I. Distractions In 1987, when I was 18 and a dollar was worth more than twice as much as it is today, I started reading magazines: M, Esquire, GQ. Nearby, in our somewhat cultured Texas town, a new bookstore opened in a cavernous space that had formerly housed the shag-carpeted roller skating rink of our childhood. Through the front windows, which had before been darkly tinted to give the place an alluring den-of-prepubescent-iniquity vibe, now streamed bright, clean light, showcasing a look and layout that would become the interior design gestalt of today’s national-chain, big-box book superstore. The rows upon rows of open, dustless shelving bearing a veritable warehouse of volumes; the ceiling hung with its industrial innards on display; the enfilade of check-out cubicles; and the wall – the great wall – that displayed a preposterous-to-behold assortment of glossies, quarterlies, journals, newsweeklies, fanzines, tabloids, almanacs, and all other flora and fauna of magazines arrayed upon a rack perhaps 50 feet long.  I went in there to look for a book. I liked books, and, one day, I was sure I wanted to write one. But I got distracted and bought a magazine instead – that August’s issue of GQ, which still stands out in my mind as a thing of formative significance. At that time, the zeitgeist was defined by a Walkman-wearing version of the American Renaissance Man – the highly-ambitious, status-obsessed, money-motivated, health-nut known as a Yuppie. No magazine positioned itself more authoritatively in defining this new sociological creature’s lifestyle than GQ, and it did it with whiter teeth, snappier suspenders, better accessories, bigger polka dots and more caffeine in the ink of its display copy.  I remember that issue less for the photos by Richard Avedon or Steven Meisel, the words of Martin Amis or Frederick Exley, than for this: Erzeugerabfüllung. It was one of the longest, strangest strings of letters from the Roman alphabet I had ever seen. Neither did it seem designed to come out of someone’s mouth. But there it was in Alan Richman’s Wine & Spirits column, accompanied by a lovely still-life photograph of his topic: two bottles of Riesling Kabinetts on a white, sun-dappled tablecloth. Richman’s main point – made almost 35 years ago – still holds true: estate-bottled, table-quality German wines remain some of the least expensive, most delicious wines in the world, chiefly because – then as now – the labels, as he wrote, “cannot be understood by anyone who is not a part-time oenophile, linguist and cartographer”. One US dollar in Richman’s pocket, as I have already said, bought what roughly two-dollars-and-fifty-cents does today; what he was on the hunt for was a good dry white in a range that would now cost somewhere between 12 and 30 bucks, and he easily accomplished that by finding a dealer in New York City who carried a good selection of wines from the Mosel and Rheingau. At the time, I didn’t know the meaning or significance of any of this, but it staked a claim in my brain. The only wine I had ever tasted was the one served at our Episcopal church during Eucharist on Sundays. The flavour it had was of a strange, super-concentrated jam that somehow warmed your upper body. Even as a young kid, I liked it. But the adjectives these German bottles were squeezing out of Richman – “citrus-like”, “honeyed”, “tart-sweet” – weren’t close to describing what was in that chalice, even if you believed in transubstantiation. Was it because Richman’s wine was white, and the parish’s was red? Perhaps, but both colours of grape juice bottled by Welch’s tasted pretty much the same to me. No, I sensed there was something – a lot – I had to learn, and, along with the romance and beauty of the labels, and the contextual air of well-bred taste and cultural with-it-ness featured on the other pages, this, I feel sure, was the decisive moment, the true origin point, when I came to believe that among the many extraordinary things that make life worth living, not just words but wine reigns at the top.  I warned you about distractions, didn’t I? Because that would be my excuse for now informing you, as a quite apropos footnote, that, yes, there was something unusual about our church’s Communion wine. It was, as I have confirmed with the church, actually port (Taylor’s Tawny, to be more accurate), cut, according to tradition, with water. There is a good and fascinating reason for this. In 1701, when the War of the Spanish Succession kicked off, France also became an enemy of England, and its wines, as a result, were no longer made available for import. The Anglican Church searched for and found a replacement, the fortified wines of its new ally, Portugal, and port continues to be an acceptable option to pair with the Host.  II. Distillations A satisfying story, not unlike a satisfying life, is one that surprises you with the mystery of its unfolding. A thing pulls in a certain direction long enough to reach the proximity of something else which then turns toward a new destination. I had actually gone into that bookstore, as I said, to look at books. But I came out, even though I didn’t yet know it, with a different compass point. Within a few years, shortly after graduating from college, in 1992, I got hired by The New Yorker, where I stayed for almost nine years. I then met my future wife, who wisely laughed at the thought we might be able to survive in New York City on my meagre salary, so I went to Vogue, and soon after became the founding editor of Men’s Vogue. After 23 issues, and four years, the financial crisis laid an axe to many magazines, including that one. Eventually, I took on the editorship of Town & Country. Then, finally, in 2016, I moved up to Esquire, the magazine, as it happens, that didn’t offer me a job when The New Yorker did, and became that storied magazine’s editor in chief, until – well, you best read about that in The New York Times.  As far as distractions go, magazines were a good one. They made me who I am, gave me a tremendously worldly education, honed my taste, introduced me to all manner of accomplished people, required me to build quite a wardrobe, and paid me pretty well to do all of this, often with a glass of wine not far out of the picture. There was really no other way I would have ever got to taste all the bottles I have (a lot of the big names people whisper about from Burgundy and Bordeaux, Champagne and also Piedmont, Tuscany and Napa). I built a modest cave à vin of my own by buying the Smith Haut Lafittes of the world way before hedge-fund hoi polloi ran up the prices, and by having access to rare offerings, like 12 bottles of Fiorano, the legendary white wine Alberico Boncompagni Ludovisi, prince of Venosa, made before ripping out all his vines. I smelled the musty perfume of Margaux in the cellar as I watched the workers rack the wine by candlelight. I lured Jay McInerney away from the Wall Street Journal to become my wine columnist; and I once stood in Bordeaux’s town square, tight on 2002 Pétrus, trying with great focus to commune with the statue of Michel de Montaigne while my French friend, a true oenophile, extolled the majesty of the Big Mac’s special sauce.  As the editor of a magazine, curiosity is your profession, even to the point of distraction. Editors – writers, too – are prone to it. It’s a hazard of the gift, and having a jumble of ideas, if you’re any good, is key to making a magazine of any real intellectual or creative daring. Now as a husband and father of three, working from home and trying to be ‘present’, and a still youngish former editor and occasional micro-influencer trying to stave off the solitude to fathom and plot the next phase of a fruitful future, this skill of mine, the strength of which became even more magnified over two decades, is something of a family project.  