It all started, as the best things in life often do, with a glass of wine and something of an epiphany. Budding Shanghai-based chef, Alex Xu, was holidaying with his then-girlfriend (now his wife) in New Zealand in 2012. It was their first trip together, and the pair had decided to do some tastings at wineries in Central Otago and Marlborough. One particular Pinot Noir they encountered awoke something in Xu. He didn’t know it at the time, but this was the first in a series of wine-tasting experiences that would change the course of his life. “We were on a tastings tour,” recalls Xu of the seminal moment. “There was a group of us travelling from winery to winery on a bus, but when we got to Aurum in Cromwell, our last stop of the day, the owner, Brook Lawrence, came and really spent some time with us. He walked and talked us through the vineyards, we tasted out of a barrel, and he opened a few bottles to taste. He talked about – in a very straightforward way – why each wine tasted a bit different even though they were all from the same parcel, essentially. He spoke to us about how there were different approaches to making wine from using whole-cluster or de-stemmed grapes, to oak, to length in barrel.” Sipping the wine as Lawrence spoke about the various methodologies and decisions that contribute to its flavour, made Xu realise in that moment, that the way wine is made – grown, picked and then prepared and vinified – is similar to the way a chef works. “I remember thinking, ‘Oh, making wine is like farming and cooking, but maybe the cycle is a bit longer.’” How flavours and textures work to deliver deliciousness in food is something that Xu was increasingly fascinated by, but his experience at Aurum that afternoon in 2012, opened his mind to the complexity of winemaking and the different elements at play in the glass and on his palate. “It was so fascinating to me to taste a wine made using 100% whole cluster and then compare it to essentially the same wine made using de-stemmed grapes. It was probably the first time I tasted wine and was simultaneously aware of how it was made. We’d visited maybe three wineries before Aurum, and I really remember how the tannins were entirely different, texturally, from anything else we had tasted. Those whole-cluster wines were much more expressive and seductive to me – specifically Aurum’s Madeleine Pinot Noir. It was spiced, really floral, lifted and bright. I already knew that I loved Pinot Noir, but that was a real ‘wow’ moment.” Shortly afterwards, Xu signed up to WSET, not because he knew he wanted to be a wine professional, “but simply to understand better what I was tasting and why I was enjoying those things,” he explains. The principles and tasting techniques he started to adopt soon began to feed into his approach to cooking.  “It gave me a kind of mental grid to help evaluate wines – colour, aroma, flavours, acidity, alcohol, tannin, body, intensity, complexity, length,” he explains. “On one super fun R&D trip to Tokyo to learn as much as I could about ramen, I applied that kind of thinking and rigour to how I evaluated a whole bunch of different varieties.” His interest in wine, it would seem, was sharpening Xu’s critical faculties and improving his ability to identify and appraise different elements of flavour. In 2015, just as he was making the final preparations to open his restaurant, Baoism, in Shanghai, Xu became ill with mononucleosis (glandular fever). Locked in a fever for days, he decided to head to the countryside to recuperate. More specifically, to his family’s country retreat in Yuhu Village in the foothills of the Jade Dragon Snow Mountain in rural Yunnan. Yunnan is one of China’s most southwestern provinces, lying south of Sichuan and bordering Tibet to the northwest, Myanmar to the west, and Laos and Vietnam to the south. There’s no heavy industry, making Yunnan one of the least polluted corners of China. Instead, its 394,000 square kilometres encompass snow-capped mountains, rice terraces, lakes, forests and agricultural land.  Xu describes Yunnan as ‘China’s breadbasket’, explaining that the variation across the province in elevation and climate means that the region enjoys a long growing season, yielding all kinds of gastronomic wonders that are prized throughout the country and beyond. As well as the tea, coffee and tobacco of central Yunnan, the province is probably best known for the wide variety of mushrooms it produces. Wild morels, porcini, truffles and a mushroom called matsutake or ‘pine mushroom’ in Japanese. Yunnan still exports tonnes upon tonnes of them to Japan each year, although they’re also enjoyed locally, sliced very thin and dipped in soy sauce and wasabi. The food of Yunnan reflects many influences. “I’m Han Chinese and that’s the majority ethnic group,” explains Xu, “but we have, I think, 25 different ethnic minorities in Yunnan. There are Tibetans, Laotians, ethnic Thai, ethnic Leong – and that’s just the tip of the cultural diversity iceberg. And even though we’re pretty far from Vietnam and Laos here in the Northwest, we still have a lot of lime and mint here. In the summer, the sun is really intense because of the high UV radiation at the altitude, so we eat a lot of foods that are very fresh. Our cuisine puts a lot of value on nuance and delicate complexity, rather than power and spice.” Xu’s Shanghai-resident parents holidayed in Yunnan in the early 2000s and fell in love with Yuhu Village. On discovering there was no running water, they helped the villagers build a pipeline from a glacier atop the mountain, and as a show of thanks, the villagers gave them some land on which they built a house.  