It’s four centuries since the Giraud-Hémart family first began farming vines in Aÿ, writing the first chapters of an extraordinary legacy.   Although they started out as tenant farmers, the Church granted them a swathe of land in the 17th century – with François Hémart the first member of the family to be registered in the parish records. The modern history of the family, however, starts in the 20th century, when a soldier by the name of Léon Giraud was garrisoned in Aÿ and fell in love with Madeleine Hémart. The couple soon married and had a son, Henri Giraud, moving into the property that the family still lives in today.  At the time, vineyards across the region had been abandoned in the wake of phylloxera and Léon set about replanting three hectares of vines. For 300 years the family had been growing grapes and selling the fruit, but after Henri returned from the Second World War, he and his father decided to start making their own wine – establishing the Giraud-Hémart label. The business grew and evolved, especially after Claude Giraud (Henri’s second son) arrived in 1972, aged just 20. Working with his father over the 1970s and ’80s they rejigged the vineyard holdings and acquired additional holdings to make up the 10 hectares they own today, as well as changing the property’s name to Champagne Henri Giraud.   In 1990, they started buying in additional fruit to meet demand and made their first vintage of Fût de Chêne – the wine that became Argonne from the 2002 vintage. Although in the 1990s the family was ageing wine in oak, it is only in the 21st century that they started working exclusively with oak from the Argonne forest – now integral to the House’s identity.  The Argonne forest was historically the source for much of the wood used in Champagne, home to over 150 coopers, but was gradually abandoned, suffering from particular damage during the Second World War. Henri Giraud has made it a mission to restore and protect the forest, working with the French National Forest Office (ONF) on a replanting program (and have planted over 60,000 trees to date). The House feels Argonne oak is a key part of their terroir – indeed their top wine takes its name from the forest. The poor, dry soils of the forest mean oak trees grow particularly slowly, resulting in a particularly tight grain, creating a delicately flavoured wood to complement the delicate wines of Aÿ.  Today, the business remains a tightly knit family affair – with the 13th generation running the show. Emmanuelle Giraud is at the helm of the House, having taken over from her father Claude, who while not officially part of the business remains present and involved in key decisions. Emmanuelle’s sister Anne le Golvet-Giraud was drawn to therapeutic practices, launching the property’s trademark Craÿotherapy – chalk-based wellness program offered at their in-house hotel (they were one of the region’s first producers to welcome visitors for tastings and now to stay). It is Anne’s husband, Sébastien le Golvet, who is in charge of the winemaking.  “It’s very important to always be curious, to seek something better from the wine, from the grapes,” Giraud tells us. No one embodies this philosophy at Giraud more than Le Golvet, a force who, since he arrived in 2002, has pushed to experiment and innovate both in the vineyards and winery. Over the last two decades, he’s introduced residue-testing on their soils to confirm their triple-zero approach (zero pesticide, insecticide or fungal control spraying – something they feel is more impactful than organic certification and have long pioneered), banished stainless steel from the winery (using only terracotta and wood) and toasts every barrel the House uses himself. Constantly looking for new ways to elevate the wines further, he has recently created and started using custom barrels with sandstone heads. As Emmanuelle tells us, his philosophy is firmly that, “The best wine will be the next one.”  Henri Giraud manages to balance being at the cutting edge with the patience that traditional-method sparkling wine requires. As Emmanuelle explains, they have to make sure everything is perfect from the moment the grapes are harvested – for any mistakes will be discovered in a decade’s time. While she’s concerned with broader strategy and planning for the business, when it comes to harvest-time, you’ll find her on the winery floor, managing fruit receival, each and every year, seeing the culmination of the year’s work.  Being independent and family-owned allows them the luxury of a truly long-term vision. Each vintage they make trials, the results of which will only be revealed in 10 years’ time, but they’re investing far beyond that – planting 12,000 trees in the Argonne forest each year, making sure that Henri Giraud will still be able to use this special oak in two centuries’ time. The House’s extraordinary wines reflect this vision, testament to their relentless pursuit of quality and remarkable attention to detail. Jaime Araujo’s surname is a familiar one to Napa collectors. Her parents Daphne and Bart purchased the famed Eisele Vineyard in Calistoga in 1990 and established their eponymous winery on the site shortly after. Jaime was enrolled in university at the time and wouldn’t join her parents in Napa for many years, instead spending over two decades studying and working in Europe, including a stint at Moët Hennessey. She arrived in Napa in 2012 to work alongside her parents as a business consultant, but the job was short-lived, when the winery and Eisele Vineyard was sold to Artémis Domaines (the parent company of Ch. Latour) in 2013.   While her parents went on to establish Accendo Cellars, with Jaime and her brother as partners, the itch to build a business of her own only grew stronger. “I always wanted to run a business as a force for good,” she recalls. She got her chance during the first vintage at Accendo in 2013, when she turned a Cabernet Sauvignon lot that didn’t quite fit in with any of the Accendo cuveés into her first 300 cases of Trois Noix wine. (The name – French for “three nuts” – is a cheeky reference to her two children, as well as her brother’s daughter, all quite young at the time.)   Despite her family’s legacy, and perhaps the temptation to enter the market at the top end, as many newcomers do, Jaime was intent to create wines that were approachable and embodied sustainability ideals. This included a pricing strategy that skewed heavily towards affordable options, ranging from $30-50 per bottle and the most expensive Cabernet Sauvignon topping out at $150. “I’m not in this to make billions,” she laughs. “It’s so important that Napa is accessible to as many people as possible. You have to be welcoming and make wines that appeal to everyone.”    