What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

Introduction The Côte d’Or, the Golden Slope, enjoys a reputation and exerts an influence in the wine world out of all proportion to its size. It possesses none of the grandeur of the Douro Valley, for instance, nor the picture-postcard beauty of South Africa’s winelands. It is not majestic; its beauty is serene, and what strikes the observer time and again is the tiny scale. From north to south it is about 50 kilometres long, is sometimes less than a kilometre wide, and can be driven in little more than an hour. At a push it could be walked in a day. Yet for a thousand or more years this favoured slope has yielded wines that have entranced and delighted wine lovers, with a fair measure of frustration and disappointment thrown in too. Avoiding hyperbole when writing about the Côte d’Or is a problem, for it has held people in thrall for centuries, frequently prompting poetic flights of prose: ‘The Pathetic Fallacy resounds in all our praise of wine … This Burgundy seemed to me, then, serene and triumphant … it whispered faintly, but in the same lapidary phrase, the same words of hope.’ Thus wrote Evelyn Waugh in Brideshead Revisited eighty years ago. Literary critics might cavil at such prolixity, and Waugh himself tamed it severely in later editions, but it was enough to intrigue me decades ago and engender a love for the region and its wines that has never waned. Greater Burgundy is a bigger, more geographically diverse, region than might first be supposed, stretching from Chablis, south-east of Paris, to Beaujolais, north of Lyon. The subject matter of this book, however, is Burgundy’s heart, the Côte d’Or. There is no more celebrated stretch of agricultural land on earth. It has been pored over and analysed, feted and cosseted, obsessed about and sought after for centuries and today, if anything, it exerts a greater pull on wine lovers than ever before. ‘Astronomical’ does not begin to describe the prices now being paid for prized patches of grand and premier cru vineyard, and for the wines produced from them by the top domaines. Such prices hog the headlines and paint a dazzling, though severely one-dimensional, picture of the Côte d’Or today. In the early years of the twenty-first century they are part of the story but they are not the only part. This book aims to get behind the dazzle and flesh out the story, to add some nuance and extra dimension. The Côte d’Or cannot be captured in a sound bite nor, it must be admitted, in a book of this scope – but my hope is that it may add another chapter to the ever-unfolding tale, setting it in the early years of the twenty-first century, a period that may come to be considered by future historians as a golden age for Burgundy but which has brought its own challenges in the shape of those ludicrous prices, the scandal of premature oxidation in the white wines, and the increasing challenge of dealing with extreme weather events such as hail and spring frost. The Côte d’Or has been the subject of forensic scrutiny for centuries, generating a library of books, so why another one now? For the simple reason that it is ever changing. Every year sees new names added to the producers’ roster and old ones slipping away, and thanks to this ongoing evolution the infant domaine of today can be the superstar of tomorrow. The core of the book comprises about a hundred producer profiles. Many fine domaines and négociants whose wines I am happy to purchase and drink have not found a place here. It is important to stress that they have not been included, rather than excluded, simply for reasons of space. The aim was to feature a representative collection of producers, not a top-down selection of the most celebrated names in descending order of renown. As a consequence this book is not, nor was it ever intended to be, a comprehensive A to Z of producers. I write as an amateur du vin, an enthusiast whose admiration for the wines of Burgundy stretches back over four decades, and who has been visiting the region and writing about the wines for some thirty years. I do not trade in wine. I try to see beyond the wine to get something of the backstory, the story of people and place that makes the Côte d’Or so fascinating. To examine the wines in isolation is to dislocate them from that, and not knowing something of the backstory precludes a full understanding of them. A broad lens must be brought to bear on the côte. Too narrow, and the wood will never be seen for the trees. I have learned much by coming across things serendipitously rather than dashing hither and thither, seeing a lot but noticing little. Without time for assimilation and reflection, subtlety and shade are missed. Finally, no gustatory experience can match the thrill of a great Côte d’Or red drunk at its peak. The colour, crimsoned by age; the heavenly scent, perfumed with notes of sweet decay; a sauvage edge, the palate lively and tingling, managing to be so many things at once, oscillating between fruit and spice and meat and game, a merry-go-round of flavour, spiralling on the palate, refusing to be pinned down by anything so prosaic as a tasting note. All the primary components melded by age and yielding up new ones, unsignalled when the wine was young. Everything cohesive and in harmony, like a great orchestra playing at its best. Above all, vital and living, endlessly enchanting and intriguing, engaging the palate and the spirit like no other wine. Raymond Blake on the Côte d'Or

Maylis Marcenat does not fit the stereotype for a Bordeaux producer. Lively, down-to-earth and humble, she’s as unstuffy as they come. She is the fourth generation of her family to run Clos de Sarpe – a small Grand Cru Classé Saint-Emilion estate that has long gone under the radar.  The history of Clos de Sarpe  The Clos de Sarpe name first appeared in 1897, given by a Monsieur A. Ducarpe to his property on the Sarpe plateau. Baron Henri du Foussat de Bogeron bought the vineyard in 1905, merging it with the vines of nearby Badette to create Ch. Haut-Sarpe. Jean Beyney bought Clos de Sarpe in 1923 and revived the original name. His son, Yvan Beyney, took over in 1952, who in turn passed the property to his son Jean-Guy Beyney in 1986. Jean-Guy still owns the estate today but retired in 2021, handing it over to Marcenat, who is his niece. (Jean-Guy has a son, Charles, who gives his name to the property’s second wine and will inherit Clos de Sarpe eventually but isn’t interested in running it day to day.)  The style of the Clos de Sarpe wines through the ages  The style and winemaking have evolved over time – with each generation putting their own stamp on the wines. In the early days, the wine was all whole-bunch fermented, with long macerations (40 to 50 days) and spent several years in concrete tank before bottling. Indeed, under Yvan, this continued. He only sold wine to those who could store the wine properly, and as such some wines spent extended periods of time in tank – the 1966 was in concrete for 10 years, for example. Yvan looked for purity of fruit, picking comparatively late (he was always proud to say he picked at the same time as Figeac, Marcenat says) and didn’t ever use oak. The wines were hard in their youth, needing time to soften, yet having great stability from their long élevage.  Under Marcenat’s uncle, who arrived in 1986, things started to change – with the late 1990s a pivotal moment. Jean-Guy favours powerful wines and reduced the amount of time the wines spent in tank, introducing de-stemming (gradually, from 1997, at first all done by hand) and oak barrels – with the élevage shifting from all concrete to 100% new oak between 1997 and 1999. He hired Michel Rolland to consult from 1998, and reduced yields – cropping a maximum 25hl/ha.  