The way I most often hear the word ‘distraction’ now, for instance, is when it’s being hurled at me in verb form by my wife or daughters accusing me of being more of a phone-enslaved screen vegetable than they are. (I respectfully disagree.) But it’s a sore point for two reasons. One, what I did as an editor is, in a nutshell, now what a smartphone essentially does. Not very imaginatively, of course, and not with taste or charm or originality, but with a bloody, money-grubbing ruthlessness that stalks every step of our digital peregrinations and doesn’t give a twist if the algorithms that are its brain make us its slave by retrofitting our attention spans for kindergarten.  The smartphone – not the former me or any of my fellow kind still in the media biz – is now the true croupier of culture, dealing out a targeted shuffle of Pavlovian temptations to the point of daily mental exhaustion. And, though this thing is in many ways my personal nemesis, I am, against every fibre of my being, too often its obedient servant. Aiming not to live according to the famous line by T.S. Eliot – “distracted from distraction by distraction” – I recently decided to at least take a serious inventory of my favourite ones, both those of the pre-digital sort (tennis, The Walking Dead, checking the mailbox, my sock collection) and those of the post-digital sort (the any and everything I do because my phone wants me to). Then I caught myself watching tennis on my phone and realised this might be harder than I thought. It’s enough to drive a person to drink, thank god! With that in mind, I like to keep a special something for the occasion around, in this case – what else? – two bottles of Riesling Kabinett, for it had struck me as more than a little weird that I’ve probably tasted fewer than a handful of German wines in my entire life. Part of the reason is that those I had were bad, and, like a lot of other simpletons about this great wine region of the world, I’d come to think of Riesling as a cloying elixir equal parts green Jolly Rancher, apple cider vinegar, and hairspray. This, I knew, was wrong, not true and, in terms of wine equity and inclusion, on the wrong side of history. But, if you happen to live in a place like I do – a bourgie swathe of Connecticut bordering New York City where the shops cater heavily to Cali-Fran-Taly banker’s tastes – it might take you a few stops to find what Richman recommended, an erzeugerabfüllung (estate-bottled) Kabinett (wine made from grapes with a minimum must weight/sugar content) Riesling, and when you do it will probably be coated in a fine sift of years-old dust. I bought a green (Mosel) bottle for US$16 and a brown (Rhine) bottle for US$20, both handsomely labelled. I opened them a few minutes ago and took several investigative swigs. The words bright, invigorating and snappy came to mind. One is indeed sweeter, and, though not my usual jam, it is tamped by a pleasing peachy tartness, and the classic overtone of honey isn’t making my palate feel doused with syrup. The other example is, as Richman said so long ago, a very finely layered creature with mineral clarity and an echo of baked bread, something a gluten-free person like me finds particularly appealing. A rather obvious thought: why haven’t I been buying this instead of throwing a ton of endless money at affordably bad white Burgundy, which is mostly a product aimed at fulfilling a desired outcome, like White Claw hard seltzer? III. Words But don’t let me get distracted, again. A writer really has to be careful about such things. Just think about it. Unlike, say, a painter or musician or actor or photographer, the process of writing requires zero physical exertion, no chance to score an endorphin release while sitting staring anxiously at a blank page. Of the many things in life that vie against the counter intuitive impulse to be glued to a desk, Cyril Connolly, in Enemies of Promise, his classic study of the things that distracted him (and others) from becoming a great writer, names the temptations but does not say much about why they’re so deeply tempting to someone who would otherwise be sitting alone in an empty room. Praise, money, fame, social prominence, affairs and journalism are the most common boltholes, according to Connolly, who, as a famously late sleeper that married three times, might have also added the bliss of unconsciousness and excessive alimony. In 1938, the year the book was published, he would never have imagined how hard the task might get without a cigarette. Smoking is a death wish, I know, but when you want to off yourself for still having a hundred pages to go, being able to snap open a nice lighter, flick some ash, stub a butt and inhale some lungfuls of focus-enhancing nicotine must have been kind of helpful. Connolly also doesn’t have much to say about drink except that artists who drink to excess do so “out of the consciousness of wasted ability”. According to that, the 20th century’s most famous literary alcoholics – Dorothy Parker, Truman Capote, F. Scott Fitzgerald, William Styron, Elizabeth Bishop, James Joyce, Raymond Chandler, William Faulkner – might have left behind even greater treasures than they did. Because Ernest Hemingway did almost everything with more gusto than any of his peers, including running up his bar tab, as a drinker he belongs in his own sentence. He is the novelist who most romanced a good drink or nice bottle of wine as one of life’s great pleasures. Who didn’t want to have a vermouth with Jake when reading The Sun Also Rises? (Don’t, it’s gross, at least if you order it at one of those kiosks in Montmartre where the bottles are hung upside down with spring-loaded dispensers.) Or, track down a bottle of Valdepeñas, Hemingway’s favourite variety of Spanish wine. Or, get a drink at the bar named after him at the Ritz, in Paris, and then go somewhere on the Left Bank to order “a dozen portugaises and a half-carafe of the dry white wine”.  In the early work, he is not boastful about drinking so much as he is the possessor of an unusual appetite for a good buzz. He is also, like Connolly, aware of the need to keep writing separate from drinking, and drinking within his control. It is hard to read the first paragraph of A Moveable Feast, in which he describes an “evilly run café where the drunkards of the quarter crowded together and I kept away from it because of the smell of dirty bodies and the sour smell of drunkenness”, except as a kind of terrifying admonition to himself. It is tragic that he didn’t heed his own advice. Late in his life, Hemingway became fond of rum daiquiris at the Floridita, his favourite bar in Havana, which might explain his taste for a prose style that soon became too often cloying self-parody. In one of the most extraordinary drinking sessions ever committed to words, in the roman à clef Across the River and Into the Trees, a 50-year-old Hemingway, who was smitten with a teenage Italian countess from Venice, fictionalises his infatuation with a last muse. In one stretch (that covers an evening-to-dawn crawl from Harry’s Bar, the grill at the Gritti Palace, a gondola and a hotel room), one half or another of the couple imbibes: one scotch whisky and soda; six Montgomery Martinis (15 parts gin; 1 part vermouth), two of which are described in size as ‘super’; a bottle of Capri Bianco; two bottles of Valpolicella; two bottles of Roederer Brut ’42; and two bottles of Perrier-Jouët. That is, I suppose, one extreme, and, clearly, not one to be tried at home.  The other might have been espoused by Dr. Samuel Johnson, the great critic and lexicographer. As a young man, he’d drained “many a bottle of wine” but loved port especially. (Perhaps Johnson, a devout Anglican who was born in 1709, in the midst of England’s 14-year war with Spain, also first encountered port as a boy at the Communion altar.) He describes himself to friend and biographer James Boswell as having been “apt to go to excess in it”, adding that, “therefore, after having been for some time without it, on account of illness, I thought it better not to return to it”.  