something.” For him, permanent cover leads to soil compaction – with the shallow roots of these plants and the topsoil damaged when working in the vineyard – which has graver long-term effects than tilling or ploughing. These stresses on the vine, Humbrecht explains, are exactly why we have flavour in our wines. Each of these stresses, whether it be the nutrient stress from poor soils, the water stress from growing on a slope or well-drained soils, or nutrient stress from high density planting – these are all deliberate decisions made by vignerons who, over the last 2,000 years, have discovered the best places to cultivate and stress the plant in order to produce delicious fruit. This fruit is the vine’s attempt to escape, through tempting wildlife to eat it and disperse their seeds somewhere less inhospitable. “France would be a forest if untouched and I’m not sure you would not find one wild vine where we have the top vineyards today,” he says. Humbrecht remembers discovering the vines on his own Grand Cru vineyard Rangen de Thann. These vines had been abandoned since World War One. When he arrived 60 years later, most of them had disappeared. The vines that did survive and adapted were producing tiny, small clusters of grapes. Humbrecht believes non-intervention farming would have similar results. “If you don’t prune a vine for 10 years you will end of with tiny clusters, producing maybe 2-4hl/ha – a typical commercial yield in the region is closer to 80hl/ha. Humbrecht’s biggest concern centres around this approach’s commercial viability. And that is important if these methods are to be adopted more globally. If these vineyards’ crops are too small, the vineyard will fail and more likely be bought up by someone else who could return the vineyard to conventional, chemical farming. While there may be disagreements between Humbrecht’s biodynamic approach and Schloegel’s “savage” approach, the permaculture concept has led others to adapt their practices. Michel Chapoutier has been farming biodynamically for the last 30 years but has more recently adopted permaculture. “How I am managing my soil today is completely the opposite to how I managed them biodynamically 20 years ago,” he tells me. Chapoutier now believes the disturbance of the soil is more damaging than the removal of weeds and therefore has stopped ploughing his vineyards. For Humbrecht, light ploughing and resowing cover crops is a better solution. “There is no technique that is 100% good,” he explains. “You have to weigh up the options. What is better? Let the vine die from the competition of the plants growing in May, or disrupting the microorganisms in the soil by ploughing four inches into the soil (between May and June) – you have to choose. It is always a question of balance.” Another producer who has gone beyond organics and placed the development of biodiversity and regenerative practices at the heart of their operation is Gaja. The early success of Piedmont as a fine wine region in Italy saw areas such as Barbaresco and Barolo become dominated by vineyards. Forests were felled and biodiversity dropped. Gaja has since incorporated more trees, adopted permaculture methods in the vineyard and today produce their own organic fertiliser in their historic vineyards. The team has also recently purchased new land in Alta-Langhe where they are not just planting vines, but trees too, incorporating the trees and the vines together. “There is a growing sensibility towards the importance of biodiversity,” says Gaia Gaja, “therefore we are fine with sacrificing space suited for vineyards in favour of trees, we believe in the long run this decision will benefit the health of the vineyards.” Industrial farming is in ecological and financial crisis. More sustainable approaches have to be adopted if we are to survive the next generation, but, so far, those choices come at a cost. For many farmers struggling to make a living, the conventional, chemical farming approach has become the only way to financially survive, taking each year as it comes. These growers can ill afford to think much beyond that, despite the system’s long-term unsustainability. Many feel trapped and find more sustainable approaches economically unviable without better directed government subsidies that promote regenerative farming practices. Wine is hardly an essential food product, but it is the economic engine for entire communities that rely on it for subsistence. In certain wine regions where there is a reliance on water reserves and chemical inputs, it will have to adapt or die. Minimal intervention viticulture is no doubt a radical option, but truly regenerative viticultural approaches will be necessary in a future where food shortages become more widespread. Chapoutier and Zind-Humbrecht, even Schloegel, albeit blessed with great terroir, are paving the way, proving it is possible to produce wine at good volume, at all price points, with a regenerative approach. A return to the wild: beyond organics