In 2005, Jean-Guy introduced a mechanical destemmer and densimetric sorting  – both of which contributed to a significant shift in quality, and everything has been destemmed since 2010, to encourage a rounder tannin profile in youth. In 2012, the property was granted Grand Cru Classé status – recognising their efforts. Marcenat joined the team officially in 2014, bringing her own vision, pushing for further change from 2016 and finally taking full control in 2021.  Clos de Sarpe today  The Clos de Sarpe vineyards cover 3.68 hectares, all in one block on the Sarpe plateau and south/southeast facing, just a kilometre from the village of Saint-Emilion itself and close to both TrotteVieille and Troplong Mondot, as well as Sansonnet and Haut-Sarpe.  The topsoil is thin here – with just 20cm in places – and lies over limestone bedrock, which contributes to the very high acidity of the wines (normally with a low pH of 3.2-3.4). Over half of the vineyard is between 60 and 80 years old, with the oldest Cabernet Franc now over 100 years in age, planted by Marcenat’s great-great-uncle in 1923.   The vine age combines with the limestone bedrock to help this site weather hot, dry conditions – a particular boon as the climate shifts. The limestone acts like a sponge, holding water, and the roots reach deep into the bedrock, accessing these reserves. Yields are naturally low given the age of the vines, and recent vintages have seen some tiny yields but Marcenat aims for around 35hl/ha in a good year (more than under her uncle and the Rolland influence).  To preserve the age of the vineyard, Marcenat is gradually starting to replant the site. As part of this project, she has added a little more Cabernet Franc, as well as a tiny portion of Petit Verdot. Previously 85% Merlot and 15% Cabernet Franc, today the vineyard comprises 78% Merlot, 20% Cabernet Franc and 2% Petit Verdot.   The family has always worked organically, with no pesticides or herbicides ever used, but the vineyard has been officially certified since the 2020 vintage – something that is of particular importance to Marcenat. For her, the work is all done in the vineyard rather than the winery and the philosophy very Burgundian, with everything kept as simple as possible.  The team is tiny and Marcenat does almost everything herself, supported by Frank Bartolomucci. Today the fruit is all picked by hand, chilled overnight, destemmed and then density-sorted. Each parcel is vinified separately, with most fermented in the concrete tanks that have been used since the 1950s, however the oldest Cabernet Franc is fermented in a 600-litre new oak barrel. She only uses indigenous yeast so fermentations are slow, at least 10 days generally. Maceration times are long, with the wine normally spending around 40, and up to 50 days on the skins, depending on the vintage, but with very gentle extraction. Malolactic fermentation can be challenging with the low pH, so she routinely has to inoculate to force this through (malolactic is essential for wine stability, particularly for wine intended for long ageing).  The portion of new oak has been toned down, with Marcenat ageing the wine for a year in around 70% new oak, with the rest in second-fill barrels (and occasionally some concrete if required). It is then blended together and aged in concrete for around six months prior to bottling without filtration. The oak is all 228-litre Burgundian barrels (versus Bordeaux’s traditional 225 litres), largely Tronçais oak from the cooper Taransaud. Marcenat feels Burgundian barrels pair better with the wine, liking the thicker staves and longer seasoning (30 months versus the 24 that is the norm for Bordeaux).  The Clos de Sarpe wines today  Clos de Sarpe makes two wines: the eponymous Grand Vin and a second wine, Charles de Sarpe, which was introduced in 1997, named after Charles Beyney – Jean-Guy’s son and Marcenat’s cousin. Up to and including the 2015 vintage, the second wine was a saignée of the Grand Vin, used to increase the concentration of the Grand Vin. Since then, it has only been made in certain vintages when there is enough fruit to make a second wine – such as 2019 and 2023.  While most producers will talk about the freshness in their wines coming from the Cabernet Franc, for Marcenat it is the Merlot that brings the acidity, while the Cabernet Franc provides the wine’s structure.  Tasting Clos de Sarpe back to the 1960s, the site’s freshness shines through consistently, as well as a distinctive earthy minerality. The purity of a wine like the 1966 is extraordinary – and it’s holding up beautifully today. You can still see traces of the immense structure the 1975 and 1988 must have had in their youth – providing a gentle grip today alongside their savoury intensity. While the wines were significantly more powerful in style in the late 1990s and 2000s, that power feels balanced today, the 100% new oak integrated and unobtrusive – and the 2001 a particular standout. The 2010 and 2015 vintages of Charles de Sarpe are beautiful wines, with a softer feel and elegance – juice that would be worthy of many Grands Vins.   These wines might once have been known for their power and punch, but Marcenat has tweaked the style, leaning into the natural freshness of the site. She looks for silky tannins and a purity that makes the wines more approachable in youth. It is, she will tell you, very simply the wine she likes and wants to make. Tasting the wines en primeur since she took over suggests that only good things lie ahead here. With each vintage, Marcenat’s imprint on the wines feels clearer and quality belies the growing season’s conditions, testament to both her talent and the terroir.  A note on the Clos de Sarpe labels  As you can see in the line-up for this tasting (below), the labels have changed over the years. The oldest wines made under Yvan Beyney bear a very traditional label, which changed in 1986 to have a blue border when Jean-Guy (Marcenat’s uncle) took over. When the style of wine shifted in the 1990s, Jean-Guy changed the label again (from the 1998 vintage) to one with a gold foil border. The current label was introduced in 2012 when the property achieved Grand Cru Classé status.   The vertical tasting: Clos de Sarpe 1966-2015  2015 Charles de Sarpe: Maylis Marcenat recalls the 2015 harvest vividly – as it took place around the same time that she gave birth to her twin daughters. It was the last vintage in which the second wine was produced as a saignée of the Grand Vin, echoing its proportions of 85% Merlot and 15% Cabernet Franc, and effectively a less powerful version, aged in 50% new oak and 50% one-year-old oak. The wine is still lithe and vibrant, offering bright red berries on the nose. The palate displays more savoury tones, with macerated red plum and a fine chalky coating of tannins, cut by bright acidity that drives through to a mouthwatering finish. This is in a beautiful spot now.   2015 Clos de Sarpe: The typical blend of 85% Merlot and 15% Cabernet Franc (as with every vintage shown in this vertical), the 2015 Clos de Sarpe was aged in 100% new oak. As you might guess from the élevage and the power of the vintage, this is not a shy and retiring wine – yet Clos de Sarpe’s trademark acidity drives through its core and balances the wine’s intensity. It still feels youthful, packed with dark cherry fruit on the compact nose, that gradually offers sweeter, scented tones with time in the glass. There’s a solidity to the palate – with a mass of rich, concentrated fruit, yet there’s a juiciness here to that makes it mouthwatering, with a sweet plumpness. It’s round and full, with a firm grip of tannin on the finish. Decant to enjoy now, with plenty of air, but this will unfurl over the next decade and beyond.  