Boswell, who worried about his own dependence on alcohol, even keeping a journal of his intake in an attempt to enforce moderation, argued for a third way, which some of the Romantics later adopted. Wine, he claimed, “produces truth; in vino veritas”. Hoping to persuade Johnson of his point, Boswell once convinced the critic to come down off the wagon for just one glass of claret, so Johnson “might judge, not from recollection, which might be dim, but from immediate sensation”. Boswell reports what happened after the glass was emptied: “Johnson shook his head, and said, ‘Poor stuff! No, Sir, claret is the liquor for boys; port, for men,’” adding, “‘A man would be drowned by it before it made him drunk.’”  That actually reminds me of something I think I forgot to mention about Riesling Kabinetts – they’re also highly admired for their low percentage of alcohol. When the Bordeaux Chamber of Commerce ranked Bordeaux’s leading estates by price for the Exposition Universelle in Paris in 1855, I doubt they anticipated we’d still be using it over 150 years later. Napoleon III had asked the team to put together an exhibition for the world fair, and the Chamber of Commerce neatly passed the buck to the region’s courtiers or brokers, asking them to create a list of the region’s best wines, broken into five tiers. They did so in just two weeks, basing the list almost exclusively on price.  The original classification ranked 58 properties, from First to Fifth Growth, or Premier to Cinquième Cru Classé (with Cru Classé literally translating as “classed/classified growth”). At the very top of this quality pyramid was Ch. Lafite, deemed the “premier des premiers” of the time. The properties were almost exclusively in the Médoc, with Ch. Haut-Brion in Pessac-Léognan the one exception.  It is often said that there has only been one change since the 1855 classification’s creation, however that’s not quite true. Ch. Cantemerle was added in 1856 (having been left out of the original ranking by accident). Ch. Pichon split in two, the Léoville estate into three and Batailley was also divided – but two properties also merged (Pouget and Pouget Lassale), while Dubignon was absorbed entirely by other addresses. Interestingly, Ch. Gloria consists exclusively of vineyards that were classified originally, although the château wasn’t classified in 1855.   The most significant change, and the one most often mentioned, was in 1973 when Ch. Mouton Rothschild was upgraded to First Growth status. The property had only just been acquired by the Rothschild family in the 1850s, so was intially ranked as a Second Growth but Baron Philippe de Rothschild made it is life mission to get it officially recognised as one of the Left Bank’s five leading addresses. For years the property’s labels had read “Premier ne puis, second ne daigne, Mouton suis” (“First I cannot be, second I do not deign to be, Mouton I am”), which was changed to “Premier je suis, second je fus, Mouton ne change” (“First I am, second I was, Mouton doesn’t change”) after the Baron’s bid was successful, and the estate’s premiership was legally recognised.  There are 61 estates in today’s classification, with five First Growths, 14 Second Growths, 14 Third Growths, 10 Fourth Growths and 18 Fifth Growths. Unlike in Saint-Emilion’s classification, a property is free to buy and sell vineyards, with their expansion or contraction not impacting their classed growth status.  Although the classification has never been reviewed, it remains largely (and surprisingly) accurate – the premium price associated with higher status and quality seemingly providing sufficient incentive for producers, and the market effectively deciding on a property’s status.  Today there is also an unofficial group known as the “super seconds” – estates that are thought to produce wines that are as good as those of the First Growths. This includes Pichon Baron, Pichon Comtesse, Lynch-Bages, Léoville Las Cases, Léoville Barton, Ducru-Beaucaillou, Cos d’Estournel, Montrose, Palmer, Pontet-Canet and La Mission Haut-Brion.  While we tend to consider only the red wines of the northern Gironde in reference to the 1855 classification, the sweet whites of Sauternes and Barsac were also ranked. The wines were only put into two classes, with 21 estates included. Nine estates were deemed worthy of First Growth status, 11 as Second Growths, with Ch. d’Yquem earning its own special category as “Premier Cru Supérieur”.  As with the red classification, the number of estates has grown as they have divided over the years (such as the Doisy estates), with one disappearing entirely (Pexoto – its vineyards are now part of Ch. Rabaud-Promis). There have otherwise been no changes.  The sweet wine classification is of little consequence today, however the estates collectively represent 45% of the surface area of Sauternes and Barsac, and produce 30% of the area’s wines today.  Beyond the 1855 classification, the Left Bank also has its Crus Bourgeois and Crus Artisan, as well as the 1959 Graves classification (read more about these here). The Right Bank still only has the Saint-Emilion classification – one that has caused enough controversy to put Pomerol off doing anything similar. Philippe Guigal hadn’t yet met his future wife – it would be another nine years before he finally walked down the aisle but he had long known what vintage he would serve at his then-imaginary wedding. The 1999 season in the northern Rhône was as perfect as it gets and when he was picking the beautiful berries that were worthy of photographing he told his father it would the wines of the 1999 vintage would be served on his wedding day.  Baltimore-base wine critic Robert Parker seemed to agree with Philippe that Domaine E. Guigal’s 1999s were worthy of the most important day of a man’s life, handing out three perfect scores to its trio of Côte Rôtie wines, known affectionately as the La Las. It wasn’t just
one northern Rhône producer who basked in the glory of the 1999 summer: Michel Ogier’s Cuvée Belle Helène and Rene Rostaing’s Côte Blonde both nabbed their first–ever 100 Parker points and Michel Chapoutier’s Ermite l’Ermite Blanc received its first, of what would be many, 100-point scores.  While Parker was accustomed to handing out awards to the French wine fraternity, the tables were turned in 1999; he was named an officer of the Legion d’Honneur by French President Jacques Chirac “being the man who taught America about French wine”. France’s highest award, he joined an illustrious list of recipients including Queen Elizabeth II, American President Dwight D. Eisenhower and French poet Victor Hugo.  Another American Robert was making waves in Europe in the autumn of 1999. Robert Mondavi Winery bought a stake in Tenuta dell’Ornellaia, one of a handful of so-called Super Tuscan estates made famous for their law-breaking use of non-Tuscan grape varieties and
the superlative quality of the resulting wines. But it wasn’t just Antinori who was celebrating his windfall in 1999: it was a magnificent season growers across Tuscany. The winemakers of Brunello di Montalcino enjoyed a superb follow-up to the opulent 1997 vintage in an otherwise unremarkable decade for the area.  Burgundy was also bringing the century to a close with flourish: it was a record year with around 20 million more bottles than the five-year average. The late Henri Jayer, affectionately known as the "pope of winegrowers" recorded his thoughts on each vintage in notebooks and, in 1999, he said: "One has to go back to 1934 to find a similar association of quantity and quality."  If growers did not thin their crops, however, the vines struggled to ripen their loads while producers that normally ferment their wine with a portion of whole bunch had to destem to make room in their vats.  From the off the wines were succulent and seductive but they had greater staying power than many envisaged due to their rich phenolics and fine acidity. In 2018, Burgundy critic Stephen Tanzer said that the reds had just entered "their periods of peak drinkability" and this is a great time to crack the 1999 reds from the Côte d'Or. It was a truly great vintage to see out the 20th century.