Last year Alessandro Mori completed his 47th vintage at Il Marroneto in Montalcino. Now aged 60, Il Marroneto has been his life’s work. Despite the challenges, his passion for winemaking has never wavered and when he speaks about the estate and its wines today, he sounds as giddy as the boy who first arrived at the winery, aged just 14. He discovered Il Marroneto in 1975. At that time, it was just a farm on the northern slopes of Montalcino, with a few vines growing alongside olive trees and a small orchard. His father was so taken by the view – stretching out 60km across the valley floor towards Siena, his hometown – he bought the property the next day. The entire family – a young Mori, his brother and their parents – would spend their weekends tending the vineyard, which they planted on arrival. Initially just half a hectare, this site would become Madonna delle Grazie – Brunello’s most lauded vineyard today. Those first few years working alongside his family were some of Mori’s happiest days – and would shape the rest of his life. Il Marroneto remained a family hobby, and when he finished school, Mori became a lawyer. It was only in 1994, aged 33, that he decided life behind a desk wasn’t for him. “I had to express myself,” says Mori, “so I decided to continue to live the life I started with my parents and my brother.” He moved to Montalcino with his wife and new-born baby, living and sleeping in one room. At the time, Il Marroneto was only producing 3,300 bottles a year. It was all very financially tight at the beginning. “It became a big problem for me,” admits Mori. “I only slept two to three hours a night, kept awake thinking how could I make this work? I was full of worry, but also I was happy because I loved my work. I really loved my work.” Mori explains how this lifestyle change brought him a welcome sense of freedom. “There is soul in what I do every day,” he says. “There is a soul to the region too. This work gives me freedom, freedom from all the everyday life lived today. The order you have to follow. I am free from this in my mind.” But Mori’s passion is more than just the freedom it has given him. He’s always felt the work he was doing, the wine he was producing, was something important. He was carrying on a tradition that stretches back thousands of years and that brought a sense of purpose and responsibility. After all these years Mori remains amazingly humble considering his success. If you have ever read an interview with Mori or had the pleasure of visiting him, he never fails to mention his debt to his teachers. These two wise men – the late Mario Cortevesio and Giulio Gambelli – are legends in winemaking circles, and they taught Mori everything he needed to know to make great Sangiovese. Mori was fortunate to have such mentors – especially when most were looking outside the region for expertise. As Brunello di Montalcino gained recognition, investment flooded the region. There were fewer than 50 wineries when Mori first arrived, but now there are 250. “The first thing these people do is look for a doctor in oenology and agronomy – to plant the vineyard and build the cellar,” says a bemused Mori.  New arrivals, looking to make their mark, rarely speak to people who have grown grapes in the region for decades, instead hiring outsiders – many of whom have never even been to Tuscany. “Now these people are using concrete eggs, amphora and oak from Austria,” he laughs, “but no one goes to the old people that live here and asks them, what is the way of our forefathers?” But that is exactly what his father did – looking to the village elders. In return they got the eyes and ears of first Cortevesio and then Gambelli. Coretvesio and Gambelli had an extraordinary influence on winemaking in Tuscany. “They were like two brothers,” says Mori. “Born in the same year, they studied together, they worked their whole lives together and they died within two months of each other.” They would split their time between Chianti and Montalcino. For Mori, they were his most important teachers when it came to making Sangiovese. Despite Cortevesio largely focusing on the Chianti region, for the first seven years at Il Marroneto it was Cortevesio who was their consultant (due to a friendship with Mori’s father). Mori remembers that when he was just 14, Cortevesio used to visit the farm and share his wisdom with him and his brother. “To make good wine, you need respect,” Cortevesio would say. “Respect, respect, respect – everywhere there must be respect! Respect the animals, the plants, the place, the people. You are starting to grow a grape that took more than 3,000 years to become perfect in this area, so you respect the grape!” Cortevesio was adamant it was the wonders of Sangiovese that lay behind the region’s great artists (“the real important guys that passed before us,” says Mori); Sangiovese had fuelled Da Vinci to paint La Giaconda (the Mona Lisa), Boccaccio to write Decamerone and Giotto to design the Campanile – the iconic gothic belltower of Florence’s cathedral. Speaking with vignerons today, often the emphasis is on work in the vineyard – believing that is where great wine is made. But Mori likes to contradict that claim: “Wine is born in the cellar,” he says defiantly. “The hand of the man, his actions, are the secret of