James Suckling First out of the gate is James Suckling, who is in complete agreement with what we have been told by the châteaux and tasted so far: this is another great vintage for both the Left and Right Bank, forming the third in a trilogy of great vintages for Bordeaux. He writes, “The Médoc reds are closer in character to the 2019 vintage with more linear and finer tannins and precise, pure cabernet fruit while the Right Bank, particularly Pomerol and St.Emilion, is more like 2018 with reds that have more flamboyant fruit and creamier, densely ripe tannins.” While he had heard reports of heterogeneity, 90% of what he has tasted “show an outstanding quality level from first growths to petit chateaux”. He feels that Merlot has excelled, however there are plenty of outstanding wines in the Médoc too – indeed several worthy of perfect scores. While she believes the Right Bank is similar in style to 1989 or the 2018s, she feels the Left Bank has more in common with 1996, 2000 and 2006 due to the tannic profile caused by the dry summer months. “You will find plenty of racy, supple tannins that power forward and have a sense of energy, but also tannins that are a little dry and sometimes underripe if the drought led to blockages,” she says. Despite many similarities in terms of tannin concentration to 2010 and ’16, she feels overall the 2020 vintage is not as consistent as either of these years. For her, the biggest potential issue was this risk of unripe tannins, typically in the Cabernet Sauvignon, mostly affecting the Left Bank. While she notes that some properties’ second wines bear the brunt of this, she commends the exceptional efforts of La Croix Ducru-Beacaillou, Mondot and Blason de l’Evangile. She highlights, however, that 2020 continues a trend in the region, with the best wines performing “a sleight of hand from the vintage conditions” – something that she feels comes from “a confidence that I find in Bordeaux today, where there no longer seems to be the need to choose the biggest tannins for the main estate wine, and instead many choose to prioritise site expression.” All her potential 100-point wines (of which there are five) come from the Right Bank, bar Ch. Margaux which takes the title of wine of the vintage on the Left Bank, while Ch. Canon steals the top spot on the Right. Collectively, they’ve tasted their way through the majority of major releases, publishing a range of articles around the vintage including tasting reports on the Left Bank, Right Bank and white wines of Bordeaux 2020. Perhaps most refreshing to hear is a positive article on the “revolution” that is taking place in Bordeaux when it comes to precision viticulture leading to
“delightfully fresh, expressive, 'new old' wines”. As for 2020, “There are admittedly some stunningly good 2020s, even if [it] is not as consistent a vintage as 2019,” Robinson says. Lawther highlights the surprising freshness of the wines, positioning it somewhere between ’18 and ’19. The lower alcohol levels on the Left Bank “delightfully combine the classicism of traditional Bordeaux with modern winemaking and vine-growing sophistication”. Similarly to Anson’s report, Robinson feels some of the later-ripening Cabernet Sauvignon wouldn’t have reached full maturity before the threat of early October storms forced
vignerons to pick by 30th September (something that didn’t impact the Right Bank with its earlier-ripening Merlot). She feels, however, the overall volume produced on the Left Bank allowed estates to be extremely selective, including only the finest lots in the Grand Vin. All in all, the team declares it a vintage that falls in favour of the Right Bank – with wines that have led Robinson herself to “[fall] back in love with” Saint-Emilion. On the Left, however, Robinson notes particular consistency in the wines of Graves/Pessac-Léognan,  jancisrobinson.com’s highlights: Lafleur, Margaux, Lafite Rothschild, Cos d’Estournel, Haut-Brion, Mouton Rothschild, Pétrus, Angélus, Pichon Baron, Vieux Château Certan, Montrose, Ausone, La Lagune, Léoville Barton, Prieuré-Lichine, Rauzan-Gassies, du Tertre, Kirwan, Canon, Figeac, Pavie Read the team's full report on jancisrobinson.com Lisa Perrotti-Brown MW – Wine Advocate For Wine Advocate’s Lisa Perrotti-Brown MW, 2020 is “an enigma – a vintage that has been more difficult to understand than 2018 or 2019, with far more potential and, in some cases, greater growing season complexities than even 2017 (the year of the devastating frosts).” Despite comparisons with 2018, the wines are, in her view, very different. She highlights the differences between Left and Right Banks this year – with “more weight and generosity” in the latter, and more varied quality on the Left, noting that some from the Médoc lacked mid-palate weight. The key she thinks was the impact of the August rains: welcome relief for some, too late for others, and too much (therefore diluting the fruit) for certain properties in the Médoc in particular.  Overall she feels the variability brings 2020 in line with 2017 in some ways, however thinks that, at its best, the vintage is up alongside 2018 and 2019: “For some areas and terroirs, this is absolutely the third outstanding vintage.”  She notes that it is a simplification too far to declare it a Merlot vintage, as there are excellent wines from both Cabernets too. Pomerol and Saint-Emilion impressed her, while Fronsac and the Côtes de Castillon offer some great-value wines. Like us, she notes some outstanding performances from Pessac-Léognan. In the Médoc, she emphasises the importance of terroirs
with sufficient gravel to drain the August rains, as well as the budget and manpower to do the necessary work to manage the year’s challenging conditions. On the Right Bank, she characterises the best wines as “beautifully pure and perfumed expressions of ripeness”. Pessac is for her “staunchly earthy/savory”, while she warns some are dilute, the Médoc’s finest are “a paradox – lighter bodied, elegant, perfumed head-turners”. He feels it is “better than 2018 but doesn’t quite reach the peaks of 2019”.  While he describes 2018 as more hedonistic and 2019 elegant and purer, he believes the difference between 2019 and 2020 is marginal. “There are instances where 2020 will surpass 2018 and 2019,” he says, believing this will become clearer in bottle.  In his view, lower alcohols on the Left Bank have “allowed for greater expression of individual terroirs and more salinity in the wines”, but the finest examples are wines that also have great concentration. In contrast, the alcohol levels on the Right Bank are generally higher than in 2019 and the best wines of the vintage were those that managed to retain elegance. The 2020s’ slightly firmer tannins in general, Martin believes, will “merit long-term cellaring” compared to the 2019, which can be enjoyed earlier.    Martin highlights the cool nights in August and September as a key factor in determining the success of a Bordeaux vintage, helping the wines retain acidity – and 2020 had just this. These cool nights mean the wines have “excellent acidity levels that engender fresh wines with ample tension”.  As has been the case in the last three vintages, he has found greater consistency in the top hierarchy of wines, where the finer terroirs have kept the vines healthy through a challenging growing season. Despite this, he says there are “still a raft of excellent wines punching above their weight outside the famous appellations, representing outstanding value”.   Neal Martin’s highlights: Margaux, Trotanoy, La Mission Haut-Brion, Canon, Figeac, La Conseillante, L’Eglise Clinet, Lafite, La Gaffelière, Haut-Brion, Léoville Las Cases, Pichon Lalande, Mouton Rothschild, Vieux Château Certan, De Pez, Grand-Puy-Ducasse, La Bridane, Marojallia, La Voûte, Le Chemin, Latour-Martillac and Latour-Martillac Blanc  Read Neal Martin’s full report on Vinous  Jeb Dunnuck  Jeb Dunnuck is undeniably enthusiastic about 2020, declaring it “unquestionably a great vintage”.  For him, the wines more focused than 2018, but denser than 2019 – but feels it sits just behind these two and 2016 in the rankings. He notes that the early season rains have given the wines “a beautiful sense of purity”. As almost everyone has noted, it is this purity and freshness from such a warm vintage that is surprising.  He highlights the advantage of clay and limestone soils, as well as old vines. For him Pomerol is the star of the vintage (with “a bevy of legendary wines”), while Saint-Emilion and Pessac-Léognan also thrived. While he believes 2020 is not as consistent as 2019 or even 2018, he does believe the best examples are “incredibly exciting” and “unquestionably dazzling” wines.   For Galloni, the most important signature of 2020 is “a balance of richness and energy” which he believes is “highly unusual”. From his interviews with winemakers, he surmises that the cold August/September nights, along with the high seed count in the berries are the reasons behind the freshness of the wines, making them “sizzle with brightness and mineral-drenched vibrancy”.   He identifies Pessac-Léognan as the most consistent appellation of the vintage, which benefitted most from summer rains. The Left Bank, more generally, he says is more about “linearity and persistence rather than volume”, providing the wines with a classic feel and notably lower alcohols. Wine, though the most intimate of pleasures, lends itself to the most expansive of texts. We drink wine most often – tastings aside – in pairings of two, or in lonesome but agreeable solitude, and, its narcotic pleasure being felt internally, we feel its effects as we feel a fever: almost secretly, in shivers. Though wine is like sex in its intimacy, unlike sex, the form in which we fetishise wine – our vine erotica – is not hushed and illicit but encyclopedic. On the shelves of any wine drinker, there are likely to be catalogues, dictionaries organised by region, old Parker buying guides some 600 pages long that somehow, though dated, can’t be discarded.  