The previous vintage - 1998 - was marked by a hard frost and, as is often the case after a small crop, it is followed by a large one - like 2017 after 2016.  "The most important factor in 1999 was consequently whether you limited yields or not. We
had been very vigilant at the domaine and didn't hesitate to do a severe green harvest. The weather during the season was beautiful and we harvested on 20 September. It was not an early vintage and maturity was reached calmly.  "The wines are concentrated, complete, elegant and refined with black fruit dominating and a
beautifully spicy structure. It was quite a serious vintage in terms of its expression while also retaining a beautiful elegance; it is a quiet force that inspires respect." On Musigny "When it comes to the winemaking, there was no pigeage because I think that Musigny is a
sensitive terroir that doesn't like much intervention; you have to have a lot of empathy for the wine and to be forceful with it would risk having vegetal tannins and bitterness, which I perceive as a form of anger. By its structural nature, if you were too brutal with it, the 1999 vintage, could very quickly have become monstrous. [On the other hand] Bonnes-Mares likes and needs more intervention to best express itself and so I punch down.  For me, making wine is a message of peace and empathy, particularly for Musigny. One name that kept cropping up when speaking to winemakers about wine and cheese pairing was Bernard Antony, a man who now supplies 20 of the world’s 3* Michelin chefs as well as working alongside many of the world’s top winemakers matching cheese and wine at events for Guigal, Angelus, Humbrecht and many more.   We caught up with Jean Francois Antony (Bernard's son and protege) to find out more about Affinage (the ageing of cheese) and their perfect cheese and wine pairings. 45 years at the service of taste Bernard Antony is one of the world’s great cheese makers. Strictly speaking, his mastery
is in affinage, that is finishing and ageing cheeses. From humble beginnings working as a travelling grocer in Alsace, in 45 years he has gone on to become one of the most recognised men in the world of fine cheese.  Bernard Antony was the protegé of the late great Maitre Pierre Androucet – known as “the Pope of Cheese”. Bernard says of Pierre: "To me, he was like a father. He was the man who created me, who taught us everything, to my wife and me. He didn't like me to say it because he wanted to give me all the credit for my success”.  Following on from Androucet’s advice and support, Bernard set up his own cheese ageing cellars in the early eighties in the southern Alsace village of Vieux-Ferrette. The ageing cellars are made up of seven different chambers all at different humidity and temperature levels – ideal for raising and ageing various different styles of cheese. Only when the cheeses are deemed ready and at perfect ripening are they released to the markets and delivered to restaurants. Ageing of cheeses can range from just a few months for the fresher goat’s cheeses to several years for some hard cheeses. Speaking with Jean Francois Antony, Bernard’s son, who works alongside his father, running the day-to-day operations of the cellars, he identifies that the skills in good affinage revolve around a number of key elements. First of all, “raw (unpasteurized milk) is essential if one is to speak of cheese with authenticity…taking into account the breed of animal, the animal's diet, the talent of the cheesemaker and then of course the controlled process of ripening are also key”. The cheeses arrive at the cellars already halfway through ripening and their ageing cellars go into action to give them the final touch. They provide the perfect environment and temperature for ageing as well as the most important element in the Bernard Antony cheese cellars, the natural yeasts that live there helping the cheese mature distinctly and in the best way possible. website. They often pair the cheeses with fine wine so we thought who better to ask for advice on the ultimate cheese and wine pairings than the man himself.  Below is the Bernard and Jean Francois Antony’s essential guide to food and wine matching, split up between the different styles of cheese, with additional advice passed down from Pierre Androucet.  The Floury crust family of cheeses Camembert        Brie de Meux (un peu sale)         St Marcellin and St Marcellin (runny)     Petit Mosellan         Coulommiers         Chaource
 The classic pairing would be Champagne (Blanc de Blancs, Aged and even Rose Champagne) however Bernard Antony advises that you remove the crust as it can make the wine appear more harsh. The bubbles work brilliantly in refreshing the palate from these rich cheeses and the yeast flavours from the Champagne also work really well. Avoid tannic reds with these cheeses. One of Bernard's favourite matches include a Gevrey Chambertin 2012 from Domaine Denis Mortet with the St Marcellin. He states a white wine with both gentle oxidation and good acidity works particularly well with Petit Mosella (Saint Peray from
Domaine Tunnel or Alain Voge) or a fruity red wine with well-coated tannins such as a Beaujolais Cru wines with the Chaource and Colombier fermier. The Washed Crust family of cheeses Epoisses       Langres         Livarot     Munster  Maroilles    Vacherin         Pont-l’Eveque According to Androuet: robust and virile wines, with sap and generous bouquet work best with these potent washed crust cheeses. They require “solar wines“ which can harness the power of washed crusts. Gewurtztraminer Grand Cru from Albert Mann, Chambolle Musigny from Liger Belair would both work well. Pinot Noir from Zind Humbrecht, Bollinger 2008 Grande Annee also a particular favourites with Bernard Antony. The pressed crust family of cheeses Comte     Emmenthal        Beaufort         Gruyere Suisse According to Androuet the matches depend on the evolution of the cheese. Dry white or red wines with bouquet work well, red wine brings a balancing touch of bitterness. These cheeses flatter any red wine by erasing astringency and promoting fruit therefore making White or Red Burgundy a good match. With more ageing of the cheese, wines from the greater South-West, the Rhône Valley and Languedoc Roussillon become better matches. Other personal
favourites from Bernard Antony include Vernaccia di San Gimignano (Italy) White
wines from Valais (Switzerland), and Savignin wines from the Jura. The pressed (uncooked) crust family of cheeses Morbier   Tomme de Savoie fermiere       Mimolette demi étuvé         Salers     Roblochon  Sainte Nectaire Pairing again depends on the maturity of the cheese. The older the cheese the richer the wine. Chateau Latour 2001 is Bernard’s match with Morbier. Saint Joseph Pierre Gonon 2013 works well with Reblochon and Chateau Canon La Gaffeliere Grand Cru Classe St Emilion 2008 works well with Saint Nectaire. The family of blue cheeses Bleu d’Auvergne     Roquefort        Fourme d’Ambert      Blue de Gex          Stilton    Gorgonzola These are best paired with sweeter fruited wine or sweet wines. Avoid red wines as the mould changes the structure, the aromas and brings out the bitterness. Top picks are Rivesaltes Vins Doux Naturels, Pacharenc du Vic Bilh or aged Sauternes even red Vins Doux Naturels such as Maury, Banyuls work well with blue cheeses. The family of Goat and sheep cheeses Ossau-iraty         Brebis cremeux et parfume Brebis Corse     Chevre Frais    Chevre Moelleux et onctueux   Chevre Affiné. Vieux et sec   St Maure de Touraine Banon de Provence Chevrotin des Aravis With this family of cheeses the wine must tame the acidity of milk. The wine must work with the texture of the fat and complexity of the flavours. Androuet confirms the well-known phrase – match local wines with cheese of the same origin, particularly very dry and fruity whites. Dry white wines from the Loire – include the smoky Pouilly Fume, Sancerre, Menetou-Salon, Quincy and Reuilly work well with the goats cheeses from the region. From Burgundy, try the lighter Aligoté, Saint-Véran, Macon villages and from the Alpine pastures the white wines of Savoie or lighter reds of the Loire – Bourgueil and Chinon. Bernard Antony’s particular favourites with these cheeses include wines closer to home including Riesling Vendange Tardive 2007 from Barmes Buecher, 2002 Brundlmayer Gruner Veltliner Kaferberg 2002 and Pinot Gris Grand Cru Osterberg 2016, Domaine Agape. Colin Scott should be one year into his retirement. After 47 years at Chivas Brothers, 31 of which were spent as the Master Blender, he should be enjoying a well-earned rest. Instead, the ebullient Scott is lighting up the screens of the FINE+RARE team as he talks about a certain 50-year-old blended whisky he has created for remarkable spirits curators The Last Drop Distillers.   “It’s just fantastic to come to The Last Drop and find these nuggets of gold and all these wonderful casks of very precious liquid that have phenomenal complexity and flavour,” Scott says with unabashed glee.   Despite his near-50 years in the whisky industry, this is only the second 50-year-old blend Scott has had a hand in producing. Well-aged whisky was, until relatively recently, only a small part of Chivas’ business.   “By the time we’d filled a cask and it had matured to 12 years, most of that went into Chivas 12. Once it reached 21 years old, we put it all into Royal Salute. So, there was very little maturing. But of course, as time goes on, the stocks have been held back and the super-premium part of the inventory has grown.”   Scott joined Chivas Brothers in 1973 and became their fifth Master Blender in 1989. But he would have to wait a further 13 years before a 50-year-old whisky project presented itself. The result was The Royal Salute 50 Year Old, released in 2002 – a dual commemorative bottling for Queen Elizabeth II’s coronation and Royal Salute’s 50th anniversary.   Today he’s talking about his latest 50-year-old creation, The Last Drop’s 22nd release and first in-house whisky: a 50-year-old blended Scotch. After a whole three months as a man of leisure, the “retiree” joined the Sazerac-owned company as their first Master Blender in autumn 2020.   “When I joined in September last year, it was really the beginning of finding out what all these nuggets were within the inventory. Sorting through the very special and remarkable casks and finding out a little bit about what they were and what they did and how we could bring them together.”  Scott explains that everything in the blend started out as either a single malt or a single grain whisky, distilled at different distilleries around Scotland over 50 years ago. “At various stages along the way, blends have been made but then of course the balance has been put into cask and stored away for further maturation. So, what we have is a mixture of some of these malts and grains, all with their own unique characters and flavours, that we bring together at the last moment.”   Tasting the blended whisky alongside Scott is like being escorted on a journey back through time – to an age when a lot of distilleries were doing their own maltings and adding peat to the kiln to get a little smoky flavour.   “To me, blending is all about taking the flavours and then balancing them,” he says. “What you have here on the nose is a tsunami of flavour. But, when you taste it, nothing actually lingers and stays on top.”   Scott encourages tasters to add water to remove the aggression of the alcohol and maximise the release of the aromas and characters. When he is tasting more than 50 samples around a nosing table, this trick is vital to reduce all the whiskies to 20% alcohol and allow the flavours to present themselves.   In the case of The Last Drop 50 Year Old, its mellowness, richness and depth means you don’t necessarily need to cut the 48% dram.    “When we blend, we don’t add something, sniff it and then add a bit more of that. What we do is actually write down the whole formula in its entirety. We then pilot blend it. When we add the last addition, it will change the balance of everything you have already. So, you don’t know the final answer until you add that last part of the formula. And then once you’ve got them all together you can evaluate what you have actually created.”  For Scott, the act of blending and evaluating is an entirely personal thing. “All whisky – grains, blends – are fantastic. They are all different and they all bring their own song to the party. The only reason one is better than other is your own personal experience.”   Scott, for instance, isn’t “a fan” of the smoky Islays. “I don’t think they’re bad,” he adds. “It’s all about personal taste. There’s not a bad whisky in the world.”  The Master Blender talks at length about whiskies having different personality traits that require nurturing and, ultimately, respect.   “If you take a single malt as distillate at birth – that has a flavour package. It’s like you when you’re born – you have a character. If you put that new distillate into a cask, over the years this distillate will react with the oak in the cask and take influences and nuances which will then promote other flavours in the new spirit.  “So as time goes on, the volume actually goes down, the strength goes down, but that flavour package actually intensifies and intensifies and multiplies and multiplies.”   When it comes to age, there is some debate about how old you can go. For Scott, the 50-year-old is undoubtedly a rare beast, but he doesn’t see any reason why you can’t go older and rarer if the whisky has been sufficiently nurtured.   “If the angels didn’t interfere, in a quality cask, you could take it to 60-, 70-, 80 years,” he says. “If you’ve got quality casks, you don’t get that wood influence. You get a little touch of the oak but what you have at the end of the day is this small amount of highly intense, complex flavoured whisky that started as the new distillate and just grew with all the different influences from the oak and the cask whether it is Sherry or Bourbon.”  While there have been scientific advancements during Scott’s career, he says there are still a great many unknowns about the maturation and flavour process, and you get the impression this only adds to the allure for him.   “Because it’s nature, we don’t actually know what’s going on,” he adds. “It’s massively complex and the technical people still don’t know the number of components in Scotch whisky. I think they’re up to about 800 now. Serge Valentin has been one of the few truly independent voices in the Scotch whisky world since the early 2000s. For two decades and counting, the Alsace-native has published his tasting notes and scores to an astoundingly large and loyal audience with his characteristically good humour and impartiality in what can be a deafening echo chamber.   Despite being one of the most well-respected authorities in the industry, Valentin has always written about whisky in his spare time, very much considering it a pastime that he dabbles in for fun. This is somewhat of a surprise, given the many people who part with thousands of pounds based on his views alone.  “Contrary to what many believe, I’ve never been a pro and have never actually worked in whisky,” the jaunty Valentin is quick to tell me. “It is all a kind of super-hobby to me and if you ever see me doing gigs, for example at whisky festivals, it is always for free, for fun and for friends.”   Valentin’s “proper work”, as he calls it, is in advertising and marketing, where he owns two agencies which employ around 2,000 people. These agencies, he says glibly, are “supposed to pay for my whiskies…luckily, they do”. It was a very different landscape when Valentin started writing about Scotch in 2002. Single malts had been marketed for 30-plus years but there wasn’t the seemingly insatiable demand and record-breaking prices that are commonplace today. It all began when Valentin, armed with bottles of his favourite Old Clynelish and Brora, sat down and shared his musings on his aptly named website WhiskyFun. This wasn’t a vanity project or a vehicle for freebies, this was a man writing about the whiskies he loved, just because he wanted to. From humble beginnings, WhiskyFun has become one of the most well-respected hubs for commentary on Scotch. Valentin follows a 100-point scoring system, like some of the great critics in the world of wine. For Valentin, however, 80/100 is a good score. His methodology is largely unchanged. He will spend an average of 30 minutes tasting a whisky (he does, on occasion, score rums and other spirits) – this can increase up to an hour if it’s a “good one” and take nearer 10 minutes if it is a “bad one”. He always compares several similar spirits, almost always from the same distillery, and never scores “out of the blue”. He tastes “alone, using the same parameters” (place, time of day, glassware, water etc.) and always writes as he tries, and then publishes once a day.  His write-ups are always short, honest, and unmistakably him. After all these years, it’s dumbfounding that he has the time or inclination to produce the near-constant stream of reviews that appear on his website.    It’s fascinating to see which liquids he scores – and, sometimes more intriguingly, the ones he doesn’t. “The choices rather depend on what I get and what I source, but my sample library is much larger than my tasting capacity,” he explains.   