everything. I use the same techniques as our forefathers. They didn’t have yeasts to start fermentations. They didn’t have sulphur. They used natural methods.” Mori explains that Cortevesio and Gambelli believed it was possible to make precise wines using traditional methods – but only if the vigneron was fastidious in everything they did. Right from the start it was Cortevesio’s influence – and his mantra “passion, precision and patience” – that promoted such a traditional approach at Il Marroneto. To make wine in this way requires a lot of hard work in the winery – indeed Cortevesio was fastidious about cleanliness in the winery. Mori remembers constantly cleaning barrels and the cellar to try to win his respect. In the early days, despite Mori’s best attempts, Cortevesio would still think the cellar was dirty. He would taste the wine and say, “It’s tired.” As Cortevesio got older, he suffered with pain in his throat following an operation on his neck. It became difficult for him to speak and so he rarely did. He famously used to communicate with a smile, recalls Mori, and even that was difficult for him. Mori remembers the day he first smiled after tasting Il Marroneto, calling the wine “precise”, the finest compliment any vigneron could hope to hear when judging a wine, Mori believes. While Cortevesio became largely mute, Gambelli – who hunted almost daily – was completely deaf. After 10 years, Gambelli took over consulting for Il Marroneto (from 1985) and continued to visit up until 1993. Like Cortevesio, Gambelli had a maniacal approach to cleanliness and extolled monastic-like patience when ageing the wine. Mori was amazed by how this duo – one mute, the other deaf – could communicate. While both famous for saying very little, what they did say mattered – and their legacy, the lessons they shared with Mori, lives on today. After 17 years of tutelage under Cortevesio and Gambelli, Mori went his own way. “The wine of Marroneto remains the wine of Cortevesio and Gambelli because I am their pupil,” says Mori. “I continue to make the wine as they taught me – but with my hand.” The biggest change for Mori was the introduction of the Madonna delle Grazie cuvée. Often considered the region’s finest wine, it is the only Brunello to have been awarded multiple 100-point scores from the Wine Advocate – and universally loved by critics and afficionados around the world. The wine comes from the estate’s oldest and original vineyard – the one he worked as a child – and is made completely differently to Marroneto’s classic Brunello. Mori continues to make the traditional Brunello exactly as he did when he was 14. This “true” Brunello “requires a lot of movement in order to extract the best parts of the grape – the pulp that sits one millimetre under the skin,” explains Mori, “this is where you find the best anthocyanins, the polyphenolics, the complex fruity smells. The first 48 hours following harvest extracting these are key.” Mori and his team are up for two days solid, constantly working the must. Mori comically compares it to the Big Bang. “The grape material explodes, the material goes everywhere; it is the birth of the universe, and the wine is born.” After 48 hours, they stop and the must – thanks to all the agitation and natural humidity created in the winery – immediately starts fermenting. After just a few hours, the must has heated up to 34-35˚C and sometimes reaches 40˚C. These are not temperatures ever mentioned in modern wineries, but Mori knows what he is doing. “Sangiovese likes to fly high like an eagle when fermenting,” he says, “it is important for the characteristics of the Sangiovese chemically to fix the volatile smells.” At these sorts of temperatures, the fermentation is over in a week. Mori deliberately makes Madonna delle Grazie completely differently – and contradicts all that he does with his classic Brunello cuvée, such is the quality of the grapes from this special vineyard. When the grapes arrive at the winery, the fruit is left alone. The fermentation is much slower and much cooler (between 28-30˚C), lasting 20-25 days. It is, in short, totally the opposite. “With the Madonna delle Grazie, to our surprise, we found no power,” says Mori, “but a complexity in which the Sangiovese is similar to that of Pinot Noir – the technique brings elegance.” “Every part of the Madonna is high (the acidity, the tannins, the alcohol, the polyphenolics, the anthocyanins, the fruity characters, all are high, but without the power –  altogether it makes a complex wine. Together it makes for an extraordinary equilibrium.” Mori has been perfecting his techniques over the last 27 years, but two years ago it was his turn to become the teacher as his son – Iacopo – joined him in the winery during the pandemic. “Now I try to let my son learn this kind of traditional winemaking – not simply as Gambelli and Cortevesio taught me, but Gambelli, Cortevesio with the hand of Alessandro,” he says. “Today, he is more careful in the cellar than I am. Sometimes a little too much,” laughs Mori. He has obviously taught him well. Mori has also been imparting his knowledge to Emilio Parri – his cellar hand