In 1991, Jean-Luc Thunevin made the first vintage of Valandraud. In the workshop next to his house, he produced just 100 cases of wine from tiny yields, de-stemming and punching it down by hand and ageing it in 100% new French oak. Although it didn’t have a name yet, the garagiste movement had been born.  As the Super Tuscans had in Italy, these maverick bottlings, operating outside the official classification, rocked the world of wine – especially in the conservative heartland of Bordeaux. At the same time, the likes of Harlan and Colgin were starting to prove the power of Cabernet Sauvignon in Napa. Meanwhile on the East Coast, a lawyer called Robert Parker had already gathered a loyal following for his newsletter, offering independent advice and a novel scoring system. The internet was just getting started. Everything in the world of wine was changing.  “In the 1990s there was formidable energy and consumers who were ready to accept something new,” says Thunevin. But the Bordeaux wine trade was stuck in the Middle Ages, he says; it was aristocratic, closed – and one reason why the garagistes, a collection of outsiders, caused quite such a stir. Thunevin himself had been in banking, while Jonathan Maltus (Le Dôme) was a British businessman and Stephan von Neipperg (La Mondotte) a German interloper. With the challenging conditions of 1991, the first vintage of Valandraud had little impact. He made a tiny volume of red, and then a rosé de saignée that he gave away to friends. “L’histoire, c’est ’92,” Thunevin tells me, almost whimsically. The wine, a product of much more favourable growing conditions, put him on the map. “I created a revolution,” he says today. The 1991 Valandraud was released to négociants for 13€; the 2022 came out at 118€.  It was Michel Bettane who coined the term “vin de garage”, sneeringly suggesting that these new-fangled wines could be made in someone’s garage. But, as Jean-Luc Thunevin told me, “By talking about me, they made me exist.” Without such outrage from wine’s more traditional core, the garagistes likely wouldn’t have had the same success. Combine Bettane’s throwaway comment with the rise of garage music in the US and UK, and the movement gained an accidental cool-factor – but that’s all changed now.  “I don’t think anybody wants to admit they were a garagiste anymore,” Jonathan Maltus – the Englishman who created Le Dôme in 1996 – says. He looks back on the time with relative fondness, however. He’d arrived in Bordeaux in 1994, buying Ch. Teyssier, having sold his petrochemical business and decided after a stint in Cahors that he needed to be in the “Formula One” of wine, making for Bordeaux. It was an English wine merchant who told him how a single-vineyard Pomerol called Le Pin was causing a stir – one of a handful of “cuvée wines” that were becoming incredibly popular. As a canny businessman, he decided to give it a go himself.  “It was really exciting – and there was no budget,” Maltus says frankly, explaining how the movement rapidly became a game of one-upmanship. They would instantly snap up any new machinery or equipment, pushing their concepts further and further to out-do each other. Green-harvesting and picking only the ripest berries in multiple passes was de rigueur; the vines often stripped of their leaves to expose the fruit to the sunshine and maximise ripeness (something climate change has put paid to). Yields were consistently low, with over 30hl/ha considered too much to produce the requisite concentration. Maltus explains how the introduction of double-sorting and cold-soaking was radical – both expensive tools, with the latter requiring protective gas and the ability to chill tanks. He would put the wine into one set of new French oak barrels for malolactic fermentation, before transferring the wine to another batch of new oak for ageing. The resulting wines were bold, rich and lavish. “I like to think of it as a kind of Vivienne Westwood period,” Maltus says.  Ask any of the garagistes who inspired them and they’ll point to, among others, Le Pin. Although owner Jacques Thienpont firmly believes Le Pin is not – and never was – a garage wine; he feels that it is sometimes mistakenly seen as one because it was so successful at the time. Ironically, the wine was originally made in a garage, from just one hectare of vines. It was the sensuality of the wine that inspired Jean-Luc Thunevin, he tells me. He visited Le Pin several times and Thienpont told him that wine was all about the quality of the soil, rather than winemaking. “In the cellar, there are no secrets,” Thienpont says. Thienpont wasn’t Thunevin’s only advisor; Alain Vauthier of Ausone happened to be a school friend, and helped the amateur winemaker.  This tension between terroir and technique is at the heart of the garagiste movement. Jean-Luc Thunevin tells me how Valandraud was not a garage wine, but a “garden wine” – from 300 vines he planted on 0.6 hectares, a single site captured in 300 bottles. For Stephan von Neipperg, who made the first vintage of La Mondotte in 1996, from 4.5 hectares, “It’s a terroir… without an outstanding terroir, you cannot make an outstanding wine.” The garagistes, in his mind, by contrast were about “making the wine easier to understand – round, ripe, sometimes too ripe, extracted” – it’s a term he assigns to the likes of Ch. Gracia – first made in 1997, in a back-alley of Saint-Emilion.  Whether you are convinced these wines were true expressions of site or not, they were a direct contrast to the Médoc Classed Growths – where vast swathes of land were used to create a blend each year. Was it a reaction to the Left Bank’s dependence on blending, maybe even a complacency? Perhaps, but it was also a consequence of what each of them could afford; none of them, at first, had the cash to buy any more land. Thunevin’s methodology, for example, wasn’t idealistic; he had to do everything by hand because he didn’t have a tractor or any other equipment, splurging on new barrels alone, and turning a profit for the first time only in 1995.  It’s hard to untangle the movement from Parker’s influence – but few of the early renditions earned the big scores one expects and associates with these vins de garage. Le Dôme, for example, only earned 100 points in 2010 – long after Maltus had started reining in the style, La Mondotte in 2009. Although 1992 Valandraud kickstarted the movement, Parker only gave it 87-88 points when he first rated it in February 1994. Time blurs lines, inevitably – and, although it’s undeniable that Parker’s palate aligned with plush, polished styles, the truth around his influence is more complicated.   “We realised that the whole thing was just becoming a parody of itself,” Maltus says. He points to 2002 a real turning point, but it was only from 2008 that he stopped double oaking, reduced the proportion of new oak to 80%, and more recently started picking earlier. It’s the same across the spectrum, with many of these rebel estates now part of the formal classification system – absorbed into the establishment.  The instigator Jean-Luc Thunevin was branded Bordeaux’s “bad boy” for having challenged the status quo. It’s a reputation that he worked hard to keep – continually pushing forward (indeed, he even makes wine under the Bad Boy name today). Asking what prompted him to create Valandraud – and make it so differently, he says, “I have always been out of my mind. I always wanted to do things that were a bit shocking.”  