Despite the abundance of beautiful fresh produce grown elsewhere in the province, the landscape around Yuhu Village is almost completely devoid of agriculture due to the barrenness of the soil. But its wide-open spaces and fresh mountain air (at an elevation of 2,800 metres) were the perfect tonic for Xu’s mononucleosis recovery. Within two days, he shook off the blanket under which he had been shivering for weeks and, almost suddenly, was back to rude health and able to enjoy being out in the sunshine and open countryside. And that’s when he saw something he’d never seen before: a group of villagers digging melon-sized rocks out of the ground. “I asked my friend what was going on,” says Xu, “and he explained that the rocky soil is so poor and so bad at retaining water that nothing really grows. So instead of harvesting crops, the locals dig up rocks that can be used for building projects.” Sloping landscape, poor and rocky soil, cool climate – something clicked in the back of Xu’s mind. “I remember thinking ‘Maybe we could plant vineyards here.’ It’s weird because there are no vineyards in that part of Yunnan, and I had never considered planting vines or making wine until that very moment.” Two weeks later, Xu was back in Shanghai, busier than ever as the head chef and proprietor of his just-opened restaurant. But he had made some calls, reaching out to friends about his ‘crazy idea’. He was introduced to David Tyney, an Australian viticultural consultant who had been working in New Zealand for around 15 years. Over the next 12 months, also working with Simon Clark and Feng Liu, they collaborated to establish whether or not growing vines would be feasible – installing a weather station, analysing soil samples and, ultimately, identifying a small parcel of land outside Xu’s village that had potential. Xu planted vines in May 2017 knowing that, at some point, he’d have to choose between the restaurant and the vineyard project. When his landlord got in touch later in the year to say that he was upping the rent at Baoism, it made the decision easier than anticipated. Now able to focus solely on the vineyard, Xu asked his viticultural consultant the best and fastest way to learn about making wine. The answer came: “Work vintages”. The memory of the Pinot Noirs he had tasted at Aurum called him back to New Zealand, where husband and wife team Brook and Lucie Lawrence welcomed Xu’s request to come and work the 2017 harvest with them as their only additional help managing their four-hectare site. “I’d heard from my consultants that making wine is very much like working in a kitchen,” says Xu. “It’s mostly cleaning but I would be there to work hard, observe and absorb. I was already used to a world where cleaning and physical labour were very much part of the job, but what I found on my first vintage, working with Lucie and Brook, was that winemaking has this incredible combination of intellectual curiosity and satisfaction.  You’re constantly thinking about how and why, trialling different things here and there, understanding how different viticultural or vinification decisions affect what ends up in the glass. Plus, you have this real satisfaction from doing physical labour that you don’t get in a lot of work. It had a pace that was a little bit slower than restaurants – still very intense – but it felt more sustainable. And at Aurum I saw that when people are really good at what they do, they kind of glide around the winery, the way great chefs glide around their kitchens. It made me want to become better. I understood that that’s what I want to be like, and I understood how the work would appeal to me. I also learned that this was a real business – that I couldn’t just throw myself into it without giving it proper respect.” One of Xu’s big learnings at Aurum was about quality over quantity. “They’d been hit hard in the economic crisis of 2008 and had to shed 10 hectares of their site, leaving them with just four. So they were down to bare bones. What they were doing, if they got it right, would just about support them.” A sobering thought, but Xu was inspired.  Despite the pressure they were under to make it work, he admired the decisions Brook and Lucie made in the field, in the winery and beyond. For example, as part of their uncompromising focus on quality, they held on to bottles for the amount of time they felt was necessary before releasing them. “While I was there, one of their 2014 Pinots (they make three) won Best Pinot Noir in New Zealand,” says Xu. “It was a testament to how good they are as winemakers.” Perhaps unsurprisingly, Xu trusted his tastebuds to lead him to his next vintage experience. In 2015, he had attended a blind tasting event in Hong Kong hosted by Jancis Robinson MW. One wine stood out. “The theme of the event was to blind taste Chardonnay and Pinot Noir wines from across the world,” says Xu, “and I look up to Jancis immensely, so I felt I had to be there. As everyone does at some point or another, Jancis called one wine completely wrong. What she had called as ‘a great, great white Burgundy’, turned out to be a Quartz Chardonnay by Australian winery, Bindi. When it was revealed, Jancis wasn’t surprised: ‘It’s a Bindi? Of course, that makes sense,’ and she spoke about how serious the work is there and how great the winemakers are.” As Xu contemplated the delicious liquid in his glass, he found himself thinking what a triumph it was for New World wine; that it in the unprejudiced environment of a blind tasting event, the Jancis Robinson had put an Aussie Chardonnay in the same quality bracket as top white Burgundy.  