Even before Jaime was developing her brand, Steve Matthiasson had been quietly establishing a reputation as one of Napa’s most respected organic winegrowing experts. After studying horticulture as a graduate student at the University of California Davis, he launched his wine career in 1995 as a viticultural consultant, going on to settle in Napa with his wife Jill Klein Matthiasson in 2002 and building an impressive client roster. Since 2007, Steve has worked closely with the Araujo family, first for Eisele vineyard – where he continues to consult – as well as at Accendo. Other current and past clients include Dalla Valle, Spottswoode and Chappellet.   The process of becoming a winemaker in addition to viticulturalist, however, has been a slow and steady process. Matthiasson says he learned about wine almost by osmosis over the years, sitting in on client tastings and by keen observation. In 2003, Steve and Jill produced just 120 cases under their name, but by 2017, they reached a major milestone with the purchase of a small winemaking facility and neighbouring vineyard in the Oak Knoll AVA – a massive accomplishment for two outsiders with little initial capital. Last year, their production reached 12,000 cases, stretched across 25 unique cuveés. Today, Steve farms most of the vineyards he makes wine from, including a small vineyard at his home, where he has planted rows of northern Italian varieties, including Refosco, Ribolla Gialla and Schioppettino.   Inside the compact Matthiasson winery, cosy by Napa standards, foudres line the walls and nearly every inch is occupied with equipment, case goods and barrels. In the corner, a stack of large glass jars filled with liquids of varying colours sits – the aromatics steeping in alcohol for vermouth, Steve explains, which he and his wife make along with olive oil and jam, as accompaniments to the unique lineup of wines Matthiasson produces, ranging from single-vineyard Cabernets to more esoteric fruit and wine co-ferments. While many collectors still may not have heard of Matthiasson, Steve says he is proud to be sought after by sommeliers and others in the wine trade: “We like to say we’re the musicians’ musician.”   Both Jaime and Steve believe strongly that their businesses must be both environmentally and socially responsible. “It’s so important to stand up for what you believe in,” Jaime emphasises. Today, Trois Noix boasts a range of sustainability initiatives, including B Corp status, a high-level sustainability certification which only two other wineries in Napa currently possess. Though not specific to wine or agriculture, B Corp certification is awarded after a rigorous assessment to prove a dedication to positive community impact alongside profit.   In the same vein, all of the vineyards Steve farms for Matthiasson are organic, which is the certification that is the most meaningful to him – and represents a full circle of sorts from his early days studying agriculture, when winemaking was not yet on the horizon. “Organic farming has become not just accepted but embraced since I’ve been here,” Steve says, saying that it’s becoming the norm rather than the exception, especially so for the most well-known cult Napa wineries. “And it’s not just for PR,” he adds, saying many don’t broadcast their farming practices. “They truly believe it makes better wine.” Steve believes the standard of farming has improved dramatically since he arrived in Napa and so has the quality of the resulting fruit. “As the years have gone by, our ability to do the right thing has increased,” he says.  The resulting wines that both Trois Noix and Matthiasson produce are crafted in a fresh style, with an emphasis on primary fruit and terroir-specific cuvées, as opposed to dominant oak or heavy extraction that have been the trend for fine wine in Napa. Araujo says she is trying to craft wines that are reminiscent of Napa 50 years ago, by using a light hand. “We started getting bigger and bolder in Napa, and that’s fine, but we can do this, too, and do it well.” Araujo describes her goal each vintage as crafting wines in a “sweet spot”, built to enjoy immediately but also with the structure and acidity to age for several years at a minimum.    At Matthiasson, pick dates are watched closely, and occur on the early side for Napa, so that alcohols remain low and acidity is naturally brisk. Other than a small amount of sulphur, no other additions are made. “We utilise traditional winemaking methods,” Steve says – quick to note, though, with a laugh, that there is a difference between “natural and natty”, explaining that his goal is to make fresh, clean wines from the healthiest fruit possible. Unlike other Napa wineries that employ optical sorters and tables lined with harvest workers examining every berry, Mathiasson does not sort the fruit prior to fermentation, trusting instead in the farming and meticulous picking over multiple passes.   “We’ve always been an agricultural community, and no one wanted to talk about that for a long time,” Jaime tells me. She believes the future of Napa will be a focus on not just high quality but also history, community and a reputation for doing the right thing. These will not be talking points for her brand only, however, as last year she was elected Board Chair of the Napa Valley Vintners. A nonprofit trade association founded in 1944, NVV acts as a voice for the wine business in Napa Valley, promoting, supporting and advocating for its over 500 members. “I’m a bridge between old and new because of my family and my experience,” Jaime says, explaining that she hopes to bring a fresh perspective on the future of Napa, one that emphasises a range of styles and price points, but most of all, is able to welcome a wider range of people than ever before, by showing the varied people and places of the region. Matthiasson voices a similar ethos. “The wine business has so much artifice, but we want to let people in.”  Matthiasson and Trois Noix collaborated on a special lot for Premiere Napa Valley last year – a lot that we purchased and will soon be releasing. Second wines are no longer à la mode. In Bordeaux, these junior siblings – traditionally made with declassified fruit from the Grand Vin – are being rebranded as alternate expressions of a château. While this has fast become a familiar trope among the region’s master marketeers (who wants to suggest that anything is lesser?), for the Guinaudeau family of Ch. Lafleur the idea has become a fundamental part of their philosophy.  “A new cuvée, a new label – that’s marketing,” says Omri Ram – the man at the helm of the Guinaudeau estates today. For the family (who are mentioned repeatedly in our conversation, their involvement and influence is much more than monetary), any new wines must be a new Cru. Literally meaning a “growth”, the term doesn’t translate particularly well, but it’s a wine that should be “from viticulture, terroir, ideology”, Ram says. The inspiration is Burgundy rather than Bordeaux, comparing to Amoureuses or Malconsorts, a site that offers a distinct expression, year in, year out. “A special cuvée that costs 300 bucks – no, thank you,” he laughs. It hasn’t always been the approach at Ch. Lafleur – or more accurately, the “Société Civile du Ch. Lafleur" (the name that encompasses all the Guinaudeau estates). Les Pensées was originally conceived as a second wine, used to ensure the consistency and top quality of the Grand Vin, primarily made with fruit from young vines. But that all shifted in 2000, when they decided to separate out a diagonal 0.7-hectare valley, a strip of clay within the otherwise gravel-dominated Lafleur vineyard. The concept was – and is – to take the same core DNA of Lafleur, their old-vine material – and translate it through the lens of different terroirs. Les Pensées was their first step towards this, but in the early 2000s the Guinaudeau family started thinking about another expression of Lafleur – one on limestone. Little did they know that it would take almost 20 years for this idea to come to fruition.  