Wine seems singular among human pleasures in this. We don’t, as a rule, rush from reading a poem to great anthologies of poetry, or add to the savour of seeing a play by reading a big atlas of dramatic literature – not, at least, after we graduate from school. Sports fans, it’s true, like big books of statistics, but then sports-watching is a social act in the first instance – the more people in the stands, the merrier the occasion. With wine, we like the macro with our micro: with a solitary glass in hand, we look, in print, over the next hill, or the current vintage, at the vineyard across the way, or the vintage yet to come. It’s part of the pleasure the glass provides. The reasons for this micro and macro turn are, on reflection, commercial and artisanal as much as aesthetic. The business of wine needs a big picture of its domain, its resources, and its potential market – scale sets the stage for commerce. The makers of wine like to place themselves on a broader map of where wine is and what it’s made with. The great Bordeaux classification of 1855 is not just the noblest public monument to a beverage ever attempted, but a model of market-making and even market price-fixing. Once a hierarchy of growths has been established, it is easy to slot in the price tags. But there is a truth of taste beneath the ordering of value. With wine, we know that what we are experiencing is, however singular, still an intersection of opposed forces – as the peerless wine writer Jancis Robinson MW says of her first glass of Chambolle-Musigny 1959; “I knew at once that there was something in the glass that was sensually delicious but that it was also made, produced, and therefore suggested a history of intellect and discernment.” The pleasure of wine is the crossing of a place, a grape and a people; and so, we turn to the big books to frame the small pleasures.  What distinguishes wine from even a good glass of ale or a local brew is the specificity of the pleasure set against the scale of the system that made it – one that historically embraces the planet. It’s a First Growth, or a domaine Burgundy, or a Ridge Zinfandel or a New Zealand Pinot Noir made to a Burgundy model by American wine makers … the more we know, the more we’re free to feel. Most sensory pleasures are specific to the point of being illicit – aside from the bemused fetishist, romance is a spontaneous pleasure, often aided, to be sure, by a systematic wine. Wine is premeditated; we choose a bottle, let it ripen, and break it open. Even casual table drinking has a tale to tell, a journey to trace on a map. These thoughts are brought to mind in contemplation of Wine Grapes, the monosyllabically titled but unprecedentedly expansive dictionary of grape varieties grown to be crushed and fermented on this green planet. Authored by Robinson, along with Julia Harding MW and the geneticist Dr José Vouillamoz, it marks an epoch – several epochs – in our understanding of wine, from both a professional planet-straddling and an amateur glass-in-hand perspective. A book of its time (published in 2012), it was made possible, in part, by a revolution in the DNA analysis of wine grapes to help discover their origins and histories.  The DNA profiling of wine grapes only began in 1993, and the first ‘paternity test’ successfully concluded in 1997 – a mere few days ago by historical perspective – with specialists, Dr Vouillamoz among them, drawing astonishing Darwinian lines among seemingly unrelated grapes. Zinfandel, it has been discovered in the last 40 years, is not only the Siamese twin of Primitivo, but its Croatian Siamese twin. In proper Darwinian fashion, the book tells us, “It looks increasingly as though an enormous proportion of the grapes we know today are members of a few key families.”  The leading families of wine, Pinot and Nebbiolo and the rest, like the leading houses of Westeros, jostle and engage in incestuous inter-breeding as they move towards dominance. As Jancis Robinson admits, the quest for the origins of grapes can become surprisingly emotional. “The Zin quest is so … heated. There was a Zinfandel conference in Croatia, with all the great Zin makers, even Joel ‘King of Zin’ Peterson from Ravenswood, and we all had to present our various things about Zinfandel. There was a small cohort of people from Montenegro who reckoned that their variety – whose name is unpronounceable – was the true progenitor of modern Zinfandel, not the Croatian one. It became so … Balkan! And you know what? They may be right!” Wine Grapes is of its time in another sense as well, marking the moment when we have started to think of wine not solely in terms of region, but much more in terms of variety, with the semi-mystical term ‘terroir’ acting as a kind of Holy Spirit between them. Thinking ‘grape’ more than ‘place’ releases our imaginations. The wholesome instructive pleasures of the book, to which we’ll come, shrink beside the unwholesome, guilty pleasures of turning the pages to meet the failures among grapes – the near-misses, the long-forgotten and forlorn lost toys – which please more than the patterns of primacy. The pleasure of reading about the grapes whose juice we do drink is nothing compared to reading about those we don’t. In dictionaries, oddities and parentheses fascinate us more than the major entries. No one turns to the dictionary to study ‘and’; we go to study ‘antediluvian’. So, turning these pages, flipping through the P’s on our way to encounter the great Pinot families, we come upon the lesser gods, even the little misshapen gnomes and dwarves of the wine world, and we delight in meeting them. (A fascination added to by the forthright sub-heads the editors provide.) On our way to Burgundy and Pinot Noir, we also meet Pinotin, a ‘recent obscure Swiss hybrid’ which edges into Pionnier, ‘a minor but complex, cold-hardy American hybrid used in blends in Québec’, and, of course, Pinotage ‘South Africa’s very own cross, both loved and despised’, which leads us on to Pugnitello and even Pukhliakovsky (a Russian variety ‘with erratic yields producing light wines’) and even unto Pules – ‘a minor Albanian white’. Radiating out from five pages on the major Merlot, we bump into Merseguera, ‘an uninspiring variety’ from Spain, and Merzifon Karasi, and Merzling, dismissed as a ‘very minor disease-resistant German hybrid’. Why these lost or obscure kinds of grapes bring so much delight with them is a fascinating question. It has in part to do with our general appetite for oddities and obscurities, which once produced ‘freak shows’ and still makes us fascinated with archaic musical instruments: we are curious to hear the sackbut because we want to know what led to the trombone. It is also the virtuous case that variety is the safeguard of continuity. In an age of ever-decreasing biodiversity with just a few varieties taking the place of many possibilities, one Quixotic California winemaker, driving through the fields of Cabernet and Chardonnay, dismissed them all – with a wave of the hand – as “chocolate and vanilla, chocolate and vanilla”.  The health of the planet is safeguarded by the persistence of so many kinds. It is also because the existence of these minor yet still thriving varieties gives us a satisfying picture of adaptation, the central biological act. Each of these grapes has found a home in the world. It may not be much of a home, but then neither, face the facts, is ours. We identify with the unknown grape. We are all more like a very minor disease-resistant German, or a cold-hardy Québec hybrid, than we are something noble and complicated. Few of us are bottles of Burgundy; we can all identify as minor Albanian whites. In conversation, Jancis Robinson, sheltering at home near Kings Cross in London, a home with a view of a graveyard (though a cheerful one she assures an interviewer) – talks of the wine almanac with the blunt enthusiasm that marks her writing. Robinson, in addition to her obvious honours and credentials, is a rare thing in the wine world, or any world: a writer who writes with equal parts brio and expertise. She explains the origins of Wine Grapes. “What happened was that one of the co-authors, Dr José Vouillamoz, who had been at University of California, Davis, felt that he needed to earn more of a living, and came back to Switzerland and got a job working on Alpine botanicals. But he didn’t want to lose his relationship with wine, and he came to me and said that he’d like to collaborate on a book about grape varieties. I’d already written one in 1986, based on our very fractional knowledge then.  Over lunch, I took along Julia Harding, a wine writer who works on my website. She’s extremely punctilious.” (Robinson, punctilious herself, says this with such emphasis that the listener feels that, with Harding, we must be talking about new frontiers, not to say dimensions, in punctiliousness.) “She had exactly the right sort of brain for a project like this. José suggested that we focus on the 10 or 12 most planted grape varieties to help simplify it. I thought that that book didn’t sound interesting enough. I waited until we were quite far down a bottle of Valpolicella and said, ‘I think our book should be about every single grape variety we can find.’ He gulped and said, ‘Then that’s what we shall do!’” The idea of creating a ‘perfect map’ of a subject is one of the itches that govern modern life. John James Audubon set out to describe not the major but every bird and beast in North America, and that’s what he did. Similar ‘almanacs of everything’ fill our botanical and anthropological shelves. It is an ambition so tied to modernity that in the mid-19th century, Lewis Carroll perfectly satirised it in his novel, Sylvie & Bruno, where two mad professors talk about their dream of making a map that would be on a one-to-one relation to the actual world – utterly perfect, if impossible to unroll. “I loved the scale of the thing,” Robinson says of her perfect map. “So, we carved things up: José did all the DNA stuff and history because he had good access to it, Julia, bless her, did the footwork – how much of each grape is planted where – while trying to taste as many as possible, too! And I wrote the entries on the best-known varieties, and the introduction and read every single word.  As with any dictionary, we used what came before: we went through appellation lists, with all of the varieties allowed, some of them almost extinct. A nice little detail of the book is that we persuaded the publisher that it should have some colour plates, and we were particularly keen to include the plates from the world’s first oenological book, L’Ampélographie: Traité Général de Viticulture, of 1901 … just out of copyright!” She pauses. “Of course,” she adds reflectively, “it was José, naturally, who discovered that Pinot and Syrah are related.” The offhand nature of her mention can’t conceal the significance of the remark. Of all the discoveries offered in the book, this is perhaps, for the amateur wine drinker, the most exemplary and astonishing. Painstakingly tracing the DNA heritage of the varieties, these two noble houses, Syrah and Pinot – the grapes of the Rhône Valley and those of Burgundy, the heart of Côte-Rôtie and the soul of Chambertin – are unified as cousins. This happened not through willed cultivation but in the natural evolutionary way: through variation and adaptation. Initially, the elegance of Pinot Noir was transformed through the usual evolutionary pressures of place and mutations, into the earthy pleasures of Syrah.  