Having sought out and enjoyed Bindi wines on several subsequent occasions, Xu applied to work the 2018 vintage with owner-winemaker Michael Dhillon. Though almost twice as big in size as Aurum’s, Bindi’s operation was still small enough for Xu to have a hand in everything during the vintage. And beyond the day-to-day harvest and winemaking work, Xu got to taste and discuss wines with Michael and his family in the evenings. “What was wonderful at Bindi was, because I was living with the family, I cooked a lot for them – almost every night – and they opened a lot of very special bottles. I found that so valuable; that they shared so many incredible wines with me, that we talked about them, and they were able to articulate why those wines appealed to them. And the wines weren’t all monolithic, there was quite a bit of variation in how the wines were built, structurally, even in the grape varieties, but you could see that Michael had a very clear idea of what he valued, of what mattered in wine to him. I realised that I needed to do that too, that my responsibility to my work, to my dream, wasn’t just about becoming a technician – simply knowing how to make wine – because that’s not enough. I needed to figure out what matters to me, to understand it and to be able to articulate it, and to evaluate wine from that vantage point.” Xu still speaks to Dhillon regularly, having gained a mentor as well as invaluable experience. He has also stayed in touch with Brook and Lucie at Aurum. In fact, when he mentioned to them that he was keen to do a vintage at Domaine Dujac in Burgundy, they told Xu that they knew the Seysses family personally, and would be happy to write a recommendation. They did, and Xu was offered a spot on Dujac’s 2018 harvest crew. “That was such a nice moment for me and a really great example of how people in the wine industry are much less directly competitive than people in restaurants,” says Xu. “There’s a much greater sense of sharing knowledge, and I love that. It’s still amazing to me, not just how much information the best winemakers in the world are willing to share about how they make their secret sauce, but also that they’re willing to go out of their way to help people like me find opportunities to learn and grow.” Xu’s winemaking learning curve and his palate education continued apace at Dujac under the tutelage of Jeremy Seysses and his wife Diana (who splits her time between Dujac and Napa where she is the winemaker at both her family vineyard, Snowden, and Ashes & Diamonds). Xu was one of just four stagiaires along with a sommelier from a 3-star Michelin restaurant in New York and a young but experienced Australian couple, who were all encouraged to take it in turns to choose four bottles from the cellars to open in the evenings after a hard day’s work.  “They would give us the inventory for the cellar and say ‘Ok, pick four wines and we’ll blind taste them.’ It was so much fun! We would taste and talk – and the really cool thing was that most of the wines we were trying were made by the family’s friends at neighbouring domaines. When you blind taste with people, you start to understand what they like, what they don’t like, and particularly how they think about wine. Because we were in the winery tasting the fermenting wines every day, and also out of barrels – when it came to tasting these amazing bottles every evening, we really got a sense of what Jeremy and his father Jacques valued in wine. It was such a privilege – so many wines I’ll never taste again but will remember forever.” Xu particularly remembers the wine he tasted on the evening of Jeremy’s birthday. Diana asked him to cook a special birthday meal (Chinese dumplings from scratch), while Jeremy brought up some very special bottles from the cellar. Two bottles of La Tâche – a 1966 and a ’72 – for starters, and Xu’s eyes glaze over at the memory of them. “Those wines were magical to me. First of all, the Domaine de la Romanée-Conti (DRC) bottles in the Dujac cellars are direct exchanges because the families are close. Aubert de Villaine is the godfather of Jeremy’s son – he came to lunch one day, and I think I was slack-jawed the entire time – but you know, those wines had entered the cellars in the 60s and not moved. Talk about pristine storage conditions – they’d travelled only a few kilometres to get there! The next thing to say is that these tasting experiences were my first with Pinot Noir that old – around 50 years.  Tasting them was mind-blowing as I had no concept of what it would look and taste like at that age, but simultaneously a validation of all the things that I love about Pinot Noir. 1966 was one of those years, a bit like 2017, where the vintage produced wines that people just drank straight out the gate as it was so delicious.  