2010 Charles de Sarpe: The 2010 vintage was the first in which the fruit was all destemmed at Clos de Sarpe. Tasting the second wine with winemaker Maylis Marcenat, she can’t help but wonder why her uncle didn’t put such gorgeous juice into the Grand Vin. It’s a supple, beautiful example of mature Saint-Emilion now – the nose subtle, shifting between sweet fruit, lifted florals and black truffle complexity. The palate is long and balanced, beautifully resolved, seamless and soft, still with mouthwatering freshness and an earthy mineral edge to the long finish. Lovely.  2001 Clos de Sarpe: This was a standout in our vertical – and a wine that holds a special place for Marcenat. As she told us, “For me, it’s better than 2000 – with more freshness, more balance, more everything.” The 100% new oak is integrated, with the nose now showing plenty of tertiary complexity: iron, sousbois and a subtle leafiness mingles with the still fresh, soft strawberry fruit. There’s a transparency here, yet still plenty of concentration – the palate still lithe with soft, plummy red fruit and high juicy acidity that supports the fruit and fills the long finish, complemented by an earthy note. Superb.  1998 Clos de Sarpe: This was one of the first vintages to be aged in oak, seeing 80% new wood for its élevage. It was a great vintage for the Right Bank – as is clear from this wine. The 1998 Clos de Sarpe is beautifully mature, with savoury, leathery aromas and darker bramble fruit versus the more red-fruited 2001 shown alongside. The palate has a savoury iron seam, the tannins still offering a satisfying chewy grip to frame the juicy hedgerow fruit. This blossomed in the glass, revealing further complexity and vibrancy. Long, balanced and very impressive.  1988 Clos de Sarpe: The 1988 vintage offered few challenges and is a fairly classic year. It comes from the era when Clos de Sarpe was all whole-bunch fermented and saw no oak (aged only in concrete) – as with the two vintages below. There was a slight mustiness to this wine at first, but gradually the wine revealed its true character, with sweet, dried fruit and intense, savoury notes – an umami richness reminiscent of marmite. There is still surprising structure and power here, although the wine isn’t quite as concentrated as the 1998, for example. The acidity keeps things fresh, with the scent of truffle and undergrowth lingering on the finish.  1975 Clos de Sarpe: This was recorked in 2020. The 1975 vintage produced some particularly tannic wines – and you can still feel the structure of the year here, with a phenolic grip that frames the palate. The nose is intensely savoury, appealing to lovers of old-school Bordeaux with barnyard and horse leather, gradually revealing a herbal lift – something almost menthol-like. Although this is firmly tertiary in profile, there’s still vibrancy to the palate, with soft waves of fruit and an iron-edged finish.  1966 Clos de Sarpe: Some older vintages of Clos de Sarpe spent extended periods of time in tank before bottling – as is the case with this 1966, which stayed in concrete for almost 10 years. It was recorked in 2019 and is an amazing wine that is singing today. The nose still offers surprising fruit purity – soft, cooked plum and deeper bramble fruit, as well as savoury sousbois and – with time in the glass – liquorice and an almost marmite intensity. It’s ripe and vibrant, with amazing freshness on the palate, the tannins are seamlessly integrated with the sweet fruit. Few people have heard of Ch. Clos de Sarpe – and even fewer have followed its evolution in recent years. We sat down with Maylis Marcenat – the fourth generation of her family to run the 3.7-hectare estate – to taste through a vertical and explore the site’s identity through the ages

Historically peat was used as a fuel source. In recent history, it has been a source of great fervour and one-upmanship as whisky producers clambered to create the peatiest whisky on the market.  For the most part, this narrative and competition has played out on the remote and beguiling Hebridean isle of Islay and its nine malt distilleries. One even deciding the prefix “super” was required on the label because “heavily-peated” was no longer sufficient. But this could all be about to change as Seattle-based Westland Distillery finetunes an industry first: locally-peated American single malt whiskey.   “We are not trying to make it taste like Islay,” Co-Founder and Managing Director Matthew Hofmann says. “We want Solum to exhibit its own terroir and its own flavour influence so long as it tastes good.”   In the 10 years since it was founded, Westland has sought to challenge every stage of whisk(e)y-making convention from barley, casks and now peat. For the past five years the team has been encountering setbacks while they navigated the uncharted territory of producing peated malt in the United States. The first was the discovery that a peat malting company didn’t exist in America, despite Washington State boasting 50,000 acres of peat.   While Hofmann worked on options closer to home, Westland turned to the historic Glasgow-based malt producer Baird’s. But he knew he had struck on something and eventually started working with a start-up malting company, Skagit Valley Malting, to produce what the company believes is the first commercially produced batch of peated malts in America.   Pioneering a locally-peated whiskey created all sorts of headaches – or as Hofmann calls them “interesting challenges” – for the team. In one of the first blind tastings, peat flavour notes were entirely absent.   “When you are trying something new like this, there is an inherent amount of risk,” Hofmann says. “It’s very much an ongoing process and we are far from being finished. It’s more accurate to say we have barely begun on this project.”   Westland uses approximately two cubic yards of peat from a local 30-acre bog which equates to a month’s production and roughly 100 casks of whiskey a year. Whereas others typically cut and drain peat – which has a negative impact on carbon dioxide and methane release, and damages the ecology of the area – Westland uses a different process with a backhoe which keeps the bog intact apart from the small amount of peat they use.   “The stuff we have got out here is wild,” Hofmann says with unfettered excitement. “There’s 11 different species of stagnant mosses. There’s wild cranberries. There’s wild crab-apples. There’s a lot more woody materials – cedar – that end up making it into the bog itself because the area is still heavily wooded as well. So, the result on the peat and aroma is very different.”   Hofmann said Westland will release Solum – Latin for “soil” – in winter 2023 but admits he doesn’t know what the product will taste like yet. He says there is a Mezcal profile at this stage, with vegetal smokiness and spice, but cask impact factors are currently unknown.   “This has been one of the most difficult things we have worked on here at Westland,” he says. “Which is saying something because we have a habit of diving headfirst into things we know very little about.”  One of the main challenges, Hofmann says, is the lack of industry and by extension experts in the country. “Nobody understands the impact of peat and how to use it,” he explains. “That can be quite interesting because when you’re learning it from scratch and you have zero base line knowledge, you tend to approach things in a different way.”   This has led to further innovation in production with engineers at the helm of the project and meant sustainability has been high on the agenda in the notoriously eco-cognisant region.   “We don’t quite know yet what the path is with Solum,” he adds. “Is it going to be about the different areas of the bog and peat flavours you might get from that – kind of like Colere is with barley? Or is it going to be about a general Washington State peat flavour?”  The exact destination may be unknown, but it’s guaranteed to be an entirely new take on a very old tradition.   Browse all current whisky listings or read more Editorial