Today, Bordeaux has more competitors than ever before, with a world of fine wine that is now truly global. Thunevin feels it’s a region in crisis – in need of another bad boy to take the baton. He was an outsider with nothing but a romantic dream of making wine. Whether you like what he did or not, he changed Bordeaux for good. “Les rêves sont nécessaires à notre équilibre,” he tells me – dreams are essential for our balance. Matthew Fioretti is not everyone’s cup of tea. The man at the helm of Cerbaiona doesn’t mince his words – and he’s got firm views on, well, I suspect pretty much everything. But he’s also unwaveringly honest, with a frank approach that is enjoyably refreshing – and rather unusual in the fine wine arena. He’s got a vision and story, one that he wants to tell, but it’s not one that’s been spun by a PR agency; it’s his. Fioretti has long been involved in the world of wine, running an import business in the US (Summa Vitis), which focused largely on Italian wine. He moved to Italy in 2004, and shut down the Summa Vitis operation in 2009 as he set his sights on making wine himself. After a few false starts, he heard that Diego Molinari – the longtime owner of Cerbaiona – was looking to retire. Along with a group of investors (the most significant of which is the American collector Gary Rieschel), Fioretti purchased the property in 2015, reportedly for €5.8 million. Molinari was in his 80s and it was clear that – while the site itself was exceptional – the property was run down and needed work. As we reported a few years ago, he promptly embarked on a radical project to restore the property and unexpectedly decided to declassify the 2014 and 2015 vintages to Rosso di Montalcino, only releasing the first Fioretti-era Brunello in 2021, with the 2016 vintage – the first to be made entirely by the new team.  Now, almost a decade later, he’s starting to be able to realise his vision for the estate – as we discovered on a visit earlier this year, with problems that “aren’t easy to solve”. The challenge, he explains, has been evolving from an “artisan” to an “atelier”. Under Molinari, the property developed a legendary reputation, but the operation was rudimentary – a traditional, family business, doing things the way they had always been done. Fioretti wants to bring the estate into the modern era, elevating the terroir with technical precision to craft wines that continue the Cerbaiona legacy. It is, he says, “a transition I wasn’t expecting to make”, but one that he feels is essential to safeguard Cerbaiona’s future. The distinction between artisan and atelier is a nuanced one – but one that comes down to an emphasis on craft rather than art, with a commitment to consistency, for which precision and hygiene in the winery are key, as well as a high level of technical knowledge. He confesses that he had envisaged having a more hands-off approach in the winery, having imported a lot of natural wines in his previous career, but has rapidly realised that top-level winemaking is full of “necessary compromises” (diving into issues like the fault quercetin). As a craft, winemaking can’t just be subject to the “whims of the producer”, as he suggests is the artisanal way. “I prefer to work more meticulously,” he explains. The American talks at pace, flitting from TS Eliot and the concept of “the pure critic” to Albertolli and neoclassicism, in amongst technical detail about fining and filtering. The estate is closed to visitors, deliberately to avoid distraction from what Fioretti wants to be spending his time on – making wine. As he whizzes us round the winery, our heads spinning as we try to absorb every detail, he talks us through exactly how he’s bringing new exactitude to the operation. The vineyards have all been replanted and a steep-sloped olive grove replaced with vines, all with selected rootstocks and clones sourced from France’s Guillaume nursery, to give them the best possible raw material. Once seen as too labour-intensive to farm, he’s convinced the ex-olive grove might just be the best site on the property. The rustic old stables and granary that acted as the cellar and winery have been carefully renovated, with water and drainage installed throughout, and the equipment all updated. Importantly, Fioretti has added a full in-house laboratory – something that is exceedingly rare for a property of this size, let alone Italy where the high-tech approach is far from the norm. The fruit is now all chilled after harvest, de-stemmed and cold-soaked, using inert gas to protect the must. While he used upright wooden tanks for fermentation for his first five vintages, Fioretti switched to stainless steel to allow for better hygiene and temperature control (preferring a maximum 26̊C), as well as allowing him to programme them for automated punch-downs and pump-overs. He’s started co-inoculating for primary and malolactic fermentation, meaning the wines go into barrel very clean – and can be sulphured right away. These are tweaks, minor modernisations, but one of the most significant changes Foretti is making is the time the wine spends in wood. While Molinari favoured four-plus years in 500-litre tonneaux, Fioretti has gradually started bottling the wine earlier and uses a combination of 350-litre barrels and 15-hectolitre casks. “Even two years [the appellation minimum] in wood is too long,” he says – before quickly acknowledging that such a view is far from accepted, and he cannot legally reduce it any further. The various consorzios may not like it, but it’s a view that is increasingly common among younger producers in Italy, who are frustrated by minimum oak-ageing requirements and their contrast with the wines today’s consumers want to drink. As Fioretti says, however, “The notion of wood is very delicate.” And while he’d rather be able to age his wine in other vessels during their first two years of life, he acknowledges that élevage in oak has a beneficial impact on the chemistry of wine – aiding stability. With such a beloved wine, it might seem controversial to change anything – especially the way it’s made, but that hasn’t stopped Fioretti. Looking back at older vintages from the estate, even the legendary 100-point 2010, he is sometimes underwhelmed, feeling that there’s much greater potential. Part of his plan to reflect that potential is bottling earlier, allowing the fruit to shine through and give the wine better balance – something he feels is key for ageing potential. He’s also keen to make sure the wine is moderate in alcohol with maximum 14 or 14.2%, even in the warmest years. And most importantly, he says, good wine has to be delicious. Having tasted the 2019 and 2021 with Fioretti – the results so far really are. There’s a vibrancy and purity that makes them irresistible, while not sacrificing the structure that will allow these wines to go the distance. Alongside Cerbaiona, Fioretti has also created the M.L. Fioretti label, one he describes as “part garagiste, part petit château”. He was keen to explore indigenous grapes, which “are part of the family – but not all thoroughbreds”, as well as plots of Bordeaux varietals (grapes with undeniable pedigree) – provided they’re planted in the right place. The Casaglia Colorino is bright and spicy, while the San Vito (sadly the last vintage of which is 2021) is a beautifully lush and vibrant Merlot. These are fascinating wines that allow Fioretti to experiment more – outside the constrictions of the Brunello di Montalcino appellation. Controversially, Fioretti has declared Cerbaiona a “No Scores Zone”, echoing the sentiment of Teobaldo Cappellano that numerical ratings are divisive, at best – and don’t do justice to the craft of winemaking. In his notes on the 2018 vintage, Fioretti wrote: “This is another vintage for the connoisseur, that true lover of wine and the vine. So be it if the ‘collector’ misses out.” Feathers might be ruffled by such remarks, but the motivation here is clear: an earnest passion for wine. It’s something that shines through in our conversation – and in the wines he’s making. We caught up with the dynamic winemaker about how to define the undefinable – and why it’s determined to lead the appellation into a new era Saint-Emilion has always been difficult to define. Unlike other top terroirs of Bordeaux – Margaux with its silky tannins and aromatic flair, Pauillac with its graphite minerality and structure, and