Chance mutation and lucky planting turned one grape into its near opposite. (‘Cross-fertilisation’, we’re told, ‘was common until the early 20th century because several grape varieties were often intermixed in the vineyards, facilitating natural crossings between distinct grape varieties’.) The phylloxera epidemic in France from the 1860s on – though it did not destroy as much as is sometimes thought – acted as a kind of sieve or filter of grape varieties, a sort of extinction event in large-scale natural history, forcing hard choices and making obscure varieties less desirable to save by root grafting with New World vines.   One virtue of the book is to propose, in effect, a new order of wines by celebrating ‘secondary’ grape varieties. “For me, among the obscure wines, something about as well-known as Cinsault stands out – it can make such lovely wines,” Robinson says. “There’s been such a sea change as the century turned. Everybody once wanted to make fruit bombs to one of three standard recipes. Then in this century, higher acidity, lighter wines are finally revaluing, and so Cinsault comes into its own. “Sometimes I come across a grape that isn’t well known but that’s so obviously superior. There’s Aglianico – the name suggests it’s Greek, though no Greek variety has ever been found and you only get it in Southern Italy. Perfect for late ripeness, and not for cool climates – and now it has travelled to Australia, where they’re desperate for hot weather varieties.  The whole array of Portuguese and Greek grape varieties are so fantastic! And so individual. And I love that after a dalliance with international varieties, both countries are now celebrating their own. There’s another white grape, an Iberian variety that’s stunning, and, again, I’m not sure it’s yet been planted much: Godello! It’s a bit crass to say it makes wines that taste like Montrachet, if a little more terroir-y and mineral … but it does. I could drink Cinsault for red and Godello for white into the next century. “There’s such a gap nowadays,” Robinson goes on, “between the Napa Cab thing, and these young people who are buying unknown grape varieties that sell for a fraction of the price, that are really good. Such a lot has happened in the field of recuperating old vines, some so obscure that they don’t even have a name. Miguel Torres, the scion of that great company in northeast Spain became very interested in grapes.  At first, he said, ‘Hey Dad, we need the posh varieties, Cabernet and Chardonnay’ – and made all these wines which did well in the Judgement of Paris. But, with time, he realised that it made more sense to concentrate on the indigenous varieties. He’s been engaged for 30 years, putting classified ads in the local press – ‘If you know of a wine grape that you can’t identify, let us know of it, and – if we think we can propagate out – we’ll do micro-vinification.’ He’s actually rescued Catalan varieties that were on the brink of disappearing; I think he found 30 varieties, and recuperated eight for micro-vinification with sufficient character to give them a new lease of life. And much the same thing has been happening all over Italy. If we published the book today, we’d be up to at least 1,500 kinds of grapes.” The great sorting question of our time, of course, is the question of climate change and its effects on wine cultivation. Robinson is cautiously hopeful about Burgundy. “I was lucky enough to go there and spend some time. The 2020 harvest is the earliest ever, at least since the 14th century. But, whereas the 2003 vintage, that legendary hot summer in France, produced wines that were pretty bizarre, the 2019s seem as fresh as a daisy, with pure fruit. I’m no plant biologist, but the vines seem to be getting used to the conditions … or the winemakers are. They’re not extracting as heavily, but, given that, there’s no sign of added acidity (it’s routinely added in the southern hemisphere), the acidity is coming from the grapes as well. Even some real old Burgundy hands, when you ask why the wines are so fresh, say, ‘I really don’t know.’” About the Southern Rhône, though, she is more pessimistic. “They’re not helping themselves in the Southern Rhône: too many are trying to make concentrated, high alcohol, 16% wines. And maybe consultants are too powerful down there – one consultant can be responsible for 20 or 30 labels, and so you’re going to have 20 or 30 wines that reflect that.” It’s here, though, that the knowledge of grapes, and our possession of this specialist dictionary, seems particularly valuable. If wine is to save itself from the vagaries of climate change, it will probably be through the introduction and new use of ‘marginal’ or forgotten ‘heirloom’ grapes. Only recently, France’s Institut National de l’Origine et de la Qualité (INAO) officially approved six new varieties: four red grapes – Arinarnoa, Castes, Marselan, and Touriga Nacional; and two whites – Alvarinho and Liliorila – all described as ‘well-adapted to alleviate hydric stress associated with temperature increases and shorter growing cycles’, potential saviours of the region against the villain of global warming. All of them, of course, are charted and explicated in Wine Grapes.

In the end, the great strange truth of wine is the truth of life: a thousand vectors press down on us at once – place, history, time, temperature, luck and breeding – and somehow in the intersection we find, or make, our pleasures. The question of type and variation was very different before Darwin who wrote, oddly (or perhaps not so oddly) almost simultaneously with the great classification of Bordeaux, publishing On the Origin of Species in 1859.  (Oddly because his theory would have been true in any other time; not so oddly because the urge to map the world, for the ‘almanac of everything’, was typical of mid-19th century confidence, as Carroll’s satire suggests.) Before Darwin, who loved wine, the fundamental view of the world was that the superintending categories, species and varieties, were the fixed things in the world. Everyone took it for granted that the ‘kind’ the ‘essence’, was the real thing and all the little variants merely particular shades away from it. A grape was a better or worse instance of its variety. Grapes, like apes, were of one fixed sort. Darwin’s great overriding insight was that only particulars exist, and that species and superintending categories are the labile and ever-changing kinds. Every kind of living thing came from somewhere weird and is on its way to somewhere weirder, with a brief stopover at being the thing it is now. The elegance of Pinot Noir is a close cousin of the earthiness of Syrah, one state is simply a moment in the life of the other, and each are moments in the life of the surging, unfixable whole. Wine, braiding through the planet and only coming to rest on a name for a moment in one place, is a bit of scientific epistemology in your glass, the truth of the particular made potable. Pleasure in the detail

 When the UK entered the first coronavirus lockdown in March 2020, there was a sense that the end of long, thoughtful, funny and serious conversations was dangerously close. Over a Zoom call, sat at our respective kitchen tables, F+R’s Patrick O’Connor, creative director Alan Aboud and myself, a journalist and editor, started to wonder if we could work together in some way to explore topics usually explored at the communal tables that were sadly empty.  The first project we worked on together marked the 90th birthday of iconic Lebanese winemaker Chateau Musar and the simultaneous publishing of a book celebrating the winery by Académie du Vin Library. Working together with music consultant Leo Walton, we conceived a package of content for FINE+RARE’s website to coincide with F+R’s exclusive release of various mixed cases of Chateau Musar vintages going back to the 1960s.  As part of the content package, I wrote three articles for the F+R website, and worked with Leo to create four Spotify playlists featuring Lebanese music from the relevant decades of the Musar vintages being released: the 1960s, 1970s, 2000s and 2010s. Leo and I also suggested the potential to add more cultural context to both the wine and our selection of music by producing a podcast in which we interviewed a Lebanese musician about musical culture and heritage in the region. We explored various ideas before interviewing two members of the Beirut Groove Collective – a group of DJs with a reputation for unearthing records from the 1960s, 70s and 80s and giving them a new audience. We asked the DJs to give us the low down on their legendary all-night vinyl-only parties in Lebanon’s capital, and about Beirut’s surprisingly vibrant music scene throughout the Civil War (1975-1990). We also asked Ernesto about his new reissue project with BBE Records and the first release in the series: Ihsan Al-Munzer’s 1979 synth-led Belly Dance Disco album.  This idea – of creating original editorial content that proactively ventured into topics in and adjacent to the worlds of fine wine and spirits in order to enrich the FINE+RARE experience – immediately appealed to all involved. Between us, we started to flesh out the idea for a new content platform that could explore and commission stories that took advantage of our combined knowledge, skillsets and networks, plus FINE+RARE’s access to the best producers and most interesting personalities driving quality in the worlds of fine wine and exceptional spirits.  