People didn’t really know if wine like that would fare well over time. But tasting it confirmed that the ’66 La Tâche had retained the balance it started with. Yes, it had gained all the savoury, leather and undergrowth characteristics, but all the purity of fruit and aromatic expressiveness and complexity still formed the core of the wine. But maybe the roses had gone from fresh to dried, and strawberries from fresh to gently baked – but the sweetness and succulence, the perfume and the spice, everything was still there. The ’72 was interesting too because, unlike the ’66, it was a really difficult vintage. And yet the wine had aged remarkably gracefully – all the elements were there, it was just a bit quieter perhaps, less intense than the ’66.” Xu also remembers Jeremy opening a magnum of 1964 Clos de la Pousse d’Or – the first vintage made by Gérard Potel whom Jeremy’s father, Jacques, had worked with and learned a lot from. “The magnum was pristine, and the wine exhibited all the things I love about Burgundy: perfume, texture, massive complexity and spice. You know that way that Pinot Noir can be weightless without being light or lacking intensity or energy? It had this weightless intensity and a savoury complexity that was just stunning. So beautiful.” Through the wines Xu was tasting, he wasn’t just building a vision for the kinds of wine he hopes to make in Yunnan, he was starting to understand something much more profound – the kind of life in wine he wants to make for himself. At the end of his season at Dujac, when Jeremy asked him if he wanted to visit some other Burgundy domaines to do some tasting and maybe think about where next to approach to do a vintage (as a result of the subsequent tastings – and Dujac’s influence – Xu worked the 2019 vintage with Pierre-Yves Colin-Morey), Xu had perhaps the biggest epiphany on his wine adventure to date. He knew that he didn’t just want to nurture fruit on the vine and turn it into wine, but also – like his own mentors – nurture and encourage like-minded people to follow their noses, awaken and educate their palates, and start their own wine adventures. With just under three hectares of Pinot Noir and Chardonnay vines planted on the south-facing slopes of his Miao Lu vineyard in Yunnan, Xu is fully committed to maintaining more than a flow of vinified grape juice in the coming years. The knowledge and passion that flows freely around the vigneron’s dinner table, and the convivial spirit of generosity Xu discovered at each world-class winery, are just as important to his vision for Miao Lu. Yes, making exquisite, thoughtful wine with love and care is vital – but so too is the culture of sharing, savouring and celebrating good wine in good company, and raising a well-nosed glass – as often as possible – to hard work, friendship, and the magic you simply can’t bottle. Wine, though the most intimate of pleasures, lends itself to the most expansive of texts. We drink wine most often – tastings aside – in pairings of two, or in lonesome but agreeable solitude, and, its narcotic pleasure being felt internally, we feel its effects as we feel a fever: almost secretly, in shivers. Though wine is like sex in its intimacy, unlike sex, the form in which we fetishise wine – our vine erotica – is not hushed and illicit but encyclopedic. On the shelves of any wine drinker, there are likely to be catalogues, dictionaries organised by region, old Parker buying guides some 600 pages long that somehow, though dated, can’t be discarded.  Wine seems singular among human pleasures in this. We don’t, as a rule, rush from reading a poem to great anthologies of poetry, or add to the savour of seeing a play by reading a big atlas of dramatic literature – not, at least, after we graduate from school. Sports fans, it’s true, like big books of statistics, but then sports-watching is a social act in the first instance – the more people in the stands, the merrier the occasion. With wine, we like the macro with our micro: with a solitary glass in hand, we look, in print, over the next hill, or the current vintage, at the vineyard across the way, or the vintage yet to come. It’s part of the pleasure the glass provides. The reasons for this micro and macro turn are, on reflection, commercial and artisanal as much as aesthetic. The business of wine needs a big picture of its domain, its resources, and its potential market – scale sets the stage for commerce. The makers of wine like to place themselves on a broader map of where wine is and what it’s made with. The great Bordeaux classification of 1855 is not just the noblest public monument to a beverage ever attempted, but a model of market-making and even market price-fixing. Once a hierarchy of growths has been established, it is easy to slot in the price tags. But there is a truth of taste beneath the ordering of value. With wine, we know that what we are experiencing is, however singular, still an intersection of opposed forces – as the peerless wine writer Jancis Robinson MW says of her first glass of Chambolle-Musigny 1959; “I knew at once that there was something in the glass that was sensually delicious but that it was also made, produced, and therefore suggested a history of intellect and discernment.” The pleasure of wine is the crossing of a place, a grape and a people; and so, we turn to the big books to frame the small pleasures.  