Every now and then, the word ‘singularity’ is used to describe a particular wine that stands apart, for whatever reason, from other wines of its type. But just what is singularity, and how can wine express it? Wine writer Tamlyn Currin investigates.

One hundred years ago, two men, inspired by the Scottish distilling tradition, produced the first Japanese whisky. In the years that have followed, the category’s fortunes – much like its founders’ relationship – have been turbulent.    The story begins in 1923 when pharmaceutical wholesaler turned Spanish wine importer Shinjiro Torii invested his family fortune in building the Yamazaki distillery, against their advice. Torii enlisted the help of wet-behind-the-ears chemist Masataka Taketsuru – who had spent time learning his craft in Scotland – to lead production on their first whisky, Suntory Shirofuda, which was released in 1929. The two men did not see eye to eye and parted ways following the dismal reception of Shirofuda. Taketsuru famously went on to found the other great Japanese whisky producer, Nikka, and their fierce rivalry persisted. This is one of the reasons Japanese distilleries, to this day, blend in-house rather than trade liquid. Despite this rocky start, the Japanese domestic whisky market looked bullish by the late 1930s – Yamazaki’s next whisky (Suntory Kakubin, released in 1937) was more warmly received and Taketsuru successfully re-entered the scene with his first whisky, Nikka Yoichi, in 1940.  Fast forward to the early 1980s and the category was in fine fettle – Suntory and Nikka had both released their first single malt expressions and there was plenty of cause for optimism. But this prosperity sadly did not last as a steep decline in consumption caused the Japanese whisky market to splutter and almost entirely stall, resulting in many distilleries, including Karuizawa, being forced to close their doors. Both Yamazaki and Nikka managed to stay afloat but their output was significantly reduced as the economy and category stagnated, marking a bleak 25-year chapter in Japanese whisky’s history.   When demand was reignited around the mid-to-late 2000s, it largely came from Europe. A perfect storm caused this spike in interest, including wider interest in Japan (think Bill Murray in Lost in Translation), the resurgence of the Highball cocktail (circa 2007) and Suntory’s Yamazaki Single Malt Sherry Cask 2013 being named the world’s best in 2014 – a first for the category. Around this time, the world was also introduced to Ichiro Akuto’s highly collectable Card Series and the lost distilling icon, Karuizawa. “The mad scramble for crumbs on the Japanese whisky scene is something nobody could have predicted,” acclaimed Japanese whisky writer and Ghost Series independent bottler Stefan Van Eycken tells me. “In the space of 10 years, the situation went from being able to buy a whole range of single-cask Japanese whiskies at a big electronics chain for peanuts to bottles not even reaching the shelves of liquor stores anymore. “Even I, who had been exploring the Japanese whisky scene in the ‘dark ages’, couldn’t have predicted that,” he says matter-of-factly. “If I could have, I would have rented a van, bought up all the bottlings that were available for purchase and I could have retired by now.” Yumi Yoshikawa joined the team at Chichibu in 2013 after a two-year stint in Scotland, first working in the Highlander Inn in Craigellachie – which will require little introduction for spirits journalists or enthusiasts – and at the Bruichladdich Distillery on Islay. “People didn’t know the value of aged [Japanese] whisky back then,” Yoshikawa tells me. “Or that Japan had a long whisky history,” she adds. Somebody who was instrumental in educating the world on these two points is Marcin Miller, a man whose fortitude dragged Karuizawa out of obscurity. The genteel and thoroughly entertaining former Whisky Magazine Editor turned drinks entrepreneur, recalls the landscape when he and business partner David Croll first tasted those fateful Karuizawa single casks in the early 2000s.  “The most common complaint [from whisky enthusiasts] at the time would seem to be that it's all very well for me tasting this stuff but we never get to see any where we are in Western Europe or Northern America,” he recalls. So the two men set about changing this by buying the remaining stock from the then-lost Karuizawa, bottling it, and making it available to the masses – with resounding success. It’s a gross misapprehension – held by many – that the duo meandered into a meeting room, tasted a parcel of Karuizawa, bought it on the spot, and bottled it shortly after, grinning like Cheshire cats as the coffers swelled. In truth, it was four and a half years of negotiation and countless sleepless nights during the process. When pallets of casks from the ghost distillery in a nascent whisky market were finally shipped to them, there was no guarantee the wider whisky world would be interested. “Whatever anyone says, it really was not easy…” He trails off, transported to that time, and all the challenges the pair transversed when bringing the mature Japanese whisky from a then-unknown producer to its now almost mythic status.  Miller talks of the “extraordinary, phenomenal effect” Karuizawa had on him. Croll, Miller and acclaimed drinks writer Dave Broom – who has since quite literally written the book on Japanese whisky – initially tasted 69 single-cask Karuizawa samples. “I would have bottled any of those casks,” Miller says, a fond smile warming his face. If it hadn’t been for Croll, who had lived in Japan for 30 years and owned a successful drinks business, Miller says they likely never would have got a foot in the door at Karuizawa – or secured the exclusive distribution rights of the much-lauded Chichibu and Hanyu. “I dare say Karuizawa would have been blended away into big plastic five-litre tubs of supermarket whisky,” Miller says reticently. When Van Eycken moved to Japan around the same time as Miller and Co were negotiating the Karuizawa deal, he hadn’t even realised whisky was being produced there. Japanese whisky consumption and production were at an all-time low and the general feeling, he says, was that the whisky made in Japan was “cheap and good for getting a buzz when going out, but that the good stuff – that you would savour – was Scotch, and Bourbon, to a lesser extent”. The intrepid Van Eycken was taken aback by the quality of the long-aged liquids he sampled on his travels and couldn’t understand why this sentiment wasn’t shared domestically or further afield. When Japanese whisky’s popularity did finally begin to soar, he was perfectly placed to fill the knowledge chasm with his widely acclaimed Nonjatta website and, later, his seminal work Whisky Rising – a fully updated second edition of which came out earlier this year.  “When I wrote the original edition in 2016, there were 14 active distilleries in Japan,” he says. “Fast forward to mid-2022 and there were 41 active distilleries (and even more in the progress of getting ready to distil),” Van Eycken tells me. All of the new distilleries, he says, are attempting to follow the so-called “craft model” with a single pair of pot stills and fairly limited production. The inspiration, of course, being Ichiro Akuto and his incredible accomplishments over the past 15 years at Chichibu. “But not everyone can be an Ichiro – though most new distillers are certainly hoping to be equally successful, if not more, than Ichiro,” he adds. Several of these new distilleries are located in and around the town of Karuizawa. “My personal feeling is that it doesn’t make a lot of sense to try and compete with the legend that is the (old) Karuizawa distillery,” Van Eycken is quick to add. “The liquid that was made there turned out to be something very special, and not only by design. I have had the dubious pleasure of tasting the new-make from the old Karuizawa distillery and it was absolutely foul.  “But during the maturation process, over 20, 30, 40 years, something magical happened. Some of this can be explained, but most of it is a hermetic mystery. We simply cannot know why decades later this harsh spirit transformed into a sublime whisky (in most cases). Even if you wanted to replicate this whisky – or aspects of it – you couldn’t.  “And hoping to match the quality of the (original) Karuizawa whisky… well, it’s good to aim high but it's a bit like naming your kid Roger Federer in the hope that he would turn into a tennis player of the same calibre. Why would you want to put that sort of pressure on the kid?”  Miller is humility personified and doesn’t want to come across as a wizened cynic or, in his words, “boring old fart”, but he’s not confident that all the country’s new distilleries are set for success. “I think people are now trying to replicate the business success but without the foundation of the liquid. They are selling Japanese whisky futures but who knows what the liquid is going to be like because it's not just A + B = C.” There is a cautionary tale in the annals of Scottish whisky distilling that Japanese producers might be wise to heed. Scotch has famously fallen victim to its own success – with booms and busts resulting in whisky lakes, or lochs, that have crippled the industry and forced mass distillery closures. In so faithfully replicating Scotch, there is a real danger Japan will find itself back in the 1980s when the likes of Karuizawa were shuttered. This time, however, there would be many more casualties.      “For the time being, the Japanese whisky scene continues to be marked by an unbridled optimism,” Van Eycken adds. “Distillers price their (invariably young) whiskies very high (compared with similarly established whisky markets around the world) and consumers snap up the bottles regardless of the (sometimes unjustifiably) high prices.”  This price war is one of the reasons Miller et al sold their remaining stock of Karuizawa, which had initially been priced fairly but wasn’t the case when they left the scene. The 1960 Karuizawa, for example, which yielded 41 bottles was released circa 2014 for £12,500. Within a decade, those same bottles were easily reaching $375,000. “That's not a bad return in 10 years,” Miller says caustically. “But that's not why we did it. If that had been our motivation, we'd have just held on to it and had 41 times that.” For those still in the industry – and disciples of it – there is a real push to protect the integrity of Japanese whisky and futureproof it. Yoshikawa picks up the point, outlining that the few have muddied the water for the many: “The rapid publicity and the reputation of Japanese whisky have led to its use of excessive PR strategies, even when this is not in line with the facts of the product.” For these reasons, she is an advocate of more stringent regulations, like the ones announced by the Japan Spirits and Liqueurs Makers Association in 2021 which aims to restrict certain practices – like labelling whisky that isn’t actually from Japan as Japanese whisky – akin to those enshrined and strongly policed in Scotland. But she, like many, thinks these could go further and believe it is important to continue scrutinising the practices of the small and larger players, ensuring there is greater transparency and less “skullduggery”, as Van Eycken puts it. As the ink dries on the past 100 years of Japanese whisky, no one knows what the next century might entail – but there's plenty of excitement. The landscape will undoubtedly change once more, and new giants and legends will likely emerge. For whisky enthusiasts, the challenge – as always – will be pre-empting the plot twists and securing bottles before they become little more than folklore. The Gin Renaissance, which kickstarted in 1999, showed the world that gin could be more than something that’s mixed with an insipid tonic and served at room temperature with a slice of lemon that has seen better days. For the next decade, the juniper-dominant spirit was unstoppable. At its peak in 2018, new gins were launching faster than you can say botanical and there was seemingly room for all. Until, like most trends, there wasn’t. Rather than the spectacular bubble burst many predicted, there has been a slowing down. There is still a thirst for gin – a whopping 83 million bottles were purchased in the UK alone in 2019 and the category is still in growth (24%), valued at £2.6 billion. But the tide is changing. Of the hundreds launched over the past decade, countless have fallen by the wayside. A handful  – often those with a true point of difference – have become household names.  This innovation has come in many forms and has largely focused on the addition of botanicals and distillates, neglecting the (copper-still-shaped) elephant in the room. “Gin has had a problem that went almost unnoticed for about 250 years,” Cambridge Distillery’s William Lowe MW animatedly tells me. With this declaration, the Master Distiller holds up a miniature replica of a copper pot still and says: “There are six key botanicals that will be in almost every gin you ever taste. And those are: juniper (obviously), coriander, liquorice, orris, citrus and angelica. And there’s a very simple reason for that: two and a half centuries has taught us that they operate really well in this.” He continues, pot still model in hand: “In order for that pot still to work, you have to boil the ethanol at 78.3°C. Water boils at 100°C; so, for distillation to be working, you have to operate between those two parameters. In practice, most of the time you are boiling a liquid around 90°C plus or minus 5°C. The problem with that, is it is really hot. “And if you think about the way a chef would deal with a whole array of different ingredients they have available, there’d be some things they would boil, some things they’d blanch, some things they’d grill, some things they’d cook in an oven at a low heat for a long time or a high heat for a short time, or sometimes a blow torch or sometimes a sous vide or sometimes they just pick, and place, with no heat whatsoever. “A distiller doesn’t have that choice. They have this...” [He holds up the still] “… which runs at around 90°C for an entire day.” When Lowe started the Cambridge Distillery in his front room with his wife Lucy and Labrador Darcy, in 2012, people wrote him off as a kook. His approach of distilling fresh, seasonal botanicals according to their individual needs, rather than all together at extreme temperature, was unheard of. The vacuum still he fashioned is worlds away from the copper pot still in his hand when we speak.  “I can bring the atmospheric pressure down in this unit,” he says with glee, “therefore bringing down the point at which water and ethanol and a combination of those two will boil […] I can literally boil liquids with no heat whatsoever, which starts to sound a bit mad scientist and actually it starts to look a lot more mad scientist. So, what we are able to do, is rather than putting everything into one pot at the same time, we will distil each individual item individually.” In the decade that has followed, Lowe has silenced all his critics. His gins are some of the most highly acclaimed and his distillery is a three-time recipient of the World’s Most Innovative title at the World Beverage Awards. “I’m not innovating here to be different,” he says, “I’ve got no interest in being different. We’re trying to just make things better. And if the optimal approach already existed I’d use it because it would save me a lot of time and energy. Instead, what we do, is we focus on things that have either never been done before or on approaches that have been overlooked by distillers.” These innovations have included the world’s first gin made using solely Japanese flavours, the world’s first gin made out of insects, and the world’s first gin made out of truffles. Lowe has created, and since trademarked, a nine-step approach called a novo-dimensional distillation matrix to extract maximum flavour from his chosen botanicals. He will say two of the variables are temperature and pressure, but the other seven are now a closely guarded secret after gins remarkably similar to his own – but not quite as good, he’s quick to point out – started to appear on the market. Over in Kenya, Procera is a small team adopting another radical approach to produce the first African juniper gin. Distilling legend Roger Jorgensen uses juniperus procera, the native African juniper, and distils it green – as opposed to dried – when it is bright, vegetal and alive. He also uses something other than a traditional copper pot still.  When he was introduced to the 230-litre Müller still, which he affectionately describes as the “Rolls Royce of stills” and his “baby”, Jorgensen says it changed the way he thought about distilling gin – which is quite the claim after a 27-year career in distillation. The Müller still has got infinite controls on it. Instead of a column with bubble plates on it to achieve separation, it’s got 10 metres of 600mm-wide copper plate that spirit and vapour pass over. The column, Jorgensen says, does the work of umpteen plates on another still and gives a seamless separation, driving back dense and heavy flavours, only allowing the brightest ones to come through. Namely, the African juniper.  “The juniper that is used in most gins is harvested and collected at a certain time of year but the highest-quality juniper doesn’t go into distilling,” Procera founder Guy Brennan tells me. “Distilleries are not paying the highest money. The best juniper in the world goes into food and grain stuff. And then you go down a few ranks until you get to the juniper that gets used for distilling.” Procera is the only company using the native African juniper, which Brennan says is “grade one” instead of the “grade three or four” in other gins. It is his hope that other distillers will follow suit and African juniper can become a cash crop like tea or coffee. “At the moment, African juniper has a zero dollar value, but it could be worth £100m in 10 years,” he says. “If Beefeater make an African juniper gin then there is £10m of juniper and the money goes straight to the people on the ground.” The idea to create the world’s first African juniper gin came to Brennan when he was sitting around drinking Bombay with friends. After taking a closer look at the bottle they’d held many times, Brennan and friends were struck by the irony that many of the botanicals, which hail from Africa, are shipped to London for somebody to distil and sent back to Africa as a finished product. Brennan then found Jorgensen – who he playfully calls the “distilling Yoda” – and both discovered juniperus procera. While botanicals are often the most talked about thing when it comes to gin – there’s almost a game of one-upmanship at times with who can use the most or the most extreme – few, if any, talk about the juniper, which legally has to be the prominent flavour. “We don’t want to speak negatively about other companies,” Brennan continues, “but you just don’t hear much about the juniper and there’s a reason: it all comes in 50kg bags from a commodity broker, rather than anyone having a true connection to it. Juniper makes up 90% of a gin and it should be that terroir, rather than a chilli or a citrus botanical, which defines the gin.” African juniper berries grow on a tree – rather than a bush – that is between 10-15 metres in height. The tree, which lives for hundreds of years, only grows at high altitudes (above 1,500 metres) around the equatorial zones. You can tell the juniper is in season, at the end of the short rains, when the baboons start eating it. It is earthier and nuttier than the more commonly used European juniper, juniperus communis. “If you think about it, the best juniper comes from the Mediterranean south, it doesn’t come from the Black Forest or even Scotland because it gets more sun,” Brennan says. “It’s like tomatoes from the Mediterranean: more sun, more flavour, more richness – it’s the same with juniper as well.” In addition to distilling the native juniper green, Jorgensen adopts a pillowcase technique. The Master Distiller finely grinds the botanicals and puts them into a pillowcase and soaks them in warm alcohol overnight. This “grown-up teabag” extracts the primary terroir flavours, and ensures they aren't lost during the distilling process. At Cambridge Distillery, Lowe is a staunch advocate for terroir – or as he terms it, typicity – in spirits. “The difference between the good and the great wines really is the notion of typicity and expressiveness and a sense of place and that’s universally true,” he explains. The Master Distiller points to Champagne, Burgundy and Bordeaux, and the rare whisky gems from Islay, Speyside, and more nuanced examples from Japan. “And then gin,” he says with a mischievous smile. “Well here’s a problem: juniper, coriander, liquorice, orris, citrus and angelica – there is no one place where all six of those