This all started as a passion project for Valentin and it’s abundantly clear that that fire burns just as bright today. He never takes himself too seriously and is evidently ill at ease with any comparison between himself and the greatly respected critics in the world of wine.    This is, in part, because the role of a critic in spirits is nowhere near as established as it is in wine. There are leading voices in the Scotch whisky world who undoubtedly carry considerable clout, but they aren’t critics in the traditional sense. While they might be prolific in their output and have seemingly healthy book retainers, they rarely score spirits and if they do, their tasting notes will be almost entirely positive (often because they are in a producer’s employ). The closest the spirits world has to a Robert Parker or Jancis Robinson MW is probably Valentin – although, he wouldn’t agree.   “I would say the roles are more and more the same in wine and spirits,” Valentin says, “even if there are fewer actual ‘critics’ in spirits. But it is coming in whisky.”  Valentin does feel there is a need for scores in collectable spirits, as – like wine – there isn’t always the opportunity for people to try before they buy. But the issue is not black and white, as is true of many things Valentin and I discuss.   “I see that scores [in whisky] become more like stock market recommendations these days,” he says.“I’m not too happy about that but that wouldn’t be the case if spirits, especially whisky, had remained a reasonably priced commodity,” he says, before adding: “But the cardinal sins are what they are.” It’s clear whisky drinkers respect Valentin’s voice, as they flock to his site in droves. What’s less clear, however – as an outsider looking in – is how producers feel about Valentin’s refusal to kowtow and sugar-coat his reviews.  “Producers have never quite known how to deal with independent voices,” he explains. “In general, they prefer influencers that they can pay and control, even if their audiences are smaller and less ‘on target’,” he adds, “for which I can’t blame them. Fortunately,” he continues, “not all distillers are the same. Some corporations are smarter than others and that often depends on the people within.”   When asked why he thinks people return to his site, which doesn’t have any of the bells and whistles you might expect from an ad man and is as no-frills today as it was two decades ago, Valentin says, as self-deprecatingly as ever: “I’m not really aware of everything that’s happening in the reviewing landscape, I have to say. If indeed people keep coming back to my assessment, that’s partly, I believe, because I started early and simply because they trust me. Trust is number one.”   In many ways, Valentin’s website is a collection. It’s a receptacle for his innermost thoughts and feelings about the things that matter most to him. Valentin has always been collector at heart. With an interest in stamps from childhood, he then graduated onto watches, wine and then whisky. The father of three has a broad and eclectic range of interests, including music (“all kinds”), advertising, motorcycling, wine, watches, food and travel which he has nurtured and indulged. Throughout the years, Valentin has had a front-row seat to the evolutions within these industries and the so-called art of collecting.   “Old-school collectors used to buy what they liked, never what was meant to see its value rise,” he says. “In the old days, you had to travel, to make phone calls, to go to festivals etc. Today,” he says somewhat ruefully, “you can buy anything, as long as you’ve got the money.” Valentin was ahead of the curve when he made the choice many years ago to buy as many different Old Clynelish and Brora single malts as he could, simply because they were his favourites. At the time, and up until 2005 to 2010, all whiskies – even the rarest – remained relatively cheap. After 2010, it was silly season and whiskies you could previously source were nigh on impossible to find or prohibitively expensive for some.  Valentin’s favourite whiskies have become some of the most desirable on the secondary market. Old Clynelish, produced before the distillery was rechristened Brora, have gained a huge following globally as people were charmed by the story and the characterful liquid the two distilleries produced. Now Brora is set to be re-opened, these single malts will only become more valuable. While his collection is no-doubt impressive – exact bottlings are not disclosed – there are some unicorns which still elude Valentin.   “Rather bizarrely and inexplicably, I prefer fatter spirits and fresher wines,” Valentin says, “in both cases with as little straight oak influence as possible. So, fat distillates, such as some coastal malts, some Jamaican rums etc. In wine, that would be the bright whites, Jura, Savoie, Rueda, Pacherenc, Irouleguy, Alsace, Wachau and Andalusia.”    “I know oak is crucial,” he adds, “you just shouldn’t feel it as such, according to my personal taste. But I insist, that’s personal.” Oak is a topic Valentin returns to several times. He feels it is the low-hanging fruit when it comes to innovation in the Scotch whisky industry.   “Sure, there are a few innovations around the casks,” he says, “but all makers use more or less the same.” The woods used are usually more active, which allows producers to sell much younger whisky for a good price while widening the ranges at the same time, he says.   “I’m not saying that’s bad,” he quickly adds, “but not many people are talking about the distilling regimes, the stills and so on, which was the number one topic 20 years ago.” He continues: “It is now all about wood. But, when we talk about wood that includes their flavouring with other spirits, wines, or even whiskies from other distilleries such as some peated ones, which is the latest trend, to peat single malts by doing some in-cask blending rather than bother with brewing and distilling some peated malt. “So, cutting corners for sure but on the other hand, I believe the average quality has risen pretty sharply. So, all remains good and well…”  This seems to be Valentin’s baseline. The whisky world might have changed but he believes it is the same at its core. There is an increase in branding and marketing (which is likely a source of joy and consternation for an ad man), there are more malts, and for the past five or six years, more distilleries from almost all countries.   “I’m not bored yet,” he says in his frank way, “and in general, whisky has got better on average, even if there are fewer utter glories and fewer total duds.”  If a man with Valentin’s reputation of no-holds-barred honesty is broadly happy, then we probably all should be too.   Browse all Scotch whisky  or  read more Editorial

The Left Bank The gravel soils of the Left Bank are beautifully free-draining – something that has long been key to the fine wines despite the wet, maritime climate of the Médoc. In 2022, however, producers were desperate to retain what little water fell from the skies – and the berries harvested were tiny, with thick skins and containing surprisingly little juice.  The size of the grapes, combined with localised hail in Saint-Estèphe, resulted in generally low yields in 2022 – often lower than 2021, although it does vary by estate. Any addresses working organically and biodynamically last year had catastrophic yields, and this year therefore seemed generous (and joyous) for them, with its dry conditions meaning minimal disease pressure. What little fruit was harvested, however, was ripe and concentrated – producing rich and structured wines, with the best also having amazing freshness.   Saint-Estèphe This northern commune tends to thrive in hot vintages, with the heavier, clay-rich soils retaining more water and cooler temperatures, limiting the vines’ stress – and it was just so in 2022, a vintage in which it seems to be one of the more consistent appellations. Unfortunately the northern reaches of the region were struck by a corridor of hail on 20th June – it was very localised, but some estates lost significant volumes (with reports of up to 80%). At Ch. Beau-Site, the combined effects of this hail and April frost led to a loss of around half their crop, while Phélan-Ségur lost 30%.   Picking dates here varied – with Montrose (that has produced one of the stars of the year) starting on 2nd September, Calon Ségur on 6th and Cos d’Estournel on 7th – the earliest harvest for the latter since 1989. Even without any hail damage, Cos only managed to crop 33hl/ha, compared to a normal 40hl/ha. It’s also the first release of Cos Labory under Michel Reybier – reuniting the land that was originally owned by Louis Gaspard d’Estournel – and many more changes are set to come here. As they just acquired the estate, they were only responsible for the blending and élevage – but it’s already showing a touch of the classic Cos polish.   