What distinguishes wine from even a good glass of ale or a local brew is the specificity of the pleasure set against the scale of the system that made it – one that historically embraces the planet. It’s a First Growth, or a domaine Burgundy, or a Ridge Zinfandel or a New Zealand Pinot Noir made to a Burgundy model by American wine makers … the more we know, the more we’re free to feel. Most sensory pleasures are specific to the point of being illicit – aside from the bemused fetishist, romance is a spontaneous pleasure, often aided, to be sure, by a systematic wine. Wine is premeditated; we choose a bottle, let it ripen, and break it open. Even casual table drinking has a tale to tell, a journey to trace on a map. These thoughts are brought to mind in contemplation of Wine Grapes, the monosyllabically titled but unprecedentedly expansive dictionary of grape varieties grown to be crushed and fermented on this green planet. Authored by Robinson, along with Julia Harding MW and the geneticist Dr José Vouillamoz, it marks an epoch – several epochs – in our understanding of wine, from both a professional planet-straddling and an amateur glass-in-hand perspective. A book of its time (published in 2012), it was made possible, in part, by a revolution in the DNA analysis of wine grapes to help discover their origins and histories.  The DNA profiling of wine grapes only began in 1993, and the first ‘paternity test’ successfully concluded in 1997 – a mere few days ago by historical perspective – with specialists, Dr Vouillamoz among them, drawing astonishing Darwinian lines among seemingly unrelated grapes. Zinfandel, it has been discovered in the last 40 years, is not only the Siamese twin of Primitivo, but its Croatian Siamese twin. In proper Darwinian fashion, the book tells us, “It looks increasingly as though an enormous proportion of the grapes we know today are members of a few key families.”  The leading families of wine, Pinot and Nebbiolo and the rest, like the leading houses of Westeros, jostle and engage in incestuous inter-breeding as they move towards dominance. As Jancis Robinson admits, the quest for the origins of grapes can become surprisingly emotional. “The Zin quest is so … heated. There was a Zinfandel conference in Croatia, with all the great Zin makers, even Joel ‘King of Zin’ Peterson from Ravenswood, and we all had to present our various things about Zinfandel. There was a small cohort of people from Montenegro who reckoned that their variety – whose name is unpronounceable – was the true progenitor of modern Zinfandel, not the Croatian one. It became so … Balkan! And you know what? They may be right!” Wine Grapes is of its time in another sense as well, marking the moment when we have started to think of wine not solely in terms of region, but much more in terms of variety, with the semi-mystical term ‘terroir’ acting as a kind of Holy Spirit between them. Thinking ‘grape’ more than ‘place’ releases our imaginations. The wholesome instructive pleasures of the book, to which we’ll come, shrink beside the unwholesome, guilty pleasures of turning the pages to meet the failures among grapes – the near-misses, the long-forgotten and forlorn lost toys – which please more than the patterns of primacy. The pleasure of reading about the grapes whose juice we do drink is nothing compared to reading about those we don’t. In dictionaries, oddities and parentheses fascinate us more than the major entries. No one turns to the dictionary to study ‘and’; we go to study ‘antediluvian’. So, turning these pages, flipping through the P’s on our way to encounter the great Pinot families, we come upon the lesser gods, even the little misshapen gnomes and dwarves of the wine world, and we delight in meeting them. (A fascination added to by the forthright sub-heads the editors provide.) On our way to Burgundy and Pinot Noir, we also meet Pinotin, a ‘recent obscure Swiss hybrid’ which edges into Pionnier, ‘a minor but complex, cold-hardy American hybrid used in blends in Québec’, and, of course, Pinotage ‘South Africa’s very own cross, both loved and despised’, which leads us on to Pugnitello and even Pukhliakovsky (a Russian variety ‘with erratic yields producing light wines’) and even unto Pules – ‘a minor Albanian white’. Radiating out from five pages on the major Merlot, we bump into Merseguera, ‘an uninspiring variety’ from Spain, and Merzifon Karasi, and Merzling, dismissed as a ‘very minor disease-resistant German hybrid’. Why these lost or obscure kinds of grapes bring so much delight with them is a fascinating question. It has in part to do with our general appetite for oddities and obscurities, which once produced ‘freak shows’ and still makes us fascinated with archaic musical instruments: we are curious to hear the sackbut because we want to know what led to the trombone. It is also the virtuous case that variety is the safeguard of continuity. In an age of ever-decreasing biodiversity with just a few varieties taking the place of many possibilities, one Quixotic California winemaker, driving through the fields of Cabernet and Chardonnay, dismissed them all – with a wave of the hand – as “chocolate and vanilla, chocolate and vanilla”.  