With the recent fruitful set of vintages from practically all the classic French regions, you would be forgiven for thinking one is spoilt for choice for quality and even quantity. The utter devastation across France’s vineyards this spring, however, due to persistent and heavy frosts, was a real wake-up call. There will be very little wine made in 2021 throughout France and the scarcity in the next 12 months will be a reminder of just how volatile and vulnerable wine production can be. Chablis took a particularly big hit, with production set to be down by as much as 80%. Expect to see global shortages of the more basic appellations (Petit Chablis, Chablis and Bourgogne Blanc) imminently, with 2020 stocks of these wines already largely sold. With this in mind, we look at the Premier Cru and Grand Cru 2020 releases with added interest and gratitude. Fortunately, it turned out to be another hugely successful vintage for the region (and Burgundy more generally), yet quite different in character to 2018 and 2019. Like much of Western Europe, Chablis experienced the warmest 12 months of temperatures on record, warmer even than 2003. This meant a very early start to the 2020 growing season and, while there were outbreaks of frost, the damage remained minor, particularly when compared to 2021. It was, according to Domaine Long-Depaquit’s Matthieu Mangenot, “a very easy vintage to manage, in terms of viticulture”. With a 40% reduction in rainfall and over 300 hours more sunshine than average, there were next to no disease issues in the vineyard. The dry weather even retarded weed outbreaks and this meant little to no spraying was required in the vineyards. But this shortage of water was bound to also stress the vines. “The drought caused the vines to slow down the maturation process of the grapes,” explained Mangenot. “This was quite an unusual phenomenon.” Since the growing season had started early, vignerons were looking to pick early, but the sugar in the grapes remained low throughout the summer and was only rising very slowly, pushing picking dates later and later. While this raised concerns over when to pick, it also provided many benefits to the final wine – benefits that would only become apparent after fermentation. For Mangenot, the very slow maturation process allowed more acidity to be retained. The berries also remained very small, helping to increase concentration. Despite this, the potential alcohol remained very reasonable – producing much more “classic” levels in the finished wines, around 12.2-12.5%. The other advantage of this slow ripening was that, unlike in the last few hot vintages, there was a lot more time at harvest to pick. Vignerons could take their time and pick certain plots only at optimum ripeness. In fact, after a couple of days spent harvesting the more mature vineyards, Long-Depaquit took a two-day break and slowed down the picking, just to enable the grapes to reach that extra level of maturity. While Domaine William Fèvre’s Didier Séguier was concerned about the effect of the sun’s intensity in July, he was happy to find “a very fresh profile to the vintage” – driven by what he describes as the “double face of the grapes”. One side of each row and therefore bunch was more exposed to the sun, providing a riper, warmer fruit profile, while the other side of the row, where the fruit was more shaded, produced fresher and greener flavours. Combined, the results proved complementary. Importantly Séguier noted that, while 2020 was a warm year, August was not as hot as in 2019; as such, the grapes were not as extremely ripe as in 2019, but did ripen less uniformly. WiIliam Fèvre started harvesting on 25th August – the earliest harvest date in the domaine’s history, alongside 2003. For Séguier, the main challenge was the difference in ripeness – “not just even between parcels, but also on the same row and even the same grape!”. In this respect, selection was key. For most, harvesting took place from 22nd to 23rd August and continued over a two-week period. Yields overall were about 20-30% down, due to a number of factors. A very cold snap in the spring damaged some vines, while the small berries also meant there was a lot less juice in the berries, and the bunches themselves were also much smaller. The biggest threat to yield, however, was the number of shriveled berries due to the drought. While these could easily be removed at sorting and therefore not affect quality, it was the main cause for the drop in yields. In many ways, 2020’s warm, sunny conditions seem similar to those of 2018 and 2019, yet the profile of the wines is completely different. The alcohol levels are much lower and the acidity levels much higher – the pHs sit around 3.3 to 3.35 (compared to 2019 which was closer to 3.45). Another point of contrast with 2019 was the relatively high levels of malic acid in the grapes found at some properties/in some vineyards – something that typically decreases in very sunny vintages This worked in the vintage’s favour for producers like Mangenot, since after malolactic fermentation there was more lactic acid. This added richer notes to off-set the citric acid backbone of the wines, bringing greater balance. All these factors are in direct contrast to 2019 – a very successful vintage, but almost the opposite in terms of flavour profile. “In 2019 there was lots of evaporation of water from the berries creating an intensely concentrated and stone fruit aromatic profile,” says Mangenot. “The grapes were ripening extremely quickly in 2019 and it was a rush to pick everything before the danger of over-ripeness crept in. If anything, the 2020 was the opposite, with some wines having a green, lighter, herbal edge – on the positive side of that spectrum.” For him, the 2020 vintage has become difficult to compare. “While it shares the very warm conditions of 2003, 2009, 2015, 2018, it doesn’t behave in the glass like any of them.” For Vincent Dauvissat, it reminds him of 2002 with a touch of 1997 – two dry vintages that managed to preserve their acidities and mature beautifully. “It is a vintage with a lot of charm and a very nice freshness,” he says. Dauvissat, unlike Long-Depaquit, had very little malic acid in his grapes and seemingly fewer issues with drought. “The vines at the estate do not seem to me to have had any water stress,” he says. “A few plots on the plateaus would have shown a little more, but the maturities followed their normal rhythm.” The 2020 vintage, according to Mangenot, is “one for the laboratory”. He thinks it is fascinating how the Chardonnay is adapting to climate change. How the Chardonnay can react on the vine to warmer and drier vintages without losing its sense of place. “Despite the heat and dryness, the alcohol levels are normal, the acidity levels are exceptional and the overall balance on the palate means the wines are representative of an excellent vintage for the region.” Mangenot was so impressed by the fleshiness in his Premiers Crus and Grands Crus, he was confident enough to extend the wines’ élevage on their lees – adding further tension and flavour complexity to the wine. “It is a vintage with great ageing potential in terms of balance and acidic backbone,” he says, comparing it to 2017 or 2012 – very popular vintages for vignerons in Chablis, where the acidity is classic but there is flesh too. It is what he calls “a truer expression of Chablis”. Séguier is also extremely pleased with the vintage. “The 2020 has the freshness of 2017, and the concentration and the expression of 2019,” he says. “A vintage that expresses a superb minerality and freshness with a nice intensity of fruit and especially citrus fruit characters.” While many wines are still maturing in tank (due to the extended élevage), there is a great sense of relief from those we spoke to. Firstly, no vigneron in Chablis is comfortable picking their grapes in August. The weather tends to still be very warm, bringing concerns about the grapes’ health once picked in such hot conditions. For Mangenot, however, this was managed well in 2020 and did not negatively affect the wines. Secondly, the year proved that a warm dry vintage can still produce a very classic Chablis style – defined by a citric fruit profile, floral aromatics and distinct mineral salinity. From what we have tasted this summer, the wines are excellent. The vintage offers great terroir focus, with each of the Premiers Crus and Grands Crus being unique in terms of flavour profile and structure. It looks set to be a classic vintage for the region, with lots of freshness and minerality – and a fascinating year in which to explore Chablis’s diversity. Chablis 2020: a mineral, saline sucker punch of a vintage