At Montrose, they felt there was a need to “civilise” the tannins, with gentle extraction. At Calon Ségur, Vincent Millet chose a longer, cooler fermentation at 24˚C ; for him, it’s the low yields that give the vintage such power, while the freshness remains a mystery. The wines that we tasted showed none of the rusticity that was once the trademark of Saint-Estèphe, with the best combining a depth of dark fruit and charming freshness.  Our highlights: Montrose – and especially La Dame de Montrose, Calon Ségur, Phélan-Ségur Pauillac “None,” Mathieu Bessonet – Technical Director at Pontet-Canet – said firmly when I asked if he could compare 2022 to another year. Pauillac escaped the hail and almost no one reported any significant damage from the frost, however yields were still low here. As Jean-Sébastien Philippe at Ch. Lafite-Rothschild highlighted, although the tonnage of grapes wasn’t too bad, it was the volume of liquid that they released which was notable – with the berries so small and the skin-to-juice ratio so high that yields were reduced by up to a third at most estates.  Some of Lafite’s younger vines started to struggle in the heat towards the end of August and were picked early, but the fruit wasn’t deemed good enough to be used. Neighbouring First Growth Mouton Rothschild picked in earnest from 1st September, finishing on 26th September – with almost no producers still picking by October’s arrival.  At Ch. Latour, the team recorded the lowest annual rainfall in their history – with just 615mm between October 2021 and September 2022. But there were significant storms in June, indeed the lightning in a thunderstorm on 2nd June destroyed Pontet-Canet’s office, with another following on 24th. Almost everyone we spoke to in Pauillac emphasised the higher percentage of press wine used. As vignerons tended to employ gentler extraction, the press wine was more delicate and more could be used to bring depth to the wines.   Technical Director at Ch. Pichon Baron Pierre Montégut compared the purity of Cabernet Sauvignon this year to 2019, with the richness reminding him of 2020. Bessonet feels that 2022 Pontet-Canet is more Pauillac than Pontet-Canet, but in general it seems that the extreme vintage amplified each estate’s character – as Charles Fournier at Mouton Rothschild highlighted. Taking the First Growths, Mouton is flamboyant, Lafite restrained and precise (with everything in this prestigious stable showing particularly well), Latour more stern and serious. Pauillac has produced some stunning wines at the top end this year, but there’s definitely a little more variation that needs to be considered.  This year’s Ch. Batailley – another classic expression of this stalwart estate – bears a commemorative label to the late Her Majesty Queen Elizabeth II, who served 1947 Ch. Batailley (a year with similar climatic conditions) at her Silver wedding anniversary in 1972.   Our highlights: Lafite-Rothschild, but also Carruades de Lafite-Rothschild, Pichon Comtesse, Batailley, Grand-Puy-Lacoste  Saint-Julien  “You’ve got to be really humble when a plant teaches you that much,” said Claire Ridley at Ch. Léoville Poyferré – referencing the vines’ resilience in the face of 2022’s extreme conditions. Despite the year’s challenges, Saint-Julien seems to have thrived, with some really impressive wines, with the Barton stable a particular standout. Damien Barton-Sartorius noted that some producers were afraid to wait for phenolic ripeness because of the rising sugar levels in the warm September conditions, but sufficiently ripe skins were key to success.   At Léoville Las Cases, the team feel the year’s climatic conditions hark back over 150 years, to 1870 – although we can’t personally vouch for the comparison, they’ve crafted a muscular, firm wine that will need serious time to reveal its full potential. (Indeed, five potential 100-point scores attest to the quality here.) Ducru-Beaucaillou highlighted the influence of oceanic mists in August, while Ridley pointed to the June storms for essential drought relief.  Harvest dates were similar to Pauillac, often starting in the second week of September and running to the end of the month. The acidity levels vary on paper from 3.6 to 3.85, yet the wines have good freshness and alcohols are generally on the more modest side for the year, with most sitting closer to 14, rather than 15. For Barton-Sartorius, the year sits happily alongside 2016 and 2019 – and possibly 1945. The appellation’s best wines are classically built, with both finesse and flesh, as well as the requisite structure for the cellar.  Our highlights: the entire Barton stable – including a stunning Mauvesin Barton (although sadly Langoa and Léoville sold out on release), Beychevelle, Léoville Las Cases, Lagrange  Margaux “They had to find a way to survive,” Aurélien Valance at Ch. Margaux said of the vines. For him 2022 was a year that gives him hope: “2022 was very extreme – but the wines are not. For the future, it’s very promising.” They have a plot of old-vine Petit Verdot that is always used in the Grand Vin, but the wine was already so dense that it didn’t need it. The fruit from this prime site has instead been used for Pavillon Rouge, contributing to a particularly serious, firm and swarthy rendition of this second wine. Valance explained how they used the vintage as an opportunity to trial two alternatives for managing the heat: removing leaves in early June to allow the grapes to adjust to the hot sun early in the season while they had thick skins, and using kaolin – a type of clay that can be used as a sort of “sunscreen”. While they had higher yields on both these trial plots, they have bottled them separately to see how these practices impact quality over time. Their ongoing work re-orienting their vines (from north-south to east-west) will also help long term, but will take half a century or more.   At Marquis d’Alesme and Labegorce, the early April frost reduced yields, especially for the Merlot – meaning they cropped just 22hl/ha. Harvest started in the first two weeks of September, finishing by the end of the month, the earliest on record for estates like Rauzan-Ségla. Yields generally seemed lower in Margaux – dipping to around half the normal volume at several estates, often less than in 2021. At Brane-Cantenac, Henri Lurton pointed to the deep roots of the 60-year-old Cabernet planted by his late father as key to their success this year, with a thicker canopy and cool nights all contributing to the wines’ surprising freshness. While most estates opted for a lighter touch with extraction, Palmer was a notable exception – choosing instead to lean into the year’s bold structure, something that has paid off (with another five potential 100-point scores here to prove it).  As Lurton said, “It wasn’t an easy vintage to make – but in the end it’s a great one.” Indeed, he feels it’s the best wine he’s ever made. That’s certainly the case at some estates, although the appellation was definitely more variable in quality. The best wines, however, fulfil Margaux’s sensual stereotype – combining perfume with the concentration of the year, and voluptuous tannins.  Our highlights: Rauzan-Ségla, Ségla, Marquis d’Alesme, Brane-Cantenac, Pavillon Rouge du Ch. Margaux  Pessac-Léognan  For Daniel Cathiard at Ch. Smith Haut Lafitte, the vintage was “more about dryness than warmth” – indeed, having recently started working in Napa Valley (with the family’s Cathiard Vineyard), he dared to say that the conditions were “a little Californian”.  Picking in this southern commune seems most uniform, with almost everyone starting in the first week of September. Guillaume Pouthier – who has created one of the wines of the vintage at Les Carmes Haut-Brion – managed to reduce the alcohol with his use of whole-bunch and native yeast, reducing it to a modest 13.5%. Although the tannin levels are very high (with an IPT of almost 100), the wine is amazingly accessible now – with a purity and delicacy that made it tempting to steal the sample for dinner. As he said, “What is very important to me is an empty bottle.”  The style of the wines here varies, from the ultra-elegance of Carmes to a bold, ripe offering from Haut-Bailly – but, from our tastings at least, there’s good uniformity in quality, with powerful wines that are set to age well.     