Pomerol’s opulent, rich palate – the profile of Saint-Emilion has never been so easy to identify. Beyond that, the wines can be frustratingly inconsistent in quality too, making it Bordeaux’s most idiosyncratic appellation. Beyond the variation in quality and flavour profile, a political splintering of the appellation in the last few months, resulting in three of the four Premier Grand Cru Classé A wineries (Cheval Blanc, Ausone and Angélus) withdrawing from the classification has brought further turmoil to this seemingly troubled appellation. “Perhaps,” Ch. Cheval Blanc’s Technical Director Pierre-Olivier Clouet begins, “the many idiosyncrasies of Saint-Emilion are easier to understand, when you realise it is the largest appellation in France, consisting of over 800 growers on nearly 6,000 hectares of vineyards.” Put in context, the second largest commune in France, Châteauneuf-du-Pape, is almost half that area at 3,300 hectares. Given its large area, Saint-Emilion doesn’t have the same homogeneity of soil as Bordeaux’s other appellations and it is this, Clouet believes, that goes some way in accounting for the region’s variety. While many of the top estates are situated on the limestone plateau, on the outskirts of the historic town itself, the appellation’s borders stretch way beyond this most prevalent feature and cannot be accurately defined by limestone alone. This is no more evident than with Cheval Blanc – arguably the most atypical estate in Saint-Emilion. “If the DNA of Saint-Emilion is Merlot grown on limestone, it is bizarre that Cheval Blanc is in the appellation at all,” Clouet chuckles. “We grow Cabernet Franc on clay!” Cheval Blanc sits at the appellation’s limits, four kilometres away from the limestone plateau, bordering Pomerol. But Cheval Blanc is not such an easy fit with Pomerol either. “We should have a monopole appellation,” jokes Clouet. His point is serious, however, Cheval Blanc straddles both the Right Bank’s top terroirs, yet is not typical of either. It certainly makes Cheval Blanc more difficult to explain, admits Clouet, compared to the other great estates of Bordeaux that can be defined by their parity of variety and terroir. “Pétrus is Merlot on clay soils. Lafleur is Cabernet Franc on gravel. Ausone is Cabernet Franc on limestone. Latour is Cabernet Sauvignon on clay. But Cheval Blanc is impossible to know like that, because of its range of soils,” Clouet explains. For Clouet, this multi-faceted personality gives Cheval Blanc great flexibility and is a key reason for the estate’s success and consistency. “We think we are very lucky because we can play on the two parts of the Right Bank,” he says. “Every time it’s a vintage for Merlot, we blend for Merlot. When climatic conditions are better for clay, we play with clay, so we can play with the identity of the vintage.” Cheval Blanc has 53 plots on 10 different soil types – clay, sand, gravel in varying proportions – and grows Cabernet Franc, Cabernet Sauvignon and Merlot. For Clouet, the DNA of Cheval Blanc is its diversity. “We are an orchestra, not a soloist. We need all our musicians to play the music.” Perhaps then, Cheval Blanc’s wide-ranging terroir makes it a fitting mascot for the heterogeneous nature of the Saint-Emilion appellation. Despite Cheval Blanc’s recent withdrawal from the classification system, Clouet is keen to emphasise that the Saint-Emilion appellation is important, and something they should continue to defend and invest time and money in. The wines of Saint-Emilion are all linked by the place – and this is much more important than variety or blend, which he feels other regions have wrongly placed emphasis on. “Each bottle of wine should tell the story of that place,” says Clouet. However varied Cheval Blanc’s terroir may be, it’s undeniable that the wine captures a distinct sense of this place. Indeed, beyond a small increase in its holdings in 2012 encapsulating a neighbouring vineyard, it is one of the few châteaux in Bordeaux whose perimeters have barely changed in 150 years. For Clouet, however, the appellation is about more than terroir, there is a “dynamic spirit” at the heart of Saint-Emilion. While not so easy to define, Clouet believes it is an appellation that has greater flexibility than others. It is often cited as the most Burgundian of the Bordeaux communes, due to the high number of small estates and the sheer number of vignerons, something which makes it a “dynamic place” in Clouet’s eyes. “It never stops thinking how to change,” he says. This, he believes, provides some great advantages. “Smaller estates have the capacity to move quickly. This is arguably the most vigneron-led place in Bordeaux.” Such dynamism in the past has certainly seen Saint-Emilion leading trends in the region, both good and bad – depending on your point of view. The garagiste movement in the early 2000s, for examples, is a fashion that continues to divide the region. But Clouet believes Saint-Emilion is an appellation ahead of its Bordeaux counterparts, leading in sustainability and the trend towards freshness and delicacy, and terroir-driven wines. That said, there’s no “recipe”, he says. “Each and every château has to find its own balance.” But, he warns: “We need to be careful and not go too far one way or the other. A new recipe is to pick too early, another is to use too little oak.” He quotes Coco Chanel, “fashion changes, style endures” – each producer should find their own identity, their own style and stay true to it. It’s essential to be opened minded, he says – but to never copy others, follow a recipe or chase trends. The current move in Saint-Emilion to plant more Cabernet Franc is a perfect example, for Clouet, where fashion is being followed foolishly. “Cabernet Franc today is probably the most trendy variety in the world. I don’t know any winemaker who doesn’t talk to us about Cabernet Franc. It seems to be the solution to global warming, but I think it is completely the opposite,” he says. For Clouet, Cabernet Franc has no capacity to adapt: in the right soil it produces top wine, but in average soil the results are terrible. The hot 2020 vintage, for Clouet, proves his point – with producers favouring Merlot over Cabernet Franc, even when the latter dominates their vineyards, pointing to Lafleur and Ausone, as well as Cheval Blanc. The warm, dry conditions didn’t favour the modish variety – and an overreliance on Cabernet Franc planted in the wrong place could prove disastrous in the face of climate change. For the already atypical estate, Cheval Blanc is looking instead at further diversifying. While Cabernet Franc is key to its identity, the estate has shifted from once having Merlot on gravel and Cabernet Franc on clay to have “everything, everywhere”. “We want to multiply the diversity,” Clouet explains. Diversification is at the heart of everything Cheval Blanc stands for today, laid out in their recently published manifesto – a clear statement of intent that unless Bordeaux moves away from monocultural farming, its future is at risk. “In the last 10 years agriculture was a problem,” says Clouet, “but I think agriculture could be the solution.” He gives carbon dioxide as an example: while there’s too much in the atmosphere, trees, vines and cover crops can be used to capture it. Clouet believes the manifesto is not just a piece of paper or marketing pamphlet, but a roadmap to show how a more sustainable approach is possible. “The biggest problem in the 20th century for agriculture was not just pesticides but monoculture.” While Cheval Blanc will continue to only earn money with their wines, admits Clouet, other crops and livestock will be used to provide “resilience, a capacity to decrease disease and problems in the vineyard”. Clouet goes on to explain how 50 years ago, trees were removed from vineyards to make it easier for tractors, but prior to this vines, trees and other plants co-existed. “Organic production is