The Reynaud wines are the stuff of legend. Utter “Rayas” to a certain crowd and they will swoon. The singular style of this iconic Châteauneuf-du-Pape estate – pale, hauntingly aromatic, almost Burgundian in texture and incredibly long-lived – has a fervent following, a clan of Reynaud obsessives keen to seek out everything that Emmanuel Reynaud touched.  The property’s rustic charm – a far cry from the grandiose buildings of many famous estates – combined with the family’s inclination to shy away from their fame, happier quietly farming their vines, has only fanned the flames. Tucked away in the northern reaches of Châteauneuf-du-Pape, Ch. Rayas and its owners are elusive – only making them more sought-after.   There is no shortage of praise for these rare and special wines – whose appeal, given the Reynaud’s minimal-intervention approach, broaches the worlds of fine and natural wine. William Kelley is a loyalist, and is one of several to note how well the property performs in “off-vintages” – where the property’s distinctive profile shines through, above and beyond the vintage and region, revealing their “captivating perfume, sensual textures and eternal youthfulness”. Robert Parker described the 1990 Rayas as “one of the greatest young red wines I have ever tasted”. For Nicolas Grainacher (Vinous), “The substance, finesse and intensity packed into these wines make it hard not to fall in love with them.” Neal Martin (Vinous) perhaps put it most concisely: “God invented wine to drink wines like this.”    The history of the Reynaud empire  In 1880, Albert Reynaud, a notary from Avignon, lost his hearing aged just 45. No longer able to work as a lawyer, he bought an estate in Châteauneuf-du-Pape, in an area called Rayas, where he saw out his days farming vines, apricots and olives. In 1910, his son Louis Reynaud took over running the estate. Louis had studied agriculture in Angers and was particularly interested in viticulture. He uprooted trees to plant new vineyards and bottled the property’s first wine in 1920 – using the name “Rayas”, the name of the forest on their parcel of land. It was the beginning of Rayas as we know it today.  Louis famously added the wording “Premier Grand Cru” to the Rayas labels, a self-pronounced classification of the wine – and notoriously defying the appellation rules (introduced in 1936). Building the property’s reputation and sales, he started expanding the business. Between 1935 and 1938 he bought Ch. des Tours in Vacqueyras, entrusting his son Bertrand with the larger 58-hectare property northeast of Châteauneuf-du-Pape, not far from the town of Orange. Around the same time, he built a new cellar and winery at Rayas, bringing the buildings within the appellation’s boundaries. After the Second World War in 1945, Louis purchased Ch. de Fonsalette, an estate further north of Orange, in Lagarde-Paréol – and, with that, the full suite of Reynaud properties was in place.  By the time Louis passed away in 1978, the Reynaud wines were some of the Rhône’s most famous.  
After his death, his youngest son Jacques took over Rayas and Fonsalette, while Bertrand continued to run Ch. des Tours. With the shift in ownership at Rayas and Fonsalette, quality dipped a little – but soon Jacques was making wines that lived up to the Reynaud name.  The old vines at Rayas, planted on sandy soils, facing north/northeast, surrounded by pine forest, produce wines of exceptional elegance and aromatic finesse, wines with haunting perfume, pale colour and almost Pinot-like delicacy, yet phenomenal persistence and ageability.   Jacques was renowned for being eccentric. A recluse, happiest in the vines and never keen to welcome visitors, he was rumoured to, on occasion, lie in a ditch to avoid journalists or other members of the trade. His aversion to the limelight surely only added to the wines’ allure. He died rather suddenly in 1997, while shoe shopping in Courthézon. Having no children of his own, his nephew Emmanuel – Bertrand’s son, who had been running Ch. des Tours since 1989 – inherited both Rayas and Fonsalette, taking the reins across all three properties.  The transition between Jacques and Emmanuel wasn’t seamless, as Emmanuel renovated the estate and replanted parts of the site, but by the early 2000s quality was once more living up to the Reynaud name. The style has shifted between generations, and while Jacques’s wines were more structured and solid, Emmanuel favoured more sensual, perfumed expressions. Over the last two decades, little has changed across the Reynaud properties – the wines’ mythical status only confirmed with each release. The new generation – Emmanuel’s sons Louis Damien and Benoît – are now continuing the family’s legacy.    The Reynaud philosophy  The approach at Reynaud is old-school – here, tradition reigns. Modern monoculture is not the method – with various crops across the estates, and biodiversity nurtured with swathes of woodland. The vines – all bush vined, many with significant age – are farmed in exactly the way as they’ve always been, organically with minimal inputs, ploughed by horse.  The fruit is all hand-harvested, whole-bunch fermented with indigenous yeast in cement tanks. Since Emmanuel took over, parcels have all been vinified separately. Macerations are gentle, generally under two weeks with a single pump-over a day. Ageing is in large, old oak, with no new wood used anywhere across the properties – indeed the youngest demi-muid or foudre at the estate may well be 30 years in age. Sulphur additions are minimal, with only a small amount at fermentation and a final addition at bottling, with the wines bottled unfined and unfiltered. The method is simplicity at its finest, focused on expressing each site – and the results speak for themselves. The wineries are rustic farm buildings, offering only the basic requirements, with no modern technology employed – and, given the wines produced, not needed.  Grenache is the core of all the Reynaud wines – the grape that thrives in their terroir and is the magic behind Rayas. Beyond Rayas, Cinsault is used to bring elegance and suppleness, while Syrah was long avoided – used only at Ch. de Fonsalette. Louis Reynaud believed the variety belonged in the Northern Rhône, and other than the small portion that made it into the Côtes du Rhône, the rest of the Syrah was sold off in bulk under his reign (often to local restaurants, who used it in their sauces). The Côtes du Rhône Syrah cuvée only introduced under Jacques Reynaud’s tenure, at first sold to the restaurants who had seen its quality in their sauces. There is no Mourvèdre at any of the estates, as Emmanuel Reynaud believed that their soils are too dry for the grape.  