“We’re just sort of making it up as we go along,” Andy Erickson says to me on our transatlantic Zoom call, shrugging and smiling as we talk about his and his wife’s project, Favia. It’s not necessarily what you’d expect this star consultant winemaker to say – having helped craft the likes of Screaming Eagle, Harlan, Dalla Valle, Staglin, Mayacamas and more. It’s hard to believe that anything this man does is a fluke of fate. And yet this self-effacing tone is a thread that runs throughout my conversation with Erickson and his wife Annie Favia.  Favia brings her own, similarly enviable resume, having worked at Kongsgaard, Corison and for many years alongside cult viticulturist David Abreu, giving her unparalleled experience of Napa’s finest vineyards. She and Erickson met at a dinner party almost 30 years ago, instantly hit it off, and within six months were making their first barrel of wine together, tucked in the corner of their garage. That first experimental barrel of 1996 Russian River Pinot Noir (of which they still have a few bottles) was the start of something that grew as they and their family did, and the Favia label was born in 2001, although it was a couple of years before there was more than a barrel or two to sell.   The concept behind the brand is simple: “It’s our expression of what we think Napa Valley wine should be,” explains Erickson. But Favia has also been a project where they could experiment, push the envelope and play with the “pioneering freedom” (in Erickson’s words) that Napa offers. The flexibility to purchase grapes from different areas, pick and choose varietals, and work with no constraints in the winery is something they clearly savour.  The project focuses on Cabernet Sauvignon and Cabernet Franc – the latter in particular a grape they both love. Inspired by the likes of Ausone, Cheval Blanc, the reds of the Loire and Dalla Valle’s Maya (a wine that Erickson now makes), they were keen to play with the varietal, crafting two Cabernet Franc blends – Cerro Sur and La Magdalena. As Annie Favia explains, “[Cabernet Franc] allows you to make one kind of wine if you pick it at one time, and then a completely different wine if you pick it at another time.”  More than anything, however, Favia is about expressing a sense of place and connection to the land. “When I was growing up, my mom was an avid gardener and I spent a lot of time with her in the garden,” says Annie. “So it's always been really kind of home to me.” It’s unsurprising perhaps that their Coombsville property is far from just a vineyard and winery, but a homestead of sorts. “We really love to grow all kinds of things,” Annie says eagerly. While vines are the main crop, Annie also farms a range of other plants – largely for her loose-leaf tea company, ERDA, but also fruit and vegetables for the family table. “Growing different crops allows you to look at grapevines in a different way,” she explains.   For the Favia label, they work exclusively with fruit from Oakville and Coombsville, and while Oakville is arguably one of the most prestigious appellations in Napa, Coombsville is less well known. Fruit from the AVA has often been blended away into regional wines, but with its volcanic soils and proximity to the San Pablo Bay bringing cooling influences, they love its concentrated power, naturally fresh acidity and savoury quality, and more forward-focused tannins versus the broader profile of Oakville.   Although Erickson is increasingly focused on Favia, he still consults for a handful of carefully selected estates – something he can’t see giving up. “It’s a great outlet,” he tells me, explaining how different it is to channel a client’s vision for a project, versus craft your own wine exactly the way you want. Much like the various crops they farm, it’s another way for them to learn, experiment and develop. And yet, “Presenting something that you’ve made to people and getting a response…” Erickson says. “I love that part of what we do.”  Two decades after Favia was born, they’ve received significant investment from the Huneeus family (which owns Quintessa), along with a new 86-acre property in Oakville, where they’ll soon be starting work on a new winery, taking the project to the next level. “We’re going to be doing exactly what we’ve done for 20-plus years, but now have an even bigger farm and more fruit trees and more gardens and more wine to share with people. And it’s just really fun,” says Annie, the excitement clear in her expression. They’ll be bringing back Sauvignon Blanc, which they’ve made in the past, and are making their first wine with a tiny plot of Malbec they planted – a variety they’re considering with climate change.  On paper, Favia and Erickson are a formidable duo – with CVs that offer a roll-call of Napa icons – and yet they are entirely unassuming. Their absolute passion for the vine, for farming, the region and their craft shines through; and while they might be as down-to-earth as they come, it’s already clear that Favia is destined to reach great heights.  The latest releases of Favia are available now

Growing up: Favia

If you haven’t already heard about Baettig, we urge you to read some of our previous coverage of this rising-star producer. Conceived by Francisco Baettig (the winemaker behind Errázuriz, Seña and Chadwick) and Carlos de Carlos (previously Commercial Director at Errázuriz, he now works for Paul Hobbs) over dinner in London in 2010, Baettig is one of Chile’s most exciting projects – crafting site-driven wines from Malleco and the Maule.  The duo spent years seeking out the right site – realising that to find vineyards that met their standards, they’d have to plant them themselves. In 2013 they put their first vines in the ground, planting Burgundy clones of Chardonnay and Pinot Noir in Traiguén, in the Malleco province. Both Francisco and Carlos had family ties to the region – making it seem like fate.  The site, however, wasn’t chosen purely for their emotional connection to the area, but with an eye on sustainability and quality. This is one of Chile’s southernmost wine regions, with red clay, clay loam and volcanic soils, cool conditions, 25% less sunshine than the Central Valley and – most importantly – plentiful rainfall, allowing them to dry-farm the vines and produce restrained, Burgundy-inspired Pinot Noir and Chardonnay with moderate alcohol levels, bright acidity and vibrant fruit. Francisco is clear that the quality of their vine material has been key to their success – as it is only relatively recently that Chile had access to high-quality, clean Burgundy clones.  While Baettig started with Chardonnay and Pinot Noir, the producer has since added Cabernet Sauvignon from old vines in the Maule to the range, unsurprising given Francisco made his name making Chile’s icon wines.  Fourteen years after they first imagined their joint project, we welcomed Francisco to London to look back at the Baettig journey so far – tasting through a vertical and exploring how the project has developed and evolved.  