and protégé, who has been working in the cellar since he was 18. Overriding everything, Mori’s job as a teacher, he believes, is to “transmit the passion”. Mori still has a strong bond with his wine – he talks to it every day. When leaving the winery he shouts down to the cellar – “Ciao ragazzi, see you tomorrow!” Mori’s underlying philosophy for making great wine is to make wine with sentiment. “You have a relationship with the wine – the more you give to the wine, it gives it you back 10 times more. You see the wine grow up like a child, it is fantastic.” Encouraging this relationship, encouraging both Iacopo and Parri to fall in love with the work and the wine is his goal. With Mori’s support, his son has created a new cuvée, the stunning Rosso di Montalcino Selezione Iacopo. Iacopo took different proportions of wines ageing in the cellar to concoct his own blend. The 2019 was the first limited release and has already been highly praised by the critics (Eric Guido wrote, “The word ‘wow’ does not do this justice.”). While Mori thinks his son could afford to relax a bit and “take it easy” – the skills he and Parri are showing in the cellar means perhaps it is Mori, after 47 years, who can now start to relax. While Mori contemplates his retirement, albeit just for 30 seconds, he knows he will never really leave. After the difficult conditions of 2024, Bordeaux has delivered a vintage that has surprised almost everyone. The 2025 growing season was among the hottest and driest of recent decades, with yields collapsing across much of the region. Yet rather than producing another 2022-style vintage of power and opulence, the wines have emerged with freshness, moderate alcohols and remarkable aromatic precision. Almost every major critic references the same paradox: a year that looked destined to produce massive wines instead yielded bottles of energy, balance and finesse. There is less agreement on where 2025 ultimately sits among Bordeaux's recent great vintages. Some critics compare it to 2016, others to 2019, 2020 or even 1961. What they largely agree on, however, is that the best wines are outstanding – and that this is a vintage where terroir, vineyard management and winemaking decisions matter enormously. William Kelley – Wine Advocate William Kelley sees 2025 as a vintage that reveals rather than conceals. He describes it as a "clarifier" rather than an amplifier, arguing that the wines expose differences in terroir, viticulture and winemaking with unusual transparency. Although the growing season was dominated by heat and drought, Kelley believes the resulting wines are fundamentally different from 2022. Cooler nights, lower alcohols and timely late-season rain produced wines that combine concentration, ripeness and freshness in a way that feels distinctive. He repeatedly returns to the notion that the best 2025s are classically proportioned despite their intensity. Unlike some critics, Kelley is reluctant to identify a single winning appellation. Instead, he sees success as highly estate-specific, with the finest wines distinguished by balance, precision and restraint rather than sheer power. Jane Anson – Inside Bordeaux For Jane Anson, 2025 is "the paradox vintage". The best wines are immensely impressive, but she cautions strongly against broad-brush conclusions. Anson places the vintage comfortably ahead of 2017, 2021 and 2024, and broadly alongside 2015 and 2019 in terms of potential. Yet she repeatedly notes that this is not a year where collectors can buy indiscriminately. Low pH levels, high acidity and significant tannic structure mean some wines will require patience, while others may never fully resolve. She sees the strongest performances coming from Bordeaux's great water-regulating terroirs, particularly the limestone and clay soils of Saint-Émilion and the best parts of the Left Bank. Pomerol is more variable, with dramatic differences depending on soil type and water retention. Anson's wine of the vintage is Beauséjour Duffau-Lagarrosse, while Canon, Petrus, Cheval Blanc and Château Margaux all feature prominently among her highest-rated wines. Anson's highlights: Ch. Antonio Galloni – Vinous Antonio Galloni is one of the most enthusiastic commentators on the vintage, describing the finest wines as "nothing short of thrilling". What impresses him most is the combination of concentration and freshness. The summer heat delivered tiny berries and naturally low yields, yet many wines finished with surprisingly moderate alcohol levels and striking aromatic lift. Galloni believes modern viticulture played a critical role, allowing producers to navigate extreme conditions more successfully than would have been possible a generation ago. He identifies Margaux as the appellation of the vintage and describes Pauillac as "jam-packed with great wines". Saint-Émilion's clay-limestone plateau also impressed him enormously. Pomerol, meanwhile, is the region he found most inconsistent. Galloni also highlights several lesser-known estates that he believes overperformed in 2025, noting that some of the vintage's most exciting discoveries may come outside Bordeaux's traditional