The Reynaud wines and estates  The Reynaud family comprises three distinct estates – Rayas, Fonsalette and Ch. des Tours, although Fonsalette doesn’t have its own winery.   Ch. Rayas  Rayas is the original Reynaud estate, purchased in 1880, and takes its name from the climat. In the northern reaches of Châteauneuf-du-Pape lie the 12 hectares of vines, surrounded by 11 hectares of forest. Forget the region’s stereotypical galets roulés or pudding stones, known for their ability to hold heat, Rayas sits on red, iron-rich, sandy soils, over richer clay. The soils are poor and the bush vines planted at low density, with a mere 2,500 vines per hectare – yielding just 10 to 20hl/ha. Significant replanting took place in the 1980s, meaning the vines now average 40 years in age, although there are still some survivors from the 1940s.  The site’s northern exposition combines with the influence of the wooded areas, offering shade and humidity, making for an extended growing season and preserving freshness in the wines. The Reynauds are among the last to harvest, often only picking in October/November, as much as two months after their neighbours. The resulting wines, however, do not speak of intense ripeness – but are all about elegance and finesse.  While Châteauneuf permits 13 red varieties, at Rayas you’ll find only Grenache Noir, with two hectares dedicated to white grapes – Grenache Blanc and Clairette. The Grenache vineyards can be divided into three section: Le Levant, Le Coeur and Le Couchant, each taking its name from its exposure to the sun – respectively as it rises, at its peak and as it sets. Writing for The World of Fine Wine, William Kelley describes the three components of the vineyard thus: “Le Levant is the most floral and ethereal, contributing the wine’s spine; Le Coeur is the most complete, contributing Rayas’s skeleton; and Le Couchant, with its richer, more compote-like fruit tones, brings the fat.”  The fruit is all hand-picked. The Grenache is kept on its stems, the whole bunches crushed before a gentle maceration for maximum two weeks (one pumpover a day) and indigenous-yeast fermentation. The wine is pressed off and aged in old foudre for a little under two years.  The delicacy and finesse of the resulting wine is reminiscent of top Burgundy. Pale in colour, Rayas is deeply aromatic, with haunting floral notes and an ethereal, silken texture that balances the wine’s earthy, savoury intensity. Between 1,200 and 1,500 cases of the flagship Châteauneuf-du-Pape are produced each year. The wines age beautifully and Emmanuel himself recommended waiting 20-25 years before opening a bottle of Rayas to fully experience its evolution.  The white grapes are planted across three parcels in Le Levant, comprising two hectares. The Grenache Blanc was planted in the 1940s, ’50s and ’95, with the Clairette planted in 1986. Fermented in old (80 to 100 years old) foudre, purchased second-hand by Louis Reynaud (Emmanuel’s grandfather), Rayas Blanc is a 50:50 blend of Grenache Blanc and Clairette, aged in old oak for around 11 months. The wine is made in extremely limited volumes, with only 400 or so cases produced each vintage. Rich yet poised, this rare white is immensely fragrant with notes of almond and white flowers, intensely mineral and textured, and can age for at least a decade.  Pignan is sometimes considered a “second wine” at Rayas, but it in fact comes from it own, specific site on the estate, a single two-hectare block surrounded by pine trees on the northern edge of the property with less sandy soils. Also pure Grenache, made in exactly the same way at Rayas, it offers a more immediate and approachable expression of the Rayas style, yet similar perfume, purity and structure – and is still capable of extended ageing. It can, on occasion – and especially in cooler vintages, rival its older sibling, Rayas. Around 650 cases are produced each year.  The Rayas wines are all only released when entering their drinking window, with the reds often only emerging from the estate over a decade after the harvest.  Ch. de Fonsalette  The “latest” addition to the Reynaud galaxy, Ch. de Fonsalette was purchased by Louis Reynaud in 1945. The property is large, covering 120 hectares in total, but with 12 hectares of vines in amongst woodland, farmland and olive groves, north of Orange in Lagarde-Paréol. Today it sits largely within the Côtes du Rhône Villages Massif d’Uchaux appellation (established in 2005), however the wines are all labelled just as Côtes du Rhône. Further north, the microclimate is cooler than at Rayas, and stylistically the wines are more restrained than those of Ch. des Tours, for example, but not as ethereal as those of Rayas.  The soils here are very different to those at Rayas with gravel, sand and red pudding stones. The vineyards are planted to Grenache, Cinsault and Syrah for red grapes, and Grenache Blanc, Clairette and Marsanne for whites. The vines are generally old, with the oldest planted in 1929.  The philosophy in the vineyard and winery is exactly the same as at Rayas – and, as the property doesn’t have a winery of its own, the wines are even made at Rayas. The reds are whole-bunch fermented, with a maximum two-week maceration and one pump-over a day. The wines are aged in a combination of enamel-lined tanks and large, old oak, bottled around a year or so later.   There are three wines in the range at Ch. de Fonsalette. The Côtes du Rhône Rouge is a blend of 50% Grenache, 35% Cinsault and 15% Syrah, the notably high percentage of Cinsault giving the wine particular lift and aromatic finesse – a wine that whispers and draws you in. There is a second red, a Côtes du Rhône Syrah which is 100% Syrah – a structured, dark-fruited wine that offers restrained power and quiet depth. Under Louis Reynaud, this was sold off in bulk, only first bottled under Jacques Reynaud (from 1978) and sold locally, largely to restaurants, before being offered more widely under Emmanuel. The Côtes du Rhône Blanc is a blend of 80% Grenache Blanc, 10% Clairette and 10% Marsanne, producing a textural and complex white with notes of stone fruit and herbs, and a saline undertow.  La Pialade  This wine is a slight anomaly in the Reynaud line-up. Only made in certain vintages, La Pialade Côtes du Rhône is vinified and aged at Rayas, made with declassified parcels from either Rayas or Ch. de Fonsalette. The blend is typically 85% Grenache, 15% Cinsault and 5% Syrah. Produced in tiny volumes, and even rarer given it isn’t made every year, it is often described as an “everyday Rayas” – more open in style, but can match Rayas for its subtlety and delicacy, even if it does not have the same depth.  Ch. des Tours   Purchased by Louis Reynaud in the late 1930s, Ch. des Tours was Emmanuel Reynaud’s home estate – having taken over running the property from his father Bertrand in 1989. As it was entrusted to Bertrand from the beginning, and never managed by Jacques Reynaud, the estate has always stood apart from Ch. Rayas and Ch. de Fonsalette – however all three have fallen under Emmanuel since 1997. Benoît – Emmanuel’s son, who studied oenology in Switzerland – has recently taken the lead at Ch. des Tours, having worked closely alongside his father.  The property gets its name from the towers or tours that frame the château building. Located in Vacqueyras, not far from Orange and northeast of Châteauneuf, it covers 40 hectares, with grains and olives as well as grapes. As it was long run separately, the property has its own winery.  