The health of the planet is safeguarded by the persistence of so many kinds. It is also because the existence of these minor yet still thriving varieties gives us a satisfying picture of adaptation, the central biological act. Each of these grapes has found a home in the world. It may not be much of a home, but then neither, face the facts, is ours. We identify with the unknown grape. We are all more like a very minor disease-resistant German, or a cold-hardy Québec hybrid, than we are something noble and complicated. Few of us are bottles of Burgundy; we can all identify as minor Albanian whites. In conversation, Jancis Robinson, sheltering at home near Kings Cross in London, a home with a view of a graveyard (though a cheerful one she assures an interviewer) – talks of the wine almanac with the blunt enthusiasm that marks her writing. Robinson, in addition to her obvious honours and credentials, is a rare thing in the wine world, or any world: a writer who writes with equal parts brio and expertise. She explains the origins of Wine Grapes. “What happened was that one of the co-authors, Dr José Vouillamoz, who had been at University of California, Davis, felt that he needed to earn more of a living, and came back to Switzerland and got a job working on Alpine botanicals. But he didn’t want to lose his relationship with wine, and he came to me and said that he’d like to collaborate on a book about grape varieties. I’d already written one in 1986, based on our very fractional knowledge then.  Over lunch, I took along Julia Harding, a wine writer who works on my website. She’s extremely punctilious.” (Robinson, punctilious herself, says this with such emphasis that the listener feels that, with Harding, we must be talking about new frontiers, not to say dimensions, in punctiliousness.) “She had exactly the right sort of brain for a project like this. José suggested that we focus on the 10 or 12 most planted grape varieties to help simplify it. I thought that that book didn’t sound interesting enough. I waited until we were quite far down a bottle of Valpolicella and said, ‘I think our book should be about every single grape variety we can find.’ He gulped and said, ‘Then that’s what we shall do!’” The idea of creating a ‘perfect map’ of a subject is one of the itches that govern modern life. John James Audubon set out to describe not the major but every bird and beast in North America, and that’s what he did. Similar ‘almanacs of everything’ fill our botanical and anthropological shelves. It is an ambition so tied to modernity that in the mid-19th century, Lewis Carroll perfectly satirised it in his novel, Sylvie & Bruno, where two mad professors talk about their dream of making a map that would be on a one-to-one relation to the actual world – utterly perfect, if impossible to unroll. “I loved the scale of the thing,” Robinson says of her perfect map. “So, we carved things up: José did all the DNA stuff and history because he had good access to it, Julia, bless her, did the footwork – how much of each grape is planted where – while trying to taste as many as possible, too! And I wrote the entries on the best-known varieties, and the introduction and read every single word.  As with any dictionary, we used what came before: we went through appellation lists, with all of the varieties allowed, some of them almost extinct. A nice little detail of the book is that we persuaded the publisher that it should have some colour plates, and we were particularly keen to include the plates from the world’s first oenological book, L’Ampélographie: Traité Général de Viticulture, of 1901 … just out of copyright!” She pauses. “Of course,” she adds reflectively, “it was José, naturally, who discovered that Pinot and Syrah are related.” The offhand nature of her mention can’t conceal the significance of the remark. Of all the discoveries offered in the book, this is perhaps, for the amateur wine drinker, the most exemplary and astonishing. Painstakingly tracing the DNA heritage of the varieties, these two noble houses, Syrah and Pinot – the grapes of the Rhône Valley and those of Burgundy, the heart of Côte-Rôtie and the soul of Chambertin – are unified as cousins. This happened not through willed cultivation but in the natural evolutionary way: through variation and adaptation. Initially, the elegance of Pinot Noir was transformed through the usual evolutionary pressures of place and mutations, into the earthy pleasures of Syrah.  Chance mutation and lucky planting turned one grape into its near opposite. (‘Cross-fertilisation’, we’re told, ‘was common until the early 20th century because several grape varieties were often intermixed in the vineyards, facilitating natural crossings between distinct grape varieties’.) The phylloxera epidemic in France from the 1860s on – though it did not destroy as much as is sometimes thought – acted as a kind of sieve or filter of grape varieties, a sort of extinction event in large-scale natural history, forcing hard choices and making obscure varieties less desirable to save by root grafting with New World vines.   One virtue of the book is to propose, in effect, a new order of wines by celebrating ‘secondary’ grape varieties. “For me, among the obscure wines, something about as well-known as Cinsault stands out – it can make such lovely wines,” Robinson says. “There’s been such a sea change as the century turned. Everybody once wanted to make fruit bombs to one of three standard recipes. Then in this century, higher acidity, lighter wines are finally revaluing, and so Cinsault comes into its own. “Sometimes I come across a grape that isn’t well known but that’s so obviously superior. There’s Aglianico – the name suggests it’s Greek, though no Greek variety has ever been found and you only get it in Southern Italy. Perfect for late ripeness, and not for cool climates – and now it has travelled to Australia, where they’re desperate for hot weather varieties.  