things grow. And yet, if you just go and grab a bottle from the supermarket it will be made from juniper, coriander, liquorice, orris, citrus and angelica. Why?” He holds up the miniature copper still model. “So here we have a confirmation of our process and our philosophy. Our philosophy was simple: why can’t you make a gin that’s really from a place? And just because no-one had, it didn’t mean it couldn’t be done. It just meant no-one had done it yet.” The team at Procera is equally determined. “I’m an irreverent person,” Brennan says with a laugh. “Roger’s an irreverent person, and the team, we’re irreverent. We don’t just say let’s do things the way everyone is doing it. Because why would we use European juniper? Why do we use dry juniper? Green juniper is fundamentally better. Fresh products make better gin.” Brennan says he hopes others will adopt the same logic when they see the quality of the product and consumers’ willingness to pay more than the current glass ceiling of £40 per bottle. Something Lowe echoes: “This isn’t stuff that is being dreamt up around a boardroom. And we’ve never been in a position where we’re working down to a price point. We work up to a quality point and that’s it. “It does have the side effect that a lot of our products are more expensive than the contemporary set of gins that are out there but I’ve never been of a mind to dictate to people what’s too expensive. “I think that’s been what held these guys back for a really long time,” Lowe says with the pot still aloft. “If you ask everyone out there: are you making the best decision or are you making the most economically viable decision? They have got to be honest about it. “Flavour is a fashion. Quality is an enduring feature. And there will always be those who graduate out of these fashion cycles and come and seek quality. “I’m not in any way intimidated by what other people do around the gin industry. Either it will be part of the fashion trend, which is not our natural ecosystem, or they will join us on our mission to improve quality – and that’s got to be a good thing, hasn’t it?” Browse our range of gins or read more Editorial

What is Ornellaia?  Tenuta dell' Ornellaia is one of Italy’s most respected wineries, based in the Tuscan foothills of Bolgheri. Its top wine – simply titled Ornellaia – is a Bordeaux blend of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot, first produced in 1985.  Is Ornellaia a Super Tuscan? Yes. Bordeaux varieties grown in Tuscany qualify it as a Super Tuscan. It is in fact situated next door to the pioneering Tenuta San Guido property – the first estate to start producing a Bordeaux blend in Italy, with its famous Sassicaia. Ornellaia was founded by Lodovico Antinori – who was actually the nephew of Sassicaia’s Mario Incisa della Rocchetta.   Is Ornellaia owned by the Antinori family?  Not anymore. In 2002, Lodovico Antinori initially sold the property to US winemaker Robert Mondavi, who then sold a 50% share to Frescobaldi – another historic Italian wine-producing family. Following the sale of the Robert Mondavi corporation to Constellation Brands in 2005, Frescobaldi took full ownership of the property. They also own two other iconic Tuscan properties: Ornellaia’s neighbouring property Masseto (arguably Italy’s most famous Merlot, which up until 2019 was also produced at Ornellaia) and the Brunello di Montalcino estate Tenuta Luce.   Does Ornellaia have anything to do with Solaia?  In short, no. Solaia is another Super Tuscan owned by the Antinori family – Ornellaia’s founder Lodovico Antinori’s brother Piero – so you would be forgiven for getting them confused. Solaia is a Cabernet Sauvignon and Sangiovese blend grown on the Tuscan hills within the Chianti Classico region and is situated next to the Tignanello vineyard, another Super Tuscan also owned by Antinori.  What’s so special about Bolgheri?  Bolgheri’s close proximity to the ocean means less cloud and a higher level of reflected light from the sea, magnifying the solar intensity. Secondly these coastal flatlands, in between the mountainous islands of Corsica and the Tuscan hills, are effectively a corridor of wind which creates a high diurnal shift in temperature. This fluctuation between hot days and cool nights locks in the grapes’ acidity, while giving the fruit great concentration and ripeness – enabling the later-ripening Bordeaux grapes Cabernet Sauvignon and Merlot to thrive.   What makes Ornellaia so unique? Neighbouring both Sassicaia and Masseto, Ornellaia is well situated in the foothills of Bolgheri. Being one of the early settlers in the region, they are one of the few producers who own vineyards in the foothills. The surrounding woodlands are protected and therefore more recent arrivals could only plant vines on the valley floor. Here there is a complex mosaic of soils ranging from marine, alluvial and volcanic soils. Intraplot management means every plot is individually assessed, picked and matured in oak for 12 months before the final blending takes place. Within one vineyard alone the four varieties, eight different rootstocks and multiple geological fault-lines provide a complex palette of expressions to choose from.   Who makes Ornellaia? As of 2024, Marco Balsimelli is the Production Director at both Ornellaia and Masseto. He took over from Axel Heinz, who had been at the helm since 2005, taking over from Thomas Duroux (now the winemaker at Ch. Palmer). The estate now produces seven wines in total, one grappa and an olive oil. Le Serre Nuove is Ornellaia's closest sibling (another red Bordeaux blend, very much seen as the second wine to Ornellaia) typically mad with fruit from younger vines.  How is Ornellaia made? Each parcel is vinified separately. While previously the wine would only be blended after 12 months' maturation, Balsimelli has moved to blending it earlier in the process to create greater cohesion in the wine. Fermentation and maceration takes place in stainless steel at maximum 25˚C, staying on skins for around 20-25 days before being moved to barrel. The wine is aged around 18 months in 70% new oak and then a further year in bottle prior to release. What are the great Ornellaia vintages? Speaking with Ornellaia’s Matteo Zanardello, his favourite vintages for drinking now are the 1998 – so elegant, fresh, bright and one of the best vintages in Ornellaia’s history, even if