not enough today,” says Clouet, who does not want to simply return to the past. “We want to take the best of modernity.” Cheval Blanc is not organic because it believes that copper, permitted and widely used in organic viticulture to fight mildew, is more harmful than a synthetic alternative. “It’s common sense,” says Clouet. “When you use organic methods to tackle mildew you have to spray every week – it is nonsense. We try to think sensibly. The solution will be through science and research. We shouldn’t go just with philosophy. We need to be agronomic and practical to find a solution.” If the spirit of Saint-Emilion is about dynamic change, then it is fitting that the appellation’s most recognised estate is leading the charge to revolutionise the region’s approach to viticulture and safeguard its future. For Cheval Blanc, agriculture is at a crossroads. “Viticulture is at the mercy of climate change and the drastic reduction in biodiversity,” states Cheval Blanc in its manifesto. Over the last few years Cheval Blanc has been transforming its vineyards into permacultures – interplanting trees, plants, other fruits and vegetables, as well as introducing animal grazing, flower farming and beekeeping to the vineyard in an attempt to ensure soil fertility, promote diversity and capture carbon. Reading about the latest political spat over the current Grand Cru Classé system, the endless court cases and corruption charges, you would be forgiven for thinking that the spirit of Saint-Emilion is imploding. But it is the spirit of Saint-Emilion, according to Clouet, that unites this somewhat idiosyncratic appellation. Beyond the classification chaos lies a heterogenous band of vignerons, united by their diversity and dynamic approach. With the release of its manifesto, could Cheval Blanc unite the troubled appellation, with growers working together towards a fully sustainable, future-proof Bordeaux? Cheval Blanc certainly hopes so.

There are few people that get to taste Bordeaux as often or as thoroughly as the Wine Advocate Editor-in-Chief Lisa Perrotti-Brown MW. Based in Napa, her knowledge of how the Bordeaux varieties are managed – both in Bordeaux’s moderate climate and the hotter region of Napa – has become a huge asset in understanding and assessing Bordeaux in a warming climate. With such exposure to vintages past and present, being mentored by the world’s most influential critic Robert Parker, there’s no one better to consider what defines Bordeaux today.  Perrotti-Brown has a clear idea of how and why Bordeaux has changed so much in the last 20 years, while at the same time emphasising that there’s no “hard stop” to an era. An individual château’s period of change can be different to its neighbours. “It seems like every château has had its challenging period,” she says, “whether it be a dogmatic winemaker, recurring faults in the winery or even financial difficulties.” Each era of Bordeaux is not simply defined by set vintages, however – with the benefit of hindsight – she believes you can see clear, defining moments over the last two decades where the style of Bordeaux has changed. Like much of the wine world in the 1980s and ’90s, Bordeaux châteaux were still understanding the effects of faults in their wines – whether it be volatile acidity, dissolved oxygen or Brettanomyces. With increased emphasis on ripeness and new oak, these issues only increased. “Brett and other faults love new oak and higher alcohol, it was almost a perfect storm,” she explains. But as this became more of an issue in the region, it led to more research, bringing about a much better technical understanding of why these things were happening. It was this scientific awakening that Perrotti-Brown believes was the catalyst for the modern era. “Momentum for change has sped up in the last 20 years and there have been lots of triggers,” she says. “There is a better understanding of what ripeness is, precision viticulture and winemaking, the development of technology and of course there is climate change.” But outside this and perhaps the most important “trigger” behind this change, she believes, is money. “To run a château has become very expensive: 30 or 40 years ago many of these châteaux were simply operating as agriculturalists, now it is a multi-million-dollar business.” Big money has no doubt brought about big investment and Perrotti-Brown believes in many ways it has “levelled the playing field”. A lack of investment in the winery and vineyard is now a rare excuse for poor performance. “It has raised the standard throughout the region. Investment and greater precision has created a lot of diversity – more than we have ever seen before.” In terms of taste, the most positive developments in Bordeaux for Perrotti-Brown come from the vigneron’s better understanding of ripeness, both in terms of tannin ripeness and fruit concentration. “Hindsight is a beautiful thing,” she quips, “but we have seen dark periods on both sides of the spectrum in Bordeaux.” There were real issues with lack of ripeness through much of the 1970s and ’80s. High production levels saw diluted grapes harvested and simply chaptalized (sugar added) to bring up the alcohol, then at fermentation, the must was overworked to extract enough colour and tannins. Since top Bordeaux was known for its long ageing potential, this was necessary to create the structure to age – “Otherwise you were going to end up with a diluted, watery mess,” explains Perrotti-Brown. This extended maceration saw the extraction of very hard tannins – “the wrong sort of tannins that come at a later stage of extraction”. “It is better extraction techniques, only extracting quality tannins, that is a major reason behind the most recent improvements,” Perrotti-Brown explains. She points to the legendary 1982 vintage. “A lot of people at the time were saying the tannins of the ’82s were too soft, too juicy, too fruity and it just wasn’t true.” The vintage was warm, particularly for that era. “At harvest the vignerons were picking grapes with a natural ripeness to the tannins, which meant during extraction the tannins and colour came easily.” They didn’t have to overwork the grapes to extract the tannins, producing wines that were great in their youth and have since aged incredibly well. It was the quality, not quantity, of tannins that stood the 1982s in such good stead, a lesson that wasn’t necessarily learnt instantly. Overworking the musts and a lack of concentration continued to be commonplace throughout much of the ’80s and ’90s. Many wines were hugely extracted and required plenty of patience. “You compare that with now,” she says. “I was discussing the 2020 vintage with Ch. Margaux’s Philippe Bascaules – and he barely needed to touch the grapes during extraction.” At better ripeness levels (as seen in 2020), the colour and tannins extract themselves. In the mid-90s to early 2000s, however, there was “a chase for ripeness”, in Perrotti-Brown’s words. “It was the beginning of the garagiste era – with reductions in yield, later picking and an emphasis on power. You had super low yields, producing behemoth, impenetrable wines in their youth, 200% new oak etc – people were really pushing the boundaries.” It is a style that is seen by many as actively encouraged by Perrotti-Brown’s mentor Robert Parker, who at this point was arguably the most influential man in Bordeaux. The incredibly hot 2003 vintage marked a watershed moment for Bordeaux. “Bordeaux winemakers had never seen anything like it. Grapes were turning to raisins on the vine,” Perrotti-Brown says. Despite the year’s conditions which exposed the push toward ripeness, the emphasis on power continued up until the 2010 vintage. Despite the focus on ripeness and extraction, there were some exceptional vintages – but Perrotti-Brown questions how well these wines have since aged. This is, in her view, a key shift in the region. She compares tasting the 2005s en primeur, with