Although the Reynaud philosophy runs through all three estates, the wines at Ch. des Tours are stylistically distinctive, offering more structure, muscle and intensity versus the more subtle, high-toned, perfumed style of Rayas and Fonsalette. The winemaking is largely similar to at Rayas and Fonsalette, with fermentation is concrete and maturation in old oak. Although the red grapes are mostly whole-bunch fermented, this is the only property where small portions are destemmed. The range is more complex at Ch. des Tours with a selection of wines bottled under Ch. des Tours, some under Domaine des Tours and a rosé made under the Parisy label.  There are five wines under the Ch. des Tours label:  Vacqueyras: A blend of 80% Grenache and 20% Syrah, this is a structured and powerful wine made exclusively from the oldest vines on the estate.  Côtes du Rhône Rouge: A blend of 65% Grenache, 20% Syrah and 15% Cinsault, this is a supple, juicy red packed with fruit and spice.   Côtes du Rhône Rouge Grande Réserve: Only made in specific vintages, this is effectively the Vacqueyras declassified when there isn’t sufficient colour – made in 2002, 2014 and 2015.  Côtes du Rhône Blanc: Made in very limited volumes, this white is 100% Grenache Blanc – a floral, textural wine that is worth seeking out.  Côtes du Rhône Blanc Grande Réserve: Only made in certain vintages, this is not a declassified bottling (like its red sibling), but a special bottling of the property’s best Clairette and Grenache Blanc. The 50% Grenache Blanc, 50% Clairette wine was produced in 2003, 2014 and 2015.  The Domaine des Tours label is all sourced from Ch. des Tours however is a slightly separate project, generally offering more accessible wines, almost all labelled as IGP or Vin de Pays. There are four wines under the label:  Vin de Pays de Vaucluse Rouge: This is a deeply expressive field blend of Grenache, Counoise, Syrah, Cinsault, Merlot and a host of other varieties.  Vin de Pays de Vaucluse Merlot: This 100% Merlot comes from the richest, clay soils on the property, producing amore opulent and exuberant wine.  Vin de Pays de Vaucluse Merlot-Syrah: A blend of Merlot and Syrah, which shifts according to the vintage, is a concentrated wine that combines the generosity of Merlot with the spice of Syrah.  Vin de Pays de Vaucluse Clairette: This 100% Clairette is pure and fresh, driven by minerality.  Under its own label is Les Tours Grenache Blanc – a rich, ripe and generous 100% Grenache Blanc full of stone fruit, bottled under the Vaucluse appellation. The last wine from Ch. des Tours is the Parisy rosé, a dry, delicate Grenache/Cinsault Vin de Table designed for everyday drinking. The labels themselves don’t detail the vintage, with this information only visible on the cardboard case.  Which Reynaud wines are made where? Ch. Everything you need to know about Rayas

The Vauthier family is among Saint-Emilion’s most influential. The custodians of Ch. Ausone, they have been knocking about this medieval village since the 17th century, with the young team running Ausone today the 11th generation to make wine there. But the Vauthiers’ presence in Saint-Emilion spreads far beyond Ch. Ausone. They have also been in charge of neighbouring estate Ch. Moulin Saint-Georges since 1921, Ch. de Fonbel since 1971 and more recently Ch. Simard and Ch. Haut-Simard (since 2008). Their latest acquisition (again in Saint-Emilion) is the famed four-hectare site of Ch. la Clotte – another jewel in an impressive line-up of estates. Edouard Vauthier, the latest to join the business full-time (in 2019), likes to classify their properties using (heaven forbid) the Burgundy hierarchy. “If Ch. Ausone is the Grand Cru,” he says, “then La Clotte and Moulin Saint-Georges, still on the limestone plateau, are the Premier Cru equivalent. Ch. de Fonbel and the Simard estates are not on limestone but on sandier, clay soils, and therefore represent the village wines.” Tasting through the wines of all six estates, there is an undeniable similarity in style running through them. They all have such a refined tannic texture and purity of fruit, even in the least expensive bottlings of Ch. Simard and Fonbel. Edouard believes this is very much down to the family’s personal taste when it comes to ripeness levels, and their methods of extraction and maceration at fermentation. But it is not only this. When Alain Vauthier (Edouard’s father) took over the estates in 1999, he had huge ambitions for his “village” wines, Fonbel and Simard. “My father wanted to apply the same meticulous attention to detail in all his wines, whatever the family accountant might think,” he chuckles. Given the price of Simard on release is less than £10 a bottle, it might not make much financial sense to give it the same attention as Ausone, but they do – making these wines outstanding value. At this price, the wines are ideal for restaurants, with much of the stock held back specifically for them.  The Vauthier family’s eye for detail, even in these inexpensive wines, has also been to Ausone’s benefit. Simard, Fonbel and even Moulin Saint-Georges have all been a hotbed of experiments over the last two decades and have really helped, Edouard believes, enhance the quality at Ausone.   As trends changed in the region, Ausone, admits Edouard, adapted their extraction methods, notably from 2006 onwards. They also reduced the toasting of the barrels from 2011, which they felt was hiding some of the fruit, and you can taste the change in the oak regime comparing the wines over this period. Ausone is aged in 100% new oak, even today, but the change in toasting, he feels – and I agree, has greatly improved the wine. Tasting the older vintages today, while the oak is more present, the wines have not lost their unique identity – the sinewy yet refined tannins and amazing freshness are still very present, and the wines have matured beautifully. Despite Ausone’s premiership at this time, Edouard’s father Alain loved to experiment. Edouard jokes that his father was a little too obsessed with machinery. From about 2008 onwards he was buying up all sorts of state-of-the-art equipment, predominantly to try and raise the quality of their other estates. Being able to constantly compare these wines against Ausone was a healthy barometer. While many of these investments didn’t pay off, his father’s open-mindedness led to a magnificent discovery which was to have a huge influence on the Vauthier recipe and Saint-Emilion more widely today. He was the first vigneron in the world to trial the density sorting bath.  “It’s a very simple machine, perhaps that’s why we like it,” Edouard laughs. “If the machinery becomes complicated, we don’t understand anything.” The original design was used in pea production and was then modified to work for grapes. As the berries arrive at the winery, they are submerged, for less than a second, in a bath made up of a water and sugar solution. “It is a simple calculation,” says Edouard. “The density level can be adjusted so that any grape not sufficiently dense (and therefore concentrated) is disposed of. It brings 100% reliability to the sorting.” For the family, when they switched to using the machine, there was a clear distinction when it came to fruit purity in the wine.  But Edouard believes the density sorting machine is not only for sorting the grapes. Because the berries are submersed in water prior to fermentation, it cleans the berries. “All the dirt, all the dust, all the small particles are washed off. Going into the fermentation process you have a very clean tank and it results in a very clean fermentation. There are no impurities.”  