And so they started looking for a limestone site. But Pomerol is the only place on the Right Bank with absolutely no limestone, and a plot on Saint-Emilion’s plateau (the obvious choice for prime limestone terroir) was a pipedream. In the unlikely scenario that a plot came up for sale, the price would be astronomical (the buyer would, in Ram’s words, need to have “big, big, big, big pockets”, his eyes visibly boggling at the idea). And while Ch. Lafleur might be uttered in the same breath as the likes of Pétrus, Lafite and Margaux, it remains a small, family-run affair. With Saint-Emilion ruled out, the family turned closer to home.  A distant but direct ancestor of the Guinaudeau family established Ch. Grand Village in 1650, and Jacques and Sylvie Guinaudeau reclaimed the Fronsac estate in 1980. Five years later they took charge of Ch. Lafleur, marking the start of this illustrious property’s renaissance. While their reputation has been built on the Pomerol estate, Fronsac has always been home. In fact, Jacques and Sylvie still live at Grand Village today, while their children– and current custodians of the family business –Baptiste and Julie also live on the outskirts of the village.   Although Fronsac might be considered lowly today, in the late 18th and early 19th centuries, its wines commanded higher prices than those of either Saint-Emilion or Pomerol. The Médoc reigned supreme, with its affluence, proximity to the city of Bordeaux and access to transport via the Gironde – but Fronsac, bordered on one side by the Dordogne River and on the other by one of its subsidiaries, Isle, was not far behind. As nearby Libourne developed, this only helped Fronsac and its wines grow in importance. Back then, Ram explains: “You couldn’t cheat. If you didn’t have a great terroir, you wouldn’t be able to make great wine in nine out of 10 years.” Of course, the region fell from grace – and even today you can stumble across abandoned vineyards, no longer bringing in enough income for someone to bother to farm them. But the best wines speak for themselves – Ram and the Lafleur team have tasted bottles back through the 20th century and there are undoubtedly “great, great things” – even up until the 1980s, proving the potential of the region.  That history, combined with the familial ties and a dream of reviving Fronsac’s reputation of yore, made the region the obvious choice.   There were two elements key to creating a new Cru for the Guinaudeau family: firstly, the right site, but secondly having massal selections of their old vines. Lafleur has long championed its particular plantings of Bouchet (a historic name for Cabernet Franc) and Merlot that pre-date clonal selection.  They started a nursery for their heritage clones at Ch. Grand Village – taking cuttings of their most interesting old vines, grafting them onto American rootstocks and then repeating the process. The challenge was cultivating enough vine material for a new site. As this project got underway, the family continued their search for the perfect vineyards – but also decided they needed to test the theory, and see if their vines’ DNA would translate on limestone.  And so G Acte was born – a “beta testing” programme for what would become Les Perrières. They picked limestone-dominant plots at Ch. Grand Village for an experimental series, starting with the 2009 vintage – Acte 1. By Acte 6, 7 and 8 (the 2014, ’15 and ’16 vintages), Ram tells me, they knew that they were onto something special. At the same time, the team continued to search for the right site. Originally they looked to Burgundy for their inspiration, where the illustrious Grands Crus sit neither at the top or bottom of the hill – but in Fronsac the mid-slope only proffered overly rich, fertile soils dominated by clay. Each site they explored brought new disappointment – until they decided to forget about Burgundy. The best wines in Pomerol, Saint-Emilion and even the Médoc all come from a plateau – so they changed tack and started hunting for a site perched up high.  Talking to the region’s older vignerons, they discovered the plateau of Meyney – beneath which lies a warren of quarries, the source of the limestone that was used to build much of Libourne, and the châteaux across the Right Bank. The first soil-pit they dug offered instant promise – with a meagre 20cm or so of topsoil before you were scraping at the mother rock.   Almost a decade after their search had begun, in 2011, they bought the first vineyards – Les Canards and Les Poulains – just seven kilometres from Grand Village, then another parcel the following year. When Ram arrived at the estate in September 2013, he spent his first day working on one of those nascent vineyards. The work required was extensive. These sites had been conventionally farmed, planted with clones selected for quantity rather than quality, so they needed total rehabilitation. They uprooted the vines and rotated various cover crops (herbs, flowers, cereals) to revive the soils over four years – totally reconstituting them, returning organic matter and also, importantly, re-stabilising the soil structure. The whole process took four or five years for each plot, with the first of their new plantings only going in in 2016 (Les Canards). The focus was, at first, on Bouchet from Lafleur, with 20 different selections. In 2017, they planted Les Poulains, with around 25 Bouchet selections, then in 2018 they planted three more clay-rich parcels with Merlot, partly with their own heritage selections, as well as some carefully selected clones that passed muster.  In 2018, they harvested their first crop from 3.5 hectares of vines. The quality of the Bouchet from these “extreme limestone” soils was so distinct that – even when blended with Merlot parcels that had previously been used for G Acte – they bottled it under the new Cru’s name, Les Perrières.  Tasting it in a line-up alongside previous vintages of G Acte, the difference is as extreme as the soils. Later vintages of the experimental series offer a red-fruited crunch, vibrancy and transparency, but the 2018 Perrières shows an instant shift. There’s a step up in purity, precision, concentration and complexity, with a wilder, swarthier fruit character, yet it’s the mineral salinity that shines through, and is echoed in the 2019. These are serious wines that have a clear sense of place.  