About the Baettig range  There are currently two tiers to the Baettig range, with the idea that a top tier, single-vineyard offering that will be their “Grand Cru” of sorts, is likely to be added in the future. The current range comprises:  Vino de Viñedo: these wines are a vineyard selection designed for earlier drinking, effectively a “village” equivalent. The Chardonnay and Pinot Noir at this level go by the name of Los Parientes (“the relatives”, a reference to the closeness of the different parcels), while the Cabernet Sauvignon is called Los Compadres (“close friends” – a tribute to the growers with whom they’re working). Los Compadres is sourced from various dry-farmed, cool plots in the more coastal areas of the Maule, with the vines all over 30 years in age and some up to 150 years old, creating lively, juicy and intense expressions of Cabernet Sauvignon. The first vintage of the Los Parientes Pinot Noir and Chardonnay was 2019, while the first vintage of the Los Compadres was 2021. These may be the entry point to the Baettig range, and they are made to drink on release, but they also – like good village Burgundy – have capacity to evolve and will only benefit from an extra year or two in bottle.  Selección de Parcelas: their “Premier Cru” equivalent range, made in smaller volumes from specific parcels and built for longer ageing. These wines see a higher proportion of new oak and longer ageing prior to release. The Chardonnay and Pinot Noir are labelled under the Los Primos name (“the cousins”), while the Cabernet Sauvignon is named Los Padrinos (“the godparents”). The Pinot Noir comes from their El Primo, Chuir, and La Cuñada parcels, chosen for their elegance, structure and ageing potential; while the Chardonnay comes from the Triángulo and Llaima parcels, creating mineral, vertical wines that are all about tension. The first Los Primos Chardonnay and Pinot Noir were made in 2016, with the first wide release from 2017, and Los Padrinos was first made in 2022. Volumes of these wines are tiny, with just 300 to 350 cases made of each of the Selección de Parcelas.  About the winemaking The emphasis with Baettig is firmly on expressing site – and as such the winemaking is very “light touch”, allowing the sense of place to shine through in the wines. The style has evolved, with the use of oak reduced a little from the earliest vintages, generally shifting toward less time in barrel, larger casks and smaller portions of new wood. The fruit is all hand-picked and fermented with indigenous yeasts. The cooler sites, combined with the way Baettig farms and when they harvest, produces fruit with naturally low pH, allowing them to use minimal amounts of sulphur (although with sufficient doses to allow the wines to age and be shipped around the world).  For the Chardonnay, it is all whole-cluster pressed and cold-settled, prior to native ferment in old French barriques. Malolactic fermentation on the Chardonnay is left to happen or not, according to the vintage conditions (with often around a third going through). The élevage for all the wines varies according to the vintage, but the Los Parientes Chardonnay normally spends eight to 10 months in cask, with up to 15% new oak, while the Los Primos spends between 10-15 months in barrel with up to 35% new oak. The new oak for the Chardonnay is all larger 300- and 400-litre casks. A portion of the Pinot Noir is whole-bunch fermented (typically 10-20%), with the rest de-stemmed – with fermentation all in used oak. The Los Parientes stays in barrel for around eight to 10 months, with up to 15% new oak; for the Los Primos, it is 15-16 months, with up to 40% new wood – with the new oak all 300-litre barrels.  For the Cabernet Sauvignon, the fruit is all de-stemmed. Fermentation temperatures are low at around 24-28˚C, with maceration for a maximum 20 days, given the natural concentration and structure of the fruit. The Los Compadres is aged for 10 months in French oak (20% new), while the Los Padrinos spends 15 months in 65% new oak (including around a third in larger 300-litre barrels).  Tasting through the range, there is a clear stamp of style – a flinty restraint, with the emphasis on crunchy fruit and minerality, vibrant acidity, moderate alcohols. While some of the earlier vintages might have offered more overt oak in their youth, this has integrated with time in bottle – and the wines offer at most a subtle spicy complexity. They are beautifully judged, pure expressions of Traiguén.   About the vintages 2022: Generally speaking, 2022 was an outstanding vintage. In Malleco, the year was cooler than average. Winter was relatively dry, with little rain in spring and cool conditions including frost in September and October, leading to particularly low yields. Weather warmed up in February before cooling again in March and April, which also saw quite a lot of rain. This resulted in a late harvest of a small crop of fruit, with great intensity, concentration and excellent tension – with high acidity levels retained thanks to the cooler conditions. In the Maule, the season was moderately warm, producing a more generous yield than further south but similarly high quality. The weather here was warmer in December and temperatures close to average from January through to March. Moderate rainfall in March and April refreshed the season and eased the final stage of ripening, with the fruit offering good acidity, colour and aromatic intensity. The 2022s offer an up-front richness of fruit, with good backbone of acidity – in some ways a combination of 2020 and 2021.  2021: The 2021 vintage was a cooler year – producing wines where the emphasis was on elegance, finesse and tension, perfect for the Baettig style. The winter in Malleco was rainy, with 650mm of water over June and July, laying the groundwork for a good budbreak. Spring was dry and reasonably warm, although a late frost in September reduced yields. Summer was cool, with some rain over December and January (90 mm in total across the two months), allowing the fruit to ripen slowly ahead of a late harvest, developing great aromatic complexity and preserving the acidity levels. These should age particularly well.  2020: This was a warmer year versus 2021, producing richer-styled wines. There was plenty of rain in June and July, however this dried up in August, with little rain for the rest of the growing season. Temperatures rose and the hot, dry conditions allowed the grapes to ripen easily, although an early harvest was key to preserve freshness and tension to complement their natural intensity and generosity. Offering a little more flesh, particularly at this more youthful stage, versus the 2021s, the 2020s are juicy and open, yet with everything in balance. The one we’d pick for drinking now, although there is certainly no rush here.  2016: A rainy winter led on to a cool and rainy spring, with later-than-normal flowering and fruit set and a small crop. Summer was dry and largely warm, and the fruit was harvested early, producing wines that combine refreshing acidity and good density of fruit. The 2016 Los Primos Pinot Noir and Chardonnay were never released, the tiny volumes of Baettig’s first crop, so it was a real treat to taste these special bottles, offering a glimpse of the wines’ ageing potential – with both drinking beautifully.  