As with all their experiments, the density bath was first tested at Ch. Simard in 2011. So happy with the initial results, they introduced it to Moulin Saint-Georges in 2012. By 2013 all three cellars and all six wines were equipped with the machine. Every grape of Ch. Ausone since 2013 has undergone density sorting. Tasting the wines from 2013 through to 2020, they have only become more ethereal. The purity of fruit is undeniable. This is not only down to the density bath, but with such a clean fermentation and a knowingness of the concentration levels of the berries, the winemaking team, Edouard explains, didn’t need to overly extract to get concentration or flavour into the wine. “We were ahead of the game,” he says, “and it was fortunate my father was friends with the inventor. We were one of the first using it.” Today Edouard estimates that at least 25% of Saint-Emilion properties use the method. Despite the advancements in technology, the Vauthier family knows that terroir remains the trump card in Saint-Emilion. Despite Alain’s meticulous attention to detail and however perfectly made the wines are, Simard or Fonbel will never give you the complexity you find in the berries of Ausone. It is the one part of the recipe that cannot be changed.  Saint-Emilion is a variable appellation, but its uniqueness lies in the presence of limestone. It is this that gives the wines low pH and naturally high acidity resulting in a natural freshness and energy in the wine. The grapes of Simard and Fonbel are grown on more fertile soils, which means the yields are naturally higher and therefore less complex. It also means more work needs to be done to manage mildew and disease.  “It’s harder to make wine here,” says Edouard. “Ausone, we are lucky, it is in the perfect place. Although every inch is manicured, it doesn’t take that much work to maintain the quality.” Back in 2008, the Vauthiers did extensive research on the availability of water across their Saint-Emilion properties. It turns out Ausone, even in the driest years, can still access enough moisture through the entire year, necessary for the vines to avoid water stress, thanks to its limestone soils. It is a special site.   The biggest surprise for Edouard when understanding his family’s vineyards was the natural difference in the quality of berries from site to site. “It is something that cannot be explained,” he says, “other than terroir. If you taste the grapes from each of our properties, all at the same period, at the same level of ripeness. Moulin Saint-Georges and La Clotte will have maybe three to four times more flavours and aromas than Simard and Fonbel and at Ausone it is 10 times more. I can’t tell you why, but it is true.” It is fascinating to think that despite all the improvements, Edouard believes it’s difficult to produce an unremarkable wine at Ausone. No doubt it is the reason it has been a prime viticultural site for over 2,000 years. Even back in the day, using basic traditional methods, the results still proved to be incredible. “When you taste old Ausone,” says Edouard, “it is light, aérien, everything is super smooth, delicate and balanced. While we can play with extraction and oak, in the bottle, we always have an Ausone typicity in the end.” His family’s job, he believes, is simply make sure nothing goes wrong.  Despite Edouard’s humble assertions, there is no doubt that the wines today are spectacular, the younger vintages only becoming more ethereal, and more refined. What is Port? Port is a fortified wine made in the Douro Valley in Portugal. Traditionally the wines were shipped along the river to Oporto (also known as Porto), from which the wine takes its name. A huge number of grapes are permitted for Port production, however, there are five main varieties used: Touriga Nacional (widely thought to be the best grape for Port, giving its name to Quinta do Noval’s top wine, Nacional), Tinta Barroca, Touriga Franca (or Touriga Francesa), Tinta Roriz (aka Tempranillo) and Tinto Cão. The vineyards sit on steep, terraced slopes alongside the Douro river. Thanks to these vertiginous slopes, much of the vineyard work has to be done by hand, with little mechanization possible. The further inland you go – moving east from Oporto – the hotter and drier the climate becomes. The vineyard area is divided into three key regions: Baixo Corgo: The coolest and wettest region which produces the lightest wines. Cima Corgo: With lower rainfall and higher temperatures, this is the traditional area for the best Port wines. Douro Superior: Particularly dry and hot, this lesser-planted region nevertheless can produce very high-quality wines. For red wines, the grapes are trodden – traditionally by foot, but also now by machine – and fermentation is cut short by the addition of neutral alcohol (called aguardente), thereby leaving residual sugar in the wine. Styles of Port 
There are two main types of Port – those aged in bottle and those aged in cask. Those
aged in cask are designed to be consumed upon release, while those aged in bottle need time to mature.  Ruby: The most basic, entry-level Port is Ruby. The wine tends to be aged in cask or tank for two to three years. Bottled while youthful, it’s bold and full of primary fruit, with a fiery kick from the spirit. No need to decant. Reserve: A step up from ruby, this wine is normally aged a little longer (again in bulk rather than bottle), perhaps being made with higher-quality fruit, so that it has more complexity than a ruby Port. No decanting necessary. LBV: Late Bottled Vintage Port comes from a single year, but spends more time maturing in cask (rather than bottle). Bottled between four and six years after its harvest, the wines are designed to be consumed long before vintage Port, but offer some of the complexity of the
style. Some wines are filtered and others aren’t, so it may or may not need decanting. Crusted: This style takes its name from the crust, or sediment, it throws while in bottle. A blend of several years, the wine is – like LBVs – aged a little longer in cask before bottling,
and likewise is designed to offer some of the complexity of vintage Port. Decanting is essential Vintage: The finest Ports come from a single vintage. This style accounts for a mere 1% of production, with the wines only made in certain years from the very best fruit. Traditionally vintages are either “declared” by producers (and therefore it is a year where they make a vintage Port) or not (with the official declaration classically announced on St George’s Day, a year and a half or so after the harvest). There are, however, a few years with “split declarations” where some producers chose one year, and others chose another for their vintage wines. While once there were only three or so declarations each decade, climate change has seen an increasing number of years producing fruit worthy of vintage wines, and therefore an increasing number of declarations. The wines tend to spend two or three years in wood, but are aged mostly in bottle. These