Our highlights: La Mission Haut-Brion, Les Carmes Haut-Brion, Domaine de Chevalier  The dry whites Having read about the conditions of the year, you’d be forgiven thinking that the whites might be a write-off – but they’re far from it. It certainly required skill in the vineyard and winery to maintain freshness in the warm, dry year, with some that are on the more tropical side, but there are also some gorgeously taut, vibrant whites that are well worth paying attention to. The best of these are pithy, with impressive tension and an energy that reverberates through the wine. Yields at several addresses were particularly low for the whites, with frost having more of an impact on the Sauvignon Blanc, as well as the hot wind concentrating fruit further.   Although not being released en primeur, 2022 will be the first commercial vintage of a new white wine from Ch. Margaux, a junior sibling to Pavillon Blanc – one that we’re particularly excited to taste. Domaine de Chevalier Blanc is, as Adrien Bernard said, "very special this year” – and we wholeheartedly agree. While the reds often steal the limelight at Lafleur, we were particularly impressed by Champs Libres – another pure Sauvignon Blanc that sings this year.  As Olivier Bernard’s (Adrien’s father’s) 40th vintage, both the Grands Vins bear a special label, with a 1941 illustration by Xu Bei Hong of a galloping horse, one that captures the energy of the year at this address. At Ch. Haut-Brion, the team was particularly impressed by the quality of the Semillon – and it ended up representing a significantly higher portion (51.4%) of the blend, and the result is impressive.   Our highlights: Pavillon Blanc du Ch. Margaux, Domaine de Chevalier Blanc, Lune d’Or, Fieuzal Blanc, Clos Floridène, Les Champs Libres, Cos d’Estournel Blanc  The sweet whites of Sauternes and Barsac Because it was so dry, botrytis took time to develop in 2022, and it was only after the rain in early October that the noble rot took hold. A hot, dry wind over the following week resulted in rapid concentration, Pierre Montégut explained at Suduiraut, which is one reason for the purity of fruit in the wines. With this sudden concentration, the fruit needed to be picked more quickly than normal – indeed Montégut didn’t have enough pickers to bring it in as quickly as he’d have liked. The resulting wines are particularly rich and hedonistic, with notably high sugar levels at some addresses – Lafaurie-Peyraguey has a whopping 260g/l residual sugar (with 130-140g/l the number for a typical year). Yields are tiny in both Sauternes and Barsac – averaging 4hl/ha and 1.5hl/ha, respectively. Montégut explained that he would be using more new oak to help balance the richness of the fruit, which effortlessly absorbs the wood (the sample of Suduiraut we tasted was 100% new oak, but it will likely end up around 70% versus the normal 50%). He compares it to 1959, a vintage that had particularly high sugar levels for the era.   Our highlights: Suduiraut, Guiraud, Coutet The Right Bank There are some stunning wines from the Right Bank this year, with the wines generally more consistent (especially in Saint-Emilion), and the yields (again, mainly in Saint-Emilion) more generous versus the Left Bank.   Unusually, irrigation was permitted in both Saint-Emilion and Pomerol, however few producers have the infrastructure to water vines (beyond doing so manually) – and if they don’t have a water source themselves, it would also add significant costs. As such, few addresses that we visited took advantage of the option – and some argued that the permission to do so arrived too late in the season to be of real use. Although we only dive into the detail of Saint-Emilion and Pomerol on the Right Bank, it’s worth noting that the satellite wines from the Lafleur stable were particularly good this year, with both Les Perrières and Ch. Grand Village really impressing, and Montlandrie was a standout from the Durantous. Although we didn’t taste L’Hêtre, Jacques Thienpont (Le Pin) told us that it was “fabulous” this year – and may well be one to look out for given its pedigree.  Saint-Emilion Saint-Emilion’s pronounced limestone soils were a godsend in 2022 – bringing incredible freshness that balances the generosity of the year beautifully, producing some of the very best wines in the vintage. Of course, the proportion of limestone in soils isn’t universal, and it’s not quite as simple as saying only those on the plateau thrived, but it certainly helped. The general trend towards restraint undoubtedly helps as well, meaning that many producers have contained and tamed the opulence of 2022, rather than exaggerating it.  It was Joséphine Duffau-Lagarrosse’s second vintage at the helm of her family estate, and she’s been working particularly hard on pruning – something she feels is the most important part of any year, looking to balance each vine rather than leave a set number of buds, which also avoids the need for a green harvest. For the Ausone stable, Edouard Vauthier feels it is a Merlot vintage, with the berries “absolutely gorgeous”. The only vines of theirs that struggled in the heat were those at Ch. de Fonbel, where they have gravel soils rather than clay/limestone.  At Ch. Canon, the team even sacrificed certain plots on particularly thin, rocky soils totally – not vinifying the fruit as the vines didn’t have sufficient water reserves to handle the dry conditions. The team at Figeac highlighted how their rootstock (Gravesac) was particularly useful this year. The seeds were already brown in August – showing just how advanced the phenolic development was.   While most estates on the Left Bank and Pomerol sit at 3.6 to 3.9pH, here some wines were as low as 3.3 (bear in mind that whites will often be around 3.2), and most sit under 3.6. There’s a noticeable exception with Cheval Blanc, however the wine has an incredible sense of freshness despite its 3.86pH, and is clearly one of the highlights of the year. As with elsewhere, old vines and deep roots were also a support – and this was particularly true at Clos de Sarpe, Laroque and Angélus. The best wines here offer enticing perfume with aromatic finesse, backed up by concentrated yet crunchy fruit, seamless tannins and mouth-watering acidity, often with a saline finish. They are spellbinding.  Our highlights: Laroque, Carillon d’Angélus, Berliquet, Beauséjour Duffau Lagarrosse, Clos de Sarpe, Cheval Blanc, Bellefont-Belcier  Pomerol Those fortunate to have some of this appellation’s deepest and most prized clay soils produced some stunning wines, but it was definitely trickier on those with more sand and/or gravel. There were proclamations from many producers that this is Merlot’s “comeback” – but Edouard Moueix disagrees, this was just an easy year to farm the variety: “Merlot thrives here, but it is fragile, and you must be more precise – it’s not as tough as Cabernet Sauvignon or Cabernet Franc.”  Diana Berrouet Garcia at Le Pin noted how hot it was early in the season, recalling it was already 30˚C over the Easter weekend, but the rain that arrived after every heatwave allowed the vines to recover before they were challenged once more. Ch. Clinet was one of the few properties to use irrigation when permitted, something that helped avoid the vines shutting down, along with the cool nights and their mature vines (between 35 and 40 years old on average). By contrast, at Evangile – where the team is in the middle of a replanting program and the vines average just 15 years old – Juliette Couderc was worried about them even in June, however the naturally smaller leaves reduced transpiration and allowed them to survive until harvest at the end of August.   Alexandre Thienpont (Vieux Château Certan) chose to leave more bunches than normal on the vines – eight or nine, rather than the normal five or six – eventually harvesting tiny berries that weighed less than 1g. Noëmie Durantou Reilhac (of Ch. l’Eglise-Clinet) explained how important it was to manage the extraction carefully to maintain freshness, extracting early while the musts were cool and taking it off the skins after just two to five days after fermentation was finished (when some producers choose to leave the wine macerating for up to 40 days).   The warm winds in September concentrated the berries, and are the reason that yields are generally lower, often around 20-30% less than in 2021 for those that harvested later in the month. The start of harvest ranges from the very end of August through to 16th September, and almost everyone finished before the 23rd September. Merlot from the vintage is undoubtedly opulent and we found the best wines were often – but not always – those where its exuberant personality was tamed with Cabernet, bringing a firmer, more linear structure.   Our highlights: Belle-Brise, Vieux Château Certan, L’Eglise Clinet, Blason d’Evangile, Bourgneuf, Clinet, La Conseillante, L’If    Read more about Bordeaux 2022