elite. Neal Martin – Vinous Neal Martin describes 2025 as a vintage that constantly defies expectations. He argues that the late-August rain fundamentally changed the trajectory of the year, turning what appeared destined to become another 2022 into something altogether more nuanced. Martin calls it "a dialled-down and more precise 2010", a comparison that appears repeatedly throughout his report. He finds concentration and structure, but also freshness, restraint and remarkable aromatic detail. Like Galloni, he is highly enthusiastic about the Left Bank, particularly Pauillac, Saint-Julien and Saint-Estèphe. He also believes several of the greatest successes come from Saint-Émilion's limestone soils, while Pomerol shows more variation than many neighbouring appellations. Perhaps most notably, Martin sees 2025 as one of the strongest recent vintages for Sauternes, praising the purity and freshness of the best sweet wines. Martin's highlights: Montrose, Haut-Brion, Lafite Rothschild, Lafleur, Petrus, Latour Explore Neal Martin's full report, notes and scores on Vinous (subscribers only). James Suckling James Suckling describes 2025 as one of the most exciting Bordeaux vintages he has encountered in more than forty years of tasting barrel samples. He repeatedly returns to the contrast between expectation and reality. On paper, the growing season suggested another powerful, solar vintage. Instead, he found wines with what he calls "unique purity and tension", combining moderate alcohol, vibrant acidity and impressive concentration. For Suckling, 2025 is above all "a great vintage for great terroir". He argues that the region's finest vineyards adapted brilliantly to the challenges of the year, producing wines that are both intensely expressive and remarkably balanced. Although he acknowledges inconsistency across the region, he believes the best wines can stand alongside Bordeaux's leading modern vintages. Suckling's highlights: Château Margaux, Mouton Rothschild, Lafite Rothschild, Petrus, Le Pin, Ausone, Angélus, Les Carmes Haut-Brion Read part one and two of James Suckling’s report, along with his full notes and scores on JamesSuckling.com (subscribers only). Georgie Hindle – Decanter Georgie Hindle describes 2025 as both "paradoxical" and "miraculous", two words that neatly capture the mood of many critics tasting the vintage. She notes that almost everything about the growing season pointed towards a rich, powerful vintage. Yet the wines themselves display freshness, poise and balance rather than opulence. The crucial turning point, in her view, was the late-August rain that arrived after months of drought and completely reshaped the vintage's trajectory. Hindle argues that terroir and winemaking decisions were decisive. Producers who adapted extraction techniques and handled the naturally high tannin levels carefully were rewarded with wines of precision and elegance. Others were less successful. While she believes the best wines are exceptional, she is clear that 2025 lacks the broad consistency of 2022 and should be approached selectively. Hindle's highlights: Beauséjour, Cheval Blanc, Haut-Bailly, Haut-Brion, Margaux, Mouton Rothschild, Petrus, Vieux Château Certan Explore Georgie Hindle's coverage on Decanter (subscribers only). Jeb Dunnuck Jeb Dunnuck compares 2025 to a modern-day version of 1961, citing tiny yields, drought conditions and extraordinary concentration. Yet unlike the blockbuster vintages often associated with hot years, Dunnuck finds the wines surprisingly fresh and elegant. He repeatedly highlights the role of cooler nights and late-season rainfall in preserving balance and preventing overripeness. He sees Saint-Émilion as one of the stars of the vintage, while also praising the best wines of Pauillac, Saint-Julien and Pomerol. Like several critics, he believes value-conscious collectors should look closely at Castillon and Fronsac, where some producers delivered outstanding quality relative to price. Dunnuck's highlights: Margaux, Haut-Brion, Léoville Las Cases, Montrose, Le Pin, Ducru-Beaucaillou, Mouton Rothschild, Petrus, Figeac, Beauséjour Explore Jeb Dunnuck's full report, notes and scores on JebDunnuck.com (subscribers only). James Lawther MW – Jancis Robinson James Lawther sees 2025 as one of Bordeaux's most pleasant surprises. He notes that despite being one of the hottest vintages of the last thirty years, the wines possess freshness, moderate alcohol levels and considerable charm. The defining feature for Lawther is the combination of power and approachability — wines that have both concentration and an almost unexpected amiability. Cabernet Sauvignon particularly impressed him, especially in Pauillac and Saint-Estèphe, while Saint-Émilion's limestone-rich soils again proved highly resilient in drought conditions. Pomerol was less straightforward, producing some brilliant wines alongside more uneven results. Lawther is also highly positive about Sauternes, which he considers one of the vintage's major success stories. If there is one new constant in Napa, it’s that each vintage seems to bring extraordinary conditions – once-in-a-lifetime circumstances now occur with regularity.   