wines are built to last – having lots of tannin, flavour and alcohol. Spending decades in bottle, they develop extraordinary complexity. Because of the high tannin level, these wines throw a lot of sediment and it is essential to decant them. Single Quinta: These are vintage wines from single “quinta” or estate (while Vintage Ports are often a blend of estates), often produced in years that are not officially declared.  Tawny: Tawny Ports are aged oxidatively in cask, and thereby gradually losing colour to develop a “tawny” colour, while also developing nutty, dried fruit and caramel aromas. The longer it is aged, the more complexity it has. (The most basic examples are a blend of ruby and white Port to create the appearance of a Tawny, but none of the same flavour complexity.) Tawny Reserves have seen minimum seven years in cask, while many come with an age statement – 10, 20, 30 or Over 40 years old – indicating the average age of the blend.  Colheita is a Tawny from a single vintage, spending minimum seven years in cask prior to release (although it is often longer). They are designed to be consumed soon after bottling (a long time in bottle can in fact negatively impact the wine’s quality) and no decanting is
necessary, although you may want to chill the wine lightly. Given their oxidative nature, Tawnies can often last longer once open than their red counterparts.  White: White Port is mainly made with the Gouveio, Malvasia Fina and Viosinho grapes. Youthful examples can make for an excellent aperitif, sometimes served with tonic and lemon as a cocktail, but you can also find rare aged white Ports, carrying an age statement that – as with Tawny Port – is the average age of the blend. Credit: Classic Images (Alamy Stock Photo). It took a shock to the system on the scale of the Covid-19 pandemic to demonstrate how much our lives can be reshaped by the humblest of objects. When restaurants, hotels, cafés and night clubs have all been closed for months on end – and when we are excluded even from each other’s homes – then park benches and patio heaters become stand-ins for the more elaborate architecture of everyday life that usually enable the interactions we depend on to function as social beings. For much of 2020, only the most rudimentary tools for conviviality were left to us. This works better at some times, than others. On a warm sunny day, all it takes to create an instant convivial space is a bench. This simple structure is the means for people to meet, share a view, a conversation, and perhaps a picnic. Add a back, arms, and a USB charger plus a Wi-Fi connection to the bench, and the proposition grows layers of complexity. It has become a people-attractor and a conversation starter too. This last year has helped us to understand better how to appreciate, through their absence, the things that make us the most human: being together, sharing food, drink and conversation, and marking the key moments in life. While we were forced into isolation, our attempts to replicate some of these experiences, with the use of a screen and a fitful broadband connection, showed us how inadequate they inevitably are. The experience suggests that social change, when it comes, is about an acceleration of what already exists – more than it is about a complete reinvention. Buying more online than we ever did in department stores is going to be a permanent shift. Some of us are less likely to fly to Australia for 24 hours for a business meeting than we were in 2019. But there are other things that will not change. We will still want to celebrate birthdays and weddings in the company of others. We will always want to meet our friends and look for chances to make new ones. And we enjoy doing all those things in the kind of spaces and places that make the most of the moment, which can make the seemingly routine into an occasion. Even at the basic level of the park bench, there are nuances to deal with. Chatting side by side is not the same experience as a face-to-face conversation. However, for some people, direct eye contact is as aggressive as an all-caps text message. It is why a walk in the park can be the best way to share a secret, and why Sigmund Freud conducted his consultations from behind the back of his couch. What we sit on is as significant as how we sit. In the average western living room in the 1960s, the armchair was the seat of power, occupied by family patriarchs. The matriarch, if she was lucky, got a slightly smaller version to herself. The sofa was designed in the same style, just large enough for two, and was for the use of supplicant sons-in-law. As the domestic world has expanded, so the sofa has taken on the dominant role over every other piece of domestic furniture. Sofas have been getting bigger for some time and are now reaching the size of lifeboats. They’re expected to cope with everything from conversation to work, assuming multiple roles as stand-in dining table, desk and bed. Social spaces, from the most intimate scale to the grandest, form an essential part of both our personal domestic worlds – in which we share our privacy with a selected group of friends and family – and the public one that we all share. It is a scaled sequence that runs all the way from a candlelit interior with a couple of chairs, a plain wooden table with two wine glasses, to the Galleria Vittorio Emanuele II in Milan, which, with its heroic iron-roofed arcade, has a strong claim to be regarded as the mother of all shopping malls. When it opened in 1877, the newly empowered bourgeoisie (in their straw boaters and stiff detachable collars) took to it as the setting for their daily promenades on the way to and from the Duomo, Milan’s cathedral, where they celebrated Mass, or en route to a performance of a Verdi opera at La Scala. Stopping to take coffee and pastries, they would meet each other for an aperitif at Biffi or dinner at Savini, and explore the exotic wares that the shops in the Galleria had to offer. As futurist artist Umberto Boccioni demonstrated in his painting from 1910, Riot in the Galleria, there was a darker side to such spaces. He portrayed the agitated response of a turbulent crowd of well-dressed spectators to the sudden violence of a fight between two women – sex workers perhaps. The disturbing scene, depicted in pointilliste style (and based on an incident that actually took place), is bathed in lurid electric light, evoking the frenzied atmosphere of this giant outdoor room and its extraordinary impact on the behaviour of a mass society. An unintended consequence of the lockdown has been the enforcement of the monogamy-based model of the nuclear family. It made the year particularly difficult for all those who don’t subscribe to it. We will need places we can dress up for again, places we can show off in, even places in which we can behave badly. The painting is, in some senses, a reminder that urban life is essentially about tolerance. Complex spaces have always been a vital part of urban life. Almost 2,000 years ago, the Romans built the Baths of Caracalla on a lavish scale, with three separate pools, libraries and gymnasia – and gardens large enough to accommodate 1,600 people at a time in comfort. Its mosaic and marble floors, its frescoes and sculptures made it one of Rome’s essential landmarks, not only as a monument to the glory of the emperor who built it – though it certainly was that – but also as a place to be used by people, day and night. Its magnificence, and the sense of the joy of a great shared civic space, inspired the American architect Charles McKim when he designed New York’s Pennsylvania Station, one the most sublime railway stations ever built. The central waiting room, barbarously destroyed 50 years after it opened, was a convincing recreation of the baths of Caracalla that lifted the spirits of anyone who passed through it. The months of isolation have taught us how important shared spaces of all kinds are to the way that we live. They are the places in which we meet each other to celebrate the important rituals of life, as well as to pursue the seemingly trivial (actually essential) compulsion to gossip about one another. As an essentially self-conscious species, we need alibis to give ourselves permission to be convivial. We construct reasons to meet each other, like the 19th century clubs of Pall Mall, or their democratic paraphrase – with its provision of gender segregation, and games room, and its mix of intimacy and ceremony – the Victorian pub full of mirrors and cut glass. Or in today’s context, a bowling alley configured to allow players and their friends to sit at a table, order food and drinks, and watch each other play, and to hear each other converse. Some public spaces do better at conviviality than others. The Las Vegas casino, for example, is designed to be the opposite of convivial. Slot machines on an industrial scale obviate the need for any form of human interaction. With its glass dome, and 25 miles of bookshelves, the old round reading room at the British Museum is certainly a very special space, although it has now lost its intellectual raison d’être and has become a dead monument. In its day, a reader’s ticket conferred membership of an exclusive club that included Oscar Wilde, Vladimir Ilyich Lenin, and George Orwell. But as the museum’s insistence on silence suggests – beyond unspoken flirtation over the book stacks – it was not a place that was fundamentally about conviviality. The Berghain Club, the raw, concrete world capital of techno music based in a redundant power station in Friedrichshain, in what was once East Berlin, is another very different kind of public space, and – in its own way – an equally spectacular social space. It has a pickier door policy than the British Museum but a similarly committed membership. In this case, the limit on conviviality is not silence, but the sheer volume of sound that makes the 18-metre-high main spaces vibrate, and which makes conversation inconceivable. A truly convivial space needs to work on multiple levels, to offer a variety of zones, some of which can encourage concentration, and others that can be distracting. Some may be more intimate than others. It’s a drive that is leading to an interesting range of cross-fertilisation. Cinemas that serve food more ambitious than popcorn and hot dogs are being equipped with sofas instead of tip-up seats. Health spas come with restaurants. However, not all convivial spaces encourage multiple uses. Orchestration and control are part of the experience at those English clubs that frown on members showing any signs of working, to the extent of asking them to put away notebook and pencil – never mind laptops – over lunch. Some aspects of what we have learned from the last year will colour life well into the future. The private dining room is a long-standing restaurant tradition, which has been given a new lease of life. We can also expect to see signs of change in the workplace. The Silicon Valley model has aspired to look as domestic as possible, furnished with sofas and kitchen tables, surrounded by vintage and deliberately non-matching chairs. A year of working at home is likely to encourage a more formal environment. But while we continually try to find new tools to make conviviality possible, the objectives remain the same. In a year in which all our assumptions about how we live together have been turned upside down, the world’s designers and architects have had to face the challenge of how to deal with the impact of the pandemic on our homes and our cities. As city centres empty out, and people avoid crowds, how can we find ways to socialise?

John Pawson Architect John Pawson has always focused on the idea of designing the architecture of conviviality. In his recently released Home Farm Cooking book, produced with his wife Catherine and published by Phaidon, we see what matters most. Every Pawson interior is designed with how it will feel to use it in mind – is it to be enjoyed by somebody on their own, or with others? He takes away the distractions and lets us focus on how we use and feel in a room. He makes some spaces in which to read and to concentrate, others in which to share the preparation of a meal, and yet another to enjoy the result in company. Intrinsic in his philosophy is the importance of creating a setting where one can appreciate light at different times of the day – whether it is the shades of white as revealed by degrees of sunlight or the warming effect of firelight by night. johnpawson.com AB Rogers Ab Rogers was inspired by the spontaneous street life of the neighbourhood in 
East London in which he lives and works to come up with a range of furniturelike structures to give social spontaneity a helping hand. “Whether it’s planned 
or serendipitous, we wanted to design a set of colourful pieces that could help 
to turn a momentary catch-up on the street into an impromptu drinks party, 
anchored by a tuned-up bollard. Or make a surprise anniversary dinner possible 
under a street lamp … or make a breath of fresh air turn into a long lunch with 
new friends at a long table under the trees.”  abrogers.com Paloma Strelitz Paloma Strelitz, an architect, and co-founder of the Turner Prize winning 
collective Assemble, took an overview of how shopping streets might recover 
from lockdown, to generate new life: “convivial, accessible, sustainable and 
enjoyable for all”. The experience of negotiating streets in which precautions 
against the pandemic had caused restaurants and food shops to migrate to 
the pavement, made her think about ways to make this a permanent quality.
“It’s an opportunity to empower local business. Shops could open their 
facades to the street, creating an expanded space of public interaction, and 
daily theatre.” She would keep the car in its place, with priority for pedestrians and bikes, 
and banned altogether at weekends. What were once parking places would 
become green borders, combining play space, raised planters, flower beds 
and trees, allowing the street to become a promenade. Meanwhile the street 
would be animated not just by cafés, but studios and workshops putting the 
making process on show. Oh, and a mobile bar too.  assemblestudio.co.uk Jon Marshall  Jon Marshall, an industrial design partner at Pentagram in London, found himself 
thinking about ways to bring together two very different kinds of object: a hamper, 
designed to carry utensils food and drink securely, and a shooting stick. “They 
aren’t really about shooting,” he explains. “The shooting stick is actually a very 
convenient way of carrying the means to sit anywhere with you.”  The hamper allows for the sense of anticipation that comes from preparing for 
a pleasurable occasion. The two objects have very different aesthetics – one is 
vaguely mechanical, the other has a kind and rustic quality. For Marshall, the idea 
of the shared walk – with the chance of stopping for a picnic – is the very essence

The Pacific Northwest is the birthplace of some of the greatest innovations of the past 40 years. Microsoft, Amazon and Starbucks are just some of the multi-billion-dollar enterprises to come from the region with its spectacular mountainous ranges and lush forested land.

When it comes to drinks of the alcoholic kind, craft brewing has been the area’s most notable export. In California alone there are more than 900 breweries. Unsurprisingly, craft distilleries have followed a similar trajectory – swelling from 35 to over 2,000 in the past 17 years. What may come as a surprise is that single malt whiskey, rather than Rye or Bourbon, is growing apace and pioneering a truly exciting new flavour frontier with traceability and transparency at its heart. 