The 2020 vintage is the first that came exclusively from Perrières vineyards, with none of the G Acte parcels (these are now all being used for Grand Village). As they initially had more Bouchet plantings on these sites, the blend has shifted over time – with the 2020 having 70% Bouchet, 60% in 2021 and a return in 2022 to the 50/50 mix that is the norm for Lafleur and Pensées. While the aim isn’t always to have this varietal mix, the vineyards are planted so that Merlot and Bouchet can be equal – but the blend will be decided on taste.  Bouchet might be Lafleur’s trademark, but the Merlot is an essential component in Ram’s view. Alone, Bouchet is too linear, vertical, intellectual and even borderline austere. Merlot complements this, ensuring it not just makes you think, but leaves you reaching for another glass. “The greatest wines are not just for the mind, but for the heart and stomach too,” Ram says.   It’s still early days for Les Perrières – the soon-to-be-released 2022 will be only its fifth vintage. These vines are still babies by almost any standard, let alone those of Ch. Lafleur. Yet its potential – and path – is already clear. Ram anticipates it will take them around 20 years to get the wine to where they really want it to be, sitting as a true equal to Ch. Lafleur, but he’s confident that it’s just a matter of time.  It's amazing to see the work that has gone into this one wine – both on paper and in the glass. This isn’t just marketing, but a creed for the Société Civile du Ch. Lafleur – and one that it’s hard not to believe in. Your cheat sheet to the Lafleur stable: the Société Civile de Ch. Lafleur unpacked Ch. Lafleur – the property’s most famous wine, seen as the Grand Vin, an expression of the Lafleur DNA on gravel  Les Pensées – now an expression of the Lafleur DNA on clay. Up to and including the 1999 vintage, this was Ch. Lafleur’s second wine, made with fruit mainly from younger vines. From the 2000 vintage, the fruit comes exclusively from a diagonal strip of clay in the Lafleur vineyards, and is a different Cru. (It was labelled as Les Pensées de Lafleur prior to 2018, when the “de Lafleur” was officially dropped.)  Les Perrières – an expression of the Lafleur DNA on limestone, sourced from vineyards in Fronsac. The 2018 and 2019 vintages include some parcels at Ch. Grand Village, however from 2020 the fruit is sourced exclusively from separate sites in Fronsac, on extreme limestone soils on the plateau de Meyney.  Les Champs Libres – an expression of pure Sauvignon Blanc on limestone soils, from specific parcels in Fronsac. The first commercial release was the 2013 vintage.  Ch. Grand Village – a red and white are made under the Fronsac estate’s name, which is also the family home (Jacques and Sylvie Guinaudeau still live there today).  G Acte – made from 2009 to the 2017 vintages inclusive, an experimental series testing the concept of Lafleur on limestone while trying to find the right sites for Les Perrières, made using fruit from limestone-dominant parcels at Ch. Ch. Lafleur is a Pomerol icon. Sophie Thorpe sat down with Omri Ram to talk about the philosophy that has driven the creation of its unique Crus – and the evolution of its newest project, Les Perrières

“I want to struggle,” says Cristiana Tiberio, earnestly, as we talk in London. This Abruzzo winemaker has rapidly become one of Italy’s most fashionable names. Thanks to her hands-off approach in the winery, she’s a darling of the natural wine scene, but is also earning top scores and rave reviews from the likes of Eric Asimov (The New York Times), Antonio Galloni (Vinous) and Ian d’Agata. But, as I found talking to her, she’s far from complacent.  Cristiana fell in love with wine as a teenager. Her father, Riccardo, was friends with Bruno Giacosa and the legendary Piedmontese producer’s wines were her favourites. She noticed early on that wines made with the same grape from different sites tasted totally unlike each other. “Wine was an infinity world,” she tells me, still with a touch of whimsy – and it was a world that she set her heart on exploring. When the time came, she set off to study chemistry at university – looking to the science behind wine rather than more practical oenology. Before she knew it, however, she’d been diverted, ending up with a PhD in photochemistry, far from “the infinity world” she’d committed to. So she quit. Instead, she travelled the world, working with various top producers, including Jacques Selosse, Nicolas Joly, Egon Müller and leading names in Chablis, before returning to Abruzzo in 2004.  In the meantime, her father Riccardo had found a special parcel of land in the mountains near the town of Cugnoli, with an abandoned plot of Trebbiano Abruzzese – the indigenous grape that had largely disappeared from the region. With its large, juicy berries and thin skins, this variety is more susceptible to fungal disease, can be challenging to ripen and lose its bright acidity if not picked at the perfect moment. Trebbiano Toscano (ubiquitous across much of Italy, and in France under the guise of Ugni Blanc) had replaced many plantings – favoured for its small berries, ability to accrue sugar easily and retain its moderate acidity.  This abandoned vineyard had survived largely because of its unique site – with canyons to the south and west, meaning a wind blows through the vines constantly, clearing the humidity and reducing disease risk. It was also planted in the traditional Abruzzese pergola system, with two vines planted at each post, wider (four-by-three-metre) spacing, providing competition but also forcing the branches to grow longer, meaning a larger canopy, aiding photosynthesis and therefore ripening. Now 95 years old, these ungrafted vines had also endured thanks to their fortuitously sandy soils (a neighbouring plot, on marly clay, had to be replanted on rootstock, and is now around 80 years old).  While the Trebbiano Abruzzese was the lure of this site, much of the property Riccardo purchased was unplanted. Today, Tiberio has 30 hectares of vines, all in one contiguous parcel – with additional woodland, as well as alfafa and wheat fields, all part of the family’s championing of biodiversity. And, as much of the area hadn’t been planted, the property hadn’t suffered from industrial farming – meaning the soils were already healthy, however preserving it is at the forefront of what Tiberio does.  The vineyards are divided between Trebbiano Abruzzese, Pecorino and Montepulciano – a fraction of the various grapes permitted in Abruzzo, but – importantly for Cristiana – the ones that were historically native to their mountainous terrain. They only planted with massal selections – something Cristiana feels is key. She argues that clones sourced from vine nurseries are designed to be planted anywhere, sacrificing anything “native” in the name of disease resistance and/or yield. “For me, historical heritage is everything in the wines,” she explains. On a more practical front, she finds that massal selections cope better in difficult vintage conditions, adapting more easily. As evidence, she points to a plot of ungrafted vines that she planted in February of this year (2024), explaining how despite the extremely dry conditions, the vines survived – entirely unirrigated.  