While the concept was always for FONDATA to be a multi-media platform whereby we would produce content in whatever medium seemed most relevant to a given subject matter – podcast, video, blog or print – we focused our initial efforts on producing a large-format, print journal. It would provide a brilliant canvas for us to commission the best writers, photographers and illustrators, and it would also be the perfect format to function as a physical mission statement, something we could send to F+R customers. Doing this in 2020, when we were in lockdown, seemed like a great way to maintain connection and morale in an unprecedented moment in living memory. We formed a small ‘bubble’ to sit, appropriately distanced, in Patrick’s back garden in Hackney to brainstorm the idea and start mapping out what stories we could potentially commission for our first FONDATA journal. For the inaugural issue, one story in particular was pivotal to realising our ambition: commissioning American essayist, author and regular contributor to The New Yorker, Adam Gopnik to write a piece for us. In his book, Paris to the Moon (Quercus, 2000), Gopnik likens Jean-Philippe Derenne’s L’Amateur de Cuisine book (Éditions Stock, 1996) to “a medieval almanac, offering a timeless, secure, benevolent universe of food.” In our initial conversations, we’d identified Wine Grapes, A complete guide to 1,368 vine varieties, including their origins and flavours (Allen Lane, 2012) – the weighty 1,240-page tome authored by Jancis Robinson MW, Julia Harding MW and Dr José Vouillamoz – as a book we’d love to celebrate in some way. We wondered if Gopnik would be as enamoured with the book as much as Derenne’s and if he’d write something for us about it and its value to wine lovers and gastronomes alike. We duly sent him a copy of Wine Grapes (clothbound and slipcased) and a note introducing ourselves and outlining FONDATA’s ambition. He loved the book and the idea for the piece, so we contacted Jancis to ask if she would be happy to be interviewed by Adam. It turned out they were both fans of each other’s work. Our first feature was underway. But how would we present the piece? What would FONDATA look like? Alan asked Jancis if she would agree to be our cover star for our first issue. When she agreed, we had to work out how to bring the inaugural cover to life. “Gavin Bond popped into my head,” Alan, recalls, of the task at hand, “as he has become the ‘go-to’ photographer for celebrity portraits, especially in the film and fashion business. I felt Jancis deserved that status and reverence. Of course, the wine world reveres her, but no wine journal seems to be able to look beyond a shoot involving wine bottles and grapes.”   With Gavin Bond on board, the next step was to think about the shoot itself. “We enlisted the help of a wonderful floral design company, Studio Lupine,” Alan explains of his art direction. “We briefed Raggie Furuseth, the designer, to create a wildly original space in which Jancis could be photographed. The resulting portrait is a stunning and sensitive study of one of the world’s most learned and charming wine writers in her prime.” Another crucial part of our first issue planning was around design concepting and setting out our production values. As a kind of guiding light, Alan and I had adopted a mantra: “This isn’t a magazine”, as FONDATA would have none of the concerns of a regular magazine. We didn’t want to print on flimsy paper. We didn’t want to create something predictable or ephemeral, but rather an object that felt it had more permanence, more lasting value. FONDATA, we were all very clear, would strive from the outset to be a joyous, opulent celebration of cerebral, long-form editorial content.  Alan began working with his studio designer, Haley Austin, exploring different oversized formats, experimenting with page layouts and type treatments to realise his vision for how FONDATA would look. At the same time, he commissioned Rick Banks of Foundry 37 to create a bespoke logotype for FONDATA’s masthead based on his F37 Caslon typeface. We also adopted F37 as our core typeface for body copy, and to use at large scale for feature headlines and beautiful, full-page pull quotes.  In terms of our editorial direction, we were keen from the offset to commission editorial that explored evergreen (and ever-fascinating) topics. What does it mean to collect? How has the pandemic affected our lifestyles, and how much of that is positive? How do ideas germinate, and how does genius emerge? How important is history and tradition to innovation and revolution? What are the most significant drivers and the biggest hurdles for excellence? Once the Gopnik feature was in the proverbial bag, we set to work commissioning an issue full of features that we hoped would appeal to a wine-loving audience but not feel like we were trying to sell them something.  We approached Jancis Robinson’s co-authors of Wine Grapes, Julia Harding MW and Dr José Vouillamoz, to call out five relatively obscure grape varieties from around the world to champion them and the producers making remarkable wines with them. We also commissioned botanical artist Sarah Jane Humphrey to illustrate each variety.  We asked the former director of London’s Design Museum, Deyan Sudjic OBE, to contemplate the history of social spaces. To accompany his feature, we asked him to approach a number of highly regarded architects and interior designers to illustrate their visions of social spaces of the near future. As a result, we soon added John Pawson, AB Rogers, Paloma Strelitz, and Jon Marshall to our list of contributors. We tasked journalist and author Dylan Jones OBE with critiquing wine’s critical landscape, connecting him with some of the world’s leading wine writers and critics to discover how the pandemic had reshaped their work lives and lifestyles.  Author and historian (and one of the most elegantly dressed gentlemen about town) Nicholas Foulkes very literally wrote the book on cigars. His son, Max, is a Master of Havana and works at Davidoff in Mayfair. And it was Nicholas’ father-in-law who first introduced him to the pleasures of cigar smoking. Especially for our first issue, Nicholas pondered the joy of his relationship with his sons and the idea of passing cultural knowledge and enthusiasms from one generation to the next. We commissioned Julian Broad to shoot a portrait of Nicholas with his sons.  I spent time talking with restaurateur-turned winegrower Alex Xu and wrote a piece about how he’d come to completely reshape his future by planting three hectares of Pinot Noir and Chardonnay vines in the foothills of the Jade Dragon Snow Mountain in China’s most idyllic province. I also interviewed Waterford distillery owner Mark Reynier to find out how (and why) he’s bringing notions of terroir, traceability and transparency to the fore in the world of single malt whisky.   Meanwhile, British chef and food writer Thom Eagle contemplated the value of spending more, rather than less, time in the kitchen, and artist Stewart Walton illustrated the piece.  We commissioned educator and business guru Germana Di Falco to interview fashion designer Brunello Cucinelli about his philosophy to business and life itself, and we engaged British-born, LA-based writer and critic Geoff Dyer to chart the slow journey towards appreciation of and reverence for well-chosen wine. The issue signs off with a Letter from California penned by winemaker Maya Dalla Valle, who reflects on her 11-year journey to become the winemaker at her family’s celebrated vineyard in Napa. The resulting inaugural issue is everything we hoped it would be. As Patrick says in his publisher’s letter on its very first page, it is a celebration. One that delivers rich, engaging editorial content in a format that feels lavish and collectable in and of itself. “It is also a collective,” he continues. “The best minds brought together to tackle the subjects that captivate, so arresting in their absence – experience, space, people and family. [This issue] became a journey into the sound of the things that matter to the soul of the collector, the reasons things exist, the FONDATA.”

FONDATA: The genesis story

Barolo Chinato. Utter these words and you’re likely to receive one of two responses – “I absolutely adore it” or “Come again?” For the unacquainted, Barolo Chinato is an aromatised, fortified wine from the Piedmont region. It is made by infusing up to three dozen herbs and spices, the principal one being quinine, in grape neutral alcohol. The infusion is then used to fortify Barolo DOGC wine made from 100% Nebbiolo grapes. The blend is then matured in oak barrels for up to 12 months. Prior to bottling, a small amount of sugar is added. At around 16% alcohol, it is the same strength as most red vermouths. Its name comes from the Italian “China”, for quinine.   Two men are credited with the invention of Barolo Chinato: Giuseppe Cappellano and Giulio Cocchi. It is thought Italian pharmacist Cappellano created the recipe in Serralunga d’Alba in the 1800s and Cocchi created a new formula in 1891.  “I first tasted Barolo Chinato 10-15 years ago, when I was forging my path in the world of vintage spirits, and still remember being struck by the complexity of the drink,” purveyor of antique and unusual spirits, Edgar Harden, tells me. “The soft, viscous mouthfeel, the fruit flavour compounded with herbs and spices and a bittersweet finish lingered until the next sip,” the Old Spirits Company director adds.   Harden is an expert in rare and vintage cocktail ingredients – for want of a better word – often from defunct or discontinued producers. He says we are “blessed” to live in a time where there is such a range of antique vermouths, amari and Barolo Chinatos available. If you know where to look, he says, there are “hundreds of brands from every little town in Italy” to be found, and interest in these liquids is at an “all-time high”.   Barolo Chinato was originally meant to be consumed any time after bottling. But, because of the additional alcohol and small dose of sugar, it can be left for decades, even a century, if it has been stored correctly – “in its brown glass bottle in proper, dark, humid, subterranean environment,” Harden explains.   “Although Barolo Chinato is only slightly stronger than a Barolo wine, the introduction of a grape-spirit-based liqueur into the blend provides it with significant fuel for longevity,” he continues. “The inevitable oxidisation that occurs in a product on the lower part of the alcohol spectrum, the different rates of decay of the 30-plus herbs and spices and the recombination of those receding and advancing flavours at rates not originally intended provide for magical and harmonious combinations for the palate.”  He says, while traditionally it would be served neat, room temperature, in a small glass after a meal with dark chocolate, it is increasingly being used as a stand-in for many vermouths and Amari in classic and modern cocktail recipes.  Cocchi owner and Managing Director Roberto Bava says this idea to promote Barolo Chinato as the perfect companion to dark chocolate (“Like the French had with Pineau de Charentes,” he explains) saved the drink from extinction in the 1970s.   To many people’s surprise, the idea worked and the number of producers steadily increased. “It was a very simple detail but it was the lifesaver of the whole category,” Bava says, “I am very proud of this”.   Bava acknowledges Barolo Chinato is and will likely remain a “boutique” product, in part because of its price – “of course it is more expensive than amaro – you have to use a DOGC Barolo to make Barolo Chinato”, he says – but he believes its heritage and quality will continue to recruit fans.  With these credentials, and an ever-growing appreciation for rare and intriguing liquids, we think this lesser-known export from the prestigious wine region is going to struggle to remain a secret for much longer. What is Barolo Chinato?