The whole array of Portuguese and Greek grape varieties are so fantastic! And so individual. And I love that after a dalliance with international varieties, both countries are now celebrating their own. There’s another white grape, an Iberian variety that’s stunning, and, again, I’m not sure it’s yet been planted much: Godello! It’s a bit crass to say it makes wines that taste like Montrachet, if a little more terroir-y and mineral … but it does. I could drink Cinsault for red and Godello for white into the next century. “There’s such a gap nowadays,” Robinson goes on, “between the Napa Cab thing, and these young people who are buying unknown grape varieties that sell for a fraction of the price, that are really good. Such a lot has happened in the field of recuperating old vines, some so obscure that they don’t even have a name. Miguel Torres, the scion of that great company in northeast Spain became very interested in grapes.  At first, he said, ‘Hey Dad, we need the posh varieties, Cabernet and Chardonnay’ – and made all these wines which did well in the Judgement of Paris. But, with time, he realised that it made more sense to concentrate on the indigenous varieties. He’s been engaged for 30 years, putting classified ads in the local press – ‘If you know of a wine grape that you can’t identify, let us know of it, and – if we think we can propagate out – we’ll do micro-vinification.’ He’s actually rescued Catalan varieties that were on the brink of disappearing; I think he found 30 varieties, and recuperated eight for micro-vinification with sufficient character to give them a new lease of life. And much the same thing has been happening all over Italy. If we published the book today, we’d be up to at least 1,500 kinds of grapes.” The great sorting question of our time, of course, is the question of climate change and its effects on wine cultivation. Robinson is cautiously hopeful about Burgundy. “I was lucky enough to go there and spend some time. The 2020 harvest is the earliest ever, at least since the 14th century. But, whereas the 2003 vintage, that legendary hot summer in France, produced wines that were pretty bizarre, the 2019s seem as fresh as a daisy, with pure fruit. I’m no plant biologist, but the vines seem to be getting used to the conditions … or the winemakers are. They’re not extracting as heavily, but, given that, there’s no sign of added acidity (it’s routinely added in the southern hemisphere), the acidity is coming from the grapes as well. Even some real old Burgundy hands, when you ask why the wines are so fresh, say, ‘I really don’t know.’” About the Southern Rhône, though, she is more pessimistic. “They’re not helping themselves in the Southern Rhône: too many are trying to make concentrated, high alcohol, 16% wines. And maybe consultants are too powerful down there – one consultant can be responsible for 20 or 30 labels, and so you’re going to have 20 or 30 wines that reflect that.” It’s here, though, that the knowledge of grapes, and our possession of this specialist dictionary, seems particularly valuable. If wine is to save itself from the vagaries of climate change, it will probably be through the introduction and new use of ‘marginal’ or forgotten ‘heirloom’ grapes. Only recently, France’s Institut National de l’Origine et de la Qualité (INAO) officially approved six new varieties: four red grapes – Arinarnoa, Castes, Marselan, and Touriga Nacional; and two whites – Alvarinho and Liliorila – all described as ‘well-adapted to alleviate hydric stress associated with temperature increases and shorter growing cycles’, potential saviours of the region against the villain of global warming. All of them, of course, are charted and explicated in Wine Grapes.

In the end, the great strange truth of wine is the truth of life: a thousand vectors press down on us at once – place, history, time, temperature, luck and breeding – and somehow in the intersection we find, or make, our pleasures. The question of type and variation was very different before Darwin who wrote, oddly (or perhaps not so oddly) almost simultaneously with the great classification of Bordeaux, publishing On the Origin of Species in 1859.  (Oddly because his theory would have been true in any other time; not so oddly because the urge to map the world, for the ‘almanac of everything’, was typical of mid-19th century confidence, as Carroll’s satire suggests.) Before Darwin, who loved wine, the fundamental view of the world was that the superintending categories, species and varieties, were the fixed things in the world. Everyone took it for granted that the ‘kind’ the ‘essence’, was the real thing and all the little variants merely particular shades away from it. A grape was a better or worse instance of its variety. Grapes, like apes, were of one fixed sort. Darwin’s great overriding insight was that only particulars exist, and that species and superintending categories are the labile and ever-changing kinds. Every kind of living thing came from somewhere weird and is on its way to somewhere weirder, with a brief stopover at being the thing it is now. The elegance of Pinot Noir is a close cousin of the earthiness of Syrah, one state is simply a moment in the life of the other, and each are moments in the life of the surging, unfixable whole. Wine, braiding through the planet and only coming to rest on a name for a moment in one place, is a bit of scientific epistemology in your glass, the truth of the particular made potable. The smallest event can set us on our path. A chance encounter, a favourite book narrated to us as a child, or a popular culture icon that we’re desperate to imitate. For Meghan Ireland, it was a double-page spread in a magazine. She