While Cristiana clearly values the traditional pergola training, she has chosen to use guyot training for most of their vines. The old vines – largely used for Fonte Canale and Archivio – are under pergola, however she doesn’t feel it’s right for everything. When it comes to Pecorino, she explains how the variety naturally grows vertically, meaning pergola-training would force the vine into an unnatural shape, impact sap flow, and therefore quality. As for Montepulciano, while they have 2.5 hectares (used for Archivio) under pergola, she feels that the pergola system can push the grape’s rustic character – the thin skins with less phenolic ripeness (due to shading) at risk of producing more easily extractable, less refined tannins. For her, guyot elevates the flavour profile of the grape and helps balance the potentially aggressive tannin, avoiding it being too “loud”.   Cristiana’s brother Antonio is in charge in the vineyards, where they work organically. They briefly trialled biodynamics, however have veered away from using the preparations, along with any fertiliser or seeded cover crops – keen to avoid adding any outside inputs that aren’t “respectful of their terroir”, as Cristiana puts it. The winemaking continues this philosophy, with indigenous yeast, almost no new oak across the range (just 30% for the Archivio bottling), the wines unfined and unfiltered, largely avoiding temperature control where possible, and SO2 only added at bottling.  Although organic, they aren’t certified – something she feels strongly about. She explains how both dedicated, small growers and “big, industrial” producers can bear the same certification, while one’s farming is considered and artisanal, yet the other is borderline conventional. It “certifies our attitude and we stay lazy”, she tells me. “We stop struggling with our mind to find what is better for our terroir,” she says – something that she is anxious to avoid, keen to continue striving, pushing and working to do better, rather than tick a box and move on.  And that work is not merely intellectual. Having just finished harvest in Abruzzo before touching down in London, she was soon flying off to Oregon – squeezing in a second northern-hemisphere vintage at a property there. It’s a chance to learn, and few 50-year-olds seem to be quite as restless as this one. While Tiberio is a family venture, it’s not one that was passed through the generations – something for which Cristiana is grateful; she has been able to choose her site, choose the wines she’s making and define her own philosophy – one that is now resonating loud and clear around the world.  The Tiberio range  The regional wines  Trebbiano d’Abruzzo: Tiberio’s entry-level Trebbiano Abruzzese comes from three hectares of 75-year-old pergola-trained vines, those that were grafted 14 years after their oldest (dedicated to Fonte Canale). Only made with free-run juice, it’s fermented and aged in stainless steel.  Pecorino Colline Pescaresi: The vine material for their Pecorino was selected from a few old vines on the site, but comes from a 3.8-hectare plot planted in 2001 and guyot-trained. Only made with free-run juice, it’s fermented and aged in stainless steel. These are some of the oldest Pecorino vines in the region and the wine is unlike the modest Pecorino you may have previously tasted – ageing impressively.  Cerasuolo d’Abruzzo: This rosato is very special. It comes from nine hectares of Montepulciano, planted in 2001 and Guyot-trained. Made with free-run juice (with no maceration whatsoever) and only seeing stainless steel, it’s a perfumed and bright style of rosé that can and should age.  Montepulciano d’Abruzzo: This is the largest production cuvée, coming from 15 hectares of Montepulciano – both older pergola-trained vines (62-year-old) and younger Guyot (planted in 2001). As with the other entry-level wines, it only sees stainless steel, spending 15 days on skins.  Single-vineyard bottlings  Fonte Canale: Arguably Tiberio’s most sought-after wine, Fonte Canale is pure Trebbiano Abruzzese from 736 ungrafted, 95-year-old vines, spread across around two hectares of sandy soils. (They currently aren’t replanting the individual vines when they die, as don’t want to plant grafted stock, but are cautious of fragile young ungrafted vines attracting phylloxera.) It was first made in 2012, with these ungrafted vines needing time to recover from their previous neglect. The combination of site and variety produces wines with modest alcohols (often 12-12.5%) and naturally low pH (the 2018 is a mere 2.7pH!), giving a backbone of taut acidity (as Tiberio says – “not raw, but flavourful acid”). The site’s indigenous yeast produces a cool ferment (reaching maximum 23̊C) and a wine that doesn’t need racking post ferment, with little reduction. The malolactic is naturally blocked by the low pH and the wine only sees stainless steel – “to allow this wine to express its meaning”, Cristiana says. This stunning, vibrant white is a pure expression of a special site – one that ages beautifully, with its old vines almost overpowering vintage. If any further praise were needed for this wine, it has featured on the list at Massimo Bottura’s Osteria Francescana since its first release.  Colle Vota: First bottled separately in 2014, this vineyard is always the last to be picked. Planted in 2000 with massal selections from their old Montepulciano and guyot-trained, Tiberio finds the berries have thicker skins but release less during maceration (around 20 days). She also finds the tannins in the stems different here so is using a small portion of whole-bunch fermentation in the blend. Again with only free-run juice, the wine doesn’t see any oak whatsoever. Coming in a Burgundy-shaped bottle, this is the lighter of Tiberio’s two Montepulciano bottlings, but still with a firm tannic backbone, but with more delicate perfume.  Archivio: Launched in 2017, Archivio comes from the property’s 60-year-old pergola-trained Montepulciano on clay-rich soils, where the wind helps thicken the skins. Tiberio finds that the fruit has thinner skins from the middle of the pergola system, so these bunches are harvested separately. With thinner skins, the ferment has more lees and more reduction, needing oxygenation, so this is the 30% that goes into new oak to give it the necessary air. The bolder and firmer of the two Montepulciano bottlings, it is bottled in a Bordeaux-style bottle to indicate its ageing capacity – a wine that Tiberio confesses can be “monolithic” in youth, but offers great potential.  And coming soon… Quarmarì: A new single-vineyard Pecorino from 2023, this wine takes its name from the family dog, who passed away a few years ago. The wine has – so far – only been tasted by Ian d’Agata, who wrote that it is “a wine so amazingly good and unique that it will shatter all you thought you knew about the grape and what it can deliver”. Given how good even the entry-level Pecorino is, we can’t wait to try this.  