In 2020, the historic Glass Fire erupted near the end of harvest, cutting power for many wineries, damaging vineyards, and meaning many producers didn’t release any wine, due to potential smoke taint. The 2021 vintage, on the other hand, was quieter with no wildfire activity; however, the lingering effects of a severe three-year drought caused reduced yields and the need for meticulous water management. Completing a trifecta of climate change issues, the theme of 2022 was neither smoke nor drought, but intense heat.   Unlike the unusually dry winters that preceded the 2020 and 2021 vintages, the winter before the 2022 vintage marked a return to normal rainfall totals. With over 18 inches of rain between the end of harvest and the start of 2022 alone, the three-year drought was broken. Steady rainfall continued into the early months of 2022 and, after a warm spring, budburst and flowering were slightly earlier than normal. The summer progressed in classic Napa Valley fashion, dry and warm, and the ample water levels led to healthy, well-developed canopies, unlike the previous two vintages. Though two minor heat spikes occurred in May and June, both were brief and too early in the season to have significant impact. All of this changed in the first week of September, however, when a major heatwave was predicted. While most white grapes were already harvested, the timing was critical for red grapes, the majority of which were approaching ripeness but needed additional hang time to achieve optimal flavour development and ripeness. The question every winemaker faced was: just how bad would the heat be?   Winegrowers had two choices: act conservatively and harvest whatever was close to maturity, or bet that the fruit would tolerate the heat. Of course, many variables influenced the choice, including vineyard elevation, vine age, access to irrigation and other heat-mitigation techniques such as misters and shade cloth. For later-ripening varieties and cooler sites, there was little choice but to endure the heat with fingers crossed.  For those who chose to wait, the heat spike was both longer and more severe than predicted – record-breaking, even. The first few days of September were hot – with peak temperatures ranging from 32-35̊C – but beginning on 4th September, daily temperatures soared over 38̊C for six critical days. In some lower-lying areas of the valley, historical records were shattered with temperatures surpassing 46̊C.  For winemaker Mike Smith of Myriad Cellars, the decision was stressful, as most of the fruit he works with, including from To Kalon and Dr Crane vineyards on the valley floor, were not fully ripe. Ultimately, he decided to wait. He likens this experience to facing a stronger team on the playing field, where no matter the outcome, the weaker team will become tougher as a result. Though he is pleased with the resulting wines, he says he still wonders what they would have been like if picked earlier.  Other winemakers didn’t wait for the heat to begin, but instead shifted their plans well in advance. At Philip Togni Vineyard on Spring Mountain, winemaker Lisa Togni says she “jumped the gun on harvesting”, starting on 23rd August – the earliest harvest ever in the history of the winery. She was able to harvest one-third of the property before the heatwave began and says the remainder was able to be brought in shortly after the heatwave ended, at optimal ripeness or slightly higher than normal.   When the heat dome settled over Napa Valley, however, some winemakers quickly pivoted. Winemaker Allison Tauziet of Colgin Cellars remembers she was in St Helena every night when the heat began, tasting in the dark, because she was so concerned about losing freshness. “I could sense flavors moving faster than I’d ever seen,” she says. Just a few days into the heatwave, Tauziet made the snap decision to pick all the fruit that was destined for the Cariad and Tychson Hill wines. “We nailed it,” she says, “We got maturity but didn’t sacrifice anything.”    Many small wineries with fewer resources, however, scrambled to find picking crews, as demand surged. As Lisa Togni points out, “Developing a relationship with pickers is critical. When you need them, you really need them.” Fermentation-tank availability was another major concern. With a suddenly very compressed harvest, not every winery had sufficient space to process the fruit.  Even with varied picking decisions, the multitude of microclimates and site variations in Napa Valley also affected outcomes. Elevation helps to mitigate heat, and this was the case on Howell Mountain at Dunn Vineyard, says winemaker Mike Dunn. Located 2,000 feet above the valley floor, temperatures were six or seven degrees (Fahrenheit) cooler, though still “incredibly unusual” and led to fruit with higher-than-average ripeness. He notes that a few of the 2022 lots at Dunn will likely be de-alcoholised, a technique famously adopted by his father Randy Dunn to keep the wines in balance and below his preferred maximum of 14% alcohol. At Sleeping Lady Vineyard in Yountville, a location “hard up against the Mayacamas mountains”, as described by Ad Vivum winemaker Chris Phelps, the natural shading that occurs from about 3pm onwards always shields the grapes from the hot afternoon sun – a feature that proved especially useful in 2022.  