tasting the vintages of today. While 2005 was clearly a fantastic vintage, tasting these wines so young was really difficult, with aggressive tannins. Many winemakers were, Perrotti-Brown says, “making wines by formula”. A high-quality vintage gave vignerons a free ride to push the extraction even more. The criticism often made of 2005 is that it has taken such a long time to come around. Similar issues are raised with the same vintage in Burgundy. The year was at the height of the trend for maximum ripeness and extraction, for both Bordeaux and Burgundy, and the resulting wines shut down for a long period. Perrotti-Brown accepts that people have different expectations on when to drink Bordeaux, but she loves to drink wine in its mid-life, when there is both primary fruit and tertiary development. The problem with the 2005s, she says, is that that window never really opened: the wines remained closed, only beginning to open up now, when there is little primary fruit left. “Many of the ’05s are, wow, exceptional now, but you miss that sweet fruit and it’s what I like about the modern vintages,” she says. Looking back, “Winemakers could have dealt with 2005 much more wisely.” The 2009 vintage provides an interesting contrast. Like the ’82s, the natural ripeness of the tannins meant the wines didn’t shut down in the same way the 2005s did. Of course, higher levels of alcohol also helped increase the potential tannin extraction. Alcohol is a solvent. Increased ripeness, which in turn leads to higher alcohol levels, can therefore lead to too much phenolic extraction. While this was a risk for many wines in the early 2000s, fortunately today’s winemakers know much more about how to handle riper fruit. The 2010 vintage might have been the last year of big, bold, extracted wines, it was nature rather than the Bordelais that dictated the change, Perrotti-Brown notes. The ’11, ’12, ’13 and ’14 vintages meant winemakers had to deal with cooler, more difficult vintages. It was not possible to produce bold wines in these vintages and retain balance. This was almost a period of introspection for Bordeaux and, for Perrotti-Brown, it led to a distinctive development where “the ethos of precision” took charge from the 2015 vintage. While there are of course exceptions, from 2015 Perrotti-Brown feels you started to see more plot-by-plot management of the vineyard, with picking times becoming much more accurate – picking plots and fermenting them separately, “rather than throwing everything together”. Extraction also became much more precise, focusing on only the quality tannins – a marked change from the previous era. This new ethos brought, in Perrotti-Brown’s view, a lot of “soul-searching” in the vineyard, with people like Alfred Tesseron spearheading a movement toward more sustainable practices. But overall, Perrotti-Brown notes, “There is so much creativity too and many people are doing different things. It has created a lot of diversity.” Amongst the creative changes happening in the winery and vineyard, developments in the wine’s élevage always seems to be a big talking point in Bordeaux. Oak is an integral part of the Bordeaux “recipe”, but – after an over-reliance in the 2000s – its use was becoming increasingly scrutinised. “Oak doesn’t ever go,” she says. “It settles down, integrates and evolves with the fruit, but it can push itself forward.” “Oak is absolutely necessary for giving shape and spice to the fruit, as well as tannic interest to the wine,” says Perrotti-Brown: for her, it’s about oak being used “smartly”. “Most people have pulled back on the new oak from the 2015 vintage onwards, but, like the tannins, it is not about more or less oak, but about using it more wisely. There is a much better understanding of oak today and much better quality of oak being used. What it lends to the tannin structure is a nice back up to the skin tannins and a spiciness in the background.” The new era – from 2015 onwards – is certainly contributing to Bordeaux being “on a good run”, in Perrotti-Brown’s words. But while there is great consistency today, she’s under no impression there won’t be problems ahead. “Warm, dry vintages have become the norm, but how warm and how dry before this becomes an issue? Bordeaux was lucky in 2020 that they got a bit of rain in August,” she says. While a lot has changed over the last 20 years in Bordeaux, there are no guarantees for the future. No matter the technology, Bordeaux’s fate lies in the hands of the shifting climate – and terroir, or more specifically the clay or limestone soils equipped to deal with hot, dry conditions, has never been so important. For now at least, though, Bordeaux is basking in its era of precision, with 2020 the third great vintage in a row. Let’s hope Mother Nature holds the region in her favour a little longer. No doubt that the style of Bordeaux has shifted over the past two decades. But what’s caused the change – and are the wines better? We sat down with one of the world’s most influential wine writers, Wine Advocate Editor-in-Chief Lisa Perrotti-Brown MW, to delve into what defines modern Bordeaux

Bordeaux is arguably the world’s most famous wine region – known for producing some of the finest wines in existence, with a long history stretching back to the Roman era. But the region is broadly divided in two – the Left and Right Bank. (Terms that you may also hear in reference to Paris, and – less frequently – Chablis.)  The region is defined by its waterways – a forked tongue that snakes southeast from the Atlantic. The Gironde estuary is fed by the Dordogne and Garonne rivers, with the Gironde flowing into the Atlantic. The south-eastern side of the Gironde and Garonne is the Left Bank, while the north-western side of the Gironde and Dordogne is the Right Bank. The section of land that sits between the fork of the Garonne and Dordogne is the intuitively named Entre-Deux-Mers (literally translating as “between two seas”), and is mostly home to more everyday, entry-level wine – although quality has certainly improved here with both climate change and technical advancements (such as Ch. Marjosse).  The Left and Right Banks, however, are where you’ll find Bordeaux’s most illustrious names. While both regions craft exceptional wines, they are extremely different in terms of terroir, the grapes grown, the estates themselves and how the wines are classified.  The Left Bank The Left Bank is the aristocratic and historic home of fine wine in Bordeaux, famous for the 1855 classification of the Médoc, a ranking of the top estates of the region which still stands today, including the fabled First Growths – Ch. Latour, Ch. Lafite Rothschild, Ch. Mouton Rothschild, Ch. Margaux and Ch. Haut-Brion.  It was Bordeaux’s ties to England that saw it rise to prominence – after Eleanor of Aquitaine married Henry Plantagenet in 1152. With Bordeaux under English rule, favourable tax rates saw the industry thrive. But the Médoc was, at that point in time, a marshland not worthy of wine-growing – with the best wines coming from Graves estates like Ch. Haut-Brion (where vines have been grown since at least the early 15th century).  It was only in the mid-17th century that the Dutch drained the marshy Médoc, creating the well-drained gravel soils that are now a haven for Cabernet Sauvignon. It was after this that most of the region’s grandest properties were established.  The aforementioned 1855 classification cemented the Médoc’s place in history, with the wines of Sauternes and Barsac categorised at the same time. The wines of the Graves were classified in 1959, while the Left Bank is also home to the Cru Bourgeois and Cru Artisan classifications.  The Left Bank encompasses, from north to south: the Médoc (which includes the prestigious communes of Saint-Estèphe, Pauillac, Saint-Julien, Margaux, as well as Listrac and Moulis), the Haut-Médoc, Pessac-Léognan and Graves, as well as Barsac and Sauternes. Although the area of course encompasses dry whites and sweets, stylistically “Left Bank” is used mainly in reference to the reds, which represent the vast majority of production.   