The vertical tasting Pecorino  2006 Pecorino Colline Pescaresi: It’s hard to believe this is close to two decades old – the wine vibrant, lively and juicy with lean lemon freshness to the palate. There’s a suppleness to the body, yet it’s taut and mineral, and more honeyed and herbal notes emerging with air.  2009 Pecorino Colline Pescaresi: The 2009 Pecorino is instantly open, giving sage, thyme and honey on the nose, alongside fresh white peach. On the palate, however, it shows its restraint – still fulsome but with a mineral backbone that makes it feel youthful.  2013 Pecorino Colline Pescaresi: Leesy and mineral, this is almost reminiscent of mature Chablis or Blanc de Blancs Champagne – with a honeyed, chamomile edge. The palate is waxy and long, with a herbal lift to the finish.  2015 Pecorino Colline Pescaresi: There remains a creaminess to the nose here – the wine tighter than the 2013, with a limey, lean purity and plenty of energy.  2019 Pecorino Colline Pescaresi: This is strikingly different after the 2015 – much riper and more exotic, with apricot, peach, mango and orange peel. Combined with the wine’s viscosity, there’s something Viognier-like, however there’s still brilliant, mineral energy here, with tight, citrus-edged acidity.  Cerasuolo d’Abruzzo  2022 Cerasuolo d’Abruzzo: It will be amazing to see this wine develop. The nose is restrained – you can feel the potential behind. Gradually wild strawberry and bright raspberry emerge, alongside delicate rose petal florals. It’s tightly wound with immense energy to the flinty palate, a minerality driving through its core into the long, mouthwatering blood-orange finish.  2020 Cerasuolo d’Abruzzo: Deeper-coloured than the 2018, the 2020 has a brighter nose – with raspberry sherbet, strawberry laces and a creamy richness. The acidity again is in the driving seat, the palate chalky and mineral with lemon freshness and a slight phenolic grip that frames the crunchy red fruit.  2018 Cerasuolo d’Abruzzo: A surprisingly deep pink (especially given this is made only with free-run juice), with a copper hue. This was a real highlight of the tasting. The nose combines a flinty minerality with a funky, savoury, almost cheesy note, alongside dried cherry and rose florals. The palate has a line of bright acidity and a mouthwatering lemon finish. Very serious rosé that deserves bottle age.  Fonte Canale  2021 Fonte Canale: From a very dry growing season, this is such a baby. The nose is mineral with notes of pear skin, white florals, lime pith and cordial, with riper apricot emerging. It’s vibrant and full of tight, lemony acid, driving on to the chalky finish. Precise and pointed, there’s crisp apple and herbal freshness, with a saline edge.  2020 Fonte Canale: At first with a touch of gunflint reduction, the smokiness gradually lifts to reveal a tight and lean expression of Trebbiano d’Abruzzese – all citrus and mineral, needing time and air to reveal itself fully.  2019 Fonte Canale: The nose here combines vibrant green apple, greengage and lemon with a sea-spray freshness. It’s still limey and tight on the palate, but with a soft, full weight too – with generous yet tangy, white-pear fruit on the mid-palate, before tightening up on the saline, mineral finish.  2018 Fonte Canale: Dried herbs mingle on the nose with more hedonistic fruit – peach and green mango,, with real weight to the fruit here. There’s still the bite of piercing lemon acidity, surrounded by fleshier peach fruit.  2017 Fonte Canale: This feels much more closed in comparison to the 2018, with pure citrus energy, tangy, pure and limey, but with a slight creaminess mingling with the tart fruit. It’s concentrated and full of promise, but not giving much away now.  2016 Fonte Canale: Waxy and bright, the 2016 is full of energy. Pure flint, Meyer lemon and grapefruit pith, with more delicate white florals all vie for attention, while the palate is all about pure crunchy apple, minerals and its vibrant acidity.   2015 Fonte Canale: The nose here is complex – with notes of honey, chamomile, tarragon, bruised apple and a praline richness. The palate, meanwhile, feels brilliantly youthful, with lime sherbet and chalky minerality driving long into the mouthwatering finish.  2014 Fonte Canale: This was closed at first, with subtle floral tones of apple blossom and honeysuckle dancing on a background of lemon and pear flesh. The palate has that familiar drive of acidity leading into the impressively long, saline finish.  2013 Fonte Canale: Fresh cashew mingles with lemon sherbet on the subtle nose of the 2013, a wine with lift and energy. The palate is lively and long, with the finish offering honey, herbal notes and sweet hay.  2012 Fonte Canale: The first ever vintage of Fonte Canale, it was a real treat to try this special wine. The nose combines rosemary and thyme with candied lemon peel, as well as more honeyed notes. The palate is lithe and vibrant still, with a stony purity and saline finish.   Colle Vota  2020 Colle Vota: This combines juicy dark fruit, sweet spice, baked plum and violet florals. Rich black and red cherry fills the palate, with an edge of dried herbs and the scent of nutmeg. The tannins are savoury and firm, with a chalky freshness and zesty edge to the acidity.  2019 Colle Vota: The 2019 offers floral lift, with brighter cherry and raspberry fruit. Less savoury than the 2020, the palate is tight and mineral, yet with a softness to the mouth-filling fruit, all cut by juicy acidity.  2018 Colle Vota: This is drastically different to the 2019, offering an aromatic profile of baked strawberry and tea leaf – almost lapsang souchong. The chalky minerality stands out here, with high, piercing acidity giving the wine backbone.  2014 Colle Vota: There’s a significant colour change moving from the 2018 to the 2014 Colle Vota, while the nose reinforces this shift with leather and damp undergrowth sitting alongside dried red fruit. The tannins have softened and are supple, while the acidity still refreshes and cuts through the fruit.  Archivio  2020 Archivio: Savoury and rich, this is a powerful, dark, compact Montepulciano d’Abruzzo that needs time. It is intense and structured, full of tight bramble fruit and drying tannins, but with an impressive line of acidity at its core.  2019 Archivio: This is much more open than the 2020, with a sweeter, more red-fruited profile, and more overt sweet spice. Dried herbs and incense complement the bramble fruit. There’s a firm chalky grip to the tannins, tightening up as the structure announces itself on the palate, yet with mouthwatering acid keeping things balanced.  2018 Archivio: The sweet, baked red fruit of the vintage seems to carry through both of the reds in 2018. There’s a softness to the fruit, yet still power behind. It’s full-bodied and firm, yet the most approachable of the trio of 2018, 2019 and 2020, with fresh, juicy acidity.  