underplayed by the critics. The 2001 is, he feels, beautiful now, while the 2006 is starting to open up. A notably fresh vintage with great ageing potential, Galloni described the 2006 as “a breathtaking wine of the highest level” (98 points) – and Matteo compares it to the 2018. Monica Larner rated the 2010 97+, describing it as “a truly outstanding wine that leaves a lasting memory for those who are lucky enough to enjoy it”. The 2011 was slightly overlooked, initially considered to be a little austere, however today it shows all the great traits of Ornellaia and is another great vintage in Matteo’s view. Antonio Galloni's (Vinous) top-rated vintage is the 2021, earning 98 points, a wine that "captures all the magic of this sensational vintage on the Tuscan Coast". The 2021 is also the highest-rated according to James Suckling and Lisa Perrotti-Brown MW, for whom it ties the 2019 – "a beautiful, luxurious, and vivacious wine". Kerin O'Keefe's top-rated vintage is the 2010, which marked the estate's 25th anniversary and "could not have been a more spectacular vintage". What is the most recent vintage? The new vintage of Ornellaia is released each spring, three years after the vintage, so the 2022 was released earlier this year. Its sibling estate Masseto is released in September as part of the September releases via La Place. Wine, though the most intimate of pleasures, lends itself to the most expansive of texts. We drink wine most often – tastings aside – in pairings of two, or in lonesome but agreeable solitude, and, its narcotic pleasure being felt internally, we feel its effects as we feel a fever: almost secretly, in shivers. Though wine is like sex in its intimacy, unlike sex, the form in which we fetishise wine – our vine erotica – is not hushed and illicit but encyclopedic. On the shelves of any wine drinker, there are likely to be catalogues, dictionaries organised by region, old Parker buying guides some 600 pages long that somehow, though dated, can’t be discarded.  Wine seems singular among human pleasures in this. We don’t, as a rule, rush from reading a poem to great anthologies of poetry, or add to the savour of seeing a play by reading a big atlas of dramatic literature – not, at least, after we graduate from school. Sports fans, it’s true, like big books of statistics, but then sports-watching is a social act in the first instance – the more people in the stands, the merrier the occasion. With wine, we like the macro with our micro: with a solitary glass in hand, we look, in print, over the next hill, or the current vintage, at the vineyard across the way, or the vintage yet to come. It’s part of the pleasure the glass provides. The reasons for this micro and macro turn are, on reflection, commercial and artisanal as much as aesthetic. The business of wine needs a big picture of its domain, its resources, and its potential market – scale sets the stage for commerce. The makers of wine like to place themselves on a broader map of where wine is and what it’s made with. The great Bordeaux classification of 1855 is not just the noblest public monument to a beverage ever attempted, but a model of market-making and even market price-fixing. Once a hierarchy of growths has been established, it is easy to slot in the price tags. But there is a truth of taste beneath the ordering of value. With wine, we know that what we are experiencing is, however singular, still an intersection of opposed forces – as the peerless wine writer Jancis Robinson MW says of her first glass of Chambolle-Musigny 1959; “I knew at once that there was something in the glass that was sensually delicious but that it was also made, produced, and therefore suggested a history of intellect and discernment.” The pleasure of wine is the crossing of a place, a grape and a people; and so, we turn to the big books to frame the small pleasures.  What distinguishes wine from even a good glass of ale or a local brew is the specificity of the pleasure set against the scale of the system that made it – one that historically embraces the planet. It’s a First Growth, or a domaine Burgundy, or a Ridge Zinfandel or a New Zealand Pinot Noir made to a Burgundy model by American wine makers … the more we know, the more we’re free to feel. Most sensory pleasures are specific to the point of being illicit – aside from the bemused fetishist, romance is a spontaneous pleasure, often aided, to be sure, by a systematic wine. Wine is premeditated; we choose a bottle, let it ripen, and break it open. Even casual table drinking has a tale to tell, a journey to trace on a map. These thoughts are brought to mind in contemplation of Wine Grapes, the monosyllabically titled but unprecedentedly expansive dictionary of grape varieties grown to be crushed and fermented on this green planet. Authored by Robinson, along with Julia Harding MW and the geneticist Dr José Vouillamoz, it marks an epoch – several epochs – in our understanding of wine, from both a professional planet-straddling and an amateur glass-in-hand perspective. A book of its time (published in 2012), it was made possible, in part, by a revolution in the DNA analysis of wine grapes to help discover their origins and histories.  The DNA profiling of wine grapes only began in 1993, and the first ‘paternity test’ successfully concluded in 1997 – a mere few days ago by historical perspective – with specialists, Dr Vouillamoz among them, drawing astonishing Darwinian lines among seemingly unrelated grapes. Zinfandel, it has been discovered in the last 40 years, is not only the Siamese twin of Primitivo, but its Croatian Siamese twin. In proper Darwinian fashion, the book tells us, “It looks increasingly as though an enormous proportion of the grapes we know today are members of a few key families.”  The leading families of wine, Pinot and Nebbiolo and the rest, like the leading houses of Westeros, jostle and engage in incestuous inter-breeding as they move towards dominance. As Jancis Robinson admits, the quest for the origins of grapes can become surprisingly emotional. “The Zin quest is so … heated. There was a Zinfandel conference in Croatia, with all the great Zin makers, even Joel ‘King of Zin’ Peterson from Ravenswood, and we all had to present our various things about Zinfandel. There was a small cohort of people from Montenegro who reckoned that their variety – whose name is unpronounceable – was the true progenitor of modern Zinfandel, not the Croatian one. It became so … Balkan! And you know what? They may be right!” Wine Grapes is of its time in another sense as well, marking the moment when we have started to think of wine not solely in terms of region, but much more in terms of variety, with the semi-mystical term ‘terroir’ acting as a kind of Holy Spirit between them. Thinking ‘grape’ more than ‘place’ releases our imaginations. The wholesome instructive pleasures of the book, to which we’ll come, shrink beside the unwholesome, guilty pleasures of turning the pages to meet the failures among grapes – the near-misses, the long-forgotten and forlorn lost toys – which please more than the patterns of primacy. The pleasure of reading about the grapes whose juice we do drink is nothing compared to reading about those we don’t. In dictionaries, oddities and parentheses fascinate us more than the major entries. No one turns to the dictionary to study ‘and’; we go to study ‘antediluvian’. So, turning these pages, flipping through the P’s on our way to encounter the great Pinot families, we come upon the lesser gods, even the little misshapen gnomes and dwarves of the wine world, and we delight in meeting them. (A