The vertical: tasting Baettig Chardonnay 2022 Vino de Viñedo Los Parientes Chardonnay: This was really showing well, even though it has only just been released. It’s pure and linear, driven with its intense, stony purity, but there’s a pleasing fatness to the fruit behind, with a mouth-wateringly juicy finish and long, saline tang to the finish. Aged for 10 months in only used oak. Production: 16,909 bottles  2020 Vino de Viñedo Los Parientes Chardonnay: The warmth of the 2020 vintage, combined with the cool climate of Traiguén and Baettig’s trademark flinty, lean style, has created a gorgeous Los Parientes in 2020. Now with a few years in bottle, it’s drinking beautifully. The wine remains taut – dominated by vibrant citrus that drives through its core, and the bright acidity brings incredible tension. Yet, there’s also a softness to the wine, with a suppleness to the palate and its ample riper stone fruit that flawlessly complements the mouthwatering zest of the long finish. Punches well above its weight. Aged for 10 months in 10% new oak. Production: 15,240 bottles  2021 Selección de Parcelas Los Primos Chardonnay: The 2021 Los Primos is incredibly impressive – and the step up from Los Parientes clear. There’s a creamy, lactic note on the nose, working alongside lemon curd, honeysuckle and bright citrus and green fruit. There’s a lushness to the fruit, with gorgeous length and energy, outstanding tension and an everlasting finish, with stony, saline minerality that lingers long after the wine is gone. You can drink this now, but it will be even better if you can give it a couple of years in bottle. Aged for 15 months in 35% new oak. Production: 3,480 bottles  2020 Selección de Parcelas Los Primos Chardonnay: Much more open now than the 2021, the 2020 Los Primos is rich and concentrated, with riper white peach fruit and honeyed complexity. There’s a softness to the wine, reminiscent of the suppleness of the 2020 Los Parientes, but additional depth here. It’s round and enticing, still with a backbone of taut acidity, and a long finish with just a touch of oak spice. Hard to resist now, drink this over the next five years. Aged for 15 months in 38% new oak. Production: 4,069 bottles  2016 Selección de Parcelas Los Primos Chardonnay: The first vintage of Selección de Parcelas, with the very first fruit from the Baettig vines, and never released. The 2016 is showing some beautiful development, with honey, sweeter plump peach and nutty complexity. Cooked apple and dried mango sit alongside a zing of limey citrus, with a line of bright acidity that runs through the palate and brings lovely energy. Gorgeous. Aged for 16 months in only used oak. Production: 2,160 bottles  Pinot Noir  2022 Vino de Viñedo Los Parientes Pinot Noir: There is 10% whole-bunch in this vintage, and combined with the youth of the wine, it is shining on the nose – with overt pepper spice, floral perfume and stemmy complexity that makes it aromatically enticing. The palate is pure and bright, with juicy but concentrated mulberry and black cherry, with a saline edge and fresh, chalky purity. Incredibly moreish. Aged for eight months in 14% new oak. Production: 13,205 bottles 2021 Vino de Viñedo Los Parientes Pinot Noir: For this cooler vintage, Francisco opted to reduce the portion of whole-bunch fermentation a little. The wine is bright, crunchy and pure, with a lovely restraint from the extended growing season. Floral tones (rose, violet) sit alongside crunchy red fruit, leading to a palate of effortless purity and length. Vibrant, mouth-wateringly fresh with an earthy, saline finish and very fine tannins. Aged for 10 months in 10% new oak. Production: 13,400 bottles  2020 Vino de Viñedo Los Parientes Pinot Noir: This is in a lovely spot right now – sharing the supple texture of its Chardonnay sibling. It is beautifully elegant, with tealeaf aromatics, gentle spice and crunchy berry fruit. Structurally, it is fine-boned – the fine, chalky tannins adding a graceful outline to the mouth-watering fruit. Gloriously fresh, the finish is saline with the slightest hint of smoke. Dangerously drinkable and incredible value. Aged for 10 months in 10% new oak. Production: 15,180 bottles  2021 Selección de Parcelas Los Primos Pinot Noir: This is such a baby at the moment – and clearly needs time to reveal its full potential. It’s much more savoury than the 2020. There’s some gunflint reduction, but beneath that smoky intensity and an earthiness, alongside the subtle florals, bright redcurrant and raspberry. There’s more grip to the tannin, a tightness to the fruit, but the structure and length offer great promise. A wine of tension. Made with 20% whole-bunch fermentation, aged for 16 months in 34% new oak. Production: 3,409 bottles 2020 Selección de Parcelas Los Primos Pinot Noir: It’s immediately evident that this is Baettig’s Premier Cru – with notably more concentration and complexity. The warmer 2020 vintage produced a vibrant and intense wine, with vivid, juicy red cherry and raspberry fruit, complemented by more delicate floral notes. Alongside the impressive weight of fruit, there’s a pomegranate freshness and mineral line, with the slightest hint of smoke and spice, and a framework of superfine, supple tannins. Made with 20% whole-bunch fermentation, aged for 15 months in 38% new oak. Production: 4,102 bottles 2016 Selección de Parcelas Los Primos Pinot Noir: This was, for me, the star of the tasting. The nose was effortlessly complex, shifting between soft florals, spice, violets and crunchy red fruit, with a dried-earth note too. There was a glorious suppleness here, silken and flowing across the palate, with a fine, chalky texture to the tannin, juicy cherry and a subtle, savoury finish. Beautiful. Everything was destemmed in this vintage and the wine aged exclusively in used oak. Production: 1,440 bottles  Cabernet Sauvignon  2022 Vino de Viñedo Los Compadres Cabernet Sauvignon: This is a glorious expression of bright, modern Cabernet – pure and pristine with crunchy red and black fruit, vivid pencil shavings and an herbaceous green-pepper edge. There’s such intensity to the palate, with its tart red berry fruit, mouth-wateringly fresh and juicy. The abundant fruit is framed by graphite tannins, leading on to a spicy finish. Aged in 20% new French oak for 10 months. Production: 17,000 bottles  2022 Selección de Parcelas Los Padrinos Cabernet Sauvignon: The first vintage of Los Padrinos is only offering more since we first tasted it in February. It’s strikingly different to Los Compadres – a much darker, spicier and smokier expression. The two wines share their tension, with firm acidity that forms the backbone of this wine and drives the long finish, as well as gloriously crunchy and fresh fruit. The nose is savoury and brooding at first, but sweeter plum and cassis fruit lurks behind, while there’s a tart, bright bite to the palate. It still feels compact at this youthful stage, the power and gum-drying tannins needing time to unfurl. Aged for 15 months in 65% new French oak. The story so far: Baettig vertical