Until I joined Vinfolio, the US arm of our business, I hadn’t heard of Ch. Belle-Brise. But I rapidly fell in love with this little-known, yet much-loved Pomerol property. Our retrospective was to be held at three-star Michelin SingleThread in Healdsburg (Sonoma County, California), and examine 23 vintages of Belle-Brise, from 2020 all the way back to 1993. As proprietor Henri-Bruno de Coincy unfortunately couldn’t make it to our event, I was tasked with hosting on his behalf, and gave him a call to learn more about what he feels are the most important details to share about his property. (My degree in French, which was instrumental in my becoming a sommelier, proved to be quite useful. While M de Coincy speaks four languages, English is not one of them.) During our conversation, I confirmed the embarrassment of riches as far as what sets Belle Brise apart from its illustrious neighbours. Located in the southwestern corner of the already diminutive Pomerol appellation, Belle-Brise consists of only two hectares (around five acres) of vines. Planted to 80% Merlot and 20% Cabernet Franc, the vines average 70 years in age, with some 110 years old. The vines are farmed biodynamically, using horses to complete the necessary labour in the vineyard. While the subsoils have a mix of clay and sand, they also possess the famous crasse de fer – the iron-rich sand that is said to impart the aroma of truffles, a facet which only reveals itself as the wine ages. M de Coincy refers to Belle-Brise as his “jardin” (indeed, while the family spends much of their time in Armagnac, the house at the heart of the vineyard is very much their second home) and takes great pride in the fact that everything can be harvested by hand in a single day. 
Wine has been made at Belle-Brise since the 18th century, but the property did not see its first commercial release until 1991, after M de Coincy acquired the estate, with the wine sold only to family and friends before that date. If you are familiar with your Bordeaux vintages, you will know that 1991, ’92, and ’93 were all extremely difficult harvests. While not the auspicious start he may have hoped for, it did offer an opportunity to explore the vineyard and learn how to best care for it. Today the winemaking is identical from year to year, with the vintage – and site – speaking loudest. The wines are fermented in concrete before being placed in a third new, a third second-use and a third third-use 400-litre barrels, the traditional size used for Armagnac, rather than the more conventional 225-litre Bordeaux barrique. The Coincy family has been making Armagnac for 32 generations and over 700 years, so the exact size is not arbitrary, but the decision to use larger barrels is also deliberate – reducing the impact of the wood on the final wine. While the story of the château and the history of the De Coincys are both compelling, I must return to what is most important to keep in mind when tasting Belle-Brise: elegance and finesse. Serving Pomerol with kaiseki-influenced Japanese cuisine (as at SingleThread) may not be the obvious choice, however the delicacy of the wines ensured that the harmony of the dishes was kept intact, leading to many unexpected moments of delight. Unsurprisingly, exceptional vintages were beautifully cohesive and balanced, however, it was the less well-respected vintages (2011, 2004, 2002, 2018 and 2008, among others) that truly showed how attention to detail and care can surmount challenges that nature may present. While we were not able to taste every vintage of Belle-Brise (with the tiny volumes produced, the family simply doesn’t have stocks of everything), this retrospective tasting was one of the largest ever presented. The favourite vintage among guests on the night was 2011, a vintage which also came up in my conversation with M de Coincy, as it has been chosen as the “desert island” of wine professionals and aficionados many times before. The most interesting flight for me came later in the meal, with the 2004, ’03, and ’02 grouped together. These vintages all presented different challenges during the growing season. The 2002 saw extreme rain in many parts of France, with heavy downpours affecting flowering and fruit set. The 2003 saw a summer with extreme heat, which taught many lessons that were applied in 2022. Lastly, the 2004 had a larger harvest on the whole, but the vintage is often forgotten, left in 2005’s long shadow. In the glass, however, the 2002 was pure and bright, with the 2003 showing its suntan but still refined, and the 2004 had a concentration and depth that was remarkable (especially as the wines were all around two decades old).  Regardless of vintage, elegance and finesse were constant throughout the entire evening, reminding me of a concept I learned in one of my French philosophy classes at university. If my memory serves me correctly, Michel de Montaigne proposed in his Essais the concept of a “forme maîtrise” or master form when referring to the evolution of a person as they age, and as something that cannot be easily defined in simple terms. While I am now much different than I was at age five, 15, 25, etc, there is still a governing sense of self (or possibly a single thread) that connects the person writing this to the child I once was. As we continued to taste through the vintages of Belle Brise, this forme maîtrise kept asserting itself, via the performance of the wine in the glass, reminding me of the “garden” where these wines were made. As many of the variables seen at other châteaux (differing blends, oak regimes, etc) remain constant at Belle-Brise year after year, one can focus on the vintage and its effect on the wine in the glass. This results in a singular experience, when one can truly feel the sense of place that only certain wines can offer. Tasting Ch. Belle-Brise: 1993-2020 vertical 2020 Ch. Belle-Brise: The 2020 Belle-Brise has an opulent nose with ripe fruit – plums – and violet. It’s already very approachable now, with remarkably fine rounded tannins. Plush. 2019 Ch. Belle-Brise: The nose is packed with ripe raspberry fruit and vanilla cream, currently more open than the 2020, with lovely sweet spice too. The tannins are slightly firmer with bright acidity – this is generous but focused. Very impressive. 2018 Ch. Belle-Brise: From a hot vintage, this is a very concentrated Belle-Brise with blackberry and black plum. Brooding, powerful and structured, the 2018 shows a very dark fruit profile, and needs a little more time to integrate fully and show its best – but this will be a wine for the ages. 2017 Ch. Belle-Brise: Packed with red fruit, this is open and expressive, fragrant and floral. The palate is tighter and more linear in style versus the warmer vintages that preceded it; the wine precise and delicate. 2016 Ch. Belle-Brise: This is a bold and age-worthy Belle-Brise. The nose is ripe, layered with dried fruit, prune and hints of dark chocolate. The wine is big and dense, with ripe tannins, and will benefit from more time in bottle. This is built to go the distance. 2015 Ch. Belle-Brise: The 2015 offers a nose of sweet, ripe fruit. It’s plush and mouth-filling, yet retains amazing elegance and great freshness. There’s beautiful balance, with very fine tannins that frame the fruit. 2014 Ch. Belle-Brise: This is just starting to reveal some maturity, with cedar, hints of truffle and tobacco alongside the plum fruit. It’s an earlier-drinking vintage versus the 2015, for example, but has lovely restraint and is showing beautifully right now. 2012 Ch. Belle-Brise: This may have been a tricky year, however the 2012 Belle-Brise shines – with bright fruit and violet florals on the inviting nose. The palate is delicate, supple and charming – a very pleasing wine packed with appeal. 2011 Ch. Belle-Brise: Another less lauded year, the 2011 is not as powerful as warmer vintages, but is still an hallmark Pomerol from this estate. It’s layered with plums and spice, the wine rounded, smooth and welcoming in style, 2010 Ch. Belle-Brise: The 2010 is a concentrated, powerful and muscular Belle-Brise that is destined for the long-haul. The palate is mouth-filling and tightly packed at this still comparatively youthful stage, even 13 years on, with dense berry fruit. 2009 Ch. Belle-Brise: This bottle wasn’t showing flawlessly – the tannins prominent and fruit not as concentrated as in other bottles we’ve tasted, although it still showed toasty, coffee complexity on the nose. 2008 Ch. Belle-Brise: This is beautifully expressive, with notes of mint, violet and plum on the nose. It’s fragrant with herbal lift, while the palate is vibrant, fresh and nervy. A joy from this less famous vintage. 2007 Ch. Belle-Brise: This may not be a top year, but Belle-Brise produced a lovely wine that is beautiful at the moment. The nose is evolved with earthy tones, truffle, cedar and tobacco. Ready to go, this is open and elegant, with lovely resolution on the palate. 2006 Ch. Belle-Brise: This is absolutely textbook Pomerol from Belle-Brise in 2006. The nose is lovely, with opulent fruit, while the palate is smooth and velvety, the tannins gorgeously polymerized. It’s still fruit-forward but really delicious. A delightful wine. 2005 Ch. Belle-Brise: This top-rated vintage offers a brooding, dark-fruited nose, with notes of chocolate, earth and truffle. The palate is dense and powerful, with chalky, rich tannins that cloak the layers of damson, cigar box and mushroom. 2004 Ch. Belle-Brise: The 2004 shows remarkable concentration and depth. The wine is mature, showing an evolved nose of cedar, tobacco and forest floor, while the palate is almost fully tertiary, but with ethereal dried fruit. Fantastic. 2003 Ch. Belle-Brise: Although this shows the warmth of the year, with baked fruit, it’s still refined, with resolved tannins. Unlikely to evolve further, so worth drinking up. 2002 Ch. Belle-Brise: This is showing beautifully – pure and bright, with aromas of dried flowers, dried cranberry and prune alongside lifted spice notes – cardamom and clove. On the palate, it’s elegant, with fruit still driving through to the refined finish. Haunting. 2000 Ch. Belle-Brise: This is full of ripe plum fruit, damson and vanilla with a sweet earthiness. It’s still amazingly fresh and tasting impressively young. It’s got a great backbone and plenty of life in it yet, but delicious now. 1999 Ch. Belle-Brise: Notes of forest floor, earth and dried leaves dominate the nose, accompanied by more delicate potpourri aromas. This is a beautifully delicate, fine-boned wine with a long, lingering finish.  1995 Ch. Belle-Brise: The 1995 is still surprisingly fragrant – with dried cranberry and redcurrant fruit alongside dried herbs, cedar and sandalwood aromas. It is alluring and enticing on the nose, leading to a seamless, lifted palate. 1994 Ch. Belle-Brise: The nose of the 1994 combines expressive dried orange peel with richer prune and raisin fruit, as well as savoury, earthy notes. On the palate, this offers richer fruitcake tones – with currants and spice, and impressive depth. 1993 Ch. Belle-Brise: This 30-year-old Claret is remarkable. It was only Henri-Bruno’s third vintage, and it is evolved but very much alive. The nose combines forest floor and more herbal tones, while the palate is silky, supple and perfumed. Arvine: Switzerland’s hidden treasure Berry colour: white