fascination added to by the forthright sub-heads the editors provide.) On our way to Burgundy and Pinot Noir, we also meet Pinotin, a ‘recent obscure Swiss hybrid’ which edges into Pionnier, ‘a minor but complex, cold-hardy American hybrid used in blends in Québec’, and, of course, Pinotage ‘South Africa’s very own cross, both loved and despised’, which leads us on to Pugnitello and even Pukhliakovsky (a Russian variety ‘with erratic yields producing light wines’) and even unto Pules – ‘a minor Albanian white’. Radiating out from five pages on the major Merlot, we bump into Merseguera, ‘an uninspiring variety’ from Spain, and Merzifon Karasi, and Merzling, dismissed as a ‘very minor disease-resistant German hybrid’. Why these lost or obscure kinds of grapes bring so much delight with them is a fascinating question. It has in part to do with our general appetite for oddities and obscurities, which once produced ‘freak shows’ and still makes us fascinated with archaic musical instruments: we are curious to hear the sackbut because we want to know what led to the trombone. It is also the virtuous case that variety is the safeguard of continuity. In an age of ever-decreasing biodiversity with just a few varieties taking the place of many possibilities, one Quixotic California winemaker, driving through the fields of Cabernet and Chardonnay, dismissed them all – with a wave of the hand – as “chocolate and vanilla, chocolate and vanilla”.  The health of the planet is safeguarded by the persistence of so many kinds. It is also because the existence of these minor yet still thriving varieties gives us a satisfying picture of adaptation, the central biological act. Each of these grapes has found a home in the world. It may not be much of a home, but then neither, face the facts, is ours. We identify with the unknown grape. We are all more like a very minor disease-resistant German, or a cold-hardy Québec hybrid, than we are something noble and complicated. Few of us are bottles of Burgundy; we can all identify as minor Albanian whites. In conversation, Jancis Robinson, sheltering at home near Kings Cross in London, a home with a view of a graveyard (though a cheerful one she assures an interviewer) – talks of the wine almanac with the blunt enthusiasm that marks her writing. Robinson, in addition to her obvious honours and credentials, is a rare thing in the wine world, or any world: a writer who writes with equal parts brio and expertise. She explains the origins of Wine Grapes. “What happened was that one of the co-authors, Dr José Vouillamoz, who had been at University of California, Davis, felt that he needed to earn more of a living, and came back to Switzerland and got a job working on Alpine botanicals. But he didn’t want to lose his relationship with wine, and he came to me and said that he’d like to collaborate on a book about grape varieties. I’d already written one in 1986, based on our very fractional knowledge then.  Over lunch, I took along Julia Harding, a wine writer who works on my website. She’s extremely punctilious.” (Robinson, punctilious herself, says this with such emphasis that the listener feels that, with Harding, we must be talking about new frontiers, not to say dimensions, in punctiliousness.) “She had exactly the right sort of brain for a project like this. José suggested that we focus on the 10 or 12 most planted grape varieties to help simplify it. I thought that that book didn’t sound interesting enough. I waited until we were quite far down a bottle of Valpolicella and said, ‘I think our book should be about every single grape variety we can find.’ He gulped and said, ‘Then that’s what we shall do!’” The idea of creating a ‘perfect map’ of a subject is one of the itches that govern modern life. John James Audubon set out to describe not the major but every bird and beast in North America, and that’s what he did. Similar ‘almanacs of everything’ fill our botanical and anthropological shelves. It is an ambition so tied to modernity that in the mid-19th century, Lewis Carroll perfectly satirised it in his novel, Sylvie & Bruno, where two mad professors talk about their dream of making a map that would be on a one-to-one relation to the actual world – utterly perfect, if impossible to unroll. “I loved the scale of the thing,” Robinson says of her perfect map. “So, we carved things up: José did all the DNA stuff and history because he had good access to it, Julia, bless her, did the footwork – how much of each grape is planted where – while trying to taste as many as possible, too! And I wrote the entries on the best-known varieties, and the introduction and read every single word.  As with any dictionary, we used what came before: we went through appellation lists, with all of the varieties allowed, some of them almost extinct. A nice little detail of the book is that we persuaded the publisher that it should have some colour plates, and we were particularly keen to include the plates from the world’s first oenological book, L’Ampélographie: Traité Général de Viticulture, of 1901 … just out of copyright!” She pauses. “Of course,” she adds reflectively, “it was José, naturally, who discovered that Pinot and Syrah are related.” The offhand nature of her mention can’t conceal the significance of the remark. Of all the discoveries offered in the book, this is perhaps, for the amateur wine drinker, the most exemplary and astonishing. Painstakingly tracing the DNA heritage of the varieties, these two noble houses, Syrah and Pinot – the grapes of the Rhône Valley and those of Burgundy, the heart of Côte-Rôtie and the soul of Chambertin – are unified as cousins. This happened not through willed cultivation but in the natural evolutionary way: through variation and adaptation. Initially, the elegance of Pinot Noir was transformed through the usual evolutionary pressures of place and mutations, into the earthy pleasures of Syrah.  Chance mutation and lucky planting turned one grape into its near opposite. (‘Cross-fertilisation’, we’re told, ‘was common until the early 20th century because several grape varieties were often intermixed in the vineyards, facilitating natural crossings between distinct grape varieties’.) The phylloxera epidemic in France from the 1860s on – though it did not destroy as much as is sometimes thought – acted as a kind of sieve or filter of grape varieties, a sort of extinction event in large-scale natural history, forcing hard choices and making obscure varieties less desirable to save by root grafting with New World vines.   One virtue of the book is to propose, in effect, a new order of wines by celebrating ‘secondary’ grape varieties. “For me, among the obscure wines, something about as well-known as Cinsault stands out – it can make such lovely wines,” Robinson says. “There’s been such a sea change as the century turned. Everybody once wanted to make fruit bombs to one of three standard recipes. Then in this century, higher acidity, lighter wines are finally revaluing, and so Cinsault comes into its own. “Sometimes I come across a grape that isn’t well known but that’s so obviously superior. There’s Aglianico – the name suggests it’s Greek, though no Greek variety has ever been found and you only get it in Southern Italy. Perfect for late ripeness, and not for cool climates – and now it has travelled to Australia, where they’re desperate for hot weather varieties.  