A couple of years ago, I wrote a book called Time Tamed. In retrospect it is an ambitious title. Even at the time I realised as much, describing man’s efforts to tame time as being a task as Sisyphean as it is Canute-like. Humankind invented time to make sense of the world around us. It can be argued that an understanding of time – and the ability, however rudimentary, to track it and act according to it – is right up there alongside the ability to fashion tools and communicate using spoken language, as one of the characteristics setting humans aside from the other species with which our planet is shared. In the beginning at least, the extent of our relationship with time was a cognitive reaction to phenomena that permitted the prediction of cyclical seasonal events such as the migration of animals, and later forecasting the effect of variations in terms of temperature and daylight hours on the flowering and fruiting of crops.   The triumph of human intellect, and the beginning of our species’ march to its position at the apex of life on our planet, was to make conscious use of this intellectual edge that allowed us to benefit from the recurring patterns of events foretold by observation of such astronomical phenomena as the rising and setting of the sun, the waxing and waning of the moon, and the lengthening and shortening of the diurnal span. Lunar phases repeat themselves in a cycle of 29½ days; the tropical year as measured, say, from winter solstice to winter solstice (when the day is shortest and night longest) is approximately 365¼ days. The interaction of the solar and lunar calendars, providing, respectively, the year and the 12 months in it, gave us the framework upon which to build civilisation. “If time was conceived as the precise measure of an ordered succession of states, it should come as no surprise to find that its first criterion of measurement in every known civilization should have been the movement of the stars (which is both movement and return, in other words a ‘constant periodical appearance’)”, wrote Umberto Eco. He next posed the rhetorical question: “Even if there were nothing more to time than this, it would still be interesting to ask why, for so many centuries, men measured out the years, the months, and the days, but came so late to measuring hours and minutes. The main stumbling block was the need for mechanically precise instruments to measure them.” Calendars of varying degrees of sophistication have been in use for millennia. In my book, I wrote about a series of 12 fire pits in Scotland that – in conjunction with the known location of sunrise through a mountain pass on the morning of the winter solstice – functioned as a calendar in the Mesolithic period, 10,000 years ago. Compared to that, widely available accurate timekeeping is only a relatively recent phenomenon. Had you asked a medieval peasant the time, he would have probably told you what season it was and, as recently as the mid 19th century, time was measured according to local meridians that gave a local solar noon. Britain, at the time the world’s preeminent industrial power, only got its first real taste of unified national time in 1851, when millions visited the Great Exhibition, travelling from all corners of the Kingdom by trains that ran to a single national time. But in the last couple of centuries the pace has hastened: we have become, as Eco put it, “children of a clock civilization”, and I am sure there are those who would argue that it is from there that many of our problems have arisen.   The industrialisation of time was of particular interest to Karl Marx. “The clock is the first automatic machine applied to practical purposes,” he wrote to Friedrich Engels in 1863, “and the whole theory of production of regular motion was developed on it.” Even though abstract, time had become the ultimate economic commodity. Life became lived according to the maxim ‘time is money’ and with a Gradgrindian myopia we have concentrated on ever smaller divisions of time until we have become not children but slaves of the clock. Time was never tangible, but in the past it linked human experience to the cosmos through the tracking of solar and lunar cycles. The division of time into units that are independent of astral cycles has distanced us from the natural rhythms of life. Division of time into small units standardised around the world has facilitated the synchronisation of activities that enable us to live in our modern world of ‘just-in-time’ production, conurbations with populations of millions, and a network of integrated transport systems that allow us to travel from one side of the world to the other well within the span of a single day. It has taken the recent and as yet unresolved upheaval wrought upon our carefully organised world by the COVID-19 pandemic to reveal the humbling fragility of the system by which we live and regulate our lives. Moreover, one could argue that it is the application of monetised time that is responsible for the ravages that we have perpetrated on our planet in pursuit of our industrial goals. But before we blame the rise of the timepiece for the ills of the world, there is an aspect to watchmaking that can enable us to reconnect with the cosmos in a way that is familiar to those conversant with the world of biodynamic winemaking. So, when the editor of FONDATA suggested biodynamic winemaking as the prism through which to view watchmaking, I was intrigued. Once upon a time, a long time ago, I did work in the wine trade. However, we parted company during the 1980s, some time before biodynamic winemaking became what I believe is called ‘a thing’. Obviously, all readers of FONDATA understand the basic principles of biodynamics, but I needed to undergo a quick crash course in what is just one of the legacies of the quite extraordinarily colourful and at times controversial Rudolf Steiner; the late 19th- and early 20th-century Austrian philosopher, social reformer, writer, educationalist, editor, architect, spiritualist, scientific spiritualist, mystic, Goethe superfan, campaigner for the independence of upper Silesia – and much more besides. He came up with everything from a new, quasi-religious movement called ‘Anthroposophy’, to a new approach to medicine; a new artform, ‘Eurythmy’, to a new form of agriculture, ‘Biodynamics’. Steiner turned his fecund and agile mind to the problem of agriculture in the early 1920s and addressed many of the concerns that we are still grappling with a century later, advocating a sustainable ecologically-oriented approach to farming that eschewed chemical pesticides and fertilisers in favour of natural alternatives and conducting agriculture based on an astronomical and astrological calendar. Steiner is memorable because he could enliven even the relatively practical activity of growing things with woo-woo mumbo jumbo of a level to which even Gwyneth Paltrow can only aspire: for instance, burying manure in a cow horn over winter and then exhuming it; or controlling infestations of field mice by sprinkling fields with the ashes obtained by burning the skin of a “fairly young mouse” obtained “at a time when Venus is in the sign of Scorpio”. And yet, such was the power of his way of thinking that it would be wrong to characterise him as a total crank: Steiner was apparently taken seriously by Hitler as a threat to National Socialism.  But back to wine. Prima facie, there is little to link the joyous celebration and bounteousness of viniculture with the mechanical slicing of hours into minutes, into seconds into milliseconds. However, to view watchmaking as being just about the business of telling the time is to underestimate what is in my opinion one of the most engrossing areas of human ingenuity and creativity, where science, mathematics, mechanics and art meet. I like to think about watchmaking as being connected to the detection and calibration of rhythms and patterns … biodynamic farming is all about rhythms and patterns, especially those of the lunar calendar. In his writings, there are times when Steiner could be writing the script for Star Wars – when he talks of entering into “the forces that regulate growth, crucially the ‘fully-evolved Moon-force’”.  