“We shouldn’t be growing corn,” Seattle-based Westland Distillery Commercial Director Chris Riesbeck says. “We shouldn’t be making Bourbon. We shouldn’t be making Rye. Making single malt makes an enormous amount of sense when you think about the Pacific Northwest climate and agriculture.”

The Pacific maritime influence, warm, dry summers and cool damp winters in Washington, Oregon and California are optimum two-row malting barley growing conditions. “The conversation you hear from almost every distillery on the planet is that barrels and time make whisk(e)y,” Riesbeck continues. “That is true in the most basic, basic way. But the reality is that it gives no real respect to the raw ingredients. “We would argue that whisk(e)y starts in a field – and if you don’t have an appreciation for the grain that you are using and an interest in how you can develop and embrace that flavour, then you’re perhaps not getting the full experience of what whiskey
could be.” It sounds simple enough but, as Riesbeck explains, a seismic shift in global whisk(e)y-making convention needs to occur to produce a varietal-specific single malt that is truly a product of the Pacific Northwest. In Westland’s case, it has been almost a decades’ worth of work. The distillery has partnered with Washington State University’s Bread Lab to find a barley that puts flavour rather than yield first.

“If your goal is to make things cheap, then it’s a race to the bottom and nobody wants to win that race,” Riesbeck says. “But if your goal is to make something that’s lasting and impactful, you have to be willing to support the science.” Westland’s funding of a PhD student is a sign of their long-term investment and it’s the company’s hope that the research produced should benefit the entire industry. But this is just the beginning of the process and many more stages are required to get from grain to glass. Once the barley is chosen, it can take years of testing to balance out things like stripe rust and other diseases before it can be planted in a Skagit Valley field. All this time, money and patience is in the name of one thing: flavour.

Travel 174 miles south and you’ll find Westward on Distillery Row, Portland. Founder and Master Distiller Christian Krogstad has been at the forefront of the craft brewing movement for the best part of 30 years. His role in the spirits sector is not to be sniffed at either – perhaps his biggest achievement is a certain Aviation Gin which was sold to Diageo for $610m in 2020 after actor Ryan Reynolds took on the brand. Brewing informs everything Krogstad does at Westward. “We see ourselves coming out of the beer world,” he says with an enormous smile. “We are much more informed by that than we are by Scottish single malts or traditions.”  In a refreshing juxtaposition to the sometimes-cloak-and-dagger world of whiskey-making, Krogstad is an open book. “We don’t have a lot of secrets and I think that’s something that has gone back to when I was brewing,” he says. “If somebody wanted a recipe for one of the beers I was making, I would give it to them. There’s nothing about the product or the process that is secret.” For the former brewer, imitation is most certainly the sincerest form of flattery. “If somebody wants to try and do what we’re doing then they are welcome to try,” he says. “But just like we’re not trying to copy Scotland, it’s not very interesting for somebody to try and copy us.”    Whether he’s producing a beer, gin or whiskey, Krogstad says his guiding principle is to create a flavourful and balanced liquid that isn’t palate-fatiguing. “My ultimate goal is to produce something that when you finish a glass of it, you immediately want another. I don’t ever want something that I make to be referred to as an acquired taste.” Approaching single malt whiskey with a brewers’ mentality means fermentation is king. A nice, cool temperature and long fermentation produces a beer that Krogstad calls delicious and defect-free. This means there is little reflux at distillation and the spirit is very rich and textural. “Our philosophy is not that the stills clean up the beer,” he says. “It’s that they concentrate it.” The largely defect-free, rich spirit is perfect for maturation in new charred oak because it can stand up to the flavours. “Because we’re not distilling it to a high proof, we have a lot of these great fruity esters from the fermentation that really come through,” Krogstad says. “If we aged it differently, we would want to distil it differently.” Perhaps another hangover of the brewing world is innovation with raw materials. The team frequently experiments with different malts and yeasts to develop more flavours and characteristics. One of the more interesting experiments, according to Krogstad, has been a sourdough levain for the fermentation. “It was almost on a lark and it turned out fabulous, so we are making more of that,” he says. Barrel trading is another inexhaustible playground for flavour development. When the team empties their barrels, they give them to neighbouring breweries for maturing their “big, 10%” imperial stouts for a year to 18 months. The will then return them to Westward 
where whiskies will get a final finish for a year. The process is then repeated ad infinitum. Rather than bringing in barrels from Spain or Portugal, Westward opts to work with local wineries, breweries, and tea and coffee companies. When we speak, Krogstad is wandering around a “buddy’s vineyard” for a photoshoot. The indefatigable founder created a Tempranillo-finished whiskey after he was given a warped butt a few years ago that “turned out fantastic” with red fruit, dried cherry and redcurrant flavours. Every experiment is another learning opportunity for the Portland distillery and its founder and Krogstad speaks about all of them with equal excitement. “I didn’t start this because I created some Business School brief. I started the distillery because I was brewing and I loved brewing. And I loved whisk(e)y and I wanted to do something interesting and bring something new to the conversation.” The whiskey conversation has certainly changed since Krogstad founded the distillery in 2004. When he and seven others created the American Single Malt Whiskey Commission five years ago, there were a handful of members. Today, there are 160 – approximately 60 have products on the market and the remaining 100 are all ageing their liquid. A huge number considering the Federal Government has yet to recognise the category. “It is all about transparency and authenticity now,” Westland’s Chris Riesbeck says. “Brands like Westland will win that war because we were designed with that in mind. "From day one, we really wanted to be authentic [and] we wanted to be transparent. People should know what’s in a bottle of whiskey, they should be able to say without any sort of hesitation – when I buy a bottle of Westland, what am I getting? Well, you’re getting 100% malted barley, distilled in a single distillery, bottled no less than 40% ABV and aged in oak casks with no specificity to an age statement.”

When it comes to the future and the 160-plus American single malt producers, Krogstad says saturation in spirits is a long way off. “In brewing, every six or seven years you get a plateau in the market and everyone confuses a plateau with a collapse. This is the fourth or fifth time I have seen people worrying that the brewing industry is saturated, and I don’t know if it is or isn’t, but what I do know is that comparing the spirits industry to the beer industry, spirits is not saturated.”

Westland is days away from launching the realisation of its 10-year varietal-specific project with the latest addition to its Outpost Range – Colere Edition 1. “It is a really important thing for this distillery philosophically and frankly emotionally,” Riesbeck says. “It’s hard not to get a little misty-eyed about it.