The whole array of Portuguese and Greek grape varieties are so fantastic! And so individual. And I love that after a dalliance with international varieties, both countries are now celebrating their own. There’s another white grape, an Iberian variety that’s stunning, and, again, I’m not sure it’s yet been planted much: Godello! It’s a bit crass to say it makes wines that taste like Montrachet, if a little more terroir-y and mineral … but it does. I could drink Cinsault for red and Godello for white into the next century. “There’s such a gap nowadays,” Robinson goes on, “between the Napa Cab thing, and these young people who are buying unknown grape varieties that sell for a fraction of the price, that are really good. Such a lot has happened in the field of recuperating old vines, some so obscure that they don’t even have a name. Miguel Torres, the scion of that great company in northeast Spain became very interested in grapes.  At first, he said, ‘Hey Dad, we need the posh varieties, Cabernet and Chardonnay’ – and made all these wines which did well in the Judgement of Paris. But, with time, he realised that it made more sense to concentrate on the indigenous varieties. He’s been engaged for 30 years, putting classified ads in the local press – ‘If you know of a wine grape that you can’t identify, let us know of it, and – if we think we can propagate out – we’ll do micro-vinification.’ He’s actually rescued Catalan varieties that were on the brink of disappearing; I think he found 30 varieties, and recuperated eight for micro-vinification with sufficient character to give them a new lease of life. And much the same thing has been happening all over Italy. If we published the book today, we’d be up to at least 1,500 kinds of grapes.” The great sorting question of our time, of course, is the question of climate change and its effects on wine cultivation. Robinson is cautiously hopeful about Burgundy. “I was lucky enough to go there and spend some time. The 2020 harvest is the earliest ever, at least since the 14th century. But, whereas the 2003 vintage, that legendary hot summer in France, produced wines that were pretty bizarre, the 2019s seem as fresh as a daisy, with pure fruit. I’m no plant biologist, but the vines seem to be getting used to the conditions … or the winemakers are. They’re not extracting as heavily, but, given that, there’s no sign of added acidity (it’s routinely added in the southern hemisphere), the acidity is coming from the grapes as well. Even some real old Burgundy hands, when you ask why the wines are so fresh, say, ‘I really don’t know.’” About the Southern Rhône, though, she is more pessimistic. “They’re not helping themselves in the Southern Rhône: too many are trying to make concentrated, high alcohol, 16% wines. And maybe consultants are too powerful down there – one consultant can be responsible for 20 or 30 labels, and so you’re going to have 20 or 30 wines that reflect that.” It’s here, though, that the knowledge of grapes, and our possession of this specialist dictionary, seems particularly valuable. If wine is to save itself from the vagaries of climate change, it will probably be through the introduction and new use of ‘marginal’ or forgotten ‘heirloom’ grapes. Only recently, France’s Institut National de l’Origine et de la Qualité (INAO) officially approved six new varieties: four red grapes – Arinarnoa, Castes, Marselan, and Touriga Nacional; and two whites – Alvarinho and Liliorila – all described as ‘well-adapted to alleviate hydric stress associated with temperature increases and shorter growing cycles’, potential saviours of the region against the villain of global warming. All of them, of course, are charted and explicated in Wine Grapes.

In the end, the great strange truth of wine is the truth of life: a thousand vectors press down on us at once – place, history, time, temperature, luck and breeding – and somehow in the intersection we find, or make, our pleasures. The question of type and variation was very different before Darwin who wrote, oddly (or perhaps not so oddly) almost simultaneously with the great classification of Bordeaux, publishing On the Origin of Species in 1859.  (Oddly because his theory would have been true in any other time; not so oddly because the urge to map the world, for the ‘almanac of everything’, was typical of mid-19th century confidence, as Carroll’s satire suggests.) Before Darwin, who loved wine, the fundamental view of the world was that the superintending categories, species and varieties, were the fixed things in the world. Everyone took it for granted that the ‘kind’ the ‘essence’, was the real thing and all the little variants merely particular shades away from it. A grape was a better or worse instance of its variety. Grapes, like apes, were of one fixed sort. Darwin’s great overriding insight was that only particulars exist, and that species and superintending categories are the labile and ever-changing kinds. Every kind of living thing came from somewhere weird and is on its way to somewhere weirder, with a brief stopover at being the thing it is now. The elegance of Pinot Noir is a close cousin of the earthiness of Syrah, one state is simply a moment in the life of the other, and each are moments in the life of the surging, unfixable whole. Wine, braiding through the planet and only coming to rest on a name for a moment in one place, is a bit of scientific epistemology in your glass, the truth of the particular made potable. We talk to Europe’s leading glassmakers from the 250-year-old Austrian family-run firm Riedel to the young dynamo behind Grassl, which launched in 2018. We also speak
to Jancis Robinson MW on her recent collaboration with British designer and master craftsman Richard Brendon, who explains that traditional glass types have long been in desperate need of modernisation. Legend has it that Marie Antoinette’s breasts provided the outline for the creation of the
coupe, the shallow-bowled champagne glass that graced the lips of Hollywood’s starlets during the Golden Age, and enjoyed regular appearances in episodes of Mad Men. When it comes to wine glasses, aesthetics has historically taken precedence but functionality has risen to the top of the priority list.  Wine has long suffered an injustice at its final destination whether it’s champagne, sherry or claret. Designer Richard Brendon recalls his first meeting with Master of Wine, Jancis Robinson. “She said she’d never understood why white wine was put in a smaller glass than red wine and described this as discrimination. Champagne producers hate flutes because they don’t allow for any of the aromatics to get out of the wine, likewise Sherry and Port producers don’t like the small glasses that their wine traditionally gets put in.” There are a growing number of glass companies aiming to redress the balance. And, in the