might not remember who it was about, but the subject lit a fire in her that burns just as brightly many years later. “I was like wow, that’s what I want to do,” she says – eyes as wide as saucers – in the back room of the WhistlePig farm-cum-distillery in Vermont. The Whisky Advocate feature on a female Master Distiller showed the second-year Chemical Engineering student and “total chemistry nerd” a career she hadn’t previously considered open to her. “I got super determined after that,” she says. After cutting her teeth in a craft cider role, Ireland joined WhistlePig, or “the playground for distillation” as she describes it, which was under the inimitable stewardship of distilling icon Dave Pickerell. “He was just an amazing guy,” Ireland says. “Big personality and incredibly smart. He was always pushing innovation and experimentation and that’s something that has really stuck with this company.” Pickerell’s untimely passing in 2018 sent shockwaves across the industry, and many still talk about the role he played in the craft spirits revolution and subsequent rye whiskey revival. Many twittered about the fate of WhistlePig without the great man and his boundless creativity. This speculation only intensified after his successor’s short spell at the helm of the company. Today, Emily Harrison and Meghan Ireland head up distilling and blending at WhistlePig and, if their enthusiasm and first whiskeys are anything to go by, then those naysayers were very wide of the mark. “Dave gave us the ability to kind of run wild and create different experimentation options,” Ireland says. This creative energy is palpable in Ireland’s words and evident in everything the team has produced to date. “To this day my CEO asks me on a weekly basis, ‘What’s your new idea? What are we trying this week? What’s the new concept?’ He is always pushing, and he is always asking.” For some, this relentless pursuit might be draining, but it seems to have the opposite effect on Ireland. “To actually be able to explore and experiment with different options has been awesome.” Since its inception in 2015, WhistlePig has gone from a slightly obscure project to a formidable force on not only the American whiskey, but global whisk(e)y, stage. To get the brand off its feet, Pickerell and founder Raj Bhakta were very transparent about the fact they sourced whiskey from elsewhere in Canada. Today, the distillery is making strides in becoming a truly farm-to-bottle rye whiskey. “As much as we can, we want to produce a product that is ours fully,” Ireland says. “We are excited about releasing more and more of our own stuff to show off to the world what we can do here in Vermont.” The 500-acre former dairy farm is in a unique position – conceptionally and geographically. While the land may be fertile and the agricultural produce is verdant, the soil and water are both incredibly hard. As a consequence, the team has continually experimented, adapted and learned the best ways to use its triple terroir – grain, water and wood – to its advantage. “It makes who we are,” Ireland says. “You’re starting with very simple ingredients – rye and water. So, they are going to make up a big part of your flavour profile. I think terroir is huge in any distillation process.” Another huge part of the innovation at WhistlePig and the thing that really excites Ireland is the single finish programme. The Whiskey Blender has carte blanche to pick barrels and make one-off products. Part of her role, and one you sense she relishes, is finding the barrels. Ireland scours barrel libraries and leans on her contacts for anything new and exciting that appears on the market. There’s little she won’t try at least once. “I’m willing to put whiskey into anything,” Ireland says with those wide eyes. “I’m always looking for something different and unique. It’s fun to see when it’s going to hit that sweet spot between under-finished and over-finished.” She has been experimenting with Triple Sec and apricot brandy barrels, and a “couple of different wine finishes” are all maturing when we speak. The way the stills are designed (by Pickerell) allow for flexibility and are perfect for experimentation on both the front and back end. As with any experimentation, there have been some less successful outcomes. “I did a coffee barrel that was awful,” Ireland says, stifling a laugh. “It was bad. I was thinking like Irish Coffees and I thought it could work really well. People drink whiskey and coffee together anyways but that did not turn out good.” She hasn’t abandoned that idea just yet though. “I do think there are some adjustments that I could make and potentially still get a good product on that line of thought, but our first try was not there.” In terms of unicorns, Ireland says there are a couple of different Californian barrels she’d like to try and she’s trying to get her hands on a rosé barrel. “Not a lot of rosés are barrel-finished,” she says. “But I think that would be super interesting and a lot of fruity flavours would come into the whiskey potentially.” For the time being, the Whiskey Blender is experimenting with the many barrels she watches over. “I’m going out pretty regularly and pulling samples and trying to hit that point where I think we get the best flavour out of the different barrels. I’m getting to continue to push the boundaries of what we can put whiskey into.” One suspects it won’t be long before Ireland’s story inspires a whole new generation of chemistry nerds.