 Arvine, pearl of the Alps The ultimate Swiss grape variety, Arvine can produce captivating, complex wines of international stature, from dry to sweet. It is native to the Valais, southern Switzerland, where it was mentioned for the first time in 1602. Since the late 19th century, it has often been called Petite Arvine to distinguish it from Grosse Arvine, a completely different and rare local variety. I have not so far been able to uncover Arvine’s parents by DNA testing. It is often said that Arvine was introduced to Switzerland by the Romans. Its name allegedly derived from helvola, a grape variety mentioned by Cato the Elder. I refute this claim for two very simple reasons: firstly, it is impossible to establish botanical identity between the vague descriptions of Latin authors and modern varieties, and secondly, helvola grapes were black-berried. I think instead that its name comes from the local dialect arvena, itself probably derived from the Latin advena, meaning ‘just arrived’. This name could have been given to the variety shortly after its birth (or arrival?) in the Valais. It is a late-ripening variety, with small berries and compact, small bunches. It is quite productive, but prone to wind damage and susceptible to fungal diseases. Arvine covers 218 hectares (539 acres), almost exclusively in the Valais, representing only 1.48% of the country’s vine-bearing area. It produces complex, lively wines that can age well, with aromas of citrus and rhubarb, and a firm structure, as well as a characteristic salinity on the finish. Champions of Arvine In the Valais, several outstanding producers make excellent varietal Arvine wines. For dry wines, I would recommend Cave Benoît Dorsaz in Fully, Valentina Andrei in Saillon, Didier Joris in Chamoson, Cave de l’Orpailleur in Uvrier and Domaine des Muses in Granges, among many others. For the sweet wines, produced from grapes that are naturally left to shrivel on the vine, the undisputed champion is Marie-Thérèse Chappaz in Fully. From her biodynamic vineyards, this icon of Swiss winegrowers crafts some of the best sweet wines in the world, especially from Arvine. Her Petite Arvine Grain Noble is highly sought after, and her otherworldly Arvine Grain par Grain, made exclusively from botrytised berries harvested by hand, berry by berry, is almost impossible to find. Arvine has rarely been planted outside Switzerland. In Italy, it was introduced to the neighbouring Aosta Valley in 1970. In 1992, Angelo Gaja, one of Italy’s most famous wine producers, planted 0.36 hectares in Serralunga (Piedmonte). The result was a disaster, in his words, mainly because of problems with coulure and wind damage. In France, some vine parcels exist in the Languedoc and in the Rhône Valley, where charismatic winemaker Michel Chapoutier planted half a hectare in Tain-l’Hermitage, but he was not convinced by the results and has now abandoned the experiment. Outside Europe, it is produced only in Mendocino, California, by one adventurous producer, Ernest Vineyards, which makes a varietal wine under the Edaphos label.

Areni: Armenia’s national treasure Berry colour: BLACK 
History in a bottle Areni is the most important red variety in Armenia. It most likely comes from the village of Areni in Vayots Dzor, at the southeastern end of the county, where the world’s oldest cellar (4000 BC) was discovered in a cave in 2011. Interestingly, the grape remains found at the bottom of the old karas (the traditional clay jars) buried in the cave look very similar to the pips of the modern Areni variety. DNA profiling has failed to identify Areni’s parents, making it an orphan Armenian variety, but it has shown that at least two distinct varieties share the name Areni: Areni Sev (sev means black), the ‘true’ one that has historically been grown in Vayots Dzor, and Areni Seyrak (seyrak means loose, referring to the bunches), sporadically found among Areni Sev vines in old mixed vineyards. Areni Sev is a late-ripening variety with oblong, sometimes ovate, thick-skinned berries. The bunches are medium-sized and dense. It shows good resistance to frost, which means it can be cultivated at high elevations (up to 1,600 metres in Armenia). It is moderately resistant to powdery mildew and susceptible to downy mildew. Areni is exclusively cultivated in Armenia, where it has traditionally been used to make high-quality, age-worthy wines with complex aromas of violets, wisteria, cherries and blackberries, silky tannins and refreshing acidity. Champions of Areni After my first visit to Areni village in 2003, and despite the rudimentary winemaking at the only local winery (Areni Winery, now Hin Winery), I was convinced that Areni was among the most promising grape varieties in the world. In 2012, I met Zorik Gharibian in Izmir (Turkey) at the European Wine Bloggers’ Conference. I was much impressed by his 2010 Karasi Areni Noir, Zorah Wines’ very first vintage after 10 years of trial and error. We became friends and I selfishly helped him find an importer in Switzerland, in order to secure my own supply of his wines, including the mind-blowing high-end cuvée Yeraz. Since then, Zorik and his wife Yeraz have relentlessly promoted Armenian wines all over the world, and Zorah Wines has become one of Armenia’s most respected flagships. Their wines, sourced from ungrafted vineyards between 1,300 and 1,600 metres altitude are partly made in karas, traditional clay jars partly buried underground, ‘cousins’ of the Georgian qvevri. The sad thing is that Armenian-born Eduardo Eurnekian, one of the wealthiest people in Argentina and owner of several airports, including that of Yerevan in Armenia, has founded a winery named Karas Wines, despite not using any karas in the winemaking process. In 2018, judges granted him the exclusive usage of the name Karas, disregarding 6,000 years of shared tradition. Zorik Gharibian has been determinedly fighting against this unfair judgement and he plans to appeal to the country’s Supreme Court. I strongly support him. And I predict that Armenia may well be the ‘next big thing’ in the wine world. Dr José Vouillamoz
 Kydonitsa: Rebirth of an extremely rare grape variety Berry colour: WHITE Rescued in the nick of time Kydonitsa is a survivor, an almost forgotten variety from Lakonía (Laconia) in the southern Pelopónnisos (Peloponnese) in Greece. According to local belief, it was widely cultivated in the medieval period when Lakonía formed part of the Byzantine Empire. It then flourished under brief periods of Venetian rule, before it was threatened with extinction under Ottoman rule, as a result of the bans on alcohol consumption. It had almost disappeared when it was saved from extinction by Yiannis Vatistas and Yorgos Tsimbidi (Monemvasia Winery) in the late 1990s. DNA profiling has not revealed any match or parentage with any other variety, making it a Greek orphan. The medium-sized bunches are relatively loose and elongated. The berries are small and turn golden yellow when ripe. In Greek, the word kυδωνίτσα (kydonitsa) means ‘little quince’, referring to the aroma of both the berry and the wine. The wine also shows notes of lemon, grapefruit, bergamot and mirabelle plum, as well as aromatic herbs. It is elegant, creamy, with crisp acidity and a slightly bitter, orange-peel finish, with a hint of iodine. Kydonitsa is grown exclusively in Lakonía, on the east coast of the Pelopónnisos, near the island of Monemvasia. Champions of Kydonitsa Yorgos Tsimbidi is a visionary. In 1997, while most wineries in the Pelopónnisos were busy planting so-called international grape varieties, he founded Monemvasia Winery in order to revive the historical Malvasia wine in its birthplace. The name Malvasia has been given to a wide range of genetically distinct white-, pink-, grey- and black-skinned varieties which are all particularly well suited to the production of sweet wines. The name is purported to be a corruption of Monemvasia, which means ‘single entrance’ and is the name of a small port situated on a rocky spur in Lakonía. It has been famous since ancient times for its sweet wine made from sun-dried grapes. The earliest mention of the sweet wines of Monemvasia dates back to 1214 in Éfesos (Ephesus, today in Turkey), and in 1278 the Venetians were already importing vinum de Malvasias. The exact identities of the grape varieties making up this sweet wine are still unknown, but Kydonitsa and the appropriately named Monemvasia were probably part of the blend. This is what drove Yorgos Tsimbidi to put all his time and energy into rescuing them, carrying out countless on-farm trials since 1997. He now produces dry varietal wines, as well as the sweet ‘Monemvasia – Malvasia’, a blend of Monemvasia, Kydonitsa, Assyrtiko and Asproudi grapes, dried for approximately two weeks under the sun, in order to revive the ancient tradition. Today, Yorgos runs the winery with his wife Elli and their daughters Marialena, Anastasia and Artemis. I was able to taste a mini-vertical of Kydonitsa during my visit in 2016, which convinced me of the exceptional quality and ageing potential of this resurrected variety. And the rest of the portfolio convinced me that Monemvasia Winery is one of the best in mainland Greece. Dr José Vouillamoz