same way as every winemaker in Burgundy has his or her own particular way of producing the perfect Pinot Noir, every glassmaker has a view to crafting the most suitable vessel in which to pour it.  Austrian-based Riedel has gone down the route of a glass particular to a variety from Chardonnay to Zinfandel while Brendon has followed Robinson’s one-size-fits-all advice.  “Jancis was entirely confident that we could create one glass that worked perfectly for every style of wine,” says Brendon” but we also needed two decanters to ensure we have a collection that works for every wine.”  With 40 years of experience tasting wine, Robinson set out the specific parameters for her ideal glass. “The widest part of the glass should be exactly 125ml or one-sixth of a bottle. This would mean when a standard pour is served, the wine will have maximum surface area, allowing for all of the aroma to get out of the wine,” he says.  “Jancis wanted a nice tall bowl to allow for the wine to be swirled in the glass to get more of the aromas out of the wine, and that the opening of the glass should be as small as possible to trap the aromas of the wine, but still big enough for even the largest of noses! The thickness of the rim was of utmost importance, she wanted it to be gossamer-thin so that you hardly notice the glass when taking a sip. “ Gossamer-thin is an apt descriptor for Zalto’s glassware, particularly the elegant, fine stems
that induce a certain nervousness in the holder. It’s a far cry from the heavy cut-crystal glasses that adorned the dining tables of previous generations. Daniel Primack of Zalto’s UK importer WineRackd admits such delicacy can be a concern initially but “with perfect balance in the hand and such fine construction, you may worry that you’re going to break them just by drinking from them but fear not,” he says.  “They are mouth-blown and cooled very slowly making them incomparably tough for something so fine. Zalto’s own recipe of the three main ingredients for creating crystal, silica, soda (sodium carbonate) or potash (potassium carbonate) and lime (calcium oxide) also contribute to the clarity and durability. They are blown differently to other Austrian glasses, with the bowl and stem formed as one piece, then the foot attached. A more usual arrangement is for the stem to be glued to the bowl. Remember the attachment point is a weak point” Staying in Austria, Riedel is perhaps the country’s most famous glassmaker in the wine world, producing an impressive 60 million glasses annually at its three factories. The 250-year-old company now uses machines to make 95% of its glasses. The company’s UK managing director Stephen McGraw says “we can produce machine-made glasses which are almost indistinguishable from handmade glasses.  However handmade glasses are still very important to us, as we preserve a skill which is still recognisable to the techniques used in Roman times. In terms of machine-made versus handmade? The glasses will all perform equally well, from a sensory point of view.” He adds that its unusually shaped decanters are a different matter: master glassmakers, who tend to have around 15 years of experience to be at the top of their game, can only make these intricate objects.  A much more recent addition to the glass scene is Swiss brand Grassl, which launched in
2018.  Founder and wine collector Alexander Mackh, who is just 26 years old, explains its conception. “I launched Grassl Glass because I didn’t enjoy the proportions of the glassware on the market. Finer, deeper, less-extracted, less-oaked wine [styles] require different glassware, so I decided to create my own.”  Prototypes in hand, Mackh tested the glasses on some of Burgundy's top winemakers as well as heading to the finest names in Bordeaux including Châteaux Ausone and Palmer. Tweaks were made accordingly and now the Slovakian-blown artisanal glasses can be found as far afield as South Korea and Australia.  
What is the magic number?  While Brendon and Robinson have created just one wine glass, Grassl’s magic number is four. The designs include Liberté, which is ideal for medium to low acidity white wines, which are oak aged and 1855, a glass for reds high in tannin, richness and alcohol. If push comes to shove, Mackh says “If you wanted just one glass that does the job, it would be the Liberté as an objective tool for tasting." Riedel is known for its varietal-specific glasses and there are myriad options but there has to
be genuine rationale behind a new style. “A glass designed for a specific wine must show that wine better than any other, non-specific glass would,” says McGraw before explaining the ongoing process that shapes its bowls. “We design and test our glasses together with winemakers. Through a series of tasting workshops, we fine-tune and hone the shapes of our glasses until the winemaker tells us that the glass is showing his wine correctly. Further, after a glass is designed and in production, we do continuous testing and tasting workshops to ensure that the glass is as relevant still as the day it was first designed.” However, there’s no need to be rigid in what you pour in the grape-specific glasses. Riedel has a glass, for example, that suits rosé Champagne, Nebbiolo and New World Pinot
Noir. You certainly won’t go to wine hell if you also use it for a glass of Chardonnay. Primack agrees: “The names are simply a guide to identifying the bowl. They were named this way as 15 years ago, it was the convention to use a wine name. Today, Zalto stress it is not a prescription for the contents. For example, many people appreciate certain styles of White Burgundy in the Bordeaux bowl. This has been proven time and time again”.  Function has now won over form in the wine glass arena but that’s not at the expense of beauty. The bedazzling array of aesthetically appealing wine glasses provides a tactile experience for both your hands and lips. For up to 499 bottles in storage, the rate is 39¢/bottle per month or a $50 minimum monthly charge (this covers up to 142 bottles). For over 500 bottles, the storage rate is 35¢/bottle per month.

Storage is charged at HKD 40 per 12-bottle case per month. A minimum monthly storage fee of HKD 80 applies, covering up to 24 bottles.

By selecting third-party shipping, you will take full responsibility for all aspects of legal compliance and authorize Vinfolio to transfer the items to the party specified in your instructions. Items shipped via third parties will remain in their original packaging.

Collection times are between 8:30am - 12pm & 1:30pm - 4:30pm, Monday to Friday. Wines at Will Call, that are not picked up within 10 business days, will be transferred to storage and subject to a $1.50 per bottle stocking fee.