2017 Archivio: There’s a touch of maturity just starting to show here, with the first hint of sousbois and leathery richness, an almost tarry character, sitting alongside the sweet plum, baked blackberry and smoke. The seasons have shifted. Drizzle is once more the order of the day, russet tones spreading across the landscape, the soft tread of fallen leaves underfoot – and a new vintage from Burgundy on the horizon.  This week, we made our first, fleeting trip to the region – dipping a toe in the waters of 2021. We tasted with a handful of growers and négociants, getting an initial feel for the year, ahead of our more comprehensive trip and tasting later in the season.  The cellars were full of the familiar scent of fermentation – raw and intoxicating – as the 2022s settled into barrel. Producers were unable to contain their relief at having finally been able to harvest a full crop – especially given the tiny 2021 yields.  As with Bordeaux 2021, the year’s conditions were far from easy. While neither 2019 nor 2020 brought generous harvests, in 2021, Mother Nature conspired against these vine-growers – demanding more than a pound of flesh.  The winter was wet, replenishing the soils’ water reserves. Spring arrived early, with a warm March encouraging the vines to waken, but as has become almost the norm, April brought severe frosts. For three days the region’s vignerons lit candles and did everything to try and shield their precious crop, with snow even falling on the higher vineyards – especially the Grands/Premiers Crus.  Once beyond that hurdle, growers were faced with another – a wet June and July that led to widespread mildew. As in Bordeaux, it was a particular challenge for the increasing number of growers working organically. August was dry, and harvest dates returned to more conventional timing in mid-September – a contrast to the warmer 2018, ’19 and ’20. But thanks to the frost, there simply wasn’t much fruit to harvest.  With the damp conditions, sorting was key – and demanded more of the already small crop be sacrificed. With the health of the fruit imperfect, extraction was a challenge, with a gentle touch required – and chaptalisation once more the norm. Yields everywhere are drastically low – reduced by between 60 and 70%, across both whites and reds, and every quality tier. The volumes are so small that there simply wasn’t enough fruit to produce some cuvées, and we’ll see more blended Premiers Crus as a result.   We have not tasted nearly enough to make declarations about the vintage – once we’ve tasted more widely we’ll publish a full report on the year. What we can say so far is that we tasted some very good whites – the cooler conditions lending themselves to restrained, mineral, high-acid white Burgundy.  The year marks a distinct return to old-school, high-acid, pale-coloured red Burgundy – with alcohols back down to 12-13%. From what we’ve tasted so far, the Pinot Noirs are lighter with a juicy freshness and “buvabilité” versus the bolder 2019 or 2020s. As in Bordeaux in the vintage, the year asked much of wine-growers and quality seems to vary, so we’ll be choosing wines carefully. We look forward to tasting and talking more, getting fully under the skin of the vintage.

There is a lyricism to the way Roberto Bava speaks. Beyond his unmistakeable Italian accent, his sentences rise and fall. Every word is a piece of music in and of itself, which is sometimes broken by an infectious burst of laughter. He drops his h’s and finds syllables where ordinarily there are none. It’s not hard to picture him holding court at the head of the table at the Vermouth di Torino Institute, or working the room at events with people, he says, who openly express their  dislike of vermouth. “You have this reaction against it because you remember your grandmother used to offer you an oxidised thing,” Bava tells me. Once they taste a vermouth that has been well-made and well-kept, it’s a whole different ball game. “You discover a totally different product,” he says. Introducing vermouth to an entirely new audience, or a familiar audience in a different way, clearly brings joy to Bava. He talks of an event the night before we speak when he offered vermouth to the guests. After a couple of sips, they stopped drinking wine and switched to vermouth for the rest of the dinner. “It was phenomenal,” he says with unabashed glee. “People are now tasting it and saying, ‘Oooh, this is goooood.’” Bava, and the three or four generations (he forgets which) of his family who have worked in the industry before him, have lived through vermouth’s highs and lows. After heady days in the 20th century when it was consumed neat as a welcome drink or “nice company to your book and solitude”, vermouth fell out of favour in the “hard decades” of the 1970s, ’80s and ’90s. “As a category, it was a little bypassed,” Bava tells me. Vermouth simply couldn’t compete with the marketing budgets of other products and they stormed to the fore, leaving the fortified wine “a little lost”. It wasn’t until the cocktail renaissance in the 1990s and the meteoric rise of the Negroni many years later (in the early 2000s) that the pendulum swung back in vermouth’s favour. “Vermouth is a good drink,” Bava says lyrically, “but it is also an instrument to make better other drinks.” When asked which cocktails of the many that are made with vermouth – think the Martini, Negroni, Manhattan, Adonis – has done the most for the category, the Vermouth di Torino Institute president says in a flash: “the Negroni”. He then adds in his melodic way: “As an Italian, and being a Negronista, it’s gotta be a Negroni.” Bava does then concede that it slightly depends on the country. In America, for example, he says, the Manhattan is king – even if people don’t necessarily realise vermouth is in it. Another reason vermouth has risen to prominence, according to Bava, is the improved quality and introduction of a Geographical Indication (GI) for Vermouth di Torino three years ago – something he refers to as a “little miracle”. In short, this means the vermouth must be made with at least one Italian wine, wormwood must be the predominant flavour and the wormwood used must be grown in Piedmont. The final liquid must be between 16% and 22% alcohol. For a GI, this is broader than others and allows many producers in the Piedmont region to use “Vermouth di Torino” on their bottles. Bava was instrumental in getting this classification for the region in 2019 and was rightly given the role of president at the Vermouth di Torino Institute. In three short years, Bava says the GI is paying dividends and making a real difference to the style and quality of Vermouth di Torino. “Vermouth was produced all over the world,” he explains, “sometimes losing a little of the identity”. It wasn’t until the GI was approved that vermouth producers from Turin, like Bava, could really communicate that a vermouth from Poland or Argentina wasn’t the genuine article. For that, you need to go to its birthplace of Torino, Italy. “Vermouth di Torino has been a benchmark for the whole category – and will be, for sure,” Bava adds energetically. “This [label] makes