The Biodynamic Association uses less picturesque language to summarise the approach, saying that the philosophy of biodynamic farming is founded on “the influences of the moon, planets and constellations on plant growth”. “Each month the moon moves through all twelve constellations of the zodiac in turn. This is referred to as the moon’s sidereal cycle and forms the basis of the biodynamic calendar. Although the waxing and waning (synodic) cycle is the most well-known lunar rhythm, it plays a small part in this calendar.” The indication of moon phases has long been a feature of watchmaking, and even if knowing whether one is living under a waxing gibbous moon is not of primary importance to most of us, the function is undeniably decorative when artistically transferred to a watch face – the moon disc, often decorated with a background of stars, making a complete rotation once every 29½ days. Watches with more advanced astronomical functionality feature sidereal time as well. And this year, the long-established watchmaker Jaeger-LeCoultre demonstrated that it is capable of getting seriously cosmological. To celebrate the 90th anniversary of its famous Reverso model, it released the world’s first four-sided watch, the Hybris Mechanica Quadriptyque. As its name suggests the Reverso flips over to reveal its back. Initially conceived as a protective measure, more recently the back has been used to display other information (another time zone for instance). Now, the cradle in which the watch sits on the wrist has also been mechanised to offer two further planes for display – much in the way that one can connect multiple screens to a single computer rather than having to be constantly opening and closing windows. And Jaeger’s watchmaking wizards have turned faces three and four into a banquet of lunar information.  On the interior face of the cradle there are three displays giving the synodic cycle in the northern hemisphere, the draconic cycle (the height of the moon) and the anomalistic cycle (apogee and perigee, when the moon is respectively furthest from and nearest to the Earth), while the fourth side of the watch gives the synodic cycle in the southern hemisphere.   It sounds like an observatory on the wrist and according to the makers: “the Hybris Mechanica Quadriptyque can predict the next global incidence of astronomical events such as supermoons and eclipses – the world’s first wristwatch to provide such a deep reading of the cosmos.” I imagine even Steiner would be impressed especially as in biodynamic circles cosmological connections are crucial. Biodynamic agricultural activity is governed by knowledge of the behaviour of celestial bodies: ascending moon days favour certain agricultural activities while other tasks are better performed on descending moon days. Eclipses, apogee, perigee, and new moons all have their associated agricultural messages for the biodynamic farmer.   “It’s connected into the cosmos,” explains Philippa Hegarty of Hegarty Chamans, a vineyard in the foothills of the Montagne Noire in the Minervois. “We find an explanation that people respond to is; if the Moon has such a strong tidal influence then it can certainly move sap up and down a vine and that’s what we work with at different times of the year.” Providing timing of the movement of the tides is another function that the mechanical clock or watch can perform; indeed it is one of the oldest, predating the minute hand, the second hand, the wristwatch and even the pocket watch. The provision of times of high tide by a mechanical timepiece can be traced back to the 14th century and the famous Astronomical Clock designed by Richard of Wallingford, Abbot of St. Albans – which as well as showing the fixed stars and charting the movements of the sun and moon (complete with ecliptic nodes – another important feature for biodynamic winemakers) gave the times of the tides at London Bridge.   In fact, the technical leap forward accomplished by clockmakers in the 14th century rivals that of computer networks in our own time: at the end of the 13th century time was still being told by clepsydrae (like an hour glass but with water instead of sand) and by the middle of the following century, man was mapping the cosmos using mechanical machines of unimaginable complexity. If Giovanni de Dondi’s Astrarium of 1364 looks a little like a lunar landing module, then that was not the only thing it predicted. About a metre high and standing on protruding feet, the Astrarium featured seven panels with dials that showed the movements of the sun, moon and the then-known planets: Mercury, Venus, Mars, Jupiter and Saturn. Further dials indicated dates of fixed and moveable religious feast days, the intersections of the solar and lunar orbits, and time of sunrise and sunset. In comparison, the 24-hour clock seems prosaic, almost otiose. Another common feature of these miracle machines of the Middle Ages was the zodiac. Rather than being relegated to the horoscope section of the tabloid press, astrology was as much of a science as astronomy, and a medieval megaclock could not take itself seriously without a dial or two depicting the signs of the zodiac. The celebrated Three Kings Clock of Strasbourg Cathedral was no exception. As well as its astrolabe dial, ecclesiastical calendar, carillon mechanism that filled the air with religious music, and the automata that replicated the nativity, an illustrated panel linked signs of the zodiac to body parts, connecting human health with the movements of the celestial bodies, thus indicating propitious or hazardous times for that key medical procedure of the times: bloodletting. The influence of the zodiac constellations is an important part of the biodynamic playbook. “Since ancient times the twelve zodiac constellations have been associated with each of the four elements: earth, water, air and light,” observes the Biodynamic Association. “Three constellations are connected to each element, and each element is related to a part of the plant: thus, Earth – root; water – leaf; air – flower; fire – fruit.” “For example, for sowing or harvesting carrots, an earth – root day should be chosen; for lettuce, a water – leaf day; for beans and apples, a fire – fruit day; and for flowers and broccoli, an air – flower day.” As the example of the Jaeger-LeCoultre Hybris Mechanica Quadriptyque shows, thanks to the technological advances that have accrued during the last 20 or 30 years, the miracle of modern mechanical watchmaking is that it is able to miniaturise cosmological functions and place them on the wrist. Recent years have seen some truly spectacular wristwatches enter the market. Patek Philippe’s double-faced Sky Moon Tourbillon is regarded as one of the trophies of modern watchmaking: featuring minute repeater with ‘cathedral gongs’; tourbillon; perpetual calendar with retrograde date hand; day, month, leap year in apertures; hours and minutes of mean solar time; moon phases; and on the reverse, moon-focused watch face, sidereal time, sky chart, and phases and orbit of the moon. Van Cleef & Arpels caused a stir when it released a watch that condensed the workings of a planetarium onto the wrist with a watch charting the movement of the five planets visible to the naked eye from Earth: Mercury, Venus, Mars, Jupiter and Saturn; each planet orbiting on its own disc in its real rotation time. Blancpain, meanwhile, has tackled the notoriously complex lunisolar Chinese calendar to create a watch that displays the ten celestial pillars, the five celestial elements, the phases of the moon, the animal associated with the year and the date as given by the Gregorian calendar. I am neither watchmaker nor winemaker, but given the approaching centenary of Steiner’s 1924 series of agricultural lectures which gave birth to biodynamics, now might be a propitious time to consider a mechanical timepiece that displays the cosmological information pertinent to biodynamic viticulturists and farmers.