 Baga: Northern Portuguese red with a simple name and a complex character Berry colour: black 
The rehabilitation of Baga The meaning of Baga may be simple (berry) but the variety is far from it. When it is good, it is breathtakingly beautiful and capable of long ageing. When it is abused, it is acid, mean and lean, with tough tannins. It requires commitment from growers and wine lovers. While it may have originated in Portugal's Dão region, it has found its home in neighbouring Bairrada, where it is the dominant red variety. In 2017 there were 8,258 hectares (20,406 acres), 4% of Portugal’s vineyard area. It’s found mainly in Bairrada but also in Dão, although there it is not authorised in DOP wines. Baga vines are also planted, though far less numerously, in Lisboa, the Tejo and the Douro. The cool, wet, Atlantic-influenced climate of Bairrada is particularly inconvenient for a late-ripening variety with thin skins and prone to botrytis. If its vigour and productivity are not controlled by careful viticulture or the natural balance achieved by older vines in poor soils, there is increased risk of under-ripeness or rot when the September rains arrive. Despite all this, those whose hearts have been captured by the variety have shown it to be as bewitching as Pinot Noir, and as hauntingly complex and long-lived as Nebbiolo. Champions of Baga The variety allows itself to be made in many styles, influenced strongly by the soil (limestone-clay and granite are both prized), the age of the vines and, not least, by the personalities of the winegrowers and their choices in the winery. The most restlessly experimental and determined is Luís Pato, who was prominent among a small group of quality-minded winegrowers who dragged Baga into the spotlight for fine wine after it had languished for so long as a source of bulk reds churned out by the state-controlled co-ops and négociants for much of the 20th century. While there are today, thankfully, too many good winegrowers to mention by name, the Baga Friends display the variety’s wonderful diversity: from the powerful styles aged in oak that become increasingly complex and perfumed with age that are produced by, for example, Luís Pato, Mário Sérgio Alves Nuno at Quinta das Bageiras, François Chasans at Quinta da Vacariça and Paulo Sousa at Sidónio de Sousa; to the lightly stepping, red-fruited, fresh and scented beauties of Filipa Pato and Douro incomer Dirk Niepoort at Quinta de Baixo. Baga can also make very good sparkling wines. Bussaco Palace Hotel has an astonishing collection of very old vintages, blending Baga from Bairrada with Touriga Nacional from Dão. Julia Harding MW 
Kisi: Recently resurrected and scented Georgian white Berry colour: WHITE The resurrection of Kisi Maybe it’s because thin-skinned Kisi is difficult to grow and sensitive to the climate that it was on the verge of extinction at the end of the 20th century, when David Maisuradze made a wine that put the variety firmly back in the spotlight. The highly respected winemaker, then with Telavi Wine Cellar, managed to find just four tonnes of the variety to make a wine, fermented in a stainless-steel tank, that stunned wine lovers with its pure, floral aromas and deep fruit flavours of citrus and pear, richly fruited but dry. This variety didn’t stand much chance in the Soviet era when only a very limited number of varieties were permitted in the interests of volume rather than quality. Kisi was not among them and it survived in family vineyards in just three villages in its homeland of Kakheti, in the Alazani Valley in eastern Georgia in the shadow of the Caucasus Mountains: mainly in Maghraani but also in Argokhi and Pichkhovani. There are currently about 500 hectares (1,235 acres) of Kisi in Georgia, all still in this region. There is currently no DNA evidence to reveal the variety’s parentage but it is not related to Mtsvane Kakhuri or Rkatsiteli, the latter a Soviet favourite. Champions of Kisi In Georgia, ‘classic’ white wines are made in a way familiar to most 21st-century wine drinkers – fermented without the skins, typically in temperature-controlled tanks, occasionally fermented or aged in oak. By contrast, so-called qvevri white wines, sometimes referred to as amber wines because of their typically deep colour, are those vinified in traditional Georgian qvevri, large clay vessels ranging from 700 to 2,000 litres, buried underground so that just the opening is visible. The lightly crushed whole berries, including the skins and seeds, and sometimes even the stems, are fermented together in a qvevri, thus producing a wine with firm, even chewy, tannic texture and a wonderful panoply of flavours derived both from the variety and the winemaking, often ranging from apricots to chamomile. Soon after the appearance of Maisuradze’s revelatory wine, Gogi Dakishvili, a master of these qvevri wines, was able to buy a small amount of Kisi and make a wine in this second style. The cat was out of the bag and growers, including Dakishvili, started to replant when they saw the potential.  Kisi made under both the Dakishvili Family and the Orgo labels reveal all the textural and aromatic complexity of scented varieties made in this way. They are utterly pure, full-bodied wines with intense aromas and flavours that have sufficient structure to be very versatile with food. Qvevri winemaking was recognised as a UNESCO intangible heritage in 2013. While this is the style I particularly enjoy, for anyone who is not a fan of amber wines, there are fine examples that reveal even more of Kisi’s aromatic potential and deep but fresh fruit intensity. These include those from Winiveria and Khareba, and a particularly good off-dry style from Koncho & Co. One of the finest, in this case with light oak influence, is made by Danieli Winery, from vines near Argokhi, one of the three villages which were key to Kisi’s renaissance. Julia Harding MW

Looking across the dramatic slopes of the Douro Valley, it’s easy to imagine that time has stood still here. While Port is steeped in tradition, however, recent decades have seen it leap into the modern era – with no shortage of diverging opinions about the “right” way to produce Port. Just put a handful of the region’s finest in a room and ask about co-planted or monovarietal vineyards, granite or stainless steel, de-stemmed or whole-bunch fruit, trodden by foot or machine, and feel the temperature rise as the debate unfurls.  There is, however, one element that gets surprisingly little press – the all-important fortification, an element that arguably defines Port, and until relatively recently was out of winemakers’ control. Originally spirit was added to harden the wines for long journeys in ships’ bows, preparing them for long voyages, and only became standard in the 19th century.   Once the fruit has been picked, trodden and starts fermenting, producers add spirit – or aguardente, often colloquially (and erroneously) referred to as “brandy” – to halt fermentation, thereby retaining the natural grape sugars that give Port its signature sweetness. The wine is a mere 5-6% alcohol at this stage, and the fortification brings it up to between 19 and 22%. Given the strength that the wine needs to reach, this spirit represents a massive 20% of the final product. Legally, aguardente must be a grape spirit of 77% – significantly lower in strength than the spirits used for other fortified wines (such as Madeira or Vins Doux Naturels, which use a highly rectified grape spirit of 95-96%). This lower alcoholic strength is key; meaning the spirit is less neutral, and therefore has even more of an impact on the final wine.  This spirit has a rocky history which isn’t free from scandal. After a local shortage, 1904 became known as the “Schnapps vintage” – having been fortified largely with a German spirit made from potato and grain. The 1972, ’73 and ’74 vintages saw industrial alcohol used instead of grape distillate. (Responsibility for this latter fraud fell to a French supplier who duped the unknowing Casa do Douro into buying Yugoslavian spirit.) Besides these occasional lapses, the spirit was mainly made from excess wine in the Douro during 19th and early 20th century, but in 1907 the Portuguese Prime Minister João Franco banned the distillation of wine from the Douro, meaning aguardente had to be found elsewhere. Despite presenting 20% of the wine, the spirit used today is far from local, sourced from far beyond Portuguese borders (often Spain and France).  The key date – however – is 1991. Under the authoritarian Estado Novo regime in the early 1930s, a monopoly on the spirit was established, with its supply state-controlled. This continued for over half a century, via the Casa do Douro, and then from 1976 via the Instituto do Vinho do Porto e Douro or IVDP. The freedom to choose which spirit used was only granted to shippers in 1991 – something that David Guimaraens (Head Winemaker at Taylor Fladgate) argues is one of the most significant changes in Port.  “We had no choice, the spirit quality was very average,” Guimaraens laments of the old days. He returned to Portugal, fresh from studying at Australia’s leading winemaking school Roseworthy, in 1990 – just before the shippers gained the freedom to choose their own spirit. “When you use a very clean, fine spirit, when it is young, your fruitiness comes out much more – making it more appealing in youth, almost entirely because of the quality of the spirit,” he explains. He cites two examples – Taylor’s Vargellas Vinha Velha and Croft’s Sērikos – both wines which are made from 100-year-old vineyards, made as they always have been in granite lagares. It is, he argues, only the spirit that has changed in these Ports.   For Guimaraens, the quality of spirit is most apparent in a vintage Port’s “teenage” phase – between 14 and 19 years of age, when it is starting to lose its fruit but not yet fully developed bottle maturity. This transitional phase is, in his view “much more attractive than it used to be in the past”, meaning Port drinkers are safer opening a bottle at any stage of its life. He points to 2000 as a pivotal vintage, when the quality of spirit started to really improve and produce, in his view, some of the region’s finest wines.  “Spirit has been crucial,” Richard Mayson – writer and author specializing in the wines of Portugal – agrees. “When vinification techniques were experimental – the late 1960s, ‘70s and ‘80s – you can certainly taste the poor quality spirit in the thinner-quality wines.” He explains that this period saw massive emigration and a resulting shortage of feet to tread the region’s harvests. The early autovinifiers used in lieu of the traditional foot-treading simply didn’t result in the same level of extraction – and therefore have, over time, revealed the underlying spirit quality. There are, of course, exceptions – with some great wines made. He, however, like Guimaraens, feels the 2000 vintage marked a real shift in the class of spirit used.  The uptick in the quality of spirit is one of the reasons – along with the quality of the fruit, viticulture and more – that Carlos Agrellos of Quinta do Noval feels the property has been able to declare every vintage since 2011. “It’s extremely important to choose the right one,” Carlos Agrellos of Quinta do Noval explains of the spirit. He is one of a group of 20 companies – including Niepoort – who have, over the past five years, clubbed together to buy spirit. As smaller operatives, grouping together gives them more clout, enabling them to secure higher-quality spirit for their wines – and fair prices. Each May they meet in Gaia, tasting through a selection of spirits sent over by three or four different producers – all of which are scored blind. In 2020, they tasted 20 different spirits that were approved.   The results of the tasting are shared with everyone, then each company will decide which they wish to buy for their wines. The spirits come from southern France, Spain or Portugal. There are two categories of spirit –those distilled from wine and those from wine lees. The two are very different: the former is favoured by most – having more delicate, fruit and floral aromatics; while the latter was only approved for use in 2014, and is usually stronger in flavour. While in general “wine” spirits are generally the best, the spirits from lees can offer additional complexity. “At Noval,” Agrellos explains, “we tend to blend these two and use them for different types of wine, from white Port to Tawny to Vintage Ports.” There’s no fixed blend, and it varies from year to year, but he tends to use both – with higher-grade spirits for Vintage Ports.   Symington and Fladgate – the giants of the Port trade – purchase such large volumes that they buy their spirit independently. Tom Symington – fifth-generation family member and part of the winemaking team – explains that the spirit used to be a wider cut, and today it’s narrower, resulting in a purer spirit. “We focus on the neutrality, the aromas and the way it reacts with the wine,” he says.   Talking to producers about the style of spirit they look for, there is a general consensus that neutrality is desirable – to what extent, however, varies significantly. Agrellos aims for a more neutral, but slightly floral spirit. The most important thing for him, however, is the volume on the palate: he believes that it is this volume and texture of spirit that is most important for vintage Port. “It’s what will hold the wines for years to come,” he says. He values this above and beyond aromatics, while of course looking for something very pure. It’s this texture that leads him to use some wine-lees distillate – which has much more to offer in that regard, as well as its stronger flavour. The wine distillate by contrast tends to be purer in terms of aromatics, and is sometimes even double-distilled.  While Symington uses the same spirit across all their Ports, David Guimaraens looks to use a different style of spirit depending on the style of Port in question. He is clear, however, that it shouldn’t be part of the house style – but a “neutral oenological product”. He chooses to use one batch of spirit across each style for all the houses, not wanting it to be a differentiating factor, or dominate the quality of the fruit. For example, the spirit used for his vintage wines costs twice as much as that for the most entry-level wines – “And you get your return,” he notes.  He blends his own “master spirit”, combining batches sourced mostly from Portugal and France. “In the early days, it wasn’t as simple as using a clean spirit. To get spirit we wanted, we had to get the wines fermented in a particular way,” Guimaraens explains. With an overly neutral spirit, you risk ending up with a lighter Port; but too high a component of higher alcohol and it interferes with the wine’s organoleptic character, subduing the fruit. Too many spirits are made with excess bulk wine – rather than wine that has been fermented with the express purpose of producing spirit.  Dirk Niepoort favours quality and a little bit of character. “The purest, the best, the most harmonious – but not necessarily the most neutral one” is what he looks for, he explains. At the group tastings, his tastes are reportedly well known, with many of his colleagues able to identify the aguardente he will choose. His preferred spirits are finer, lighter, with more precision, but – importantly – also character. He finds that they tend to come from France, often from Cognac, from vineyards specifically planted with the idea of producing a distillate – not just excess wine. “Our grapes are too good for distillation,” Niepoort explains – the best spirits, in his view, are made with grapes from cool climates, with high yields and high acidity. He normally chooses three different spirits, depending on availability and price, with the very best spirit reserved for his top wines. For any organic wines, of course, they require an organic distillate.   While Niepoort admits the quality of spirit has improved, he doesn’t believe that the quality was nearly as bad as some – such as Guimaraens – imply, telling me people are unnecessarily “ferocious” about it. “I think the Port Wine Institute did a fantastic job in selecting huge amounts of spirit. Considering the huge quantity needed, the average quality was extremely high.” It certainly isn’t stopping him drinking fine vintage Ports – such as a bottle of 1963 Noval he had the pleasure of uncorking recently. Nevertheless, he doesn’t deny that it was a significant step not having to buy a mass product, and it has really opened the market.  It’s not as simple as winemakers having total autonomy, however, with a strict approval system via the IVDP to ensure the quality of spirit being used meets their standards. “It’s not only complicated – it’s expensive,” Niepoort says of the process. He’s found it a struggle to get some spirits approved, with, for example, double-distilled spirits harder to get sign-off than column-distilled liquids – a clear source of frustration. While the process is clearly there to control quality, producers aren’t abusing this independence; in general they are spending more money than ever before – making the whole thing, in Niepoort’s view, futile. “We should have some freedom to do what we want,” he says.  Tom Symington feels that it’s more than just the quality of spirit that has improved the quality of Port. He believes other developments have been more significant, particularly emphasising advancements in winemaking (highlighting the introduction of stainless steel as well as robotic lagares) and viticulture, especially monovarietal vineyards which – he considers – allow them to achieve perfect phenolic ripeness, with no green or raisined fruit. It is more than just the equipment, he notes – it’s the know-how gained over time, and most importantly balancing that with tradition.  “Of course the modern young people will tell you that viticulture is much better today,” says Niepoort dismissively. He prefers to work with old-fashioned growers. Over 90% of his vineyards are over 60 years in age and traditional field blends. He feels that the shift to monovarietal vineyards – dedicated only to five of the region’s many indigenous varieties – is, along with a move toward de-stemmed fruit rather than foot-trodden whole bunches, responsible for changing the style of Port. “The wines became fruitier and darker, but at the same time, thinner,” he explains. Niepoort historically didn’t make any Port themselves, and the 1994 vintage was the first they produced in-house. For him, this shift – from the 1970s and ‘80s – for shippers to own vineyards, rather than merely buying wine in, is the greatest advancement in the region.  The Douro Valley has seen a run of top-rated vintages – with universal declarations in 2011, 2016 and 2017, and some shippers declaring 2018 and now 2019 (including Niepoort). The general rule of three declarations per decade looks set to become a thing of the past. How much can this be attributed to aguardente? Relatively little, perhaps, however it’s hard to argue that this liquid – making up a fifth of the final wine – doesn’t have a role – and depending on who you talk to, the heart – to producing the very best Port.   Read more Editorial or browse our range of Port