an important guarantee to the consumer because you know what is in the bottle. You know there is control, you know someone has checked, made an analysis, you know the ingredients, and this is not a generic product, it is a specific product and a protected product.” He makes the inevitable, and important, comparison with the wine world. “You can produce wine all over the world, but if you do wine in Barolo it’s specific. You can do table wine in France anywhere but if you go in Pauillac, of course, you have something else. So this is what’s gonna happen,” he explains. To date, 99% of Turin's producers have joined the fold to champion and protect the region’s appellation, including some of the biggest and smallest names. At present, Vermouth di Torino is the only vermouth GI recognised and protected in the category but Bava teases that there could well be more in time. With vermouth from its birthplace now protected and a much better understanding of how it should be kept – in the fridge once open and stored out of direct sunlight – it’s hard not to see its fanbase continuing to grow, especially as it ticks the low-alcohol box for a more mindful, younger consumer base. “The consumption is going to grow. It takes us some time. I’ve been working already 10 years,” he laughs. But Bava is certainly bullish now all the producers are working as one. With Bava spreading the word, in his enchanting and charismatic way, you can certainly see an appreciation for vermouth continuing apace. Explore all spirits or read more Editorial

Vermouth: the Italian job   

Prunotto’s Emanuele Baldi has an encyclopedic knowledge of Barolo. Listening to his stories about the last century in the region is fascinating, providing context to how and why Barolo and the surrounding Piedmontese regions have developed as they have. Perhaps one of the biggest developments over this time was the birth of wines from a single Cru or vineyard.  A trend that Prunotto, along with Vietti, started in the early 1960s, these single-vineyard wines completely transformed how Barolo was sold. Today it is rare for producers not to sell both single-vineyard wines as well as their Barolo “Classico” made from a blend of vineyards and regions. But this trend wasn’t necessarily Prunotto’s intention, believing only certain vineyards had the capacity to produce wines as complex as those of the blended Barolos the region had become famous for. It was Prunotto’s winemaker at the time, Beppe Colla, who came up with the idea, inspired by a trip to Burgundy with both Vietti’s Arturo Bersano and the famous Italian wine journalist, Italian gastronome and intellectual Luigi Veronelli. On discovering the region’s obsession with terroir and single-vineyard designations, they recognised the link between the region’s complex soils and wine - something familiar with certain Barolo Crus, which has a distinct imprint. The concept of the single-vineyard Barolo was born. The transition to producing a single-vineyard Barolo was not such a difficult progression, since back then Barolo producers like Prunotto were based in the city of Alba, rather than the vineyard hamlets themselves. Following the harvest, the grapes were brought to the town square on carts and for many grape growers it was only at this point that they bartered their goods with the town’s wine producers. Winemakers, Baldi told me, would famously bargain for the grapes. They would often complain that the prices were too high and that they should come back tomorrow with a better price, with the grapes already decomposing in the growers’ carts. The growers had little option but to drop their prices before their crop became worthless. Prunotto, along with the likes of Pio Cesare, was one of a handful of prestigious producers happy to pay a premium for the best grapes. With no bargaining, they saved precious time (preserving the quality of the fruit), while also securing the cream of the crop. Because different smallholders brought their separate carts of grapes, it became easy to identify the different qualities depending on the vineyards they came from. Initially, Prunotto found the Bussia grapes stood apart from the rest – which is why it became their – and the region’s – first single-vineyard Barolo (along with Vietti’s Rocche di Castiglione) in the 1961 vintage. But why did the Bussia vineyard stand out, earning a solo bottling? The historic region of Bussia (which today represents Upper Bussia) is a perfect amphitheatre of vineyards, in which different parts of the same vineyard produced grapes with different, complementary characteristics that together create a complex wine when fermented.  Baldi feels that Nebbiolo is typically best when it is a blend of different vineyard sites. Most Barolo vineyards on their own, he thinks, don’t provide the balance, intensity, and complexity of a multi-site blend. “Each of the individual vineyards are like parts of an orchestra,” he explains. Each vineyard adds a layer of complexity, whether it be perfume, tannic structure or a rich mid-palate which, if on its own, would be too simple. “Have you ever listened to hours of music played just by a double bass?” Baldi quips. “But some vineyards in Barolo are an orchestra in themselves.” And this is exactly what he, and Prunotto, feel is true for upper Bussia – an amphitheatre that can produce something truly distinct and complex. For Prunotto it is Bussia’s “grace and balance” that sets it apart. Upper Bussia is situated right in the middle of the two dividing styles of Barolo: to its east are the vineyards of Serralunga, known for their tannic structure and power; to its west are the vineyards of La Morra and Barolo, known for their elegance and florality. Upper Bussia is one of the perfectly situated Crus (similar to Cannubi and Rocche di Castiglione), capturing the best of both these styles.  The estate’s two flagship wines – Barolo Bussia and Barolo Riserva Vigna Colonnello – are both from Upper Bussia. Following the success of their 1961 single-vineyard Bussia, Prunotto went on to produce many other single-vineyard cuvées, including the Crus of Ginestra, Cannubi and Barbaresco’s Rabaja and Montestefano, but the winery always kept going back to Bussia, which has become its spiritual home. That’s also why, upon their arrival at Prunotto back in the late 1980s, the Antinori family immediately focused their attention on the Bussia Cru, purchasing seven hectares in the area. Barolo built its reputation on its blends. More often than not, these multi-vineyard blends are wines of fantastic complexity and balance. Today, however, most Barolo producers’ single-vineyard Cru wines are their most prized (and expensive) wines.  Clearly, top Crus such as Bussia, Falletto, Villero, Monprivato and more have developed a huge following amongst collectors and connoisseurs. Prunotto’s and Vietti’s pioneering leap, introducing the concept of single-vineyard wines to the region, brought a new layer of complexity to drinking Barolo. It’s even prompted cartographers to map out the region in extraordinary detail.