On September 10th, the heatwave broke, and just a week later, winemakers were presented with another potential challenge: nearly an inch of rain in one day. This, too, was record-breaking for the month of September, which typically sees little to no rain. The rain event was not enough to be impactful after the long, dry stretch of summer, says Mike Dunn, who instead described it as just enough to wash the dust off the grapes. On Pritchard Hill, the rain measured three quarters of an inch, but Tauziet says it was “not at all a big deal” for Colgin, and the days following were cool and dry, so mildew pressure was low.  Like Mike Smith, Dunn describes the vintage as a learning experience that will help form future decisions. He is considering a sorting table, which Dunn has never used before. “We are one of the few that are that primitive and that is intentional,” he says, noting that while he and his father’s goal has always been to avoid overly homogenous fruit, a vintage like 2022 made avoiding desiccated berries difficult. Similarly, the brutal heat caused Lisa Togni to decide to build a shade structure over the winery’s crush pad, which she describes as a matter of “human safety” in an increasingly warm region.   Other wineries have already adapted to hotter conditions and more frequent heat events. Up on Pritchard Hill at the Colgin estate, where the fruit is typically harvested later – and in 2022, after the heatwave – shade cloths are used across the entire vineyard. Tauziet adds that misters are used on blocks that are more vulnerable, including thinner-skinned Cabernet Sauvignon clones. Rather than irrigate the vine, the misters instead reduce the air temperature inside the canopy.  When it came to managing the fruit in the winery, it seems approaches varied, although the naturally high pH for later-picked fruit posed a potential ferment – with risks of stuck ferments and the associated problems. Many producers said they did little different, although – as mentioned – many emphasised sorting out any dried berries, but it’s a vintage where generalisations are difficult.  Increasingly extreme weather in Napa – whether from fire, drought or heat – makes vintage comparisons to 2022 difficult. Mike Smith sees some similarities with the heatwave at the start of harvest in 2017, however, which also led to opulent, rich concentration of fruit which he also sees in the 2022 wines. Lisa Togni reaches further back, to 1991, for a comparison, noting that it was a very ripe year that wound up evolving gracefully, while Allison Tauziet likens the texture of 2022 to 2002, for the “amazing expression of fruit”, and she doesn’t see any reason to disparage the wines. “It’s kind of shocking that I really like them,” she says, noting that, despite the stress of the vintage, “there’s a lot of what we’re always seeking: flavor, minerality and perfume.”  Coming after the highly structured 2021 vintage, which was marked by densely packed tannins, the 2022 wines are likely to please those seeking more immediate pleasure. The word “soft” is one that Chris Phelps uses to describe the wines but cautions that he doesn’t mean that in a derogatory way. “There is a natural hedonistic aspect the 2022s have had in spades since – or even before -- they left the fermenter,” he says. “The wine is fresh and has been charming since it was in juice form prior to fermentation. There's plenty of acid for vibrancy and tension, but with just a very slight touch higher pH.”  Most of the wines we’ve tasted so far share a bold style, with opulent layers of fruit and supple tannins. It’s important to note, however, that this is clearly not a homogenous vintage. Vineyard location and aspect were crucial, with higher elevations and those areas better shielded from the sun faring better. It’s clear that the line between fully ripe and overly ripe fruit flavours is razor-thin in this tricky vintage, with many wines showing notes of cooked, even desiccated fruit – not surprising, given the conditions. But collectors should certainly not be put off the vintage, as many other wines show excellent balance and a juicy, friendly exuberance that makes them very pleasurable even in their youth.  The 2022 vintage began as routine, but – in what seems be the new normal in Napa – shifted virtually overnight, forcing winemakers to make quick decisions based on their own unique location and combination of contributing factors. While the resulting wines will share some characteristics, the 2022s are formed by their microclimate, as well as the resources and quick decision-making skills of the winemakers. Lisa Togni also credits her successful harvest to another factor: sheer luck. Much like 2021, when fire licked the edges of the Togni property but spared her parents’ house and the winery, Togni is grateful above all else. “I feel for everyone who didn’t have the luck we did,” Togni says. “2022 was a reminder to be ever vigilant.