The soils on this side of the Gironde are dominated by gravel, with the best sites sitting on deep gravels over clay subsoils. The vineyards are more spread out here, with patches of woodland and other agricultural land between the pockets of fine terroir, making distances and journey-times between estates longer. The gentle, barely undulating landscape masks significant differences in the soils, which determine the success of a site, with the mounds divided by streams known locally as “jalles”. Deeper gravel has historically been a significant advantage in the region’s maritime climate, avoiding water-logging and retaining heat that helps to ripen the grapes. Proximity to the Gironde and its moderating influence can also help shield vines from frosts, an increasing threat in the springtime.  Estates can be quite large on the Left Bank – for example, Ch. Cos d’Estournel comprises 100 hectares – allowing for higher production levels, which means the wines tend to be more widely available and can be found more easily on the secondary market, even at the highest quality level. The properties also tend to have picture-perfect châteaux, immaculate architectural displays of the wealth of the region.  Cabernet Sauvignon leads the way in terms of plantings, thriving in those warm gravel soils (and complemented by parcels of Merlot, Cabernet Franc and Petit Verdot, with some limited Malbec and Carménère). The variety produces small berries with thick skins, creating tannic, age-worthy reds.  The wine style varies between commune and estate, but generally speaking the wines of the Left Bank are dominated by graphite, cassis and blackcurrant leaf, full-bodied yet with a more linear structure that Cabernet Sauvignon provides. Historically the wines were austere in youth and needed time in the cellar, but wines today are made to be more approachable so that they have longer drinking windows. With age, the best wines develop beautiful complexity with notes of leather, cedar, tobacco and more.  The Right Bank The most famous wines of the Right Bank come from Saint-Emilion and Pomerol, however it is also home to: the Côtes de Blaye, Côtes de Bourg, Fronsac, Canon-Fronsac, Lalande-de-Pomerol, Côtes de Castillon, Côtes de Francs and the Saint-Emilion satellites – Lussac-Saint-Emilion, Montagne-Saint-Emilion, Saint-Georges-Saint-Emilion and Puisseguin-Saint-Emilion.  Although wine has long been made on the Right Bank, the wines – other than those of Ch. Cheval Blanc – were not known widely until relatively recently. The region’s modern history is tied to one man – the influential critic Robert Parker. He was one of the first to highlight the quality being produced at smaller Right Bank estates in the 1980s and 1990s, and put the wines on the international stage. His penchant for rich, ripe, concentrated styles prompted a wave of producers who did extensive green-harvesting, working with tiny yields, picking late, extracting heavily and ageing in new French oak, a style favoured by the far-reaching and famous consultant Michel Rolland.  Pomerol became home to the “garagistes”, after Jean-Luc Thunevin crafted his first vintage of Valandraud in his garage in 1991. These modern producers, who didn’t come with the land and smart châteaux found on the Left Bank, captured the imagination of consumers, and rapidly became highly sought-after.  Fashions have changed for the most part, and the wines produced today across the Right Bank are significantly more restrained – reflecting the general move toward freshness and aromatic finesse.   Of course, one reason that the wines of the Right Bank were less well-known was the smaller size of estates and therefore smaller volumes being produced – especially in Pomerol. Pétrus, for example, consists of 11.5 hectares, while Ch. Lafleur is a mere 4.5. In Saint-Emilion, Ch. Cheval Blanc and Angélus both have 39 hectares – a more generous vineyard area, but still relatively small in comparison to those in the Médoc. This means that the wines from the top estates are often strictly allocated and can be very hard to secure, with significantly less available on the secondary market.  The area feels very different to the Left Bank, with a more rolling landscape with more nooks and crannies, meaning you often can’t see what lies over the hill. The soils here are also significantly different, dominated by clay and limestone, with some sand and gravel. These soils stay cooler and retain more water, something that can be very helpful in hot, dry seasons (as in 2022). The finest wines come from the limestone plateau at the heart of Saint-Emilion and Pomerol plateau, with its pockets of rare blue clay. Limestone has an additional benefit of retaining freshness and acidity in the wines, with wines from limestone-dominant soils often having low pH.  Plantings are dominated by Merlot and Cabernet Franc (sometimes known locally as Bouchet), rather than Cabernet Sauvignon (which can struggle in the damp soils, although producers are planting a little more of the variety in response to climate change). Many wines from Pomerol are 100% Merlot (with estates such as Vieux Château Certan notable exceptions), while in Saint-Emilion the blends tend to include more Cabernet Franc. Merlot produces larger, thinner-skinned berries, and therefore Right Bank wines are generally softer, plusher, with a rounder texture, softer tannins, often floral with a redder fruit profile (cherry, plum), and can sometimes be exotic in perfume.   Unlike on the Left Bank, most of the wines are not classified formally, however Saint-Emilion introduced its own classification in the 1950s – one that has become a source of controversy.  Beyond Saint-Emilion and Pomerol, the other appellations can produce some fantastic wines, and – given the difficulty with buying additional land within these two illustrious areas – many of the Right Bank’s leading names have estates here (such as Ch. Lafleur’s Grand Village or Perrières, and LEglise-Clinet’s Montlandrie or Les Cruzelles). These can be a great source of value.  It’s worth noting that vintages are sometimes described as “Left Bank” or “Right Bank” years, and it is true that conditions can sometimes favour one side over the other, however the picture is often more complicated and results can vary according to individual estate, as well as commune.  Read more about Bordeaux or browse all Bordeaux listings

2018 Ch. Mauvesin Barton (in jeroboam) + Champagne Elise Bougy, Le Mesnil – chosen by Damien Barton-Sartorius  “To me, a meal is always about a moment. Sometimes very important ones such as announcing a baby, sometimes it’s more casual as would be a meetup with friends. I like to think that the bottle should never be more important than the moment. It should not frustrate the generous person who wanted to share a special bottle that becomes overlooked – or even worse steals the show... Unless it is the show! The special bottle then becomes a moment of its own. It is an interesting thing (and sometimes fun!) to taste great labels blind, judge them on their value/pleasure. But it tears away what wine should be: excitement. If I am going to drink a Mouton Rothschild 1945, I honestly don’t really care if it’s good or not. It’s a piece of history in a bottle that I will be sharing with friends and I would really like to know this ahead of time so I can be excited about it for as long as possible. Just like planning holidays ahead!  “Christmas is an important moment but the moment is family, not the wine that will be put on the table. I want a wine that will trigger some chat. Briefly – before enjoying the wine as a lovely drink, fuel of diverse conversations. There should be enough of it to spend some time with it. Aim for large format. We all know that even a magnum can be short…  “To be very personal here, I just got married and I will spend my first Christmas Eve with my wife’s family. A bit of home, some volume to enjoy and share: Ch. Mauvesin Barton 2018 in jeroboam is my choice for dinner. Oh but what would Christmas be without Champagne… a sneaky bottle to share only with my wife before the dinner: Elise Bougy Le Mesnil. Now I am excited for Christmas!”  Damien Barton-Sartorius is the 10th generation of his family to run the Bartons’ Saint-Julien Classed Growth estates (Ch. Langoa Barton and Ch. Léoville Barton), while his sister Mélanie is at the helm of Ch. Mauvesin Barton, together continuing their grandfather Anthony’s and mother Lilian’s legacy. 2010 Ch. Latour, Pauillac – chosen by Jonathan Maltus  “We’re drinking Ch. Latour 2010. There are 10 of us – all family – two grandparents, four parents and the rest kids. As a family we don’t enjoy turkey so we have beef Wellington – which I’m hoping this will go well with.” Jonathan Maltus is the man behind the Saint-Emilion property Le Dôme, one of Bordeaux’s original garagistes. 2001 Richebourg, Grand Cru. Domaine Hudelot-Noëllat – chosen by Charles van Canneyt “For dinner, a Richebourg 2001. Perfect to drink now and taking full advantage of the complexity and power of a Richebourg – with a good capon! We had Suchots 2017 – all about the fruit – when we put up the tree, a vintage that’s approachable young and very enjoyable!”  Charles van Canneyt is one of Burgundy’s most talented winemakers. The young vigneron is at the helm of Domaine Hudelot-Noëllat, based in Chambolle-Musigny, and also has a négociant label under his own name.  2015 Ch. Haut-Bailly + 2019 Meursault, Les Vireuils, Domaine Roulot – chosen by Véronique Sanders “It’s so very difficult to choose just one bottle… while many people start their celebration with Champagne I always love to start (and finish) with a glass of Sauternes or Barsac. Right now I am loving Ch. Haut-Bailly 2015 which is so charming and is pure pleasure! Of course I also love wines outside of Bordeaux – white Burgundy being my weakness… I have my eye on a bottle of Domaine Roulot Meursault Les Vireuils to share with the family this year.”  Véronique Sanders is the powerhouse at the helm of Ch. Haut-Bailly, the leading Pessac-Léognan estate.  2018 Paul Cluver Estate Chardonnay, Elgin, South Africa – chosen by Spencer Fondaumiere  “I grew up in Nairobi at a time when the wine scene was not nearly as advanced as it is now. My mother enjoyed her wine. My dad was a beer man through and through. What was regularly available was wine sold in five-litre boxes labelled as ‘late harvest’, with just enough sweetness to interest you to get to the bottom of the bottle – or more accurately the last dredges of the cask. I have now lived in Cape Town for the last 11 years and my wine appreciation has grown a little bit beyond the voluminous late harvest on tap.  “Christmas is a time for family and my mom and dad will be spending the holidays with me and my family. Since I last saw her, Mom has developed an appreciation for cool-climate Chardonnay and I am quite keen to crack open this bottle that has a bit of age on it. I am hoping it will be like nothing she has ever tasted before and I am hoping even more that she will like it. Dad, on the other hand, remains partial to beer, but every Christmas I optimistically open a bottle and hope that this will be the wine that converts him into a wine lover. That being said, there is not too much 2018 Chardonnay hanging about so it may not be the worst thing if this doesn't turn out to be the one.”  Spencer Fondaumiere is one of the most exciting names on Africa’s wine scene. The Kenyan chef-turned-sommelier and serial entrepreneur is now Chairman of the South African Sommelier Association and has two businesses – using his expertise to advise wine-drinkers, restaurants and producers via Slowgold and Wineyard East Africa. A trio of Bouchard’s best – chosen by Frédéric Weber  “For Christmas with my family, I have planned a 2016 Meursault Genevrières to accompany the foie gras that my sister makes herself every year. I like the combination because our Genevrières has just the right freshness and delicacy, especially in 2016, to awaken the tastes and accompany the sweetness of foie gras seasoned with a touch of Sichuan pepper and a hint of fleur de sel, a great match! With the duck, of course a Beaune Grèves Vigne de l’Enfant Jésus 2003. Two-thousand-and-three was my first vintage in the house [at Bouchard], 20 years ago already, great memory of this harvest and Baby Jesus is a nice wink for Christmas Eve! And then a Corton 2013, my mum loves Le Corton and we don't refuse her anything.”  Frédéric Weber is the detail-oriented Head Winemaker at Bouchard, one of Burgundy’s leading, quality-focused producers and négociants. He has been at the company since 2002, taking over fully from his predecessor Philippe Prost from the 2014 vintage.  Champagne Corbon, Brut d'Autrefois, Avize (and a couple of back-up bottles) – chosen by Chris Gaither MS  “Christmas is always a special time of the year for my family. My wife, Rebecca (also a Master Sommelier), who is Jewish, always looks forward to the combo of Hanukkah and Christmas celebrations back-to-back, especially with our young daughters. We tend to favour multiple evenings of delicious food and drink that we can enjoy, albeit with moderation. And she and I rarely finish a bottle when drinking together at dinner, if it's only the two of us sipping. Surprised? It’s partially because we have two kids and run two businesses (Ungrafted and GluGlu), so work doesn’t stop even after dinner! So, on Christmas evening we'll be having a low-key 'Jewish' Christmas dinner, with a few other Jewish families. We are going to order Chinese food from one of our favourite restaurants in Millbrae (Wonderful is the name if you'd like to know), and chow down on some tasty dishes with a few of our favourite bottlings from producers we admire.  “Rebecca and I are huge fans of Champagne, and most times if you ever see us sipping on something together, it's usually just that. Champagne Corbon is a tiny grower based in the Vallée de la Marne (run by Agnès Corbon – ladies rule!), but they sell a good portion of their fruit from their vineyards there. They own two hectares of vineyards in Avize, of which they use to produce most of their wines. The Brut d'Autrefois is based on a 35-plus-year-old perpetual reserve (or solera) that is roughly based on 90% Chardonnay and 10% Pinot Noir. The solera consists of a single neutral oak vat that is 50% drained each year for bottlings of D'Autrefois, and then refreshed with a new year's vintage. Delicious, exuding a bit of richness, with nice texture, and loads of complexity. We were fortunate enough to get a few bottles of these, and I think we'll be drinking the last one we have... for now... The other bottles are ‘just in case’ bottles that we love.  “2018 Domaine Weinbach, Riesling Schlossberg, Grand Cru, Alsace: Who doesn't like Riesling? Any sommelier with street cred will tell you to drink more Riesling – it's routinely underappreciated in the world of wine, and you can get fantastic examples that are made with the same care as Grand Cru wines in other regions, but at less than half the price. Weinbach is one of our favourite domaines within Alsace, and it is currently run by Catherine Faller (again, shoutout to all the ladies making the magic happen in wine!) and her sons, Eddy and Theo. This Riesling is coming from their holdings in Schlossberg, the first Grand Cru to be ratified in Alsace in 1975. The wine almost always has a deftly balanced touch of botrytis, with lovely bruised apple and peach, with a very noticeable meyer lemon twang on the finish.   “2011 Fixin, Premier Cru, Clos de la Perrière, Domaine Joliet Père & Fils: This particular vineyard is a monopole within the village of Fixin, and this bottling is 100% Pinot Noir. It is run by Bénigne Joliet, who purchased the vineyard from his other family members in 2004, with the goal of making the Clos de la Perrière one of the more famous vineyards in the Côte de Nuits in Burgundy. Rebecca had the opportunity to visit the estate and meet Bénigne back in 2014 on a visit. She purchased the bottle of 2011 Clos de la Perrière on this trip. I’m super excited to drink it with her! She’s great at putting bottles away and not touching them!”  Chris Gaither MS was born in Atlanta and started working in hospitality to help pay the bills while at college. He gradually fell into the wine side, becoming hooked and – after a stage at The French Laundry in 2008 – launched into San Francisco’s wine scene, working at top restaurants and earning various awards. He became the fourth black person to pass the Master Sommelier exam when he passed in 2022. Married to a fellow Master Sommelier, Rebecca Fineman, together they own and run two restaurant/wine bars, Ungrafted and Glu Glu, in San Francisco. 2003 Chinon, Les Roches, Domaine Alain & Jérôme Lenoir – chosen by Ivan Massonat  “Of the (many) bottles I intend to open, one is high on my expectation scale: a 2003 Chinon from Domaine Lenoir. It’s a bare bottle, without any label nor cap, that I bought from Jérôme [Lenoir] a couple of years ago, after a few hours of tasting down in his ‘cellar of wonders’. After tasting several decades, 2003 had struck me as super fresh and elegant, like magically untouched by the famous 2003 summer heatwave in France. I would like to open it for New Year’s Eve, with one my best friends from high school who’s also a wine lover – and not a label drinker!” Ivan Massonat is the ex-financier that created Domaine Belargus, the Anjou estate that has fast become one of the Loire’s most famous, shining a light on its varied terroir through a single grape – Chenin Blanc. Stellar Spanish and South American bottles – chosen by Carlos de Carlos  “This year we have some cousins from the USA that will come home for Christmas evening and dinner. As they come to try some good South American wines, I will drive them around some of my all-time favourites for dinner. So the selection will be: Baettig Los Primos Chardonnay 2021 for the aperitivo. A wine that shows the very best of the south of Chile with a finesse and minerality that I love. Then Viña Cobos Chanares Malbec 2018 – one of my favourite wines in Argentina coming from Los Arboles in Tunuyán, Valle de Uco. Really special vintage from a really unique vineyard! And the grand finale will be Vega Sicilia Unico Reserva Especial 2008-2009-2010 [the 2020 release] – not only because the wine itself, but also because it was a very special present for my birthday that a very close friend gave me… and will be tasted alongside my favourite dish, Spanish paella.” The charming Carlos de Carlos is one of the founders of Baettig, along with winemaker Francisco Baettig, a Chilean producer that is one of our favourites. A flight of Champagne, Burgundy and Bordeaux – chosen by Blandine de Brier Manoncourt  “This Christmas my family will begin with a fabulous Champagne, Laurent Perrier’s Grand Siècle Itération No. 26, which we will enjoy as an apéritif around the tree. At the table, our dinner will begin with Corton-Charlemagne from our dear friend Stéphane Follin-Arbelet, the 2008 vintage, which will pair perfectly with a lobster dish. Next is, of course, Figeac! First the 2010 vintage of Ch. Figeac – it is magnificent right now, and goes very well with truffled capon. Finally we will enjoy our favourite vintage of Ch. Figeac, the 1990. We wish everyone a very happy Christmas and a wonderful New Year!”  Blandine de Brier Manoncourt is daughter of the iconic Thierry Manoncourt who established Figeac’s modern reputation. Having studied at Sciences Po Bordeaux, she is Co-owner and General Secretary, especially involved in managing the property’s heritage.  2001 Ch. Figeac – chosen by Frédéric Faye  “My family is very excited this year to serve one of my favourite vintages of Ch. Figeac at our Christmas dinner, the 2001. This is a vintage in its full maturity, a vintage which sadly is often overlooked by wine-lovers but is in fact one of the great references of the property. Fresh, elegant, with a beautiful concentration… it will pair perfectly with ris de veau in a sauce à la morille. Wishing a happy Christmas and New Year to you and your families!”  Frédéric Faye is Managing Director of Ch. Figeac, where he has been working for over two decades, having arrived as an intern in 2002. Blanquette de Limoux, Antech, Brut Nature – chosen by Christina Stanley  “I share a holiday tradition of sipping bubbles with my mum while cooking, before any guests or family arrive. My dad suffered a stroke back in 2014, and she is his caretaker. Last year, when she tasted Varnier-Fannière Blanc de Blancs, she said, “This tastes like every good time I have ever had,” but Champagne is not what we drink while cooking. You know what’s great with a splash of orange juice? Antech Blanquette de Limoux Brut Nature. It has delightfully bright, lemony acidity, an abundance of chalky minerality, and it’s inexpensive. The main grape is Mauzac, locally known as ‘Blanquette’. Wonderful as a versatile aperitif and perfect as a Mimosa base, Blanquette de Limoux plays a starring role in any holiday gathering.”  Christina Stanley is an Advanced Sommelier and the Wine Director at The Slanted Door Napa – an outpost of Charles Phan’s group of legendary restaurants that are a reference point for fine dining and modern Vietnamese food. 2008 Merlot, Miani, Colli Orientali del Friuli – chosen by Michele Dal Forno  “I think I would pick a Merlot from Miani. Enzo, the owner, is truly the ‘last of Mohicans’ of vignerons in Italy, as he is seriously devoted to his vines and the wines he makes are a pure expression of each varietal he grows. I was lucky enough to taste many of his wines last summer with himself and some other friends and I was shocked by the genuineness of them all. In particular the Merlot 2008 was so fresh and rich that I was literally blown away when I tasted it. If you want to understand how an authentic Merlot should taste, Miani is the one.”  Michele Dal Forno is one of Romano Dal Forno’s sons, founder of the legendary eponymous Valpolicella estate  1988 Ch. Montelena, Napa – chosen by Maya Dalla Valle   “After a fantastic 2023 harvest, we are relaxing and celebrating this holiday season. At our most recent team holiday dinner we decided to open a magnum of 1988 Ch. Montelena to commemorate the successes of the 2023 growing season and vintage. With the recent passing of Mike Grgich, it was also an homage to one of the great winemakers of Napa. The wine was stunning, and well appreciated by all of us as red wine producers.”  Having travelled and made wine around the world, Maya Dalla Valle returned to Napa in 2017 to make wine with her mother Naoko at Dalla Valle, as well as embarking on a new project in collaboration with Ornellaia, DVO. 2016 Champagne Henriot, L’Inattendue – chosen by Stefan Neumann MS  “Expect the ‘unexpected’! Henriot’s single expression of Avize called L’Inattendue (translating literally as ‘the unexpected’) from the 2016 vintage is something I look forward to sharing with my family on Christmas Day. Full of energy, this pure Chardonnay gives me on the one hand the comforting softness of spiced pear and golden apple, but on the other hand the razor-sharp freshness of lemon and orange peel. This, in front of the family’s Kachelofen (tiled ceramic stove), paired with a freshly cured trout, might sound simple yet is heaven to me. If life has taught me one thing – you can’t beat an old-time classic.”  Austrian-born Master Sommelier Stefan Neumann cut his teeth at restaurants in Vienna and Salzburg before moving to the UK. He’s worked at many of Britain’s most illustrious establishments, most recently on the floor at The Fat Duck.
